A Local Hero by Kalinda Colley

“I’ve almost had a tree fall on me, but that was just unlucky” he says, as he brushes it off like an everyday occurrence. Andrew Gilbert is 19. He lives in Lemon Tree Passage with his family and likes to read. He’s just like others his age. Except, of course, that he’s a member of the Tilligerry Rural Fire Brigade, and dedicates his time to helping others in times of disaster. Andrew joined The Brigade in 2011, after visiting one of their open days, and has since spent his time fighting fires, answering midnight call outs, attending car accidents, clearing debris and helping the local community under some of the worst conditions. He says that in the beginning, he didn’t love the work, but after getting to know some of the other members, it has grown to be his passion. With an age range from 16-85, combined of both females and males, Andrew says that the members are what keep him motivated. “There are 40 people in our brigade now and most of them are close friends.” In 2013, when Andrew was half way through his HSC, the Fingal Bay fires broke out. Andrew notes this as his most difficult, yet memorable job. “We had to sit there for 12 or 13 hours watching houses, with 5 of us and one truck. Then we came home and all of our area had started to burn down. Three or four houses there as well. We fought that after the 13 hours at Fingal. It was a long night”. The following day, after volunteering all night, Andrew sat his HSC English exam. He says that although he fell asleep half way through it, he doesn’t regret a second; “I did a lot of good work, and met more people.” Since his first job fighting fires, at midnight where he was a little bit scared, and confronted with the size of the fires, Andrew says he now finds the experience “exhilarating.” The recent storms saw him pulling over 12 hour days, helping clear communities and then coming home to help repair damage at his own house. When I asked about the late nights, the early mornings, and putting on wet clothes and boots Andrew laughed and replied, “You just have to deal with it.” Suzie, Andrew’s mother, says that she admires Andrew for his hard-work and commitment, stating that he never fails to answer, no matter what time it is. “Every time his pager goes off, he responds. He has ran (sic) to the station at 1am to help a stranger.” She said his biggest attributes are his kindness, respect and humbling personality. “He has sacrificed a great

deal of his personal time to help others, even when he was going through bad times of his own. He goes above and beyond to help strangers…When he is thanked, he just shrugs his shoulders like he didn't do anything special.” Working in some of the most dangerous, scary and uncomfortable circumstances, Andrew says the work has almost become second nature. “I just like to know I’m helping other people,” he humbly says. In the future, he wants to continue to be a member of the Tilligerry Rural Fire Brigade and also to hopefully join a town fire brigade. His is completely committed to helping the local community, and meeting great people along the way. Suzie says that all she wishes is for him to be happy, “he really deserves happiness.” He truly is a local hero.

Get Funky on Fridays Funky Freestyle Fridays are coming and they might be just what you’re looking for... Nikki Shilling is the owner of YogaSphere, a yoga studio located at One Mile, but her newest adventure has a different focus. It’s aimed at “tweens” and young teens - boys and girls. She wants them to move, laugh, and stretch but just for fun. Even perhaps, with a parent. “If somebody doesn’t feel like they’re getting the movements and they just want to break out and dance…they can,” Nikki says. With young children herself, Nikki saw an opportunity to provide a service that she feels is missing. She has discovered that once kids reach a certain age, sports and/or dancing can become quite competitive – pretty much, “all or nothing”. This means that committing to an activity can end up time consuming and costly. Perhaps even disappointing. Her vision is to provide a Friday class for kids aged 10 and over, with no long-term commitment or "goal" other than having fun. Working in conjunction with Kate Davidson, an ex primaryschool teacher who specialises in hip-hop and dance yoga, and Charli Robinson, who’s trained in ZUMBA, Nikki will run a 45 minute ZUMBA class, followed by a 45 minute dance yoga class. Kids can do one or both classes, and even have a parent join them for the dance yoga. Combining both classes provides an experience that is “completely for fun” says Nikki. “ZUMBA is great to warm up the body and to get to know the group, while Dance yoga is basically a series of poses linked to create a flowing sequence which is choreographed in time with some funky dance music”.

In particular, Nikki believes that stretching is imperative, not only for that age group, but for everyone, and this may be a great way to achieve that. Kate says that having the option to relax, even for a short period of time, is also important. “At the end of the yoga, we will have a relaxing period. I think kids do need to have moments of stillness. Just to concentrate on their breath, let go and chill rather than be thinking at a million miles an hour like they normally are.” Nikki also believes the classes will provide an opportunity for some parents to hang out and bond with their kids through exercise and laughter. “Sometimes it can be hard for that age group to communicate with their parents so it’s nice to do something where you don’t feel as if you have to have a conversation, but you’re kind of doing something fun together, and having a bit of a giggle.” The ZUMBA classes will start at 4pm, followed by Freestyle Dance Yoga at 5pm. Each class will be $10, with combined classes costing only $15. A parent is welcome to join their kids at 5pm for dance yoga at a cost of $10. A mini workshop is planned during the school holidays on Friday 3rd July, and fortnightly Freestyle classes will be starting Friday 27th July. “It’s casual and it’s affordable,” Kate says. Drop your kids off, and join them later for dance yoga. It will be a chance for everyone to have a laugh and get some exercise in an enjoyable way.

