Not sure what to bring to the next BBQ or backyard hang? Try one of these little numbers. They taste good, dress to impress and they won’t break the bank or your spirit (for those of you who hate to cook)!

White Bean Basil Dip

Use your garden herbs and tomatoes for this one. So fresh. So tasty. And satisfying! Lots of protein and calcium, not to mention some of those micronutrients we all need. Easy to travel with and easy to share- it’s a winner!

What You Need: • 4 cloves of garlic, smashed and minced • 1/2 cup extra virgin olive oil, plus extra for drizzling • 2 (15 oz) cans cannellini beans, drained and rinsed • 1/4 tsp lemon zest • juice of 1 lemon, approx. 4 TBSP • 1/2 tsp dried oregano • 1/8-1/4 tsp dried thyme (or fresh if you have it!) • 1/4 tsp salt + extra to taste • black pepper, to taste • 1 cup cherry tomatoes, halved • 1/4 cup fresh basil leaves, chopped • 1/4 tsp paprika (optional) • toasted pita bread/chips or assorted veggies for dipping * grill some pita for extra crunch & drizzle with balsamic reduction for a little sweetness What You Do: To take the bite out of the garlic and amplify the flavor, microwave 4 smashed + minced cloves 1/2 cup of olive oil. You can also sauté them stove-top. In a food processor, combine beans, lemon garlic, olive oil, lemon juice, lemon zest, oregano, thyme and pulse until well blended. For an even creamier dip, add some extra EVOO and blend. Season with salt and pepper to taste, as well as any additional oregano... let your taste buds be your guide! Toss tomatoes and basil in a drizzle of EVOO and toss. Spread bean mixture onto a shallow bowl or plate and top with tomatoes and basil. Sprinkle with paprika and serve with freshly warmed pita bread, pita chips, and/or assorted veggies for dipping.

Wedge Salad on a Stick

‘You don’t win friends with salad’? Ehh, YEAH you do. If there’s bacon in it. These little guys are delicious and they travel well. Bring them to a picnic or any event where silverware might be scarce and a table might not be an option.

What You Need: • Cherry Tomatoes • Lettuce • Bacon • Red Onion • Blue Cheese Dressing What You Do: Cut small squares/triangles of lettuce, onion and bacon, and skewer with cherry tomatoes. Drizzle with blue cheese. Tada!

007 Frozen Hot Chocolate

This is a good one for those summer guests when it’s 90 degrees and you want something sexy for dessert but you don’t want a dairy gutbomb. The secret ingredient: cauliflower! What You Need: • 2 cups / 250g frozen cauliflower florets • 1/3 cup / 100g pitted dates • 6 Tbsp. raw cacao powder • approx. 1 ½ cups / 350ml plant-based milk (I used oat milk) • handful of ice cubes (made from either plant-milk ice or water) Optional ingredients: • Pinch of vanilla powder • coconut cream (from the top of a can of coconut milk) • cacao nibs • handful soaked cashews • protein powder What You Do: foxvalleymagazine.com

1. Place all ingredients in a blender and blend on high until smooth. 2. Add more liquid if necessary (mixture should be relatively thick). 3. Top with coconut cream and cacao nibs, if desired. 4. Enjoy immediately.

Gluten-Free Spinach Balls

These are some tasty little guys fro your gf friends. Easy and YUM! What’s not to like? What You Need: • 6 cup fresh spinach leaves trimmed, washed (220 g) see note for frozen/ cooked spinach • 3 cup boiling water • 3 eggs • 1/2 cup grated cheese - try organic cheddar • 1/4 cup fresh herbs of your choice, finely chopped I used cilantro • 1 cup gf break crumbs (you can find these in the gluten free section of the grocery) • 1/2 teaspoon garlic salt

What You Do: 1. Preheat oven to 350 F (180 C). 2. Trim and wash the fresh spinach leaves. 3. Place the leaves in a large mixing bowl and over with boiling water. 4. Cover and set aside for 3 minutes. 5. Rinse the spinach with cold tap water. 6. Drain using your hands to squeeze all the remaining water. 7. You should obtain about 2/3 cup (160 g) of packed cooked spinach leaves. 8. If you are using frozen spinach, defrost and measure this quantity. 9. Place on a chop board and finely chop the cooked spinach. 10. Transfer into a mixing bowl. 11. Add eggs, cheese, herbs and panko gluten free crumbs. 12. You can also add salt and pepper if your cheese is not very salty. 13. Combine with a spoon or your hands, until it forms a batter from which you are able to form balls with your hands or use a small cookie scoop maker to avoid the mess. 14. If too moist add slightly more crumb until easy to roll as ball with your hands palms. 15. Place the balls on a non-stick cookie tray covered with baking paper. 16. Bake at 350F (180C) for 15-20 minutes or until golden on the top. 17. Serve immediately or cold * Serve with dips of your choice like pesto or hummus

