JUST CELEBRATE! It doesn’t seem to matter where in the world you are, it is just hard to get away from all the things that create fear and uncertainty. Whether it’s another threat of a recession, a war or increased costs of living, these messages rule the media worldwide. “Life is hard” they say; or is it just the attitude we have and the things we focus on that makes it hard. In the making of this issue of Roselands Style Magazine I was amazed by the number of people who regularly made negative comments about themselves. They were keen to point out their faults and easily bypassed the attributes that are truly fabulous. Though we don’t want to listen to anyone boasting about how great they are, I find it interesting that it’s ok and acceptable to be negative; it appears to be the norm. This issue of Roselands Style Magazine is about celebrating the small stuff, the daily stuff of who you are and what you have to do. We have provided ideas and solutions to help you celebrate life as it comes. Whether it’s adding colour to your kitchen, discovering your body shape, understanding a new point of view or cooking dinner, this is life. We are so lucky to have another day, eat everyday, love everyday and be free everyday! Leanne Carey Actress, Makeup Artist & Stylist “I’d like to have my own makeover television show.” That is the way Leanne Carey introduced herself. She walked into Centro Roselands with a makeover idea. As a stylist and makeup artist she wanted to gain experience doing makeover shows. She thought Centro Roselands would be a good place to start. Little did she know that for Centro Roselands, makeover shows had become a specialty that is built in and around their annual Roselands Style Magazine. It was Leanne’s straightforward honesty that got her the role as “makeover stylist” for this issue of Roselands Style Magazine. Working in conjunction with Roselands Hair Salons, Leanne’s role was to facilitate the makeovers of four young women who were chosen by Centro Roselands Hair Salons; F&V Hairstylist, Pizzazz Hair & Body, Sauvage Hair Design and Sheshwarz Hair & Beauty. She had to listen to what the hair stylists wanted and develop a fashion look that made both the salons and the models happy. She then had to present the looks on stage in a makeover show held on 25 August 2011. Her onstage role was to facilitate the event while she completed the models makeup and provided makeup tips. The hair stylists also completed the models’ hair on stage and then after a quick change the models were back on stage for the final reveal. In the pre-show preparation there is nothing more exhilarating than twelve women in a room, all with different opinions of what one person should wear. For Leanne there was only one final call, and it was hers. “Just because the dress fits, doesn’t mean you should wear it,” says Leanne. “It comes down to the person’s shape, their colouring, length of torso, legs and arms etc., you can’t just wear something because it is

in style, it has to suit the person; it has to be their style,” says Leanne. There is a determination & care factor about Leanne that is easily recognized. She knows what she wants and she goes after it. Leanne trained as an actress and in the early years found herself competing with the same people for many different roles. “I quickly realized I didn’t quite fit the mould at the time or maybe I just sucked,” says Leanne. Still loving the theatrical environment Leanne jumped backstage to work on numerous hit musicals in both wardrobe and makeup. She had the fortune to work with Hugh Jackman, Todd McKinney and Chrissy Amphlett on the The Boys from Oz and toured Australia with Liza Minnelli. That’s only naming a few of the many celebrities Leanne has worked with. In 2009 Leanne began her stylist studies with the Australian Image Company to enhance her skills and her craft. In 2011 she made her first trip to New York and LA to learn from some of the best stylists in the business. Her whirlwind tour brought her back to Sydney inspired and alive with ideas. Today Leanne is styling for Centro Roselands and her company Image Guru, where she transforms individuals and assists her clients in making long term changes. “Style is an attitude and you have to be open to who you are and what you have; bumps, lumps and all,” says Leanne.


One Size fits all... I think not!

