ULTRA TRAVEL From New Jersey, upstate New York and Massachusetts, the east coast has always and will always have a special place in my heart; it’s where my mother is from and where her family still lives. Spending holidays making forts with my older cousins and snow angels with my sister are a few of my fondest memories I have from my early childhood. Fast forward to my teen years and another trip to the Big Apple was in the works as part of the senior class of my dance school. My love for “the city that never sleeps” has continued well into my 20s when a trip earlier this year came to be.

TIPS AND TRICKS BEFORE YOU GO:

1. Download a subway app. The NYC Subway is a personal favorite. It will come in handy as you make your way around the city. Listen to the announcements carefully as there can be construction or closures.

2. Bring at least one pair of comfortable shoes you can walk around in for hours upon hours each daily. The city is very walkable and also quite dirty, so make sure you’re alright with them getting torn up.

3. Track the weather so you know how to pack and layer, if needed. 4. Familiarize yourself with the many neighborhoods.

Many dog owners have witnessed their pet excessively scratching their ears or rubbing their head on a hard surface. Some owners may even notice redness, swelling, or odor in their dog’s ear canal. Although we may do everything we can to keep our dogs clean, these common signs could be a result of a canine ear infection.

According to Dr. Alison Diesel, clinical assistant professor at the Texas A&M College of Veterinary Medicine & Biomedical Sciences, canine ear infections are common and can be caused by multiple factors. “There are several contributing factors associated with the development of ear infections in dogs,” she said. “Some factors, such as excess hair in the ear canals, excess wax production, and increased moisture, can contribute to the development of ear infections; however, they do not solely cause the infection. There is generally an underlying cause, such as parasites, allergies, or foreign bodies. Other causes include hormone imbalances, benign or cancerous growths in the ear canal, or physical trauma.”

If you think your dog may have an ear infection, it is important to consult your veterinarian. Treatment for canine ear infections depends on the underlying cause of the infection as well as the specific type of infection involved. Ear cleaners or topical medications, such as eardrops or lotion, are common in soothing canine ear infections. Sometimes, additional medications may be necessary to decrease swelling in the ear canals or treat infections that have migrated into the deeper structures of the ear, such as the middle or even inner ear. Although it may seem as simple as thoroughly cleaning your dog’s ears to relieve them of irritation, Diesel recommended avoiding home remedies for an ear infection. “Some medications can be harmful or

BON APPETIT SEPTEMBER IN HOUSTON by Anice Shelton

ULTRA FOOD It’s supposed to be fall weather but it still feels summertime hot. The big difference between August and September in Houston is not the temperature but that the lazy, easy days of summer have been replaced with days chockfull of school, practices, rehearsals, work, homework and sports. We are all very busy. Usually what happens to me in September is that my cooking gives way to picking up a lot of takeout or ready-made food. I feel like I don’t have time to be in the kitchen. But as much as I love a good burger from the place with the orange and white striped building, I far prefer to serve something I cooked. Since we all seem to lack time these days, I would like to share some recipes that are a snap to put together. Most of the ingredients you probably have in your pantry and the dishes are so simple that if you make them just once, you probably won’t even need to look at the recipe again. Let’s start with something so easy it is almost laughable. It’s a recipe that set the social media site Pinterest on fire and lit up the Internet. I’ve made the “original” recipe but after making it a few times, I found that it was too salty and a little too rich. I’ve tweaked it to reduce the salt and butter, but if you want the original version, I have put the original measurements in parentheses. I have also added sliced onions and I sear the meat first. My rule for putting meat in the crockpot is that you MUST sear the meat first. Use the best quality chuck roast you can find---it makes a difference. 10

