About this Guide This Guide aims to provide an informed indication of the restaurant scene in Cyprus with reviews of selected restaurants on the island. You will also find useful info and tips on how to get the best out of your dining out experience in Cyprus. Each review has been checked for accuracy, although details can change and you should ring ahead if you want to be sure. No payment of any kind has secured or influenced any review in this Guide.

How to use this Guide Restaurants by area

Restaurants are divided into sections denoting the type of food. Within each section, restaurants are listed in order of area, then alphabetically.

Pricing

In addition to being divided into ‘town’ and ‘restaurant type’ categories, this guide is also separated into two main sections: the first includes restaurants where your bill will come to approximately €10-€15 per person and the second features venues where you will pay approximately €20-€25 per person. This layout anables you to find what you are looking for more easily so that you can choose a restaurant based not only on your food preference but also on the amount you are willing to spend. Prices are in euros.

Credit cards

The following abbreviations are used: AmEx: American Express; DC: Diners’ Club; MC: Mastercard; V: Visa. Most restaurants, bars and cafés do not accept travellers’ cheques.

Telephones

The dialling code for Cyprus is 00357. Then, depending on which town you’re calling, you have to add 22 for Lefkosia, 25 for Lemesos, 24 for Larnaka, 26 for Pafos and 23 for the Ammochostos District.

Menu details and opening hours

Dishes and wines described were available at the time of writing, but some restaurants may change their menu at the beginning of each new season. The specific examples mentioned are intended to give an idea of the style and

quality of food available. Times stated for restaurants apply to service hours when you can order food. Those given for bars and cafés are opening hours. Also please keep in mind that many restaurants in Pafos and the Ammochostos district are only open during the summer season (April-October). Therefore we advise you to call beforehand to ensure that the restaurant is open.

Wheelchair access

Unfortunately, progress is slow in this area. It would be wise to ring ahead to check if the establishment can cater for you.

Children

You should have no problem eating out with kids in most places, though they will be expected to be well behaved in some of the more upscale establishments.

Service & tipping

Most waiters speak English so you should have no problem in communicating. It’s customary to leave an additional tip of 10% of the total cost of the meal in a restaurant and the odd change in a café.

Dress

Though ties are not generally required for restaurants, you should leave the Bermuda shorts and tracksuits behind. Think ‘smart casual’ and you’ll be fine.

Reservations

It’s always a good idea to book ahead, especially at weekends.

Bar & caf customs

Tarragon

Chamomile

An essential ingredient of Bearnaise sauce, tarragon can be used to flavour chicken, fish, rice and salads. It is rich in iodine, vitamins A and C and minerals. Tarragon is stimulant, aids digestion and relieves toothache.

Chamomile tea is relaxing, it calms the ner ves, helps in insomnia, stress and migraine. It also relieves symptoms of flu, asthma, mouth ulcers, combats colic and stomachache. It is antibacterial, antifungal and reduces symptoms of allergy.

Fennel

Gives a delicate sweet taste to fish, soups, omelets, cheese pies, pulses and sauces. As tea it helps in gynaecological problems, indigestion and colic, it dissolves fat and as such helps when dieting. Fennel relieves bronchial congestion, is diuretic and stimulates the flow of milk in breastfeeding.

Basil

Yarrow

The basic herb in Italian food, it gives great flavour to pasta, meat, fish, salads, sauces and bread. It settles the stomach and helps in indigestion and bloating. Taken as tea it is a remedy for nervous headaches and helps the memory as it is a stimulant to the brain. The no. 1 herb for all gynaecological problems, from irregular periods to the menopause. It lowers blood pressure, is antiseptic, and helps to regulate the urinary system. Take as tea.

Rose

The beautifully scented rose is used for depression. The oil in aromatherapy and the distilled water for the skin. Rosewater is widely used as a flavouring in sweets and puddings in the Mediterranean.

Oregano

Thyme

Makes an excellent tea and is widely used as seasoning in cooking. Resembles oregano and can be used to flavour meat, fish and pasta dishes. It aids digestion, helps to lower blood pressure and blood sugar levels, soothes the throat and is diuretic. The most popular herb used in a wide variety of dishes, it flavours soups, potatoes, omelets, meat, fish and pastas. Aids digestion, soothes colds and respiratory problems due to its antibiotic and antiseptic properties, it can be used to cure intestinal and stomach upsets. An excellent herb for meat, game and poultr y, as well as in sauces, pies and breads, it brings the flavour of the great outdoors into the food. It helps to digest fatty foods and can also be taken as a tea. Thyme is antibiotic, antiseptic, tonic and stimulant.

