N

estled in a grove of virgin pine trees on the shores of beautiful Silver Lake, the Silvercryst Restaurant is a favorite dining destination of both tourists and area residents. Located approximately 3 miles east of Wautoma, on State Hwy. 21, the Silvercryst offers fine and casual dining in their “lakeside dining room” or their “hillside dining room,” with a menu that includes such things as a 14-oz. top sirloin, a one-pound pork chop, seafood entrees, and homemade salad dressings. Some guests prefer to dine in the more casual Lakeside Lounge atmosphere, where sandwiches, pizza, salads, and other items are offered. The Lakeside Lounge also hosts live music all year round, with local and regional music groups to suite a number of tastes, and a nice-size dance floor. During the summer months, weather permitting, the Sand Bar is open for drinks, with outside dining available. Lunch is also available in the summer from 11:30 a.m. to 2:30 p.m. daily, with pizza available on the lunch menu Saturdays and Sundays. Originally established in 1894 by William Walker, the original log-cabin-style resort has evolved into an elegant restaurant/ resort/motel complex that has provided quality food and family fun for over a century. Longtime employees Mike Pfaller and James Heck purchased the Silvercryst in the spring of 2000 and still own and operate it today.

wned and operated by Patrick Arndt, the Pine River Winery, home of Raven’s Cache Wines, is located just off County Road H between the rural communities of Pine River and Poy Sippi, just a quarter mile from the winding Pine River in Waushara County. The family-run winery creates wines from local, national, and international grapes and fruit. Much of the fresh fruit, which includes raspberries, rhubarb, blueberries, black currents, mulberries, plums, and gooseberries, are grown organically on the 5-acre property. Others, like strawberries and cherries, are purchased locally. Those who visit Pine River Winery can enjoy a complimentary wine-tasting or vineyard tour, visit the winery shop with locally-made pottery, cloth wine bags, and wine charms, and can also enjoy a glass of wine at the wine bar or out in the vineyard gazebo. The wines are available by the taste, glass, bottle, or case. They can also customize wine labels for various events including weddings. H

ave you ever bought a supposedly spectacular, highly recommended wine that didn’t quite live up to your expectations? If so, the problem might not lie with the wine itself, but with how it was being served. How you deliver a wine matters almost as much as the variety of wine you pick. From the temperature to the glassware, the specifics of how the wine gets to your mouth can make a noticeable difference.

While you should always take steps to store your wine at the correct temperature — especially if it will be stored for a long period of time — sometimes wine has to be chilled or warmed up before serving. To chill wine, a quick and easy way is to place it in a bucket of ice and cold water. How long you leave it in the ice will depend on the type of wine. Champagne, which should be served quite cold, may take 30 minutes in the ice, compared with just five or 10 minutes for a warmer red wine. While the right temperature to serve a wine is at some level a purely personal preference, here are some general guidelines for the service temperature: Light white, rosé, sparkling: 40° to 50° F, Photo: elenathewise / yaymicro.com Full-bodied white, light red: 50° to 60° F, Full-bodied red, port: 60° to 65° F

GLASSWARE

Different types of wine are also best served in specific types of glassware. RED WINE: Glasses for serving red wine typically have wide, deep bowls so that plenty of oxygen contacts the wine. This emphasizes the scents and helps to bring out the subtle flavors in reds. WHITE WINE: White wine glasses typically look similar to the red-wine glassware, except with smaller bowls and a smaller opening at the top. Because white wine doesn’t usually age for as many years as red, it doesn’t develop the same complexity of flavor and thence doesn’t need as much oxygen contact. CHAMPAGNE: Long, thin glasses called Champagne flutes are ideal for sparkling wines. The tall, narrow shape directs the tiny bubbles all the way up the side of the glass, extending their life and intensifying the aroma that is funneled to the top of the glass. SHERRY: Because sherry has such an intensely sweet flavor, special glasses with a smaller capacity are often used to serve it. Other dessert wines are popularly served in sherry glasses, too.

Vines and Rushes Winery

ines & Rushes Winery is a new winery located on the Prellwitz family farm in rural Ripon where Ryan and Megan Prellwitz grow 4-acres of the cold hardy variety of grapes, primarily the Marquette, St. Pepin, and the Petite Pearl. The wine-tasting room and bar and most of the furniture were constructed by Megan’s father and grandfather using wood from salvaged timber-framed barns in the area to give the room a rustic rural Wisconsin look. Some of the wines created by Vines and Rushes Winery include: Frontenac Gris (dry white); LaCrescent and Brianna (semi-dry whites); Frontenac Gris (semi-sweet white); St. Pepin (sweet white); Marquette Rose (sweet Rose); Marquette, Mascoutin, and Sabrevois (dry reds); and Frontenac (sweet red). The winery, located at 410 County Road E, Ripon, offers complimentary wine tasting and is open Sunday through Thursday, noon to 5 p.m. and Friday and Saturday, 10 a.m. to 6 p.m. The winery also hosts various events including cooking classes, yoga, craft/art fairs, and live music. Miller Farm Market, Hancock

M

iller Farm Market in Hancock has been in the pea business for the past 24 years. Keeping with the tradition, Gramma Miller’s Farm Market is family-owned and operated right here in Waushara County. The idea of the market started because of the fresh pea sales that they have had for 24 years. The farm started out by selling peas, tomatoes, and strawberries out of its small office just around the corner. The family did this for years and after a lot of requests for more produce, they decided it was time to build a market. Gramma Millers Farm is a pride of Hancock. With family tradition and farm fresh produce, it is hard to beat. Originally a roadside stand, Gramma Millers opened its doors in 2003, but its still known throughout Wisconsin for its fresh 5# bags of peas.

