UTPA surveys Winter Texans on border security

Researchers at the Business and Tourism Research Center at The University of Texas-Pan American are looking for community input on the recent events in the Rio Grande Valley. This past summer, hundreds of security forces, including up to 1,000 National Guard troops and hundreds of additional state troopers, were sent to the Valley in response to the dramatic increase in the number of undocumented immigrants, especially children, to the U.S and to deter human and drug trafficking. The mission of the National Guard is to maintain a visible presence in the area See SURVEY pg. 35

Grace Heritage Ranch: Taste of days gone by By Kathy Olivarez The Schalk family, including parents Brian and Mary and their three younger sons, Caleb, Matthew and Joseph have adopted a simpler lifestyle. Four years ago, they decided to downsize their home and upsize their land. Moving to Santa Monica, about 30 miles north of Harlingen, they purchased a 100acre homestead – Grace Heritage Ranch. Here they raise animals and provide most of their organically grown food supply. They live off the land for most of their needs. Brian and Mary have six children. With a daughter and two sons who are already grown and on their own, the three remaining boys are home schooled, which gives them more time to help around the farm. At Grace Heritage Ranch the Schalks offer educational tours of their homestead ranch where visitors can interact with some very special heritage farm animals. The family also shows their guests how they raise those farm animals as well as natural, organic fruits and vegetables. Visitors take a step back in time and see how the Schalks cultivate the land with simple hand tools and produce almost everything

Bentsen Grove’s year-round Santa

By Kathy Olivarez On Tuesday, Dec. 9, Bill Worley of Bentsen Grove Resort, with the help of friends, made his 500th delivery of furniture or other goods to Proyecto Desarrollo Humano (Human Development Project), located west of Tom Gill Road and south of Mile 7 Road. “Bentsen Grove is filled with residents who have big hearts, and Bill Worley has one of the biggest,” said George Wardrip, park spokesman. Worley was originally a resident of Michigan but is now a full time resident of Mission and is now able to make deliveries all year round. “In the past 10 years Worley has driven over 15,000 miles at this own expense to deliver items residents of Bentsen Grove have donated,” added Wardrip. He got his start delivering supplies but now delivers all sorts of things. The 500th delivery consisted of a couch and love seat that are Don Meyer, Charles McDonald, Al Alexander and Bill Worley (not shown) loaded a being replaced by a resident. ARE YOU PAYING TOO MUCH? Claire Laird displays her craft items at the Oleander Acres RV craft sale.

A busy day in the life of a Winter Texan

By Kathy Olivarez I decided to pick a day on the Winter Texan Times Parks Calendar and visit as many events as I could. My first stop was Oleander Acres RV in Mission where they were serving biscuits and sausage gravy for breakfast and having a craft sale. The baked goods and the biscuits were on one wall of the rec hall, while the crafts and garage sale items were on the opposite wall. I found Claire Laird with a variety of items for sale including coasters, bookmarks, an item referred to as “the cross in your pocket,” and a nifty item with crocheted edges for opening jars. Laird said it was her best seller. Nenate Poirier showed me her crochet-covered coat hangers while Helen Klein was knitting dish cloths. At the food table Curt Lindquist was enjoying those biscuits and gravy. Moving on, I headed to Lakewood RV Resort in Harlingen where a “Soup for the Needy” luncheon was taking place. Upon my arrival, Mary Ellen Swartz, activity director, served me a bowl of chicken with rice soup that was delicious. Maryanne Doyle, who sat across from me, said that while she seldom cooked anymore she had helped make the cornbread for the luncheon. She has been coming to the Rio Grande Valley from Michigan for 19 years. Donna Wright, who planned the event, came by to say hello and reported that there were some Winter Texans from other parks coming to eat the soup and help the needy. By the time I arrived, over 100 people had come and only half the time had expired.

