– Jawaharlal Nehru Chances are by the time you read this you would already have made your getaway plans for the festive season.

Rather than using our last edition of 2014 to offer you inspirational year-end holiday ideas, we decided to conclude with a round-up of some of the best in beach, bush and countryside offerings we have enjoyed ourselves over the past months.

When daydreaming of powdery white sands and warm and inviting waters, Mozambique and Zanzibar are no doubt two of the exotic destinations that spring to mind. One of our favourite Mozambican escapes is White Pearl Resorts in Ponta Mamoli on the island’s Lagoon Coast.

A quick read through our feature on the exquisite offering will no doubt reveal why it has come to be known as an oasis for silence seekers, creative corporates, romantics and fun-loving families alike. For those who prefer bushwhacking to beach-bumming, our favourite safari experiences of the year included a stay at Victoria Falls Safari Lodge in Zimbabwe and a Better

Wildlife Photography Course with Pangolin Photo Safaris in Botswana’s magnificent Chobe region. While the former saw us reclining in luxury just a stone’s throw from “The Smoke That Thunders”, the latter found us up close and personal with some of Chobe’s abundant wildlife, carefully capturing them under the sound tutelage of our photographic guides.

If it’s the winelands that really tickles your fancy, you may enjoy a visit to one of our top Cape countryside destinations. An old favourite of ours, The Franschhoek Country House and Villas provides veritably palatial accommodation in the heart of South Africa’s food and wine capital. world-renowned safari destination, Chobe National Park covers approximately 11700 square kilometres, encompassing floodplains, swamps and woodland. On its northern boundary is the Chobe River, with the riverfront the most popular and accessible part of Botswana’s big game country.

Pangolin’s state-of-the-art facilities include a specially designed photo boat and unimog, and high-end (Nikon D7000) cameras with Sigma 150 – 500mm and 120 – 400mm lenses for client use. The Pangolin boat is testament to the knowledge and passion of its founders.

The hull has been custom built for stability, with a roof designed to pose no obstruction. It has been fitted with fully rotatable seats (for eight guests) with lightweight mountings that give every camera lens the stability and flexibility needed for the perfect shot. The seats are also aligned linearly in the middle of the boat to minimize obstruction. he historic farm, which dates back to 1692, once functioned as a Dutch East India Company fresh food and water station for those travelling through the Cape. While the very first structures have since fallen out of use, the buildings that play host to the estate’s luxurious Pioneer and Manor guesthouses have graced the property since 1750 and 1821 respectively.

he ‘forever young’ town of Stellenbosch is donning all its bells and whistles to offer locals and holidaymakers alike an exciting lineup of indulgences and experiences this festive season.

From Christmas shopping under the stars to laidback live music shows and open garden strolls, the program conjured by Stellenbosch Wine Routes and Stellenbosch 360 Tourism includes an array of seasonal pleasures for young and old to enjoy as part of the annual Stellenbosch Experience programme.

The month kicks off with the spellbinding Spier Festival of White Lights on 5 December. “Corporate social investment forms a strong part of our business strategies, and we are constantly on the lookout for areas where we can integrate these policies with the objectives of the campaigns and programmes within the precinct,” says Glenn Joseph, Montecasino General Manager. “The Christmas Village is the ideal opportunity for us not only to give Gauteng residents a truly authentic experience of Christmas, but also to highlight the true spirit of Christmas by supporting self-employed entrepreneurs, 36

small local businesses, and not-for-profit enterprises.”

An extensive two-week radio campaign aimed at enticing small businesses to submit applications resulted in over 250 hopeful Christmas Market applicants, from which the best and most varied array of exhibitors was selected on the basis of product range and the merit of the enterprises. These SMEs will now have the opportunity to showcase their businesses and goods to a market they would otherwise not have been able to reach. “Buying local always has a positive impact on a local economy – and buying locally-made crafts will give these small enterprises a boost and could even kick-start other ventures for them,” adds Joseph. The Christmas Market will take place on the Montecasino Outdoor Piazza from 3 to 7 December.

