Zucchini Muffins

3/4 cup all-purpose flour

1/2 cup sugar

1/4 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/4 teaspoon ground cinnamon

1 large egg, room temperature

1/4 cup canola oil

1 cup finely shredded unpeeled zucchini

1/2 cup chopped walnuts

1/4 cup dried currants or chopped raisins

1. Preheat oven to 350º. Coat muffin cups with cooking spray or use paper liners; set aside.

2. In a bowl, combine the first 6 ingredients. Combine egg and oil; stir into dry ingredients just until moistened. Fold in the zucchini, walnuts and currants.

3. Fill muffin cups three-fourths full with batter. Bake until a toothpick in center comes out clean, 22-25 minutes. Cool for 5 minutes before removing from pan to a wire rack.

Refunds

Installation

Exhibit Space Care

Each exhibitor must keep spaces clean and exhibits staffed and in good order. All exhibits must be ready for dislpay by 10a.m. Saturday, November 25, 2023.

Unoccupied Space

If the exhibitor fails to occupy space contracted for by Saturday, November 25, 2023 at 10a.m. or fails to comply in any other respect with the terms of this agrrement, The Daily Independent & The Swap Sheet shall have the right to use such space in any manner without releasing the exhibitor from paying the sum agreed upon in this contract.

Limitations

Exhibits shall be so installed that they will not extend beyond the space alloted. Distribution of printed matter, souvenirs or other articles must be restriced to the space of the exhibit. Any part of the exhibit that is over eight (8’) high must have written approval for installation by The Daily Independent & The Swap Sheet. No individual public address systems or highly flammable materials will be permitted on the premises. Music or audio-visual sounds must not be audible more than five (5’) feet from booth.
