In this issue, jump, leap, fly, dive, swim, climb - anything and everything with us. Unleash that wild side of yours with adventure fun and thrills all over Asia. From power surfing at the coast of Margaret River in Perth, Australia, to bird-nest caving at Palawan, Philippines, there is enough sunshine to get the freespirited going, and plenty of seclusion to entice the seekers.

EVENT FILM ON THE ROCKS An immersive annual showcase and dialogue for art and film is set to take place at the Six Senses Yao Noi, Beyond Phuket from December 16 to 20, 2011. Film on the Rocks will be a 4 days and 3 nights of film showcase, local activities and conversation. Dictated by nature, the screenings will be informed by the tides, the activities will embrace Yao Noi and her neighbouring islands, whilst conversation will stem from interaction with locals. HK Trails Andy Hayes I know it sounds crazy, but the bustling metropolis of Hong Kong is actually a great backdrop for hiking. Hong Kong Island has lots of hills and trails, and if you’re ready to walk off last night’s round of drinks and dim sum, then check out any of these excellent hiking trails.

Wisdom Path. This is one of my personal favorites. It’s a trail on Lantau Island (so not technically on HK Island, but close enough), which starts just behind the Big Buddha. Look for the signs as the trail is right there but easy to overlook. It’s about a 10 minute walk along a quiet trail before you reach the Wisdom Path, which is a circle of 38 wooden timbers with Chinese sayings carved in them, and of course some excellent views. The path, which is part of the 70km Lantau Trail, goes on from there.

Hong Kong Trail. Another fantastic trail is simply dubbed the Hong Kong Trail. It’s one of the city’s major routes, so it’s well marked. That’s a good thing because the trail winds around a 50km stretch of land, starting up on Victoria Peak and ending in Big Wave Bay. You start with great city views, with some parts of the trails right on the cliff – not for those with a fear of heights! As you go you’ll run into scenic rivers and reservoirs, and near the end the views of hidden beaches and coastal shores is unbeatable.

Dragon’s Back. Time Asia called the Dragon’s Back the best urban walking trail in Asia. This 5km trail runs from the edges of Hong Kong itself to a great island hang out, Shek O. The trail is named after the ridge that you cross midway, inside Shek O Country Park. From here you get fantastic views of Stanley Peninsula, Clear Water Bay Peninsula, and the sea. Shek O is also a great place to hang out – try one of the fresh seafood restaurants after you walk, where you can eat outside and soak up the fresh sea air.

Violet Hill Path. Another calm and relaxing walk is along the Violet Hill Path. It starts at the Wong Nai Chung reservoir and then heads around Violet Hill itself. The views just never stop – Brick Hill, Deep Water Bay, and Wong Chuck Hang, and Repulse Bay, just to name a few. It’s a bit of a rocky path, so while it’s not terribly difficult, you do need to watch your footing. The trail ends at Tai Tam Tuk Reservoir, and you’ll know you are close when you start to see all those beautiful streams and creeks. The entire route is approximately 7km.

Eastern Nature Trail. This 9km trail is great not only for the scenery but for a bit of nature and historical sightseeing too. Be sure to note the signs along the way explaining flora and fauna that you’ll encounter. Heading out of Quarry Bay, the route heads up into the Quarry Bay Complex. The red brick building here is a former sugar factory that has been renovated into a nature center. If you head down along the Quarry Bay Tree Walk you’ll find some large outdoor stoves that were built during WWII. You’ll also find Sir Cecil’s Ride nearby, where Japanese invaders once landed. The route carries on through Tai Tam Country Park to the Tai Tam reservoir.

Lung Fu Shan Fitness Trail. Warning: Only those who want to get fit need to hit this trail, the last of our six recommendations. It is only 1km long, which may seem an unlikely candidate for a fitness regime, but in fact there are twelve fitness stations along the way to make sure you get a full body workout. There are great views, naturally, as you head up from the gorgeous gardens of Pinewood Battery and head straight up. The Hong Kong Medical Association actually helped contribute to the signage and layout of this path, so it’s definitely a great choice for a hangover cure or to work up an appetite for lunch.

Shark Bay On the other side of Perth is the Kalbarri National Park, located on the lower reaches of the Murchison River. The park is filled with magnificent gorges, rolling sand plains and dramatic sea cliffs. This area encompasses Shark Bay, a UNESCO World Heritage Site filled with natural attractions and travel highlights.

