When Tom Hill heard that Zionsville Pizza Delivery was up for sale 11 years ago, his interest was immediately piqued.

“My husband had read in the paper that Warren had passed away and the business was for sale, and we were all joking around that we could buy it and run it as a family,” Kogan recalls. “A few weeks later we were all sitting around and my dad said, ‘Well, I bought that pizzeria.’ So here we are.”

Hill himself had never been too much of a pizza fan, but his daughter Leighann Kogan and her husband Brad brought him some slices from the establishment, and he admitted it wasn’t half bad. So as the opportunity came in 2007 to buy the pizzeria when its previous owner Warren Smith passed away after more than 20-plus years in business, Hill and his wife Sherry took the plunge. As co-owners they brought Kogan on as manager and eventually expanded the pizza-only menu to include salads, pasta, oven-baked subs and wraps and a beer and wine selection that

Under a new moniker and armed with a diversified menu, Zionsville Pizzeria has steadily grown its customer base for the past 11 years on South Main Street, and Kogan credits her family’s focus on quality and freshness for their success so far. “We’re not a five-minute pizza place,” she says. “It’s all cooked to order from scratch, so there’s nothing sitting out on a rack. Everything’s fresh and no vegetable comes

out of a can. Good pizza takes a little time, but the customers tend to realize and appreciate that.” The Hills and Kogan make all of their own sauces, oils and dough in-house and cook up their sausage and meatballs fresh daily. “We still have regulars from when Warren Smith had the business — we have great, loyal customers,” says Kogan, adding that she’s a sixth-generation Zionsvillian on her mother’s side and that Tom grew up here as well. “We try to keep those people happy, and we kept some of the previous owner’s recipes like his sausage and sauces. He didn’t do his own dough, so that’s something that we started doing.” Zionsville Pizzeria also offers appetizers like wings, toasted ravioli and baked goat cheese and gluten-free pizza options are available.

Kogan says her menu’s Recommended Pizzas tend to be faves among local patrons, including the Deluxe, which comes loaded with sweet Chicago sausage, pepperoni, black olives, roma tomatoes, banana peppers and onions, as well as the White Pizza, complete with mozzarella, spinach, fresh basil, roasted garlic, tomatoes and no sauce. Lunch and dinner buffet specials are regularly offered. “We also have these really good sweet and spicy peppers, and we do a Sweet and Spicy pizza with barbecue, pepperoni, sausage and the peppers,” Kogan adds. “Everybody seems to like those.” The family strives to stay connected to its native Zionsville beyond offering a brick-and-mortar restaurant and delivery for a product they believe in. Zionsville Pizzeria has participated in the Taste of Zionsville, the Zionsville Fire Department’s annual Memorial Golf Outing and the annual Tri Kappa Santa Breakfast, which benefits local not-forprofit organizations and schools through grants and scholarships. “We try and do as much as we can,” Kogan says of the business’s communityoriented endeavors and philanthropic efforts. “Any time someone comes in and needs a fundraiser gift certificate I’m always happy to do something like that and help out. For the past couple of years when the town does the Creekfest we’ve donated pizza to the volunteers who help pick up the creek and beautify the town.” When asked what she thinks makes her pizza stand out from the competition, Kogan’s reply is simple. “I eat it every day,” she says with a chuckle. “It’s just good pizza. As we head into cold and flu season, it’s wise to think about air purification, especially since according to the state health department, 195 Hoosiers died from influenza last year. Pure Air Environmental is an authorized distributor of the Puradigm Air Purification and Surface Decontamination system, which eliminates 99.9 percent of bacteria through the air and indoor surfaces. This includes removing any single-cell bacteria such as staph, MRSA, listeria, salmonella, C. Diff, influenza, common cold and many other harmful pathogens. “This technology really applies to everyone. If you’re breathing, you will benefit from Puradigm,” says Pure Air Marketing Director Jon Hartley. Old-school technology was extremely passive, allowing air to simply pass through your ventilation system while UV light attempted to remove mold and allergens in the ducts only. It really did very little to improve the overall indoor air environment. Hartley describes the Puradigm system as an aggressive, proactive push technology. “It’s advanced now to the point where it’s proactively pushing two million highenergy ion clusters out into your physical environment which destroy impurities and pathogens in 1/76th of a second in the air and on surfaces,” Hartley says. “That’s why it’s so effective and protective.” Not only does the Puradigm air system remove bacteria, but it also has been clinically proven to remove 99.9 percent of mold and volatile organic compounds (VOC’s) that are off-gassing from new

