THIS YEAR HAS BEEN VERY ENERGIZING WITH A TREMENDOUS amount of growth and expansion at Saint Barnabas Medical Center. September saw the opening of our new Cooperman Family Pavilion. This new facility marked an enhanced level of commitment to patient- and family-centered care. Saint Barnabas Medical Center was the first New Jersey hospital to acquire the 256-slice GE Revolution CT (computed tomography) scanner which takes imaging of the body to a new level of accuracy, comfort, safety and speed. Throughout the year, more than 10,000 patients have benefited from this advanced technology. This summer, RWJBarnabas Health and Rutgers University announced a partnership to create New Jersey’s largest academic health care system. The new venture has already begun to improve the delivery and accessibility of evidence-based health care across the state; boost the recruitment of prominent academic, research and clinical practitioners; and strengthen the advancement of health science innovation and education. At Saint Barnabas Medical Center, we signed an agreement with Rutgers Cancer Institute of New Jersey to expand collaboration including enhancing the availability of clinical trials to our cancer patients. Delivering on our mission of healthcare excellence, in November, the Mid-Atlantic Alliance for Performance Excellence (MAAPE) presented the medical center with the Excellence Award, its highest level of recognition on a regional level. (Read more about this honor on page 40.) For the fourth consecutive year, The Leapfrog Group named Saint Barnabas Medical Center as one of the Top Hospitals in the United States. WITH THE COMMUNITY OF SHORT HILLS ANCHORING ITS NORTHERN SIDE, THE TOWNSHIP HAS MUCH TO OFFER. Boasting the Paper Mill Playhouse, one of the country’s best-known regional theaters, Millburn has often been in the spotlight—but the town’s offerings go far beyond opening nights and curtain calls. HIGH-TECH HELP FOR FACIAL PAIN

WHEN TRADITIONAL MEDICINE AND SURGERY CAN’T DO THE JOB, DOCTORS TURN TO THE CYBERKNIFE.

A LIGHT BREEZE ON THE CHEEK. A SIP OF a drink. Smiling at a friend. Simple as they are, these everyday occurrences involving slight facial movement can trigger a severe, debilitating jolt of pain for some people. They have a condition in which a key nerve in the face, the trigeminal nerve, is damaged. “The pain can be excruciating,” says Alison Grann, M.D., chairman of Radiation Oncology at Saint Barnabas Medical Center. “It may occur a couple of times a day at first. But over time, those jolts of pain can happen much more often.” People with the condition, called trigeminal

34

neuralgia, describe the pain as a burning, an electric shock or a jolt of lance-like pain. Traditional pain medicines do not usually work. Other types of medicines and surgery can be effective for most, Dr. Grann says. “However, a small number of people try every conventional option they can find and still don’t get relief,” she says. For these patients there is now an advanced treatment available at Saint Barnabas Medical Center. “We use CyberKnife stereotactic radiosurgery to target the nerve without the need for traditional surgery,” explains Dr. Grann. “And for patients who are not healthy enough for surgery, this may be the only option.”

time in the operating room to determine the exact size, shape and location of the treatment area. Using this information, the CyberKnife’s GPS-like computer navigation (like that used in a car or an electronic map) helps doctors focus the beam where they need it. The system also tracks any movement of the patient—from breathing, for example—to avoid healthy tissue. “We have a unique team here with extensive training in all aspects of care, and we have more than one set of eyes on every step of treatment,” Dr. Grann says. The radiosurgery team at Saint Barnabas works under the close oversight of the radiation oncologist. Members include three Ph.D. physicists and three dosimetrists, who specialize in calibrating the delicate machinery, determining the best dose of radiation and planning the path that the CyberKnife will take to deliver it. Also important is the contribution of experienced radiation therapists and nurses. In the days before a treatment, the entire team tests the plan, makes any adjustments based on the radiation oncologist’s review, and re-tests. “In total, it might take us approximately a week to perfect each patient’s plan,” says Dr. Grann. Physicians at the medical center have also been using CyberKnife for almost two years for patients with cancers of the prostate, lung, brain and pancreas.

