My second batch was horrible. I over-tinkered with it. It was a learning process,” said Adams. Mill Spring couple pleads guilty to tax fraud More than $3.5 million received by Leah Justice

A Mill Spring couple charged with tax refund conspiracy of more than $3.5 million in fraudulent tax returns pleaded guilty Monday, Oct. 29 in the U.S. Dis-

trict Court in Asheville, according to Anne M. Tompkins, U.S. Attorney for the Western District of North Carolina. Senita Birt Dill, 45, and Ronald Jeremy Knowles, 40, were charged with one count of false claims conspiracy, one count of access device fraud and one count

of aggravated identity theft, according to a press release submitted by the U.S. Attorney’s Office. According to the charging document, the plea agreement and statements made in court, from 2009 to 2012 the defendants

35 gallons of beer he has named ‘Pacolet Amber.’ “Pacolet Amber promises to be very good, and it was made with hops grown by Pete Viehman along the Pacolet River,” he said with a smile of satisfaction. Learning is in his DNA. The Lake Adger resident grew up in Asheville and attended UNC Chapel Hill. An English major, Adams took an elective course in human genetics. The professor said it was the craziest exam he had ever given. The highest score was a 97. The second highest score was a 43. Adams got the 97. His professor then steered him to the University of Michigan where Adams received his PhD in human genetics. While living near Washington, D.C. his wife inadvertently started Adams on a second ‘career,’ that of beer making. He joined BURP, Brewers United for Real Potables, now the largest beer club in America. There he refined his craft and was elected BURP’s Minister of Culture, a tongue-in-cheek yet prestigious club position. Adams recalled when he entered three brews in a Washington, D.C. show. The judges were torn between what they considered the top two of all entries in the show, a straight Lambic (a Belgium beer) and a Flanders Red. “They debated for a long time since winning Best of Show was a pretty big deal. Finally, they gave the blue ribbon to the Lambic and second place to the Flanders Red. The judges were pretty upset about the time spent in deciding who was the winning brewer when they found out that both beers were mine,” Adams said. In Polk County, Adams began to work at Rockhouse Vineyards in Green Creek and quickly became the assistant winemaker for owner Lee Griffin. “Almost anyone can make wine,” Adams said. “To make very good wine is a different

story. Lee is an excellent winemaker, and I think that my scientific background was useful at Rockhouse. Beer making is actually more difficult than winemaking. Because of the plethora of different ingredients and fine tuning of the mash, it takes long experimentation to come up with good beers.” Soon after returning to his roots, Adams was made assistant brewer at Wedge Brewing Company in Asheville. He now teaches at the University of South Carolina, Spartanburg where he has a three-hour class in beer making. In Asheville, he belongs to a beer club called MALT, Mountain Ale and Lager Tasters. “It’s popular,” he said with a twinkle. Adams is about to begin a local beer club called YEAST, Youthful and Elder Ale Sippers of Tryon. “Interest in home brewing is growing here. We’ll learn and have some fun,” he said. This club will welcome not only home brewers, but also those individuals who appreciate good beer. He had almost no tips for beer samplers who come to the Tryon Beer Fest. “Beer sampling is less ceremonial than wine tasting,” Adams said. “Your taste buds are all you need to tell you how much you like a given beer. Then pause for the aftertaste, important to those who like to savor the flavor.” Adams said there is no need to rinse the palette between samples, but some like to have a sip of water when trying many different brands. Adams looks for the Tryon Beer Fest to grow in stature over the years and has enjoyed being an advisor to and member of the committee. “A beer festival is somewhat like a rare car show. You get to be with the finest and best examples of the respective crafts. But when you find a Stutz Bearcat Touring Car that you like, you can’t go out the next day and get a six pack,” (Continued on page 6)

Today is November 1 – All Saints Day. All Saints Day tends to get lost in the hubbub of Halloween, which used to be known as All Hallows Eve when it was once believed that the boundary between heaven, earth, and hell was at its “thinnest” and ghoulies, ghosties, and long-leggedy beasties could cross from the netherworld of the dead to terrorize the living. However, we have gone the long way round from medieval farmers and villagers simply carving gourds with ugly faces to scare away potential demonic invasions to a full blown celebration of all things macabre. Recent news reports have said that Halloween is now one of the biggest adult holiday celebrations (which, by the way, is now the inaugural holiday for the Christmas season). How-

ever, All Saints Day was never intended to be a disappearing tag-on to a ghastly gathering of costumed hobgoblins. Around 800 AD Christians began to formally honor martyrs and those believers whose lives of faithfulness and service had become the stuff of storied example and tradition. Over time complex theologies of what constituted “saintliness” evolved, and are still defined and practiced among some Christian traditions to this day. In the Roman Catholic Church there are very clearly stated criteria by which a deceased member of the church may be declared a “saint.” Recently a Native American Mohawk woman named Kateri Tekakwitha, who was born in 1656, was canonized as a Roman Catholic Saint after having (Continued on page 11)

