Maple Miso Glaze for Pork Belly Seasons by Atlantica, Atlantica Hotel Halifax, Chef Luis Clavel In this recipe Chef Luis Clavel creatively brings together flavours from Nova Scotia and the Far East to create this gorgeous sauce designed to be served with succulent local pork belly. The sweetness of the maple syrup is balanced perfectly with acidity of the white wine vinegar and the flavour of the miso. ½ cup (125ml) maple syrup 6 shiitake mushroom caps, cleaned and sliced 3 whole sliced Brussels sprouts (discard outer leaves) 2 tbsp (30ml) white miso 1 tbsp (15ml) white wine vinegar 1 tsp (5ml) sesame oil 1. In a frying pan heat sesame oil until a light smoking point. Add shiitake mushrooms and Brussels sprouts and cook until a golden caramelized colour is achieved. 2. Add white vinegar to deglaze the pan, then add maple syrup and miso and stir well and bring to a quick boil. 3. Remove sauce from heat and puree in a blender to a smooth consistency. 4. Strain the pureed sauce through a fine sieve. 5. Add sauce back to the pan and bring to a simmer. Finish the sauce with a tablespoon of butter to add a shine and richness. Season with salt and pepper Serve this sauce with braised and sliced Nova Scotia pork belly. It also pairs perfectly with local roasted carrots and Brussels sprouts.

Shrimp & Grits Brooklyn Warehouse, Chef Mark Gray For 4 people Since opening their doors 5 years ago, Brooklyn Warehouse has built a reputation around the inventive use of great local ingredients. A perfect example is this adaptation of a southern classic. This recipe is a wonderful way to showcase Nova Scotia’s beautiful cold water shrimp. 2 cup (500ml) course-ground corn meal 4 cups (1L) water 1 cup (250ml) heavy cream ½ cup (125ml) parmesan cheese, grated 1 cup (250ml) ham hock, cooked and pulled (strain, reduce and reserve cooking liquid) 1 cup (250ml) Chedabucto Bay shrimp, peeled (or any fresh or frozen Nova Scotia cold water shrimp) 2 tbsp (30ml) butter 1 cup (250ml) micro greens salt and pepper 1. In a medium pot, bring water to a boil. Slowly whisk in cornmeal. Cook on low heat stirring constantly for 10-15 minutes or until grits are creamy and begin to soften. Add shrimp to the pan and sautee until pink and cooked through, about 1 minute (depending on the size of shrimp). Remove shrimp from the pan and deglaze pan with reduced ham hock liquid. 4. Divide hot grits among 4 serving bowls. Spoon shrimp and sauce over grits. Garnish with greens and freshly grated Parmesan cheese. Serve immediately.

Cider Braised Quinoa Salad with Maple Balsamic Vinaigrette Atlantica Oak Island, Chef Roger Joharchy For 4 people If you are looking for a healthy and delicious recipe, this quinoa salad is a great choice. This simple dish can be served in a variety of different ways, but this version showcases local pork tenderloin. The ideal meal for a warm summer afternoon. FOR THE QUINOA

FOR THE VINAIGRETTE

1 cup (250ml) quinoa 2 cups (500ml) apple cider 2oz (60ml) Jost maple wine 1 tsp (5ml) salt 3 sprigs fresh thyme 2 bay leaves 1 tsp (5ml) vegetable oil

1/2 cup (125ml) Jost maple wine 1 cup (250ml) balsamic syrup* 1½ cup (325ml) extra virgin olive oil 1 tsp (5ml) freshly ground black pepper

1. Rinse the quinoa in cold water for 5 minutes. 2. Add all ingredients to a medium sized pot over medium heat and simmer for 25-30 minutes until the Quinoa is fully cooked. Add more cider if more liquid is required. Remove from heat, let cool and fluff with a fork.

Whisk all ingredients together until combined. *To make balsamic syrup, combine 2 cups (500ml) of balsamic vinegar and 2tbsp of sugar. Reduce slowly over medium heat to 1 cup. To assemble this dish, plate quinoa, with some mixed local greens. Slice roasted local pork tenderloin (at room temperature) and a ripe fig - around ½ inch (12cm) thick. Arrange the pork and fig on the plate by alternating slices. Drizzle vinaigrette on both the quinoa and the pork and figs.

