With a generous offering of culture, entertainment and fusion of delectable cuisine, Monterrey is an adventure for the senses. It’s considered home for those who enjoy spicy food and the smoky flavor of fresh meat. Eat your way through Monterrey, Mexico’s third largest city, by visiting these worthwhile spots.

I have traveled to Monterrey, Mexico since I was three months old and 20 plus years later, Los Pioneros has not lost its well-defined flavor. It’s a family tradition to eat the tacos de arrachera (grilled marinated skirt steak tacos) upon arrival to Mexico’s third largest city. Choose from corn or flour tortillas, top with grilled onions and the salsa verde or if you are looking for a kick of spice, stick with their salsa roja. Enjoy frijoles charros (pinto beans stewed with onion, garlic and bacon) with your order of tacos and don’t forget to order a side of papas asadas (baked potatoes). With a menu consisting of a variety of traditional Mexican meals, including menudo, pozole, barbacoa and machacado con huevo. There is an endless amount of options to choose from, but I highly recommend the tacos de arrachera.

HOW ABOUT A GAME OF

BOCCE BALL? by Bobby McCallitt

What’s that you say – Bocce Ball? I don’t even know how to pronounce that, much less know what it is! Well, Bocce Ball (pronounced bow-chee or bah-chee, either way you’re all right) is akin to outdoor bowling, with a shuffleboard twist!

So how do you play? Bocce is a very simple game that can actually be played on any level surface. You can play as an individual against

Bocce is a relaxing yet strategic game with lineage dating back to ancient Egypt, spreading to Greece, and on into Italy. It was played everywhere, from the churches and castles to the city streets. People from all walks of life could play the game; young or old, man or woman. Today, bocce is a calming, competitive way to spend a few hours outdoors in the pleasant company of friends. Bocce has seen many changes throughout the ages. It has evolved from being a crude sport played with rounded rocks, or even coconuts, to the modern game with composite or metal balls. Bocce has been known under many names - lawn bowling, nine pins, skittles, to name a few - and has seen many rule changes. The popularity of Bocce in America has been on the rise since it swept California in 1989. There are more than 25,000,000 Bocce enthusiasts that have heard of the sport, play recreationally, or play on structured courts in the United States today. 10

And truthfully, you don’t even need boundaries; any open space will suffice. Just use whatever area you have. A bocce ball set contains 8 colored balls – 4 balls each to a color, typically red and green. Regulation-sized bocce balls are 4.2 inches in diameter (about the size of a softball) and they weigh approximately 2 pounds. There is also one smaller white ball called the jack or pallino. It sort of looks like a cue ball.

After deciding which team goes first, they throw the jack (the little white ball) anywhere onto the court – typically at least half way down. You just want it far enough away from the players so that the game doesn’t become too easy. The team that threw out the jack is responsible for throwing the first bocce ball. The aim is to get the bocce ball as close to the jack as possible. Most everyone throws the bocce underhanded, like you were bowling. The other team now gets a chance to throw, trying to get closer to the jack than their opponent’s


ball. The team farthest from the jack will always be the next to play and will continue to roll their bocce balls until they are either closer to the jack than their opponent, or have thrown all 4 of their balls. Much like horseshoes, one point is awarded for each ball closer to the jack than the opponent’s closest ball. So after everyone is done tossing all 8 balls, the team closest to the jack will collect one or more points. The most points one could earn would be 4 points, while the other team won’t score any. First to get 15 points is the winner. (Some play to 14 or 16 points, but whatever you pick, it’s all good!) It is ok to hit the jack with a bocce ball toss, it will only readjust the aiming point. And you can hit other bocce balls as well, bouncing them around like a larger, outdoor version of shuffleboard. Or for those of you from up north, it’s like Curling, with the jack serving as the bullseye. (You know, curling, J.J. Watts’ Olympic sport.)

There are Bocce Ball courts at several places around Houston. You can play at Hans’ Bier Haus in Rice Village, and downtown at Discovery Green. If you are really committed, there are actual Bocce Ball Leagues as well. Brooklyn Athletic Club, 601 Richmond Avenue plays every Tuesday, and Cottonwood, 3422 North Shepherd Drive has games every Wednesday. Or just go to your local sporting goods store and buy a bocce ball set. They range in price from $40-$100. Bocce is an inexpensive game of thought and strategy that brings friends and families together as it is enjoyable and everyone can play. It’s great for all ages, gender, and athletic ability. I’ve played and it’s really quite fun; mostly because it requires very little skill and even less physical exertion. And for me, that’s perfect!