"So it’s going to teach the kids rhythm and musicality as well as connecting the movement with the breath,” Kate says. Nikki says the benefits are emotional and physical; “I think it’s a really good self-esteem booster. It’s a way to exercise and

Fight those winter blues By Kalinda Colley

There’s a tendency in the colder months, to get the “winter blues”. With shorter daylight hours and chilly temperatures, we find ourselves unmotivated, and constantly craving comfort food. We notice changes in our behaviour, and have that constant morning struggling to make ourselves get out of the warmth and comfort of our beds. Generally, as a community, we hibernate. But this winter, there is something new, fun and empowering to keep you moving, and to fight off those winter blues. Zone Active is the perfect solution to become part of a fitness community and to keep you and your family active all year round. Kate and Valeriy Martynov, the founders of Zone Active, say that, supplemented with the proper nutrition, keeping active all year round can have significant positive impacts on both individuals and the family dynamic. “Being active simply just improves your mood…It’s hard to resist coming into the gym, as we all leave feeling vibrant. From personal experience, with juggling a young family and full time work, it’s our fitness routine that keeps the family healthy and happy.” The local couple say that by having an exercise regime within the family, not only do they continue

Of course, with a range of ages, and personal interests, not each family member is likely to agree on a specific exercise form. Kate says the aim of Zone Active is to provide a “destination within a destination,” that provides a range of activities for everyone from infants (with the KinderGym program) to adults. “The big picture of Zone Active is for it to be a fun multi-purpose family fitness centre. Adults are able to train at the same time that their kids are taking classes,” Kate says. There’s something for everyone with cross-fit, yoga, dance, trampolining, tumbling and gymnastics. The space is large, welcoming and comfortable, and includes a café and crèche. They will provide fit and fresh meals, birthday party options and monthly community events to get everyone together as a group. Valeriy says that for adults the hardest part is getting started. He says that often people are unsure or scared about what the classes actually entail and are concerned about their competency in keeping up. The CrossFit system allows for universal scalability - it is within your reach. Life is full of challenges - challenge yourself to at least give it a go before you decide it's too hard. You will enjoy feeling empowered and be back for more.

Being active simply just improves your mood... It's hard to resist coming into the gym, as we all leave feeling vibrant. to see improvements in themselves, but also in a variety of aspects in their children’s lives, for example their appetite strength, concentration, self-esteem and endurance. Similarly, they say it helps them encourage and inspire each other. While it is a family regime, each member has their own routine, which allows them to do something together, whilst giving each other some space. It has become a common point of interest within the family that gives them goals to continually motivate each other towards achieving.

One of the newest, and most exciting editions is the 15 metre air floor. The air floor is used for tumbling, which is one of the 7 gymsports of gymnastics. Along with the air floor, the space will have an Olympic size trampoline for kids and teen classes. Kate says that the addition of gymnastics will be heavily focused on tumbling and trampolining. “The classes that are already running are really popular and have had a great response.” It’s completely unique to the Bay, and really exciting. Kate and Valeriy want to create an active community and inspire families to keep each other motivated and moving. It’s functional movement and within everyone’s capabilities.

Introducing... Muay Thai Instructor, Rick Sarmias of BayMMA Tell us a little about your background in martial arts and how you came to set up BayMMA

I started taekwondo in 2005 and achieved the rank of 1st Dan Black Belt. After I received my black belt I realised that this was the start of my journey. I learnt some great skills, self-defence, learnt how to use the body, and then travelled to Thailand and trained Muay Thai, which is a martial art of eight limbs: hands, elbows, knees and legs. It is a very strong and effective art and is respected around the world. (Instructor) Greg and I were friends through business and our shared passion for martial arts made us mates. We created BayMMA simply because we love our training - it's our second life - and now we have the gym we can train and also teach other people.

What issues can martial arts help children (and families) to cope with?

I have trained a lot of kids with a lot of different attitudes. Martial arts can help kids with asthma, build self-confidence, create a calmer self and an awareness of people and what's going on around them, eg. reading a situation before it happens or before they get hurt. Overall it can help them become a better person.

