TransiTioning from WinTer To spring... one delicious bite at a time

Budding trees, vibrant tulips and a riot of birdsong are all telltale signs spring has arrived. And, of course, sightings of asparagus, the transition of seasons’ first locally harvested vegetable. The recipe that follows will impress friends and family alike. If you prefer, you can fast track this dish using store-bought crepes and packaged hollandaise sauce (available in supermarket bakery and spice aisle, respectively.)

Asparagus & Ham Crepes with Hollandaise Gratin (makes 12) Crepe batter 1 cup all-purpose flour ½ teaspoon kosher salt ¼ teaspoon cracked black pepper Pinch cayenne 3 large eggs 1 ¼ cups whole (3.25%MF) milk • Whisk together flour, salt, pepper and cayenne. Set aside. • Whisk together eggs and milk until combined, then gradually whisk in flour mixture until smooth, cover, and let batter rest for 30 minutes at room temperature. • Set an 8-inch crepe pan or non-stick skillet over medium heat, coat lightly with vegetable spray, then pour in a scant ¼-cup batter, swirling pan to coat, and cook until crepe is no longer glossy, about 1 minute, flip, and cook 30 seconds more before transferring to a plate. Repeat process with remaining batter to make 12 crepes.

Filling 48 thin spears asparagus 12 slices honey ham 1 cup homemade hollandaise sauce (or, alternatively, prepare a packet of Knorr or McCormick hollandaise powder) 1 tablespoon lemon zest ¼ cup coarsely grated Parmesan Reggiano cheese

Hollandaise 5 egg yolks 1 cup warm clarified butter 2 tablespoons lemon juice kosher salt and freshly cracked pepper

• Put yolks in a metal bowl set over a pot half full of simmering water and whisk until thickened, about 3 minutes, moving bowl on and off heat to ensure yolks do not cook. • Remove bowl from heat and whisk in butter a few drops at a time to ensure sauce doesn’t separate, then whisk in lemon juice and season to taste with salt and pepper. Keep sauce warm until ready to serve. Use within 1 hour.

To assemble: • Blanch asparagus in a large pot of boiling, salted water for 1 minute, then transfer to a bowl of ice water and let rest 1 minute. Transfer asparagus to a plate and gently pat dry. Set aside. • Lay crepes flat on work surface, place a slice of prosciutto horizontally at bottom end of each crepe and fold in sides creating a ½-inch wide seam, lay 4 spears of asparagus horizontally on top of ham (two facing out from each end of crepe seam) and roll up gently but tightly and place seam side down in a greased 9-x13-inch baking dish, spoon Hollandaise over top and sprinkle with cheese. • Set dish on centre rack of preheated 350°F and bake until thoroughly heated, then set oven to broil and broil until golden on top, about 2 minutes more.
