In this edition we celebrate the colder months as a time to rejoice, and a time to enjoy the creative and seasonal menus that are being offered to tempt us. Overjoyed by the success of his recent “Oysterfest”, where more than a thousand oysters were consumed on his busiest ever day, Waterfront owner Steve Bowen has told us he intends to hold two festivals next year to combine food and music. MILL GOES WITH THE GRAIN Located in a three hundred yearold grain mill, the Heskyn Mill, near Tideford, is a place with a long and interesting history. Under new ownership, the restaurant has finally reopened after extensive refurbishment. New owner Tony and his staff welcome you to sample their fantastic new menu. The Fisherman's Arms has reopened its doors after a major refurbishment project. In just two weeks, it underwent a complete interior revamp including new wood flooring and plush new fabric seating. To accompany the fresh new look, AA Rosette accredited Chef Martyn Scott has also launched a fantastic new menu, showcasing the very best of local produce. Martyn brings with him a wealth of experience, having previously run the Lemon Tree Restaurant on the Hoe. And alongside partner Pauline Bickford, he hopes to make the Fisherman's Arms one of Plymouth's gems. Despite the refurbishments, they have been careful to retain the pub's rich history including a long lounge wall, which is thought to have once been part of Plymouth Castle. FESTIVAL SEASON ANNOUNCED AT THE WATERFRONT

The head chef and proprietor of The Horn of Plenty Hotel & Restaurant near Tavistock, Peter Gorton, has been appointed vice chairman of the Master Chefs of Great Britain, the professional association representing the country's top chefs. Peter has been a member of the Master Chefs for over 18 years – members are elected following proposal by at least two referees. He has served on the steering committee for 10 years and will take on a variety of responsibilities supporting the chairman Gerald Röser. “I am delighted to have been appointed vice chairman. The Master Chefs of Great Britain recently celebrated its silver jubilee and I’m looking forward to getting stuck into the role,” said Peter Gorton. Tel: 01822 832528.

THE ITALIAN JOB REFECTORY RAISES THE (NEW) BAR October has seen the opening of a new bar within The Refectory at Blackfriars Distillery, the home of Plymouth Gin since 1793. The Refectory has been such a success that a new larger bar was essential. This bespoke bar has been designed specifically for the cocktail market and is the result of a collaboration between Fruition Design of Torquay and the Refectory’s own bartenders. Plymouth Gin have also launched a new Professional Bartenders (Cocktail) Course, created in partnership with City College Plymouth and accredited by City & Guilds. The Pasta Bar on the Barbican has been undergoing a subtle transformation this year. Just because the world is in financial meltdown it doesn’t mean you have to forgo eating out, especially if you’re prepared to be flexible. By Nick Bayly.

part from foreign holidays and a new car, one of the first things that most people cut back on when the purse strings are being tightened is the number of meals they have out. Trips to the pub might well go up as the nation attempts to drink away the misery of a recession, but bookings at restaurants have historically dipped when the financial situation takes a downturn. But people still need to eat, and they still need to get out of the house, so wellmanaged venues with a loyal customer base that offer value and great service will still survive, and indeed flourish, in the lean times. However, what is clear is that restaurants at all levels, from local pubs to Michelin-starred operations, will find that their customers are keen to economise. It might be one less bottle of wine, or forgoing a pudding, but cut backs will happen at all ends of the market. Evidence of this new save-while-you-spend mentality is available from restaurant booking website Toptable.com, which recently reported a 40% rise in the number of bookings it had handled in the first six months of this year. However, of those diners, some 45% were taking advantage of the more than 900 ‘special offers’ available on the site. These astute foodies are hunting down the best bargains with a vengence, taking advantage of the battle for customers on the high street. Tough economic times for diners also means tough times for restaurants, and it’s in these periods of economic uncertainty that they have to work hardest to earn your custom, which puts you, the consumer, in an extremely strong position, especially if you’re interested in trying

out more top end dining experiences, rather than simply bagging a four-for-the-price-oftwo deal at your nearest Harvester. For food lovers, at least, a recession presents an eating opportunity not to be missed. However, bargain hunters need to have a keen nose to sniff out the best deals, as they are not always as widely promoted as you’d expect, as top notch eateries don’t always want the word getting out that you can eat out with them for less than a bog-standard meal at a local pub. The key to getting a good deal at the best restaurants is flexibility. Which means being able to take off a few hours for a leisurely lunch during the week, or getting to your table by 6.30pm in order to allow the restaurant to turn the table for the next sitting at a prime time of 8.30pm. Evenings and weekends are the reserve of full paying customers, so timing is everything when it comes to getting yourself a cut price table. Equally, you may have to be prepared to choose from a slightly more restricted menu. Having a limited number of starters and

