Literally translated “rooster’s beak” because it was eaten between pinched thumb and forefinger, pico de gallo is a Mexican staple as common as ketchup and mustard are stateside. The juicy tomato-onion mixture would normally make bread soggy, but a layer of melted cheese provides a delicious barrier.

1 baguette, cut into 36 (1/4-inch-thick) slices Olive oil 1½ cups (41/2 oz.) shredded Mexican melting cheese or Monterey Jack 3 tomatoes, seeded and chopped 2 jalapeño chiles or serrano chiles, seeded and finely chopped 2 garlic cloves, minced ½ cup chopped red onion cup chopped fresh cilantro 2 tbsp. fresh lime juice ½ tsp. coarsely ground black pepper ¼ tsp. table salt
1. Preheat oven to 425°F. Brush baguette
slices with olive oil, and place on a baking sheet. Bake until light golden brown, 7 minutes. Remove from oven; sprinkle with the cheese, and bake until cheese is melted, 1 minute.
2. Combine the tomatoes and next 7 ingredients in a bowl; spoon mixture onto the cheesy bread slices. Serve immediately.
CHORIZO AND GOAT CHEESE–STUFFED PEPPERS MAKES 2 dozen ACTIVE 30 min. TOTAL 55 min.
Spicy pork sausage adds bold flavor to these gooey little poppers.
24 baby sweet red, orange, and yellow peppers (about 1 lb.) 8 oz. soft Mexican chorizo sausage 3 oz. goat cheese, crumbled 4 oz. cream cheese, softened Chopped fresh cilantro
1. Preheat oven to 425°F. Line a baking sheet with aluminum foil.
2. Cut about 1/4 inch from the top of each
pepper to form a “boat.” Seed the peppers, if desired, and finely chop the pepper tops.
3. Combine the chopped peppers and
chorizo in a large nonstick skillet over medium-high heat. Cook, stirring occasionally, until chorizo is browned, 8 minutes. Drain well, if necessary. Add the cheeses, stirring until well blended.
4. Spoon or pipe the sausage mixture
into the pepper boats. Place on prepared baking sheet, and bake until the cheese melts and the peppers are tender, 15 minutes. Sprinkle with cilantro before serving.
