The award-winning company are bringing their magical production of Twelfth Night – one of Shakespeare’s funniest plays and we can’t think of anything more perfect for a summer’s evening than a classical retelling of this great comedy, set against the backdrop of one of the nation’s most beautiful attractions.

JULY 25 NORWICH PRIDE This year the annual Norwich Pride parade coincides with performances of the song and dance extravaganza Puttin’ On The Ritz, which stars Strictly Come Dancing favourites Kristina Rihanoff and Robin Windsor. So, with the cast aiming to wave at participants as the annual parade passes the theatre, those involved in Pride are also being encouraged to wear outfits which feature plenty of Hollywood style. Here be Dragons! GoGoDragons! Trail 21st June-5th September

F

OLLOWING the success of GoGoGorillas! in 2013, Break Charity is firing up our City centre with a blaze of dragons this summer, bringing visitors to Norwich, embracing creativity and ultimately raising funds with an auction at the end of the event. Each of the 80 plus large dragon sculptures is sponsored by a local business, trust or group. The dragon designs were submitted by artists in November 2014 when sponsors had the opportunity to look at all the designs and choose their favourite one. The artists have been all full steam ahead and most of the designs have been completed, ready to go on display on 21st June. The themes of the designs fit into the following categories – Norwich and Norfolk inspired; Characters; Nature inspired;

June/July 2015 Vanilla

Cult inspired; Elements and Pattern. The variety of chosen designs include: watercolour, acrylic, mosaic tiles, car parts, eagle head, rhinestones, tuppences, and 3D modelling. A trail map is available to find all the locations and the organisers are working on providing a weekend bus ride to get to the dragons placed a little further out of the city centre. The trail will give the participant a series of codes that will in turn allow them to enter a competition for an incredible far flung prize in association with KLM and Norwich International Airport. During the trail there are activities all over the city which are dragon related which can be followed on the dragon Facebook page, Twitter, Instagram or the website www.gogodragons.co.uk.

EEP an eye out for activities throughout the summer holidays that have a dragon theme, as well as The Forum and Intu-Chapelfield with their individual events for children. Merchandise is available through Jarrolds of Norwich including GoGoMinis! which are replicas of five large GoGoDragons! Collection boxes can be downloaded through the website to allow you to collect loose change and help donate to Break Charity too. The event culminates in a last chance to see all the dragons outside The Forum on 27-30th September and then the auction on Thursday 1st October 2015.

E’RE APPROACHING that time of year when warmer days and balmy evenings begin to offer hope that we’ll be able to start exploring summer fashion and of course what summer also brings is festival season. Now personally I have no current plans to attend any festivals this year. We talked about it, as we have done for the past couple of years and decided not to make plans unless we could somehow do the glamping thing. This has become an annual conversation that never gets taken any further! However, regardless of whether you find yourself at a festival or not this year you can still enjoy a touch of festival inspired fashion. If you choose to go down the vintage route you will more than likely find yourself creating outfits which despite this style being a huge summer trend, are looks that are individual and unique to you. I’m going to break a myth about vintage... Vintage doesn’t have to be about dressing ‘alternative’ it’s simply just an alternative shopping choice. Fashion whatever the age of item, is there to be enjoyed and vintage can be a great way to try out new outfit combinations.

How to resolve a dispute over an upaid bill MY QUESTION: I am a small business owner and one of my customers has failed to pay an invoice. My business has only been going for just over a year and up until now I have enjoyed a good relationship with all of my customers. The amount isn’t huge but every penny counts at the moment plus I feel there is a principle at stake. What can I do?

