How many of y’ all remember the caboose? Perhaps, I should ask how many of y’ all their use overseas was sometimes limited, in the United States from know what a caboose is? Caboose may be another word destined to slip from our the 1830’ s until the 1980’ s, just as sure as a train had a locomotive language due to lack of use - both of the word and the caboose itself. at the front, the very last car would be a caboose. That was almost as dependable as the sun coming up. I wonder if anybody actually reads all this as he gets this part pulled over up yonder at Victor Switch.”Ofcourse, stuff besides bored people waiting for the train to pass. Even the graffiti was pretty all this speculation would inevitably lead to arguments about who much boring for the most part, although two or three cars appeared to have been knew what about railroads and what really was going on, until finally painted by some punks with a little bit of artistic talent. Anyway, the last car finally they’ d send one of the boys over to the depot to ask the stationmaster, passed and, as is usually the case lately, I was disappointed because there was no Mr. Lee, why the train didn’ t have a caboose. caboose. In its place there was just some sort of a “little-black-box” with a red light and antennae attached to the coupling mechanism of the last car...what a letdown. The caboose was a special type of railcar that was used at the end of freight trains. It evolved from a shanty built onto a flatcar or a I can remember when the caboose was an integral part of every freight train. on the top or bay windows on each side that we looked for at the end of every train. The function of a caboose was to serve as the “office” for the train’ s conductor to keep his waybills and do other paperwork and as quarters for the trainmen at the rear of the train. The cupola or bay windows enabled the trainmen to keep a lookout on the cars ahead of them in the train for the smoke of “hot-boxes” (dry axle bearings) and other safety concerns, which could possibly cause derailments.

plus the caboose carried no freight, hence produced no revenue and that all subtracted from the railroad’ s bottom line. Faster trains and new work rules reduced the size of train crews from the original seven or eight down to three or four people that new, larger locomotives are able to accommodate comfortably. It wasn’ t long before even a first-year bean counter could see that the caboose was a cash-gobbling albatross and soon they started to be eliminated.

However, probably one of the most important, though unstated functions of the caboose was the comfort factor it provided for the onlookers. Harried parents would tell their fussy kids while waiting for a slow-moving freight to pass a crossing, “y’ all look for the caboose” or “if you don’ t hush up that whining, the caboose won’ t ever come.” In fact, at one time the phrase, “when’ s the ‘ boose coming?”ranked right up there with “when are we gonna be there?”and “I gotta go to the bathroom,” as the things most often heard when traveling with children. Plus, the men in the caboose always seemed to have time to wave to onlookers as they passed by. Everyone enjoyed waving back and it seemed to give them a warm-fuzzy feeling that all was right with the world.

The caboose was replaced with electronic devices called “End Of Train” devices, or EOTs, also called “Flashing Rear-End Devices” or FREDs, which today monitor the ends of freight trains. The EOTs/FREDs are mounted on the coupler of the last car in the train and are connected into the train’ s air brake line.

Alas, the caboose became another victim of so-called progress. Air brakes eliminated the necessity of setting brakes by hand, roller bearings reduced the likelihood of “hot-boxes”causing problems, automatic signals and electronic switching took over other duties, and computers eliminated the need to store and track much of the conductor’ s paperwork. Government regulations caused cabooses to have issues with things like sewage, food handling, safety glass and other things,

With the introduction of the FRED, the conductor moved up to the front of the train with the engineer and year-by-year, cabooses faded away. Very few cabooses remain in operation today. I suppose all these technical advances and modernization are good for the railroads, but it still just doesn’ t seem right for a train to pass by and not have a caboose at the end -- besides, these new-fangled FREDs don’t wave when they pass by. 

The FRED radios information to the engineer about air brake pressure, the speed at the end of the train and the direction in which it is moving, and other data concerning the operation and safety of the train. The FRED also allows the engineer to set the air brakes on the rear of the train in the event of an emergency when the rear part of the trains becomes uncoupled.