main courses means less waste for the restaurant, which means that savings can be passed on to diners. If you’re a bit picky about your food, it’s always possible to find out in advance what’s on the menu, so there’s no need for a vegetarian to arrive and discover that pig’s trotters and calves liver is the only thing on the menu that day. Starting at the top of the tree is always a good idea, and there are few better places in the West Country than the award-winning Horn of Plenty in Tavistock, recently voted Devon’s best restaurant. It is currently offering its famous ‘Pot Luck’ three-course dinner on Wednesdays for just £28 (compared to £47 on other days). The choice of main courses is reduced from the normal six to three, but with cooking of this quality from the kitchen of Peter Gorton, it hardly matters. Lunch is equally great value, with three courses and coffee costing just £26.50. Staying in Devon’s new food capital, Browns, in Tavistock’s West Street, does a three-course set lunch for £25, which includes such culinary delights as pan fried sea bass and

Although a glass of tap water is probably not the finest accompaniment to a confit of duck, it might make the bill slip down easier at the end of the month. House wines have a pretty poor press, and quite rightly so in some establishments, but don’t be afraid of asking for house wines, especially in the smarter establishments. This is their stock in trade and has to be of good quality in order for it to remain the ‘recommendation of the house’. A restaurant with a dedicated sommelier will be able to advise on its provenance, although all staff should be familiar with its style. Some restaurants will even throw a glass of wine into the deal, as is the case at the Dartmouth-based Spice Bizarre, voted the best South Asian restaurant in the South West in 2008, which is currently offering a budgetsaving lunch time menu comprising two courses, a glass of wine and coffee, for just £9.95. With a choice five starters and six mains (including tandoori salmon and spicy herb crusted lamb chops), it’s almost cheaper than staying at home with the heating on. Eating anywhere for under a tenner is almost impossible these days, but for somewhere as

A cool retreat from the city by day, offering great-value lunches and al fresco dining, in the evening the restaurant changes into a romantic, atmospheric space serving fine Italian staples and a la carte specials, complemented by a grown up wine list. Businessmen and women in a hurry are always interested in what’s widely termed as an ‘express lunch’, which aims to offer a fast,

but far more enjoyable alternative to a sandwich at the desk. Plymouth’s business community has been beating a path to the doors of Tanners Restaurant since it first opened in 1999, and its own take on ‘lunch on the run’ includes two courses in the beautiful Prysten House, which is located a bread roll's throw from the historic Barbican, for just £15. Being close to the Barbican is also a big draw for early diners at Chloe’s restaurant, which is located just three minutes from the stage door. This popular French bistro runs a popular pre- or post-theatre ‘menu rapide’ which starts from just £16.50 for three courses. The only stipulation is that you must vacate your table by 7.40pm or arrive after 10pm. With prices like that, who needs to bother going to the theatre? Just get used to eating earlier and leave time to go on to a bar and make a real night of it. The message for this new season of austerity is to be prepared to try new places at new times and push the boundaries of your culinary experiences. You never know, you might find a simple pleasure in enjoying good food for less money! What is your speciality dish? At the moment it’s probably a platter of the freshest local seafood, oysters and winkles from the Yealm, surf clams from Beesands, mussels from the Teign, Crab and Lobster landed here in Plymouth.

What is your name? Thomas Hayday. Where do you work now? Webbs Inn and Restaurant in Liskeard. Where have you worked before? I have worked in various establishments around the UK such as The Granary restaurant near Looe, The Dial House Hotel in Gloucestershire, The Starr in Great Dunmow, Essex. Who taught you to cook? The two main chefs, both I consider the best in the business; Mark Fisher and Daniel Bunce.

I would love to cook for Wesley Snipes and Heston Blumenthal. I would probably cook them anything from our current menu to guarantee that it would be something they would like.

I WOULD LOVE TO TRY THE FRENCH LAUNDRY OR ANY OF CHARLIE TROTTENS VENTURES.

