Bon Appétit TURKEY, TURKEY AND MORE TURKEY by Anice Shelton

When I think of November, I think of Thanksgiving. And when I think of Thanksgiving, I think of turkey. A beautiful, perfectly roasted bird with all the trimmings. But, I want you to think of turkey beyond the traditional meal. Think of turkey as healthful meat you can incorporate into everyday meals. Every cooking show will be featuring fantastic roasted turkey recipes, so I want to push a different button with simple recipes using ground turkey. Ground turkey is delicious and is overlooked as a great way to make some of your favorite dishes a little healthier. I buy several pounds of ground turkey at one time. Then season it and divide it into freezer bags to use later for several different recipes. Follow the suggestions for the “base” and then add additional seasonings and vegetables to make turkey breakfast, taco mix, stuffed peppers, turkey burgers, shepherd’s pie or turkey meatloaf/meatballs.

Let’s start with the basic ground turkey recipe:

GROUND TURKEY BASE MIXTURE 2-4 lbs. ground turkey 2 Tbs. cumin 1 tsp. salt 3-4 Tbs. grated onion (use a box grater) ½ onion, minced Pepper to taste ½ jalapeno pepper, seeds removed and minced Mix and divide into one-pound portions and store in a ziptop freezer bag. The base recipe calls for very little salt so that the salt can be added in the next recipe.

Add a grated onion when browning the ground turkey to add moisture and flavor when using very lean meat.

TIP #2 It’s best to season with salt after cooking and tasting to avoid over salting.

1 lb. ground turkey base 1 Tbs. chili powder 1 Tbs. tomato paste Additional cumin if desired Cayenne if desired 2 Tbs. olive oil Mix the turkey base with the seasonings. Heat olive oil in a skillet until it shimmers. Add in the mixture and cook until done. Break up large chunks with a potato masher. For breakfast tacos, add beaten eggs (like making scrambled eggs) to the cooked meat mixture and continue cooking until the eggs are done. Serve with cheese and salsa and tortillas.

TURKEY STUFFED PEPPERS

TURKEY MEATLOAF OR MEATBALLS

1 lb. turkey base mixture 1 cup leftover brown rice 2 ears corn, corn removed from cob (or 1 cup frozen) 3-4 bell peppers, tops removed and reserved to chop and put into meat mixture 2-3 cloves garlic, minced 3-4 Tbs. minced cilantro ½ cup reduced fat cheddar cheese

Note: The mixture is the same for both; the difference is in cooking times. 2 lbs. turkey base mixture 2 slices stale bread (I have even used a burger bun) ¼ cup milk (or enough to wet the bread) 1 egg, beaten ¼ cup ketchup 2 Tbs. Worcestershire 2 Tbs. cilantro Salt and pepper Additional onion if desired

Mix and divide into one-pound portions and store in a zip-top freezer bag. Note this base recipe calls for very little salt so it can be added as recipe you make next dictates. Preheat oven to 350 degrees. Wash peppers and cut ⅓ of the top off. Remove the seeds and scrape the ribs out with a spoon. Use the “pepper” part of the tops to chop up and add to meat mixture. Add a couple of tbsp. olive oil to a skillet and heat until it shimmers. Add turkey base, corn kernels, and chopped pepper to skillet and cook until meat is thoroughly cooked and veggies are softened.

Add in minced garlic and cook an additional minute. Add in minced cilantro and the rice and mix until thoroughly heated. Add in cheese (add more if desired). Place peppers into a Dutch oven and stuff with the meat mixture. Carefully add in enough water to fill the bottom of the pot with ¼ inch water. Cover and place in oven and cook 30 minutes covered and then an additional 15-20 uncovered or until peppers are soft.

