it seems odd that a magazine about wellness travel should use “Hibernate” as a theme, well, what can we say but that’s just how we feel come February! And we know that there is more to wellness than travel experiences alone.

Mainstream media now regularly covers the benefits of being wellness-focused for our global community, from prioritizing sleep to disconnecting regularly from our hyper-plugged-in world. Technology is not the enemy, but with former big tech executives speaking out about the exploitative behaviours of their former employers, the curtain is being lifted on what some are calling the “next big tobacco.” In this issue, we prioritize wellbeing through self-care, taking time to slow down and tune in through mind and body treatments, both at home and at the spa. This season is typically when our energy levels take a noticeable dip, so we asked an integrative herbalist to recommend supplements to boost vitality. At home, your space should be your sanctuary; our feature on creating an intentional living space will inspire you to design the healthiest space for you to love in, live in, and play in. If you have felt like doing nothing but wrapping in a cozy blanket, lighting the fireplace and cozying up with a good book, it doesn't mean you are lazy or crazy or anti-social. It means you are doing exactly what the season is driving you to do - it's good for us to hibernate this time of year! We need the rejuvenation, the slowness, and the stillness because it's vata season.

Vata dosha is the energy of movement. Vata is responsible for all movement of the body, so it's involved in...everything. Vata energy governs fall and the first part of winter. And at this time of year, the surrounding nature of vata is dry, light, cold, subtle, moving (windy) and rough. While that is happening outside, those qualities increase in us too. Our skin, hair and nails tend toward dryness or splitting and breaking. Our bodies are colder. And our mind can feel like it's racing and unsettled due to the light and mobile qualities of vata. Because nature is larger than us, the season will drive our tendencies, so we need to make sure we are keeping in good balance with the season. wander-mag.com

In Ayurveda, like increases like, so we use the opposite qualities to stay balanced. A simple example is, if it's cold, we need to warm up. The opposite qualities of vata are oily, heavy, warm, dense, still and smooth, and those are all vatabalancing qualities. During winter, to maintain our balance in mind and body, we want to bring these vata-balancing qualities into our food, exercise, daily routine, mind and emotions. The goal is to slow down, create a reliable routine, embrace and practice stillness, and keep ourselves grounded. Sounds pretty good, right? If the world is moving fast, light and cold around us, we need to stay steady, warm and cozied, not jump into the fray. Three cheers and a permission slip for hibernation! 12

6 Ayurvedic Ways to Do Hibernation Right

1) Get enough sleep. Low quality or quantity of sleep is one of the fastest ways to imbalance vata because the body doesn't get the stillness, heaviness and restoration that it needs. If we don't get enough sleep, the energy of movement will keep increasing and we can end up with all kinds of problems including insomnia (it's a cause and an effect), constipation, anxiety, moodiness, racing mind, scattered thoughts and overall exhaustion. Tip: Go to sleep at the same time each night so your body keeps a rhythm. 2) Heavy, warm, comfort foods. In general, foods during vata season should be warm, heavy, and wet (saucy, oily, soupy) to counterbalance the cold, light and dryness in nature. This is not the season for salads, rice cakes, or raw vegetables because those foods are too cold and dry. Anything that is too cold or raw will dampen our digestive fire, increase the dry, light and cold 13

qualities within us and can cause vata problems like bloating, cramps, gas, constipation and constant snacking. Practice: Foods like hearty soups, stews, and warm comfort foods are fantastic choices to satisfy and ground our minds and bodies. 3) Bring on the oils! Oil in our foods and oil on our skin keeps us from drying out on the inside and outside. Using oil on our skin acts as a barrier which keeps us warmer and skin will also feel soft and look younger. Dryness is the cause of early aging but oil fills in the dry "cracks" and creates a suppleness so we look more youthful and radiate a nice glow. Practice: Warm up some expeller pressed almond oil on the stove (not too hot) and massage on your hands, arms, feet and legs before going out into the winter cold. Using oils in our food is important too because the outside of our bodies is a direct reflection of the inside. Ideas: Dip slices of baguette in olive oil. Drizzle olive oil on warm vegetables, squeeze a little lemon and sprinkle salt and pepper. Swap out butter for ghee and spread ghee on your toast or English muffin, or melt in oatmeal.

lunch at the same time (bonus points if you bring it from home) and exercise at the same time. That's it. If you build the rest of your schedule around these simple practices, you will feel grounded, clear, and vibrant.

