n Southern California, where the weather varies little, there is no real sign that it’s time for a transition — we don’t pack away shorts and sundresses or pull out sweaters and boots, like when I grew up in the Midwest — but some dates on the calendar signal change. We launch our summer boldly with fireworks and beach parties on Memorial Day and quietly pack away beach toys after Labor Day celebrations. Although the sun is still warm and the beach beckons, September seems to be more suited to serious things, and I find myself craving different kinds of activities — time spent in more intimate gatherings and thoughtful, reflective stretches with friends and family. I like to relax, take a deep breath, and imagine how everything — from fall getaways to year-end family celebrations — will unfold. The arts are robust at this time of year, as symphony and opera seasons begin, the cozy confines of a well-curated art gallery or museum appeal to me, and even the most familiar restaurants take on a new look, changing their menus to offer heartier fare that makes the most of the season’s harvest. After all, we earned these rewards with our enthusiastic summer frolic. Yes, our luggage is still at the ready, but now, as we switch from extended journeys to short escapes, the suitcase is just a bit smaller. We head to cities — cool fall temperatures are ideal for exploring urban life — and look forward to new exhibits in familiar spaces, with the excuse of attending a sporting event or favorite performance to experience a city that’s long been on our list. And we always plan extra time with family and friends. In this issue, we look forward to city breaks and golf getaways, explore Scandinavian capital cities and America’s (still wild) West, and introduce you to a young maestra who is (quietly) making an impact in the opera world. Now that fall has arrived, I take my morning latte to the beach, but don’t venture into the surf; the dogs are wistful, aware that the mid-afternoon Bark Park population will be moderate. As I hear neighbors planning that last beach party, I am watching the colors change around me, thinking about how brilliant fall hues will transition into the bright lights and sparkle of the holiday, and finally the show-stopping fireworks that will ring in the new year. May your fall months bring wonderful journeys, glorious experiences, and bold plans for the holidays and beyond.

On November 1 and 2, people all over Latin America celebrate the festival of Día de los Muertos (Day of the Dead). Originating in Mexico, the holiday is celebrated in the countryʼs capital with public gatherings involving dressing up and colorful calaveras (skulls) and calacas (skeletons). However, many of the traditions are more private, with families gathering at shrines and cemeteries to remember and celebrate loved ones.

From its 1879 beginnings printing a handbill announcing the appearance of Harriet Beecher Stowe’s brother, Hatch Show Print has become as synonymous with country music in Nashville as the Grand Ole Opry itself. Championing the craft of letterpress printing, brothers Charles and Herbert Hatch developed a unique style for posters, creating excitement around forthcoming carnival shows, circuses, and vaudeville acts before becoming the go-to print shop for the country music scene. Even the advance of faster offset printing did not affect the Hatch Show Print magic, as country music venues continued purchasing their eye-catching posters along with newer forms of entertainment, such as all-star wrestling and rock and roll shows. In 1992, the Hatch Show Print business was donated to the Country Music Hall of Fame and Museum before moving to its current location at 224 Rep. John Lewis Way South, combining its letterpress printing business with an interactive museum. Black truffles are some of the world’s most sought-after delicacies. Traditionally cultivated in France, Italy, and Spain, other countries such as Australia, New Zealand, and South Africa are gaining ground as truffle producers. California is also positioning itself as a next potential truffle hotspot. At Montage Healdsburg in the beautiful Sonoma Valley, plans are being laid to cultivate truffles within its grounds with the planting of a 450-tree hazelnut orchard spanning 1.5 acres. Also part of the plan is Beau, the canine ambassador at the Montage Healdsburg. Just over 18 months old, Beau is a Lagotto Romagnolo, an early breed of Italian water dog and truffle hunter. This little future truffle hunter makes regular appearances in the lobby where he enjoys meeting, greeting, and playing with everyone. One day, when the orchard has matured, Beau will help forage delicious local black and white truffles for the hotel’s chefs to use in their cuisine.