Bon Appétit continued from page 7 Turkey Meatloaf or Meatballs Preheat oven to 350 degrees. Place turkey base mixture in a bowl. Tear bread into small pieces and place into a separate bowl and add in enough of the milk to make the bread wet but not soaked. Let the bread absorb the milk for a few minutes and then squeeze out the excess milk and add bread to the turkey. Add in the remaining ingredients and mix well. If making meatballs, roll the meatballs into ball shapes (I like mine to be about 1.5 inches in diameter) and place on a cookie sheet lined with parchment. If making meatloaf, place into a greased meatloaf pan. Top with additional ketchup if desired. Bake at 350 degrees for 30 minutes for meatballs and then place into prepared sauce to finish cooking. For meatloaf bake 50-55 minutes until it reaches an internal temperature of 165 degrees.

THANKSGIVING TURKEY BURGERS 1 lb. turkey base mixture ½ cup dried cranberries 2 Tbs. chopped parsley or cilantro Salt and pepper ½ tsp. poultry seasoning (If desired) ½ cup cheese (blue, gouda, Swiss, cheddar or Gorgonzola crumbles) Mix all ingredients in a bowl. Form into patties and place on a parchment lined baking sheet and cook at 350 degrees for 30-40 minutes or until they reach an internal temperature of 165 degrees.

Note: if you have leftover Thanksgiving stuffing, you can use some of it in place of the plain bread. Adding dried cranberries and skipping the ketchup will give the meatloaf true Thanksgiving flavor.

TURKEY SHEPHERD’S PIE Note: I like to make this in individual ramekins but it can also be made in a loaf pan. You can also do this with your Thanksgiving leftovers and just sub out the ground turkey for chopped leftover roast turkey and blend with a bit of stuffing and gravy. 1 lb. turkey base mixture 2 Tbs. tomato paste Frozen peas Mashed potatoes (about ½ cup per person)

Cook the turkey base and when it is almost “done” add in the two Tbs. tomato paste and cook an additional 2 minutes. Preheat oven to 350 degrees. Spray ramekins with cooking spray or butter. Put turkey mixture into ramekins (I use ones that hold about 2 cups) and fill ⅓ full. Top with frozen peas and then “frost” with mashed potatoes.  Bake at 350 degrees for 30 minutes until thoroughly heated. 12

With the holidays approaching, we are all starting to dig into attics and storerooms for decorations and the other trappings we only use at this time of the year. While we are at it, I’m sure most of us are rooting around the attics, closets and junk drawers of our memories and soon will be dragging out the family traditions that go along with the decorations. Holiday food is probably as big a part of those traditions as the controversies on whether to open Christmas gifts on Christmas Eve or wait until Christmas morning, or should Santa’s gifts be wrapped or unwrapped? Holiday food is probably the single most important tradition that makes the holidays the holidays.

First, there’s the turkey. Of course, turkey is standard fare for Thanksgiving, but should the Christmas meal be a repeat performance only a scant month later, or should you maybe have a roast goose or chicken for the centerpiece? Or perhaps Christmas should be special, and have no fowl at all, but roast beef or fish or tamales or something like that. What about stuffing? Should the bird be stuffed before roasting or should the “stuffing” be prepared as a side dish and baked separately and called “dressing” as most of us do in the South? Should it be made from cornbread or white bread or both? Then there are the side dishes, does anyone make sweet potato casserole with those little bitty marshmallows melted on top or green bean casserole topped with those canned french-fried onions, for any meal during the year except at the holidays? continued on page 22

Bunker Rake Placement By Bobby McCallitt

As the summer heat fades, the humidity drops and our weather becomes quite pleasant. November is a great time to get outdoors – and perhaps enjoy a relaxing round of golf! Of course if you’re like every other golfer, it’s inevitable you will at some point hit your golf ball into a sand trap. After playing your shot, you then rake the sand so as to leave it in pristine condition for the next poor soul who happens to find the same hazard. So when you’re finished raking the bunker, what do you do with the rake? It seems one never knows whether to leave it inside or outside of the bunker. It’s a common and logical question that seems to have no right answer, as regardless of where you leave the rake, it will still be in a position to influence the next golf ball that comes rolling its way. Are there guidelines that cover the placement of rakes? What’s the rule? Well, believe it or not, there is no rule, which leads to the confusion. The Rules of Golf state that ultimately it is left up to the golf club or course to decide where it wishes its rakes to be placed. 14

