Honest Lies and Other Misguided Thoughts Blind Luck
by Newt Harlan This story occurred back in the 50’s when I was playing football. (The dinosaur age to most of you.) We had an ol’ boy on our team by the name of Homer Crain. Homer pretty much matched his namesake. He stood about 6’3” and weighed in at about 140 lbs. on a good day. That boy was so skinny he could stand in the shade of a telephone pole, but I’m here to tell you that he could run. He probably wasn’t as fast as the movie hero Forrest Gump, but he was plenty quick. There were folks who swore he could flat outrun a cottontail and run a dead-heat with a jackrabbit. Homer would probably have been a super-star player had it not been for two little problems. He wasn’t what you’d call real smart. Truth be told, there were several stumps and probably 3 or 4 rocks smarter than Homer. Second, once he had the football in his hands, Homer apparently liked to watch his feet move. He’d put his head down and would see absolutely nothing else and wouldn’t stop running until something got in his way and stopped him. Now this would’ve been pretty good had Homer been a 250 lb. fullback, but at his size it didn’t take too much to put a stop to what coulda, shoulda, woulda been a touchdown. Homer’s position was offensive end. Back in those days we didn’t have split ends and wide outs and all those high-tech types, just ends who lined up at each end of the line and ran out for passes along with the backs. That way

It smells up the kitchen and a lot of people are afraid it will taste “fishy.” I have a few recipes in my arsenal that might just change your mind about cooking fish and the recipes may end up being family favorites. They are easy and delicious and can be put together with items you probably already have in your pantry or fridge. Just be sure to

In a small bowl or jar mix 1 Tbsp cornstarch

with ¼ cup water. Combine the soy sauce, brown sugar, ginger, garlic, honey, and 3/4 cup of water in a saucepan over medium heat and bring to a simmer. Stir in the cornstarch and stir until it thickens enough to coat the back of a spoon. Let it cool to room temperature and then place in a zip-top bag or covered dish and add the fish (be sure to lightly rinse in cool water and pat your fish dry before adding to the marinade). Marinate for 1-24 hours.
WITH SRIRACHA CREMA 4 oz. salmon filets (as many as you need) Teriyaki Marinade: ¼ cup soy sauce (can be light) ¼ cup brown sugar (packed) ½ tsp ground ginger ¼ tsp garlic powder 2 Tbsp honey 1 Tbsp cornstarch water
For the crema all you do is put the crema in a bowl and add the Sriracha and agave to taste. It will be a pale salmon color and will be a slightly sweet and spicy sauce.
Sriracha Crema: ½ cup Mexican style crema * 1-3 Tbsp sriracha 2 -3 Tbsp agave nectar
Preheat oven to 400 degrees and spray a pan with cooking spray or use non-stick foil. Place filets in the pan with a little of the marinade. Bake for 15-17 minutes until pink and flaky but not oozing the white fat.
*Mexican crema can be found at most grocery stores. It is slightly saltier and thinner version of sour cream. In a pinch you can substitute regular sour cream with a little added salt and thinned with half and half but I truly recommend the crema.
Serve over rice or my favorite way is to serve it along with a nice green salad. Pour the Sriracha crema on top of the salmon and dig in. Another easy to prepare fish is tilapia. It is light and mild. I am also a big fan of snapper, redfish and my favorite is black drum. If you aren’t familiar with black drum, it is a light flaky fish that is “cousin” to the redfish but to me it is milder and has a better flavor. There is a “blood line” that runs through it that turns dark with cooking that you simply remove after cooking if you don’t care for the taste. This next recipe will work well for any of these fish.

PAN SEARED FISH
SOLE MEUNIERE
fresh tilapia, snapper, black drum or redfish filets garlic powder kosher salt black pepper olive oil butter
2 Dover sole filets per person (they are small and cook down) ½ cup flour kosher salt black pepper 2 tbsp. olive oil 1 stick butter (divided) 1 lemon

Wash and pat dry the fish and season
with salt and pepper. Heat up a heavy pan on medium-high heat. Add in the oil and when it starts to shimmer add 2 Tbsp butter. Dredge the fish in flour and shake off excess and immediately place into the hot butter/ oil mixture. Cook the filets 2-3 minutes on one side and 2 minutes on the other side. Remove to a warm plate and cover. Remove any excess oil from the pan and add in the remaining butter and the juice of one lemon. Whisk to combine and heat until butter begins to turn a nutty brown. Pour over fish. You can add some chopped parsley for color. So there you have it, fish should be a friend in the kitchen not a foe.

Wash and pat the fish dry. Season with salt, pepper, and garlic powder. Heat up a large cast iron skillet or flat bottomed pan (note: a nonstick pan won’t give you the same sear as a cast iron or aluminum pan but will work just fine). When the pan is very hot add in 2 Tbsp of olive oil and 2 Tbsp butter. Place fish in pan and sear for a few minutes. Carefully flip the fish and sear the other side and then turn down the heat and cook a few more minutes. This is where you will need to watch your fish carefully so that it
doesn’t burn but each fish cooks differently so just cook it until it is opaque and flakes. As owners, we know how essential outdoor exercise is for our dogs, especially certain breeds. It would be comforting to believe our pets are completely safe while enjoying the outdoors, but this is rarely the case. Chagas, a potentially fatal disease transmitted to animals through insects, is a danger for both inside and outside dogs. The disease is caused by the protozoan parasite Trypanosoma cruzi, which is spread to dogs through insects in the Reduviidae family, also commonly known as cone-nose or kissing bugs.