Hyssop

Rosemary

Hyssop gives a minty and sagelike flavour to salads, sauces, marinades and fish dishes. Use sparingly as it has a strong flavor. As a tea it relieves bronchial congestion and is a stimulant for the digestive and ner vous system. A versatile and useful herb in the kitchen, it flavours meat dishes, pulses, fish, soups and potatoes. Use in moderation as a tea. It is stimulant, emmenagogic, carminative, cholagogic, relieves bronchial congestion, lowers blood sugar levels, cleanses the blood and relieves from stress.

Lemon balm (Melissa)

Makes a ver y nice tea with lemon scent. Balm is a mild antidepressant, relieves anxiety, has a tonic effect on heart, brain and peptic system. It soothes the stomach, is used in flatulent dyspepsia and lowers fever.

Lavender

Lemon Verbena

Flowers can be used sparingly in cooking, it adds flavour to roast lamb, marinades and biscuits. As a tea lavender is a relaxant, combats stress, headache and muscular pains and lowers blood pressure. Cold lavender tea makes an excellent skin cleanser and relieves sunburn. Sachets filled with lavender will repel moths in wardrobes and give a pleasant fragrance.

Ironwort

Savory

More lemony than lemon, it makes an excellent tea, taken either hot or as ice tea. Boosts the metabolism and as such it helps to lose weight, reduces nausea, bloating and indigestion and helps to bring cholesterol levels down.

Sage

Chives

Ironwort is also known as ‘mountain tea’ and is very rich in iron. It is diuretic and stimulant, combats indigestion, coughing and respiratory problems. Take with cinnamon and honey. Sage can be used sparingly to add flavor to pulses, pasta, poultry and fish. Taken as tea it soothes coughs and colds, calms the ner ves and brings down fever, combats gastric upsets and mouth infections. Increases blood pressure. Closely related to onion and garlic, chives can be added at the last minute to salads, sauces, pulses and soups. Rich in vitamins and iron, chives aid digestion, cleanses the blood and lowers cholesterol levels.

Use sparingly in cooking as it is ver y strong, savor y can be used as a substitute of black pepper, giving a spicy sweet flavour without being hot. Use in meat dishes, sauces, peas, beans and pulses. Savory can be taken as a tea and is antibacterial, antiseptic, antifungal, stimulant, emmenagogue, combats diarrhoea and relieves respiratory conditions such as asthma, cough and sore throat. It also aids digestion and relieves cramps and flatulence.

Elder

Elder makes a very pleasant tea, which can be taken as a remedy for colds and flu. It reduces the symptoms of hay fever, tones the mucous membranes, protects against infections, relieves arthritis and rheumatism. The cold tea can be used to cure sore eyes. Eating Guide 2013 | Time Out Cyprus 7


Road Trips in Cyprus

Itテ不 great to relax in a seaside hotel but if you want to see another side of Cyprus, you should get into the car, enter your destination into the GPS or open the map and head out of town. See some of the islandテ不 most picturesque villages, enjoy natureテ不 impressive palette of colours, stop off for a spoon sweet or a chat with the locals, go in search of the best meze, visit a museum and even spend the night in a traditional inn. GPS On the Pafos-Polis road you’ll find the village of Skoulli. In the middle of village (near a supermarket), take the turning for Lysos. It’s a relatively easy ride to Lysos as long as you keep an eye on the road signs. The hard part comes later. TOURISM Pay a visit to the Byzantine church of the Virgin Mary (Panagia Chryseleousas) with its beautiful mural in the sanctuary. Then make your way to Caroline’s Ranch (99777624 / www. rideincyprus.com) if horse riding is your thing or you can always test your shooting skills on the village range. Alternatively, if you like fishing you can drive to the Evretou Dam which is considered one of the best in Europe for bass and carp. Later you need to go to Stavros tis Psokas where, if you’re lucky, you will see some moufflon (the wild sheep that is endemic to Cyprus) and you can have a picnic at the campsite. Make sure to stop in Cedar Valley and enjoy the intoxicating scent of its 30,000 cedars of Lebanon. Your 4X4 adventure ends in the Pafos village of Panayia where you should visit the bir thplace of the island’s first president Archbishop Makarios III and the adjacent Cultural Centre (26922255) which features manuscripts, vestments and personal photographs. If you enjoy walking in nature, take the Vouni Panagia circular walking path (category