CyberKnife stereotactic radiosurgery is a technology physicians use to aim high doses of radiation at particular cells or tissues, often malignant ones. (“Stereotactic” refers to locating a very small point inside the body using many different angles, while “radio” in this instance refers to radiation.) It is most commonly used to treat patients with cancer, but specialists at Saint Barnabas Medical Center have put a team in place to take advantage of the system’s advancements to treat other conditions too. (See main article.) “Treatments using stereotactic radiosurgery are incredibly complicated,” says Alison Grann, M.D., chairman of Radiation Oncology at Saint Barnabas Medical Center. “It uses extremely high doses of radiation aimed at an area of tissue that is very small. But the tissue is surrounded by important nerves, muscles and tissues. That complexity is why patients need a facility like Saint Barnabas Medical Center with staff that specializes in radiosurgery.” During the outpatient procedure, physicians use sophisticated software that works with sensors in a patient’s customized facemask, which is made of see-through mesh. Other radiosurgery systems used elsewhere rely on a helmetlike “frame” that is actually screwed to the head. With the CyberKnife, the team combines information from the mesh mask and medical images taken in real

The CyberKnife system employs a continual image guidance software that allows it to deliver high radiation doses with pinpoint accuracy, while automatically correcting for tumor movement. Because radiation beams are adjusted in real time to the patient’s breathing cycle, damage to surrounding healthy tissue is minimized. Trigeminal neuralgia affects about five

out of 100,000 people a year. Damage to the nerve can result from a blood vessel or tumor pressing on it; a disease such as multiple sclerosis or an injury, surgery or stroke may also be the cause. The condition most often comes on suddenly and causes shooting pain. It may also cause a more constant dull, aching or burning sensation. Women are more likely to develop it, as are people over age 50. The trigeminal nerve runs across almost the entire face and is near other important nerves, blood vessels, muscles and structures. So accuracy in treatment is extremely important, Dr. Grann says.

“The planning for radiosurgery is complex,” she says. “For each patient, we meet daily before the day of treatment to review the plan and to make any adjustments.” (See “Super Tool, Super Team,” above.) With either traditional surgery or radiosurgery, pain relief can be excellent. Pain can recur over time. But for many, relief is long-term. “For our patients who cannot have surgery or do not want it, radiosurgery does provide a good option,” says the doctor. “CyberKnife treatment is a valuable addition to our technology to help patients regain a higher quality of life.”

An internationally acclaimed researcher and surgeon, he also serves as senior vice president of Oncology Services for RWJBH. “The system encompasses six major hospitals that span New Jersey,” he says. “So our collaborations will allow us to take new discoveries from the research laboratories of Rutgers Cancer Institute to patients throughout the state.” This means that the majority of people served by RWJBH will not have to travel more than 30 minutes to reach the most innovative cancer care available, he says. “For the people in these communities, this is a significant relationship,” Dr. Libutti says. “It helps us accomplish an important vision: to ensure that patients get the right care at the right facility, and that the care is close to home.” The clinicians and researchers at Rutgers Cancer Institute to patients are international leaders in the field of cancer research and care. The institute is the only one in the state to earn the National Cancer Institute’s (NCI’s) designation as a Comprehensive Steven K. Libutti, Cancer Center, and it is one of only 49 M.D., FACS

NCI reports that these centers form the backbone of their programs for studying and controlling cancer. “For Saint Barnabas Medical Center, the relationship raises the bar of research higher than ever before, and it gives our physicians and patients direct access to more expansive treatment for a broader range of cancers,” says Michael Scoppetuolo, M.D., chief medical officer of The Cancer Center at Saint Barnabas Medical Center. The new partnership with RWJBH also offers important benefits for Rutgers’ clinicians and researchers. The relationship gives them the opportunity to bring information and treatment directly to a large number of patients, and information about treatment successes back to researchers, Dr. Libutti says. “Ultimately, the partnership between Rutgers and RWJBH will benefit the international medical community as well as the people here in the communities we serve.”

CANCER TREATMENT DESIGNED with the individual in mind

An important aspect of current cancer research involves “precision” medicine, says Michael Scoppetuolo, M.D., chief medical officer of The Cancer Center at Saint Barnabas Medical Center. “The Rutgers Cancer Institute Michael Scoppetuolo, M.D. of New Jersey has a strong research program in this area. So the new partnership between our organizations will bring our patients new and innovative therapies that are not necessarily available outside of clinical trials.” (See main article.) Clinical trials are research studies to find ways to prevent and cure diseases. Such trials are often an option for cancer patients, according to the National Cancer Institute (NCI). Some of these trials are only offered through NCI-designated centers such as Rutgers Cancer Institute. Through research at Rutgers and elsewhere, physicians are beginning to identify why and where cancer forms, with the goal of developing precise treatments for each person. This field of study has advanced rapidly in recent years, Dr. Scoppetuolo says, due to techniques to find single genetic mutations (undesirable changes in genes) and combinations of mutations that lead to cancer. With this information, clinicians have a better target for experimenting with prevention and treatment. “Precision medicine is a subject of research for all cancers today,” Dr. Scoppetuolo says. “Our research partnership with Rutgers will connect our exceptional physicians with experienced researchers, so we can bring the most advanced, cutting-edge personalized treatments to patients.” Adds Stephen P. THE BEST IN BURN CARE

