I

t’s been two weeks since my family of three has grown to a family of five— and no, I didn’t have twins or adopt a pair of pups. We moved in with my parents while our house undergoes major construction (a remodel that will eventually be featured on HGTV; stay tuned, literally, for updates). Transition is always an interesting time, especially when it involves returning to your roots and bunking up with your mom, dad, husband, and two-year-old. Mornings look different now (mainly louder…and earlier), family time is all the time, and privacy is pretty much nonexistent. It’s not better; it’s definitely not worse; it’s just different. But change, in my opinion, is oftentimes a good thing—especially when it involves a pool, built-in babysitters, and a fridge full of tasty food. Plus, my parents aren’t getting any younger, nor is my daughter, so I’m going to cherish this time together and make the most of our “summer vacation.” If you, too, are looking to maximize the hot days ahead, keep reading. This month’s magazine will have you jumping for summertime joy, starting with our feature on page 53. From cool ice cream concoctions (including the colossal cone on our cover from Snooks) to in-person (finally!) events that run the gamut from a grape stomp at Wise Villa Winery to a good oldfashioned fair, plus top spots to make a splash, there’s something to ensure everyone has fun in the sun. Just remember: Be water wise (for top swim safety tips, see page 62), stay hydrated (don’t miss “Drink Up: The Importance of H20” on page 34), and wear sunscreen (check out our top blocks and other summertime essentials on page 40). Finally, how could we forget the rad dads? Father’s Day is June 20, after all. When I asked my husband how he wants to celebrate, he replied: “a round of golf, followed by a beer and family BBQ.” Easy enough, eh? If you also have a golf-obsessed guy on your hands, check out “Greens with Envy” (page 24) for 10 tee-rrific public courses that are pretty without being pretentious. In —Oprah Winfrey “Family Matters,” we introduce you to four local fathers who go above and beyond for their kids and our community. Read their unique, and uniquely touching, stories starting on page 18. There’s plenty of things to see, do, and celebrate this summer, so grab your loved ones (maybe even move in with them!) and seize the season. Cheers!

The City of Roseville is transforming a courtyard garden at Mahany Park into a water-wise Inspiration Garden, which—when complete this summer—will feature nearly 300 new plantings (California natives as well as low- to mid-wateruse plants and trees that allow for year-round color and texture), plus proper irrigation practices, soil management, mulch, and the proper mix of plantings to encourage pollinators. Construction has commenced on the $6.5 million expansion of the Chabad Jewish Community Center of Placer County, a project that will more than quadruple the amount of space and allow for a shul (worship space), social hall, commercial kosher kitchen, classrooms for preschooland elementary-age students, indoor and outdoor play areas, mikvah (ritual bath), and a children’s library. Dads. They’re slayers of dragons, fixers of things, teachers of lessons, and tellers of really bad jokes. As we celebrate Father’s Day this month (June 20), we’re grateful for the wit, wisdom, and wonder they bring to our lives.

What’s your parenting style? My father was ex-military, which led him to parent in a very authoritarian manner. I, on the other hand, try hard to connect with my children so I can guide them, praise them, and meet their needs. Being firm but warm, I hold high expectations but reward equally. How has fatherhood changed you? I quickly learned I’m not perfect. It has helped me to continuously take stock of what I’m doing, change what I can, and accept what I can’t control. What life lessons do you hope to impart to your children? There will always be peaks and valleys in life—like a roller coaster! Cherish the good times and learn from your mistakes.

ick has shined in his 40-year career in the fire service. “Being in a position to help others never gets old,” he says. Although this genteel man is the current fire chief of Roseville, to his six kids, he’s simply “dad.” His son Kevin (39) is also a fire captain who shares many traits with his dad; Sarah (34) is patient, soft-spoken, and works for a water distribution company; and Kristin (32) is introverted, expressive, and works in retail. Rick and his wife, Jennifer, became certified foster parents in 2005, welcoming siblings Milo and Tatianna whom they later adopted. A few years after, a fellow firefighter looking for foster care for a relative, brought Boston into their lives. He was adopted thereafter and the three are now thriving. Tatiana (17) is independent and loves the arts; Milo (14) is outgoing and responsible; and Boston (10) is spirited and the most competitive of the six! Describe your foray into fatherhood. With all the children, I cherish the times when they were little.