South Shore Fish Cakes Trellis Cafe, Chef Emily Dunsworth Makes approximately 15 fishcakes This year’s Taste of Nova Scotia Prestige Award winner for Essence of Nova Scotia, Trellis Café, has been making mouths water with their many classic Nova Scotian dishes. The South Shore Fish Cakes are easily one of their best sellers. They can be enjoyed at any time of the day – for breakfast, lunch and dinner! 3lbs (1.5kg) russet potatoes, peeled and quartered 1 lb (450g) salt fish 1½ medium onions 3 stalks of celery including leafy top 2 tbsp (30ml) fresh parsley 2 tsp (10ml) tarragon 1½ tsp (8ml) savory 2 tsp (10ml) sage 1½ tsp (8ml) black pepper 1. Place potatoes in a pot and cover with cold salted water and bring to a boil until soft. Remove from heat and mash potatoes while still warm. 2. Boil salt fish in a medium pot for 7 minutes to remove some of the salt and soften the fish bits. Drain, let cool and flake into a bowl using fingers.

3. Cut up onions, celery, parsley and salt fish and finely chop in food processor or very finely by hand. 4. Add salt fish mixture and herbs to mashed potatoes and mix well and cool to room temperature. 5. Form fish cake mixture tightly by hand into 4 oz patties. 6. Heat non-stick frying pan over medium-high heat, add canola oil. Coat fish cakes in flour (or quinoa flour for gluten free) and remove any excess. Carefully place fish cakes in the pan and fry until golden brown on each side. 7. Drain fish cakes on paper towel. Serve with green tomato chow chow. Please note: Fish cake patties can be made ahead of time and kept in the refrigerator for up to 3 days.

Masstown Market Cinnamon Rolls Makes approximates 15 cinnamon rolls As one of Nova Scotia’s favourite culinary destinations, the Masstown Market has been wowing customers with their incredible baked goods for over 50 years. They have become famous for their breads, rolls, donuts and scones, which are all baked on site, from scratch, seven days a week. But one item that gets an extra amount of attention is their irresistible cinnamon rolls – best enjoyed while they are still warm an chewy. FOR DOUGH 6 cups (1.4l) flour 3 tbsp (45ml) baking powder ½ cup (125ml) brown sugar Pinch of salt 1 cup (250ml) vegetable oil ½ cup (125ml) powdered milk 1 egg 1 ½ cups (375ml) water

FOR FILLING 1 ½ cups (375ml) butter, softened 2 cups (500ml) brown sugar 2 tbsp (30ml) cinnamon 1. Mix dry ingredients together. In separate bowl add water and oil to a lightly beaten egg. Add the wet ingredients slowly to the dry ingredients. Mix until incorporated.

2. Roll out on a floured work surface to ¼ inch (6cm) thick. Spread butter all over dough and sprinkle generously with brown sugar and cinnamon. 3. Roll up from long side, jelly roll style. Slice into ½ inch (12cm) pieces. Place on a parchment lined baking sheet. Bake at 350F (175C) for 20-25 minutes. Bake until golden brown. 4. Remove rolls from the oven and let cool on a wire rack. To glaze cinnamon rolls whisk together 1 ⅓ cup (315ml) powdered sugar and 2 tbsp (30ml) milk. Drizzle glaze over the cinnamon rolls while they cool.

Gidney Fisheries is a privately held, family-owned lobster company spanning four generations of the Gidney family, located in Southwestern Nova Scotia. In 1892, Samuel Gidney began buying lobsters from local fisherman and exported them on a weekly basis via steamship to Boston, Massachusetts, and this tradition continues today. We purchase our lobster products directly from local fisherman in the Bay of Fundy and St. Mary’s Bay, Nova Scotia. We have fresh-caught lobster for 9.5 months of the year and supply our clients in the off season from our temperature-controlled lobster holding facilities in Metaghan and Centreville, with a combined 400,000+ lbs of holding.

Apple, Maple & Mustard Caramelized Ham Meadowbrook Meat Market For 4-6 people Meadowbrook Meat Market in Berwick is “Home of the Jimmie Lamb Ham�. Choose from their fully cooked boneless hams (either natural wood smoked, maple ham) or a ham that requires roasting (old-fashioned ham or picnic ham). Purchase Meadowbrook directly from their farm market or or their shop at Alderney Landing in Dartmouth. FOR THE GLAZE:

2 tbsp (30ml) maple syrup 2 tsp (10ml) Dijon mustard

1 cup (250ml) apple cider 4 tbsp (60ml) maple syrup 1 tbsp (15ml) Dijon mustard 2 tbsp (30ml) apple, peeled and diced salt and pepper

1. Preheat oven to 350F (177C). If using a fully cooked, boneless ham, place ham in oven and warm to 130F (55C). 2. Whisk maple syrup and Dijon together. Brush sauce onto the warmed ham. Return ham to the oven uncovered. Broil on high in the middle of the oven about 10 to 15 minutes. Check to see that the maple and mustard make a nice caramel color. (Watch carefully while under the broiler to avoid burning the ham.) 3. Remove from oven, slice and serve with the apple maple mustard reduction.