Visit Shell Beach, a long stretch of snowwhite beach popular for swimming, beach combing and relaxing in the sunshine. The aptly named attraction is formed from millions of shells, a truly unique destination. Over the years, the shells have been used to construct a number of historic buildings in the nearby town of Denham, which is located deep in the heart of Shark Bay and provides a springboard to various nearby attractions.

Another such attraction is Monkey Mia, one of Australia’s most talked-about destinations where wild bottlenose dolphins swim around your legs just off the beach. Monkey Mia’s beautiful beaches complement the warm sea, superb fishing and fascinating wildlife. The Hamelin Pool is another local wonder. He gestures back to me in some sort of a climbing motion and lifts his eyebrow, as if he wanted to know if I was willing to enter the cave first. I shook my head no. At that point, the last thing I wanted to do was to scale down some thirty odd meters through jagged razor-sharp rock on a tropical island in the Philippines to collect a nest made from the regurgitated saliva of a bird the size of my hand.

We had been climbing straight up the side of a mountain for what felt like hours, breaking only for the crew to take a few quick drags off of their menthol cigarettes. I was exhausted and a little scared. The cave wasn’t like anything I’d ever seen and I wasn’t about to go climbing down into it in a hurry. To Sonny, though, this was an everyday occurrence - this was his livelihood. Collecting the fabled main ingredients for a Chinese delicacy called Bird’s Nest Soup was how Sonny had supported his family for thirty years; his sons will continue to support their families for generations to come.

One can argue the environmental repercussions of collecting bird’s nests: the pros, the cons, and the impact it plays on the population of the Swiftlets, the small birds that fastidiously create these nests. But Sonny collects the nests with extreme care, describing the meticulous process of pulling down nests which have been recently abandoned by their architects, noting that if he were to take actively occupied nests, the birds would no longer return to the only cave his family owns. If the birds were to stop returning to the cave to nest, it would bring an end to his main source of income. This thought, along with a myriad of others, races through my mind after having already spent the past three hours climbing vertical limestone karst cliffs with my guides for the day, Sonny, Winnie and Nico. As I stood high upon a cliff overlooking the Bacuit Archipelago, I could not help but reflect upon the whirlwind day and incredible two weeks that I had just spent in Palawan.

Palawan sits in the Southwestern region of the Philippines, nestled between the Sulu Sea to the East and the South China Sea to the west. Palawan is not only the name of the province itself, but also the name of the nearly 450 kilometer long spine shaped island that is comprised of roughly 1,700 tiny islands sprinkled along its coast line. It harbors virgin forests, abundant waterfalls, and untouched mountains enshrouded with lush jungles, but its sugar-white sand beaches are what Palawan is best known for. In fact, many people believe that the mystery and beauty of Palawan’s untouched beaches provided the inspiration behind Alex Garland’s novel The Beach. Palawan’s beaches are just one of the many attractions that have drawn me to this island archipelago. My journey had begun two weeks earlier in the town of Coron as I stepped aboard The Aurora. I had booked a five-day island-hopping trip with Tao Philippines, a tourist orginaziation that promises that their voyages are anything but the normal island excursions that other tourist companies offer elsewhere in the islands. “We’re not looking for travelers who want to sit under a cabana and drink cocktails,” Jack, one of the founders of Tao, tells me while on the deck of the Auroroa. “We’re looking for explorers that are interested in no two trips being the same and individuals who know that what you get out of this next five days is going to depend on what you put into it.”

I was intrigued, a wee-bit hesitant, but more than anything I was anxious to start this pilgrimage onto a vast sea of untouched, vacant-slices of paradise which had been beckoning me since I first saw images of them in a travel magazine years before. I wanted to experience beaches with blindingly white sand embraced in the footsteps of monstrous cliffs that jut from the sea, and a landscape that looks more like something you would see on a Hollywood sound stage than a place where one can venture to on their own. Within the first three hours of our journey, I found myself snorkeling through the East Tangat Gunboat, a small Japanese gunboat used for sinking submarines in its heyday and one of twenty four ships sunk by an American fleet on a fateful September day during World War II in 1944.