TODAY, MORE VICTIMS OF THESE TERRIFYING INJURIES CAN BE SAVED. WHEN YOU SUFFER A BURN, PROMPT treatment is critical. It also matters where you go for that treatment. Studies show that a certified burn center is most effective. Millions of Americans don’t live near such a center, but New Jersey residents are more fortunate. Established in 1977—it has marked its 40th anniversary this year—The Burn Center at Saint Barnabas Medical Center is the only state-certified burn facility in New Jersey. It’s one of just 65 burn centers in the U.S. that meet the verification criteria set by the American College of Surgeons American Burn Association, which assure quality of care in this specialized field. “With 30 patient beds, our burn center is one of the nation’s largest, and it’s also one of the busiest,” says Michael Marano, M.D., medical director of the center Michael Marano, and a specialist in M.D.

critical care and burn surgery. Only five other centers nationally have as many beds. Staff at the center care for 400 inpatients a year, and up to 16 outpatients every day. “With our extensive experience, we have become national leaders in specialty burn care,” says the doctor. (See “Serving as a Model for the Nation,” on next page.) Because of advances in care available at facilities like this, patients with even the most serious burns are dramatically more likely to survive today than they would have been just a few decades ago. “In the mid-1970s, people with burns over just 20 percent of their body were not likely to survive,” Dr. Marano says. “Today, those with burns over 90 percent of their body can survive.” The number of deaths from burns nationally has declined accordingly. In the mid-’70s it was about 9,000 people annually; now it has been cut to less than 4,000. The specialists at The Burn Center understand all the factors that can affect the health and healing of people with the most serious burn injuries. They also keep abreast of the latest improvements in treatments and

• The most common cause of burns is hot liquid, including hot food and the water in bathtubs and sinks. • To prevent scalding injuries, hot-water temperatures should be set below 125 degrees Fahrenheit. • Older adults and children are at greater-than-average risk when they have a burn, and for them healing takes longer. • When people require hospital care for burns, on average, the number of days of treatment is roughly equal to the percentage of the body that is burned. So a burn over 30 percent of the body usually means a 30-day stay.

technology that lead to greater chance of survival. “Fire, chemicals and smoke can affect the body in many different ways, so we work with a variety of specialists at Saint Barnabas to address each issue in turn,” the doctor says. The team often includes cardiologists, plastic and reconstructive surgeons, pulmonologists, trauma surgeons and orthopedic specialists. Today, their reach is far. “Our burn center covers an area of eight million people,” Dr. Marano says. “And because treatment for burns often takes weeks or even months, having that level of care here locally is important. Patients are able to receive the most advanced care and still remain close to family and friends.” The field is always changing, and he notes that staff are dedicated to keeping up with the latest innovations. “Devices such as ventilators and synthetic skin, advanced medicines for smoke inhalation, therapies for organ damage and new surgical techniques all combine to make a big difference for our patients,” he says. “We use every tool and treatment available.” And though the work can be difficult, the team at The Burn Center shows great dedication. “One employee recently retired after working over 40 years with patients here—since before The Burn Center was established,” Dr. Marano says. “And more than one staff member has come in at a moment’s notice or even left a vacation when we had a crisis. It’s people like these, who have such dedication, that make our team so special.”

“During the 9/11 disaster, the health care industry was suddenly and for the first time called on to prepare for thousands of survivors of both trauma and burns,” says Kathe Conlon, R.N., director of the Eastern Regional Burn Disaster Consortium, which is based at Saint Barnabas Medical Center. “Our center and others across the county had typically trained for scenarios that included dozens—not thousands— of patients. But 9/11 was a wake-up call. Today we’re ready.” More than a decade ago, staff at The Burn Center formalized a partnership with 27 other burn centers from Maine through to Washington, D.C. Led by the team in Livingston, they formed the Eastern Regional Burn Disaster Consortium. It’s the first organization of its kind in the nation to develop specific, successful methods to share resources quickly across such a large geographical area. That speed is especially important when a large number of people need burn care. And their preparation works. Anticipating that people in the Boston Marathon bombing might need these services, for example, staff set out to contact two dozen burn centers across 10 states, to collect data about available beds and staff. “We were able to complete the data collection in 18 minutes,” Conlon says. Because of the proactive nature of the consortium and its ability to “organize chaos” across a large area of the Eastern Seaboard, burn centers across the country may now share information in a way similar to the network initiated at Saint Barnabas. Thus the medical center has become a model for the nation in sharing best practices in burn care. “We’ve been recognized by our professional counterparts across the country for taking the lead in this area of emergency management and disaster preparedness,” says Conlon. “And if something happens, we all now know we’ve taken the steps to react quickly to get patients the care they need.”