The beloved summer season tends to come and go too fast, so there’s no time to waste when planning a summer trip with friends or family. Check out these five essential on-the-go travel tips that will ensure a safe and stress-free trip.

Pack smart The contents of your adventure pack depend entirely on your summer plans. Packing for a longer beach vacation? Be sure to make a packing list so you don’t forget anything important, and pack plenty of layers to prepare for all types of weather. If your summer is filled with day trips to the beach, pre-pack the suits, towels, beach chairs and plastic bags for wet clothes. If you plan on going on long hikes, have bug spray and a first aid kit at the ready. Try to expect the unexpected; you never know when duct tape and a little emergency cash can save the day.

Guard yourself against the sun Nothing can ruin a fun time quite like sunburn can. Sun protection is something you don’t want to leave behind and you certainly don’t want to get a late start to your day because you have to run to the store to pick up another bottle of sunscreen. Make sure your summer adventure pack is full of sun gear: sunscreen, sunglasses, SPF clothing, and a baseball cap or a wide-brimmed hat.

Have cold water at the ready It’s important to stay hydrated in the summer heat, so don’t forget to pack plenty of water. To keep your water ice-cold, fill your water bottles halfway with water and stick them in the freezer. Before you leave for your next outing, fill the bottle to the top and you have refreshing ice water to go! Or invest in a well-made reusable, insulated bottle that will keep your water cold throughout the day. Tip: Freeze fresh fruit such as berries or lemons in ice cube trays and toss in your water bottle before you go for a refreshing unique twist!

Stay energized with protein-rich on-the-go snacks It can be hard to eat healthy when you’re on the go. Mini Quiches with Chives, Shallots and Turkey Bacon INGREDIENTS • • • • • • • • • • •

8 Eggland’s Best Eggs (large) 12 oz. turkey bacon, chopped 1 small onion, minced 1 shallot, minced 1 teaspoon garlic, minced 1/4 cup fresh chives, minced (plus more for garnishing) Small handful of parsley, roughly chopped 1 teaspoon Italian seasonings Pinch of smoked paprika 1/2 teaspoon salt 2/3 cups fresh Parmesan cheese

DIRECTIONS 1. Preheat the oven to 350 degrees F. Lightly grease a mini muffin tin with cooking spray and place it on a cooking sheet. Doing this will make it easier to transport in

and out of the oven. 2. In a large skillet, add in the turkey bacon and cook on medium-high heat. After a few minutes, add the onion, shallot and garlic and cook down for a few more minutes. 3. Lastly, add the chives, parsley and Italian seasoning and cook mixture until the turkey bacon is cooked through. 4. Remove mixture from heat and set aside until needed. 5. In a 4-cup liquid measuring cup, add in the eggs and take a fork to whisk until evenly beaten. 6. Add the paprika and salt and whisk to combine. 7. Place a thin layer of Parmesan cheese into each individual muffin tin. 8. Take one teaspoon of the bacon mixture and add it to each tin. 9. Carefully pour enough of the egg mixture into each muffin tin, just until it covers the filling mixture. Sprinkle with some more Parmesan cheese. 10. Bake quiches for 1618 minutes or until the eggs have fully set. 11. Allow to cool slightly before taking a butter knife to release them from the pan. Serve immediately or let quiches cool completely, cover with plastic wrap, and store in the fridge. To reheat, place them on a baking sheet in a 375-degree oven for 5-7 minutes, or until heated through.