Clearly there is no perfect answer. Some feel that rakes left outside the bunker cause less likelihood of a player gaining an advantage or disadvantage, while others feel exactly the opposite. Todd Eccles, PGA Teaching Pro at Memorial Park Golf Course, prefers rakes be placed outside the bunkers, as does Ian Alexander, Head Pro at River Oaks Country Club. “Our policy at River Oaks is rakes always out,” Alexander says. Sure, a rake outside of a bunker may cause a ball to ricochet into the bunker, but a rake already in the bunker may cause a ball to bounce out. Maybe a rake outside the bunker keeps a shot clearly headed for the sand from rolling in; while a rake inside the bunker may very well keep the ball from rolling to a flat part of the bunker, thus creating a much more difficult shot. At Timber Creek Golf Club, they prefer rakes be left inside the bunkers, according to General Manager Mike Griswold. Same at Pearland Golf Club at Country Place. At Wildcat Golf Club, Director of Golf David UltraMagTexas.com

Munday also prefers rakes be left in the bunkers. “It just makes more sense to me,” Munday says. From a maintenance perspective, placing rakes inside the bunkers is probably preferred for daily play as it makes mowing around the bunkers more efficient if the rakes don’t have to be picked up. On the other hand, grooming the bunkers typically results in rakes being tossed onto the grass. Mike Colling, Director of Golf at Golfcrest Country Club, says they prefer “rakes out, behind the trap, away from the path from tee to green.” At Southwyck Golf Club, Head Pro Jim Belcher also prefers them out of the bunker. “I think the rake belongs out. Sure it might keep a ball from going into the bunker, but a golf ball that hits a rake that is inside the bunker can really produce some funky lies.” Some courses employ what they feel are the best of both worlds. Ken McDonald, Director of Golf at Braeburn Country Club, says they put rakes inside the bunker, teeth down, with


the handle resting outside the bunker, thus keeping the shaft elevated above the sand. “This way, the rake has very little impact on any shot” McDonald contends. “Any shot rolling into the bunker would pass under the rake.” The other option, McDonald says, would be putting rakes as far from the bunker as possible, but as he notes, “the problem with that is no one would rake the bunkers after use.” Tim Jaquez, Golf Professional at Koasati Pines Golf Course at Coushatta Casino Resort, feels the same way. “Our policy is rakes in, teeth down, handles out,” Jaquez says. Regardless of bunker rake placement, if your golf ball comes to rest against a rake, you are allowed to move the rake. However, if the ball moves once the rake is removed, the Rules of Golf require that the ball be replaced “as close to the original position as possible.” This is fairly straightforward if the rake is outside the hazard but replacing a ball on a steep bunker slope is not always possible, and could cause problems. The only clear answer is there is no clear answer. Chances are your golf club or course has a policy on rake placement. Check with the pro shop before your round, and if they have one, simply follow that policy. Of course if you simply avoid hitting your ball into or near the sand, where the rakes are located will be of no concern to you. Good luck and enjoy your round! 

Located at 2506 Woody Road, the Jamison Jaguars consist of approximately 835 students attending 5th and 6th grade. Sharon Bradley has been the Principal at Jamison for 11 years. Students at Jamison Middle School can get involved in over 15 different clubs and organizations, including the Art Club, the Chess Club, the Yearbook Club, and the Student Council. One of the most popular organizations is the Robotics Club. The Robotics Club is for students who like to build things and are curious about how things work. Students will work in teams to build and program robots to do various tasks. Applicants will take a test and the highest scores will be invited to join, as the group is limited to 40 participants. Another favorite organization is KIPPERS – Kids in Pearland Protecting the Environment through Responsible Service. KIPPERS is a club for students who are concerned about our environment. Students that participate in the club will take care of the recycling for the campus and the nature habitat. The KIPPERS Clubs from all 4 Pearland middle schools sponsor and run the Environmental Fair that is held each spring. When the kids are not working to clean the Jamison community, they are learning about other ways they can help the environment, both at school and at home.