As women we have many differences but we also have many things in common. Collectively this includes body type. There are six shapes to be aware of and if you know which type you are, you can save yourself some painful trips to the change room when out shopping. There is the hour glass shape. Apparently this is perfection and most clothes are designed to fit this shape. This is the preferred proportion but maybe that is just because it’s the most common pattern cut. In some way, shape or form every other body type will attempt to squeeze their way in and alter what needs to be done to stop the drooping, popping and splitting. This leads us to the triangle or pear shape that at times could literally swim in the top half of the hour glass shape because the bust area will be too big. Or there is the inverted triangle that swims in the bottom half of the hour glass shape because their hips are much smaller. Then we have the rectangle shape which needs to expand the waist, along with the ovals and diamonds who may end up crying in the change room as they painfully continue to try on the hour glass shape. Now if that’s not hard enough you also need to be aware of your vertical proportions and your horizontal proportions. This is the length of the torso, arms and legs and the distance between the bust, waist and hipline. So for the men out there… when you hear a woman say “I can’t find anything to wear”, this means she’s having a challenging day because not only does she have her shape to contend with, she may have gained a few pounds or is carrying a bit of water weight. It’s not easy being a woman. The bottom line here is you’re not weird shaped or just pathetic when it comes to wearing clothes. You are in fact human. What you have is what you have, and you are not alone in your body shape challenges. You just need to learn how to bring out your best, accept it and enjoy it!

The hour glass • Do wear garments that have shape at the waist line. • Include soft fluid fabrics that drape the body. • Emphasize the curves, but be careful not to overwhelm the shape of the body.

Avoid • Stiff fabrics, baggy boxy clothes and very tapered pants especially if you have short legs.

The triangle or pear shape This shape is bottom heavy arising from narrow shoulders, a small waist and larger hips. • Do create visual balance by broadening the upper body. • Use vertical design below the waist and horizontal above the waist. • Wear straight leg pants. • Accessorize the high points, around the neckline to bring the eye up.

Avoid

The inverted Triangle This shape has a heavy upper body frame arising from a larger bust and proportionately narrower hips. A flat bottom is also very common. • Do wear a good fitting bra. • Use vertical design above the waist. • Wear an A line skirt to create balance.

Avoid • Big collars and stiffer fabrics on the upper body. • Tapered pants and skirts.

The Oval This shape carries an overall appearance of being round, especially in the torso area. The aim is to elongate the body. • Do wear good fitting and support underwear. • Monochromatic outfits (all one color). • Wear vertical stripes on top to lengthen the torso. • Keep your hair style up to date and make it the feature of your look.

Avoid • Horizontal stripes and pleats. • Belts or tucking in tops. • Large pattern fabrics.

• Shapeless garments. • Hems at the widest point of your body. • Full skirts with wide open pleats.

The Diamond This shape can often look pregnant as the waistline is larger than the bust line or hipline. • Do wear low V necklines. • Always use vertical lines in tops, pants and skirts. • Use color blocking (one color all the way through).

Avoid • High necklines. • Over embellishments & loud patterns. • Clothes that emphasise the waist. • White on top, black on the bottom.

The RECTANGLE This is a common body shape that has a boxy silhouette, with similar circumference measurements of the bust, waist and hips. Rectangle women often appear shorter and heavier than they really are. • Do accessorize using high focal points to concentrate on your best assets. • Wear dresses that are straight or semi fitted • Wear pants with a flat front that are straight or gently flared.

Avoid • Clingy fabrics and fitted silhouettes. • Big loose tops.

Ebony’s body is a tall triangle shape with athletic shoulders and the focus in styling is to accentuate her waist. Her outfit shows off her shapely legs in skinny jeans and the top in chiffon fabric softens her look and her strong shoulder line. The geranium belt accentuates her waist line and gives the whole outfit a pop of colour. Her makeup is “Dewy Glamour” in gold tones.

Her best feature is the décolletage and this is accentuated with a deep V cut in her dress. Beige shoes provide her legs with extra length.

She has the kind of figure that most girls want; long, lean and easy to fit. Her makeup is smoky with violet tones to accentuate her light blue eyes and work in with her amazing new hair color.

