We know that your wedding is a big, huge, expensive, important (and so many other descriptive words) day of your life. We also know that you want this important, special day you are sharing with the one you love to be a total hit. We all have different goals, we meet brides who want a HUGE party, others hope for a romantic evening, and there are some who want to have a quiet, familyoriented day. Weddings are diverse, just like the couples you can find in this issue, but they all have something in common: the little things that make their wedding day, “theirs”. We really believe that your wedding day (and every day) should reflect who you are, individually and then also as a couple. We believe that those “little things” are the most important things. In this issue, you will find some great details through floral design, food styling, and trinkets galore. Lovely Refinery readers, I am so proud and lucky to have had the opportunity to work with Madison and Ainsley over the past couple months. I am also so grateful to have had the chance to work on such a creative and inspired magazine. This is definitely not the last you will hear from me on this magazine, however I am about to embark on a new adventure. I will be moving to Norway in August for four months to study at the University of Oslo. I am so excited to embark on what I know will be an incredible journey. I will keep all of you updated on what I am up to in Europe and I’m sure I will find some cool little spots to share with you all! I know you are all (as am I) so excited for this third issue of The Refinery! So, that’s enough about this - get reading!

I’ve got the sensibilities of a 45 year old stay at home mom - I watch a lot of daytime TV The View, The Talk, OWN network etc.... When the mallows I was making started to really become good, I asked my boyfriend who works at lululemons’ corporate office to bring them to work and let his coworkers know that if anyone liked them, they could order some for Christmas. He came home with 24 orders! In three weeks I prepared 60 packs and shipped them to friends, family and more all over Canada and the United States. I’ve always had a love of everything vintage, and that’s why I wrap my mallows with vintage atlas strips. The packaging of the product, for me, is as important as the deliciousness of the mallow itself. I like the anticipation created through packaging when someone is opening them up. Shortly after I scored my first orders, I was asked to come and do a workshop on making homemade marshmallows at the West Elm Market. I very quickly had to become familiar with the Canadian labeling laws and start producing them in a proper facility. Luckily, I had been the General Manager at Aphrodite’s Organic Cafe and Pie Shop, so I had access to a kitchen and went after hours to produce the mallows.
Besides the West Elm Market, I was doing a few other really fun things. I did a marshmallow tasting at Calabash bistro - I even made two of their signature drinks into mallows - a “Dark and Stormy” and an “Appleton Rum” flavour, I also partnered up with Rebecca Bree Boutique, and made heart shaped mallows in lace bags and vintage tea cups for Valentine’s Day. Now I am selling them weekly at the Whistler Farmers Market and it’s been really fun. I don’t have a real desire to sell in any large box stores. I love crafting ideas and partnering up with local businesses to make exclusive packages to enhance their customer experience . I plan on making “how-to” videos online because I believe business is built through community, and the more people making mallows the better. In the future I would love to develop a “Marshmallow of the Month” club. You would buy a year subscription and receive super-awesome mallows monthly. I also see an “Archimallow” cafe for all things mallow and mallow related, in the future. Currently, I am excited to be working on producing mallows for weddings! I’ve been creating super cute his and hers flavours packed up and nicely labelled.

Although Jeri, at the time we met, was not iterested in getting serious with anyone, I, on the other hand, bought a new dress for the occasion. When I walked out to greet her, Jeri remembers thinking, “oh, I didn’t know she was going to be that cute.” Then, after introductions, I quickly answered a trivia question that Jeri had been unable to come up with the answer to. “Oh, and she is smart,” Jeri thought. The rest was history. We did not stop talking for twenty-four hours, and it was only a short while before we were spending every day together. We could not leave each other’s side. I fell so deeply in love with Jeri. She was everything I had ever hoped for in a partnerthoughtful, intelligent, strong, and stunning, with the best heart and a childlike vulnerability that I adore. I truly believe she is the best person I know, and have ever known. And Jeri often told me (and still does) that she could not have fathomed that she would ever find someone like me. “You are better than anything I could have ever created for myself in my wildest dreams.” We knew very early on that we were going to be together forever, and on my 30birthday, Jeri proposed at the lighthouse that rests in Seattle’s Discovery Park – a very special place for us. The best part of the proposal was the love letter that went along with it. I cried and cried, never before experiencing such immense and overwhelming happiness. That was, until our wedding day, the absolute best day of my life. We moved to London shortly after the proposal, and lived in Chelsea for a year. This, along with our European travels that year, became our inspiration for our wedding. When we moved back home to Seattle, we planned our wedding at The Corson Building. The atmosphere, the commnity, and the locally grown ingredients were all perfect for our European theme. The people of The Corson Building also made the preparations so enjoyable and relaxed.
I planned all the details of our special day, and loved every single moment of it. During the planning, we felt so fortunate to create relationships with several of our vendors—Michele M. Waite, our amazing photographer, McKenzie Powell, our brilliant and beautiful florist/event designer, and Annemarie Juhlian, our wonderful officiant—we all became dear friends. They made our day a dream come true. So, on August 12, 2011, we began our wedding day with a private yoga session on our rooftop deck with our favorite yoga instructor, Jenniferlyn Chiemingo. She set the tone for us, inviting us with her beautiful class to be present for one another throughout the day. It was such a great way to begin our day. Then, after getting our hair and make up done, we finished getting ready in our home. It was so sweet and intimate- a perfect way for us to share our first look. We also went down to our lighthouse, and spent some quiet moments in our special place. That evening, amidst 60 of our closest friends and family members, we said our vows under the fig tree at The Corson Building, committing to a lifetime of love shared together, forever. The ceremony was heartfelt, romantic, and intimate, the weather was perfect, and the celebration that followed was so fun. We all ate course after course of local bounty, and topped it all off with cake from the famous Bakery Nouveau. Our dear friend, Doris, also surprised us with my favorite childhood desert— homemade icing on club crackers. Dancing ensued on the lawn, with the feeling of love and true joy, palpable in the air. Beyond having the wedding day of our dreams, we feel so lucky to have found the partner of our dreams. We wake up each day feeling grateful, and over coffee every morning, (Jeri brings me a soy latte in bed every single day!) we tell one another “thank you,” for the gift of each other. There truly is no greater gift than spending life alongside the person you love.