Such is the whimsical private dining and bourbon experience at Preserve Sporting Club & Residences in Richmond, Rhode Island, inspired by The Lord of the Rings. A well-worn, flower-lined path right out of a storybook leads you to these hillside rendezvous. Each delightful house is built — right into a tree trunk — with a grass roof and stone walls. “Our Hobbit Houses are very authentic — all stone and materials are sourced right on property, from our 3,500 acres, with adornments changing seasonally,” explains Preserve Founder and Chairman Paul Mihailides. Behind each oversized, intricately carved wooden door, an inviting stone fireplace, flickering candlelight, and chairs outfitted with pillows and faux fur blankets set the scene. You’ll gather around a custom table repurposed from Maker’s Mark barrels to share a private four-course feast.

Only one reservation is allowed per lunch or dinner seating, making it impossible to spoil the escape-from-reality sensation. Each course is paired with a different sipping bourbon, including the resort’s own Preserve Reserve, and prepared with classic Le Creuset cast-iron cookware. A masterful charcuterie of local cheeses and game sausages begins the meal, followed by teriyaki-style Hudson Valley duck breast served with butternut squash slaw. Next up is Maker’s Mark 46-braised short ribs and pomegranate-molasses glazed salmon alongside buttery smashed potatoes and smoky roasted vegetables. The feast ends with a bittersweet chocolate bread pudding topped off with Maker’s Mark Preserve Reserve caramel hard sauce and a generous dollop of Chantilly cream. I’ve called Stockholm home for more than a decade and can confidently say it is the most photogenic Scandinavian capital city — even if Copenhagen disagrees. I still catch my breath at the sight of golden sunrays reflecting off yellow, ocher-colored buildings and the deep blue waters of Riddarfjärden. Beyond nature, the city brims with innovation and creativity. Its tech scene rivals Silicon Valley — think Minecraft, Candy Crush, and TocaBoca, as well as household names like Skype and Spotify. Its flourishing pop music scene is also booming with global sensations such as Zara Larsson, Robyn, and Lykke Li.

Stockholm’s main islands and neighborhoods are all distinct in character and flair. Set on an island, Kungliga Djurgården (Royal Game Park) was once the hunting grounds for the royal family and is now where most of Stockholm’s historical museums are located. Djurgården is best experienced by bike, so grab a rental and enjoy a leisurely ride around the park. Don’t miss the impressive Vasamuseet — the museum houses the Vasa warship, which sank in 1628 and was salvaged in its entirety. Next stop is Skansen. The world’s oldest openair museum, Skansen is a family-friendly journey of live re-enactments through Sweden’s history. Afterward, grab a cardamom bun and indulge in fika — the delightful daily Swedish self-care ritual of relaxing over several breaks for coffee and pastries. Choose Rosendals Trädgård and sit in a lovely greenhouse surrounded by flower gardens and apple orchards. Stockholm’s old town, picture-perfect Gamla Stan, is a delightful streetscape of centuries-old cobblestoned lanes winding between vivid dark

As a photographer, I always recommend either getting up high or viewing the city from the water to truly appreciate its beauty pastel-colored row houses. Don’t miss the main square Stortorget and the changing of guards at the Royal Palace. Some of my favorite places to eat are tucked away among narrow lanes lined with stores filled with traditional silver jewelry and colorful wooden Dala horse carvings. For quintessential Swedish cuisine called husmanskost — the local equivalent of soul food — my no-fuss picks are restaurant Tradition, which serves meatballs and kroppkakor dumplings with homemade lingonberry garnish, and a gastropub, The Flying Elk, for the best schnitzel. As a photographer, I always recommend either getting up high or viewing the city from the water to truly appreciate its beauty. Observe the city’s unique layout of islands on a rooftop walk on the island of Riddarholmen or onboard a 1930s steamboat while digging into a smörgåsbord of sill (pickled herring) and gravlax (cured salmon) or a crayfish buffet. ▷

In trendy Östermalm, it’s all about designer fare and minimalist design. Stockholm’s food scene is evolving at a dizzying pace with new fusion restaurants popping up every other month, mixing Nordic ingredients such as wild mushrooms, cloudberries, and Arctic char with international recipes. For Asianinspired cuisine, Tako’s dimly lit but glamorous underground space serves up Wagyu beef dishes and decadent sushi combinations. Contemporary restaurant Jacqueline’s combines flavors from Brooklyn and Tel Aviv in an airy open setting with a popular duck tagine dish on its menu. And if you’re lucky as we were this last winter, you might even catch the ephemeral green northern lights shimmering across the dark skies as far south as Stockholm. Magical!