Millicent (Milly) King Chin Millicent (Milly) King Chin, 58, died peacefully at home Saturday, October 27, 2012. Milly was born in Burlington, N.C. on December 10, 1953 and was the daughter of the late John (Happy Jack) and Helen W. King. She is survived by her husband, Randall Chin of Campobello, S.C.; son, Miles Phillips of Charlotte, N.C., and brother, Steve King of Wilmington. She is also preceded in death by her brother, Jay King. She was the proud grandmother of grandson, Mason Phillips. Milly was raised and lived in the Winter Park area of Wilmington, N.C. and spent most of her

life in the area. She was a member of Wesley Memorial Methodist Church in Wilmington. Her love for the mountains and her son called her to Campobello, S.C., where she has resided for the last four years. She had a passion for horses and Harleys. She knew no strangers and was compassionate and loving to many. Her love to help others was indescribable. She had a true love for her husband, her dogs and Bill W. Her contagious smile and laugh will be missed by all. A celebration of her life will take place on November 10, 2012 at 4 p.m., Shelter No. 6 in Hugh Macrae Park, Wilmington, N.C. In case of inclement weather the service will be in the gym at Wesley Memorial United Methodist Church 1401 South College Rd., Wilmington, N.C. West led the Diamond Jack against 6 Spades. Declarer quickly noted that he had 3 possible losers in his hand which could be reduced to 2 since he had one discard available on dummy’s Diamond suit. After winning the opening lead in his hand declarer realized he needed to do some very good “guessing” in Clubs and Hearts to bring home his slam. On further review declarer saw that the spots in the Club suit made that suit a prime candidate for extra tricks. Based on the lie of the cards, and without the benefit of seeing the opponents holding in the Club suit, the obvious way to play the suit is fairly standard. Declarer leads twice toward the dummy, finessing for an honor each time. If the honors are split declarer gets 2 discards for his 2 Heart losers, while losing only 1 trick in the process. That’s a very good plan, but is there a better plan. Yes! On further reflection declarer realized that the impending Diamond dis-

card affords him an added option in how to play the Club suit. So after winning the opening lead declarer cashed 2 rounds of trumps ending in his hand and led the Queen on Clubs, expecting West to cover if he had the King. When he didn’t cover declarer placed the King in East’s hand and therefore won the Ace in dummy and proceeded to cash dummy’s Diamond suit and discard his remaining Club. He then played a Club from dummy and discarded one of his losing Hearts unless East played an honor in which case he would ruff. He would then reenter dummy with a trump and repeat the Club play discarding a Heart. It made no difference if East covered or not since the 4th Club in dummy would provide for a 2nd Heart discard. Note that declarer’s line of play works except when West has the KJx(x) of Clubs and is “brilliant” enough to not cover the Queen. If that happens to you, ask West to be your partner the next time you play.

Parkinson’s Disease is one of the conditions known as a movement disorder. To inform the community about this disease, Jamie Cehlar, DPT, physical therapist with St. Luke’s Outpatient Rehabilitation Center will present a talk – Parkinson’s disease and the role of physical therapy on Tuesday, Nov. 6 from 3-4 p.m. in the St. Luke’s

This year’s Tryon Arts and Crafts School Fall Festival was a good mix of craftspeople, children’s activities, local food and community participants that attracted hundreds of visitors to the Harmon Field location on a beautiful fall weekend. The festival tradition, now in its fifth year, that took place Oct. 13-14 has always been a major fundraiser for the school. The artisan’s booths were judged as to their marketability, and presentation of wares. First place was awarded to Charyl Stone and her display of ceramics amongst vivid fall décor. Second place went to Jim Warren and his wrought iron display. Third place went to “Bowled Concepts” by Brian Shope, who had a bold display of turned wooden bowls. Each year Tryon Arts and Crafts School features the work of more than 35 artists from local and neighboring areas as well as its own craftspeople such as weavers, potters and blacksmiths who demonstrate and sell their wares during the festival.