Dining at Victoria Falls Safari Lodge is always a memorable experience. An impressive selection of delectable à la carte fare is on offer at the lively splitlevel MaKuwa-Kuwa Restaurant, which overlooks the waterhole. A tasty snack menu and full bar service is available at the open-plan Buffalo Bar, which boasts its own game-viewing platform overlooking the waterhole.

A pool and viewing deck also offers snacks and drinks, and guests can enjoy a view of the “Vulture Restaurant” in front of the waterhole, which attracts hundreds of vultures each lunchtime. Just 500 metres from the Lodge is the famous Boma – Place of Eating, which provides a unique African experience that includes traditional dancers, an interactive drumming show, traditional face painting, a sangoma, local craftsmen, and a veritable plethora of mouthwatering dishes, from Mopani worms and Umqombothi (a strong African beer) to more straightforward fare. Private and bush dinners are also available to Lodge guests on request.

Victoria Falls Safari Lodge offers an impressive choice of conference and function venues. The Indaba Conference Room seats 70 guests cocktail-style and 100 guests cinema-style, and the Boardroom comfortably seats 20.

For larger parties, The Open-Air Amphitheatre seats up to 200 people, and the Nandi Gardens up to 100 guests cocktail-style and 200 guests cinema-style.

The Lodge is also a unique venue for African-inspired weddings and honeymoons, and a professional team of hoteliers, caterers, safari guides, beauticians, and florists are available to oversee every detail of a memorable bush wedding. In the 1980s the Zimbabwean Department of National Parks instated a policy of culling what they deemed “excess� animals within the National Parks. These animals were mostly elephants, and part of the policy was to destroy the entire herd, apart from the juveniles, who were no longer dependent on mother’s milk, yet small enough to translocate. These elephant orphans were sold to various local farmers as well as zoos and circuses around the world.

Being hand-reared, the elephants very quickly became habituated to people and often became a "handful" to have around. Because they were totally habituated, it was felt at the time that it would be difficult to safely release them into the wild, as it would only be a matter of time before they wandered into a village or town.

In 1997 Wild Horizons established a sanctuary for orphaned and abandoned elephants, and today visitors to the sanctuary are fortunate enough to be able to learn about, interact with and ride members of the habituated herd.

Another popular Wild Horizons offering is the Victoria Falls Canopy Tours experience, which offers a network of slides, trails and rope bridge walkways beneath the canopy of the hardwood forest of the Zambezi gorges. Suitable 41

“Every year we celebrate with our graduates as they complete their training and establish this milestone in their careers,” says SA Chefs Academy owner Paul Hartmann, a renowned international chef in his own right. “For us at the Academy, this year is however especially significant. The new branding that will be rolled out across the organisation takes its lead from the re-invented logo.The new logo incorporates creativity and professionalism among its design themes along with the green hue signifying growth and prosperity.

“When we launched the school in 2004, our vision was to create a world-class training facility, built on our own personal experiences, to equip students to be the best in their chosen fields. Looking back now, I think we can safely say we are achieving our goal.”

“A

rt is very important to us, and it gives us tremendous pleasure,” says co-owner AnneMarie Ferreira. “We therefore wanted to develop a concept whereby we could promote art to the public in various available spaces, in and around our winery and delicatessen. We also felt art was a means to satisfy the sense of sight, which in turn would complement the other senses one can stimulate at Tokara through our wines, olive oils and cuisine.”

Forty-five students from the Marié Stander School of Art literally transformed wine into art by dipping their paintbrushes in 2011 Tokara Shiraz in an attempt to visually portray their interpretations of this year’s theme: 2014 World Design Capital – Cape Town.

Marié Stander, who is herself a practising artist, encourages her students to work in a variety of mediums, from oils and ink to charcoal and pencil. So painting with wine was a welcome challenge. “I’m very involved with the creation process. Whenever we start a new brief, I show them different examples and ideas – to get the inspirational juices flowing,” she says.