Arguably the feistiest of all three Nordic capitals, Copenhagen for me has always been synonymous with a deeply entrenched bike culture, pedestrian-friendly layout, and a cool, laid-back, but very social, vibe. Compared to their Scandi neighbors, Danes don’t take themselves too seriously — in fact, they are often ranked as one of the world’s happiest nations. The birthplace of the New Nordic food movement, Denmark’s capital is a highly social and heady mix of modern lifestyles set against a backdrop of gorgeous architecture, and is best explored slowly. The wow factor starts when you stroll down the cobbled 3/4-mile-long Strøget — the world’s oldest and longest pedestrian street. This is the heart of historic Copenhagen — its medieval squares and iconic landmarks framed by modern designer shops. Running from City Hall Square to Kongens Nytorv, Strøget ends at the vibrant, picture-postcard harbor, Nyhavn, with its Lego-colored buildings, weathered sailing boats, and enticing outdoor cafés.

While Copenhagen and Stockholm vie over their looks, equally chic Oslo blends the old and new seamlessly with an understated mix of modern architecture and world-class museums alongside 10th-century Viking history and Indigenous Sami culture. Boasting a high standard of urban living and an international reputation as the home of the Nobel Peace Prize, I’ve always found Norway’s capital city caters organically to every taste — from history buffs and literary bookworms to enthusiasts of modern Nordic design or Arctic exploration. With their city framed by rolling hills and the 60-mile-long Oslofjord, Oslovians are known for being creatures of the outdoors and love immersing themselves in nature — even more so than their Nordic neighbors. Try a floating sauna at Sørenga, a former container dock converted into a chic waterfront space. You can also visit sauna village SALT for a perfect winter activity — relaxing in one of six different saunas alongside cold pools and outdoor showers if you don’t fancy a chilly dip in the Oslofjord. One such landmark is the iconic Oslo Opera House with its otherworldly appearance and walkable slanted roof designed to resemble an iceberg. If you love architecture, you’ll enjoy the unique designs in the Bjørvika area, including the quirky 676-foot-long Akrobaten pedestrian bridge, which connects the neighborhoods of Grønland and Bjørvika. polar expedition Fram Museum and the Folk Museum with thousands of Sami and Viking artifacts are located. The revitalized waterfront districts of Aker Brygge and Tjuvholmen (Thief Island) show Oslo’s upscale side. So named due to its seedy 18th-century past, these former dock buildings have been converted into a mix of upscale residences, seafood restaurants, and opportunities for retail therapy. In the 19th-century industrial area-turnedhip district, Grünerløkka, you’ll find vintage stores alongside microbreweries and corner cafés. Artists such as the BRUDD collective of 20 members craft glassware, pottery, and unique jewelry in limited quantities. You can even decorate your own creation at ceramics café Glazed & Amused. The city’s culinary scene is very reminiscent of its Nordic neighbors, but for me, Norway is most synonymous with fish. At the far end of Aker Brygge, Lofoten Fiskerestaurant offers an outdoor terrace with fjord views in addition to serving up seasonal fish dishes such as cod and haddock. rowing up in Denver in the 1980s, I had heard stories of Colorado’s famous wild horses, but decades later, this was my first attempt at finding them. We spent a long day driving down the rutted dirt roads of the Little Book Cliffs Wild Horse Range, cranking our four-wheel-drive up steep hills and over washboard sections. We were almost ready to give up when we saw them. A colorful band of six horses huddled near the cliff’s edge. The scorching sun glimmered off the deep red coats of the sorrel horses as the wind caught the tail of the palomino, his hair gently floating along with the breeze. We stayed tucked beneath a tree just 100 feet away for 30 minutes, breathlessly watching them. But then, it was over. With a small nicker, the dappled gray stallion turned his head toward us with a brief glimmer of acknowledgment, then faced the sun and began galloping across the plains. The rest followed, disappearing into a cloud of dust. Away from the wilderness, Denver is a thriving metropolis. The city has a vibrant street art scene in River North Art District and a bustling culinary experience that goes beyond the traditional Rocky Mountain “oysters” (bull testicles) that everyone has to try at least once. It’s easy to keep a secret in Wyoming. Even though the Cowboy State is the ninth biggest in terms of land mass, it is home to the smallest population. That’s the sweet conundrum of fly fishing in the Wind River Range in west-central Wyoming — there’s no one to tell you where to go, but you’ll know it once you find it. While California’s Golden Trout Wilderness is known for its protected pockets of this rare fish, here in Wyoming a multitude of undisclosed pools sit in the high alpine of the Wind River Mountain Range. These waters teem with hungry cutthroats and brookies, and eventually, beautiful golden trout with their iconic yellow coloring and striped-red flanks appear. iving in the northeast of the United States, I eagerly await that one week each September that solidifies the change of seasons. For me, the glory of the fall somehow compensates for some of the harshness of winter yet to come. Almost overnight, the air takes on a certain recognizable crispness. The sun is still hot but the wind brings a discernible chill. Little creatures everywhere are perkier, as they busily stash away food for the colder months. These signs tell you it’s only a matter of weeks before the landscape changes entirely. The trees will lose their uniform, medium green and burst into golds, reds, oranges, and even purples. This is the last hurrah — one spectacular colorful finale before a winter hibernation.