3) at the highest point of which you can enjoy a superb view of the village, Akamas, the Pafos forest and the Troodos mountains. FOOD For good Cypriot cuisine, go to the restaurant of the Paradisos Hills Hotel (26322287 / www. paradisoshills.com) at Lysos. On Fridays bear in mind that the menu changes and the buffet table is filled with Indian dishes. SHOULD I STAY OR SHOULD I GO? Paradisos Hills (26322287/www.paradisoshills.com) at L ysos is a great choice not only for food but for an overnight stay too. A double room with breakfast costs €81. If you want to stay at Panayia, there are two agrotourism places: Stelios’ House (99433094, €50 per night) and Liakoto (99543878, €45 studio for 2 persons).

also go the other way round and get to Vasa Kilaniou from Limassol, taking the Erimi turnoff. TOURISM At Lemythou you’ll find the Parakentro cultural centre (25462809/ www.parakentro.com) where artists and researchers from all over the world stay, work and exhibit. As you make your way towards Kaminaria, go through the village and you will come to one of the most picturesque places anywhere in Cyprus: the great stone Venetian bridges. First the Elea Bridge and then the bigger and more impressive Kelefos Bridge. The sight of the Arminou Dam below is also magical. Once you’ve taken lots of photos, get back in the car and head for Arsos. Don’t miss the Folk Art Museum with its old farm implements, photos, traditional bridal gowns, furniture and, basically, everything that today’s Cypriots’ great-grandfathers had in their homes, and pay a visit to one or both of the two village wineries, Laona (25943200) and Nicolettino (99995288). Your last stop should be the School Museum at Vasa (Sun 10am-12.30pm & 2.30pm-5.30pm. On other days, call Panicos Argyrides, the village headman, on 99649139) which is housed in the old village school building and presents a vivid picture of how things were at school in the old days. FOOD Head for Leonidas’ tavern at Kaminaria (99945975) for the most delicious meze dishes imaginable (from stuffed vine leaves and meatballs to spit-roast meats and pasta) and pay only €15. And if it’s a meze of traditional Cypriot dishes you’re after, you can also find a great one at two tavernas at Vasa. Pyrkos (25942655) and Palati (25943888) will both treat you to dishes you won’t be offered at any restaurant in town, including traditional sausages, wonderful spare ribs and 10 Time Out Cyprus | Eating Guide 2013

other seasonal items. SHOULD I STAY OR SHOULD I GO? There are many excellent places to stay in the area. At Arsos there is Cornaro House (99314684, 25358836) which charges €58 for a suite/studio and €68 for one-bedroom apartments. At Lemythou, Themis House (22422938, 25465525, €50 for two persons) is a 10-apar tment stone-built complex with a Jacuzzi, whist at Vasa the best agrotourism option is the Roti House (99373722, €85 with breakfast for 2 persons) with its wonderful garden and authentic traditional setting.

Kakopetria

Kakopetria, Spilia, Troodos GPS It’s easy to get to Kakopetria but hard to leave. Head from Nicosia to Troodos and you’ll be there

in 40 minutes. TOURISM As you enter Old Kakopetria on the west side of the village, you’ll see the imposing Couple’s Rock, after which a picturesque land-


scape unfolds before you with the enchanting old houses of Kakopetria taking centre stage. The village has rivers on either side, the Karkotis and the Garyllis, and you can hear the faint sound of water wherever you are. If you also appreciate colours, sounds and scents, you should head for Spilia, a village famed for its grapes and walnuts – indeed there is an ancient walnut tree there which is alleged to be the oldest on the island. In the middle of the village, the old olive press is one of the finest examples in the area. Another interesting place with an equally interesting name is the “Tomb of the Plague”, two huge rocks balanced the one upon the other in a singularly odd manner. Spilia is worth a visit not only for its historical connections but for its famed walking paths such as ‘Black Forest’ which starts at the crossroads linking the villages of Kannavia, Lagoudera and Kyperounda. FOOD At the traditional and welcoming Sama Taverna (22316473, 99571112), located in the centre of Spilia, the focus is on quality and traditional recipes. For fish, and in particular trout, go to the Mylos restaurant at Kakopetria (22922929). SHOULD I STAY OR SHOULD I GO? The Marjay Inn (22922208, €58 per night or €70 for the traditional room) in the centre of Spilia offers breakfast and other meals. If you prefer to stay among the narrow lanes of Kakopetria, the Maritsa Lodge (€80 per room) is just what you’re looking for. The price includes breakfast.