Where else do you eat out locally? The Well House at St. Keyne. Fantastic food and service, and the Bucklawren Granary Restaurant, their carvery is to die for. Is there anywhere you haven’t eaten and are dying to try? I would love to try the French Laundry or any of Charlie Trottens ventures.

In your experience what is the most important thing about cooking? Using the most locally sourced produce, not only because it’s the best but also to support local suppliers. Producing a balanced seasonal menu with attention to detail being at the top of my list.

I have previously worked at Piermasters fish restaurant in Plymouth and The Horn of Plenty in Gulworthy near Tavistock. Who taught you to cook? No particular person, still learning. What is your speciality dish? I don’t really have a specialty dish, but a shoulder of lamb dish is our most requested, not pretty, but tastes fantastic. Which chef do you currently admire? Jaques Marchal, he and Susan ran the former Chez Nous in Plymouth, which was the only Michelin star restaurant single-handed for 25 years - I miss it!

Where else do you eat out locally? Gidleigh Park, The Horn of Plenty, Lewtrenchard Manor, The Dartmoor Inn & Pizza Express. Is there anywhere you haven't eaten that you're dying to try? There is one particular place that I’m looking forward to trying: The Michelin star restaurant Nathan Outlaw, Fowey.

Which chef do you currently admire? I would have to say Tom Atkins in London, Tom Hunter from the Well House, and of course the second half of my team Marcus Alleyne for all the help and support he gives in the food we produce.

If you could cook for two famous people whom would they be and what would you cook them? Two very interesting people to meet would be, David Attenborough, and Nelson Mandela, I think they would enjoy my shoulder of lamb. In your experience what is the most important thing about cooking? Peter Gorton of The Horn Of Plenty always told us, we must be consistent; I have to agree.

A new and exciting Oriental restaurant has opened up right in the heart of Plymouth and already in its first week it is pulling in the customers.

he Water Dragon, on Derry’s Cross, is a large all-you-can-eat restaurant offering a vast selection of high quality food at an extremely reasonable set price. The venue, which opened at the end of September, is perfect for large parties and group bookings with two spacious dining rooms. Each room is furnished with large, wooden tables and chairs – as well as giant wooden thrones in the waiting area – providing plenty of room to pepper your table with a good selection of the exciting dishes that are on offer. And trust me – there is ample to choose from. All of the favourites are to be found as well as some exciting Oriental surprises. Chinese spring rolls, Peking spare ribs, crispy seaweed, chicken and sweetcorn soup, prawn toast and pork balls are some of the finger-food classics. From the cold buffet bar, customers can also try a selection of freshly prepared sushi, with succulent tuna steak, king prawn as well as vegetarian seaweed-wrapped parcels. If you are as greedy as me, you will try all of the above, but make sure you leave some room for the main course – or courses.

Hot Szechuan king prawn, garlic and mushroom lamb, green-lipped mussels in oyster sauce and lemon chicken are just some of the delicious prepared meals on offer. The talented chefs will then cook your food before your eyes in the openplan kitchen, exactly to your preference. Sizzling Oriental food made to order. Those who can squeeze in a dessert will be delighted with the selection – fresh fruit salad, including melon, lychees, grapes and kiwi fruit, luxurious cakes, ice-cream, fritters and even a giant chocolate fountain. Delicious! While the Water Dragon offers a superb selection of hot and cold buffet as well as

freshly cooked meals, what makes the restaurant stand out is the vibrant and contemporary decor with essences of China, Malaysia, Thailand and Japan – the four main countries whose signature dishes are among the spectacular offerings. The grand furniture is complimented by giant glistening chandeliers in the main bar. Over the restaurant large, red, hanging Chinese lanterns and upturned Japanese umbrellas offer a more subtle light. Wooden slats on the ceiling, walls and windows give a true Oriental home feel while the spectacular painting on the back wall, of a scene not dissimilar from the film The Beach, provides the perfect backdrop to the relaxed restaurant, where the customers set the pace. In the bar area two large, glass, coloured windows, with water pouring down them, also set the laid-back scene. It’s more likely to be a slice of pizza with a glass of Pino Grigio than fish and chips with a pint of beer for the UK’s average consumer. Nick Bayly reveals key facts and figures from the world of food and drink.

F re you in or out? There are currently 25,964 restaurants in the UK, a figure which has barely changed since 1996. The big difference is the number of meals served in those establishments, up from 609 million to 702 million. The eating-out market is now worth £27.5bn in Britain, a rise of more than 25% since 2000. Some 35% of total food spend is now outside the home, compared with just 20% 15 years ago. However, this figure still lags behind those drive-through loving Americans, where out-of-home spend on food remains more than 50%.