When the colors start to change, New Yorkers head up the Palisades Interstate Parkway to Bear Mountain, one of the most popular lookouts in the New York metropolitan area. There are plenty of quick hiking trails throughout the state park, but for the most impressive vistas, drive to the top — look for the Perkins Memorial Tower — and gaze out over the colorful hills and valleys of the Hudson Highlands and Harriman State Park. One of Vermont’s most beautiful landscapes, a wander along the woodland trails at Marsh-Billings-Rockefeller National Historical Park offers up sugar maples and 400-year-old hemlocks along the water. However, if you really want commune with the trees, the Forest Canopy Walk at the Vermont Institute of Natural Science in nearby Quechee brings you 65 feet above the Ottauquechee River. A

s trailblazers go, Eun Sun Kim — the South Korean conductor who started her tenure as music director of San Francisco Opera (SFO) in August 2021 — doesn’t fit the usual mold. Yes, she is the first woman and first Asian to lead a major American opera company, and was tapped for the coveted San Francisco post before turning 40, but it is Kim’s calm, collaborative approach to leadership that is making a mark. Kim’s professional brand is subtle: she lacks the obvious calling cards of her conductor contemporaries — the fresh-faced energy of The Metropolitan Opera’s Yannick Nézet-Séguin, or the volatile mop of curly hair on the LA Philharmonic’s Gustavo Dudamel. Although she studied under the greats, Kim’s calm humility and easy laugh are a stark contrast next to the stoic air of old-guard maestros that include Daniel Barenboim, Riccardo Muti, and Herbert von Karajan. “I really appreciated how attentive she was to the needs of singers, and her calm presence was reassuring,” says acclaimed French tenor Benjamin Bernheim, who sang with Kim at a 2020 Bastille Day concert under the Eiffel Tower. The pandemic-complicated concert brought “specific, unique challenges,” Bernheim adds. “Maestra Kim was able to adapt to these challenges and provide friendly and decisive leadership.”

Maybe her charming professional unaffectedness gave her an edge, freeing up that extra bit of brain space to focus on conducting an excellent show. Or maybe Kim really did have a sense that a big job was waiting for her, and she’s better than most at keeping her cool under pressure. But when a still-young conductor finds herself offered one of the biggest jobs in the American opera world, it signals a kind of simple power that many conductors work at and rarely achieve: an unwavering ability to do her job very, very well. For Kay Stern, concertmaster of the SFO Orchestra, Kim’s sense of “generous collaboration” makes all the difference. “The mutual respect she has for her role as music director and ours as an orchestra is obvious and it creates an enthusiastic desire to work together in a positive environment,” says Stern. “She has a strong, clear vision and ▷ together we will produce groundbreaking performances.”