Since I had a little time left before the next event, I decided to stop at the Harlingen Arts & Heritage Museum and see the Christmas Tree Forest where there are a variety of beautiful trees on display. After a pleasant visit at the museum, it was time to look for a jam back in Weslaco. I had selected a jam at Trail’s End on S. Texas Blvd. because it fit my time schedule. The jam, which was the first of the season, had a good audience and many jammers. A.J. McComas, who was the emcee, said they probably had 30 jammers, mostly guitars. There were also a fiddle, keyboard, electric guitar and vocalists performing. McComas said the jams would be weekly on Fridays until the first of April. He will be sharing emcee duties with Eugene Smith. First up when I arrived was Coleman Smith singing “The Old Man on the Mountain.” Lorene Allen sang “Fallen Leaves” while Bob Allen sang “Honky Tonk Angel.” Tanya Wells followed with “Could I Have This Dance?” Eugene Smith sang, “Pick Me Up on Your Way Down.” Johnny Hurst did a rousing version of “That’s All Right” that had the ladies dancing in the back of the room. During the intermission, I had a conversation with Geri Clark, who told me the annual Rio Grande Valley Music Fest planned for February at the Livestock Show in Mercedes had been canceled for a lack of volunteers to help put it on. Clark said there is another group of musicians who are trying See BUSY DAY pg. 08

North Pole opens at Mission Historical Museum

The North Pole Village has traveled south to the Mission Historical Museum (MHM) in a special exhibit that will be on display from now through Dec. 31. It will be open for public viewing in the museum’s annex located at the corner of Doherty Ave. and Tom Landry Blvd. Admission is free. The village is on display courtesy of the efforts of Ben Olivarez with the assistance of two MHM helpers. It is part of an extensive collection of Department 56 pieces he and his wife, Kathy, have been collecting for a number of years. Covering four, four-by-eight sheets of plywood, the fantasy snowscape North Pole is complete with the inhabitants of a magical village that children throughout the world dream is occupied by Santa, elves and reindeers. What started out with four or five pieces has grown into an entire city of 150-plus buildings, in addition

to all the “extras” that create the complete picture: trees, lights, train, river and more. The individual cost of each piece can range from $30 up to $150 in the original purchase. Since Department 56 pieces were often created one year and then retired, many pieces in the Olivarez colSee NORTH POLE pg. 35

From pg. 01 and registered San Clemente Island and Nigerian Dwarf goats along with one French Angora rabbit and several hives of bees. They have three Jerusalem donkeys named Faith, Hope and Love, who provide protection from coyotes and other predators, and a couple of pot-bellied pigs. Brian explained the animals they raise are heritage breeds that have been around for a long time. They are not genetically altered in any way. The Jerusalem donkeys are thought to date back to the donkeys found in the Holy Land thousands of years ago. The Devon cattle they raise were selected because they are a heritage breed dating back to he 1600’s, known as being useful not only for milking and producing meat, they can be used as beasts of burden such as oxen to plow fields as well. Their goats are San Clemente Goats, a rare old breed. There are only 600 left in the world and the Schalks have three of them. They recently shipped off four more to Maine, Oregon, North Carolina and a zoo in Illinois. Their sheep are called Jacob sheep, which have an Old Testament lineage. Brian said that in Genesis 30, the Bible talks about Jacob raising sheep with another person and Jacob’s sheep were the ones with spots. Brian’s sheep also have spots. Their fowl include Buff Orpingtons, a five-toed chicken. First references to a

WINTER TEXAN TIMES

five-toed chicken go back as far as 53 A.D. This particular breed may have its roots in that flock but it is known to go back to the 1800’s. They also sell baby turkeys and geese. Their fowl do not get hormones in their food. The eggs they get have an orange colored yolk that is very nutritious, said the Schalks. Cattle, sheep, goats and donkeys all graze on grass that has not been treated or fertilized with commercial products. Brian uses six types of grass on the farm. One is a Bermuda grass known to be good for foraging animals. Another is especially drought tolerant. A third grass is known to thrive in sandy soil. The family has a three-section garden

