ven the most intrepid traveler could be overwhelmed by last year’s challenges. But lately, I am surprised when even my boldest and most well-traveled friends give a hopeless shrug and say: “Maybe I’ll wait,” when I ask what they have planned this year. For me the question isn’t where, it’s when. And the answer is now, definitely now! The truth is, this is a lovely time to travel. Yes, there is more research and planning, test results are as important as a passport, and it is imperative to know what needs to be presented upon arrival long before you leave. But once you arrive, you will find destinations are not only open, they are a bit more accessible, more gracious, and even more welcoming. In 2021, I traveled to Paris, Boston, New York, Chicago, Honolulu, New England, southern Spain, Morocco, and throughout northern Italy. It was wonderful! Most of these are favorite destinations and I found that each was quite different this time. There was a greater camaraderie among travelers and I found that accommodations, such as moving dining areas outside or restricting the number of people in a public space, created a unique opportunity to see familiar places from a new perspective. I also discovered that as a traveler returning to places I loved, I was different. The destinations were the same, but I cherished the experience more. Maybe I was “living in the moment” or maybe it was the joy of traveling after being denied the pleasure for so long. It felt like I took more time, moved a little slower, and saw things I never noticed before. Was it new or just a bit out of focus because I was moving too fast before? Our trip to Spain and Morocco included Barcelona, Mallorca, Málaga, Tétuan, Chefchaouen, and Marrakesh with two grandchildren in tow. I intended to open their eyes to some of my favorite places, but discovered that what I knew before was new to me (again). Read about our unique journey on page 34. In this issue, we will also take you through Italy — a destination that struggled through the pandemic, but is now open and ready to introduce (or reintroduce) you to its many charms. Spend 72 hours in Tokyo, London, and Washington, D.C. Explore the plant-forward movement embraced by top chefs who are thrilled to bring veggies to the center of the plate. Yes, there will surely be changes in requirements and you will need to keep proof of vaccination and recent test results handy, but like me, you will most find that people are helpful when you are working through paperwork. Now is the best time to get out there. Revisit a destination you love, take that dirt road instead of the highway, and choose the cobbled alleyway instead of the main street.

Yes, you really can hike to a remote mountain shelter in the Dolomites and find the kind of wine cellar usually associated with Michelin-starred restaurants. Below, find five of my favorite destinations in a country that spoils you for choice, together with a few suggestions for how to get the best out of them.

MILAN AND LAKE COMO

Italy’s fashion and design capital and one of the world’s most romantic lakes make a wonderful two-center tour. Do it in that order, tuning in to Milan’s urban energy before kicking back and enjoying a few days of glorious lakeside dolce far niente. Although it’s a great shopping destination and has one of Italy’s most vibrant eating and drinking scenes, Milan is also a city of culture. Book well in advance to experience Leonardo Da Vinci’s faded but spine-tingling Last Supper in the convent of Santa Maria delle Grazie, and don’t miss a visit to the Fondazione Prada art center in the southern suburbs, with its cool retro bar designed by the movie director, Wes Anderson.

ack when I was a 23-year-old English teacher in Rome, I would sometimes look up from my Vespa, on my way to a lesson, and think “Gosh, that’s the Colosseum.” Fast-forward a few years, I find my daughter attending a local middle school whose foundations were rooted in the Forum of the Emperor Trajan. Meanwhile, I have friends in Venice who live in an apartment block adorned by 18th-century frescoes. Italy currently has 58 UNESCO-listed World Heritage sites — more than any other country (China comes second, with 56 — but it’s more than 30 times larger). Recently, I happened to visit three of them in a single day, for breakfast, lunch, and dinner: cultured, stylish Florence; Monterosso al Mare, one of the dramatically perched seaside villages known as Le Cinque Terre; and Le Langhe, famous for its Barolo wine and prized white truffles. You simply can’t avoid beauty in Italy. I’m writing this in a little Umbrian town, Città della Pieve, that is not too far from Assisi, where in the 13th century, Giotto painted some of the most moving images known to man on the walls of the Basilica di San Francesco. It’s not just its art, heritage, and landscape that made Italy the most Googled destination worldwide for post-lockdown vacations. It’s the lifestyle, which lives up to all those dolce vita clichés and then some. Yes, Milanesi really do meet after work over a Campari soda dressed like extras from a fashion shoot. Yes, there really are beach trattorias on the Amalfi Coast full