He adores his girls, too: Scarlette (14), his energetic biological daughter, who is a Friends fan and loves cracking jokes; and Kailei (15), his partner's daughter who considers Chris her dad and is strong, independent, and a drama enthusiast. Describe your foray into fatherhood. When Scarlette was young, I was told I couldn’t see her anymore. I wasn’t in a place to afford legal action so, unfortunately, we had no relationship for a few years. Three years ago, I started a reunification process and was awarded full custody about a year ago. We now have a great relationship. Recently, teaching the girls how to drive or talking to them about relationships and watching them turn into women has been amazing to experience.

How has fatherhood changed you? It taught me how to put others first. Having two girls taught me to look at things from a female perspective. I now try and be an example so when they’re in a relationship they understand what it’s like to be treated properly. What life lessons do you hope to impart to your children? If you’re with someone who has a child, treat them as if they’re your own. Be open to life. Love others no matter their finances, race, sexuality, or education. Follow through with what you say you’re going to do.

Q&A Best part about being a dad: Watching them grow and seeing what you’ve instilled in them as they navigate life and become their own person. Favorite activity to do with the kids: Traveling/camping, watching ’80s and ’90s movies, and watching them laugh at things I

ou’ve probably seen Adrian around Folsom. He’s the guy with the big smile and bounce in his step. You’ve also likely seen him at community events and festivities; present at Rotary Club and Lions Club fundraisers; and contributing his time to nonprofits like Folsom’s Hope, the Folsom Bulldogs, and Twin Lakes Food Bank. Adrian’s also an avid supporter of first responders and does a lot for them. Having kids is something I've always looked forward to since I came from a huge family [but] I truly did not know the "love" my parents have for me until I became a parent myself. It's that indescribable, unconditional love! What’s your parenting style? I oscillate between being an authoritative and permissive dad. Setting rules are important but at the same time I believe in letting kids be kids. How has fatherhood changed you? My desire to love, protect, and provide is stronger than ever. I've realized that I'm able to feel certain emotions that I didn't know I was capable of feeling. It's amazing! What life lessons do you hope to impart to your children? Every parent wants the best for their children. I just want them to grow up happy knowing that they matter above anything else in this world.

Christina (25) is a black belt in karate, has a master’s in applied physics from Harvard, and works for a research lab; Joey (22) is an Eagle Scout, rower, and natural leader who's currently studying computer science at MIT; and Nick (20) was also a scout and is at MIT where he sings with the Logarhythms. Describe your foray into fatherhood. Before we moved to Folsom in 1995, we were considering adoption since children just didn't seem to be forthcoming. There must be something in the water here since we ended up with three awesome kids. Before Joey’s college freshman year at MIT, we learned that he had a brain tumor. He subsequently took a gap year to receive treatment at St. Jude Hospital in Memphis. Dealing with his brain tumor was a real ordeal for the family, but it also brought out the best in us. What’s your parenting style? Laissez-faire. I try to raise my kids by example, ensure that they have options, and nudge them a bit while giving them space to make their own choices. How has fatherhood changed you? The responsibility certainly changed my priorities. I would probably be a bit more adventurous if I didn't have kids, but it's been a fun, extremely rewarding ride. What life lessons do you hope to impart to your children? Do the right thing; give back to the community; use your talents to make the world a better place; volunteer.

When Lily, her sister Sam, and their mother move in with her sick grandmother, Lily traps a tiger and makes a deal with him to heal her. Magical elements and a diverse cast of characters make this book a winner.