As I dove down to view the ship, I was confronted with a surreal calmness under the water, where marine life had taken over the skeleton of what once was a powerful war machine. Sea anemones clung to the rusty skeleton of the gunboat, while clown fish tucked their heads in and out of their host’s tentacles to seek protection and shelter. As I surfaced, I paused to watch the actions of two other divers free-diving around the ship’s hull, their movements were easily visible through the clear aquamarine waters as they dove back and forth and up and down, with a grace that is almost as natural as the sea creatures that we are swimming with. It’s moments like these that remind me that these are the types of adventures that we dream of experiencing when we set off into the unknown.

The next day, as one of The Aurora’s deckhands was using his machete to cut off the top of a fresh coconut, the calmness of the air was disturbed with yells further down the beach. “Turtle... Turtle,” hollered someone faintly. We rushed down the beach just in time to see a large female Green Sea turtle slowly moving back into the sea. She had just finished laying around 200 ping-pong shaped eggs, which will hatch after two months of hibernation and begin their own journey of life into the sea.

As our seafaring trek continued on, days began to blend together and postcard perfect beaches start to blend into one another. Dozing off countless times under the hot Philippine sun, I would often wake up to the smell of freshly cut ginger and garlic simmering along with the catch of the day. The sea was calm and the journey from Coron southward to El Nido and Bacuit Bay was euphoric. I spent my days exploring hidden coves, snorkeling, kayaking and going on long walks along the beaches. I felt as if I was a character in a fantasy novel. I was living a life on an exotic island that could have only been penned by an author in a far off dreary cold room. Only a person such as this could dream up a tropical fairyland like Palawan. Its physical beauty is unlike that of any place that I have ever seen, unspoiled, inspiring and daring you to come along and explore it.

“Here they are... this is five nest,” Sonny said, as he lightly jabbed me on the side, awakening me from my daydream. I looked down at the tiny white nests, smiled and nodded at Sonny and looked back to the sea. As I sat and stared out over the beautiful islands of Bacuit Bay, I was trying to determine if what I had seen and experiences had been real, or just a fairytale? It’s hard to believe that a place as beautiful as Palawan can exist.

ISLE IN THE STRAIT Carrie Kellenberger takes a short On a day of gusty wind and white-capped trip to one of Taiwan’s most popular waves, we set out for the northern islands weekend destination, the Pescadores of the Pescadores archipelago on a large high-speed boat. Within thirty minutes, the boat has docked at Jibei Island and we’ve found scooters to rent for the day. With map in hand, we navigate off the paved roads and find ourselves following a narrow scorched and sun-baked trail down to the water.

Every twist and turn reveals a stunning landscape of white coral and golden sand beaches. Other than the colorful sails of a few windsurfers on the horizon, the beaches are empty.

The Pescadores, an island archipelago of approximately 90 islands situated in the Taiwan Strait between Taiwan and Mainland China, attract thousands of visitors throughout the year. Discovered by Portuguese explorers in the 16th century and christened with the name Pescadores, which means “Islands of Fishermen”, these islands are collectively known in Taiwan as Penghu. Panoramic views, spotless sand and coral beaches, adventure sports, colorful temples and sumptuous seafood dishes are just a few of the things that guests enjoy when they visit. Despite all of this, very few international travelers know about the Pescadores. Instead, hot summer days draw ardent island travelers from Taiwan that flock to the islands to relax.

Full island tours leave early in the morning and the boats make stops at each main island, allowing guests a set amount of time to get off and explore the islands in their own way. Visitors also have the option of arranging overnight accommodations on each island and arranging alternate transportation back to Makung. My husband and I often visit these islands because of its proximity to Taiwan and the ease of getting here. Flights from Taipei and Kaohsiung leave daily during the peak months of April through October, but we prefer taking the ferry as it’s less expensive and there’s more to see. The journey takes about four hours from the mainland to Makung Port on Huxi Island. As the only city in these islands, Makung City is brimming with welcoming smiles and small-town charm. Visitors are drawn to Makung as a jumping off point to the islands where ferries and fishing excursions can be booked on a daily basis.

Makung has no shortage of activities on offer, and many visitors describe it as being as pretty as a picture postcard with old buildings flaunting beautiful sandstone patterns, narrow cobblestone alleys and temples tucked away in the most unexpected places. Traveling throughout the islands, it’s impossible not to notice the giant three- to five- story temples that dominate the flat landscape of these islands. The temples, decorated with legendary scenes and characters from Taiwanese legends and folk tales and filled with the heavy and pungent aroma of burning incense, are important centers of worship throughout Taiwan.

