GETTING THERE Hop off the Tube at Covent Garden and walk round the Opera House to Russell Street.
1 tsp bicarbonate of soda; 2 tbsp boiling water; 1 tsp cinnamon or ground ginger (optional). The work: Mix the oats, flour, coconut, brown sugar and spice, if using, together. Melt the butter and syrup together in a pan. Mix the baking soda with the boiling
water and add to the syrup and butter mixture. Make a well with the dry ingredients and pour the syrup mixture into it, then mix together. Drop dessertspoons of the mixture on a baking tray. Bake in a 160˚C oven for 15 mins until golden.