building products such as glues, adhesives, formaldehyde and even the plastics and materials that are in building products themselves. VOC’s are a concern as the vast majority have been linked to carcinogens. Pure Air Environmental, a small familyowned business, began five years ago as a radon mitigation company. “Indiana has a great deal of radon gas due to our soil material,” Hartley says. “What’s in our substrate beneath our homes gets up into them and it can’t escape because we’ve built our homes so airtight.” Ventilating radio-active gas from homes is crucial as statistically 21,000 Americans die each year due to long-term radon gas exposure. Protection is as easy as installing a radon mitigation system to safely vent the gas to the exterior. The EPA recommends testing your home every two years as radon gas levels fluctuate due to environmental factors. Pure Air Environmental also cleans air ducts and offers mold remediation services to remove black toxic molds and the toxins they’re off-gassing. You may not think much about indoor air quality, but Hartley says people really should. The EPA recently released a study that showed that poor indoor air quality can reduce one’s life expectancy by 5-7 years. Hartley also cites another study that identifies indoor air quality as the number one threat to our

children’s generation in the coming years. That’s due, in large part, to the fact that society functions differently nowadays. “Generations ago, people used to open their windows and let their homes breathe,” Hartley says. “Now the thought is on energy efficiency and we seal them up tight. Nobody opens their windows anymore. As a result, they’re not getting that fresh air exchange and building those immunities to bacteria by being exposed to natural environments.” It can be hard to convince people of the dangers of poor air quality because it’s not a tangible problem in front of them. It often times does not alert any of your five senses. orkopolis, 9892 N. Michigan Road, is a full-service barbecue restaurant that has recently opened its doors to a large group of barbecue enthusiasts. Co-Owner Kim Hart says the Porkopolis chain started when several different elements came together at the same time. “You could say the stars all aligned, or maybe ‘pigs really do fly,’” Hart says. “Here's the groundwork in case people didn’t know. (Porkopolis Franchise Co-Owner) Matt Hamilton, and his friend Brady Bogen, owner of Brady’s Sauce, were born in Ohio. In the early 1800s, Peter Bogen, (Brady’s grandfather, of the now famous Brady Bogen lineage), moved his family to Ohio. In the spring of 1830, he opened a meat packing company in Cincinnati.” The business quickly became successful. “They became well-known for their hams

and other preserved meats,” Hart says. “The level of production exceeded that of many other packers of their time. When the area was the country's chief hog packing center and also about that time Cincinnati had become the country’s leading center for pork processing, it was Peter Bogen who is recognized for coining the nickname for Cincinnati as ‘Porkopolis.’” Many years later, Brady Bogen started “Brady’s Sauce,” which is “a combination of Midwestern roots and more than 20 years of living in the Southwest.” Brady’s Sauce is a combination of “the sweetest and most sultry taste around.” It is exclusively served at Porkopolis restaurants, including the newest location right between Zionsville and Carmel. Hart says that a barbecue’s sauce and spice are the cornerstones for the beginnings of a great barbecue experience.

“The sauce and spice were developed first, and Matt Hamilton, also known as ‘Hammy’, used the sauce and spice rub as the basis for everything on the Porkopolis menu,” Hart says. “Hamilton operated many different bars and restaurants throughout the U.S. before landing in Phoenix, Arizona 16 years ago.” Hart adds that Porkopolis was started with the idea that barbecue means lots of different things to different people. “For most people, having a barbecue meant that you would fire up the Weber Grill in the yard and cook burgers, dogs or steaks and chicken,” Hart says. “That is unless you grew up in the Southeast, or Texas or Kansas City. What better way to signify the evolution of a modern-day barbecue restaurant than to recognize the evolution of the pork industry itself? So, ‘Porkopolis’ was born.” Porkopolis also has restaurants in Chandler, Arizona and Scottsdale, Arizona.

Hart stressed that “whether you enjoy great smoked meats, fresh grilled seafood with Porkopolis’s signature sauce, or a handtossed salad, we think Porkopolis will evolve into something delicious.”

Hart has been pleased with the positive reception the new restaurant has received from both Hamilton, Boone and Marion counties.

Hart noted that the most popular items on the Porkopolis menu are the Pulled Pork, Two Meat Platters, Porkopolis Quesadilla, Smoked Chicken Wings, Burnt Ends and Fried Pickles.

“They have been very welcoming,” she says. Hart, who co-owns the Porkopolis franchise with her husband, Gavin, and Matt Hamilton, has a long history in the restaurant business. “We used to be Dunkin Donuts