Before

Hanna’s original hair colour was an uneven blonde, which required a full head of foils to even out the tones. The violet balayage was done from the mid length to the ends with a half head of platinum blonde and a violet slice on the fringe. The blow dry and GHD curls were done in small sections. A Makeover To remember

In the midst of the makeover show held Thursday 25 August, stylist Leanne Carey picked Beverly Hills resident Maria Papanicolaou out of the audience to join her on stage for a mini makeover. Maria was so appreciative on the night, Leanne invited her back for a full makeover to create a new and longer lasting look for Maria. Erin from F&V Hairstylist was happy to join Leanne to work on creating the perfect hairstyle and colour, while Sharon from Ella Bache assisted with an eyebrow and lip wax. Maria is a slim, tall triangle shape, so this requires high focal points to balance her shape. Her hair was coloured a rich brown to warm her complexion and highlights were added for softness. Her eye makeup was done in warm brown tones with apricot on the eyelid and a white kohl pencil around the inside of her eyes to create a fresh look and open the eye. The end result for Maria was very exciting. “I love it,” she said. During the photo shoot Maria worked the camera like a pro and her confidence showed through in each frame. The makeover timing was perfect as Maria’s next engagement was drinks with her girlfriends. They were “completely amazed,” said Maria. “When I got home my husband just kept staring at me, that means he was very impressed.”

Behind the Burka “I am a woman just like you. I have a heart that breaks when I am spoken to with prejudice because of what I wear or what I look like.” The streets of Lakemba are busy with traffic. It’s the 5.30pm rush hour and the shops are still full, the bargains are packed high and no one seems to be in a rush to get home. There is a friendly, jovial feeling in the air as shop keepers talk to patrons and friends. It’s hard to know which is which because overall there is a nice community feel with lots of smiles and laughter. Amongst the row of shops at the top of the stairs is Daaraisha College for Islamic Studies. The college is named after the wife of Mohammad. Its mandate is to teach understanding to Muslims, and how to practice their faith in the Australian context. There are several posters on the walls leading to the reception area. Some relate to the days the college is open to different groups; another announces that “Knowledge is Enlightenment”. Most would be familiar with the saying “Knowledge is Power.” Ibtissam Abdullah teaches women and children at the College. She is warm and genuine with a petite stature and lights up the room with a welcoming smile. She is peaceful and well spoken; a characteristic of her arts degree and a tell tale sign she is a student of philosophy and psychology. Today she has agreed to talk about being Muslim and wearing the Burka, or as she calls it by its proper name “Niqab”. A Burka, she says is like a big tent that goes from the top of your head right down to the ground, with small peep holes for the eyes. “I have no desire to walk around in a tent,” she says. The Niqab is a face covering that exposes the eyes and we have an overcoat and a scarf. “I wear it because it brings me closer to my creator in simplistic form. It is a very personal choice and a spiritual experience. It offends me when there is outside

interference with the choices I make,” she says. “I am aware that the Niqab can be intimidating because you can’t see my face, but I make a point of making sure I talk to people and smile at people and I invite all people to do the same. I am a woman just like you; I have a heart that breaks when I am spoken to with prejudice because of what I wear or what I look like. There is enough anger and sorrow in the world than to be concerned about what someone wears.” When asked how she would feel if the Burka was banned, she smiled. “Wouldn’t that just take us back hundreds of years when you start telling people what they can and can’t wear? Muslim women are not forced to wear the Niqab, there is a choice even in the Islamic legal system. There are some women where their husbands have asked them to cover up so they are the only ones who can enjoy their beauty; but it is still their choice. There is no repression here, it is all about faith and how we practice”.

“As Muslims we also have a responsibility to obey the law of the land and respect politics and other religions. Australia has always been a unique society and takes pride in its multiculturalism where people of different cultures, backgrounds and religions live together harmoniously, and this is what Islam teaches”. “When you listen to the news”, she says, “you think there is a battle going on everyday. In reality life is quite lovely, you do what you have to do, it’s simple and everyone goes about their own business, life is good”.

“Being a part of the community is one of the most important messages for our students at Daaraisha College,” says Ibtissam. “Community is the life force of everything and when people of all faiths share with each other it provides a bigger message of acceptance. No one wants to hurt people you care about, and more care is what we want in our lives. Every Muslim has the responsibility to serve mankind and be an agent of change. The best way to do that is to say g’day, smile, and get involved in the community”.