What’s your experience with your own students graded in Muay Thai, and what positive changes have you seen in them?

I've seen them all progress, from not knowing their left/right hand or foot, from no push-ups or sit-ups to 5/10/15/20, improved flexibility and realising that we are all equal. With my adult students I've seen medical issues reduced, confidence boosted, people making new friends, also people pushing boundaries they never even knew they had.

What advice would you give to a child starting martial arts for the first time?

If you start and get stuff wrong, don't worry because you are never wrong, you are only learning and even I get stuff wrong and that's because we have to be wrong to know what's right. Now get out there and have some fun in this class!

Did you know that exercising during Winter can burn far more calories than in the warmer months? It’s true! Winter is the new Summer when it comes to efficient, calorie burning exercise. Isaac Smith, Health CA YM ci, SpS Isaac Smith, B.Ex & Fitness Coordinator at the YMCA ace Raymond Terr Raymond Terrace, agrees that the colder months can work to our advantage. He explains that “as our body temperature decreases, our thermoregulatory system kicks-in. This is our internal furnace. The colder we get, the harder it works to keep us warm, thus burning more calories to keep that flame burning strong.” Want to lose fat fast? From an expert’s perspective, Isaac explains that “our greatest fuel source comes from our fat molecules, compared to that of carbohydrates and proteins. Our fat molecules produce far greater energy per molecule than the other 2 sources. However, to break down our fat units for energy, requires a process known as beta-oxidation, relying heavily on oxygen consumption.” He says that “as we exercise harder and faster, this process becomes diminished, switching to our energy systems reliant on carbohydrate as fuel sources. So, even the smallest amount of exercise every day in the

colder months, places huge demands on our oxidative energy system for fuel.” So let’s get this straight, our metabolism increases in cold temperatures due to the fact that staying warm requires more work from our bodies… Thus demonstrating that Winter really is the perfect time to begin (or amp up) your fitness routine and start working in earnest for that Summer beach body! Taking the fuss out of food. by ANDREA HUGHES

As every parent knows, children can be notoriously difficult to feed. What was flavour of the week just a few days ago can suddenly be relegated to the bottom of the pile without another thought. It’s frustrating and time consuming making two or three different meals every night for fussy eaters but it doesn’t have to be that way. My Child Won’t Eat Meat As well as frustrating, it can also be worrying when a child decides a particular food group is off limits. Meat is a valuable source of protein and iron, as well as zinc and certain B vitamins, but it’s not the only food high in these nutrients. Nuts, seeds, eggs, beans and peas are also full of these goodies and can easily replace meat in a diet. A quiche or omelette is an excellent way to incorporate eggs into the diet and can still please the whole family. A traditional fried rice can be cooked healthily without too much oil, including meat and fish for the family members who want it, and it also includes egg. Another method of introducing meat to a child is to try different methods of cooking and serving. Stir fries, pasta bakes and sauces, and mild curries can be high in flavour and effectively hide the meat. My Child Hates Sauces If your child loves bland food with no added sauces it can be difficult to convince the rest of the family that it tastes good. However, getting a few basic base dishes can help. Once you have the base, then it’s easy to add different things to satisfy each person. Mix together cooked brown rice, cooked peas and corn, some wilted baby spinach, lemon juice and season to taste, then each family member can add whatever they want to boost the flavours. A little left over roast chicken for that fussy eater, the same chicken heated in a curry or Spanish style sauce for everyone else. Mix it all together and enjoy. A similar basic base can be made with pasta too.

If you’re making a chicken curry, stir fry or pasta bake, fry off the chicken, garlic, onion, mushrooms, spinach or whatever veg you enjoy, then remove one portion for the fussy eater before adding the liquid. Mix it in with some seasoned pasta or rice and you’ve two different meals without having to cook twice. Many children love cheese and it makes a really simple addition grated and mixed in to bland rice or pasta with a little seasoning. Cheese is a perfect partner for many fruits or vegetables such as avocado, tomatoes, baby spinach, onion and mushroom, add a little chicken and it makes a tasty, healthy dish. Vegetables Are My Child’s Enemy It’s that age old problem: how to get a child to appreciate these super foods. We’ve all heard the ploy of hiding grated vegetables in sauces, pies and tacos but there are other ways to introduce vegetables into your child’s diet. Firstly, get your child involved in every part of the process. Get them growing vegetables in the garden or in pots on a balcony. Even a few herbs on a sunny kitchen window. They will love the idea of eating something they have grown and harvested themselves. Get your child involved in the kitchen, making a salad or helping to peel or chop up the veg. Make it colourful and fresh and show them the whole preparation and cooking process. Serve sticks of carrot and celery with hommus or avocado dip. Add vegetables to your child’s favourite food. Homemade pizzas and quiches are perfect for this. You can even add vegetables to treats like scones, muffins and popsicles instead of fruit. Beetroot popsicles look exactly like berry ones and taste just as good. These are just a few ideas to attempt what seems like an impossible task, however it’s important to remember that fussy eating is often just a phase your child is going through. If they are healthy and happy with plenty of energy, it’s likely they aren’t doing themselves any harm at all. As frustrating as it can be, sometimes you just have to grin and bear it.