To avoid being a statistic as one of the 4,000 cyber-attacks that happen each day, travelers must take the right precautions to protect their personal data.

In 2014, more than 98 million traveled over the holiday period, according to the Bureau of Transportation Statistics. These busy, unassuming travelers could be a hacker’s ideal target, as more than half of respondents in a 2015 The Travelers Companies survey say they rarely take precautions, like changing online banking or financial account passwords regularly. “Cybercrime can be at an all-time high during the holiday season, especially as busy consumers move from place to place and don’t take the same precautions with their portable devices that they might normally have at home,” says Dr. Kenneth L. Williams, Ph.D., cyber expert and professor in the College of Engineering & Information Sciences at DeVry University. “Ill-informed travelers are a hacker’s ideal target, so travelers must be accountable for their own protection.” With travel booking on mobile devices becoming increasingly popular, and travelers’ near-constant smart phone use on the road, the threat continues to rise. Currently, more than 16 million mobile devices in circulation are infected with some form of malware, a 25 percent increase over the past two years, according to telecoms infrastructure firm Alcatel-Lucent. This high number of malware is often is due to a gap in knowledge on how consumers can protect themselves from a cyber criminal’s attack. “In today’s economy, no one is safe in any irregular circumstance when it comes to their cyber activity,” says Dr. Williams. “New and seasoned travelers alike need to take a step back and notice the new opportunities cyber criminals now

Use personal hotspots. Do not use public Wi-Fi networks, as these can be a landmine for cyber hackers. Instead, opt to use your phone or tablet’s personal hotspot.

Be mindful on public networks. Don’t share credit card information over hotel networks, like on-demand menus or hotel services, since these systems are easy for hackers to access.

Charge with caution. While convenient, avoid charging your mobile devices from a computer or charging station you do not control, like at an airport terminal.

Don’t leave your devices unattended. Protect your devices like cash when you are in public places like hotels and resorts; thieves and hackers always go where there is money.

Of course, every family is different and in some families the holiday menu is a somewhat sacrosanct tradition-- you can change a bunch of things, but on Thanksgiving and Christmas, you serve what you’re supposed to serve. Our family is like that. You can bet Thanksgiving is always going to be at least one turkey and one cured ham, and the turkey will be stuffed with a light bread and sage stuffing. Growing up, we always had turkey with cornbread dressing on the side, but when I married Miss Edie, I had to acquire a taste for what we considered the “Yankee” style, with the bird stuffed. Over the years she has occasionally allowed me to make my cornbread dressing, but it is an addition and not a replacement. Of course, when you cook two or three turkeys like we do for our clan, it’s usually fairly easy to add in another side dish. Of course we always have the requisite mashed potatoes, giblet gravy, green beans, sweet potatoes, broccoli and cheese and other side dishes. One dish I introduced which has become part of the family tradition is a shrimp salad made with lots of shrimp and sugar peas, chopped celery, chopped onion, and boiled eggs, lightly dressed with mayonnaise and sweet relish. Then there are desserts -- although I don’t care for them, pumpkin pies are king around our place and Miss Edie usually makes at least a half dozen of them. Hell, I’ve got a couple or three grandsons who can polish off a pumpkin pie by themselves, and I’m talking about after two or three trips through the food line.

My favorite dessert is cherry cheesecake or lemon meringue pie, but I’m usually so full after eating turkey and trimmings that it’s often the next day before I can handle it. Toxic doses have been reported after ingesting just one to two grapes or raisins. Not all animals suffer kidney failure after grape/ raisin ingestion and it appears to be an idiosyncratic reaction. Nevertheless, it is best to avoid this food for your dogs and cats. There is no known antidote, only supportive care and renal dialysis to support kidney recovery. “Grapes can be particularly tricky for dogs, because many actually like to eat grapes, so you have to be especially aware,” Black said. “Our pets are amazing creatures, but they can really get into dangerous situations with human food very quickly.”