www.wttrgv.com

area where they grow all kinds of fruits and vegetables. One section is used for root and vine crops such as beans and beets. Tomatoes, squash, cucumbers, watermelons and honeymelons: they raise all kinds of vegetables and fruits for the family’s use. Another section of the garden is reserved for lettuce and leafy vegetables, cabbage and herbs such as cilantro and dill. Crops have already been picked and the garden is currently covered with cereal rye to replenish the nutrients in the ground. While they are using rye this year they also use clover or clay cowpeas as crops to replenish the garden’s soil. Before the fields are planted with a replenishing crop, the pot-bellied pigs area turned loose in the garden to eat what is left of the crops and to offer their own brand of fertilizer to the soil. Each of the three boys has a special job to do on the farm. Caleb is the gardener. He takes care of the crops and makes sure the fields get nutrients to replenish the minerals in the soil with cover crops. All of the food crops they grow come from heritage seed stock, which means it is not genetically altered in any way. If seeds from a fruit or vegetable are planted the next year, the result will be a fruit or vegetable that is just like the parent plant. That is not true with some genetically altered food crops. The family has also planted an orchard of 30 different types of fruit trees but the trees are not yet large enough to produce fruit for the family’s use. Caleb is also the beekeeper. They family

has nine hives of bees. Caleb said the hives become very active in the spring when the mesquite trees are blooming. Bees build three types of combs. The first is a honeycomb, which is removed to get honey for the family’s use. The second is a brood comb where baby honeybees are grown. When he goes to remove these bees they are put into a new hive box and brought back to the ranch to produce more bees. The third is the drone comb, which is put into a bucket where it can used for making candles, since they do not want so many drones. In addition to raising their own vegetables, the family milks their goats and cows to get raw milk for the family’s use and to make cheese or yogurt. Matthew is the animal tender. He takes care of the veterinary needs of all the animals. Joseph, the youngest son at 13, is the family’s cultured food product expert. He makes fermented drinks like kombuchi that features a symbiotic colony of healthy bacteria and yeast to provide health benefits to those who drink it. He also makes kefir from goat’s milk. He makes “mother,” a leathery fermented pancake that can be used in a healthy tea. It takes five to 12 days to ferment, but when it is ready it is fizzy and tastes like carbonated soda and is sweet and tangy. And he makes fermented water with sugar called scobe. The purpose of the ranch is to provide See GRACE HERITAGE pg. 38

Rainy brings Patsy Cline tribute to Valley resorts

By Kathy Olivarez In her first show of the 2014-2015 winter season, Lorraine “Rainy” Mancuso performed for a near capacity crowd of Winter Texans at Alamo Rec-Veh Resort. She has been doing Patsy Cline Tribute shows for 17 years. She has also been part of a Legends show that is presented in Thunder Bay, Ontario, Canada for the last few years. The show includes tributes to Patsy Cline, Elvis, Neil Diamond, Roy Orbison and Lady Gaga. Rainy has been coming to the Rio Grande Valley since 2008 to perform her Patsy Cline Tribute Shows, and she was a hit from the beginning. In 2011 when the first Valley Star Awards were given, Rainy was one of the four finalists. She has also been a nominee for the Winter Texan Times Favorite Wintertainers™. Known for her uncannily similar voice to 1950’s and 60’s star Patsy Cline, Rainy also sings songs of Connie Francis and keeps the audience entertained with humorous stories during her shows. She sang several of Cline’s greatest hits, while sharing fascinating stories about Patsy’s life and adding in some humorous stories about “seniors,” which were a hit with her Winter Texan audience. Rainy sang songs like “Crazy”,

