Chef Neil Perry is the unlikely face behind takeaway joint Burger Project. His Wagyu burger has garnered cult status at Rockpool Bar and Grill but now he’s delivering old school burgers, fried chicken and salted caramel thickshakes. Beetroot’s my Achilles heel so, holding on with two hands, the “Aussie” burger fits the bill with a stillpink grass fed patty, a slice of cheese, pickles, some greenery (lettuce, tomato, onion) and slices of my favourite red veggie. Frozen Korean beers, liquid nitrogen chilled icecream and double fried chicken await at Arisun Express. Don’t waste your energy on observing the décor, focus your attention on what arrives on the plate or in the box. The boneless Korean fried chicken, double fried and served with a wasabi mayo is a must but beyond the bird, the spicy pork rib cheese melt is worth a try, if only for the novelty factor.

Standards are high across the board but, if you’re a virgin Din Tai Fung-er, order the Xiao Long Bao—filled with an intense pork broth, this steamed dumpling literally pops in your mouth. To the naked eye, dumpling making seems simple. However, it takes years to master the craft behind Din Tai Fung, where thousands each day are hand-made and cooked to order. The humidity, flour-to-water ratio and the thickness of the dough are all crucial in creating the perfect dumpling. Chefs adhere to militant-type precision by using templates, scientific measurements and goldsmith scales. The result of such meticulousness is a dining experience nothing short of exceptional.

Know Your Noodle 面条大观

Traditionally eaten during the Lunar New Year, La Mian are hand-pulled noodles made from wheat flour and water with a little salt and oil.

Invented by Momofuku Ando in response to food shortages in Japan after World War II, ramen is a noodle served in soup form. Pucker up and slurp!

Round and about the width of spaghetti, this Japanese specialty is made from buckwheat. Eat hot in winter or cold with dipping sauce in summer.

Made from rice flour and water, silky smooth or sometimes gelatinous. Try them in fragrant Vietnamese pho or Thai pad see ew.

Made from mung bean starch, these little threads are also referred to as ‘glass noodles’ due to their transparent appearance. Try them in Thai salad.
