HEALTH AND NUTRITION Eat to Live: Recapturing Your Health with Food Sept 26, 10:00 a.m.-12:00 p.m. $20 Despite being a more educated and sophisticated society, we have become, as a population, much less healthy. How has that happened? The deck is stacked against us with a broken food industry that encourages all the wrong habits and bombards us with misleading and inaccurate advertising. Instead of sustaining our good health, the way we eat has sadly contributed to chronic illness and our declining health. We all think we know what we should be eating - but do we really know and do we do it? You will leave this class with workable solutions for better eating habits to take back control of your health and your family’s health. The time is now! CRAFTS OF YESTERYEAR Basic Knitting Oct 6-27, 6:00-8:00 p.m. $25+ Whether you are new to knitting or need a refresher, this class is for you. You will begin with an overview of knitting terms, abbreviations and resources; learn basics of long-tail cast on, knit stitch, purl stitch and how to cast off; how to increase and decrease; and read simple patterns. By the end of this class, you will be able to knit a simple scarf, cowl (neck warmer) or afghan. Bring one skein of knitting worsted-weight yarn in a color that is neither too dark nor too bright. Intermediate Knitting Oct 29-Nov 19, 6:00-8:00 p.m. $25+ This class takes you beyond the basic knit and purl stitches. Lisa Krause will teach you how to increase and decrease, fix basic mistakes, do the cable and more advanced stitches, and read more complex patterns. You will learn about different types of needles, yarns and fibers, and finishing techniques. Bring one skein of knitting worsted weight yarn in a color that is neither too dark nor too bright. PERSONAL ENRICHMENT Cake Decorating Sept 28-Oct 19, 6:00-8:00 p.m. $40+ Julie Gosser, owner of Julie’s Piece of Cake, will teach the fundamentals of basic cake decorating. Using buttercream icing, you will learn to ice and smooth cakes and ice and fill cupcakes. You will drop flowers, make stars, rosettes, shell and bead border, a shaggy mum, regular roses, ribbon roses, leaves, piping, writing and more. Deadline to register: Sept 14. Cake Decorating Course 2 Oct 26-Nov 16, 6:00-8:00 p.m. $40+ Julie Gosser, owner of Julie’s Piece of Cake, will teach Cake Decorating Course 2. This class will focus on flowers and cake design. You will learn how to make fondant and gumpaste flowers, a ruffle petal and a rose petal. You will use royal buttercream icing to make designs on the cake and also make designs off the cake. Digital Photography Sept 24-Oct 15, 6:00-8:00 p.m. $50 Unleash your inner artist! Instructor Jim Krause, co-owner of Deux Bijoux Bijoux of Evening Shade, will teach students the basic functions of a Digital Single-Lens Reflex (DSLR) camera. This beginner’s class will teach the photographer to get away from using the camera’s auto functions and move into using the manual functions of the digital camera. OUTDOOR Basic Outdoor Survival Sept 26, 9:00 a.m.-12:30 p.m. $32 Dan Nash, a professional mountain guide, will teach Phase 1 of survival training. Training includes instruction on survival kits, the psychology of survival, shelter, water, fire, and preparation for rescue. Classroom and field exercises include fire starting, water filtration, and shelter construction. Bring a water bottle or container, two bandanas, and a steel or magnesium fire striker. Field exercises will be held outdoors, rain or shine. Up to two minors (under 18) may attend the class for $5 each but must be accompanied by a parent or guardian over 18 years of age. Intermediate Survival Sept 26, 1:00-5:00 p.m. $32 Dan Nash, a professional mountain guide, will teach Phase 2 of survival training. Training and field exercises include an overview of the Basic Survival Class followed by instruction in wilderness first-aid, orienteering, collecting wild edibles, the use of snares, dead falls, fish traps, and surviving harsh weather environments. Adults (18 and up) need to bring a pocket knife and 3 feet of string. Field exercises will be held outdoors, rain or shine. Open Water Scuba Diving $450 + pool rental fee Learning to scuba dive is safe and affordable, but it does require a modest amount of training. This entry-level course is split evenly between the classroom and pool for completion of your full certification as an Open Water Diver. Participants learn the principles of diving physics and physiology, selection and maintenance of equipment and safe diving practices. Two or more people make a class. SAFETY Hunter Education

Oct 17, 8:30 a.m.-6:30 p.m. FREE This class, sponsored by the Arkansas Game and Fish Commission, is required for anyone born on or after January 1, 1969. To hunt in Arkansas, you must complete a hunter education course and carry a valid hunter education card. Youth under age 16 may hunt without hunter education as long as they are under the direct supervision of an adult who is 21 years of age. There is no specific age requirement to enroll in hunter education. However, the educational reading material is based on a sixth-grade reading level. Mary Zirkle, instructor. ServSafe Food Oct 6, 8:30 a.m.-5:00 p.m. $30 Food safety training is a non-negotiable activity for all members of the restaurant and food service industry. It is a highly dangerous gamble to cut corners by reducing or eliminating training. To decrease the risk of food borne illness outbreaks, take advantage of the National Restaurant Association’s ServSafe program which provides value beyond certification and is the industry’s best day-to-day food safety source. SUMMER YOUTH ENRICHMENT 2016 UACCB Kids’ College Kids’ College is a summer enrichment program designed to spark the imagination and expand the knowledge of youth who will enter grades 1-6 in the fall 2016. More details available April 2016. Deadline to apply for Kids’ College will be May 27, 2016. Limited number of partial scholarships available for qualified students. Week 1: Entering grades 1-3, July 11-15. Week 2: Entering grades 4-6, July 18-22. Fee: $180 (full days), $105 (half days). UACCB Independence Hall.

STEM Camp STEM camp is coming July 2016 for 7th thru 9th grade students. This camp will include projects in science, computer security, engineering, and math. Spend the week challenging your mind and learning new ideas. More information to come! Merit Badge University 2016 Fall date to be announced, 8:00 a.m.-5:00 p.m. UACCB will host the third annual White River District Merit Badge University. This one-day camp gives boy scouts in the White River and surrounding districts an opportunity to earn up to two merit badges. FAQs How do I enroll in a class? There are three ways to register. You may enroll in a class either by phone at 870.612.2082, in person at our Community Education office, Annex 401A, or use the registration form (page 15) and email a scanned copy or fax it to us at 870.793.4988.

How and when do I pay my registration fee? Payment is due at the time of registration. Early registration and payment should be made to guarantee your place in class. Accepted payments are cash, check, Visa, Mastercard or Discover. If paying by check, make check payable to UACCB. To pay by credit card, contact the Community Education office at 870.612.2082.

Where is your office located and what are your hours? Community Education is located at 2005 White Drive, Batesville, in the Annex Building Room 401A, next to the Arts and Science Building. Office hours are Monday-Friday from 8:00 a.m.-5:00 p.m.

What is your refund policy? Three business days’ notice prior to the course starting date is required to withdraw and receive a full refund.

My class was cancelled. Why? Sometimes classes are cancelled due to low enrollment or for various other reasons. We will do our best to notify you and we apologize for any inconvenience this might cause. UACCB reserves the right to cancel classes and will refund registration fees if that should occur.