What’s your all-time favorite book? To Kill a Mockingbird by Harper Lee is timeless. What’s your all-time favorite book? Becoming by Michelle Obama. Our former first lady’s candid and humble story is beautifully written with her true emotions coming through in every anecdote. It’s uplifting, telling, and often laugh-out-loud funny. Which author do you consider a must-read? An author that I try to push on nearly everyone is Fredrik Backman. The Swedish novelist’s stories are character-driven and amazingly relatable. The way he weaves his stories allows you to take them as light reading or dig a little deeper to think about relationships and human nature. I especially recommend A Man Called Ove and Anxious People. What book would you recommend for summer reading? No matter what your summer plans are, make sure you take some time to read The Bad Muslim Discount. Sacramento author, Syed Masood, is hilarious! His story of several Muslims growing up throughout the world and then immigrating to San Francisco touches on faith, family, and assimilation. Masood’s deep insights are masked in a hard-toput-down story that’ll make you feel all the feels!

You won’t feel the same about any of the characters by the end. What author do you consider a mustread? Jane Austin! Who doesn’t love a romantic, feel-good story? What book would you recommend for summer reading? The Honeymooner by Melanie Summers. It’s a light, fun, non-stressful read about a woman who gets dumped on her wedding day but goes on the honeymoon anyway.

Scott Fitzgerald’s The Great Gatsby, despite some terribly problematic language and representation in the book. I’ve enjoyed revisiting Gatsby from a social-historical perspective through books like So We Read On by Maureen Corrigan and Careless People by Sarah Churchwell. This year, the book entered the public domain, and I’m very excited to read some of the modern retellings of the story, especially The Chosen and Beautiful by Nghi Vo, which reimagines the character of Jordan Baker as queer, Asian, and able to use magic! I’m very intrigued. What author do you consider a must-read? For me, Donna Tartt is a must-read author. She only publishes a novel every 10 years or so and, in my opinion, they’re always worth the wait. What book would you recommend for summer reading? I enjoyed The Ladies of the Secret Circus by Constance Sayers. Its spooky and mysterious but also light and fun to read, which is what most people seem to want in a summer read. However, I’m planning to binge on a series of Scandinavian crime novels—Helen Tursten’s Detective Inspector Huss—this summer. Tursten was recommended to me as a “female Jo Nesbo,” so I’m anticipating some first-class grit and gore in them. JUNE 2021 |

GEOLOGY 101: HOW WAS TAHOE FORMED? Despite widespread belief that the Tahoe Basin came about due to a collapsing volcanic crater, the third deepest lake in North America was actually created by fault dynamics. As the two ranges around Tahoe formed (the Sierra Nevada to the west and Carson Range to the east) a valley was established. Meanwhile, lava flow initiated a dam to the north of present-day Lake Tahoe, where a lake formed and eventually carved a new path: the present-day path of the Lower Truckee River. With the onset of the Ice Age, giant glaciers flowed down the valleys, forming large, U-shaped valleys, bare, jagged peaks, steep hillsides of gravel and rock (known as moraines), and pristine lakes that characterize Desolation Wilderness.

The City of Roseville is ready to help you beat the heat! Check out the water features at Vernon Street Town Square (311 Vernon Street), Nela Luken Park at the Village Center (2350 Pleasant Grove Boulevard), and Harry Crabb Park (1000 Scarborough Drive). Open 10 a.m.-8 p.m. daily (thru Labor Day). Though technically an outdoor mall and not a park, you can still stay cool (and meet some cool kids, too!) at the Fountains at Roseville. Their interactive children’s fountain (open daily till September from 11 a.m.-6 p.m.) is a family-friendly favorite come summertime. Folsom’s mini water park and splash pads operate daily from 11 a.m.-7 p.m. until the end of September. No pool? No problem! Take advantage of our region’s lakes and rivers by going for a sunset paddle-boarding session, wakeboarding adventure, or heading to a pictureperfect beach for a picnic and quick dip.

Enroll in swim lessons. The earlier a child starts swim lessons, the better, as they’ll achieve developmental, physical, and social benefits, and gain skills ensuring a lifetime of safe, fun swimming.