Wouldn't it be fabulous to no longer have to worry about bothersome ingrown hairs, itchy, prickly stubble the day after shaving, protuding bikini lines, etc... and the list goes on! Well, of course there is a safe and effective way to permanently remove unwanted body hair and as luck would have it, this treatment is now available right here in Port Stephens! 'Laser Hair Reduction' is a laser technology designed to get to the 'root' of the problem and destroy hair growth in it's first stage by emitting pulses of 'Intense Pulse Light' (IPL) into the hair follicle. I caught up with local expert, Barbara, from Cleanskin Laser in Nelson Bay to get a few questions answered about this treatment. How does laser hair reduction work? A laser beam is pulsed on the area where hair is to be reduced. It passes safely through the skin and is absorbed by a pigment called malanin found in the hair follicle. The heat from the laser destroys the root of the follicle preventing its growth, reducing up to around 90% of the hair after a series of sessions. What areas of the body does this work best on? All areas of the body can be treated. The treatment is called permanent hair 'reduction', so a client may have to return, after a long period, to have an area redone but from experience this is not common. Is it painful or harmful to the skin? The sensation from IPL is often described as feeling like a flick from a rubber band, but this does not last and most of the clients I have treated report that they were comfortable during this very fast treatment. The treatment is not harmful to the skin. If there is a reaction it would simply be redness which is common, but once again doesn't last for long afterwards. We would cease treatment immediately if a client had a reaction, and some skins (rarely) just can't be treated.

How long does the procedure take? The time factor of the treatment is obviously dependent on the area/s being treated. For example, underarm takes about 10-15 mins, 1/2 leg about 30-40 mins. The treatment is conducted every 4 weeks until the client is satisfied with the results. When should you expect to start seeing results? In most cases clients can see a small result after the first consultation, even clients who by nature have a lot of hair. Clients can expect a minimum of 6 treatments, but this will vary from person to person. How much does it cost? The cost of treatment can be discussed at the initial consultation, which is free. Our prices are very competitive keeping in mind there is no travelling to Newcastle or further. Can anything go wrong during treatment? During the initial consultation we do a spot test and if there is going to be any kind of reaction on the skin this will be visible within 24hrs, otherwise all future consultations should be trouble free. How long have you been offering this treatment? I have been a qualified 'Laser Therapist' for over 2 years, having worked in Sydney and in my own business here in Nelson Bay. What happens during the initial consultation? Initially, the client has some forms to complete, then the procedure is discussed and a spot test is conducted to ensure the area of skin we are working with is suitable for the procedure. Everyone from mum and dad to the family cat seem to spend most of the season wheezing, sneezing and coughing, and the things that come out of a child’s nose don’t bear thinking about.

We love Port Stephens, but because my husband works long hours and we have no friends or family nearby, I can be left feeling quite lonely and find it hard to cope with the children with no support close by. This is also leading to conflict in my marriage. What would you suggest? ANSWER: It’s really tough to reach out for help sometimes. We have all invested in the myth that because we have children we don’t feel lonely, or because we are married and there is enough money for bills etc, we don’t have any right to get depressed. As a Mum of young kids I certainly felt like this and now as a counsellor I see a lot of parents facing this issue. It is more normal than anyone thinks - there are so many mums sitting at home feeling exactly the way you do! It doesn’t have to be this way. Don’t let the highlight of your day be an often repeated movie over lunch or a call from a friend. If your husband is the only source of help or adult conversation you have that’s a big pressure for both of you and it’s not surprising things are getting tense. It’s easy to think we’ll be ok or that it doesn’t matter but setting a good example for our kids by taking responsibility for our own happiness is a great positive step! For parents of kids below school age Playgroup can be a Godsend. It does not even matter so much that the kids get someone to talk to or play with – although that will happen too. There will be a Mum like you there who you can have a cup of coffee with, and who is facing the same stresses you are. The best friendships are formed over making fairy bread! Get along to volunteer in the cafeteria, or join the P and C that’s what it’s there for, they’ll love you for it. You can fry a pikelet and take money for sausage rolls with the best of them. Swallow your nerves! It’s completely normal to be a bit scared to do this but it’s well worth it. For mums with a bit of a daredevil streak there is Port Stephens Outdoor Adventure Mums. They are on facebook and also email: psadventuremums@hotmail.com. They go kayaking, abseiling, bushwalking and surfing. The big three – fun, fitness and friendship. For military families there are local “Buddies” support groups these are a great group of parents – usually mums – who get together for friendship, babysitting circles, connection and local knowledge. There are several Buddies groups all over Port Stephens. To find one you either Google “Defence Community Organisation – Hunter – Local Buddies Support groups” or call 4034 6973. Take a big deep breath and reach out to the other mums feeling like you are. If you don’t find a group you like, get on Facebook or put an article in the school newsletter and start one! Sharing Time By Louise Catlow, LMC Lawyers