BUILDING TRUST

When Kim takes the podium at the world’s major opera companies — from the Vienna State Opera to New York’s Metropolitan Opera — she does it with quiet confidence. Kim, dubbed by The New York Times as Classical Music Breakout Star of 2021, conducts with a clean and collaborative style, one that suggests deep trust between maestra and musicians. Admirably, she aims to only conduct operas written in languages she speaks — certainly no hard limitation for Kim, who speaks Korean, English, French, Spanish, Italian, and German, and who briefly considered a career as a translator. Kim was so focused on making a top-notch SFO debut in 2019 that she didn’t even realize the gig was a major audition in disguise. “That was funny,” Kim smiles. She admits she’s never been the type to keep tabs on where her colleagues are working and what jobs might be up for grabs — including the fact that Nicola Luisotti, after a decade as music director, had stepped down from SFO in 2018. As guest conductor for David McVicar’s production of Rusalka — the Czech opera that shares a story with The Little Mermaid — Kim was surprised when SFO General Director Matthew Shilvock offered her the position between performances. “All the guest conductors after Luisotti left were possible candidates for music director. But I had no idea about that.”

Kim studied piano from a young age, her talents spotted early on by her mother, a fellow pianist. Her adult training started at Yonsei University in Seoul, where she studied composition. Conducting came slightly later, almost on a whim. “Studying conducting was really out of curiosity,” Kim recalls, crediting one of her teachers with the suggestion to try it out. Even if she didn’t do it at a professional level, they explained, she would have the basic skills to rehearse her compositions. The whim turned into a revelation. Though Kim was plagued by stage fright as a solo pianist, she made an important discovery: “I’m not nervous on the podium.” It was 2008 when Kim first put her conducting skills to the test, in the López-Cobos International Opera Conductors Competition in Madrid, named for acclaimed Spanish conductor Jesús López-Cobos. “They played in the way I was really imagining,” Kim remembers of her European debut, conducting the Madrid Symphony Orchestra. “I thought, OK, they understand me, obviously, and the communication is really going well.” Armed with well-studied scores and almost no spoken Spanish, Kim’s first-prize win came with a coveted two-year spot working under López-Cobos as assistant conductor of the Teatro Real, making her the first woman to conduct at the company. By the end of her first decade as a professional conductor, Kim had debuted at major opera houses in Frankfurt, Vienna, London, Oslo — nearly every major European house worth putting on her résumé. And when she made her North American debut in 2017, conducting La traviata at Houston Grand Opera, she was invited back as the company’s Principal Guest Conductor, a post that Kim still holds through 2023.

A MAESTRO MENTOR

She’d also earned coveted face time with star maestro Daniel Barenboim, music director of the Berlin State Opera and famed mentor of up-and-coming conductors. “He made me really think differently [about] how to read the score,” Kim says. After inundating him with her own technical questions, Barenboim challenged her to find answers to a new question: what did the musical notes mean? “I was kind of ashamed of myself, that I was not even able to think about that. I never thought about it,” Kim recalls. “I asked him, ‘Maestro, why do you know everything?’” She remembers Barenboim’s answer: “You’re too young to know all of that. At your age, I also didn't know all about that. Now I’m 70. So, don’t worry about that, just carry on.” Kim carried on indeed. Her 2022—23 season at SFO is the company’s centennial, and she’ll kick it off by conducting Antony and Cleopatra, the world premiere opera by John Adams (Nixon in China, Doctor Atomic). “Beethoven or Mozart or whoever . . . they were all contemporaries in their time. So, I think it’s really important that we bring our contemporary composers to the stage as well and support them.” Kim is also unique among SFO music directors in the attention she gives to the company’s young artists, including her plans to conduct this season’s annual concert showcasing the Adler Fellows — SFO’s in-house group of emerging singers and pianists. It’s rare for a music director to perform with their

“I think it’s really important that we bring our contemporary composers to the stage as well and support them” young artists, but it’s a progressive move that signals Kim’s equal respect for both SFO’s mainstage output and its future. “I'm just grateful [for] the way I was supported by the older generation,” says Kim, nodding to her teachers in Korea, and European mentors like López-Cobos and Barenboim. “I just want to give to the next generation.” Now a high-profile face of an ongoing shift in classical music, Kim is finally making waves. Artists like Kim — not European, not male, humble, hardworking, and keen to pay it forward — have for a long time been enmeshed in the opera industry; but following Kim’s example, they are becoming more likely to assume leadership positions. “It helps keep this art form alive and a part of today’s world and communities,” says Bernheim of diversity in opera, from the top down. “Inclusion and representation lead to better art.” Even in 2022, it feels like a big deal for a small-statured woman of color to earn a job like music director of SFO by being a team player and making excellent music. But Kim swears by it, and her company returns the respect. “When you’re a young leader in front of professional people, it’s not really about whether you know better than they do, but it’s more about how to get the best sound,” says Kim. “That’s really, I think, what I want to be as a conductor — to have the orchestra musicians play their best.”