The school has been involved with “Wine Made Art” for the past four years, and the students have over time perfected the method of preparing the wine for use as an art medium. Stander says that getting the rich burgundy colour you see in a glass of Shiraz to translate to the

surface being painted on is tricky, because if used as it is, the wine becomes a lilac grey colour. “It’s very pale, but you can’t reduce it too much because it becomes too syrupy.” So after much experimentation, she and her students decided to use an old Voortrekker recipe for ink: boiling a wine reduction with a rusty nail and a white Protea leaf, creating the rich colour seen in this year’s art.

Stander discourages her students from using found objects or photographs taken by other people, so this project saw them venturing out onto the streets of Cape Town to find their inspiration. She is very impressed with the concepts and quality of the work chosen for this year’s exhibition.

Mark Lester, Marketing Manager at Tokara, is also impressed: “The quality is once again truly magnificent.

The theme was relatively broad – some artists interpreted it literally and others less so. The visuals therefore touch on a variety of subjects ranging from historic to modern, capturing cultural and everyday scenes of Cape Town. The works portray a very diverse city, which Cape Town has truly come to represent.”

Twenty selected artworks from this year’s “Wine Made Art” project are on currently displayed in Tokara’s on-site gallery until the end of January 2015.

rande Provence Heritage Wine Estate has launched a new rosé under its signature label just in time for summer.

Paying homage to its French roots in Franschhoek, the new Grande Provence Rosé 2014, with its beautiful pale pink summer blush, is made in the classic crisp, dry Provençal style. The wine, made from 100% Franschhoek grapes, has a delicate fruity character with nuances of apple and fresh berries.

"After a visit to Provence, Alex van Heeren, owner of Grande Provence, fell in love with their dry style rosé wines. One thing led to another and we decided to create one of our own," says Cellarmaster Karl Lambour, who attributes the fruit forward character of the wine to the ideal Franschhoek climate.

“We used our very best Merlot and Cabernet grapes and bottled the wine early to present a fresh, uncomplicated style,” explains Lambour.

Grande Provence Rosé 2014 can be enjoyed on its own as an invigorating summer sip, or with tuna sushi or sashimi for a delicious taste combination.

N

eethlingshof has released the latest vintage of its celebrated Gewürztraminer, a highly-awarded wine made from some of the Stellenbosch Wine Estate’s oldest vines. Emphasising its stature, the Gewürztraminer 2014 has been issued in bold new packaging.

The wine is famous as one of only a few estate Gewürztraminer wines made in South Africa. “It is unique because it is made in the dryer style, as opposed to those from Alsace, Germany, and others in this country,” says winemaker De Wet Viljoen. “It makes the wine more versatile with food and, in light of our warmer conditions, the wine is refreshing and very aromatic.”

The vines that provided the grapes are 30 years old – a rarity in South African terms. The vineyard was dryland farmed and cooled by sea breezes, which ensured slow, even ripening. The result is a bright, straw-coloured wine of fine balance and concentration. Aromas of Turkish delight and rose petals, with hints of jasmine and honeysuckle, are prominent. On the palate it is off-dry with a spicy character, traces of Turkish delight and an abundance of litchi that concludes with a zesty finish.

A necessary inclusion in any good restaurant wine-list, this wine is an ideal companion for liver and fish pâtés and lightly spiced Asian dishes. It also makes a good partner for fruity desserts.

Neethlingshof’s Gewürztraminer achieved a four-star rating in the Platter’s South African Wine Guide and was voted the best Gewürztraminer in South Africa at the Novare Terroir wine awards earlier this year. Previous vintages have achieved gold at the Veritas South African wine and spirit awards and the International Wine & Spirit Competition.

Its latest incarnation has been released in a traditional Alsace bottle, bringing this unique and classic wine into its own.