ON NOVEMBER 15, AT THE Desmond Hotel in Malvern, Pa., Saint Barnabas Medical Center was presented with a special honor. The occasion was the 12th Annual Awards Banquet of the Mid-Atlantic Alliance for Performance Excellence (MAAPE), a regional-level “Baldrigebased” award program. Among awards programs that recognize organizational quality, the name of Malcolm Baldrige—the late former Secretary of Commerce—serves as a mark of discernment and high standards. The medical center’s MAAPE journey began with the submission of a 50-page application in 2016 followed by a rigorous on-site review in July 2017. Ten MAAPE examiners came to assess the facility using

criteria pioneered by the Foundation for the Malcolm Baldrige National Quality Award. Examiners observed many departments during all shifts, evaluating organizational excellence by seven categories: leadership; strategy; customers; measurement, analysis and knowledge management; workforce; operations; and results. Saint Barnabas Medical Center was the only New Jersey recipient of MAAPE’s Excellence Award, its highest level of recognition. In MAAPE’s words, “The Excellence Award recognizes applicants that demonstrate—through practices and results—superior levels of performance excellence.” It is the highest quality achievement award presented on the regional level. “Saint Barnabas Medical Center is relentless in our efforts to align and integrate process improvement to ensure we are providing the highest level of safety and quality,” said Stephen P. Zieniewicz, FACHE, the medical center’s president and CEO. “Obtaining the regional-level Baldrige Award from the Mid-Atlantic Alliance for Performance Excellence reflects the dedication of our entire team to deliver on our mission to provide compassionate care, healthcare excellence and superior service to our patients and their families.” The Baldrige framework engages the entire organization to continually improve processes. “This honor is reflective of a true team effort among our Board of Trustees, physicians, employees and volunteers at every level of the organization,” Zieniewicz added.

WHEN FRAN TROMBETTA FIRST HEARD THOMAS PANDOLFI play at Morristown’s United Methodist Church, the Harding resident says she was “mesmerized” by the concert pianist— and knew she had to help spread the joy of his music. “I’d never heard anything like it,” she says. “He’s a virtuoso with a unique technique, and I felt more people in the Morristown area should experience his talent.” Luckily for local music lovers, Trombetta is a woman of action: She contacted the area’s Bickford Theatre, which eventually booked Pandolfi for a set of concerts. Spanning the next three years, he performed the music that had charmed Trombetta on that day at the Methodist church: a mix ranging from classical (Beethoven, Mozart and more) to standards composed by the likes of George Gershwin. Despite attending one of the shows—Pandolfi even sent her two complimentary tickets to thank her for all her efforts— Trombetta hadn’t gotten her fill. In fact, the experience inspired her to add something new to her bucket list: have an in-home concert featuring her favorite musician. And again, she pulled it off: A concert was scheduled for October 1, and by the time Pandolfi had traveled from his Washington D.C. home for the performance, Trombetta was more than prepared: She’d had her piano tuned, she completed an already planned bathroom renovation to make her home extra-welcoming, she’d printed up a special concert program

(Trombetta even drew the cover art), and she channeled her inner gourmet to whip up a huge menu of hors d’oeuvres and desserts that ranged from lobster-filled endive, artichoke squares and tea sandwiches to Danish puffs and cheesecake squares. But the star attraction wasn’t the food: When Pandolfi took to the piano before 38 of Trombetta’s friends, neighbors and family members, he wowed them by kicking off his set with Gershwin’s “Rhapsody in Blue”—Trombetta calls it her favorite part of the entire show—before performing “Piano Concerto No. 2 in C Minor, Op. 18” by Sergei Rachmaninov, plus virtuoso transcriptions of music by Marvin Hamlisch, Barry Manilow and themes from Andrew Lloyd Webber’s “Phantom of the Opera.” Needless to say, the concert was a huge success. “After every segment, Thomas got a standing ovation,” Trombetta says. “There were people with tears in their eyes. My sister said to me, ‘Fran, you thought of everything except having Kleenex!’” So will Pandolfi be giving an encore performance in Trombetta’s home? “I’d like him to,” she says. “I had people telling me it was an afternoon they’d never forget—they’ll remember it the rest of their lives. That’s how much his music affected them.” Regardless, she does have some trepidations. “It’s never going to be like the first time, and I’m afraid that I can’t top it,” she says, before adding with a smile, “but then again, maybe I can.”