hectic London intersection is an unexpected place to find fresh pasta. Weave past moped drivers, commuters, and tourists heading into Borough Market and you’ll spot the line of Londoners on Southwark Street queuing for the best cacio e pepe this side of Rome. Padella, a cozy pasta bar, has been a smash hit since opening in 2016. It sparked a trend for pasta shops; informal restaurants specializing in handmade pasta like Padella’s thick, toothsome pici or Bancone’s cult “silk handkerchiefs” — Ligurian pasta sheets drizzled with walnut butter and topped with a glistening confit egg yolk. London is not alone. You’ll find world-class pasta in unlikely places. The Eataly chain, for example, with its wine bars, deli counters, and pasta-making workshops, has 40 outposts in North America, Europe, the Middle East, Brazil, and Japan. In Italy, top chefs are following the lead of Massimo Bottura and pushing pasta to experimental new heights. Meanwhile, many of us are making fresh gnocchi, ravioli, or tortellini at home, inspired by YouTube’s Pasta Grannies, Stanley Tucci’s “Searching for Italy” series, or bestselling pasta cookbooks from chefs Missy Robbins and Marc Vetri. So, why is fresh pasta having a moment right now? “In Italy, pasta is more than a food. It is a religion,” Massimo Bottura (chef/ owner of Osteria Francescana in Modena) recently wrote. While younger Italians slurp tagliatelle at trattorias with as much gusto as ever, some experts fear homemade pasta is a dying tradition. Enter Pasta Grannies. Filmmaker and author Vicky Bennison travels around Italy, filming seniors making pasta from scratch. “After moving to Le Marche, I noticed it was only older women making pasta by hand every day. Those over 80 are the last generation who had to do this to put food on the table — for everyone younger it is a choice,” she says. The YouTube Pasta Grannies channel went viral in 2018, @pastagrannies has nearly half a million followers, and the second Pasta Grannies cookbook is published this fall. With a global following, Pasta Grannies is also popular with younger Italians. “I’ve noticed that 25- to 35-year-old Italians are more interested than their parents in learning to make pasta,” says Bennison.

MASTERING THE ART

Chef, teacher, and author of cookbooks including A Passion for Pasta, Carmela Sereno Hayes also believes that homemade pasta is growing in popularity. “Fascination with pasta was on the rise pre-2020 and has escalated since. Pasta is inexpensive to make and a great activity to keep the mind and hands busy and inspired. All you need to begin is good-quality flour and eggs, plus nimble hands.” Once you’ve mastered the basics, she recommends a pasta machine such as Marcato, a wooden board, and a bench scraper.

There’s no shortage of places to learn how to make fresh pasta: take an evening class at Eataly, head to a Tuscan agriturismo, or try a cooking school in any major city (in London, I like La Cucina Caldesi). Some pasta dishes are, however, best left to professionals. Massimo Bottura pushed the boundaries with The Crunchy Part of the Lasagna. Debuted at his three-Michelin-starred Osteria Francescana in Modena, the deconstructed lasagna with béchamel foam is now on the menu at Francescana at Maria Luigia, nestled in the Emilian countryside. In New York, Rezdôra wins raves for its $95 pasta tasting menu. Chef Stefano Secchi, an Osteria Francescana alum, combines traditional pasta-making techniques learned in Emilia-Romagna with premium ingredients and creative spins. His uovo raviolo is a giant raviolo festooned with black truffle and a runny egg yolk hidden inside.