HE FIRST STEP is to try and resolve matters informally with the customer directly. Some customers may, unfortunately, find themselves unable to pay an invoice and it might be more cost efficient to negotiate repayment by instalments. If a customer still fails to pay, the next step is to write a formal Letter Before Action giving the customer notice that if they do not pay within a certain time, litigation will be commenced. This letter is important as it

gives the customer a chance to tell you why they have not paid. If no satisfactory response is received then litigation may be commenced by issuing a claim form from the County Court Money Claims Centre. A fee is charged for issuing the claim and this fee will depend on the value of the claim. Alternatively, the claim may be filed online at www.moneyclaim.gov.uk for a reduced fee. The Court will then send the customer a copy of the claim form so that they have an Vanilla June/July 2015

opportunity to respond. This is usually 14 days but can be extended to 28 days. It may be that your customer admits the money is due and pays outright or offers to pay by instalments, or defends the claim and could issue counterclaims if they believe you owe them money. If the customer files a defence to your claim, both parties will be sent a Directions Questionnaire to decide how best to hear the matter. As the Claimant and depending on the amount of the claim, you may need to pay a fee to file the Directions Questionnaire and there will be a fee for the Hearing.

F THE VALUE of your claim is less than £10,000 it will most likely be allocated to the Small Claims Track. If so, even if you are successful, the costs you can recover in the Small Claims Track are very limited, however you may be able to claim interest on the debt due to you. Alternatively, you may also wish to consider using the Small Claims Mediation Service offered by the Court. Mediation is encouraged by the Court and the claim will be stayed to allow for this. If you are unable to resolve the dispute and the hearing goes ahead and you are successful, you will obtain a County Court Judgment. Novice golfer Heart FM's Heidi Secker takes to the Green

ISTORICALLY, I’ve only picked up a golf club once – Great Yarmouth seafront, 1988, for a round on the crazy course. There aren’t many women I know, ok, ANY women I know, who play. So, with a lesson booked at Norwich Family Golf Centre – I became the first! Ahead of the day I wondered if I’d have to be male just to enter the Clubhouse? Would Plus Fours be compulsory? And more importantly, what shoes should I wear? I’m happy to tell you that my thoughts on golf were very circa 1960. Norwich Family Golf Centre is a modern club set in pretty countryside. Arriving (in my most ‘sensible’ shoes) we enjoyed the view over the greens. The 9-hole course is for all standards. There’s a driving range (where you practise) a bar and café (for post-tuition cake) and there’s also adventure golf – it’s not just for the kids. We were welcomed by our coach Peter Field, who is a professional golfer of 27 years.

For the second time in my life, I picked up a club and stepped on to the driving range. I would need to learn how to hold the club correctly – it’s a tricky mix of grip, posture and balance and it takes practise.

ETER very patiently helped with small adjustments, tips and demonstrations. Like a lot of sports, success relies on your ability to co-ordinate hand, eye and mind. With years of coaching experience he explained, “everyone’s progress is different, but the fun is in the learning.” After a bit of shuffling we find our inner Tiger Woods and take a swing... then, thwack! YES! We hit it! Suddenly, we love golf! We’re outside, the sun is shining, there’s a breeze through our hair and we’ve sent a golf ball flying into next week. ON OUR FIRST LESSON. There’s no stopping us after that, shuffle, swing... thwack! We miss a few too but who cares? We’re having a great time learning something new. It’s fun, ladies! No-one is more surprised

than me, I always thought of golf as a male thing. But as well as being incredibly welcoming to us newbies, Norwich Family Golf Centre at Bawburgh, is also having success with its women’s ‘Drive!’ initiative. It combines networking with a lesson and is a new way to experience the game. We had a great afternoon. Once you ‘thwack’ the ball for the first time, you realise why people love golf so much. One in four affected by Varicose Veins

W

ith summer here and warmer weather, wardrobes change, so now is the time to get those problematic varicose veins sorted and step out full of confidence. In a career spanning more than 25 years, eminent vascular surgeon Michael Gaunt knows all too well how simple procedures can make a fundamental difference to a person’s life - whether physical or indeed psychological.