Known as kürt skalács in the native tongue, chimney cakes date back to the 15th century, when they were baked over hot coals in the medieval kitchens of Transylvania. These truncated treats have since become popular throughout Eastern Europe and are a perfect combination of crisp and fluffy. To create them, dough is rolled into an even strip, wrapped around a wooden or steel cooking roll and baked to crusty perfection. Their cone shape gives them a distinctive appearance, while the slightly sweetened yeast dough and walnut cinnamon-sugar topping make them nearly impossible to resist. Once a popular wedding treat, chimney cakes are now part of everyday meals, baked to a shade of golden brown that would make Dracula salivate.

ARGENTINA PASTELITO

Central to Argentine culture, pastelitos are often shown in artists’ renderings of the 1810 revolution that led to the nation’s freedom from Spanish rule. More than 200 years later, these puffy pastries remain a staple of Argentine dessert fare and are seen as a symbol of independence when served during celebrations of May 25 aka May Revolution Day. Pastelitos are made primarily of pastry dough and either sweet potato puree or quince paste, a sweet, thick jelly derived from the pulp of quince fruit. And though it’s tempting to cheat with ready-made squares of puff pastry or—heaven forbid—wonton wrappers, true pastelitos are made from dough that is kneaded well and rolled to 1/16 of an inch. They are then formed to resemble stars and submerged in hot oil, separating into many layers for that classic “flower” formation. Never has a history lesson tasted so good. SOUTH AFRICA KOEKSISTER

Warning: Koeksisters are likely to cause sticky fingers and can be extremely habit-forming. Pronounced “cook sisters,” these South African donuts are sweet and crunchy with hints of cinnamon, ginger and lemon. With a name derived from the Dutch word “koekje”—often interpreted as “cookie”—they are not only sold by vendors on the streets of Johannesburg and other cities but have also made their way onto the shelves of many South African grocery stores. Koeksisters were originally brought to the region by Malaysian workers and are now enjoyed as a mid-day snack (or for breakfast, for those feeling particularly decadent), but they’re also special enough for birthdays and holiday parties. The baking process involves braiding thin strips of dough into a rope shape, which is submerged in hot oil and dipped into an irresistible bowl of sugary syrup or honey. From Russia (with love) comes the vatrushka (pronounced vat-ROOSH-kah), a round pie topped with sweetened cottage cheese and usually sprinkled with raisins or dried fruit. The name is thought to derive from the word vatra, meaning “fire” in many Slavic languages, a reference to the way this treat is baked in a wood-fired oven. Vatrushkas vary in size from fiveinch personal-sized to almost three feet in diameter and are typically baked using a sweet yeast bread dough, though there are savory options made with unsweetened dough and topped with onion or ground meat. To liken it to a cheese Danish doesn’t do this delicacy justice. It’s closer to a pirozhki (Russian for “small pie”), with one major difference: While pirozhki are closed, vatrushkas are open-faced, or “sunny side up”—their thick, creamy topping in full view. No guilt, though, because cottage cheese is good for a diet, right? That’s what we keep telling ourselves.

Kolompehs are like snowflakes: No two are exactly alike. These delicate dessert pies are crafted in many sizes and formats, the top layer of dough carved either by hand or with a wooden stamp—some mass-produced, others hand-carved family heirlooms handed down through generations and often depicting bucolic nature scenes. Referred to as edible works of art, kolompehs originated in Kerman (also spelled Kirman), the capital city of Iran’s Kerman Province, where they were traditionally baked with local oils, Persian walnuts, cardamom, sesame and wheat flour. Today, industrially produced kolompehs have become popular souvenirs and are prepared with a variety of nuts and sometimes hints of cloves, saffron and rose water, and decorated with pistachio or sesame powder. The best part? These fragrant, flaky pies are made without sugar, deriving their sweetness from Medjool dates. All flavor; no regrets.