It was hands down our favorite decoration of the day, and it gave a classic feel against the outdoors. While we started saying our hellos the DJ began to play music. Singer Hill Cafe catered for us with a couple of delicious pastas and a fancy caprese salad. We had three differently flavoured spice cupcakes and a personal cake that was filled with funfetti and raspberry filling!! We toasted, tossed bouquets and ate delicious foods! Everything was perfect. We had our first dance to a song that was performed by Holly Anne - “Every Night”. After I had danced with my father to “Stealing Cinderella,” I snuck off to change into my reception dress. With the DJ’s cue, I bolted out in my dress to “Call Your Girlfriend” by Robyn, and all our friends jolted up to dance with us. We love music and all of our friends love to dance, so we danced our little hearts out until the sun had set and we were sweaty and tired. We disappeared into the house and waited to hear everyone gather to wish us farewell. We came running out under a tunnel of sparklers and screaming friends. Hannah Kasmeyer, my incredible coordinator and rental girl had also hooked us up with a sweet getaway car and we jetted off to our honeymoon. It was the perfect day and we are so grateful and were so blessed by everyone who helped us make it there. We were blown away by family and friends that came together for us to help us and pour love on us immensely. It was unbelievable!! It was truly the best way to start our lives together - with the best party of our lives!

P ump k i n P i e C a k e Ingredients: 3 cups AP flour 1 tspn. baking powder 1 tspn. cinnamon 1/4 tspn. salt 1/4 Tspn. ground nutmeg 1 cup butter (soft) 2 cups sugar 4 eggs 1 tspn. vanilla 1 & a half cups of canned pumpkin chopped pecans (optional)
Directions heat oven to 325 grease cake pan combine the dry ingredients (flour, BP, cinnamon, salt, nutmeg) in a small bowl, set aside. In mixing bowl, beat the sugar & butter until light & fluffy gradually add eggs, beat in vanilla alternate adding the dry ingredients and the pumpkin, mix well add pecans for texture if desired pour batter into prepared pan bake until top springs to touch (approx. 60-75min.)
Cream cheese icing Ingredients 2 packages of cream cheese (500g. total) (soft) 1/2 cup butter (soft) 2 cups icing sugar 1 tspn vanilla flavored extract or spices (optional)
Directions beat cream cheese & butter add vanilla gradually stir in icing sugar add a couple teaspoons of your favorite extract or add cinnamon & nutmeg to taste
Pie crust Ingredients 1 1/4 cups AP Flour 1/4 tsp salt 1/2 tbsp white sugar 1/2 cup Unsalted Butter (cold and cubed) 1/4 cup ice cold water w/ 1tsp vinegar

Filling INGREDIENTS 5 Granny Smith Apples peeled, cored and sliced thinly 1/2 cup of fresh chopped cranberries 3 tbsp of AP flour 1/2 cup of unsalted butter 1/2 cup of brown sugar 1/2 white sugar 1tsp vanilla 1/2tsp cinnamon 1/4tsp fresh grated nutmeg Directions (crust)
DIRECTIONS In a large bowl, combine flour, sugar and salt. Using a pastry knife cut in butter until mixture resembles coarse crumbs. Add vinegar to water and stir in water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 4 hours or overnight. Roll dough out to fit a 9 inch pie plate. Place crust in pie plate. Press the dough evenly into the bottom and sides of the pie plate. Pierce the bottom of the crust with a fork and brush. Filling: Preheat oven to 425 degrees F (220 degrees C). Mix the butter and brown sugar in a stand up mixer until smooth and creamy. Add the flour and mix. Add cinnamon, nutmeg and vanilla. Peel, core and thinly slice the apples and put in a mixing bowl. Put whole fresh cranberries in a good processor and coarsely chop. Add to apple and mix. Add the creamed sugar mixture to the apples and cranberries and mix thoroughly. Put the apple mixture into the plated pie shell and top with either a full, lattice or decorative top.
Bake for 10 mins and the reduce the heat to 350 and continue to bake for 35-45 mins until the pie crust is golden brown and the juices begin to bubble out. Once cooled the pie can be shoved in your pie hole.