IGNORANCE ISN’T BLISS There has been a lot written lately about people ignoring their varicose veins. However, putting off treatment can cause wideranging problems and doing nothing could lead to much bigger issues down the line. Mr Gaunt said: “Varicose veins can often be regarded as a cosmetic issue but ignorance is anything but bliss. “This is especially a sad state of affairs when you consider how simple and straightforward modern treatment really is.” “Gone are the days when you would require major surgery and a lengthy hospital stay. Thanks to modern techniques, you could be returning to work within one or two days rather than weeks.” June/July 2015 Vanilla

“Most importantly, you will be setting your legs free of aching and tiredness. The difference can be life-changing”. Mr Gaunt stresses that the initial assessment of veins should always involve detailed ultrasound scanning. If it doesn’t, you are going to the wrong person. The scanning gives the surgeon a detailed picture of where the problematic veins are and means he can focus treatment accordingly. As well as solving the physical side of varicose veins, Mr Gaunt believes simple procedures can actually make a big difference to a patient’s lifestyle and confidence. He explained: “I have had patients who won’t wear dresses, shorts or swimsuits in the summer because they are simply horrified by how their legs are looking. I have had male patients embarrassed to play sport, for fear of showing their 'terrible varicose veins' but in fact they do not realise that these veins also adversely affect their sporting performance. “It doesn’t have to be this way. Those very same patients have benefited from treatment and haven’t looked back. “It is a simple example of

how treatment can make a fundamental difference to a person’s life. “It is a more common problem for women but when you consider one person in four is going to be affected in some way by varicose veins, then it is clear both sexes will suffer.” Mr Gaunt’s 27 years of clinical experience includes 12 years as a consultant surgeon at Addenbrooke’s Hospital, Cambridge, and in private practice in Norwich, London, Bury St Edmunds and Cambridge. He specialises in the minimally invasive treatment of varicose veins and is one of the most experienced surgeons in the UK. WHAT CAN I DO TO HELP THE DARK CIRCLES UNDER MY EYES? Simply put, periorbital dark circles are a result of the thin layer of skin below your eyes showing the blood vessels and the blood they contain. Usually you can help improve the appearance by making sure that you get your full eight hours sleep a night and make sure that you drink two litres of water every day, as dark circles are made worse by dehydration and a build up of toxins. You might also want to try using an eye product that contains caffeine, as it can act as a ‘pick me up’ for the eye area and help to reduce puffiness. Also worth a mention are products that contain skin plumping vitamins C and K. Salon treatments which target the eye area may also help as massaging the area can help to reduce puffiness and eliminate toxins. IF I USE MAKEUP WITH SUNSCREEN IN IT, DO I STILL NEED TO APPLY SUNSCREEN SEPARATELY? That all depends on the SPF of the sunscreen in your makeup you are using. If your make up contains an SPF 15 or higher, then it should generally be ok as long as you apply it evenly. If your makeup contains an SPF lower than 15 you will need to apply a sunscreen underneath your

make up. It is recommended that we all use a sunscreen of SPF 15 or higher everyday even in the winter months to prevent the skin from UVA and UVB damage and accelerated skin ageing. It is also worth remembering that SPF is not accumulative, so if your foundation contains SPF 10 and your powder contains SPF 8 the maximum protect you are receiving is SPF 10. Also, sun exposure degrades sunscreen properties, which means that you will need to reapply every few hours. We recommend using a mineral powder, or mineral veil, as it contains a natural SPF 15 and can be easily dusted on top of your make up without making it look too heavy. WHAT CAN I DO TO REDUCE ACNE SCARRING? The way you treat your acne scarring will depend on your skin colouring. If you have fair skin you will usually end up with red marks and if you have a darker skin then you may find that your scarring is darker than you natural skin tone. So, for paler skin tones, go for an exfoliating treatment which contains salicylic or glycolic acid which will help to reduce the redness of your scars. If you have a darker skin tone then you might want to consider using a cream which has a lightening ingredient to help even out your skin tone. If your scarring is deep you may need to consider a treatment that will help to regenerate the dermal layer of the skin – boosting your skins rapid repair and collagen, which in turn will help reduce the deep scarring. n

Now Baker Rhodes Home run by partners Jon Rhodes and David Baker is on the expansion trail with work already started on increasing the square footage of the shop in Felmingham, near North Walsham, adding on a new gallery for exhibitions and launching a new buyer’s website. The beautiful shop, which opened its doors nearly 20 years ago, offers a huge range of home accessories in particular silk lampshades, wallpaper and paints, decorative objet d’art and giftware including the ever-popular Parisian-made fragrance candles, which sell by the dozens. In my pantry Norfolk rapeseed oil, pulses, rice, Candi Robertson’s ‘Spiced carrot chutney’, Chilli’s Galore Jammy chilli relish, Heygates flour, Beachamwell honey, smoked paprika, Norfolk saffron and all types of nuts. In the cold store fresh free range eggs, Marybelle Crème Fraiche and yoghurt, chocolate, butter and a good selection of Norfolk and Suffolk cheeses.