Parenting can be tough at the best of times, but for parents who are separated, parenting their children together can be more than challenging, it can sometimes feel impossible.

The most common disagreement we encounter centres around whom the children shall live with, and the amount of time they shall spend with the non-resident parent. So, how does the law help? From a legal perspective, when dealing with parenting cases, the best interests of the children are paramount. The law also provides that there is a presumption for the parents to equally share parental responsibility in any long-term decision-making, such as health, education, religious and cultural issues. That presumption exists unless there are reasonable grounds for believing a parent, or a person who lives with that parent, has a history of abuse or family violence. Once the Court makes an order for equal shared parental responsibility, it will then consider the amount of time the children shall spend with the parents, either: • equal shared care; or • a significant and substantial amount of time. T he Court’s decision will depend very much on what is appropriate, and what is reasonably practicable, given the particular circumstances of the case. There are a number of factors which help the Court determine this, including for example: • age of the children; • proximity of the parties to one another; • work commitments which may impact on a parent’s ability to pick up / drop off the children at school or after school activities; • ability of the parents to care for the children’s needs, particularly their emotional needs;

• any views expressed by the children, depending on their age and maturity; • willingness of the parents to facilitate and encourage a close and continuing relationship with each other. Each case is different and there is no ‘one size fits all’. Quite often we hear from parents who claim there is an imbalance in the law favouring one parent over the other. However, we have seen a pattern emerging in recent years with the Court more inclined to make orders for the non-resident parent to spend a ‘significant and substantial’ amount of time with the children. This translates as more than just alternate weekends and half the school holidays, and includes some day time and evening time, thus enabling parents to share more in the day-to-day activities, such as school events. Parents who work together, and who put measures in place to ensure the best interests of the children are being promoted above and beyond their own, are more likely to achieve an outcome which works for their family. A collaborative relationship allows for children of separated parents, who are raised in two households, to enjoy a close relationship with both parents. Certainly, parents who are unable to promote the best interests of their children are less likely to be able to persuade the Court to make Orders for more time. If you are struggling to reach agreement for spending time with your children then you should firstly mediate. In NSW we have a number of organisations who can help with mediation. Of course, if mediation doesn’t return the outcome you had hoped for, or the other parent simply won’t reciprocate your request to put the needs of the children first, then please speak to a Family Lawyer who can discuss the individual circumstances of your case and advise on the best course of action.

When Love is just Not Enough… by Melissa Cox, Wavelengths Allied Health

“I hate you, you never do anything for me! I NEED those pants – the other ones look stupid! You promised me yesterday, and if I can’t wear them today, I’m not going to school!” Ash had been arguing about the pants for the past forty-five minutes. It was 8:25am, mum was running late, and the pants were filthy. That overwhelming exhausted feeling overcame her and, once again, mum caved. “Fine, go ahead and wear your filthy disgusting pants,” she screamed. If this scenario sounds all too familiar, it is important to consider whether your child is suffering a diagnosable condition. Since children pass through many developmental stages as they mature, it is important to understand the differences between normal childhood attempts to challenge authority and symptoms of full-blown Oppositional Defiant Disorder (ODD).