o owner Doug Pendleton, Grapevine Cottage is more than just a wine retailer. It’s a one-stop resource for those who not only want to pick up their favorite wine selections on a regular basis but also want a social, customeroriented wine shopping experience. Since opening the first of his two Grapevine Cottage locations in Zionsville in August of 1999, Pendleton has slowly built a solid customer base through what he says is a balance of variety, good service and sensible pricing. More than 1,000 bottles line his shelves, all of which are rated at 85 points or higher out of 100 by Wine Spectator, Wine Enthusiast and Wine Advocate (typical wine rating systems are based on a 100-point scale). “We feel like we curate the store, and I think that's what makes us unique,” Pendleton says. “Nothing goes on the shelf that we haven't tasted. What drives our business is people who drink wine on a daily basis and have it with dinner. Next to Broadway or New York City restaurants, wine is probably the most reviewed product on earth, and we spend a lot of time using the ratings to help choose wine." In 2011 the Pendletons opened a second location in Fishers, and their staff of 22, many of whom Doug says are retirees who work part-time due to a true passion for wine, seek to engage each and every customer in conversation to find the best taste fit. “I like to think we’re in the business primarily of selling wine to people who actually drink it,” says Pendleton, who worked in the clothing retail business from 1972 until 1998 when he decided to open his Zionsville establishment with help from his wife Linda. “In other words, we’re not what you would call a collector’s store.” To that end, Grapevine Cottage offers a few unique services including a Wine of the Month Club, through which members pay a fee and get two wines - typically a red and a white - every month, taste-tested by Pendleton. The Wine Guy, as Pendleton has come to refer to himself over the years, also publishes a weekly email newsletter featuring news articles on wine, restaurant and wine reviews, recipes and more, which now reaches approximately 7,000 people.

“The newsletter has really helped to drive the business,” Pendleton says, adding that he’s now put out more than 950 weekly issues. “There's a little bit of pressure there to keep putting good information out consistently that people will respond to, but it’s worth it.” Carlene Clark, manager of the Fishers location, says her store has attracted an increasing percentage of the younger Northside Indy population since relocating to East 116th Street from 96th Street two years ago.

“A lot of people need advice when they’re about to go to a party or something, and they don’t know where to begin,” says Clark, who began working for Grapevine Cottage back in 2005. “It’s fun helping people and a lot of times what’s featured in our Wine of the Month ends up being a big seller that month.” Pendleton also offers plenty of cheeses, pasta, charcuterie, cookbooks and wine accessories at both of his establishments, and the store offers delivery for gift baskets that do not include wine. When asked about his own wine preferences, Pendleton laughingly says that Linda accuses him of “liking everything.”

“If there is a category I like most, red wines from the Rhône Valley in France are probably it,” he adds. “When I go to the cellar for something to pair with dinner, it seems like two or three times out of five I come up with something from the Rhone because it pairs so well with food.” Pendleton has no plans to open additional stores currently, and says he simply appreciates the chance to run an independent business for nearly 20 years that sells a product that he is genuinely passionate about. “We try to find the best possible values, and, in this day and age, that means finding excellent wines under $20,” he says. "We don't focus on having every possible brand. “When the Eagle Creek Coffee Company closed after more than 10 years in business, there was not a coffee shop in the area,” he says. “We were looking to move into the new development in the south village at that time anyway and realized we could pair coffee with a dessert bar that would have something for everyone.”

Opened in September 2014 by Victor and Mica Gosnell as a sidearm of the couple’s Confectioneiress enterprise, Bites offers a full coffee and espresso bar along with a wide variety of signature treats that are sure to satisfy any sweet tooth. Victor says Bites was a natural expansion of the existing

at the time, began selling cupcakes on the weekend. When they proved to be a big enough hit, she began taking special orders and creating custom cakes for weddings and other events. Victor said Mica would start baking from the moment she got home on Thursday night and often stayed up through Friday in order to prepare for the weekend rush. After two years of burning the candle at both ends, the couple decided to go into the confectionary business full time and brought on a partner who believed in the Gosnell’s and was willing to make an investment.

Seven years later, the company is still going strong and over the past four years, Bites by Confectioneiress has also proven to be a big hit with the Zionsville community. Customers looking for their morning cup of Julian Coffee or a place to hang out and grab an afternoon snack rave about the affordable prices, friendly employees and cool atmosphere that Bites provides. “We spent about a year deciding how we were going to plan and execute Bites,” Victor says. “I had a background in retail management, most recently in the pet industry, so I had to educate myself in the coffee business, but so far it has worked out really well.” Victor says some of the most popular items on the menu include their chocolate chip cookie dough shooters and cupcakes, gluten-free oatmeal cream pies, confetti cake pops and homemade pop tarts, but they also serve breakfast scrambles, yogurt, fruit and tea for those who prefer something other than coffee and confectionaries.

“I have always tried to make people happy, and what better way to do that than to give someone a gift?” she says. Klain chose Carmel’s WestClay neighborhood to open her basket business, partly because she and her family live in Carmel. The Carmel neighborhood is home to several other locally-owned businesses. “We decided that this area would be the perfect place for a specialty boutique like this because kids could ride their bikes here for treats, and adults would have a fast and convenient place to shop for gifts for all occasions,” she says. The brick-and-mortar store is located in Carmel, but Basket Pizzazz delivers all over Indianapolis, as well as the United States and overseas. Klain says that she makes baskets for many people every day, including corporate customers who send gift baskets all year long for new hires, new

babies, retirements and thank-you gifts to employees and clients.

In fact, one of Bols’ favorite events in recent months incorporated Balinese recipes. But while Bols has traveled to many countries around the globe and draws inspiration from a variety of cultures, she says most of her dishes are influenced by the culture in European countries, where fresh ingredients are considered very important.