I love anything to do with chocolate as it’s such a versatile ingredient.

What do you like to eat after a hard day in the kitchen?

I always eat before service to keep me energized, I like to eat a healthy meal with lots of fresh local veggies, after service there’s nothing better than a hot chocolate and a cuddle with my two cats ‘Pops’ and ‘Coco’!

AVING DRIVEN PAST RELISH on an almost daily basis for the past 6 years, I now constantly question myself (or indeed my sanity) for never eaten there before. Located in Newton Flotman on the A140, a 15 minute drive from Norwich city centre, it’s well signposted and easy to find. Beautifully decorated, this Grade II listed restaurant looked good and staff were friendly and helpful. Having been settled down in the bar area, menu fully explained, it was a great to

So, to dinner and first off we were treated with a macaroni cheese and choux bun pre-starter which was fabulous. My starter choice was scallops with chorizo purée, white bean velouté, bacon crisp and carrot accompanied by a French Voignier wine. Mark’s was pigeon breast, carrot purée, griddled shallots, pickled mushrooms, peas and hazelnuts accompanied by a red Chile Carménère. Both were delicious – the tastiest scallops I’ve ever had – the pigeon breast was tender, full of flavour and we loved Rachel’s choices of wine. Main course was duck confit leg Dauphinoise, celeriac purée, wild garlic, cabbage with a wine and anise sauce accompanied by an Negroamaro Primitivo Salento red for Mark. It was chicken for me; breast, pressed leg fritter and confit wing with chicken skin, asparagus and truffle potato purée .The chicken was moist and so tender and I adored the truffle potato. been a favourite wine and the one served didn’t disappoint. Mark so enjoyed his duck and he is still, some weeks later, talking about the Negroamaro. Apparently everyone must try it, in fact it should be a compulsory red wine to drink!

ESPITE FEELING RATHER FULL we didn’t decline the pre-dessert, which was lovely. As a person who always starts at the dessert section of the menu I was spoilt for choice. In the end I settled for caramel panacotta, peanut butter shortbread, peanut brittle, salted popcorn with raspberry jelly – nut heaven is all I can say! Mark had the chocolate mousse millefeuille – coffee sponge, coffee ice cream, milk jelly and crème fraîche – which we both agreed was something really different. (As a connoisseur of puddings I felt obliged to test his too you understand!). Coffee and home-made petit fours followed – excessive but it had to be done. Would I go back? Yes, definitely (OK, I confess I have already been!). My next visit will be for the Pizza Sundays, freshly made pizza that you can watch them prepare and cook outside.

PAUL MAS DOMAINES/ PASTEL ROSÉ TERRASSES DU MOULINAS LANGUEDOC An ideal crowd pleaser: On sale at the lovely Deli in Jarrolds £6.80

ITH SUMMER and warmer weather on its way in my book it’s ‘Rosé Time’. Long gone are the days of the sweet Mateus Rosé wine – now we prefer a more elegant, fresh style of wine to sip while sitting in the sun. Always a good match with seafood (Cromer Crab immediately springs to mind) or ideal with our new tapas menu in the lounge at The Library. Well-chilled on a summer’s day, rosés make a surprisingly good food match. They are not wines to dwell over too long, but are best glugged joyfully. The qualities I’d look for in a good rosé would therefore be crispness and freshness (buy the most recent vintage) along with fruitiness and good balance (they need acidity to provide food compatibility, since they don't have tannin). This is a particulary gorgeous rosé: Paul Mas Domaines/Pastel rosé terrasses du Moulinas Languedoc. On the nose there are notes of raspberry and cranberry along with a little strawberry. A really composed and lovely finish which is dry and crisp with good length.