Parenting a tricky kid can be exceptionally exhausting, isolating and sometimes very demoralising. With the right approach and support however, it can also be immensely rewarding. What these children need most is for the adults around them to be calm, in control and working together as a team. ODD is characterized by a recurrent pattern of negativistic, defiant, disobedient and hostile behavior toward authority figures which persists for a period of at least six months. In my experience, children presenting with ODD are vastly misunderstood, and are usually reacting to some sort of deeper issue they are finding impossible to manage, for example ADHD, anxiety, learning difficulties or familial trauma. Problem is, a child’s ODD-type behaviours alienates the very people who might be able to help them with this, and the conflict distracts everybody from the real issues at hand. Nine year old “Ash” appears driven to gain control over and defeat adults, is relentless in their pursuit of proving adults to be wrong, stupid, or both, and is highly driven to defeat anyone’s attempt to exercise authority over them. Ash typically turns every interaction with adults into win/lose situations and is vigorously intent on winning, seemingly thriving on the negativity and conflict. Ash denies any responsibility for behaviour and appears to have very little insight into the impact on others. Ash’s parents constantly report being at their “wits end”, and are struggling to support each other and their other children, who also suffer from the fallout. What we find time and time again in our practice is that the parenting techniques generally utilised in our culture do not tend to work with children with these patterns of behaviour. When you think about it, all of those techniques aim to increase the child’s motivation to comply via “carrot and stick” techniques. The oppositional child’s desire to be the author of their own life will trump this every time. In other words, we need to be aiming to change the dance, not the dancer. Slow cooked lamb shanks with roast kipfler potatoes, green beans & pan jus Editor, Saffron, versus Chef, Sheldon

Serves 4 Ingredients 2 Tbsp olive oil 4 (1kg) French-trimmed lamb shanks 1/2 cup (75g) plain flour 2 medium (300g) brown onions, chopped 2 medium (240g) carrots, chopped 2 medium stalks celery, chopped 4 cloves garlic, crushed 2 Tbsp tomato paste 1 cup (250ml) red wine 2 cups vegetable stock (off cuts of carrot, onion, celery, bay leaf, 3 peppercorns, stems from chopped parsley). Place into 3 cups cold water and bring to boil then turn down and simmer for 45 minutes. Take off heat and strain. 1 x 400g can chopped tomatoes 2 Tbsp sugar Herbs - Combine; picked sprig of fresh rosemary (1 teaspoon dry), 4 sprigs fresh thyme (1 teaspoon dry), 2 bay leaves (cracked to help impart flavour), 2 tablespoons chopped fresh parsley (1 teaspoon dry)

When I first looked at the list of ingredients, I must be honest, I balked a little. I'm the queen of simplicity and am adept at creating (not very adventurous) meals with 3 or 4 ingredients. However, once I had a read through the method, I realised that the preparation was really quite straightforward and it only took about 10-15 minutes in reality. Plus, the beauty of this dish is that once it's in the oven, you can pop the timer on and forget all about it, going about the rest of your day with the knowledge that dinner is pretty much sorted! And the result? As you can see from the images, my plating up leaves a lot to be desired and I'll never make the cut for Master Chef, however, taste wise this was a huge hit with my family. I will definitely be revisiting this recipe over the Winter months as it serves two very important purposes: a comfort food fix and a winter warmer all in one. Tip: Buy your lamb shanks from the local butcher. Sheldon recommends Medowie Meats.

Turn oven on to 160 degrees Celsius

Heat the oil in a large roasting pan on stove top burners (*) making sure the pan will fit in your oven

Toss the lamb in flour that has been seasoned with salt and pepper; shake away excess. Cook lamb over high heat until browned all over; transfer to a bowl and set aside leaving pan on stove top

Add the onions, carrots, celery and garlic; cook, stirring, over medium heat for about 2 minutes or until the onion is starting to soften

Add the tomato paste; cook, stirring, for a further minute

Add the wine to the pan; bring to the boil

Place lamb shanks back into pan

Pour in vegetable stock

9

Pour undrained tomatoes over shanks

10 Sprinkle

brown sugar or white sugar over lamb shanks

11 Sprinkle

chopped fresh or dried herbs over the top of the

shanks

12 Place

baking paper over top of shanks and then cover with foil

13 Place

in oven and cook for 2-3 hours or until lamb is soft and falling off the bone

14 Serve

the lamb on top of roast kipfler potatoes, steamed beans (**)

The Sound of Music If you haven’t been to a school musical this year, you need to carve out some time for Medowie Christian School’s production of ‘The Sound of Music’. With the movie ‘The Sound of Music’ celebrating a mammoth 50th anniversary this year, what a fantastic time to walk down memory lane right here in the heart of Medowie. The cast and crew, comprising of students from Kindergarten to Year 12 will delight you with sensational quality acting, singing and dancing as part of the school’s celebratory 20th anniversary year. Approximately sixty students from the school will present the classic musical in 4 performances in the Medowie Christian School Multipurpose Centre on the 30th – 31st of July. This will be the third major musical production at Medowie Christian School in recent years, following on from very successful performances of Annie Junior in 2010 and Beauty and the Beast in 2013. The Sound of Music centres around Maria, a sweet, young postulant whose love of freedom makes it obvious to her superiors that she is not suited for religious life. She is sent