From Makung Port, we go directly for our hotel to drop our bags off and then we head back to the port to rent scooters. A short time later, we are on our way to the end of the peninsula to view a famous blowhole near the ancient village of Fenggui. On the way, we see farmers transporting their produce on carts pulled by oxen and pass by acres of cactus, a plant that grows abundantly on all of the islands. The succulent plant, which was brought to the islands by the Dutch from Mexico and West India, is used locally to produce cactus juice and cactus ice cream. There are plenty of pagodas built along the roadways, offering shade and a brief respite from the hot, bright sun.

Eventually we reach Fenggui, a tiny village that you could pass by in the blink of eye if not for the massive temple complex on the outskirts of town. Just a short distance from there, we find what we are looking for, a rocky piece of land that juts out into the deep blue waters. This piece of land attracts thousands of visitors each year, who come to walk out on a jumble of black columnar basalt and blowholes to listen for fairies. Stepping precariously out onto the rocky surface, we listen closely, and as the waters recede from the blowholes and suck air down through them, a high-pitched whistling fills our ears. Fenggui, having been named after a type of Chinese wind instrument, is like nature’s very own symphony orchestra.

Stone Trap Fishing After our visit to Fenggui, we head back to Makung City to embark on a deep-sea night adventure. The blue waters of these islands are home to a diverse variety of marine life, including coral, colorful tropical fish, green sea turtles and migrating dolphins, and we are eager to see if we can catch a glimpse of a dolphin pod in the light of the setting sun. We don’t find any dolphins, but the captain takes us on a gorgeous cruise past Tongpan Island’s basalt rock formations, a 30-foot wall of solid rock created millions of years ago from volcanic eruptions. We drop anchor a short distance away from Tongpan Island, ice-cold beers are handed around, and we settle down for some night fishing. In Penghu, dusk is the best time to catch squid and we are hoping we will catch enough for our dinner this evening. About an hour later, I nab my first squid, but it’s our only catch of the night. Luckily, the crewmembers are happy to share their catch of the day, and we enjoy an excellent seafood barbeque and some karaoke under the stars before heading back to Makung Harbor.

It should come as no surprise that one of the biggest draw cards in Penghu is its fishing industry. The natural harbors and oceanic life of these islands have been drawing fishermen and nature lovers for centuries. As such, visitors can try their hand at pretty much every type of fishing from deep-sea fishing and collecting oysters to night fishing for squid. The next morning we rise early to learn about the practice of stone-trip fishing. Local fishermen have used stone fishing traps for hundreds of years on these islands and they are still a primary means of fishing today. With over 570 basalt and coral weirs dotting the waters surrounding these islands, the weirs have become quite a tourist attraction in their own right.

This traditional fishing technique involves laying a net on the sea floor and piling stones around the edge of the net to keep it in place. This forms a trap which fish can easily swim into but can’t get out of. After fish have been trapped, the stones are moved aside and the net is raised up. Visitors help to remove the fish and then rebuild the trap for the next group to arrive. Stone weir fishing not only teaches visitors about the lifestyle of Penghu’s early settlers, but also teaches guests the fun that can come out of catching your own meal.

The Jewel of Taiwan Strait After our fishing lesson, we head to the Northern Sea Recreation Area for its numerous beaches and water sports. Adventure travelers come to Penghu for a range of activities that can be enjoyed throughout the year from snorkeling and scuba diving to windsailing, kite surfing, surfing, and water sports that include tubing and jet skiing. Jibei Island, one of the most popular destinations among the northern islands, is home to shimmering coral beaches and a stunning golden-sand beach that reaches thousands of meters into the sea off the island’s southern tip. Another popular northern island, Sianjiao, is mostly covered in sugary white sand beaches and ringed by submerged coral reefs that offer some of the best snorkeling in Taiwan. Go snorkeling here and enjoy the splendid sight of coral reefs and schools of colorful tropical fish at your fingertips.

We leave the last portion of our trip for the Southern Recreation Area, which is known for its beautiful basalt rock formations, geology parks, ecological conservation programs, and traditional Chinese homes and villages. Chimei Island, the southernmost island in the archipelago, is a popular stop with ferries leaving daily from the main island. Upon arrival, visitors can rent a scooter to explore the island, private tours can be arranged, and for those who like to hike, the island can be navigated in a leisurely day stroll. A trek around Chimei includes several spectacular stone formations, such as the Waiting Husband Rock, which resembles a woman reclining on her side. According to legend, a fisherman died at sea one day and his pregnant wife is said to have turned to stone while waiting for him to come home.