When unexpected health mishaps arise, many people’s first reaction is to head to an emergency room. But when those illnesses and injuries aren’t true emergencies, not knowing the best option for care can end up costing both time and money. So how can you know where to go when medical attention is needed?

Urgent Care or Emergency Care? Urgent care centers provide a way to keep up with patients’ daily healthcare needs, serving as a vital link between the emergency room and primary care physicians. “Urgent care is growing across the country because it provides patients with an alternative to the emergency room, which can be too costly and time-consuming for situations like common illnesses and minor injuries,” said Dr. Robert Kimball, president of the board of directors, Urgent Care Association of America (UCAOA). “While ERs are best equipped to handle life-threatening illnesses and injuries, it’s important that patients are aware that there are more affordable options available for less serious situations.”

Due to shorter wait times – 90 percent of urgent care centers offer a wait time of 30 minutes or less, according to the 2015 UCAOA Benchmarking Survey – and much lower prices, urgent care centers are a more convenient and affordable option than, but not a substitute for, an emergency room. When care is needed for true emergency situations, such as heart attacks, strokes, major bleeding or severe burns, it’s vital to go to an emergency room immediately, as urgent care centers are not equipped or designed to treat lifeor limb-threatening conditions.

Dollars and Sense When patients visit an emergency room for a non-emergency, they risk incurring a substantial financial loss. Emergency rooms are more expensive, charging an average of $1,300 for treatment of non-life-threatening situations, while urgent care centers charge an average of just $150, according to a Medical Expenditure Panel Survey. Plus, 27 percent of all emergency room visits could take place at an urgent care center, which UltraMagTexas.com

would save American consumers approximately $4.4 billion annually, according to “Health Affairs.” Additionally, many insurance plans feature lower co-pays for urgent care services than treatment in an emergency room.

Understanding the Options “With a growing variety of facilities available, patients need to take care to understand their options,” Kimball said. “The rise of freestanding emergency rooms is especially concerning because they look like urgent care centers. While they may seem convenient at the time, the emergency room prices can cause sticker shock for patients who aren’t aware of the distinction.” Freestanding emergency rooms are not physically connected to a hospital and are located in areas similar to urgent care centers, so it can be easy to confuse the two. A freestanding emergency room will offer emergency care – and charge emergency room prices. Patients should be sure to confirm the type of facility they’re visiting, as treatment at a freestanding ER may cost thousands of dollars more than an urgent care center. Locals like to compare Frankys to Chili’s, but I disagree. The decor, ambiance and food is completely different than Chili’s, it’s better. In the casual sense, the two are alike. When dining at Frankys, you used to be able to write on the furniture, including the walls. But someone decided to take a fresh coat of paint to the memories and very few signatures can be seen. Choose from chicken, burgers, steaks, tacos and their signature menu item: putines con arrachera (grilled marinated skirt steak) or putines boneless buffalo chicken (fries topped with two types of cheese and mixed with your choice of grilled marinated skirt steak or boneless buffalo chicken bites). Yay, cholesterol!

Owned by a French-born chef and his Mexican wife, Crepe de Paris is a perfect ten from the cozy atmosphere to the impeccable service and the outstanding salads, paninis, crepes, both savory and sweet, and fresh coffee. A small taste of France in Monterrey, Crepe de Paris is very similar to La Madeleine, Sweet Paris or Coco Crepes, Waffles & Coffee. What sets this cafe apart is the option of enjoying a crepe smothered in cajeta (caramel). Pets can also be affected by allergies and it is important to be mindful of any symptoms that your pet might be displaying. “People sneeze and wheeze with allergies, while dogs tend to itch and scratch,” says Dr. Adam Patterson, clinical assistant professor and a board certified dermatologist at the Texas A&M College of Veterinary Medicine & Biomedical Sciences. “The hallmark sign of allergic skin disease is itch that can be manifested as licking, chewing, rubbing, biting, scooting, head shaking, and/or scratching. Typically, the face, ears, paws, armpits, groin, and rump are the most affected sites.”

Patterson explains that animals with allergic skin disease are highly prone to recurring skin and/or ear infections involving bacteria and yeast. Infections can cause increased itch, redness, pimples, blackheads, scabs, dander, hair loss, skin thickening, and odor. Horses many times will break out in hives.

It is important to understand that allergies can be managed, but not cured, just as with humans. The goal is to reduce the extent and severity of signs, not completely eliminate them. “Management regimens might include increased frequency of bathing (washing pollens off the skin surface), antimicrobials or antibiotics, flea prevention, fatty acids, antihistamines, change in diet, steroids, and immunotherapy, also known as desensitization or hypo sensitization. The use of the latter can be determined through a good step-wise diagnostic approach along with allergy skin testing and administered by way of allergy shots or oral allergy drops,” says Patterson. When is it time to take your pet in for allergy skin testing? “Typically, dogs should have allergy symptoms for at least 5-6 months out of the year before considering skin testing for environmental allergies, which include reactivity to pollen, molds, house dust mite, and house dust, in order for the diagnostic tests and treatment to be cost effective over the long haul,” Patterson recommends.