ipples were sent through the dining industry in May 2021 when New York-based Chef Daniel Humm announced he would reopen his three-Michelin-starred Eleven Madison Park as a strictly plant-based restaurant. Explaining his decision on Instagram, Humm said, “People come to Eleven Madison Park for an experience — to be taken on a journey, to have these magical moments. For me, I was thinking, ‘we don’t need meat or fish to do this.’” The pandemic was a challenging time for Humm and his worldfamous dining room, and like many of his peers, he used his kitchen to prepare meals for frontline workers and struggling New Yorkers. The enduring threat that his restaurant might be forced to close also compelled Humm to rethink. “When I started thinking in creative ways again, I knew that we couldn’t go back to the way we were before. As an expert in this field, I can’t ignore all the things that are happening in the food industry. It’s a fact that it is not sustainable to continue in the way it is,” he said.

A FLEXIBLE APPROACH

Of course, putting plant-based food at the center of a healthy diet is nothing new. The diet of the Mediterranean region, for example, has always been plant-forward, with its emphasis on fruits, vegetables, beans, lentils, nuts, and olive oil. Indeed, its health benefits and all-around deliciousness are so widely acknowledged

that the “Mediterranean Diet” is one of the current “trending” diets. As awareness grows about health and environmental factors, more and more people are choosing to be “flexitarian,” which, as the name suggests, allows for flexibility in your diet. This plant-forward way of eating prioritizes vegetables, fruits, nuts, and whole grains while incorporating smaller, occasional portions of sustainable meat and seafood. Meanwhile, long before the term “plantforward” was coined, the farm-to-table dining scene put a more sustainable approach to food front and center, working within a circular economy to support local farmers, use seasonal and organic produce, reduce waste, and build biodiversity. This way of eating was pioneered by the likes of Alice Waters, whose Berkeley, California, restaurant Chez Panisse has been setting the bar for seasonal, farm-to-fork cuisine since 1971, and Yotam Ottolenghi, famed for his vibrant, vegetarian Middle Eastern fare in the United Kingdom. Meanwhile, Juan José Cuevas, now of 1919 Restaurant in San Juan, crafted his farm-to-table ethos working with Dan Barber at Blue Hill at Stone Barns before returning to his Puerto Rican home to help farmers build food security post-Hurricane Maria.

DINERS’ CHANGING APPETITES

It’s only in recent years that the plantforward movement has gone mainstream, with diners making more conscious choices when it comes to reducing meat consumption. No longer relegated to the realms of the humble side dish, vegetables are finally taking their place at the center of our dining plates. It’s a trend that reflects a shift in the way we are eating: in the United States alone, there’s been a 500% increase in veganism since 2014, and today, around a third of people in the United States and the United Kingdom identify as “flexitarian.” It is a movement that has permeated the food scene at every price point, from lip-smackingly tasty fare accessible to all from the local food truck to the delicate dishes served in the hallowed dining rooms of Michelin-starred restaurants. At Eleven Madison Park, Humm is determined to elevate vegetables to an art form, saying that it is time chefs and diners rethink the idea of luxury ingredients. “I think in many cases we’re holding on to old ideas,” he said. Humm has ensured that a similar level of precision and labor intensity is involved in the preparation and execution of his intricate vegan menu. What appears as a simple cucumber course

that arrives one and a half hours into the meal takes two cooks all day, every day, to chop and prep, because of the brief shelf life of the fresh cucumber. Humm sees time as the new definition of luxury and has steadfastly held on to the price tag at his restaurant, where the vegan tasting menu weighs in at US$335 per person. This has not deterred diners, with tables reportedly selling out within two minutes and a waitlist running into the tens of thousands. That’s not to say the new direction is without its critics — Pete Wells of The New York Times wrote a scathing review that went viral — however, Humm is committed to his headline-grabbing stance in support of the plant-forward movement.

REINVENTING VEGETARIAN FOOD

Another New York proponent of plant-forward cuisine is Chef Amanda Cohen. When she launched her New York restaurant Dirt Candy in 2008, plant-forward restaurants were scarce. “There were thousands of steak and seafood restaurants in New York, and not a single restaurant that happened to celebrate vegetables,” she said. “That was really bizarre to me — there are so many glorious vegetables that are so delicious, why haven’t we taken the time to think about this?” Dirt Candy may be a vegetarian restaurant, but Amanda doesn’t shy away from using butter, dairy, or eggs. “When I plan the menu, I think about what dishes taste good with meat, and what vegetables would make them taste even better,” she said. Whether it’s a hotdog that subs in a smoked broccoli stalk for the sausage or tacos filled with fried Brussels sprouts, Dirt Candy is feel-good food that just happens to be meat-free. “I think when you tell somebody you have to eat this because it’s good for you, then people find that off-putting. I’d rather