The Sugar Grove Corn Boil has an Interesting History “Come One, Come ALL! Wear your sun bonnets and straw hats. Recall the days of yesteryear and join in the old fashion countryside spirit.� These were the first three sentences from the 1971 addition of the Sugar Grove News Paper describing the Sugar Grove Corn Boil. The history of the Sugar Grove Corn Boil goes back to 1967 as a small community gathering behind the Sugar Grove Community House staged by the Young Adult Club for the purpose of raising funds. The Young Adults

Club (couples under the age of forty) put on a four-hour event for friends and neighbors with the first event raising funds for the first street lamp. As couples began ‘aging out’ of the group, valuable volunteers were leaving. It was decided that the group would reorganize under the new name Sugar Grove Community Group. There were no age restrictions. The intention remained the same - fundraising for village improvements. As the event continued to grow, a new location was needed. In 1985, a team of volunteers spearheaded by Ted McCannon, used donated materials to build Volunteer Pavilion that is currently used today. Five to thirty volunteers would find time after their everyday jobs to construct this building. As more individuals donated their time and supplies, the garage door, kitchen, bathrooms and fire place you see today were added to the building. Lastly, two bicentennial coins were embedded in to the surface of the floor and the building was complete. It was ready in time for the 1985 Corn Boil.

In the years to come, the Sugar Grove Chamber of Commerce and Industry and the Village helped grow the event. In 2000 and it became a two-day event. During a board meeting, the Village passed a temporary liquor license offering both The Lions Club and the Sugar Grove Fire Fighters Auxiliary, both not-forprofit groups, the opportunity to sell alcoholic beverages. Due to the success of the two-day event, in 2004 it became a three-day event, with 12,000 ears of corn ordered. Sugar Grove Corn Boil History/Add one 2017 marks the 50th anniversary of the Sugar Grove Corn Boil. Over the years many things have changed, yet at its core, the festival remains the same. The tag line of the Sugar Grove Corn Boil, NFP is “Where friends and family come together to have fun”. From the beginning, corn grown and harvested by members of the community was cooked and boiled using a steam engine. Steel troughs were laid out and filled with water. The water was heated by lines hooked to the steam engine. As the steam poured through those lines, the water was heated to a boil,

corn was added and then cooked. While the steam engine is no longer used, corn continues to be a staple of the festival. From the community gathering with a population in the hundreds to today’s fourday festival with an average attendance of 35,000, the event continues to evolve. What makes the event even more unique is that it is still free to attend! This year will feature some new arrivals, a few give aways and maybe even a surprise or two. Over the years, many memories have been created and to mark this occasion the Corn Boil Committee would like to share the memories of community members and

what the Corn Boil has meant to them. “Making memories” is the ultimate goal. Each year the committee raises funds for the Corn Boil. After all bills are paid, the committee donates to a variety of community groups. Last year the committee donated to a total of 18 local charities.