“Animals tend to be allergic to many of the same things people are hypersensitive to such as pollen, mold, dust, house dust mite, and foodstuffs,” Patterson explains. “An exception would be fleas - the most common thing dogs and cats are allergic to. Despite this, many people are in ‘fleanial’ and refuse to believe just a few flea bites can be triggering the itch response in their pet.” Likewise, horse owners may not be aware how just a few insect bites could be responsible for or contributing to itchy skin disease. 16

Allergic skin disease can be mistaken for many other forms of skin disease. A veterinary dermatologist is trained to work with primary care veterinarians to get down to the bottom of how to best diagnose and manage skin and ear disease, including allergies, in animals.

Patterson explains that rainfall cuts down on airborne pollen and may provide itch relief to pets, but at the same time rain may cause plants to produce more pollen over the next few weeks. Indeed, rain fall might worsen flea and mold allergies because moisture and humidity are favorable to fleas and mold. Of course, rain has no effect on food-related allergic skin diseases. What do you have at your house? You know that long, upholstered, furniture thing in your living room or den or maybe out on the front porch, the thing several people can sit on at once, what do you call it? We have a couple of them here at the Poverty Manor Retirement Center. There’s one in the living room Miss Edie calls a sofa and one in the den, she calls a loveseat--I call them both couches...... oops. We used to have a sofa and a loveseat, now we just have a sofa; my number two daughter just commandeered the loveseat for her new house. Couch is what they were called around my house back when I was growing up. I do seem to recall a time or two, when the preacher or the home demonstration ladies or somebody else important came calling that mama called it the sofa or divan, but usually it was just the couch. When we went to visit at our rich Aunt Emma’s house, she’d always tell us before we entered, “Now you kids don’t go to sittin’ on that davenport with your dirty behinds. I try to keep that nice for company. And if I so much as catch you lookin’ like you’re fixin’ to put those dirty feet up on that settee, I’ll have your daddy give you the switchin’ of your life when I take you home.” Did you ever stop to think how many names there are for just that one piece of furniture, a couch? Let me tell you, there’s a bunch. It seems like every little change in design or appearance means a whole different name. Of course, you could still use the old name and folks would pretty much know what you’re talking about, but then you wouldn’t really be nailed-down, right-on correct with your description. So, in my continuing effort to keep my friends on the cutting edge when it comes to proper and current language, here is an up-todate list of names for sofas. We’ll be using the KISS (Keep It Simple Stupid) method of short, concise definitions, rather than the laborious dictionary method of listing all definitions and letting you select the one to apply.

After going through all of these, I was somewhat disappointed to find there were no tips as to the correct word to use in given situations. For instance, when a convertible is covered with a protective plastic film, is it still a convertible or does it become a davenport or a chesterfield? And what about when the preacher or the insurance man comes, should he be seated on what is called a plain old couch or should a person of his station more properly be escorted to a sofa or even a davenport? I definitely wouldn’t tell a preacher he was sitting on a loveseat or a daybed, it might cause a stroke. Speaking of davenports, reckon how you know what to do when somebody tells you, “go in yonder and wait on the davenport, I’ll get us

Do you reckon it matters what we call whatever it is, when it’s sitting out on the front porch of our mobile home alongside the broken-down washing machine? Should we properly say sofa or couch or just hush up and sit down on whatever it is? I was glad to finally find out what a futon is. For several years now, I’ve been hearing young folks talk about sitting and sleeping on futons and how uncomfortable they were. I was embarrassed to ask what they were talking about and show my age, and kept forgetting to look in the dictionary when I got home. I just assumed they were something like those beanbag chairs or something like that. Now that I’ve learned what they are, no wonder those things are uncomfortable, a pad on the floor. I’d at least get me a daybed or a settee or a squab or something or another. How many of y’all have ever heard a couch called a squab? I sure as hell haven’t. The only squab I’ve ever heard of is a young pigeon. Has anybody in the South ever heard the word squab used as a meaning for a couch? It must be some word a Yankee interior decorator made up.

Bon Appetit QUICK MEALS WITHOUT GOING TO THE GROCERY STORE by Anice Shelton

Cooking is fun. I love to cook. I hate baking but I love cooking. I think it is because “cooking” (I am using the term to apply to anything that is not a bread or baked good) doesn’t always have to follow a precisely measured recipe. To bake, you must follow an exact recipe with exact measurements for a perfect result.