From pg. 03 to organize a similar event under another name to be held somewhere in the Mid-Valley since the dates are no longer available at the Livestock Show Grounds. “We earned $35,000 last year to help provide music scholarships to schools across the Valley for their programs,” said Clark. “So many people enjoyed the event it would be a shame to let it die completely. If it does not happen this year, then we hope to be ready to go again next year.” From there my next stop was a return to Harlingen where Sunshine RV Resort in Harlingen was supposed to be having a fish fry. I arrived a little after four, tasting those fish only to find that since it was the first of the month, there was a potluck at 6 p.m. instead of a fish fry at 4 p.m. I decided to go eat and come back later. When I arrived, the potluck was just about to get started. The way it was organized was efficient and a bit unusual. JoAnne Montgomery explained each person/ couple signed up to sit at a particular table. Then they signed up to bring a particular type of food. Each table had three main dishes, three vegetable dishes, three salads and three desserts. When it was time to fill “Leavin’ on Your Mind,” “The Wayward plates everyone rose and walked in a circle around the table, taking what they wanted Wind” and “You Belong to Me.” She told the story of Patsy’s second tu- from the dishes on their table. Most took at multuous marriage to Charlie Dick that of- least a bite of each dish. The Montgomery’s table had brisket, a See RAINY pg. 38 chicken noodle casserole with homemade

noodles, jello and fruit salad along with another salad and apple pie, cupcakes and cookies plus other foods. Another table had sauerkraut and sausage and a variety of pies. It looked like a fun way to get everyone served quickly, but no one was allowed to jump tables if they saw something they wanted on the other table. While everyone ate, I spoke with Andy and Brenda Coin, the entertainment for the evening. Brenda worked for Charlie Pride in Branson for 10 years as a backup singer. Andy played with Mel Tillis and several other notables. Now in their fourth year in the Rio Grande Valley, the couple is known for their classic country, which I love. I stayed and listened to several songs, longer than I had intended because they were singing my favorites. Forcing myself to leave because I wanted to make one more stop at Park Place in Harlingen where Razz Ma Tazz was performing their Christmas show. Razz Ma Tazz is the show choir for Nikki Rowe High School in McAllen. They put on great performances in many RV parks. Their show featured a gloomy boy referred to as “the Grinch” because of his lack of Christmas spirit. Other members of the group sang favorite Christmas songs in an effort to get him to join in the holiday fun. I arrived home 11 ½ hours after I left, a bit weary with the only thought being to tell my husband to tie me to a tree if I ever come up with an idea like seeing how many Winter Texan activities I can do in one day again.

From pg. 04 lection are no longer available and have appreciated in value considerably over the original purchase price. Just as it is in the minds of children’s fantasies, the North Pole Village is whimsical in its design and purpose for each unique structure. The imaginations of children and adults alike can wander into fantasizing what it would be like to live in the magical world complete with the miniature moving parts. Not only does Santa have a house, he also has a castle and a getaway home. Mrs. Clause can attend to her gardening needs with her own plant nursery. Elves have a rooming house, trade school and bunkhouse. Besides Santa’s workshop, there is a reindeer barn, factories, and tai-

with Santa Claus’s house and related items and a few of his factories. Another is strictly Elfland, a landscape of miniatures tailored with the elfin helpers’ size in mind, complete with a spa to relax after a hard day at Santa’s workshop. Another part of the village is built around the North Pole train and a little gondola in a working ski lift. The last table captures the enthusiasm of Santa’s pending arrival as the tops of houses spell out “Santa” as if to beckon Santa not miss a stop on the path of his global flight. All are landscaped with trees, hills, mountains, river and more to complete the setting. The museum is open to the general public on Tuesdays through Fridays from 8 a.m. to 5 p.m. and Saturdays from 10 a.m. to 2 p.m. Admission is free

SURVEY

From to deter human and drug trafficking operations in support of the Texas Department of Public Safety (DPS). Steve McCraw, state DPS director, last week said currently National Guard troops man observation posts and call in potential illegal activity they spot to state troopers. The UTPA Business and Tourism Research Center is seeking input from Winter Texans pertaining to the added security forces now stationed in the RGV, and related issues, such as border safety and

pg. 01 illegal immigration. The survey can be taken online at www. UTPA.edu/RGVSecurity. All responses to the study are anonymous. Results of the study are intended to provide RGV officials and state elected representatives with a better understanding of how the community – including Winter Texans – views the security forces, the new, undocumented immigrants and their effects on life in the RGV.