5) Reliable schedule. If we practice doing the same things at the same time each day, we don't have to constantly reinvent. Reinventing takes thinking and energy and if we do that every day, all day, we will get exhausted. Keep the simple things simple so that your mind has room for more influential and challenging tasks. Practice: Wake and sleep at the same time each day. Eat

Don't these things sound luxurious and almost too good to be true!? The fast-paced lifestyle most of us are used to wears us down. These practices will help rejuvenate and build the body while freeing the mind to let go of a flurry of decisions to focus on what really matters. So go ahead, make a cup of my chai, grab a blanket, and cozy up for some R&R.

6) Consistent yoga routine. This is not the time of year to do intense, fast-moving exercise. Hooray! 4) Steam. Oil + steam is a magical combination! We feel like hibernating anyway, so this is perfect. Oil balances dry. Steam (warm, wet, heavy) This is the time to keep our feet planted on the balances cold, dry and light. Practice: Start up a ground while bringing full intent and connection hot shower and let the bathroom steam up. While between our bodies and minds. Monica B’s Chai I concocted this recipe on my own because I was saddened by the powdery stuff at coffee shops called “chai.” I believe the secret ingredient is black pepper which gives it a rich zing. 12 cardamom pods 8 cloves 8 black pepper balls

2 cinnamon sticks 1/4 tsp. of ginger 3 black tea bags

Crush the cardamom, cloves and pepper. Fill a pot with 3 1/2 cups water, 2 cups organic whole or coconut milk. Dump all spices in the pot. Turn on medium heat and bring just to a boil then remove from heat. Add 3 tea bags and let steep for 10 minutes. Strain into a mug, add brown sugar if desired. It will be rich and milky. A question that I get asked all of the time is, "How can I have more energy?" Well, let's start by defining what we mean by "more energy." An energy shot and a cup of coffee? I don't think so! To me, an energized person is one whose life is truly in balance; and by life, I mean love, work, dreams, the years, the miles and every organ system working in rhythmic harmony. I don't meet many people like that, because it's what we strive for, what we try to make time for, in a world where work, love, family, dreams and health often seem to pull in many different directions. So, how do we muster the strength to counter all of the different energy zappers and achieve real energized living?

Yes, good sleep, stress reduction and a good diet are keys to this balance; but sometimes those things just aren't there. So what else can we do to stimulate energy? One of the things that I love about proactive support from herbs and supplements is that they have a focused ability to kick-start real change. Think about it: the human body is one synchronized, active community of trillions of determined little cells, each working to be energized, to have optimal nourishment, on our behalf. 17

Knowing this, it makes sense to give the body some targeted help. Here are three daily proactive supplements that I've found to be most helpful in improving cellular health while enhancing mental and physical energy levels. Set the Mood

What's a spa day without some relaxing music, an aromatic candle and a glass of wine or a soothing cup of tea? Start with that and then take a warm washcloth and spray with your favourite relaxing oil (lavender, chamomile, or vanilla are great to destress with). Put the washcloth up to your face and take a deep breath of your soothing, oil scented steam. Take this time to decompress and be present.

For Your Hair

A hot oil treatment for your hair can be beneficial to relax the mind while repairing and protecting strands. Warm a bowl of coconut or castor oil and coat hair (apply to dry unwashed hair) from scalp to strands. Focus on massaging the scalp from the base of the neck up to the front of the scalp. Massaging your scalp encourages hair growth and relaxes a stressed mind. It can also feel surprisingly meditative. Throw on a shower cap to keep in the heat which helps penetrate the strands, replenish and strengthen dry hair. Leave on for 20 to 30 minutes or longer and wash out. wander-mag.com

For Your Face

Begin by making a face mask using 1 tablespoon of fresh lemon juice mixed with 2 tablespoons of honey. If you do not have lemon and honey you can substitute with yogurt. Spread a thin layer on to face and leave on for 15-20 minutes. This mask will brighten your complexion, lightly remove surface dead cells while hydrating skin. Rinse off and follow with a moisturizer (preferably oil based, as they are naturally nutrient-rich and can help heal and restore skin).