A celebration

of beauty Australia and its people

If turning heads was the mandate for being a contestant in the Miss Tourism Australia NSW preliminary finals held at Centro Roselands, then all of the contestants were winners. Nothing stops traffic like a group of young women in stilettos with legs from here to eternity and the season’s very short shorts fashion look. On 8 to 10 September Centro Roselands was abuzz with excitement, the smell of perfume, chatter and laughter from over twenty young women competing to grab the title of Miss Tourism Australia. With every competition one has to score in order to win and the judges job of scoring each contestant was not an easy task. There were many favourites in this “first ever” Miss Tourism Australia competition. The judges table consisted of Carmelo Pizzino – Dancing With The Stars; Peter Sereno – Pageant expert & coach who aided Jennifer Hawkins in her 2004 win; Sylvia Lee – Sylvia Lee Couture the designer and creator of this year’s Miss Universe Australia evening Gown; Rick O’Brien – International model booker; and Paris Ogden – National Marketing & Event Manager for Miss Universe Australia & Cosmopolitan Models. The event was hosted by Adam Williams. The girls paraded the catwalk in fashions from Centro Roselands Retailers whilst being judged on poise, personality, speaking ability and yes, “stunning good looks”. The stand out winners were Courtney Wells from the Sutherland Shire, Nikki Walton from Bondi and Myffy ScaddenMcHugh from the Central Coast. These three lovely finalists will go on to compete in the Miss Tourism Australia National Final crowning ceremony held in Melbourne in the first week of December. Hopefully one of them will travel to the 2011 International Miss Tourism World Final held in Kuala Lumpur Malaysia on 31 December. Regardless of who wins the competition, Australia is by far the winner when it comes to being a country of natural beauty.

Jason Sullivan Made by design If you were a fan of the recent season of The Block on Channel 9, you would recall that for Katrina and Amy, Jason Sullivan became their instant best friend. His design assistance provided them with their only room win for the show season. His input helped them deliver a very chic looking lounge room that showcased a wall unit designed by Jason and a coffee table made of logs that only an eye for style could choose. If style is what you’re after, and you’ve made a list of the things you want in the perfect stylish man, then Jason Sullivan might be the only thing on that list. Putting aside that physically he is very easy on the eye, his personality is pure lovely. There is a gentleness about him that almost stills the room, yet adds excitement at the same time. At first meeting he is shy, but he walks in with a peaceful and relaxing energy that instantly puts you at ease.

Through his travels he developed a keen eye for interior design – through his exposure to cultural changes, unique architecture, colours and textures. He became a student of his environment absorbing all that he could in each place he travelled. His real flair for design began as a young child when he used to direct his parents on what kind of furniture to buy. Today he is confident in his ability as a self taught interior designer with a job list that has him revamping extravagant homes on the north shore of Sydney as well as cottages in Bryon Bay. In his late thirties Jason concluded that his modelling career would become secondary and he began to pursue his love of interior design. His national exposure began in 2009 when he entered a design competition on Channel 9 called Homemade. It consisted of ten young designers working in teams to renovate duplicate properties. Jason came out as the winner with his natural talent. His peaceful energy during the show kept him calm regardless of the chaos surrounding him. “My approach is very simple, I focus on the job at hand and visualise what needs to be done. I see it as complete”. At times Jason can appear indecisive, but that is a processing mechanism as he examines the angle of approach. He has faith in his process and is confident it will all work out.

I really like the feeling of freedom to go where I need to go; it brings opportunity and new experiences.

For Centro Roselands, all of Jason’s talents have been utilised; his modelling for men’s wear and his interior design talents to showcase home decor in this issue of Roselands Style Magazine. He delivered the same delightful energy to both projects every step of the way. At age 40 Jason Sullivan is still a single man because that is the way he has designed his life. He’ll know instinctively when all that is supposed to change. Today he lives his dream as it happens, beach side in Collaroy on Sydney’s Northern Beaches.