I have a lot of friends who ask me how I cook so often and why it is that I think it is so easy and convenient. And that is why I wrote this article. The best answer is that I have a lot of simple recipes in my repertoire and a well-stocked pantry and freezer. So, I can usually whip something together even if I don’t have time to shop.

In fact, I have never taken a cooking class. I am a girl who learned how to cook from her mama. My mother was a fabulous cook and ever since she passed away, I wish I had learned more from her. Now my teachers are Ree Drummond, Ina Garten, and the chefs on The Chew.

Cooking does not need to be complicated or fancy. I try to figure out my meals for the week, so I can shop smart and whenever possible, I try to cook something once and plan for leftovers to be eaten “as is” or repurposed into a new dish.

I have ADD. Measuring things is hard. The struggle is real people...it’s real… But when I cook, I can be free. I just start throwing things in a pot or pan and hope for the best. I don’t have to depend on yeast to rise and I don’t have to knead anything. I cook a lot. I cook at least 5 meals a week, but usually more if I am home for lunch (and not including breakfast). I prefer cooking to eating out or getting takeout because I can control what is going into my meal. I also find it is easier to put a meal on the table than to get my teenage son to figure out where he wants me to pick up dinner or where to dine (unless it is Whataburger...for him the answer is always: Whataburger).

Fancy equipment isn’t necessary to be a good cook. You don’t need a $200 chef’s knife or a $300 enameled cast iron Dutch oven. I’ve cooked in a $350 Dutch oven and a $30 Dutch oven. Guess what? They cook the same. And when the expensive one cracked, I replaced it with the cheaper model. I do most of my chopping with a $30 knife I bought on Amazon. The cast iron skillets and Dutch ovens (I have a smaller one too) I purchased at H-E-B. My saucepan is non-stick and it’s large enough to make a sauce or heat up soup. I splurged on my blender and it is worth every penny. That’s the one piece of pricey equipment I own. But I know there are a lot of quality blenders that don’t cost $400.

Now cast iron skillets come pre-seasoned and are ready to use. Just remember not to ever use soap in it. If you can find an old skillet at a resale shop or antique shop consider it to be gold! I use mine daily. I rinse it out with hot water and if anything is stuck, I use a coarse salt to scrub it. Once clean, I dry it and rub a tiny bit of oil on the surface.

Now, let’s talk about what to have on hand to make it easy to whip up a meal. These are the things I always keep in my pantry, fridge or freezer:

I try to eat healthy and prefer whole to processed foods. But sometimes you just have to break out the Velveeta, cream soup, or onion soup mix. If you have these items on hand, you can turn fading veggies into a soup (did that today with broccoli and made

broccoli cheese soup), use frozen stock to make a veggie noodle soup, turn leftovers into a casserole. Often, when I have a little bit of leftover steak or chicken and a lot of veggies, I make a stir-fry and use frozen rice in it (thaw rice in microwave first).

4-8 chicken thighs (boneless or bone in) 2-3 cups of rice (depending on how many servings you want)

OLD FASHIONED CHICKEN AND RICE

Liquid (water, milk, wine, or combo) 1 envelope of dry Lipton Onion Soup (if using 3 cups of rice I usually use 2)

Pepper Butter NOTE: I prefer to use Progresso brand of soup. It is thinner than other brands. If using Campbell’s soup, thin it according to the directions before proceeding with the recipe.

IMPORTANT: This recipe doesn’t have exact measurements because it depends on the type and quantity of rice. I use long grain rice for this (not minute rice) and I usually do 2 cups of rice and 4-6 chicken thighs. Just be sure the rice/liquid ratio is equal to the rice package directions. Then, I usually add an extra ¼-½ cup extra. For example, for 2 cups of Texmati rice I use one can of mushroom soup and an equal amount of liquid. Then fill the can a little less than ¼ full and add that amount.