For Your Body

The finale. First, start by exfoliating with a body scrub. Exfoliation is key. Mix 1 cup of brown sugar, 1 cup olive oil and ½ cup chickpea flour and apply to dry skin. It will help to remove dead skin cells and stimulate cell regeneration. Massage in slow circles to stimulate circulation that will, in turn, help fight cellulite, revive skin cell growth and provide skin with a glow. Take your time and enjoy this treatment.

Next, draw yourself a bath filled with bath salts, such as Himalayan salts, which aid in healing psoriasis and eczema and detoxify your body. In addition, the mineral content of a Himalayan salt bath can be valuable in maintaining the protective barrier of the skin while allowing it to hold in hydration. After stepping out of the bath, massage your body with some warmed up oil onto slightly damp skin. Take time to end with massaging the sole of your feet with oil.

Your winter at-home spa day should leave you feeling rejuvenated and relaxed. I encourage using natural ingredients because it can be remarkably restorative and soothing since they are innately nutrient rich without the harsh chemicals or toxins. We often think of needing to escape to a spa or a retreat centre to rejuvenate and unwind and tune-in, and although this is a great thing to do, what if you could create this same experience in your home? Intentional living is a creative process of aligning your home space with your spirit and soul. Essentially, you are creating a sanctuary for your soul. A place that you feel safe and supported so that you can fully recharge and be yourself. I recently completed the process of transforming my home into a sanctuary for my soul. It has been an incredible journey that has had a beautiful impact on all aspects of my life. Through this journey, I have become acutely aware of how our home environment impacts our emotional, mental and physical well-being. Before I transformed my home, I lived in a space that had dark walls, a living room that was centred around the television, and furniture consisting wander-mag.com

of mismatched hand-me-downs, creating an environment that was not inspiring or uplifting or supportive to my needs. Each one of us has unique needs in order to feel nourished and inspired by our home space. My sanctuary may look very different from yours, however, the stages of this transformational process are the same. The first stage is to get clear on your intentions of how you would like to live and to feel in your home. This is a good time to grab a pen and paper and write down all of the feelings that come to mind. Anything is possible, and all great things begin with a vision. Ask your soul what it needs in a home to feel safe and nourished. 24

When I got quiet and asked my soul what it needed, I was amazed and saddened by how out of alignment my home was from my own needs. My soul did not feel at home here. It did not feel inspired by the dĂŠcor or the use of each room. My soul wanted so much more. It wanted a space to dance in, a place dedicated as an altar for my daily spiritual practice, a space to commune with my fiancĂŠ and friends. It wanted me to read and write and create, rather than numb out to TV, and it wanted a light-filled, inspiring kitchen to create delicious food in. Once you have written your list, it is time to purge all that does not resonate with these intentions. This is the second stage. I personally love this stage as I feel a sense of lightness when I get rid of things that no longer resonate, or I no longer need. I feel it is really important to love everything that is in your home. Because every time you look at something it invokes a feeling or a thought, which affects you. A room must be cleared of old energy first, to invite in the new. You may end up living with an empty room for a while but it is far from empty; it is full of pure potential. Now you are ready for the third stage - it's time to go shopping! Get clear on your intentions and vision and start with a focal point for each

room. For example, in our living room, we had the intention of feeling cozy, warm, inspired and connected. So we changed the focal point from the television to a beautiful gas fireplace surrounded by white brick and an aged piece of wood for the mantel. The fireplace brings in the cozy, warm sun element that we so miss in the winter months. We bought a deep plush couch and floor pillows so that we could lounge around, read and chat, and relax. We are inspired by nature, so we brought in beautiful tropical plants and gave them stunning plant holders which contribute to the beauty of the room. Plants are an incredible addition to any space as they are living beings who graciously clean the air and bring life into the home. This all happened over a course of months, and it taught me a great deal about patience and not rushing the process. I recommend focusing on one room at a time to make it feel manageable and rewarding. The final stage is to enjoy your new home space. I was blown away by the transformation visually and emotionally. My space gave off a completely different energy and vibration than before. My home is a reflection of all the things that matter to me. Every morning, I wake up and greet my home with so much love in my heart.