Children should ultimately learn to swim without goggles and be comfortable opening eyes underwater. As kids become dependent on wearing goggles, they lose the ability to swim if their goggles fall off or fill with water. If a child happens to fall into a pool without goggles, it’s critical they’re comfortable opening their eyes, so they can locate the nearest step or wall and swim to safety.

Lake Natoma is the area’s go-to kayaking, stand-up paddling, and sailing spot, thanks to its 5-mph speed limit. Check out the Sacramento State Aquatic Center (sacstateaquaticcenter. com) in Gold River for Sunset Paddle excursions (held every full moon throughout the summer) and Youth Summer Camps for kids ages 7-17; offerings include Basic Boating Camp, Sailing Camp, or Rowing Camp. They also offer kayaking, sailing, and stand-up paddling lessons for beginners, in addition to rentals. For some fast-paced summer fun, Folsom Lake is the primo place to play. Beat the heat while boating, jet skiing, swimming, or windsurfing into the sunset.

Limit the use of flotation devices. These devices create a false sense of security and cause children to become dependent on swimming with them. If a child falls or jumps in a pool, it’s important they know how to float and/or put their face in the water, without the aid of a flotation device, and swim to the side of the pool. With that said: Always make sure your kids wear life jackets on boats, personal watercraft, and in open bodies of water.

Follow a “getting ready to swim” routine before swimming. Just like a morning routine, if a child follows a “getting ready to swim” routine, such as going to the bathroom, putting on a swim diaper and suit, and applying sunscreen, it helps deter them from jumping into a pool on a whim.

Keep children under constant supervision. No matter how advanced you think your child is at swimming, they must always be supervised when in or around the water.

Know CPR. CPR is a procedure that everyone should know how to do. You never know when administering CPR could help to save a life.

Install pool fences or other barriers. If you have a pool, installing fences or other barriers around the pool is highly recommended, especially if there are children near the area.

Starting in the Sierra Nevada Mountains and with three distinct forks, the American River provides plenty of swimming spots, like Clarks Hole (also called Clarks Pool) on the North Fork. Walk the Clarks Hole Trail, enjoy the waterfall along the way, and spend the day soaking in the swimming hole. Those with an even bigger appetite for adventure can get splashed by the river’s rapids on a whitewater rafting expedition. There are dozens of commercial outfitters listed on theamericanriver.com/ recreation/whitewaterrafting, but we recommend booking with OARS (an international company with headquarters in the Sierra Foothills).

It’s early April, and my wife, Wendy, and I are thinking about doing something fun for our 20th wedding anniversary. Hawaii seems like a good choice, but the Covid travel restrictions are a bit onerous. How about Santa Monica—the place where a lot of our courtship took place, and a piece of the world we love? “No, I’ve got it! Let’s go to Ohio—Cincinnati to be exact!” Wendy turns, looks at me, and with a big smile says: “Yes! That's perfect.” Though we’ve been fortunate to visit many places throughout the world, there’s always something new and interesting to be found in the thousands of cities and towns here in the U.S.—and in this new (almost) post-COVID time, it's a great time to explore them. First up, we checked out Cincinnati's Tourism Bureau, which lead us to

Getting to Cincinnati proved to be effortless, even with the airlines’ reduced schedules making travel more difficult. Both

Southwest and United offered good options. Of course, choosing the right hotel to stay at was the most important choice. We were looking for something comfortable, centrally located, and more “boutique” than business. After some research, we zeroed in on a hotel that checked all the boxes: 21c Museum Hotel Cincinnati (21cmuseumhotels. com/cincinnati). Situated in the heart of the city, this boutique hotel is a multi-venue contemporary art museum, has an awardwinning restaurant and is an easy walk to almost anywhere, including a tram stop around the corner. Speaking of the city’s streetcar (the “Cincinnati Bell Connector”), it takes you through most of downtown in around 20 minutes, is comfortable, and free. After an easy check-in and quick look around the hotel’s exquisite art collection, we