MISSISSIPPI POT ROAST (original recipe measurements in parentheses) 3-5 lbs. chuck roast 1 onion, sliced thin (not in original recipe) ½ stick UNSALTED butter (1 stick butter) 1 packet dry ranch-dressing mix 1 packet of Au Jus gravy mix ¼-⅓ cup sliced pepperoncini (6-8 whole) ¼ cup juice from the pepperoncini, or up to ⅓ cup (¼ cup water) Pat the roast dry and season with pepper only (I don’t like to add salt because the seasonings provide plenty of salt). Place a skillet on the stove and heat until very hot. Add a few tbsp. oil and sear the meat on all sides. Turn the heat down to medium and pour off all but 1 tbsp. of drippings and cook the onion for a minute to soften. Place in the bottom of your slow cooker. (Note---you can skip cooking the onion and put them in raw if pressed for time.) Place the roast on onions and then add the butter, au jus mix, ranch-dressing mix, pepperoncinis and juice. Put the lid on the cooker and set to low for 8 hours. When it is done, I take most of the juice out of the pot and reserve it and then shred the meat with two forks. Add in as much of the juice as you prefer. Serve over noodles, mashed potatoes or rice. Variation 1: this can be done with chicken breasts or thighs...reduce cooking time to 6 hours and be sure to sear the chicken before placing in slow cooker. Variation 2: omit the pepperoncinis and butter and instead use 2 cups of dry red wine. Or for an even simpler roast, just salt and pepper the roast before searing and place on onions in slow cooker and pour red wine over until the roast is ¾ covered. Yes, that simple. Wine and beef. Now for a recipe that won’t take more than 45 minutes start to finish, uses only one pot and is one of the ultra comfort foods. I grew up deep in south Texas, so anything that has Tex-Mex flavors feels like home. To make this super speedy, I use boneless, skinless chicken thighs but if you prefer to use white meat use precut raw chicken tenders or boneless skinless breast meat that you slice into strips or cubes. You can also cube the thighs for even faster cooking but I like serving them whole. Tip: To make this really simple I found a produce called “Mis Arroz” by Knorr. I have purchased it on Amazon and I have found it at some H-E-B stores. Get the one for “red rice”. If you can’t find it, simply substitute one cube of Knorr tomato seasoning and one cube of chicken seasoning and ½ tsp. garlic powder and throw in a little extra cumin. ARROZ CON POLLO

Season the chicken and brown thoroughly in a bit of oil in a Dutch oven or heavy pot at medium high heat. You want the meat to be almost, but not quite, done. Use a thermometer if you want to be sure. The chicken will finish cooking with the rice so it needs to be a bit under cooked when you are searing. Chicken is done at 165 degrees so I take mine out at 155 degrees so that it won’t become tough when it finishes with the rice. Meanwhile, dice your onion and bell pepper. When chicken is browned remove to a plate, drain any excess grease from the pot and leave about 2 tbsp. in the pan, turn the heat to medium and cook the onion and bell pepper until softened and the onion is beginning to turn translucent. Once the vegetables have softened, add in the rice and sauté until the rice begins to “toast” lightly (only about a minute or so). continued on page 18

First rattle out of the box, what do you reckon happens? We’re overrun with a bunch of numbers to memorize just to be able to function in everyday life! First and probably most important, we had to commit our social security number to memory. Yes, the same social security number that originally was for social security only and not for identification--now that has all changed, you must have a social security number to do everything from opening a bank account to getting a driver’s license to renting a car to buying a home. I haven’t a clue what any of those things have to do with social security, but the folks who know about that are in a much higher pay grade than me.   Besides having that batch of numbers to memorize, unless you know the numeric code for the fancy door locks on your car - you can’t get in! Plus, you need to know license plate numbers, VIN numbers, multiple pin numbers, phone numbers, area codes, speed dial numbers, cell phone numbers, account numbers, and credit card numbers, also, don’t forget password numbers, expiration dates, and TV channel numbers. Don’t have to worry about FAX numbers and pager numbers, but I have already committed them to memory. Then we have to worry about spouse’s birthdays, anniversaries, tire pressures, octane ratings, pet vaccination dates, speed limits, the opening and closing dates of two or three hunting seasons, the 24-hour time when happy hour starts at 1700 hours instead of 5 o’clock, plus several dozen more numbers I surely left off this list.   My problem is this number-controlled society is emerging just as my brain has decided to quit remembering numbers with anything near the proficiency it once did. I now remember nowhere near the numbers I’m supposed to, and just when I started getting the hang of it, they added in little extras like mother’s maiden name or favorite pet’s name for passwords just to get ready to enter the real number passwords. I have to force my poor old brain that’s been rode hard and put up wet and had many of its cells killed by alcohol, to think up some letter and number combination which there is as much chance of my remembering as a June bug has of staying alive in a chicken yard. I usually choose “favorite pet’s name” and use Gage-7734. In fact, I’ve gone to calling him Gage7734, which I think is a classy sounding name for a dog.   The Gage system is only good for passwords, so I figured out a foolproof system for everything else. I put all those numbers on a list in my billfold and when I needed a number I could just look it up on my list. This worked out pretty well, except I kept leaving my list lying wherever I last used it--not a good idea. Anyone finding the list had instant access, so I shredded that one and went to “Plan B.” continued on page 24

Take a Stand and Unite Against Bullying Today’s students are increasingly at risk of being bullied, and the effects of bullying can be devastating.