Parvovirus in Puppies

Vaccinations can prevent many illnesses in puppies, but viruses such as canine parvovirus are still a threat to dogs with developing immune systems. Young puppies often have immunity against the virus because they get antibodies from the colostrum in their mother’s milk, but these antibodies are not always as effective as a vaccine. Dr. Johanna Heseltine, clinical assistant professor at the Texas A&M College of Veterinary Medicine & Biomedical Sciences, explained the characteristics of parvovirus. “Canine parvovirus, or ‘parvo,’ is a highly contagious virus that affects dogs and often causes severe diarrhea and vomiting in puppies,” she said. “Parvovirus lives for months in the environment, so many puppies can be exposed while their immune system is still vulnerable. Once dogs are fully vaccinated, they seldom become infected. Even if a puppy has received some vaccines, they are still at risk for infection because the antibodies they receive from their mother’s milk can interfere with the puppy’s immune response to the vaccine. In addition to this, the puppy’s body has not made its own protective antibodies.”

Parvovirus attacks areas of the body where cells are rapidly dividing, such as the intestinal tract and bone marrow tissue. As a result, victims of the virus experience a loss of appetite, vomiting, diarrhea, weakness, and lethargy. “Since the virus attacks white blood cells in the bone marrow, infected dogs develop low white blood cell counts, which puts them at risk for a bacterial infection called sepsis,” said Heseltine. “The severity of illness varies between patients, but most of the dogs we see in the hospital develop severe bloody diarrhea and vomiting.” Parvovirus spreads through fecal-oral contact, meaning the virus can be transmitted through any animal, person, or object that comes in contact with an infected dog’s feces. A dog can shed parvovirus in its stool without showing any signs of illness and can continue spreading the virus 8

for several weeks after recovering. Parvovirus is so common that it may be present anywhere that dogs frequently visit. Inanimate objects, such as food bowls, shoes, clothes, and carpet also serve as carriers for the virus for up to several months. Treatments for parvovirus are available, but prevention through vaccination is essential to protect puppies’ health. If infected, puppies should be hospitalized and isolated from other dogs to avoid spreading the disease. Large amounts of bodily fluids are lost through vomiting and diarrhea, so patients are replenished with electrolytes through intravenous fluid therapy. Antibiotics are also needed to help prevent secondary infections. Other treatments include antiemetic medication, plasma transfusions, or related therapies. UltraMagTexas.com

You can protect your puppy from this deadly virus by making sure they stay up-to-date on vaccinations. Limiting your puppy’s exposure to other dogs, as well as keeping a secure backyard that prevents strays or other potentially infected animals from entering will also decrease the puppy’s risk of contracting the disease. Until your veterinarian declares it is safe, try keeping your puppy away from dog parks or other areas where there is a high concentration of dogs. If you think your puppy may be infected with parvovirus or has come in contact with another infected animal, contact your veterinarian for assistance. To prevent further spread of the disease, it may be necessary to remove your puppy’s toys, blankets, and other belongings from the environment. 

College Football Playoff for

THE CROWN by Bobby McCallitt

As of last year, NCAA Division I football instituted a 4-team playoff to determine its national champion. The College Football Playoff Selection Committee, a 12-member panel comprised of former coaches and student athletes, athletic directors, administrators and journalists from across the country, was appointed to establish a top 25 ranking of all Division I college football teams. The initial rankings come out after the ninth week of the season, and are adjusted weekly through the conclusion of all games. Final rankings determine the chosen 4 who will play for all the marbles. This year, the playoff looks like this: (1) Clemson vs. (4) Oklahoma, and (2) Alabama vs. (3) Michigan State. The winners will square off in the National Championship game on Monday night, January 11, in Phoenix. There will be no repeat champion, as Ohio State, the defending

champ, did not finish in the top four. Ohio State entered the playoffs last year as the number 4 team, proving that one only needs to get invited to the party to win it all. This year, three of the four participants are new as only Alabama made the playoffs again (Oregon, Florida State, and Ohio State did not). The 4-team playoff has added additional excitement to a sport that already enjoys tremendous popularity. The buzz surrounding the anticipated announcement of “who’s in” often makes for high drama. For fans of many schools, the “all we need to have happen” scenarios fuel optimism, keeping anyone in the top 15 in the rankings hopeful that things will break their way and they can finish in the top four. Just imagine if college football decided to expand the playoff to include the top eight schools. Now fans from any team in the top 25 could envision a scenario where their team “gets in”! And as was proven last year, to wear the crown, all you need is an invitation to the ball. 