were off to the Great American Ball Park (mlb.com/reds/ballpark) to see the Reds host the Pirates: our first in-person ballgame in almost two years! Watching the Reds—baseball’s first professional franchise— win 14-1 from great seats in a beautiful park made for an ideal introduction to the city. Walking back to the hotel, we stopped at a trendy Mexican/South American cantina called Nada (eatdrinknada.com) for some small bites and a glass of wine. There’s something about outdoor café dining in a small “big” city (a little smaller than Sacramento) that I’ve always loved, and this fit the bill perfectly. Day two meant a visit to one of the main attractions on our agenda: the Cincinnati Zoo & Botanical Garden (cincinnatizoo. org). This wonderful zoo—the second oldest in the U.S.—is consistently voted as one of the best in the nation and houses more than 500 animals and 3,000 plant species. It holds a special place in many people’s hearts, because of the January 2017 premature birth of Fiona the hippo who became an Internet sensation. At 29 pounds, Fiona was born at less than half the size of a normal baby hippo, and that’s where the story begins with the staff going to extreme measures— along with the zoo team, local hospitals, NICU nurses, and all kinds of specialists—to keep this little girl alive. Fiona is now four-and-a-half and close to 2,000 pounds. She and her mom, Bibi, are one of the zoo’s highlights. Plan on spending the day here, because, along with the hippos, there are giraffes (which you can feed!) gorillas, lions, rhinos (another baby!), cheetahs, manatees, and and so more. After, it was back to the hotel where we were given a private tour of their art exhibition by the Museum Manager (and artist in his own right) Michael Hurst—one of the many things that makes this property, and all the hotel’s other locations, so special. The founders of 21c, Laura Lee Brown and Steve Wilson, are contemporary art collectors and preservationists, specifically 21st century art (hence the hotel's name). Hurst guided us through the current exhibition, Dress Up, Speak Up (21cmuseumhotels.com/cincinnati/blog/2020/take-a-virtualtour) which takes up the first two floors of the hotel. This specially

comissioned curated collection features works from renowned artists such as Fahamu Pecou, Jody Paulsen, Firelei Báez, Carlos Gamez de Francisco and many others, and is a marvel to behold. One of the unique features of the hotel is not only their rotating exhibitions, but art is everywhere within the hotel; the walls of the elevator, the landing on every floor, pieces in every guest room—including the bathroom which featured custom body-part (think nose, lips) tiles by Cincinnatibased Rookwood Pottery Company—even the lobby desk is a work of art. You could spend your entire trip just gazing at this massive collection throughout the property. Even cooler is one of the missions behind the hotel: “the belief that art can be a vital part of daily life and a spark to ignite new energy and ideas.” To that end, the museum’s exhibition is open 24/7/365 and free to the public (though during COVID, reservations are required, and times are limited). That evening we dined at the hotel restaurant: Metropole (metropoleonwalnut.com). This is a hotel restaurant whose design would be fitting in any great city—from NYC to London or Berlin. It’s open and airy with the kitchen and staff in full view. After ordering our usual glasses of pinot noir, our knowledgable and convivial server, Jeremy, brought us a taste of a South African red blend: Lubanzi. He said if we were predisposed to pinot, we might find this wine interesting. He nailed it, and we ordered a bottle. We had the Crispy Deviled Eggs to start that were deliciously indulgent. While they haven’t produced for decades, the smell of hops and yeast still hung in the air. simply in awe of all the different types—and their curated collection of teas can be purchased online too. Just a couple of doors down, we came to Dean’s Mediterranean Imports (mediterranean-imports. com), a combination of deli, market, and rare spice shop where you can buy as little or as much as you want and need. This place oozed history, with old-world spices filling the air and selections of cooking items that would appeal to the best chefs in the world. Tip: try their falafel wrap. Around the corner we came upon another staple business of the market, Eckerlin Meats (eckerlinmeats.com), founded in 1852 and now managed by Josh Lillis, a sixth generation family member. Impressed by the overall selection, we enjoyed their specialty product called goetta—a mixture of pork, beef, oatmeal, onions, and spices, formed into a loaf, and cooked slowly. It s been a part of Cincinnati cuisine since the first German immigrants arrived. Sweet, smoky, and served fried, I think it would settle in next to eggs over easy and hash browns quite well. Next up, Taste of Belgium (authenticwaffle.com)—Cincinnati’s favorite waffle shop started by Jean-François Flechet in 2007. Though pretty full at this point, after listening to team member Michael Polk explain the company's philosophy, and watching him prepare the original waffle topped with strawberries and whipped cream for us, how could we possibly resist? Yeah, we devoured the delicious treat in a matter of seconds—we couldn’t help ourselves! We left Barbara and the market, thanking her for a delightful tour that really opened our eyes to the city, its culture, history, and culinary treats. Our last day started with some spa therapy at The Spa at 21c, which was exactly what we needed. After two days of walking practically non-stop, our bodies were ready for some pampering. I opted for a facial and Wendy opted for a massage, which she described as “one of the best massages I’ve ever had!” While we were then thoroughly relaxed and wanted to go back to our room for a nap, we hunkered down and continued to explore, heading first for a quick bite at Wahlburgers (wahlburgers.com) and a little shopping at the storied hat shop adjacent to the hotel, Batsakes, which opened in 1907 and offers off-the-rack or custom-made caps. At this point, we couldn’t walk another step, so we took advantage of the free Cincinnati Bell Connector streetcar taking the 3.6-mile round trip journey through The Banks, downtown and Overthe-Rhine. As we packed our bags to head home, I couldn’t help but think what a terrific time we had in Cincinnati—our only regret is that we couldn’t stay longer and enjoy even more of this grand city’s delights. Cincinnati is picturesque and steeped in rich history, but the real takeaway was the people—some of the nicest I’ve encountered in all my travels around the world. I asked Wendy if she would want to come back, and her answer put our entire trip into perspective. “Come back? Heck, I’d move here!” I couldn’t have said it any better myself. JUNE 2021 |