SEAFOOD CURRY WITH FENUGREEK AND COCONUT Serves 4 Methi and turmeric are both powerful antiinflammatories, while ginger, garlic and chillies all have immune boosting qualities. Curry Broth 3 tbsp. vegetable oil 1 large onion, finely diced 5 cloves garlic, minced 1.5-inch ginger, peeled and minced 2 tbsp. cumin seed 2 tbsp. coriander seed 1 tsp chilli flakes 1 tbsp. turmeric powder 2 tbsp. dried methi (fenugreek) leaves 1 400ml tin of coconut milk 1 400ml tin stewed tomatoes 1 tbsp. salt

Seafood and Vegetables 1 lb white fish 1 lb mussels 1 lb clams 1 lb baby potatoes 1 pint cherry tomatoes 1 lemon (juiced) 1 bunch cilantro 2 cups finely shredded cabbage Salt to taste Pre-boil the potatoes and set aside. Cut the fish into 1 oz. pieces, chop the cherry tomatoes in half. Rinse the mussels and clams under cold water.

To finish the curry, bring the curry broth back to a simmer in a large pot, add the potatoes In a dry pan, toast the cumin and coriander and seafood and cook for 5-6 minutes with until aromatic and slightly browning, let them a lid or until the mussels and clams have cool and grind them in a spice grinder or a opened. CARROT AND BEET SALAD Serves 4 Cashew Cream 200g cashews 1-litre water 100 ml apple cider vinegar 100 ml water 1 Tsp salt Soak the cashews overnight in the water (if you’re pressed for time gently boil the cashews for about 45 minutes, changing the water at least once). In high-speed blender puree the cashews with the water and the vinegar and salt until creamy and very smooth, set aside. Carrot and Beet Salad 4 medium-sized beets (any colour you wish) 1 bunch carrots (heirloom variety if possible) 3 tbsp. olive oil Salt and pepper 1 bunch watercress, picked 2 tbsp. hazelnuts, roasted and chopped Dressing 2 tbsp. cider vinegar 2 tbsp. olive oil

Place the carrots and beets together in a mixing bowl and toss with the vinegar and oil. To plate, spread the cashew cream in a circle around the centre of a bowl, and place the vegetables on top of the cashew cream. Dress the watercress with the remaining oil and vinegar in the bowl, and garnish the salads with it, sprinkling the toasted hazelnuts on top. COCKTAIL RECIPE: FRASER VALLEY CRAN SMASH 2 oz Smoked Rosemary Gin (we recommend Legend Distillery) 1.25 oz Cranberry Juice ¾ oz Cranberry Ginger Shrub (we recommend Thirsty Whales) Combine all ingredients in a shaker over ice. Shake vigorously. Pour directly into rocks glass.Garnish with half a sprig of fresh rosemary, slightly fired to release the smoked aromas.

Wash the beets and carrots well in cold water - scrub the skin of the carrots if necessary. Preheat your oven to 400 °F, lightly oil the beets and roast for about 1 hour or until softened in the centre. Remove from oven 33

How to Use It If you have a sore throat, suck on a sage candy several times a day. You Will Need 10 sprigs fresh sage (or 1 tsp dried sage) ½ cup granulated sugar How to Make It Briefly rinse fresh sage under cold water, then lightly pat dry with paper towels. Pull leaves off stems. Using a sharp knife and a cutting board, chop sage leaves as finely as possible. (If you are using dried sage, don’t rinse it, and grind it using a mortar and pestle.)

Sage is the classic medicinal herb used to fight sore throats and gum inflammation, and to treat the inside of the mouth or the throat. It fights the pathogens that cause illness and quickly soothes pain. The candy will keep for at least 1 year in an airtight container.