A GROWING APPETITE FOR PASTA

The beauty of a dish made with eggs and flour is that you can find the good stuff without breaking the bank. London’s pasta shops such as Padella, Bancone, and Pastaio have popularized affordable handmade pasta. “We want to serve great pasta to people on a regular basis, but we don’t want to charge a fortune for it,” says Padella’s Tim Siadatan. In New York, Sarah Raffetto, fourthgeneration COO of the city’s beloved Raffetto’s pasta shop, recently launched an intimate supper club called Petite Pasta Joint. While you’d expect excellent pasta in NYC, how about Los Angeles? Stockholm? Even Shanghai? Fresh pasta is a global pursuit. In LA, try the handmade pasta at Felix Trattoria. Chef Evan Funke trained as a pasta maker in Bologna. Parisians tuck into linguine alle vongole at Pastamore, while Stockholmers love the raviolini at Mancini. Ranking the best Italian restaurants outside the motherland, 50 Top Italy recently dubbed Don Alfonso 1890 in Toronto as

the current winner, while its remaining top five include spots in Shanghai and Marrakesh — not exactly places that scream “pasta.” In the pursuit of great pasta, it is worth considering the following: the best is often hyper-regional and sauces change with the seasons. There are hundreds of pasta shapes, some specific not just to a region, but to a town or village. “The women I meet have mastered two or maybe three pasta shapes — they don’t worry about learning them all,” says Bennison. “Their dishes are seasonal, based on what is available locally. I rarely see a cook book — the recipes were taught to them by their mothers.” Planning a trip to Italy? “Visit an agriturismo or osteria, as you are most likely to find something local. Emilia-Romagna is probably the region with the most sophisticated egg pasta shapes and dishes. These include tortelli, tortellini, tagliatelle al ragu, and garganelli to name a few,” suggests Bennison. “If you follow the seasons, you’ll find something magical any time of year,” says Siadatan. “In summer I love a plate of spaghetti vongole in the south with my feet in the sand. Then there’s the heavy game and ragu pastas of Tuscany and the north in autumn. In winter, white truffles with pasta in Piedmont is one of life’s great treats.” As you plot your next Italian adventure, why not crack some eggs and master the art of fresh pasta at home in the meantime?

In 1906, Harry Gordon Selfridge, the wealthy American retail magnate, arrived in London from Chicago and founded his dream department store on Oxford Street. With his innate understanding of the theatricality of retail — including lighting up the windows at night — Selfridges flourished under the direction of the charismatic entrepreneur. The annual holiday windows tradition as instituted by retail pioneers such as Harry Selfridge has become one of our most beloved aspects of the season. These festive tableaux capture our imaginations whatever our age — from eager children with tiny noses pressed against windows for a better view to adults dreamily imagining a life surrounded by the glittering garments and objects on display. For the 2021 ‘Christmas of Dreams,’ we made gorgeous gold glittery outfits — our first ever drag queen mannequins — inspired by the Golden Age of Hollywood. “At Selfridges, our windows are motivated by themes of everyday life, and we’ve done collaborations with talented designers such as Simone Rocha, Christopher Kane, Alexander McQueen, Erdem, and Gareth Pugh.” Lai adds cheerfully, “And all credit goes to the late, great Harry Gordon Selfridge.”

Created in 1870 by Ernest Cognacq and Marie-Louise Jaÿ, the handsome Art Nouveau building has recently been renovated by new owners LVMH (Moët Hennessy Louis Vuitton). “Reinventing Christmas every year is a challenge,” admits Benjamin Morin, Head of Studio de Creation at Samaritaine. “The Christmas theme is ultra-confidential. All the department stores aim to create surprise and wonder, so keeping the secret until the last minute is a huge challenge.” This year’s theme will be revealed in early November, so Morin will only divulge that the “inspiration is based on Samaritaine as a destination and a showcase for the French art of culture and living.”

BEYOND WINDOW DISPLAYS

At The Stafford London, Chief Operations Officer Stuart Procter and his team also look forward to Christmas with eager anticipation. This is the city of the seven hills, so its historic funiculars don’t just provide wonderful photo opportunities, they are also essential for navigating the city’s steep streets. With all the history of its original 16th-century building and an elegant, contemporary interior, The One Palacio de Anunciada offers a rooftop pool and a decadent spa just a short walk from Ascensor da Glória, one of the city’s most famous funiculars, which connects Restauradores Square with the Bairro Alto, Lisbon’s party district. During the day, there is an emerging street art community in Bairro Alto, historical sights to explore, and local dishes to sample, from polvo à lagareiro (oven-roasted octopus and potatoes), alheira (Portuguese sausage), bacalhau (dried salted codfish), and traditional sweet creamy pastéis de Belém (egg custard pastry). With museums filled with Renaissance masterpieces, you could spend three head-spinning days inside, but Florence is just as much an open-air museum and a paradise for wanderers.