Tracing its origins to France’s northwest cultural region of Brittany, kouign amann is not a dessert for the calorie counter. Pronouced kween ah-mon, its name translates from the Breton language as “butter cake,” with traditional recipes calling for almost as much butter as dough. Invented around 1860, kouign amann was traditionally served as slices from a large cake, though the trend has been toward individual cupcake-sized pastries, particularly in North America. It is considered the perfect (and most decadent) French breakfast pastry, a denser version of the croissant but with a healthy dose of sugar. Some say it’s more about technique than ingredients, as kouign amann is made from layering dough with sheets of butter, then folding it, rolling it out and repeating multiple times to create hundreds of layers. As it bakes, the butter-sugar mixture forms pockets of sweetness in the moist center, while the outside remains crispy, with a caramel-like coating around the edges. Origliettas are almost too pretty to eat. (That’s almost.) These lesserknown cousins of Italian desserts like cannoli, zeppoli and tiramisu are just as delectable—they’re rolled around a stick into an accordion shape and deep-fried in olive or seed oil. The result is a convoluted confection whose honey coating makes it that much more mouthwatering. And while some bakers fry them to a golden brown, others go for a translucent finish that means they’re sure to melt in your mouth. Origliettas originated in Sardinia, known for its elegant and irresistible desserts, and are a favorite treat at carnivals and other celebrations. Yet some would insist they’re best served in an Old World trattoria or on a quaint outdoor patio with a view of the crystal-clear Mediteranean Sea. One thing is for sure: Put them out at a party, and they’ll be gone before you can say “Arrivederci!”

AUSTRALIA LAMINGTON

As legend has it, the lamington was created quite by accident in the late 1800s. A maidservant of Lord Lamington, a Brit who served as the eighth governor of Queensland, mistakenly dropped the royal’s favorite sponge cake dessert into a bowl of melted chocolate. To keep his fingers from getting too messy, the governor rolled the confection in coconut, and the rest, as they say, is history. From the street carts of Beijing to the bakeries of Chinatown, these buttery buns are a delightful combination of chewy texture and light sweetness— they’re recognized mostly for their vividly purple filling, but there’s no food coloring on the ingredients list. The purple comes from taro, a vitamin-rich natural root vegetable that’s a dietary staple in Asia. To make this drool-worthy dessert, the sticky bun dough is brushed with an egg wash before baking to achieve a shiny gold coloring and can be topped with a few sliced almonds for an enticingly nutty flavor and crunch. Yet it’s really about the taro, which is sweeter than red bean paste but less sweet than custard or cream. The root is cooked to a puddinglike consistency and used as a filling, formed into a multi-layer marble shape or rolled inside the dough for a pinwheel effect. In any form, it’s a joyous celebration of purple yum.

WHEN INTERIOR DESIGNER ANNA MARIA MANNARINO was tasked with decorating The Villa in Mountain Lakes for the holidays, she knew holly and poinsettias wouldn’t be enough to deck the lavish banquet hall. “I like to put a spin on the general holiday themes and focus on one specific idea, like a white winter wonderland or an oldfashioned yuletide,” says Mannarino, of Holmdel-based Mannarino Designs. “For this project, I went with a more elegant twist.” That special flourish? A Venetian theme. With The Villa’s Italianate architecture as the perfect backdrop, Mannarino chose harlequin fabrics and velvets in hues of burgundy, copper and gold to dress the tables, lush tassels and ribbons printed with music notes to hang from miniature Christmas trees and glittering masks to adorn the walls. It’s a theme, she says, that can be employed in almost any venue. “I’ve used my Venetian design for everything from small, intimate events to full-on Christmas balls,” Mannarino says, adding that some of her clients have even provided masks from their own collections while fully embracing the design’s connection to Italy. For those who have traveled to Venice, the theme brings with it an air of nostalgia and a chance to relive cherished memories, she notes. In all, Mannararino says, the Venetian theme is a guaranteed showstopper. “People love the elegance and richness it brings,” she says. “It’s the perfect way to make people feel warm and welcome during the holidays.” Small votive candles add a warm glow to the elaborately-decorated tables. Their flames make the glitter and the sequins on the Venetian masks shine.