A SEISMIC SHIFT

In the United Kingdom, Chef and Owner Alexis Gauthier was also motivated by challenges over the past two years to transition Gauthier Soho to 100% vegan. Gauthier, a vegan himself, had been edging his signature restaurant that way for the past five years, with his “faux gras” among the plant-based offerings on his French menu. In announcing the move in June, Gauthier said, “For me, 2021 should be the moment the world wakes up and realizes we all need to make fundamental changes to our lifestyle. This is not something for other people to worry about, it begins right here, with ourselves, with what is on our plate.” In what must be the biggest sign that the plant-forward movement has reached the big leagues was René Redzepi’s esteemed Noma finally being awarded its third Michelin star in September. The following month, the Copenhagen restaurant, best known for foraging and innovative fermenting techniques, also regained the top spot of the World’s 50 Best Restaurants. As Noma’s team said on social media: “The seemingly impossible has happened.” What better indication is there that plant-forward cuisine is taking the world by storm?

As an end-of-schoolyear adventure, my husband John and I took our two oldest grandchildren on a journey through Spain and Morocco, taking in some of the many highlights including Barcelona, northern Africa, and Marrakesh. By Gail Ueberroth

Barcelona is a city that exudes energy and inspiration. Every block pulses with creativity: the architecture, the cuisine, the music, the rapid-fire Spanish and Catalan languages. Our base was Monument Hotel, a wonderful property in an iconic pre-modernist mansion with a contemporary look. Staying during the heat of summer, the hotel’s rooftop pool became an essential amenity. Barcelona is an incredibly walkable city, and either Rambla is a great place to start. We returned to these ever-evolving streets again and again, hoping to retrace our steps, but always found something new that captured our attention and set us off course. I especially love visiting La Boqueria, the largest and most impressive of Barcelona’s many food markets. Every morning, more than 200 vendors roll up their blinds to reveal stalls piled high with fresh produce, bountiful meats and cheeses, endless varieties of olives, and irresistible pastries and sweets, as well as small, unassuming places to eat that provide some of the most flavorful bites in the city. I knew my grandsons would enjoy their first introduction to the city’s most prevalent artists — Miró, Gaudí, and Picasso — just as their father did at the same age. Gaudí’s spirited touch is everywhere, and the boys loved the abundant examples of the artist’s wit throughout the city, such as Casa Batlló and the extraordinary Basílica de la Sagrada Família.

ROAD TRIP THROUGH ANDALUSIA

MALLORCA

It is a short flight from Barcelona to Mallorca, the largest of the Balearic Islands, which is fringed by pristine coves and a sapphire sea. We stayed in Palma’s historic old quarter at Can Bordoy Grand House & Garden, an intimate hotel that was once a nunnery. The centerpiece courtyard garden is enrobed by orange trees and fragrant shrubs and flowers, while the restaurant, Botànic, provides the perfect place to sip cocktails and sample tapas. I love the maze of little streets in the old quarter. A walk of just 10 minutes or so along Plaça de Cort toward the seafront reveals an array of architectural styles and gives you a sense of the city’s 1,000-year history. Exploring the twisting cobbled streets and offshoots lined with artisan shops with the boys was endless fun. I always stop by my favorite craftsman when I am here, to see what has sprung from his imagination lately. A highlight was the ride on the wooden train to Sóller. Traveling past farms and quaint villages, this delightful town, just a few miles inland, sits in a valley surrounded by mountains. We took a vintage tram through lemon and olive groves directly from Sóller down to the port and enjoyed lunch at a charming seafood restaurant with an expansive view of the horseshoe bay and the lively promenade.

The southern Spanish region of Andalusia is a wonderful choice for a road trip. Starting in Málaga, there is so much to explore: the chic seaside resort of Marbella; Ronda, a picturesque town set atop a gorge; and the rich Moorish history of Seville and Córdoba. Your route will take you along the coast and north along winding roads that connect pretty villages, through ancient tunnels carved in stone, across rivers and valleys, and past almond tree orchards and blindingly white houses adorned with bright-colored flowers. Finish at La Esperanza Granada, a stunning Mission-style villa with private gardens, intimate courtyards, traditional archways, and fine art and antiques. This boutique hotel is just a 30-minute drive from the city of Granada and the spectacular Alhambra palace, a UNESCO World Heritage Site.