Finally it’s on to Polystipos with its brand new nature trail hidden inside a hazel forest and the chapel of Saint Andrew which is the jewel of village. You can obtain the key from Father Georgios (22652061). FOOD At the Yiannakos Tavern (22633311) at Fikardou you can order a rich meze (€15) and other freshly-made dishes. If you want somewhere a little higher up, go to the Pantheon restaurant (22652502, 99491337) at Polystipos. On Saturdays you can have a meze (€13) which includes locallysourced fresh fruit (such as grapes and apples) and home-made dessert, while on Sundays there is a rich buffet (€14). SHOULD I STAY OR SHOULD I GO? The Rousias Mansion (22642734, 22750605, 99947143) at Palaichori is perfect for large groups (3-4 couples or 8-10 persons) since it has 4 separate rooms while the courtyard with the large table and sofas are shared (€70 a night for 2 persons with breakfast). You’ll also have an unforgettable stay at Eugenia’s House (22642344, 99598499) at Askas, a 17th century building with four fully-equipped rooms (from €50 per night for 2 persons).

GPS From Nicosia, head towards Klirou and follow the signs to Fikardou. From Limassol, take the road to Saittas, Kyperounda and Chandria and from there up to Madari with its incomparable view and countless nature trails. TOURISM After a walk around the narrow lanes of Fikardou for a glimpse into Cyprus’ past, drive to Gourri for a mahleb (weekdays) or tasty honey balls (Sundays) at the coffee shop in the village square. If you have time, visit the Weaving Workshop (Mon-Fri 9am-1.30pm) where the loom is still working to make everything from towels and cushion covers to priests’ vestments. When you reach Palaichori you should visit the Museum of Byzantine Heritage (99793362, 99974230, call ahead for an appointment) to see its priceless treasures. Next comes Alona where you should look for the house of amateur painter Takis who

GPS On the Limassol-Nicosia highway, take the Khirokitia exit and follow the signs for Vavla. You’ll be there in 10 minutes. TOURISM Walk around the cobbled streets of Vavla and take pictures of the huge tiled-roof houses there. To the east of Vavla is Kato Drys where the Folk Art Museum (24342648, Tue-Fri 9am-2pm) is worth a visit to see the old weaving loom, old riding equipment, a wooden plough and iron ploughshare, amphorae and other items that were once part of the everyday life of the villagers. Your contact with Cypriot tradition doesn’t end here because we have saved the best for last: Lefkara and its lacemakers who sit by the roadside and, in some cases, stare at you as if you’re from another planet! The walls of the houses are literally covered in Lefkara lace, which makes for a unique sight. Your journey ends north-west of Lefkara at Vavatsinia, green and full of oak and chestnut trees where you should pay a visit to the 16th century church of the Virgin Mary (Panagia Chryseleousa) and see its impressive women’s gallery. FOOD At the Lefkara Hotel & Restaurant (24342154), chef Athanasia prepares some excellent dishes while you can try the local speciality, Lefkara lamb or beef stew, at the Vavatsinia Taverna (24342780, 99342780) in the village of the same name. If you decide on a meze, you’ll be treated to game dishes too. SHOULD I STAY OR SHOULD I GO? Garden Kamara House at Kato Drys costs €70 per night for two persons and it even has its own rural museum. Elli Kornioti (99892677) can show you around it and the whole village. At Lefkara we recommend the Lefkara Hotel & Restaurant (24342154, 96351581, €60 per night for a double room with breakfast) or Red Blue Door (99420984, 99488272) with its two separate apar tments, greatly resembling a boutique hotel (weekends €155 for the Red Room and €135 for the Blue Room, weekdays €110 and €90 respectively). Lefkara also has the Kozakos Luxur y Houses (99676704) in the main square.

