Italian Chicken Romano 6 boneless skinless chicken thighs 2 medium zucchini, cut into 1-inch slices 1 medium green pepper, cut into 1-inch pieces 1 large onion, coarsely chopped 1/2 teaspoon dried oregano 1 cup sliced mushrooms 1 teasponn chopped garlic 1/4 cup chopped basil reserve some for garnish 1 jar your favotite spagheti sause Any pasta cooked al dente 1/2 cup romano cheese reserve 1/8 cup for garnish Pat chicken dry and season well with salt and papper to taste. Brown in sauce pan 3-4 minutes each side until no longer showing pink meat. Remove from pan add some olive oil to pan brown onions, zucchini, mushrooms, peppers, oregano, basil and when almost cooked add garlic so as not to burn. Add sause put chicken back in pan and cook 15 - 25 minutes. Pour over cooked pasta top with badil and cheese!