An hour’s flight takes us to MálagaCosta del Sol Airport. Previously, Málaga has been a stop on my way to somewhere else, but this time we decided to give it more attention, especially as it’s the birthplace of Pablo Picasso. The Museo Picasso Málaga was a delightful place to introduce the boys to the artist’s work. Its permanent collection is made up of more than 200 pieces of Picasso’s artwork, and is based in the elegant home where he was born. From here, we wandered along twisted cobblestone streets through Old Town and stopped Clockwise from top left: Old town square in Málaga; elaborate Tétouan doors;

briefly to admire the elaborate and (still) unfinished Catedral de Málaga. We watched mime artists, magicians, and musicians, before breaking for yet another round of our favorite treat: churros and rich, thick chocolate. It is little over an hour’s drive along winding roads to the charming white village of Casares and the magnificent Finca Cortesín Hotel, Golf & Spa. As well as the excellent Beach Club, world-class golfing, and an amazing Thai Spa, it has a variety of fine-dining options: traditional Spanish dishes masterfully combined with modern concepts at El Jardín de Lutz; Japanese fused with Mediterranean influences at the resort’s signature restaurant, Kabuki Raw; and award-winning Italian at Don Giovanni. The question of how we will spend our days — beach or pool? Tennis or golf? Sail, windsurf, or paddleboard? — created a lively discussion at dinner each night.

Morocco TÉTOUAN

Leaving Spain behind, a short regional flight carried us from Málaga to Tangier in Morocco. Our first adventure was in Tétouan, a city built by Andalusian refugees who were expelled by the Spanish but retained a strong connection to Andalusia. This heritage is reflected in the art and architecture, balconies and windows framed by iron grilles and bright flowers, shaded squares, and patios with bubbling Moorish-Andalusian fountains. The Old Town Medina, a UNESCO World Heritage Site, appears unchanged within its colorful walls, despite several centuries of progress surrounding it. Out of respect for the people who continue to live here just as they have for centuries, a licensed and locally trained guide is required to enter. The history was palpable as we walked from the mosque to the school, past the pharmacy and other little stores where shopkeepers greeted us warmly. Our guide explained how the pattern of stones and centerlines in the cobbled streets keep you from getting lost. He also showed us the marvelously ornate doors in the Old Town Medina, where each one has a different meaning and rules associated with them — who can and cannot enter, for example. Driving just outside of Tétouan, the road opens up to offer incredible views from the Mediterranean Sea to the Atlantic. We recharged at Banyan Tree Tamouda Bay, an expansive and stunning beach resort in Fnideq. Every villa has a private pool, but the beach club and extra-large infinity pool drew our attention most days. (See page 58 for more on this beautiful hotel.)

On the way to Marrakesh, we stopped at this beguiling city where the blue-washed houses, painted using talc- or chalk-based paint in varying shades of blue, create an ethereal azure glow. A guide took us through the labyrinth of narrow blue alleyways filled with competing scents of spices, incense, flowers, and fresh oranges. The city is on a hillside, and it was fascinating to watch traders march mules loaded beyond belief straight down steps built into the slopes.

This city is wrapped by a special kind of magic. The elaborately serpentined medina in Old Town is a cacophony of sounds and a kaleidoscope of colors and aromas, and the awnings provided a welcome respite from the scorching heat. The boys loved trying on all the different hats and the traditional lightcolored robes as well as getting henna tattoos from fingertips to elbows, to the delight of the merchants. After a touristy but no less enjoyable carriage ride around the city, past the striking 230-ft-tall minaret of Koutoubia Mosque, we headed to Jardin Majorelle-Yves Saint Laurent Mansion. Designed by painter Jacques Majorelle in the 1920s and restored by its last owner, Yves Saint Laurent, who gifted it to the city, it is a stunning botanical retreat. We spent half a day wandering through, admiring the eclectic mix of plants surrounding the occasional sparkling pool or fountain, as well as the artist’s captivating villa and studio, an Art Deco design with intricate cobalt-blue details. It was a fitting end to our all-too-brief stay in Marrakesh and the journey as a whole — a bright, colorful, and fragrant experience that definitely left us wanting to explore more next time.

en Burns’ illustrious career would make a compelling film, which is a little ironic given he reigns as one of the most acclaimed and influential documentary filmmakers in the United States. The New Hampshire resident laughs at the notion and mentions one made about him in 2017, but he quickly confirms his happy place is where it’s been since his father gave him his first Super 8mm Camera at 17: behind the scenes. It wasn’t until he arrived at Hampshire College in Amherst, Massachusetts, however, that the possibility of making films as a career crystallized. Given his then untapped interest in American history, it’s no surprise his senior thesis, Working in Rural New England, was a documentary about a living-history museum. Along with two college friends, Burns co-founded Florentine Films, and after reading David McCullough’s book on the making of the Brooklyn Bridge, he landed on the iconic New York span as the subject of the company’s first major documentary. Brooklyn Bridge was released in 1981, earning Burns an Oscar nod and catapulting him on a long and red-hot trajectory into the upper echelons of documentary filmmaking. Meanwhile, his partnership with PBS places his takes on American history into living rooms across the country. Though the content of his films is as vast and nuanced as the country they portray, the prolific filmmaker says there is a common theme.

