Pickled bamboo shoots 酸笋 The Chinese cornered the pickling market centuries before your local cafe. Like Korean kimchi, a serve of pickled bamboo—a sweet and salty condiment preserved in oil and chilli— brings a piquant touch to flagging salads or bland rice dishes.

Dried shiitake mushrooms 冬菇 Often sold loose, this much–loved fungus —often referred to as Chinese black mushrooms—couples earthy, smoky flavours with velvety flesh. Soak in hot water and discard the stalks before adding to soups and broths. 冬菇味道鲜美,香气 沁人,入口软滑,深 受大众喜爱。通常以 散装发售。先用热水 泡软去蒂,可放汤 食用。

Bitter Melon 苦瓜 Don’t let its bumpy exterior fool you—the bitter melon might not win points in the appearance stakes but it adds a striking tartness to everything from stir–fries and noodles to hot and sour soup.