You Need to Know In the past, your physician was probably the only provider you saw regularly, but as healthcare delivery has evolved, newer types of providers are taking on important roles in healthcare teams, which are delivering higher quality and more efficient care. Team-based medicine is the next generation of healthcare delivery and one of the professions at the forefront of this trend is physician assistants or PAs.

With more than 11 million newly insured Americans, an aging baby boomer population and a growing number of chronic conditions, the American healthcare system is expected to make some major changes to accommodate the increasing number of people seeking healthcare.

There is a wealth of clinical research and real-world evidence from hospitals and patients, demonstrating the high-quality and breadth of PA care.” With all of this, it is no surprise that PAs are among the most in demand professions in the United States. In a recent American Academy of

Physician Assistants survey conducted by Harris Poll, a Nielsen company, 91 percent of respondents agreed that PAs improve health outcomes for patients and 91 percent agreed PAs improve the quality of healthcare. In addition, according to national health care search firm Merritt Hawkins, demand for PAs has increased by more than 300 percent over the last three years, and the U.S. Bureau of Labor Statistics expects employment of PAs to grow much faster than the average for all occupations through 2022. As you consider alternative approaches for a healthcare provider, keep this advice in mind: Find a provider that has the right education and training. Educated through intense, graduatelevel medical programs that include at least 2,000 hours of clinical practice, PAs are often educated alongside medical students in medical schools and academic medical centers. They gain the skills necessary to perform medical procedures, diagnose and treat patients, order and interpret tests, prescribe medication, make rounds in hospitals and nursing homes, and assist in surgery. Feel good about checkups, testing and surgery. Seek a provider who can answer a wide range of healthcare needs. ULTRA FOOD Happy 2016 Y’all! Did you eat a lot over the holidays and then make all kinds of resolutions about how you are going to clean up your eating and exercise every day and make 2016 the year you become healthier than the coaches on “The Biggest Loser”? Yeah, me too…

“During 2016, I will strive to exercise 5 days a week doing cardio and yoga. I will choose to spend my money on fresh, local, organic food and less on prepackaged meals and prepared foods that I have no control over how they are prepared.” With that being said, one of the best and easiest ways I have found to have a good healthy meal is with a soup and the secret to a really good soup is a good fresh homemade stock.

Mine usually goes something like this: “This year I will eat nothing but fresh, clean, natural, un-processed, organic, locally sourced food. I will try and have a meatless day. I will exercise every… single…day, and I will do cardio at least 6 times a week, yoga at least 4, and lift weights at least 2. I will get 7-8 hours of sleep. I will take the stairs and park far away so I have to walk.” And then 2 hours later I am stuffing blue-box mac and cheese in my mouth and I am lifting “plates” not “weights”... After years of unrealistic resolutions, I decided this year I was going to set attainable goals:

HERE’S WHAT YOU’LL NEED:

A well-made stock (or as they are so fashionably called these days a “bone broth” when you let it simmer for even longer) is a thing of beauty and will elevate not just your soups and gumbos and stews, but your casseroles and pasta dishes. Stocks are well worth the bit of effort to make. You truly will taste a difference in your dishes. I keep zip-top bags in my freezer to collect bones and veggies. I keep a bag for chicken, veggies, and a bag for beef. Fish stocks are also tasty so if you like to cook with them, keep a bag for that. I usually just throw my starting-to-go-bad vegetables and scraps into a bag and add bones to the bone bags whenever I have them.

I set aside a Saturday when I am going to stay at home all day to tend to my stock. You can make a stock in your crockpot but I find most crockpots don’t hold as much as my stockpot does so I usually only do that if I am doing it from one chicken carcass and a bit of onion. I almost never use a fresh chicken for stock because once the bird has gone through all of that simmering it loses flavor. If you want to start with a fresh bird, remove the meat from the breasts and thighs and legs and set it aside to use for soup. You will get a lot of flavor from the meat left on the bird and the wings. I like taking the meat from a grocery store rotisserie chicken and save the meat for the soup or serve the chicken as dinner...the roasting adds extra flavor to the bones that adds a depth of flavor to the stock. For beef stock, I usually use the bones from short ribs or a rib roast...but you can also buy oxtails and use them...brown or roast them first before adding the vegetables. Oxtails have marrow and they yield a lot of collagen and nutrients...they are an inexpensive excellent choice for a good beef stock. You can also get marrowbones or soup bones from the butcher.