“I’ve spent almost 50 years of my life making films about the U.S., but I also make films about us, the lowercase, two-letter plural pronoun, us. The message of all my films is one of union and of coming together. E Pluribus Unum, out of many, one. They (my films) are all about the one,” says Burns. It’s a simple notion to pull back the curtain, but the work is neither easy nor quick. In August, a special for PBS spotlighted a behind-thescenes look at the making of one of Burns’ most beloved series, The National Parks: America’s Best Idea (2009), which took more than six years to produce and was filmed in some of the country’s most magnificent natural settings.

NECESSARY ELEMENTS

Shaking American history by the lapels with rigorously researched facts and uncovered details is a hallmark of Burns’ films, some of which have taken more than 10 years to produce. These films made him the standard-bearer of the genre, but what they don’t do is tell you what you should know. Instead, Burns says, his focus is, and has always been, on telling a good story. “We don’t concentrate on being educational or entertaining,” he says. “A good story well told is entertaining. Since I’ve chosen American history as my subject, there’s some educational value, I suppose. It’s just required to be a good story.” No matter the subject, Burns says he and his team submit to the process and surprise of discovery, solving the puzzle of how to use information to do visual and storytelling justice to complex subjects. Viewers are treated to history transformed from cold dates and a list of names and places to humanized and heartfelt narratives with characters that ebb and flow, and story lines that braid together and unravel throughout the film’s timeline. Dramatic panning and zooming over photos and documents — often referred to as the Ken Burns effect — and archival footage add movement to static states. Cut in riveting musical scores and velvety-voiced narrators such as actor and longtime Burns collaborator Peter Coyote or actor Keith David, who lent his voice to Muhammad Ali, and it’s easy to forgive a student for using Burns’ documentaries as their American history crib sheet.

Burns attributes the numbers to a starvation for information and, while he tries to keep his own political beliefs at the door, he believes a good story might be able to change something.

IT’S A FAMILY AFFAIR

“Burns’ influence within documentary filmmaking is second to none. His compelling storytelling and unique topics continue to spark curiosity among viewers of all ages,” says Sylvia Bugg, chief programming executive and general manager of general audience programming for PBS. So influential have his documentaries become, in 2019 Burns launched a one-stop resource for sixth- to twelfth-grade teachers called “Ken Burns in the Classroom” on PBS LearningMedia, offering ready-made lessons and content on historical topics and events explored in his films. Julie Pesano, an English Composition and Literature Instructor at De Anza College in California, has taught Ernest Hemingway’s short story A Clean Well-Lighted Place for

years. She recently used PBS materials and clips from Burns’ Hemingway (2021) to explore the connection between the author’s own mental illness and his characters’ sense of despair. “The film really resonated with students in ways I didn’t imagine. The Burns documentary helped them connect the short story’s ‘nothingness’ to their own existential pain and the many facets that contribute to mental health. I have seen more and more of my students recognizing their challenges and reaching out for support.” Whether in a classroom or the living room, viewers tune in by the millions to the multipart, multi-hour series, remarkable in an era of shortened attention spans and bite-sized bits of unvetted “facts” swirling the Internet. According

The breadth and depth of his work, approaching 40 documentaries, has earned Burns dozens of major awards and accolades, but what he’s most proud of is being a father to his four daughters, calling himself “a dad before a filmmaker on any list of importance.” He’s collaborated with his eldest, Sarah Burns, on several projects, with many more already under way in the Florentine Films pipeline, a creative conduit that’s populated with endless prospects, including Benjamin Franklin, a deep dive into the life and influence of America’s bifocaled founding father, which airs in April. “If I were given a thousand years to live, I wouldn’t run out of topics in American history,” he says. “I love making films. It’s like a million problems, and I don’t mean that pejoratively, I mean the friction of storytelling. I love putting my head on the pillow at the end of the day if I’ve made a film better. It’s just really exciting.”