Xylitol is a common sugar substitute now used in many home kitchens. It is associated with a severe decline in blood sugar levels and liver failure if ingested by pets. The exact mechanism of the toxicity is unknown and there is no antidote. Supportive care is typically successful for treatment of hypoglycemia, however, liver failure may still occur and prognosis is guarded. “It is important to remember that if you cook or use xylitol in your foods, that those foods should not be fed to pets,” Black said. “It is still toxic if used in cooking or baking.

Onions, garlic, and chives are also toxic to pets. They contain the toxin allicin, which is released upon crushing or chewing the plant. Allicin damages the hemoglobin in red blood cells leading to anemia (such as Heinz body anemia and methemoglobinemia). Cats are especially susceptible to this toxin. There is no antidote, however, supportive care is typically successful. While cats are particularly affected by onions and garlic, dogs are especially susceptible to macadamia nut toxicity. An unknown toxin in the nut leads to difficulty walking, high body temperatures, depression, and vomiting within one to two hours after ingestion. While no deaths have been reported to date, supportive care in the hospital is often required.

Chocolate is commonly known to be bad for pets. It contains two ingredients known to be toxic to dogs and cats, caffeine and theobromine. Dark chocolate is particularly harmful because it has a higher concentration of toxic metabolites than milk or white chocolate. Clinical signs of distress seen after chocolate ingestion include: anxiety/anxiousness, hyperactivity, urination, elevated body temperature, seizures, and irregular heart rhythms. There is no antidote, but supportive care is usually successful for recovery. 24

“Supportive care, which is the usual treatment for food toxicity, often works to recover pets who ingest these foods,” Black said. “But these supportive treatments to get pets back on their feet are often very costly for the owner, and difficult for the patient. In cases that require dialysis, pets have a difficult road to recovery.” The foods mentioned here should be kept off countertops and out of reach of pets, and under no circumstances fed to dogs and cats. Preventing your pet from ingesting these items is the best way to keep them safe. But if they do ingest these foods, Dr. Black recommends contacting your veterinarian immediately. 

While they may seem convenient at the time, the emergency room prices can cause sticker shock for patients who aren’t aware of the distinction.” Freestanding emergency rooms are not physically connected to a hospital and are located in areas similar to urgent care centers, so it can be easy to confuse the two. A freestanding emergency room will offer emergency care – and charge emergency room prices. Patients should be sure to confirm the type of facility they’re visiting, as treatment at a freestanding ER may cost thousands of dollars more than an urgent care center. As I write this article, in early October, it is National Fire Prevention Week. By the time you read this, it will be time to set the clocks back, which historically has been when we are all urged to change the batteries in our smoke detectors in our home. You may wonder why a lawyer would want to talk fire safety, but as we all know, houses sometimes catch fire. Since there can sometimes be insurance claims and litigation relating to these fires, what you do in the days and weeks following a fire in your home can make the difference that you will be successful bringing a claim against a third party that may be responsible for the fire. The most important thing to do after a fire, once you’ve determined that your loved ones are safe, is to preserve the evidence. The National Fire Protection Association, at www.nfpa.org has a number of good tips on investigation of fires, including a 400-page manual on the proper protocol for proper fire investigation. Most experts in fire analysis origin and cause will be familiar with this manual, as well as attorneys familiar with these kinds of claims. It is imperative that the evidence regarding the cause of your fire be preserved and documented, and few homeowners will be savvy enough to know the difference between relevant evidence and simply burned belongings. Interviewing witnesses who may have seen the fire at its beginning is also important, as they may be able to guide you and your expert to the likely location of the fire’s origin. Those interviews should be done as soon as possible, sometimes while the fire may still be raging. With smartphone technology, you can record video statements from witnesses at the scene of the fire, while memories are still fresh about what was seen and when. continued on page 28