Visitors also enjoy looking at a sea-eroded platform called Little Taiwan, which looks remarkably like the shape of the island of Taiwan, and no stop to this island is complete without having your photo taken in front of Chimei’s famous Double-heart Stone Fish Trap, which can be spotted just off the northern shore. The boat to Wangan Island takes us along the coast of Chimei before arriving on this beautiful low-lying island with white sand beaches scattered along the coastline. Wangan is perhaps best known for Jhongshe Village, a historical site that is famous for its traditional hundred-yearold Fujian style laogu (coral limestone) houses. Beach activities are restricted here, especially between the months of May and July, because the natural beauty of this island attracts not only tourists, but also green sea turtles, which come here to lay their eggs during breeding season. The island was designated as a green sea turtle conservatory in 1994.

While the months of May through August are the most popular months to travel to Penghu, when the heat of summer is gone visitors can still enjoy a number of attractions throughout the year. In addition to its historical buildings, the Pescadores enjoy a reputation as one of the windiest sailing spots in the world. A growing number of windsurfers arrive here between the months of October and May in anticipation of high winds and pounding surf. Average daily wind speeds during this time of the year reach anywhere between 10 and 40 knots, with top wind speeds reaching 55 knots or more. The Penghu Pro-Am Windsurfing Festival is held here every November, and the event attracts windsurfing enthusiasts from all over the world.

The Pescadores are a beautiful vacation destination at any time of the year. As one of Taiwan’s most popular vacation spots, the Pescadores might be tiny, but they offer an array of culture, history and natural beauty that isn’t equaled anywhere else in the world. As the jewel of the Taiwan Strait, their dramatic beauty, ecological resources and laid back atmosphere are sure to delight visitors for years to come.

Your family have a long history in the culinary and hospitality industry. How has this influences and encouraged you in establishing Novus? We’ve had Alley and Acid for almost a decade now, and going back a little further we ran Rouge, Milieu and Papa Joe’s – popular clubs on Orchard Road through the years starting from the ‘80s. We love the business and I’ve been involved since young, so Novus and fine dining was a natural progression.

Law and F&B may be as divergent as chalck and cheese, but Ying Ong, director of Novus, has managed to make an admirable transition from the former to the latter with an unfailing determination and passion for the trade. The bubbly law graduate from Kings College London is the brain behind Novus, a modern European restaurant in the historic National Museum of Singapore. The ambient Novus includes the Cafe, where Ying’s own signature cakes are served, and the Courtyard, an alfresco space where guests can enjoy live jazz performances. Here she shares with us her thoughts and vision for the future.

This history of experience has helped tremendously because we keep growing and moving forward. I love to cook, and it’s a pastime I share with my family. This love for food fuels the passion that led to the conception of Novus. Our concepts often involve entertainment tying in with a piece of history and architecture – Alley Bar and Acid Bar are beautiful places largely because of the elegant arches and high ceilings found in pre-war shophouse architecture. Novus was a logical extension of the group. Novus being fine dining is a unique member in our family of establishments. We typically are fascinated with Peranakan/Asian influences, so Novus being Modern European cuisine and in the National Museum is something new for us.

What dining trends are you seeing in Singapore at the moment? The arrival of the new restaurants and big names at the integrated resort has definitely transformed the culinary scene in Singapore. These world-class brand names have upped the ante and also brought to our local palates much diversity and greater sophistication. Also, we’ve seen many boutique restaurants sprout up – smaller interesting concepts that have brought new lease of life to areas like Duxton, Dempsey and Bukit Pasoh to name a few. The influx of dining options for Singapore has brought much media attention to the establishments and this burgeoning industry is much alive and buzzing. Everyone has to raise their game, and for Novus it’s no different; we have to continually push for better standards of food and service to keep our guests impressed.

How do you think the dining scene varies from elsewhere in Asia? In Hong Kong for example, the scene is slightly more developed than Singapore’s due to the heavier colonial and expat influence, and its affiliation with Mainland China. However we’re fast catching up and it’s only a matter of time. I’m very excited with how we’ve been developing as an industry, and hopefully we can grow to be leaders in the region. One setback unfortunately, is the access other Asian countries have to fresh produce. Many of them grow their own greens or rear their own animals, and as a result of the extra care, the food really tastes different. Singapore just has to make do with imports.