Beers, Bands & Barns Beer, Bands and Barns offers a day of Family Fun at Dickson-Murst Farm Bring your own chair or set a spell on one of our comfy red chairs set up around the 150-year old Dickson-Murst Farm in Montgomery for this year’s version of Beers, Bands and Barns on Saturday, July 29 from 2 to 8 p.m. Two barn stages will feature area bands including: The Barons from Morris Joe and Rita from Marseilles Steel Crazy Steel Band from Aurora We Are Here from Downers Grove Naperville Riverwalk Pickers Yorkville’s Jason Hubbard An Open Mic will be available for anyone who wishes to stop by and play for the crowd. There’ll be plenty for the kids to enjoy including the kids playground, tours of all the farm buildings, and the Farm’s tractors will be on display. Country Girl Food Truck and a Taco Truck will offer a variety of food items for a reasonable cost. As for the beer, there’ll be plenty of craft beers to enjoy: Wolf Pup from Golden Road Brewing, Big Wave Golden Ale from Kona Brewing, and Goose Island IPA. Parking and admission are free. The Conservation Foundation’s Dick son-Murst Farm is located at 2550 Dickson Rd., Montgomery, south of Route 30. The Conservation Foundation, headquartered in Naperville and celebrating its 45th anniversary this year, is one of the region’s oldest and largest not-for-profit land and watershed conservation organizations. Since it was founded in 1972, TCF has helped preserve nearly 33,000 acres of open space, restored and cleaned miles of rivers and streams, and educated thousands of kids by engaging them in nature and the outdoors. ‘Live and Uncorked’ – outdoor concert parties at Blackberry Farm When it comes to the best of the best, outdoor concerts are at the top of the list – warm summer nights groovin’ in the cool twilight. You don’t just hear the music… you see it and feel it. Blackberry Farm is going to make that experience even better. Starting Thursday, Blackberry unveils its summer concert series – “Live and Uncorked” – with the first of six highly anticipated performances. Live and Uncorked is the west suburban version of a Ravinia experience. Concert-goers basically bring a party to the party. Around the stage, it’s a festival with lawn chairs, blankets, coolers, food, drinks and – yes – adult beverages. It’s a BYOB event (21 and older, of course). So bring a bottle of wine, pack a few craft beers or assemble a mix of mixers. Better yet, go full style with a picnic basket with glasses, mugs and appetizers. It’s just $5 admission – for two hours of live music outdoors amid the classic backdrop of Blackberry Farm. You can’t even get a cup of coffee at Starbucks for that price! Each show is from 7 to 9 p.m., but doors open at 6 so you can get in early, find a place to set up and start your pre-concert picnic. Piano Man – July 6 Do you remember when rock was young? Piano Man is the premier tribute to Elton John and Billy Joel. New Fun Zone at Windmill City Festival Windmill City Festival has become a tried-and-true tradition for many local families. Held in the heart of downtown Batavia at the beautiful Riverwalk, the festival features countless activities over the course of two and a half days! Whether you check out the plethora of live bands, peruse the Craft and Vintage Market, participate in the Pet Parade or dive in to the Ice Cream Eating Contest, every member of the family is sure to find a new favorite activity! In Second Annual Benefit For Autism Awareness Raising $759,000 For Generation Rescue There was electricity in the air June 19th in St. Charles, IL. New Kids On The Block member Donnie Wahlberg joined forces with Generation Rescue for Another Evening with Donnie Wahlberg and Special Guests concert, raising $759,000 to spread awareness and help fund autism treatment for low-income and at-risk families. The Blue Bloods star’s wife, Jenny McCarthy, kicked off the show with a heartfelt speech to fans and announced the groundbreaking, in St. Charles, of a custom built integrative health clinic providing comprehensive treatment for all individuals across the special needs spectrum. A portion of the funds raised from both this year’s and last year’s concerts have been allocated to the clinic. The historic Arcada Theatre walls were vibrating from the cheers of fans, friends, sponsors and supporters. Wahlberg took the stage along with the FOX VALLEY MAGAZINE / July 2017


Chicago Children’s Choir and gave his usual 200% of a performance. Joining him for the second year in a row were fellow NKOTB members, Jordan Knight, Joey McIntyre and Danny Wood, as well as Naughty By Nature. Also donating their time and talent were Shawn Stockman and Wanya Morris from Boyz II Men, and returning guest artist, Ashley Rodriguez, who did a stunning version of “True Colors”. The talented musicians backing the performers were Ethan Farmer, Om’mas Keith, Stanley Randolph, and musical director Rob Lewis, all of whom are currently on tour with NKOTB. Following the concert was a VIP After Party hosted by Wahlberg and McCarthy at Shakou St. Charles. The evening’s co-producers were Candace McDonald, Executive Director of Generation Rescue and Ali Winkler. “This evening is very special to me,” said McCarthy of Another Evening with Donnie Wahlberg & Special Guests. “Not only does it help Generation Rescue provide low-income families with access to essential treatment, but it also gives

Donnie and I a chance to connect with friends and fans in a special way. There’s no greater unity than spreading love for a good cause.” So far, Generation Rescue has provided assistance to more than 750 families in all 50 states, with medical grants of $1.8 million and counting. Kids assisted by Generation Rescue demonstrate improvements in sociability, sensory and cognitive awareness, speech and communication, as well as their health and physical behavior. As a special surprise to the charity, long time Generation Rescue donor Pat Joyce (owner of the luxurious Summer Winds Resorts properties) committed to a $1 million donation as initial funding to build the next of Generation Rescue’s integrative medicine clinics, in the state of Missouri. On their way they gain the friendship and companionship of a Scarecrow in search of a brain, a Tin Man hoping for a heart, and a cowardly Lion who yearns to be brave. Water Street Studios Gallery new exhibit: “Chicago Artists Interpret Shakespeare” Water Street Studios’ Dempsey Family Gallery will be hosting its latest art exhibit titled, “Chicago Artists Interpret Shakespeare.” This popular show, curated by Anne Farley Gaines, Robert Kameczura, and Maureen Warren, was first exhibited in 2012 and features a collection of works by nearly 50 Chicago-area artists inspired by the poetry and plays of William Shakespeare. The Shakespeare show has been displayed in a number of venues throughout the region and was also one of many arts presentations in Chicago in 2016 that commemorated the 400th anniversary of Shakespeare’s death.