GPS From Pafos take the Polis road and after passing Tsada, Stroumbi and Yiolou, turn left for Miliou. The landscape is a dream thanks to its greenery and, in particular, all the fruit trees. Go to the centre of the village and head for Akourdalia. All the villages on this route are close to one another. Just keep an eye open for the road signs. TOURISM The Laona-Akamas wine route passes through this area, hence the many vineyards, especially near Kathikas and Droushia. You’ll have a chance to taste wines made from the Xynisteri and Maratheftiko grape varieties at two very welcoming local wineries: Sterna (99699082) and K&K Vasilikon (99674004). Before you leave Kathikas, and making sure that you’re sober (!), take the opportunity of r a walk in the Koronia Gorge. If you don’t feel like walking you can always ride on one of Trakkos’ friendly donkeys. Another breathtaking sight in the area is that of the huge rocks northwest of Droushia. From Droushia, drive on to Kritou Terra and you’ll come across various reminders of the village’s former cosmopolitan past: the old casino (the only officially-sanctioned one to have existed on the island, whatever you may see on every street corner today), the old open-air cinema, the primary school and more. FOOD Pangratios (70003757) is a small tavern that opened about two years ago at Miliou and has become one of those not-to-be-missed places that people travel to from all over the island. The value-for-money meze with dishes such as rabbit, sheep’s head and snails, and the taverna-style background music will win you over from the moment you set foot in the place. If your taste


is more towards gourmet cuisine, the blend of flavours, atmosphere and service at Amaroula at Ayii Anargyri (26814000) will delight you, as will the dishes served at the Akamas Health Farm & Spa at Droushia. SHOULD I STAY OR SHOULD I GO? Since you’ve driven all the way to the hill resorts of Pafos, why not stay and enjoy the area at your leisure? Our first choice would be the Ayii Anargyri Natural Healing Spa Resort at Miliou which costs just €95 per night for a double room with breakfast. At Droushia you’ll find the brand new Akamas Health Farm & Spa (26332424/www.cyprushealthfarm. com) which combines relaxation, wellness and a stay in luxury suites. If you visit during the low season, from 1 November prices drop to €48 per person with breakfast, a Thalion treatment and free use of various facilities. If you’re a fan of agrotourism, you’re spoilt for choice: there’s Sappho at Droushia (26332650, 99604010, from €50 per night for a studio) with its pretty garden and vine, or Makrinari (99603603, 26932931, €40-€50 per night for 2 persons) near the fountainhead at Kritou Terra, while you can rent a villa through Z&X Villas (26945222 /www.zandxvillas.com). and perhaps go to the tiny open-air cinema which is surrounded by fruit trees. FOOD Sample an excellent meze at the Nikoklis Inn (26432211, 99309279) at Nikokleia and at Violaris Tavern (99191855, 26442999) near the square at Salamiou, which is also where you’ll find Emilios (99064485, 26442551) with freshly-made dishes and the owner’s home-grown fruit and vegetables, home-made halloumi and hand-reared chicken and rabbit on the menu. For something quick (but still special) try Extreme View (99498303) where you can also have coffee with one of the 5-6 different types of cake available daily. SHOULD I STAY OR SHOULD I GO? If you’re thinking of leaving once the sun’s gone down, you’ll have second thoughts the moment you enter Dinos’ House (99582587, 22490620, €70 per night for two persons or 50 per night for more than 2 nights) at Trachypedoula. A second option for an overnight stay is at Nikokleia at the Vasilias Nikoklis Inn (26432211, 99309279, €60 for a double room with breakfast).