Flyte Farms, Coloma

F

lyte Farms, Coloma, is known for many items of produce but everyone waits for Flyte’s corn to come in. Often thought of as some of the sweetest and best bi-color corn in the state. It is a reputation that no one can beat. Flyte’s is also known for its strawberries, which you can pick or have picked for you. Lunch Creek Vineyards & Winery

R

ecent winner of nine Wisconsin State Fair top awards, Lunch Creek Vineyards & Winery features several varieties of fruit and grape wines made from apple, plum, and cherry trees, as well as grapes and several varieties of blueberries, strawberries, raspberries, and rhubarb, all grown on the property. Visitors to the winery can do wine tasting in their quaint tasting room, which is decorated with old reclaimed barn boards that were used from an old building that previously stood on the property. Or they can enjoy a glass of wine on their newly built patio. The winery was established in 2008 by owners/ operators Lyn and Kevin Jones, who proceeded to plant 2 ½ acres of cold hardy varietal grape vines. The interior was finished with the help of family and friends and opened for business in September of 2013. It was named after Lunch Creek, a Class A trout stream, which flows through the property. Lunch Creek Vineyards & Winery is located 2 miles west of Neshkoro at W1845 County Road E. Hours of operation are: Fridays, 1-6 p.m., Saturday and Sundays, 10 a.m. to 5 p.m. or by appointment. Choosing a dessert wine A rich, sweet wine is a great way to elevate an ordinary dessert to a work of culinary art.

dessert. Likewise, the strong flavor of a dark chocolate cake would require an equally strongflavored wine to balance it out. It would be too easy for the wine’s taste to get lost in the chocolate otherwise.

Unfortunately, as wellversed in eating desserts as we Americans are, we generally don’t have as much experience in picking dessert wines as our European counterparts. That’s beginning to change, though, as more people look toward specialty wines to complement their end-of-meal sweets. Here are some basics to know.

MATCH THE FLAVOR

The first rule of thumb is that the dessert wine should be slightly sweeter than the dessert itself. Otherwise, the sweetness of the dessert could emphasize any bitter tones in the wine when they’re combined on the tongue. The second rule is the wine’s intensity should match the dessert itself. For example, a light, delicate, fruity pastry could easily be overpowered by an intense red wine. You would want to pick a very delicate, fruity white wine to match the lightness of the

If you’re new to dessert wines, the best way to decide what to serve when entertaining is to experiment ahead of time. You can pick two or three of your favorite, sweet specialty wines to start with. You may be able to find them at a nearby grocery store, but you’ll generally find a better selection of dessert wines from boutiques. Whether served in a glass to be paired with a sweet treat, or used in the dessert preparation itself, you can try out different recipes and combinations to find fun, exotic combinations. And remember, the most elegant desserts aren’t necessarily the most elaborate ones. Simple ideas like biscotti cookies served with a sweet, delicate wine, or drizzling some of your favorite vintage on top of ice cream and raspberries, can be an easy way to end a memorable meal.

The Oak Tree Restaurant Experience M

ontello’s Oak Tree Restaurant is owned and operated by Executive Chef Colin Coppens, who received his training and degree from the Florida Culinary Institute. He worked in several restaurants in the Miami-Dade County area before returning to Marquette County nearly 3 years ago after deciding to stay in the area after visiting his parents who are area residents.

Specialties at the Oak Tree Restaurant include unique appetizers such as Dynamite Shrimp, buttermilk breaded shrimp fried crispy and tossed in a homemade dynamite sauce, as well as Saganki, an imported Kasseri cheese lightly dusted then pan seared in olive oil and flamed tableside, and Sirachi Chicken Bites which is boneless chicken served with ranch dressing for dipping. One of the other draws of the restaurant, according to Coppens, are their Wednesday through Saturday nightly specials. On Wednesday the Oak Tree serves all-you-can-eat fried chicken with dumplings and gravy. The Thursday special is slow-cooked BBQ ribs. Friday fish dinner offers the choice of Icelandic cod, Haddock or Catfish – beer battered, blackened, broiled or corn meal breaded and the Saturday selection is prime rib, roasted for 24 hours available in Petite, Queen or King Cut. All dinners are served with parmesan-herb crusted bread that is baked fresh daily. In fact, Coppens prepares

all of the menu daily and to order from scratch. It is something that he feels sets Oak Tree Restaurant apart from other restaurants in the area. Their large bar is welcoming but when you look into the coolers behind it you may not recognize some of the labels on the bottles. Oak Tree Restaurant carries over 50 different beers – 40 of which are craft beers. “Customers are craving craft beers so we are responding,’ explained Coppens. He and his distributors together selected the craft beers he stocks, many of which are from Wisconsin. “Now, instead of a bartender handing you one of the big name beers, we allow customers to walk behind the bar and select their beer of choice from the cooler and they really seem to enjoy that.” The Chef is constantly adding new menu items, using the freshest available ingredients seasonally and is finding that customers are responding to his creativity and skill. “Over the past 3 years we have up built quite a following of customers who visit us regularly and we truly appreciate the way the community is responding to what we are doing.” While closed on Sunday and Monday, the Oak Tree Restaurant is open for lunch Tuesday thru Saturday from 11:30 a.m. – 2:30 p.m. and the bar reopens at 3:30 and they begin serving dinner at 4:30 p.m. nightly. They can also accommodate parties and special occasions on site as well as catering of events.