A

Breakfast on the go: We are fast turning into a nation which likes to have its breakfast on the run. Research shows that over the past five years there has been a 10% increase in breakfast sales. Although fast food chains and coffee shops have been the main beneficiaries of this trend for brekkie on the go, an increasing number of restaurants are opening their doors early to catch the hungry commuter who wants to linger slightly longer over a bacon bap. Peter Backman, managing director of consultants Horizons, said: “Although breakfast sales account for a large percentage of McDonald’s turnover, other chains, particularly the coffee operators, are giving the fast food giant a run for their money. However UK foodservice operators are also beginning to exploit the opportunity breakfast sales offer, including restaurants like Café Rouge and pub chains such as JD Wetherspoon.” Beer, beer, we drink less beer: Sales of beer in UK pubs declined by 4% in 2007, while sales of wines and ciders grew by 1%. Factors behind the fall included competition from cheap supermarket alcohol, the smoking ban, and a general move away from beer towards more exotic drinks. Last year Britons drank an

average of 228 pints, compared with 326 pints in the Czech Republic and an Irish tally of 300. Closing time: There are 58,000 pubs in the UK, but they are currently closing at a rate of 67 a month. At this rate of decline, this means that by 2062 there will be no pubs left. Anyone fancy a pint before it’s too late? Pizza proves topping: Britain’s love of pizza shows no sign of cooling off. Not only are there more than 10,000 pizzerias in the UK, but Gondola, owner of the pizza chains PizzaExpress, Ask and Zizzi, tops the charts as the largest restaurant operator in the country, with a whopping 525 venues. Top of the takeaways: Kentucky Fried Chicken and Pizza Hut owner Yum! is the largest operator of ‘quick-service’ restaurants (‘fast food’ to you and me) in the UK, with its 1,377 outlets nudging McDonald's into second place with 1,247 venues. The biggest growth in the market in 2008 was achieved by sandwich specialists Subway, which added 314 new outlets to take its total to 879 and climb from fifth to third position. The other key growers were Domino's Pizza (which added 90 outlets to reach 470) and Prêt à Manger, whose 33 new stores helped it rise from 10th to seventh position in the table of quick service restaurants. Pubs for grub: Food is increasingly big business for British pubs. Last year pubs served nearly 1.1 billion meals, compared with the 642 million served in restaurants. The British Beer & Pub Association estimates that, in the past 10 years, food sales in the UK’s 30,000 managed pubs have risen by 165%. Some 80% of all pubs now offer food, compared with about half in the mid-1990s, with the number of pub diners now outstripping the number of drinkers, with the average pub now getting more than 25% of its turnover from meals. Curry in a hurry: With Indian cuisine officially the UK’s favourite food, it is not surprising that Indian restaurants dominate the ethnic restaurant market. The Guild of Bangladeshi Restaurateurs estimates there are some 9,800 Indian restaurants in the UK, with the trade worth around £3.2 billion. The vast majority – 85% – of these are in fact Bangladeshi-owned and not Indian at all. However, during the past ten years, Thai food has been the fastest growing cuisine, with the number of restaurants increasing by 4,325%. The number of Japanese restaurants, predominantly fuelled by the growth of sushi, has gone up by 2,260%, while fish and chip restaurants have gone down by 30%. There are now well over 150 Japanese restaurants in London alone.

Last year, sale of champagne hit the record of 660,000 bottles, representing a nine fold increase in the last five years. No shortage of measures: While pubs have been offering wine in measures for many years, the Government is introducing new regulations next year which require all restaurants to serve wine in glasses which have volumes inscribed on them (175cc or 250cc). Not very elegant, but at least it means an end to short measures.