The musical will be directed by Samantha Van de Mortel, Principal and Tracey Deal our Deputy Principal. Mrs Deal said, “A musical gives students the occasion to develop confidence and teamwork skills. Staff are encouraged by the students’ enthusiasm and relish the opportunity to nurture their creativity”. There is a lot of behind-the-scenes preparation in addition to demanding rehearsal schedules. If you are anything like me, you may be thinking that during winter you shouldn’t need to do much lawn work, having slaved every weekend with the mower during summer to keep it in check. However, winter is the perfect time to ensure that your lawn comes up looking lush and green come spring. Casandra of Anna Bay Sand & Earthmoving, a family owned and operated business since 1957, shares some great suggestions on ways to have your lawn come through winter looking fabulous. Beware of Lawn Grubs, Army Worms & Other Pests: One particularly annoying pest that is active during autumn and winter is the lawn grub. Lawn grubs, like armyworm, cutworm & sod webworm, can cause serious damage to your lawn. Keep an eye out for these nasty pests and get onto them quickly with a grub or pest control. Signs to look for on your lawn are unsightly patches of yellow throughout your grass. This is a good indication that you may have a grub. Mowing: It’s best to keep your lawn slightly longer throughout the cooler months so it’s better equipped for photosynthesis and weed suppression. To maintain a longer length lawn you’ll need to mow less frequently (hurrah!) and lift the blade height. Debris: To enable your lawn to handle the cooler weather and reduced sunlight, be sure to rake your lawn to remove any debris which may be covering the surface. This includes leaves, branches, soil etc. Also flood debris from heavy rain and anything that may have blown onto your lawn from windy weather.

Weeds: Winter weeds such as winter grass and a range of broadleaf weeds can be very problematic as your lawn finds it harder to out-compete them. The trick is to get onto them right away as soon as they appear. Don’t let them get out of hand or set seed. Remember; one year’s seeding is seven years weeding!! Water: Water far less frequently through winter and only if your lawn needs it. Mornings are still the best time to water when necessary. Wear: Wear and tear will take its toll on the average lawn in winter as the grass will be dormant or semi-dormant and will not start repairing itself until spring arrives. The best thing to do, if at all possible, is avoid a lot of traffic on your lawn during the colder months. Fertilize: Finally, fertilize your lawn using a fertilizer formulated specifically for winter application. Fertilizers with a high phosphorous content will promote root growth and give you a strong, healthy lawn for spring. Child Proofing Your Home & Garden

When we embark on the journey into parenthood, we are so excited and emotional and can’t wait to start organising the nursery. As parents or parents to be, some considerations are taken into account but there are other things that we don’t quite think about until a near miss. The home and garden is a dangerous place for children and thousands of children are hospitalised each year due to accidents around the home. As children get older they become more inquisitive and naturally want to imitate the tasks we complete and this does pose a significant risk. As the parent of a baby, I felt my home was quite safe for my daughter. However, my recent decision to embark on a career as a Family Day Care Educator meant that our home was scrutinised under a ‘risk assessment’ test, and I realised there were more dangers and hazards in our home than first met the eye. There are many simple, easy to implement and cost effective measures that you can take to make your home a safer place.

• Ensure that table cloths do not over hang the edge of the dining table. • Wipe spilled liquids immediately. • Depending on the design of your kitchen, it may be ideal to also install an extended gate (the ‘3 in 1 play pen’ can be used) to keep children out of the kitchen entirely.

Bathrooms and laundry • Store all products (body wash, shampoo, hair spray, shaving cream etc) away in a locked cupboard. • Never use appliances near water and always store them in a safe place. • Regulate your hot water or use ‘Hector cups’ - caps that go over your hot water taps - so children cannot turn on the hot water. • Never leave your child unattended in the bath or bathroom.

Here is a handy checklist to help you promote a safe environment for children in your home.

• Use safety caps in power points and never touch them when your hands are wet.

In general

• Wipe up spills immediately and use non slip mats or dry towels to prevent slips.

• Lock your screen doors with a key and place key in an area where children can’t reach, but is easily located when the need to open arises. • Invest in a fire extinguisher and fire blanket.

Living areas • Ensure televisions are secured to the wall or a unit (most new televisions have the safety attachments in the box) or place a gate around the entire TV unit (the ‘3 in 1’ gates are perfect as they can extend a longer distance). • Toys should be thoroughly checked daily. Keep an eye out for toys that have loose or small parts or sewn on parts such as eyes as they present choking hazards, toys that are soiled and unable to be washed or are broken and unable to be repaired.