1. Place all ingredients in a sauce pan over medium heat and reduce until half. 2. Before removing from the heat add the apple. Simmer for two more minutes.

The ham can be served with local in season vegetables such as roasted potatoes and steamed asparagus. This ham recipe is also perfect to eat as leftovers.

Seafood Chowder LeCaveau Restaurant, Grand Pré Winery, Chef Jason Lynch Serves 4 people A trip to Nova Scotia is never complete without a bowl of seafood chowder. Chef Jason Lynch shares his unique take on a Nova Scotia classic. This chowder is best enjoyed with Nova Scotia’s signature white wine, Tidal Bay. 8 medium scallops, cut in half ½ lb (225g) cooked lobster 1 cup (250ml) chicken stock 3 cups (750ml) water ½ cup (125ml) cream 4 slices of potato bread 2 cloves of garlic 4 tbsp (60ml) of ground almonds 2 green onions, thinly sliced ½ cup (125ml) toasted slivered almonds pinch smoked paprika sea salt and white pepper

1. Break up the bread and soak in cream for 20 minutes. 2. Bring stock and water to a boil in medium pot and then reduce to a simmer. Add the soaked bread and cream, puree well with a hand blender. 3. Add almonds and finely chopped garlic. Season to taste with sea salt and white pepper. 4. Add scallops to the chowder and simmer for 2 minutes. 5. To serve, place cooked lobster in the bottom of individual serving bowls and ladle chowder on top. Garnish with slivered almonds, green onions and smoked paprika. Serve right away.

Cider Braised Chicken Chanterelle Country Inn & Cottages, Chef Bryan Picard For 4-6 people This rustic chicken dish was inspired by Chef Bryan Picard’s love of cooking with cider, especially Tideview Cider’s Heritage Dry. This is a great recipe for entertaining as it can be made ahead of time and left to simmer away on the stove all afternoon filling your home with amazing aromas. 1 whole chicken, cut into 8 pieces 2 cups (250ml) hard cider ½ cup (125ml) tomato sauce 1 medium leek, cleaned and sliced ¼ cup (60ml) sunflower or grapeseed oil ¼ cup (60ml) heavy cream ¼ cup (6oml) flour 1 bay leaf salt & freshly ground black pepper 1. Heat the oil in a large skillet. 2. Dust the chicken in the flour sear the chicken pieces for a few minutes on each side until they are golden brown.

3. Transfer the chicken to a medium-sized pot and deglaze the skillet with half of the cider. Allow to simmer for 1 minute. Add this to the chicken with the rest of the cider, leek, tomato sauce and bay leaf. Simmmer on low heat, half-covered for at least 2 hours, stirring occasionally. 4. Add the cream. If you want the sauce to be thicker, low-boil until the sauce reduces. Taste and season with salt and pepper. 5. Finish with some fresh chopped chives, tarragon, or parsley.

Pan-Fried Chili Redfish Louisbourg Seafoods For 4 to 6 people Louisbourg Seafood’s Mira Bay Redfish (sebastes mentella) is harvested from the Northwest Atlantic on a year round basis, using both sustainable and eco-friendly harvesting methods. Enjoy your “Taste of Tradition” today. 6 redfish fillets (4-6oz each) ½ cup (125 ml) all purpose flour ¼ cup (60 ml) canola oil 1 fresh green chili, minced 2 tbsp (30 ml) coriander powder 1 tbsp (15 ml) chopped fresh coriander 1 tbsp (15 ml) lemon juice 1 tbsp (15 ml) chili powder 1 tsp (5 ml) minced garlic 1 tsp (5 ml) minced ginger 1 tsp (5 ml) turmeric powder Salt 1. In a bowl, combine all ingredients (except flour). Coat redfish fillets completely with mixture and marinate for at least 15 minutes. 2. In a non-stick frying pan, bring oil to high heat. 3. Dust each piece of fish in flour. Add to pan and fry on each side until golden brown. Finish the redfish in a 350F (175C) oven for 4 minutes. Fish should flake easily when tested. 4. Serve fish on a bed of mixed or sautéed greens with the reserved pan dripping served on and around the fish.