Bullying is a problem that affects millions of students of all races and classes. One in four kids is bullied and 42 percent of kids have been bullied while online. According to data from STOMP Out Bullying, the leading national anti-bullying and cyberbullying organization for kids and teens, bullies are more likely to skip school, drop out of school, smoke, drink alcohol, get into fights and be arrested at some point in their lives. Many kids who have experienced bullying show decreases in academic achievement and school participation. Some kids are so tormented that suicide has become an alternative for them and some bullying targets resort to violent retaliation.

Learn to recognize signs of bullying. Students who are victims of bullying may come home with torn or missing pieces of clothing, books or other belongings. They may have unexplained cuts, bruises and scratches. Bullying victims may appear sad, moody, teary or depressed and may seem anxious and suffer from low self-esteem. Bullying can manifest physical afflictions, too, such as headaches or stomachaches, trouble sleeping or frequent bad dreams and a loss of appetite.

On the first Monday of October, STOMP Out Bullying’s Blue Shirt Day World Day of Bullying Prevention raises awareness by giving kids a voice; making it the day that bullying prevention is heard around the world. October is National Bullying Prevention Awareness Month, and this year on Oct. 3, students, schools and adults will wear blue shirts in solidarity so everyone hears the message about bullying prevention. Education is another important element of the campaign, which strives to promote awareness, encourage communication and ultimately prevent bullying by sharing tips such as these: Understand bullying behaviors. There are many different types of bullying. Bullying is defined as intentional, aggressive and repeated behavior that involves an imbalance of power or strength. It can take several forms, including physical (hitting, punching, beating); verbal (teasing, name calling, threats); emotional (intimidation, social exclusion,

If you suspect a child is being bullied at school, it is never a good idea to approach the bully’s parents. Rather, prepare documentation of what has been occurring, with as much detail as possible. Schedule a meeting with the principal and ask – don’t demand – for their help. Document the action steps agreed upon at this meeting and follow up to ensure changes are implemented and the bullying ceases. Play is an important part of a child’s physical, emotional and social development, yet many external factors can quickly become barriers to active play including busy schedules, technology and the costs of sports equipment. A survey conducted by Dr Pepper Snapple Group’s Let’s Play initiative, which is dedicated to getting kids and their families active, found that only 33 percent of children are participating in active play daily, down from 41 percent in 2015. Don’t let barriers get in the way of keeping kids active during the school year. Instead, turn those barriers to play into opportunities to get active with the following tips.


Fill down time with playtime: Children’s active playtime is impacted by busy schedules – 64 percent of parents said busy schedules were a barrier to play this year, up from 56 percent in 2015. Active play doesn’t have to happen all at once; it can be spread out through the day so try fitting it in when you can, even if it’s in 10-minute increments. Waiting with your kids at a bus stop? Make it active by playing a game of Simon Says. Need 10 minutes to get ready to leave the house? Send the kids outside to play before loading up the car. Make DIY toys: Sports equipment can be pricey to purchase and maintain. Instead of breaking the bank, try recycling objects around the house to make them into toys. You can make old socks into a hacky-sack game by filling them with beans or fill balloons with sand and create a fun game

No one likes to play alone, so when siblings and friends aren’t available, join in on the fun and create games you and your child can play together. Salt to taste after cooking so it doesn’t end up too salty. Bring to a boil then turn down to a simmer. Simmer covered on low heat for about 20 minutes and then check that the rice is done. If it is still a little tough, cook it for another 5 minutes and add a bit more water if needed. Once rice is done and liquid is absorbed, turn off heat and keep covered for 5 minutes for flavors to finish blending and rice to finish absorbing water. Check for seasoning and adjust if desired and remove cilantro. Serve garnished with additional fresh cilantro if desired. Now a super simple dessert - cobbler. My mom used

Be sure you use fresh or canned fruit. This recipe will not work with pie filling. BISQUICK BLUEBERRY COBBLER 3 cups blueberries, washed and thoroughly dried 1 stick butter 1 ¼ cups Bisquick ⅔ cup milk ½ cup sugar Preheat oven to 350°.  While oven is warming, melt the butter in an 8”X8” baking pan (watch carefully to not burn it but it’s ok if it gets a little bit brown.) In a bowl, mix up the Bisquick, milk and sugar together. Pour on top of the melted butter in the pan and then give it an easy stir but no need