HE MOMENT YOU STEP through the door of Pedro’s you instantly feel you have been transported to a sunnier climate where both the food and fun are hot, hot, hot.

enviable reputation. On the several occasions we have visited, the restaurant has always been packed to the rafters. It’s definitely a place to party and Pedro’s can accommodate groups of 50 or 60. There are quieter corners though, if you’re just in a couple or small group. The tantalising choice of drinks make it near impossible to abstain. Cocktails are the order of the day – they serve all your favourite ones, including jugs to share. To start, a mojito (priced at £5.95) while we set about the difficult task of making our choices from the exciting and extensive new menu. As someone who does like it hot, I chose the starter of chilli relleno (£4.95), jalpeno peppers stuffed with cheese and deep fried served with sour cream. The Mexican-styled taverna where diners have the option of donning a sombrero to fully soak up the TexMex atmosphere is bustling and busy even at the earlier 6pm sitting. An air of excitement and anticipation is further fuelled by the jolly and welcoming staff, and the fact that you can see the chefs in the open kitchen putting the finishing touches to array of sizzling and aromatic dishes which immediately gets your taste buds tingling. Pedro’s Tex-Mex Cantina, situated in a corner of Chapelfield Gardens, in Norwich has been serving up delicious fajitas, burritos, enchiladas for over 25 years and has built up an

HE FOX COUNTRY PUB & Restaurant, set in the charming village of Lyng, dates back almost 300 years. It was lovingly renovated in 2014, and retains a very traditional feel, with a beamed ceiling, open fire and tiled floor – but combines this with a modern, fresh style. The expansion has created two bar areas, one which welcomes dogs, and a large dedicated restaurant. When we arrived at the Fox, all three of us (our dog, Phil, included) received a very warm welcome. Staff were keen to make him feel at home with a bowl of water and plenty of attention. The Fox is clearly serious about food and drink. They offer a great selection of fine wines by the bottle or glass, and traditional real ales. S started the evening with a pint of Woodeford’s Sundew, which was poured straight from the barrel. He pronounced it an excellent pint. To drink during dinner, S chose a bottle of Argentinian Gouguenheim Malbec, a full-bodied wine packed with flavours of cherries and plums. S is quite a wine buff, and he gave this wine ten out of ten for both quality and value for money. And so to the food. The menu is modern, yet accessible, with plenty

to choose from and something to suit all tastes. The grill-style menu with à la carte accents offers starters such as salt and pepper squid and mixed game terrine, with a wide choice of mains that include steaks, wild boar and apple sausages, some tempting specials like seafood thai green curry, risotto rice cakes, and good old fish and chips, with some great vegetarian options as well, such as crispy tempura vegetables and Mediterranean pasta.

OR MY STARTER, I chose something I haven’t eaten since childhood – whitebait. These were tossed in a lightly spiced flour, quickly deep fried, and served with an aioli dip. Absolutely delicious

The Fox is clearly serious about food and drink. They offer a great selection of fine wines – sizzling, crispy, moist and the flavour was out of this world. I could have eaten several portions. We all enjoyed this one, especially Phil, who is a real fish-loving hound! S plumped for fresh local asparagus, wrapped in Parma Ham and bathed in a creamy parmesan sauce. This, too, was very good indeed; the asparagus (fresh, local and in season) was cooked to al dente perfection. The ideal starter. Main courses were equally impressive. I chose roasted butternut squash risotto, with roasted cherry vine tomatoes. Again, this is something I haven’t eaten for a while, but I wondered why, because it was so good. Getting that perfect risotto rice texture is key to this dish, and

The Fox got it bang on. Sweet with the squash but still savoury, creamy and very satisfying indeed. It was a ribeye steak for S, with chips, baked tomato and mushroom and salad. The steak was beautifully tender and perfectly cooked, and the accompanying chips were as they should be; crisp and moreish. Full marks again! Desserts were indulgent, but we were on a roll, so I decided to go for a rather sophisticated brown sugar meringue, with raspberry chantilly cream and honeycomb. A gorgeous creation arrived, which is just how a dessert should be. It was sweet, but not too sweet, and quite mouthwatering. Both S and Phil are cheese lovers, so S thought he’d try the cheese board. This could easily have been a meal in itself, with a wonderful selection of cheese, wafers, fruit and a wonderful selection of cheese, wafers, fruit and homemade chutney. Both man and beast gave it a big thumbs up – a clean plate was evidence of that!