From there the route to Trachypedoula is superb and you won’t be able to take your eyes off the multi-coloured rocky hillsides. This is natural wilderness straight out of a road movie. Along the Diarizos river bed there are layers of rock some 200 million years old, not to mention the deserted village of Prastio with the pretty church of the Archangel, watermills and the imposing new wind farm overlooking the area. TOURISM Once you’ve made the best of the many photo opportunities, your next stop is Kourtellorotsos. If you’re the sporty type you can climb up the rocky elevation, otherwise walk around it and in the nearby river bed to check out the rare wild flowers. TOURISM In places like Lofou, Vouni and Omodos, it’s good to forget that you have a car. Enjoy walking down the narrow cobbled lanes, chat with the villagers at the coffee shop, taste the local specialities at a tavern… At Vouni you can visit the donkey sanctuary (25944151, 25945488) and even ‘adopt’ one of the animals there. At Platres you should walk to the picturesque Caledonia Falls while Omodos is where you can relax with some wine tasting at the Zenon (25423555) and Linos (25422700) wineries, visit the Monastery of the Holy Cross where what is claimed to be the only piece of the Holy Rope (with which Christ’s hands were tied to the cross) in the world is preserved, admire the works of Maro Aristou (25560493, 99340565) in the Byzantine Icon Workshop inside the monastery, and buy some souvenirs in the square. FOOD This is one thing you don’t need to worry about. GPS The church of St Nicholas of the Roof is located to the west of Kakopetria. From Nicosia, after Kakopetria just follow the signs. The journey from both Nicosia and Limassol takes approximately 45 minutes. TOURISM Set off early and stop off at the church of St. Nicholas of the Roof, which is all that remains of an 11th century monastery. From there to the other villages, the route is truly inspiring. We recommend that you start at Prodromos. Park on the roadside, take in the view, take some pictures with the old Berengaria Hotel in the background and then head further north towards Pedoulas. You can start your walk from the Byzantine Museum (22953636, Tue-Sun 9.00am-4.00pm) and the adjacent 15th centur y church of the

Archangel Michael and end up at the Folk Art Museum with its display of old farm implements and photographs of the old crafts that were once common in the village. At Moutoullas you must visit the church of the Virgin Mary (Panagia Moutoulla), a UNESCO World Heritage site, before travelling to Kalopanayiotis. Walk along the River Setrachos and take photos of the bridges (one of which dates back to the Middle Ages), try the sulphurous water from one of the springs and visit the Monastery of Saint John Lampadistis and its religious treasures. The mural of the crucifixion in the chapel of Saints Andronikos and Athanasia is also not to be missed. For keen walkers, the Kalopanayiotis-Oikos nature trail takes you past plenty of interesting sights. FOOD For an authentic Cypriot meal you should try the Byzantino restaurant (22952444) inside Casale Panayiotis at Kalopanayiotis. The view from the veranda is magical. Also, The Old Cinema tavern (99130275), standing among the narrow streets of picturesque Kalopanayiotis has become the place to go for lovers of traditional Cypriot cuisine which comes to life through Angela’s recipes and superb cooking skills. he Cyprus countr yside is full of highly aromatic wild herbs; wherever you go on the island, be it in the coastal areas, the mountains, or even next to roadsides many species of wild herbs can be found. The island has a long history of traditional uses of herbs for medicine, for preserving foods and of course also in cooking. Pliny, the 1st century historian and naturalist wrote: “The herbs of Cyprus are the best in the entire Roman Empire.” The climate and soil of the island are ideal and ensure the best quality herbs. Even the simplest dish can take on a different flavour and aroma, just by using a herb, and change our appetite as well! In general, herbs are used in small amounts halfway through cooking time. In oven dishes the herbs are usually added right at the beginning. Herbs take a prominent place in the Mediterranean diet and fresh herbs such as parsley, celery, mint and rocket can even be the main ingredient in a dish! Apart from their wonderful taste and aroma, herbs are a powerhouse of health. The father of medicine, Hippocrates, said 2500 years ago: “Let thy food be thy medicine”, a principle which the ancients used to live by and which nowadays is coming back into vogue. The herbs in this specially selected organic blend are very versatile in their uses. They enhance the aroma and flavour of a great variety of dishes, such as meat or vegetable casseroles, oven-baked potatoes, egg dishes, grilled or baked fish, the combinations are endless. ROAST POTATOES

slow roasted lamb with potatoes

No meal is complete in Cyprus without roast potatoes, and for good reason: the rich red soil of the potato-villages in the east of the island produces the tastiest and best quality potatoes.

This is one of the oldest Cypriot dishes which remains very popular to this day with locals and visitors. The meat is traditionally roasted in clay ovens fired with local aromatic carob or olive wood, and it gets so tender and soft it falls off the bone on your plate.