Place in the oven, uncovered, and bake for 45-50 minutes or until the crust is “done”. BISQUICK PEACH COOBLER Use a 29-ounce can of peaches in heavy syrup. Drain peaches and reserve the syrup. Add peach syrup to the milk until you have 1 cup of liquid (you need a bit more liquid for the peach cobbler). Mix the milk/syrup with the Bisquick and sugar and pour over the butter. Then add the peaches and bake at 350° for 45-50 minutes or until done. ULTRA LEGAL As we get the kids ready for their return to school, collecting immunization records, proof of residency and other documentation that school administrators will require, there are two important documents that parents of college-age kids may have never considered: The medical power of attorney and a HIPPA release. Even though parents of college kids know these teenagers are still wholly dependent on their parents for almost everything, from transportation, insurance, registration for classes and even where they left their cell phone last, these 18-year-olds are treated as adults under the law. A young adult who may be injured and requires medical care, often by your own health insurance policy, is nonetheless given all of the “protections” of privacy of medical records and legal rights to make their own healthcare decisions. Should your child be in a serious accident, in which they are unable to make such decisions, a medical power of attorney signed by your child will designate you as an authorized person who can make healthcare decisions for them. Similarly, a signed HIPPA release will allow you to receive access to your child’s private health records so that you can intelligently make healthcare decisions for your child. Without these documents, a costly legal process must be initiated to secure the rights to make these decisions for your child. Of course a medical power of attorney and a HIPPA release are not the only documents that could prove useful under certain circumstances. A conventional power of attorney, sometimes referred to in Texas as a “statutory” power of attorney allows a designee, (like a parent or other 20

loved one) to make financial decisions in the event of a serious injury or incapacity. While few young adults have enough financial assets to warrant estate planning, life insurance and even a will can prove very helpful should the unexpected occur. Earlier this summer, the young Russian actor, Anton Yelchin, of Star Trek fame, was killed at his home in a freak accident when his car rolled backwards, crushing him between the car and a security gate. The twenty-seven-year old actor reportedly left no will, and his parents have been forced to petition the California probate court to be appointed administrators for their son’s estate. Had he survived the accident, but been seriously injured, he certainly could have required prolonged care and oversight of his affairs and possibly his own healthcare. It is important to remember that under these kinds of scenarios, without these kinds of documents signed, sealed and in the hands of a responsible person, a Court will appoint a guardian or administrator to make these kinds of decisions for your child. Though a parent or other relative may be the logical choice, the Court is not obligated to choose such a person. It is regrettably a fact of life that bad things CAN happen to good people. Serious injuries, and sometimes death can happen to young, vibrant college kids. Some simple planning with your kids can not only prepare them for college, but also for life, serving as an example to them of the kind of responsible steps that considerate adults take to protect themselves and their loved ones. 

A ball carrier who has obviously given himself up and is sliding feet-first. Concussions have become a major concern for everyone involved with the game of football – and rightfully so. By its very nature, football is a violent and sometimes dangerous sport but no one wants it to be considered a lifethreatening endeavor. In an effort to help reduce the likelihood of head trauma, a new rule was recently put in place to discourage the types of hits found to be responsible for the majority of concussions. High hits – anything around the head and neck – can now be penalized as “targeting.” Targeting is a personal foul that carries not only a 15-yard penalty but the disqualification of the offending player. The thought and hope is that this consequence will be enough to dissuade players from committing these types of hits, as no player wants to be ejected from a game. What is targeting? “Helmet-to-helmet contact” is most often used to describe targeting and considered by many to be the primary example. In reality, there are many helmet-to-helmet contacts during a football game and most are not targeting. In almost all cases, targeting will be

Regardless if the hit is with the helmet, shoulder, arm, etc. – if the force of the contact is to the head or neck area, it is a 15yard foul and an ejection for the fouling player. The idea is to train players to lower their “target zone,” thus reducing the type of head trauma that causes concussions. Forcible contact with the crown (top) of the helmet is also a targeting foul that has been around for years (spearing). Sports are a great way for kids and teens to stay healthy while learning important team-building skills. Football teaches character developments such as a good work ethic, teamwork, camaraderie, overcoming adversity, and striving for the best. Football is also a very physical sport and those that play it will always be susceptible to injuries. Football, however, should not be so violent that it strikes fear into the hearts of parents. The targeting rule is one step in trying to accomplish that task. 