8-12 sardines 50g semolina 1 tsp sweet smoked paprika Salt & pepper to taste Squeeze of lemon 4 slices of toasted sourdough 200g rocket leaves 8 caper berries SALSA 4 large vine ripened tomatoes de-seeded, chopped 1 diced red onion ½ cucumber – de-seeded & sliced 1 garlic clove chopped 1 tbsp tomato puree 50g fresh coriander, chopped Squeeze of lemon Salt, pepper & sugar to taste PIRI PIRI DRESSING 1 red chilli finely diced 1 garlic clove crished 1 tbsp whisky Zest of ½ lemon 1 tbsp Lemon juice 2 tbsp red wine vinegar 250ml olive oil Salt & pepper to taste

A sassy fish dish from Phil Hovey at The Wine Cellar 1 Make the piri piri dressing by whisking all the ingredients together in a bowl, this can then be left to one side until needed. 2 Make the tomato salsa by combining all the ingredients, this can also be prepared in advance and refrigerated. 3 Mix the semolina and paprika together on a plate and use to dust the sardines. 4 Place the de-scaled and gutted sardines onto a preheated griddle pan (little to no oil should be required), cook on

a high heat for approximately 2 minutes on either side (until the flesh blisters and chars, eyes turn opaque) when the sardines are ready, finish with a squeeze of lemon. 5 To plate, put the toast in the centre and top with the sardines, salsa, caper berries salad then drizzle with the piri piri dressing. This has obviously been a lifechanging experience for you. Do you have any message for young women of your age?

You are only 28, but you have raised an amazing £9,000 for Norwich charity Big C. Tell us why you decided to raise the money and what it means to you. On July 28 2014, I was diagnosed with breast cancer. At the age of 28, this was not something I ever imagined would happen to me. The day I was diagnosed is still a blur to me. Something I do remember clearly, though, is being told I would lose my hair as a result of chemotherapy. A few weeks later, after taking some time to come to terms with all the changes which were about to happen to me, I decided that chemotherapy would not take my hair away, but rather I would be the one to give it away. I chose to donate my hair to The Little Princess Trust, a fantastic charity providing real-life wigs to children across the UK and Ireland who have lost their hair due to cancer treatment. I arranged a head-shaving party for a week after my first chemo session, which

So how did you get involved with Big C?

Yes, please check your breasts regularly, no matter how old you are. It never occurred to me that I might get breast cancer so young, but checking myself should have been something I did automatically and on a regular basis. Young women need to be made aware of the signs of breast cancer and regularly check themselves – it only takes a few minutes and it could save your life. My treatment is now finished and has been successful, so I’m looking forward to getting on with my life – and of course that means continuing to raise money for Big C.

The Big C Centre, based at the Norfolk and Norwich University Hospital, has been invaluable to me and my family, offering a friendly face for a chat and cuppa, as well as providing information and sessions on nutrition, exercise and emotional well-being. There are also workshops available that range from scarf tying to make-up sessions. The staff and volunteers are really welcoming and offer fantastic support to families and individuals whose lives are affected by cancer. I was completely overwhelmed by the response to my Virgin Money Giving Page with over 300 people making donations

Now my treatment is over and I am on the road to recovery, I am very much looking forward to enjoying the summer in Norwich. I will be going to the Norfolk and Norwich Arts Festival, catching up with friends over lunches in Franks Bar and the Waffle House, enjoying some pamper sessions at Beauty Nest Norfolk, taking in the beautiful wildlife during some walks around Whitlingham Country Park and enjoying a spot of afternoon tea at the Britannia Cafe!