From pg. 01 of friends they were loaded on the back of Worley’s truck and taken to the colonia. They stopped to check with Proyecto to see who was to get the furniture and then delivered it to the home where it was given to grateful residents who had nothing to sit on in their house. The family that received the furniture was represented by Elisa Espino, Jesus Carranza and Sandra Mosqueda, who are all members of the same family. In all, 15 people, including seven adults and eight children, live in the house. At the end of the season Worley takes several loads of food to the colonia. Most residents do not like to take left over canned goods back home with them so they send them to the colonia. Worley also takes loads of perishable food goods such as half jars of mayonnaise, ketchup and jellies to the colonia. Women in the colonia gather at Proyecto when they know a load is coming in and make selections to take home. At the end of last season Worley delivered four truckloads of food to the colonia. “Bentsen Grove has been working with Proyecto for several years. They got started when several ladies were out delivering Christmas baskets to needy families with

restroom stop so the LJISD representative stopped at Proyecto. The ladies met Sister Caroline, one of the five missionary Sisters of the Immaculate Heart of Mary, an International organization with headquarters in Rome, who started the mission. Once the ladies learned about the mission and the extreme need of the people, they involved other residents like Bill Worley, his friend Nick Vos, George Wardrip and many other residents of Bentsen Grove. Wardrip says as many as 99 percent of residents help in some way. Winter Texan Times editor Kathy Olivarez rode with Wardrip for the delivery and learned some of the many ways Bentsen Grove residents help Proyecto. Pueblo de Palmas, the colonia it serves has 2500 residents. Most are recent immigrants who are cannot receive government assistance. Bentsen Grove residents have been generous with donations of food, money and clothing as well as furniture and other household goods. The ladies also make quilts for distribution among residents. Dottie Milks and Phyllis Wardrip, who were also in the car, are both past presidents of the ladies’ auxiliary at Bentsen Grove. Each year the auxiliary adopts 10 families who have the greatest need at Christmas. If it is a toilet, that is what they

ey is raised through drawings, craft sales and donations. Betty Stillings, who will be 92 in February, organizes a golf outing each year that raises about $2000 for Proyecto. Others collect funds to help provide a Thanksgiving dinner at the colonia. Some ladies help with English-as-aSecond-Language (ESL) classes. Most people start not knowing English but once they master the language, it helps them in their job searches. Several have competed their GED training and passed the test. Most colonia residents do menial labor such as ditch digging, picking crops and cleaning houses. Wardrip said one of the biggest success stories was a lady who got a job at Wal-Mart and did so well she got a promotion. The Bentsen Grove Bicycle Club raised funds through bike rides to help build planter boxes and to help place the pews in St. Anne’s Church in the colonia. Wardrip said the Red Hat Ladies would be having their Christmas luncheon later on during the day. They were bringing gifts of toys to be given to the children. For many years, Wardrip played Santa when the gifts were delivered. He has now passed that job on to someone in the colonia.

the original five remain at Proyecto. Sister Emily Jacson is from the Philippines, while Sister Fatima Santiago is from India. Sister Caroline said there are at least two families living on each of the 800 lots in the subdivision. There is an average of 4.5 children per family. They need clothes, shoes, refrigerators, washers, blankets, heaters and things such as soap and toothpaste. The families give Proyecto a wish list of the things they need most. The Espino family that received the furniture had asked for furniture, heaters and blankets. Whenever goods are delivered to the mission, Sister Caroline’s assistant, Lydia, checks to see who has requested that item and whose needs are the greatest. When asked about Worley’s deliveries to help colonia residents, Sister Caroline said she liked to think of him, “an angel without wings” because he comes at least twice a week with goods to help the people.

During the second set she opened with a couple of Connie Francis’ hits, “Lipstick on Your Collar” and “Where the Boys Are.” Both songs were popular during the late 1950’s and early 1960’s just as Cline’s song were.