A Celebration

of food With sammy & Bella

It’s 7am in the morning and the set crew is busy placing a make shift kitchen in the Food for Less precinct of Centro Roselands. Deli Pronto is stocking shelves and Costi Seafood and Bush’s Meats are busy lining their showcases with the products of the day. You can smell freshness throughout the area as Bakers Delight pulls the morning bread batches out of their ovens. “What’s going on?” is the question of the morning by customers and the answer: “the two sisters from My Kitchen Rules, Sammy & Bella are doing a cooking show today”. The girls arrive around 9am and it’s straight to makeup. Not only are they doing a cooking show, they are also being photographed for Roselands Style Magazine. As they introduce themselves Sammy comes across as the serious, matter of fact business person and Bella provides a light hearted enthusiastic energy to the duo. They are both charming and conversational and love to talk about food, their new business, and their travel adventures. They both came from fashion backgrounds prior to the MKR win, and you can tell; they have a sense of style you can see even in their chef whites. What is your favourite dish to cook for the family? Sammy – Lamb Shank Risotto! It’s a family favourite and I get requests for it every week. I love it because it’s cheap and a one-pot wonder, so clean up is easy. Bella – I love making Veal Goulash with Potato Pancakes. Just like Sammy, I hate washing up so this is a great one-pot wonder. It’s filling, satisfying and really reminds me of home.

Which cuisine do you favour when cooking? S – I really love Spanish food so naturally I love to cook it as much as I can! B – I love Malaysian food - it’s quite time consuming to make properly but the fresh flavours are just to die for. What is your pick for a quick and easy meal? S – I always have a good homemade stock in the freezer so a quick Mushroom Risotto is my choice for a delicious quick and easy meal. B – The quickest meal in the world has to be Steak and Salad. I love rib eye on the bone, cooked on a medium heat and sprinkled with finely chopped rosemary after it’s finished cooking. Which do you prefer to cook, entrée and main or main and dessert? S – I’m a dessert girl so main and dessert for me please! B – Entree and main for sure! But I love making deserts because I can see how happy it makes people – there are a lot of chocoholics out there! What’s the best advice for aspiring cooks (professional or not)?

S – Don’t over complicate dishes and cook as often as you can. Practice makes perfect! B – Taste taste taste! Every recipe will taste different if cooked by different people, because different people add different amounts of love. Make sure you taste and add loads of love! What was the best part about being involved in My Kitchen Rules? S – I loved everything about MKR, even the early mornings, but most of all I loved meeting so many amazing cooks and chefs. B – I have a very strong work ethic and I love being busy, so being able to work hard 24-7 and work with food was a dream come true.

CHERMOULA

CHICKEN WITH QUINOA TABOULEH by sammy & Bella

• 6 H&H free range • ½ tsp ground chicken thighs, turmeric skin off • 2 tsp mild paprika Chermoula: • ½ preserved lemon • 1 clove garlic • 2 tsp salt • ¼ onion • 1 tsp black pepper • ½ bunch coriander • 3 T olive oil (roots, stems and Tabouleh: leaves, reserving a • ¾ cup quinoa (75g) couple for garnish) • ¾ bunch flat leaf • ¼ bunch flat leaf parsley parsley • 1/3 bunch mint • ½ chilli • 1 large tomato • 1 tsp whole cumin • 1 spring onion • 1 tsp whole • 2 T olive oil coriander seed • 2 T sumac Corriander sprigs and lemon cheeks to serve.

In a dry frying pan, toast cumin and coriander seeds until fragrant. Remove and discard flesh of preserved lemon. Place all chermoula ingredients in a food processor or mortar and pestle and grind until reasonably smooth. Generously coat the chicken and marinate for at least 1 hour, preferably overnight.

GRILLED SKIRT STEAK WITH PARSNIP PUREE AND SALSA VERDE by sammy & Bella

Steak • 900g Bush’s Meats Skirt (Hanger) steak, Trimmed • Olive oil for marinating • 1 red onion sliced • 1 spring of fresh rosemary Mash • 6 Parsnips • 200ml water • 50ml Milk • 1tbs olive oil • 1 tbs butter • salt and pepper

Salsa verde • ½ bunch of parsley chopped • ½ bunch mint chopped • ½ bunch basil chopped • 2 anchovy fillets, chopped • 1tbs bread crumbs • 1tsp red wine vinegar • 3 tbs of extra virgin olive oil • salt and pepper

Combine all steak ingredients in a bowl to marinade over night. Then season and gently sear the steak on a hot grill on each side very quickly. Next place in oven on 50 degrees for 5 mins, then take out and allow to rest.