Serves 4 Ingredients

1 kg of potatoes 1 cup of extra virgin olive oil a tablespoon of Flavours of Cyprus herb mix, minus the bay leaves salt and pepper

Method

Peel the potatoes and quarter them. Place them in a baking tray and pour over your cup of extra virgin olive oil. Add a tablespoon of your herb mix. Season well with salt and freshly ground pepper. Toss the potatoes so they’re all well coated with oil and seasoning. Roast in an oven preheated to 200oC for about 35-40 minutes. Using a spatula, carefully turn the potatoes every 20 minutes so that they crisp and go golden on all sides.

Serves 4 Ingredients

1.5 to 2kg leg of lamb 2 lemons, cut into 6 wedges each 4 large potatoes, washed and each cut into 6 wedges A tablespoon of your Flavours of Cyprus herb mix 0.25 tsp cinnamon 250ml white wine or water Salt & pepper

Method

Wash and pat dry the lamb. Make several deep slashes in the meaty parts with a sharp knife. Transfer the lamb to a roasting pan that has been lined with heavy duty kitchen foil. Squeeze half of the lemon wedges over the lamb and rub the juice all over the meat. Push the squeezed lemon wedges into the slashes in the meat. Place the potatoes and tomatoes around the lamb, squeeze over the remaining lemon wedges and add them to the pan. Sprinkle over the cinnamon, the salt and a generous amount of pepper. Rub the herbs in your hands over the dish to bruise some of the leaves and sprinkle all over the lamb and the potatoes. Add the wine or water to the base of the pan. Seal with more heavy duty kitchen foil to retain the moisture while cooking. You want to allow an air gap between the meat and the foil and you must ensure the edges are airtight so that the moisture from the cooking lamb is not lost. Put the sealed roasting pan into an oven that has been pre-heated to 170oC (160oC for fan oven) and leave to cook for 4 hours. Remove from oven and let rest for 15 minutes before removing the foil and serving.

VEGETABLE CASSEROLE Vegetables grown in the Cyprus sun are at the peak of their flavour when picked and cooked in season. This dish tastes even better the next day as the flavours develop over time.

Serves 4 Ingredients

3 tbsp extra virgin olive oil 2 large onions , finely chopped 3 garlic cloves , sliced 1 tsp paprika ½ tsp cumin 1 tbsp Flavour of Cyprus herb mix 3 medium carrots, sliced 2 medium sticks celery, finely sliced 1 red pepper, chopped coarsely 1 yellow pepper, chopped coarsely 2 courgettes, sliced thickly 2 aubergines, sliced thickly 2 tins peeled and diced tomatoes 300ml vegetable stock from a cube

Method

Heat the oil in a large, heavy-based pan. Add the onions and cook gently for 5 - 10 mins until softened. Add the garlic, vegetables and spices and cook for 5 minutes. Koupepia Afelia: pork stewed in red wine and coriander. Baklava: dessert made from filo pastry layered with nuts and doused with syrup. Gigantes: large beans baked in tomato sauce. Halloumi: traditional Cypriot cheese made from goat’s milk, often fried or grilled. Hiromeri: marinated, smoked and pressed ham Horiatiki salata: Greek ‘village’ salad made with tomato, cucumber, onion, feta, green pepper and olive oil. Glyko: preserved fruits in syrup. Kateifi: syrup-soaked, shredded-pastry rolls. Keftedes: herby meatballs of minced pork or lamb, egg, breadcrumbs, herbs and spices. Kleftiko: slow-roasted lamb on the bone, flavoured with oregano. Koupepia: vine leaves stuffed with rice, spices and minced meat (‘dolmades’ in Greece). Koupes: cigar shaped wheat cases with meat filling. Loukanika: pork sausages with spices and wine. Mousakas: baked dish of minced meat, aubergine, potato slices and herbs, topped with béchamel sauce. Pourgouri: cracked wheat rice. Sheftalia: pig or lamb gut-membrane stuffed with pork or lamb mince, onion, parsley and spices, then grilled. Souvla: large chunks of lamb or pork, slowroasted on a rotary spit. Souvlaki: meat cubes quick-grilled on a skewer (kebab). Stifado: meat stew (often rabbit) with onions, red wine, tomatoes, cinnamon and bay leaves. Taramosalata: fish roe pate with olive oil, lemon juice and breadcrumbs or potato. Talatouri: dip of shredded cucumber, yoghurt, garlic and mint (‘tzatziki’ in Greece). Zivania: clear and very strong local alcoholic spirit best enjoyed icy cold.