STOCK AND BONE BROTHS Continued from page 17 No need to peel the veggies...just wash them well and throw them in ...same with the garlic. Throw all the veggies and bones in the pot and cover with water until you have about an inch of water above the pot contents. Add in the peppercorns, thyme, parsley, and bay leaves and about ½ cup of wine for richness.  I use red wine for beef and white for chicken or turkey. If you want a very rich stock add a few tablespoons of the chicken or beef base but I usually save that step for when I make the soup because it can add a lot of saltiness. Turn your heat on high under your pot and bring to just starting to boil, then turn the heat way back and keep it at a gentle simmer. Simmer for a minimum of 4 hours but for the best stock I find that if I simmer it for at least 8 hours I get great flavor. Add extra water as you go but not too much or your stock will be weak. I prefer to start the stock on one day, simmer it long and slow, let it cool and then put it in the fridge overnight then take it out the next day and remove the fat that has hardened on the top. (If you wait on that step until after you have strained the stock you will be left with a nice chicken fat to cook with if you are so

inclined.) I put it back on the stove and let it simmer another hour or two before straining. I find that the extra step of refrigerating overnight, while not necessary, does seem to make it just a little tastier. For a clear stock you need to strain it twice. First remove all the meat, bones, and veggie matter with a slotted spoon. Then line a fine mesh strainer with some cheesecloth and further strain it so you have a nice clear stock. I prefer to freeze my stock without any fat so put the stock in the fridge to allow the fat to rise and solidify on the top and remove the fat cap before pouring the liquid into zip top bags or freezer containers. You might notice that your stock has a gelatin-like texture---this is excellent! It means that the bones and tendons yielded their collagen and you have a rich good quality stock. Use immediately in a soup or freeze for up to 3 months. HERE ARE SOME OF MY FAVORITE SOUPS:

BASIC CHICKEN SOUP

MEXICAN CHICKEN SOUP Variation #2 on Basic Chicken Soup To the basic chicken soup recipe add a bit of grated or minced garlic to the veggie sauté. When you add in the chicken, add about ¾ bottle of Mexican beer (you can use less or skip). Add a few sprigs of cilantro (leave whole so you can fish it out before serving). I like to also add a few thin slices of jalapeno. If you like tomato, add in some chopped tomato or serve it fresh on top. I also add corn (fresh or frozen) and Mexican squash. Adjust seasonings and add some chili powder. Simmer another 30 minutes. Before serving remove the cilantro stems and top each bowl with chopped cilantro, a jalapeno slice, diced avocado and a few tortilla strips and a drizzle of crema.

Dice onions, celery, and carrots and sauté in 2 tbsp. butter until softened. Add in 4-6 cups of stock. Simmer slowly for ½ hour. Add in diced, cooked chicken. Simmer 15 more minutes. Adjust seasonings...I like pepper and thyme… and a ½ cup of wine seems to add richness.

CHICKEN NOODLE SOUP Variation #1 on Basic Chicken Soup Make the basic chicken soup recipe but add home-style noodles after letting the chicken simmer a bit. I prefer the home-style thicker cut noodles or Amish-style noodles to a basic egg noodle. I boil the noodles in the broth.

FRENCH ONION SOUP

WINTER BEEF SOUP Sauté diced onion, celery, carrot and parsnips in some butter until soft. Add in 5 cups of beef stock. Add in diced potato (I like a white or gold potato for this), a few sprigs of thyme, ½ cup red wine and a couple of bay leaves. Simmer until potatoes are soft. Add in leftover beef from a chuck roast or short ribs and corn (fresh or frozen) if you like. Sometimes I add noodles for a very hearty meal.