Peel and slice parsnips into 1cm pieces. Season and lightly sweat in a pan with a little olive oil. Add water, milk, butter, seasoning and cook until tender. Then process in a blender until smooth.

Salsa Verde – finely chop all herbs and combine all ingredients in a bowl.

Serve mash with sliced steak on top and some salsa verde.

Place quinoa in a pot with 330ml water and some salt. Bring to the boil and simmer, covered, for 15 minutes until all the water has been absorbed. Allow to cool then fluff with a fork.

Deseed and chop tomatoes. Chop parsley, mint and spring onion. Combine all ingredients and season to taste.

Meanwhile, bring a griddle pan up to a very high heat and cook chicken, turning occasionally for about 8 minutes until well charred and cooked through. Make sure you don’t overcrowd the pan, and rest the meat for 5 minutes before slicing and serving.


SCENTED CHOCOLATE POTS WITH HOME MADE

HONEY COMB by sammy & Bella 65g butter • • zest of ¼ orange • 2 cinnamon sticks • 100g dark chocolate • 2 eggs • 1 eggs yolk

• 2 egg whites • 20g caster sugar • Honey Comb • 180g caster sugar • 60g liquid glucose • 30ml water • 8g bicarb soda

To make dark chocolate mousse, place butter, orange zest and cinnamon stick in a small sauce pan and cook for 5 mins. Remove from heat and allow to infuse.

Melt chocolate in a bowl over a sauce pan of simmering water (don’t let the bowl touch the simmering water as it could burn your chocolate.) Set aside

Using electric beaters beat the two whole eggs and one egg yolk with the sugar until white and fluffy (about 10 mins)

Next drain and combine the infused butter into the melted chocolate then gently fold into the eggs and sugar mixture.

Next with clean and water free beaters and bowl whisk the final two egg whites to stiff peaks. Then finally gently fold in half the egg whites to the chocolate and then the other half. Place in small pots or presentation glasses and refrigerate until ready to serve.

To make the honey comb, place in a small sauce pan liquid glucose, sugar and water. Allow to simmer.

Line a baking tray with baking paper and place in fridge to chill (this helps to set the honey comb fast).

Once the sugar just starts to turn golden, get out your cold lined baking tray, add the bicard soda and whisk into the sugar syrup. You will notice it starts to bubble, expand and turn golden very quickly and you need to pour it out onto the tray very fast so it doesn’t burn. Allow to set.

Allow to cool and set (about 5-10 mins) then crush with a wooden spoon into small pieces and sprinkle about 1 tbs in each Chocolate Pot. Sprinkle with nuts if desired.

PRAWN,

SAFFRON AND PEA

RISOTTO by sammy & Bella

Remove shells, tails and heads from the prawns, and chop heads into smaller pieces. Heat 1 T olive oil in a stock pot and fry the shells on medium-high for 5 minutes, or until lightly caramelised and fragrant. Add chopped celery, bay leaf and 1.5L cold water. Bring to the boil and simmer for 20 minutes. Strain using a fine sieve and keep warm.

Cook very finely chopped shallots and cook gently in 2T olive oil, with some salt, in a heavy based saucepan. Once translucent, add finely

Deglaze the pan with white wine and scrape all the caramelisation from the bottom of the pan.

Once the alcohol has evaporated, add the saffron and begin to add the hot prawn stock 1 ladle at a time, stirring constantly with a wooden spoon; ensure the liquid has been absorbed before you add more stock. If you run out of stock, add boiling water.

Slice the prawns evenly lengthways, & remove the intestinal tract.

• 270g Carnaroli rice (or 4 handfulls) • 1 cup dry white wine • 1 small pinch saffron • 1 cup frozen baby peas • 50ml extra dry vermouth • 2T flat leaf parsley, very finely chopped • Salt and pepper

When the rice is just a few minutes underdone, add the prawns, peas and vermouth. Stir and take off the heat. Let rest for 5 minutes with a tight fitting lid.

With the prawns cooked just through, taste the risotto for seasoning. If it’s a bit dry, add a touch more hot water – it should be creamy and oozing, not thick and pasty. Serve immediately with a light drizzle of olive oil and a sprinkling of very finely chopped parsley.