Rub a casserole dish (I use my dutch oven) with butter to prevent sticking. Mix mushroom soup and liquid of choice together with the rice and ½ the contents of the onion soup mix. Stir in a bit of pepper. Do NOT add salt. Set the chicken breast into the rice mixture and top with the remainder of the onion soup mix and dot with a few pats of butter. Place in preheated 375° oven and cook for 1 ½ hours to 2 hours or until the rice is softened. Stir after an hour into cooking to make sure the liquid remains evenly distributed. Top it with a bit of green onion. leftover steak or chicken and a lot of veggies, I make a stir-fry and use frozen rice in it (thaw rice in microwave first). 22

CROCKPOT WHITE CHILI

4 - 16 oz. cans Great Northern Beans 3 cans diced green chilies (mild or hot or combo)

1 large onion, diced 3 cloves garlic, minced or grated 2 tsp. ground cumin 1 ½ tsp. oregano ¼ - ½ tsp. cayenne (to taste) 2 cups chicken stock 3 cups cheese (Monterey Jack, pepper jack, or cheddar or combo), divided

1 package frozen cooked chicken fajita meat (pre-cooked and frozen)

Salt and pepper to taste Garnish: Mexican crema or sour cream, sliced green onion, grated cheese

In a skillet, cook the diced onion in a little bit of olive oil until it is soft. Put in a crockpot along with the canned beans, canned chilies, spices and chicken stock. Do not add chicken fajita meat yet. Set crockpot to low and cook 4 hours (you can leave it longer. I’ve cooked the beans as long as 8

hours when I am in a pinch). When putting this together, I usually remove the fajita meat from the freezer and set it in the fridge to start to defrost. If you don’t have time for this step it is ok. The meat is cooked and it will defrost in the crockpot.One hour before serving, add in the chicken fajita meat

and turn the crockpot to high if the meat is not fully defrosted. If it is defrosted, keep it on low and it will warm up.Thirty minutes before serving, add one cup of cheese to thicken the chili. To reduce fat and calories, you can skip this step and just use cheese as a garnish. Garnish and serve in bowls.

Heat the skillet on high and add a few TBS of peanut or canola oil. When it “shimmers” turn the heat down to medium high and add the onion. Once the onion softens, add the bok choy and carrots. Cook for a few minutes stirring frequently. Then add broccoli and stir. If the meat is raw, add it now. If it is cooked, wait until the veggies have started to soften to add the meat. A few TBS water or rice wine and covering the skillet will help the veggies soften faster. Add in the meat if you haven’t already and throw in slaw mix if using that. Add the rice. Turn heat to low and season with soy sauce, teriyaki or the marinade from the meat.

For the veggies, I like: onion, bok choy, carrot, broccoli, cabbage and sometimes I use a bagged cole slaw mix (minus the dressing). Chop your veggies before you start cooking. Use leftover steak or chicken or pork if you want. If the meat isn’t cooked, I marinate it in the following:

½ cup soy sauce 2 TBS honey ½ tsp. powdered ginger ½ tsp. garlic powder 3 TBS water Squirt of Sriracha

Value and Dividing a Business

BYRON K. BARCLAY One of the biggest considerations in divorce is valuation of the marital assets. If the parties can agree on how to divide these assets, it can be fairly straightforward, however if there is disagreement on the subject, a great deal of time, effort and worry can be expended trying to reach an agreement that both parties can live with. Of course in a divorce, there are few things the parties agree about, except the need for the divorce. One of the most contentious subjects in valuing and dividing marital assets surrounds the value of a family business. Businesses can be sole proprietorships, partnerships, or corporations. The business can be a professional practice, like a dental, medical or law practice. Similarly it can be a service-based business, like an appliance repair shop, or a retail store or a construction firm. One of the first steps to valuing the business is for the spouses to have the business evaluated by an independent third party who specializes in valuation of businesses. Often these consultants are accountants, but need not be. In fact, there are Certified Business Appraisers who have been trained and work in this area. Of course there are three options for dividing the business: one spouse or the other can keep the business by buying the other out, the spouses can agree to sell the business, or the spouses can agree to keep the business and operate it together. This last option is often the hardest option, particularly if the divorcing spouses have previously worked together in the business. When two spouses have worked together to build a business, both will often have emotional ties to the business. Moreover, the success enjoyed by the business may be directly due to the involvement of both spouses. Should one spouse want to operate the business without the other spouse, that decision may in fact destroy the business, to the detriment of one or both spouses depending on the payment terms that the spouses have agreed to for sale/purchase of the business. Some spouses may be better business partners than marriage partners though, so it is entirely possible, in some circumstances, for divorced spouses to still work together in a business. A second option is for one spouse to buy the other out. Of course this scenario makes an accurate valuation of the business extremely important, and both spouses must agree on the valuation. One of the big problems here in evaluating the business concerns the role, and the value that a spouse may have in that business. In an example of an insurance agency, or a medical practice, the spouse in that business could choose instead of buying the other spouse’s portion of the business, to simply start a new business or practice, leaving the other spouse with a business that he or she is incapable of operating, either legally (through licensure issues, like a law practice) or practically (where one spouse simple does not know how to run that business. An experienced attorney can guide you through the process of valuing and dividing a family business in a divorce.