CLOSING TIME: THERE ARE 58,000 PUBS IN THE UK, BUT THEY ARE CURRENTLY CLOSING AT A RATE OF 67 A MONTH. AT THIS RATE OF DECLINE, THIS MEANS THAT BY 2062 THERE WILL BE NO PUBS LEFT. ANYONE FANCY A PINT BEFORE IT’S TOO LATE? Class in a glass: Although binge drinking among young women is supposed to be on the rise, men still drink twice as much as women, necking an average 18.7 units a week, compared to 9 units for women, according to data from the Office for National Statistics. However, the biggest social change has been the rise in middle class drinking, with men and women in ‘managerial and professional’ households drinking an average of 15.1 units a week, compared to 11.6 units for households classified as ‘manual’. Lovely bubbly: Despite the credit crunch, it seems that UK drinkers still like to pop a bottle

Cider boom goes pear shaped: The UK’s brief flirtation as a nation of cider drinkers looks to have cooled as quickly as a glass of Magners over ice, as poor weather and our notoriously fickle drinking tastes begin to take effect. Sales of cider in the UK grew 23% in 2006 to 965 million pints following the arrival of Magners Irish cider, but sales are now in freefall following dismal summer weather, England’s failure to make the European Championships and a shortage of apples. The latest trend is for pear cider, known as Perry, with Swedish brand Kopparberg selling more of its pear-based beverage than it does in Sweden.

remember when I tried my first English wine in 1976, it was a Somerset wine from Pilton Manor, a blend of grapes so alien to me I couldn’t even pronounce them! And the taste? Frankly dull with no charm and little fruit to the finish; but I persevered and started to collect as many English wines as I could trying to understand the type of grape that would grow well and produce wines of quality on a commercial basis. Over thirty years later the UK wine industry is here to stay with over 350 vineyards producing grapes varieties of excellent quality making Red, White, Rosé and Sparkling wines some competing very favourably on the international market. As a restaurateur I have supported the development of English (and Welsh) wines and truly believe that every Restaurant wishing to serve and produce dishes with local foods should also have a local wine to match. Back to history and vineyard sites that have paved the way for Westcountry wines to survive we have to start with the historic Yearlstone near Tiverton. The late Gillian Pearkes founded this sloping site in 1974 planting grapes with names such as Siegerrebe, Reichensteiner, Seyval Blanc and Huxelrebe. In main these grapes were cross-bred to

withstand our climate and disease. Yields were low and quality patchy but perseverance and ongoing technical know-how enabled grape growers to understand our soils and climate. Moving on to Sharpham vineyard in 1982 Mark Sharman planted Madeleine Angevine, Huxelrebe and Seyval Blanc aiming to make aromatic whites high above the beautiful River Dart near Totnes. Success followed, the best grapes identified to produce higher yields and quality ensued. Meanwhile Bob Lindo was planning retirement from the RAF with the aim of making the best Sparkling wine he could in Camel Valley near Nancallos close to Wadebridge. Nearly twenty years on the Lindo family have succeeded with what has been

described as one of the very best (and multiaward winning) Sparklers in the UK! So the scene is set to produce wines that define our climate and can certainly be more than a match for the lovely fish, shellfish and seafood we are blessed with here in the Westcountry. Sharpham and Camel Valley wines have developed their businesses to include excellent visitor’s centres where the winemaking process is easily explained. Tasting facilities are also available to discuss and compare wines for special occasions or perhaps for an original and thoughtful gift for family and business colleagues. When visiting local restaurants that specialise in original local dishes my tip would be to search out some of these excellent wines instead of the tried and tested wines that often festoon the wine list and confuse with their often wordy or flowery descriptions. Most people choose their food before their wine! So why not try reversing this process by selecting a bottle of Camel Valley Brut Sparkling as an aperitif. It will certainly rival Champagne with its sheer class and quality and charge the taste buds well into the first course. Shellfish such as Helford Oysters, Port Isaac Lobsters, South Devon Crab and Scallops all come to mind as dishes with some flavour that require a wine with character, Camel Valley Sparkling Brut, also known as Cornwall not Champagne, will deliver with panache. At Sharpham vineyard the grape Madeleine Angevine has become a very successful grape producing white wines with true English flavours of Elderflower, Apples and hedgerow fruit. It is also an excellent component for blending with other grapes enabling consistency throughout the range. Previously used American Oak Barrels are often included in the wine making process at Sharpham enabling the winemaker another tool when producing his range. Try matching Sharpham Dart Valley Reserve (DVR) with inventive vegetarian dishes or an eclectic Tapas election. Sharpham Barrel Fermented or Estate Selection are a tad more complex and match locally smoked Salmon and Mackerel, lightly spiced free-range Chicken dishes and the brilliant soft cheeses from Devon and Cornwall. In general the still white wines from both Sharpham and Camel Valley like to be consumed young to maintain their fruit and acidity so keep for up to two years old to retain the very best flavours.