FESTIVE HANGING COOKIES Yields: 40 cookies INGREDIENTS n 1 batch of light gingerbread dough (see this page) n 1 batch of Royal Icing (see page 63) FOR THE LIGHT GINGERBREAD DOUGH n ½ cup light molasses, golden syrup or honey n 1 cup light brown sugar n 14 Tbs. unsalted butter n zest of one lemon n 4 tsp. ground ginger n 2 tsp. ground cinnamon n ½ tsp. ground nutmeg n ¼ tsp. ground cloves n 1 tsp. baking soda n 4 cups all-purpose flour n 1 tsp. salt n 1 lightly-beaten egg EQUIPMENT n Christmas cookie cutters n string or ribbon

DIRECTIONS FOR THE LIGHT GINGERBREAD DOUGH Pour the light molasses into a large saucepan with the sugar, butter, zest, and spices and melt over low/medium heat, stirring frequently until the sugar has dissolved. Bring the mixture to boiling. Remove from the heat and beat in the baking soda. The mixture will froth up at this point as the baking soda reacts—mix briefly until combined, then let cool for 15 minutes. Sift the flour and salt, then fold into the mixture in batches. Beat in the egg until just combined. Do not overwork the mixture, or the cookies will spread during baking. The dough will be very sticky to begin with, but do not add any flour. Scrape out of the bowl onto a clean surface and knead together until just smooth. Wrap in plastic wrap and chill in the fridge for 1 hour. FOR THE COOKIES Preheat the oven to 350°F. Line 2 large baking sheets with parchment paper. Cut a large piece of parchment paper and roll out the gingerbread on top of it to ¼ inch. Using any Christmas-themed cutters, cut out pieces of dough and use a palette knife to transfer them to the lined baking sheets. Leave space for them to spread a little. Using a straw, press one end into each of the cookies where you would like to thread a ribbon to hang, twist the straw, and pull away to remove a circle of dough. Place in the freezer for 5 minutes until hard—this second chill helps them to hold their shape and pattern better while baking. Bake in the oven in batches for 6 to 10 minutes depending on size, until golden brown at the edges. Let cool, then transfer to wire racks to cool completely. Add a little water to the royal icing until you reach soft peak consistency. Spoon the icing into a piping bag fitted with a fine nozzle. Decorate the cookies with dots, lines and swirls, then add the sprinkles. Let cool completely for 4 hours before tying with ribbon and hanging.

GLASS-PRESSED SANDWICH COOKIES Yields: 20 sandwich cookies INGREDIENTS n 1 batch light gingerbread dough (see page 59)

DIRECTIONS Preheat the oven to 325°F. Line two large baking sheets with parchment paper.

FOR THE BUTTER FROSTING n 14 Tbs. unsalted butter, softened n 4 cups confectioners’ sugar, sifted n 1 tsp. vanilla extract n pinch of salt

Cut a large piece of parchment paper and roll out the gingerbread on top of it to ¼ inch. Now select from your drinking glasses the ones that have the most beautiful patterns on their bases. Press one at a time into the dough firmly enough to leave an imprint but not so hard that you squash the whole cookie!

EQUIPMENT n assorted drinking glasses with embossed bases n round cookie cutters of various sizes

Then use a round cookie cutter approximately 3 inches in diameter to cut around the imprinted patterns. Use a range of sizes to make your collection of cookies look more eclectic. Use a palette knife to transfer the cookies onto the lined baking sheets. Leave space for them to spread a little. Place in the freezer for 5 minutes until hard. Bake in the oven in batches for 8 to 10 minutes until golden brown at the edges. Let cool for 5 minutes on the pans, then carefully transfer with a palette knife to wire racks to cool completely. Beat the butter, confectioners’ sugar, vanilla and salt together with a handheld mixer until light and fluffy. Pipe or spread the butter frosting onto the bases of half the cookies and sandwich together with the remaining cookies.

RUSSIAN DOLLS Yields: 45 cookies INGREDIENTS n 1 batch of light gingerbread dough (see pg. 59) n 1 batch of Royal Icing (see below) FOR THE ROYAL ICING n 2 cups confectioners’ sugar n 1 lightly beaten egg white n ½ tsp. lemon juice n 1 tsp. water DIRECTIONS FOR THE ROYAL ICING Sift the sugar into the bowl of an electric mixer. Add the beaten egg white and lemon juice. Whisk on low speed, so you do not incorporate too much air into the icing, for 2 to 3 minutes until you have a smooth, but not wet, stiff peak consistency. It should be dense and spreadable but hold a stiff peak. If it looks dry and crumbly, add a little water. Transfer to a bowl and cover with a damp cloth to prevent it from drying out. The icing can be prepared ahead and stored in an airtight container in the fridge for up to 1 week.