Grapes have been grown on Neethlingshof for more than 300 years and today, both red and white varietals are cultivated, of which Gewürztraminer is one of the mainstays.

ntering the restaurant is like being welcomed into a world wholly apart from the city outisde. The walls are painted in tones of warm burnt orange, with a multitude of gold-labelled brown laboratory bottles creating a striking feature that whets both the curiosity and the appetite upon arrival. The unique bottles are filled with flavour compounds that artist and chef Jacques Erasmus has developed in the kitchen. The result of his creative wizardry, they are aptly referred to as Flavour Intense. When Chef Jacques the alchemist discovers the perfect blend for a Kashmiri chai, achieves the perfect balance for his black dukkah, turns sundried tomatoes into dust or a surplus of citrus fruit into a soft powder, the results are bottled to be shared not only in the restaurant but by those wanting to take them home and create a bit of magic themselves.

In the four years since its opening in October 2010, Hemelhuijs has undergone several transformations.

The initial black walls gave way to green, then grey was introduced. The art changed, the displays were reinvented, and the floral features styled according to the changing mood. The menu of course also changes according to the season. It is this constantly evolving

with orange blossom honey and salted butter – in a gold bowl. When the heat of the porridge melts the butter and honey and the reflection of the bowl causes it to look like tiny rivers of gold flowing around the porridge.

It has all the elements of magic you once believed in as a child. This dish has become a talking point for all the right reasons. Only a chef confident in his craft would present an ingredient of such apparent ordinariness with such simplicity. But Chef Jacques knows when to let ingredients speak for themselves. For him cooking is not about outsmarting his guests. It is about bringing them joy. This is just one of many such examples of magic created through culinary confidence, simplicity, and a touch of creative genius.

n 1990 an expedition of Cambridge scientists arrived at the Plains of Nechisar, tucked between the hills of the Great Rift Valley in the Gamo Gofa Province of Ethiopia. On that expedition, 315 species of birds were seen; 61 species of mammal and 69 species of butterfly were identified; 20 species of dragonflies and damselflies were spotted; 17 reptile species were recorded; three frog species were filed; and various plants were listed. The wing of a road-killed bird was packed into a brown paper bag, and was to become the most famous wing in the world.

When the specimens finally arrived at the British Natural History Museum, the world of science was set aflutter. It seemed that the wing was unique, but the question arose - can you name a species for the first time based only on the description of a wing, gathered from just one wing?

After much to and fro confirmation was unanimous, and the new species was announced. And that is when birdwatchers like Vernon began to dream.

This book is more than a boy’s adventure in search of the rarest bird in the world.

It is a meditation on nature, on ways of seeing, on the naming of things, and on why we feel so compelled to label. Part detective trail, part love affair and pure storytelling at its best.

01 Health sunburn is a potential health hazard

ince most of the activities in South Africa happen outdoors, sunburn is a potential health hazard. Cover up and use sun screen lotion whenever you are outside.

Malaria risk areas include Northern KZN and Zululand, the Northern Province and Mpumalanga. The risk of contraction in South Africa is minimal when the proper precautions are taken. These include taking malaria tablets, using insect repellent and mosquito coils, and wearing long sleeved clothing.

Tap water in most areas is safe to drink, but be sure to double check with your hosts first.

One of the biggest health risks in South Africa is HIV and Aids. If you plan to be sexually active during your stay in South Africa, be sure to take necessary precautions.

Most of the main car rental companies have outlets at the international airports and in major centres.

In South Africa, we drive on the left side of the road. The general speed limits are 120 km/h on the freeways, 100 km/h on major roads outside built-up areas and 60 km/h in built-up areas.

A Note for Smokers South Africa became one of the first countries in the world to ban smoking in public places in 2000 when it introduced its Tobacco Products Control Amendment Act. The Act prohibits smoking in restaurants, pubs, shopping centres and offices where there are no separate, enclosed smoking rooms.

Smoking in partially enclosed public places such as covered patios, verandas, balconies, walkways and parking areas is also prohibited. Children under the age of 18 are prohibited from entering designated smoking areas and purchasing cigarettes.

There are stiff penalties associated with anti-smoking legislation in South Africa, including hefty fines for both the smoker and venue operator. Be aware that smoking is banned on all domestic flights in South Africa. Keep a look out for ‘no smoking’ signs and only smoke in designated smoking areas.