What do you think makes Singapore such a great dining destination? Singapore is a melting pot – and even though we have a diversifying selection of world-class gourmet cuisine, in itself Singapore is already so diverse with race and culture. These go on to exert influence on the dining scene – traditional food is already very well done – and now they are evolving as well, taking them to the next level. So while we can enjoy food well done as it has always been, we can also look forward to new experiences.

What do the best restaurants need to do to stand out or get solid reputation in Singapore? I believe that service is of the utmost importance for every restaurant. At Novus, we believe in delivering quality service as well as educating our customers to enrich their dining experience. For instance, before each meal is served, we will present them a mini info card with details about the dish or ingredients. As long as the service is good, the people are personable, people will return for more. Of course the standard of food must be good as well. You started Novus Catering in the same year Novus Restaurant opened. What are your plans for the future? We’re still looking to improve and refine whatever we are already offering. Of course we are always looking at expansion and we constantly have many ideas buzzing in our heads. When the right opportunity comes along, we’ll be sure to let you know.

You have pioneered multiple restaurant concepts in Singapore. Why did you decide to do this in Singapore? Why not Hong Kong? Singapore is unique in its culinary scene. More than just a product of its cultural and economic wealth, the food that we have here bears testament to the infectious dynamism sparked off by a wide band of ethnicities.

Zealous and exuberant, Wolfgang Lapper has become one of the faces of Singapore’s trendy restaurateurs. His brainchild, the Esmirada Group, is a restaurant empire boasting tasteful food with authentic local twists, paired with uplifting ambiance and atmosphere in each of its establishment. You have worked at restaurants across Austria, Germany and Italy. What made you come to Asia in the first place, and what was your first reaction upon reaching the continent? Asia amazed me with its great number of world-renowned chefs and supportive food industry which comprised of established food writers, magazine editors and television personalities. The continent stands distinct from Europe with its plethora of not just restaurants serving indigenous and regional fare, but also those specialising in European and modern cuisine which champion new versions of local chefs. What transpires are chefs with strong Western culinary foundations who maximise their creativity to combine their skills with native food cultures and experiences. The Asian gastronomic scene is therefore burgeoning and offering a great number of opportunities to tap into.

This great balance of posh nosh and street food is very inspiring for me, because it often intertwines and has resulted in a nation of tastemakers spoilt for choice and constantly hungry for adventure and plain good food. This inspires me and my restaurants greatly and propels me to constantly strive for excellence. What dining trends are you seeing in Singapore at the moment? Being a geographical transit point, Singapore sees a good number of foreigners entering its shores. Many of these expatriates are keen on trying out local foods while also craving for their native foods. How has the food and dining scene changed in Singapore over the last five years? Not only has she been able to attract some of the biggest names in the culinary world, Singapore has also been increasingly recognised as a culinary hub and while pursuing a journey of innovation which skilfully combines modern interpretation while retaining its rich heritage. In the past five years, there has been an exponential increase in fine dining restaurants which have continued to attract global culinary talents. These talents are as keen in experiencing local foods as they are in combining this newfound experience to complement their wide experience with international cuisines. Enriched through the opening of the two integrated resorts, we have seen brand names such as Kunio Tokuoka, Guy Savoy and Mario Batali. What do you think makes Singapore such a great dining destination? With Singapore being a regional economic powerhouse with people from almost all cultures, the food available aptly reflects its diversity and drive for excellent quality independent of one’s budget - there are few other places in the world where you can feel equally satisfied regardless of whether you’ve spent $3 or $500 on your meal!

What do the best restaurants need to do to stand out or get solid reputation in Singapore? With so many good restaurants in Singapore, the best restaurants can distinguish themselves with three factors – uniqueness, constant innovation as well as top notch attention to service details. Uniqueness and constant innovation have always been key tenets in designing menus for the Esmirada group of restaurants because only with unique offerings that are refreshed from time to time and prepared with the finest ingredients that they can create a signature which would stand out from the crowd.

In addition, the strong economy means that the best restaurants will continue to see increased demand from the most discerning of dining guests ranging from international business travellers to the well-heeled. How do you find the trends in wine appreciation and fine dining in Singapore at the moment? Fine dining and good wines have always complemented each other when it comes to providing a holistic dining experience. With local tastes evolving to become more internationally cosmopolitan and complemented with increasing affluence, I would say Singaporeans are definitely becoming more and more acute with regards to their taste for wine, especially compared to a mere few years ago. How does Singapore compare with other markets in the world in regards to appreciation of wine? By its intrinsic nature, wine appreciation requires a global perspective and is always a continuous process. Because of the diversity of Singapore cuisine, there is a challenging yet rewarding market for wine appreciation. From Laksa to Chili Crab, matching any particular kind of food to an appropriate wine is a worthy challenge for even the most experienced sommeliers.