In a small saucepan, melt sugar over low heat, stirring constantly with a wooden spoon. Continue stirring until the sugar is light brown. Stir the sage into the sugar. Be careful: The water contained in the fresh sage leaves will make the mixture sizzle, bubble and spit. Making this candy is, therefore, not a job for children. Take the saucepan off the heat. Line a baking sheet with parchment paper. Using a wooden spoon, drop candy-size portions of herb mixture onto the paper. Be careful: The sugar mixture is hotter than boiling water! If you don’t like the shape of the candy, let the drops cool enough to handle, then, using your hands, roll them into balls. wander-mag.com

How to Use It At the start of a cold or fever, take 1 tsp of the syrup every 2 to 3 hours, letting it slowly dissolve in the mouth.

Elderberry is known for its outstanding effectiveness in fighting colds and flus, and for strengthening the immune system. If the juice is sweetened with honey, even children will find it delicious. Look for freshly pressed elderberry juice at natural foods stores or organic supermarkets. Once opened, a jar will keep for about 6 months in the fridge.

You Will Need 3⁄4 cup + 2 tbsp elderberry juice 1 ¼ cup organic liquid honey How to Make It In a saucepan, heat elderberry juice, stirring with a wooden spoon. Add honey and simmer over low heat, stirring, until reduced to moderately thick syrup, about 10 minutes. Rinse a 2-cup preserving jar with boiling water. Pour hot syrup into the jar and seal immediately. Let cool, then store the jar in the fridge.

Eric Pateman is President and Founder of Edible Canada, a leading ambassador of Canadian cuisine and storyteller for hundreds of small companies. A Vancouver native with a lifelong passion for food and wine, Eric has worked in the hospitality industry for over two decades as a chef, hotel consultant, restaurateur and entrepreneur as well as having the opportunity to rate restaurants for the Mobil Travel Guide. Eric is regularly sought as an expert on Canadian food and wine. He was named as the recipient of the Mayor of Vancouver’s Art Award for Culinary Arts in 2013, one of Business in Vancouver’s Top 40 Under 40 Business People in 2007, and to Western Living Magazine’s list of the Top 40 Foodies Under 40 in Western Canada in 2008. When Eric isn’t eating, travelling or leading his team at Edible Canada, he’s home in the mountain town of Squamish or hanging out in Whistler, his favourite place to relax and unwind. 57

What does the perfect Sunday look like to you?

Go-to comfort at the end of the day?

[EP]Making pancakes with my 3 daughters and then heading up to Whistler for a day of skiing with our family! Sunday night would be sushi and movies, flaked out on the couch with a glass of bourbon!

A run - getting out in nature and breathing the fresh air (no matter where I am in the world) is a vital part of my day and it is usually how my day starts or end. I travel 3 out of ever 4 weeks on average, so I am constantly exploring new cities or places and running is a great way to get around and see the sights!

Zany (or strange!) travel experience you can share? Hahahaha - maybe too many to share! Eating mopane worms in Africa and strange critters in the Beijing night market, river boarding down the Zambezi River where I almost drowned, skydiving in Namibia - there have been more than a few! We’re having a potluck dinner. What do you bring? Fish Sauce / Brown Sugar Cured and Grilled Flank Steak Salad with greens, peppers, rice noodles, Thai basil, mint, cilantro and lots of crispy fried onions!

I do also love great sheets and big rainfall showers, but that comes after the run! What’s in your carry on? My laptop (flights are my favourite time for catching up on work and emails), Bose wireless headphones, and a bottle of water and bar. Best wellness or travel tip? As someone who is constantly on the go, my running gear is always in my bag, but I love the perk at Fairmont Hotels where as a President’s Club member they have workout wear waiting for you in your room when you arrive. 58

What excites you about your company? I love that I have the most amazing team which allows me to diversify and work on projects that are helping to elevate and define the Canadian culinary scene. Edible Canada is always at the forefront of the industry and I am a typical entrepreneur - always chasing the next shiny object and I can only do that because of the amazing people I have around me! What do you want your legacy to be? I live by three things - to be impactful, to be accepting and to be free. I hope that at the end of it all, I have created a measurable impact in the lives of my three girls and the Canadian culinary scene, I hope that I have become less type A and have come to peace with the things I cannot change and have accepted them. And, that I have been afforded the opportunity to be free to explore the world and learn from other people and cultures of the world!