Outdoors • Never store chemicals in old food containers or soft drink bottles. • Never leave children unattended near a pool. • Keep garden tools away from children. • Ensure your fences are in good repair with no splinters or exposed nails. • Minimise piles (rubbish/garden waste) in play areas: piles are a hotspot for snakes. • Cover sand pits at night and check for animal faeces before children play in them.

• Low and exposed power points should have the plastic safety plugs inserted. • Windows should be kept shut or pieces of dowel used in the tracks to ensure that children are unable to open the window wide enough to jump through. • If you have furniture up against a window, it is a good idea to use safety glass or have a professional apply safety film to the window so that in the event that the glass breaks, it does not shatter into sharp pieces.

Kitchen • Keep all appliances out of children’s reach. • Use safety locks on cupboards that house sharp utensils, chemicals or medications. • Empty teapots or kettles after you have boiled water. • Keep pot and pan handles over the stove, never allow them to hang over the side of the stove. • Store plastic bags in a locked cupboard or out of reach of children. A New Approach for Struggling School Kids Helps Them Catch Up at Twice the Normal Speed. According to learning expert Christine Hawkins children who fall behind can catch up quite quickly. She explains how they can catch up and never risk falling behind again. Are you worried your child is slipping behind at school? According to Christine Hawkins, education expert and owner of Kip McGrath Education Centres in Raymond Terrace, Wallsend and Greenhills, if you’re concerned about your child’s progress then you should trust your instinct. Signs such as your child becoming frustrated and angry at having to do homework, lower self-confidence, negative self-talk and falling grades are all signs that something is wrong. And leaving it to your school to fix it can lead to very poor outcomes. According to Hawkins, every child has unique learning needs, and if their needs fall too far outside the majority of their class, teachers often struggle to find the time to identify them and help them catch up. Hawkins says, “We help so many bright, talented students who fall behind for a number of reasons. And by working in small groups with qualified teachers we can quickly work out the best way to help them and they catch up in no time.”

“Teachers are so busy these days that students are being left behind… and no-one notices until too late” The big question is what happens to a child when they fall behind. According to Hawkins children who fall behind naturally experience falling grades, but also suffer low selfesteem, become negative and despondent and often develop behavioural problems as they struggle more and more. But it’s not all bad news. In fact, it often only takes a couple of tutoring sessions for things to rapidly turn around. “It’s amazing how quickly our experienced tutors can transform a child’s attitude. Once they realise they’re catching up and they begin to understand their schoolwork again everything else falls into place. They become confident and happy. And many parents tell me of the huge relief they feel when they see the dramatic turnaround for themselves.” Students at her centres typically close the gap by learning at twice the rate of regular kids. The obvious question is how this is possible, especially for kids who have already fallen behind. Hawkins explains, “We run an accelerated learning program. We determine each child’s learning gap up-front and design a program specifically to help them catch up. We use a wide range of advanced teaching resources which are specifically 28

designed to accelerate learning. Every week we correct their homework and their work here in the centre. And if we spot an area of difficulty we alter their program to focus on it, and we test them thoroughly to make sure they have mastered it.”

“Students typically close the gap at twice the rate using our accelerated learning resources” According to Hawkins it’s critical that there is excellent and open communication between the tutor and the student’s parents. “Our tutors are always available for a discussion after each class, and parents are actively encouraged to arrange special meetings with their child’s tutor at any time.” Many struggling kids are now successful students. Hawkins’ favourite story is of Amber Lyons who really struggled with her maths at school. Her schoolwork improved in every area, she won the numeracy award for her year and became school captain.

Even former teachers who may understand how to teach the majority of students but lack the special skills and access to our accelerated learning resources to bring a child back up to speed quickly when they fall behind. And they certainly don’t set the student up to learn independently once their tuition is finished.”

Most part-time tutors lack the skills and resouces to help struggling children catch up. So How Do You Find Out If Your Child Is Struggling? As Hawkins explains, it’s not always easy to know if your child is struggling. But if your intuition tells you something is wrong then you should act swiftly before it leads to other problems such as lower self-esteem, disruptive behaviour and a negative impact on their grades. Once it’s acted on though the change is quite dramatic. Golden Syrup Flapjacks Ingredients: 250g Porridge Oats 175g Butter 175g Soft Brown Sugar 1-2 tbsps Golden Syrup (the more the gooeyer) Method: 1

Preheat oven to 150C. Lightly grease a 20cm baking tin. In a large pan, melt together the butter, sugar & syrup, while stirring. When melted, remove from the heat and stir in the porridge oats.

Pour into tin and smooth the surface with a spoon. Bake for 35-40 minutes or until edges are brown and surface has turned golden.

Place the tin on a wire rack. Cut into squares after 10 minutes, but leave to cool completely before removing from the tin.