DIRECTIONS FOR THE COOKIES Preheat the oven to 325°F. Line two large baking sheets with parchment paper. Cut a large piece of parchment paper and roll out the gingerbread on top of it to ¼ inch. Using Russian doll cutters, cut out pieces of dough and use a palette knife to transfer them to the lined baking sheets. Bake in the oven in batches for 6 to 10 minutes depending on size, until golden brown at the edges. Let cool for 5 minutes on the pans, then transfer to wire racks to cool completely. Add a little water to the royal icing until you reach soft peak consistency. Transfer ¼ cup to a small bowl, then cover the large bowl with a damp cloth and set aside. Add a little peach coloring to the icing and pipe small round circles for the doll faces. Add a little extra water to the remaining peach icing to make flood icing—a thick but runny consistency. Spoon into the circles to fill the faces. Transfer 2 Tbs. of the remaining white icing to a separate bowl, cover with a damp cloth and set aside. Add a little red food coloring to the large bowl of icing until you have a punchy red. With a fine nozzle, pipe a smooth red outline around the cookies. Add a little more water to the red icing to make flood icing, then use it to carefully fill the centers. Keep any remaining icing covered with a damp cloth. Let set completely for 4 hours or overnight. Using a paintbrush and the reserved white icing, paint decorative patterns on the dolls’ bodies and around the faces. Paint little red lips on the faces and tiny dots for nostrils. Use a drop of black coloring to paint eyes and eyelashes. Leave one final time to set for 2 hours.

TRY SOMETHING NEW AT DE NOVO One of the hallmarks of a good restaurant is the presence of its owner, and it takes just one visit to De Novo European Pub to meet and become friends with its proprietor, Demetri Malki. That’s how 38-year-old Nutley resident Evan Handelman felt after dining at this popular Montclair bistro/gastropub this fall. “The place was packed when we walked in,” he recalls, “but [Malki] greeted us and showed us to the bar while we waited for a table.” When Handelman and his dining companion were seated, they picked two apps—hot wings for him and hummus for his vegetarian friend. “The wings were tremendous, and they came with a tasty buttermilk ranch sauce,” he says. In addition to the tempting list of flatbreads and pastas, entrée options include seafood plates like honey-glazed salmon and tuna tartare, and red meat like burgers and steaks. Handelman went with the “tender and perfectly cooked” short ribs—which he ordered again during a recent return visit. “My friend had the mushroom and truffle risotto, which I enjoyed too even as a meat lover,” he says. COME FOR COMFORT The Morris/Essex Health & Life review of Verona’s Ariane Kitchen & Bar earlier this year inspired several readers to try the restaurant. Marcia Brennan, 60, of Cedar Grove says she was excited to visit and get a taste of “the comfort food and palate-pleasing flavor combos.” And she wasn’t disappointed. From pigs in a blanket and cornmeal-crusted oysters for starters to pork chops and burgers for main courses, the menu runs the gamut and truly offers something for everyone. Brennan and her friend shared two appetizers—Parmesan-stuffed dates and a kale-and-butternut-squash salad—that she admits “stuffed their tummies.” (The complimentary buttered croissants likely contributed to that feeling!) But somehow, she jokes, the two found stomach space for their seafood entrees. Brennan notes that the bronzino was grilled to perfection and was flavored with just the right amount of zesty lemon garlic. Her friend’s miso-glazed cod looked just as good as it tasted. “Thankfully, she gave me a nice forkful to try,” Brennan says. “I might order it for myself next time.” Reservations at Ariane Kitchen & Bar are recommended. A NIGHT ON THE TOWN A fire ripped through much of Elm Street approximately three years ago, but this Morristown corridor is quickly reviving thanks in part to the success of dining destinations like Town Bar + Kitchen. Located a hop and a skip away from the Morristown Green, the restaurant is a haven for diners looking for a night out just outside of the hustle and bustle of downtown. “It’s such a convenient location—not far at all from the Mayo Center—and they have a nice parking lot,” says Khalid Durian, 39, of Belleville, who dined there this summer. During his visit, Durian and his wife started with cocktails from a lengthy drink menu and an order of grilled octopus, which was served with a “divine” kale puree. For their main course, Durian had the herband-truffle Amish chicken, a half-bird with a generous side of fingerling potatoes, carrots and onions. “Each bite of the chicken was a delight to my taste buds, as were the veggies and the plate of Brussels sprouts that I added to my order,” he says. His wife had the smoked seared scallops, which came atop a bed of mashed cauliflower, sweet potato and truffle. Reservations at Town Bar + Kitchen are recommended.