Sauté thinly sliced onions (about 1 per person) and a few sprigs of thyme in a few TBS of butter... do it slowly (about 45 min) over low heat. Add in a few pinches of sugar and then add in 2 TBS of flour and sauté 2 minutes. Add in ½-1 cup wine and about 4 cups of beef stock (red wine with beef, white wine with chicken). Simmer for about 30 min, stirring occasionally. Top with baguettes topped with melted Gruyere cheese.

To avoid being a statistic as one of the 4,000 cyber-attacks that happen each day, travelers must take the right precautions to protect their personal data.

In 2014, more than 98 million traveled over the holiday period, according to the Bureau of Transportation Statistics. These busy, unassuming travelers could be a hacker’s ideal target, as more than half of respondents in a 2015 The Travelers Companies survey say they rarely take precautions, like changing online banking or financial account passwords regularly. “Cybercrime can be at an all-time high during the holiday season, especially as busy consumers move from place to place and don’t take the same precautions with their portable devices that they might normally have at home,” says Dr. Kenneth L. Williams, Ph.D., cyber expert and professor in the College of Engineering & Information Sciences at DeVry University. “Ill-informed travelers are a hacker’s ideal target, so travelers must be accountable for their own protection.” With travel booking on mobile devices becoming increasingly popular, and travelers’ near-constant smart phone use on the road, the threat continues to rise. Currently, more than 16 million mobile devices in circulation are infected with some form of malware, a 25 percent increase over the past two years, according to telecoms infrastructure firm Alcatel-Lucent. Use personal hotspots. Do not use public Wi-Fi networks, as these can be a landmine for cyber hackers. Instead, opt to use your phone or tablet’s personal hotspot.

Be mindful on public networks. Don’t share credit card information over hotel networks, like on-demand menus or hotel services, since these systems are easy for hackers to access.

Charge with Caution. While convenient, avoid charging your mobile devices from a computer or charging station you do not control, like at an airport terminal.

Don’t leave your devices unattended. Protect your devices like cash when you are in public places like hotels and resorts; thieves and hackers always go where there is money.

Shut down any wireless services you aren’t currently using, such as Bluetooth.

The Texas Legislature passed a new law, effective September 2015, allowing owners of real estate to deed their real estate to their heirs outside the probate process (i.e. without a Will), by creating a Transfer on Death Deed. The effect of this new law is similar to a bank account or life insurance policy that transfers the proceeds of an account after the death of the owner. The owner may even designate a primary beneficiary or multiple primary beneficiaries, as well as naming an alternate beneficiary if they so desire to ensure that the property can be transferred according to their wishes. To be effective, the Transfer on Death Deed must comply with all of the existing requirements for a deed in Texas (i.e. in writing, with legal description of property and duly signed, with notary acknowledgment by the Grantor/property owner), but must also include the name and address of the designee (the one who will receive the property after the Grantor’s death) and the deed must be recorded in the deed records of the county clerk where the property is located. Finally the deed must explicitly and clearly state that the deed is not effective until after the death of the Grantor/owner. There are some important things to consider before choosing this type of deed as an estate planning tool. The statute specifically states that notice, delivery or acceptance of the deed by the beneficiary is required. One may effectively file/record the deed in the real property records without advising or delivering the recorded

Transfer on Death Deed to the beneficiary. Further, if multiple beneficiaries are listed, each beneficiary will share the property in equal shares, meaning it is not possible with this type of deed to transfer fifty percent to a spouse and splitting the remaining percent between multiple children. Further, because most property in Texas owned by spouses is considered community property, each spouse owns his/her share as “tenants in common.” To effectively transfer a community share of the property to your spouse without a Will, you must in fact list your spouse as the primary or sole beneficiary on the Transfer on Death Deed. After the death of the property owner, the beneficiary files a certified copy of the death certificate in the county property records where the Transfer on Death Deed was recorded, proving the title to the property was effectively transferred to the beneficiary. Should there be a mortgage or a lien however, the new owner would only have title to the property subject to those pre-existing mortgages or liens. Further, should the assets of the deceased property owner’s Estate be insufficient to pay the debts of the Estate, the Executor or Administrator for the Estate may be able to use the real property to pay those debts, through the administration process. Finally, a Transfer on Death Deed is no substitute for a Will, or the advice of an experienced attorney.