However, unlike other culinary hubs, Singaporean wine drinkers have shown that they are generally more conservative with the amount they are willing to spend on wines. This is nevertheless a good start and I believe that the trend towards finer wines will continue to improve over time. I love the crispyness and its full flavours, made perfect when combined with the sauce. Favorite Thing to Do Playing badminton with friends. Aston Bali Beach Resort & Spa has ushered in a new General Manager hailing from Australia. Mr Robert Hunter brings with him more than 21 years of experience in the international hospitality industry within New Zealand, Malaysia and Indonesia. Most recently, he was the General Manager of the Aston Marina Hotel and Residences in North Jakarta. Unearthing Asia caught up with Mr Hunter to talk about his new role in Bali.

How do you feel about Indonesia and how does it compare to other countries as a travel and tourism destination? Each country has it’s own beauty and plus points when it comes to holidays. Indonesia has a lot going for it. With so many different regions all with their own character and flavours, there is much to see and do here. People come for many reasons including the cultural exchange, beach, natural beauty and friendly people. Some our neighbouring countries are giving very special prices for holidays and so I hope we can retain the spirit of Bali and make sure people see the value though the experience and memories gained.

What travel and tourism trends are you seeing in Bali at the moment? With the Australian Dollar so high Aussies are spoilt for choice when they consider a holiday destination. Luckily, they have a strong attachment to Bali and so regulars and first time visitors continue to visit us. We should not take them for granted, though, as there is the growing concern for the pollution in our waterwaysand beaches, while traffic snarls spoil Bali’s reputation of being just like paradise. How do you feel Aston Bali comes in and fill these need/trends in Bali? Aston Bali is a well-established favourite for international visitors. Kuta may be famous for the lively environment found there, but people looking for some quality of life always love the peace and beauty of the Benoa Peninsula. With our private beach, gorgeous pool and healing Spa there is no need to leave, however a free shuttle service to Kuta operates daily if anyone needs a ‘touristic fix’.

How has the travel and tourism scene changed here over the last five years? In the past we all relied heavily on travel agents to help fill our properties. With the growth of Internet access and competency of users, many more people are now enjoying the freedom of booking online after exploring the options. Full use of websites, social networking and e-commerce is critical in today’s market. The domestic market is also catching up fast when it comes to online reservations. There have been huge increases in such bookings in the last 24 months. How do you think the travel and tourism scene varies from elsewhere in Asia? Many countries have beaches and scenery but Bali is attractive due to the spirit of the people here. The gentle culture and religious influence is very interesting to those caught up in the busy world and many comment how they leave refreshed and rejuvenated after a holiday here. The many wonderful spa treatments must also play their part!

What do you think makes Bali such a great travel destination? Bali has so much to see and do and there are friendly smiles to be found everywhere. Creative gifts abound and a variety of accommodation styles from budget to extreme luxury and from eco-friendly to happening party sites. What do you enjoy the most about Bali? One thing I do enjoy is watching the sunrise on Aston Bali’s private beach. It is a great time to gain perspective on life and be ready for whatever the day brings on. It is also wonderful to see the temples scattered all around. These simple shrines seem to be peacefully linking heaven and earth. What’s your favourite local food? What do you like about it so much? The Babi Guling is, of course, famous and can certainly be delicious. The pork is very tender and best eaten with your fingers!

What makes Aston Bali special? Aston Bali is well known on the Benoa Cape and throughout the Island. Daily I see our staff warmly greeting regular guests who visit yearly. It really looks like a family reunion time after time. This interaction really makes for a wonderful stay. We also have a rare opportunity to try to be in harmony with the spirit of this Island and with our local community. Our free walking tour each morning focuses on the nearby village with a glimpse into daily life. From the morning markets, houses of prayer, work and schooling, people are seeing the real world of Bali. Our Spa signature treatment uses coffee beans from the highlands of Bali. Wrapped in a banana leaf cocoon, the healing power is intensified. This also cannot be found elsewhere. And of course, sun rise on the beach each day.