think my editors must cringe when they assign me to a sushi restaurant— they know I’m going to “roll” right through my budgetary stop sign. Fortunately, they’re great people, and I try not to abuse them too severely. But when I saw the options and quality at BF Miyabi, I sensed there might have to be some negotiating later. My server was diligent in pointing out that it was happy hour, and I would be remiss if I didn’t order a sake oyster shooter. I hate being remiss, so I accepted her offer, and then later, I ordered a scallop shooter…so much for being remiss. I ordered hamachi carpaccio from the small plates menu, to start. Chefs Bryan Hoong and Frank Zhu (the B&F in BF Miyabi) hit a home run

with this dish, and not just the beautiful presentation and skilled knife work complementing the delicate buttery flavor of the yellowtail. The surprise wasn’t the slight heat from razor-thin jalapeño nor the citrusy ponzu and briney tobiko, either: It was the faint whisper of truffle oil that united land and sea. Next, a wonderfully subtle offering of raw salmon belly from the chef: sake toro nigiri. Lightly dressed in their house-made marinade and just kissed by a torch, this dish exemplified the difference between fresh and commercially frozen salmon. For the main course, Chef Bryan presented me with the deluxe sushi combo, which, on my visit, included torched red snapper, anago-saltwater eel, sake toro, ebi (shrimp), hamachi toro, and a spider roll (soft-shell crab with avocado, cucumber, and tobiko). The items came presented bento box-style—each in its own cubicle. Once again, the fish was the star of the show—not over-sauced or doused in over-the-top condiments, which is often the case with sushi—just great product and clean, simple presentation…a winner in my book. I also took the liberty of having deep-fried ice cream for dessert; what the heck, I avoided all the carbs from the sushi rice (at least that’s what

I’m reporting). I’ve never had DFIC from a sushi restaurant, so I was curious. It’s different from the type you might find in many restaurants whereby they roll ice cream in bits of precooked, crumbled, fry coating. In this preparation, the ice cream was rolled in sliced pound cake, refrozen, then dipped in tempura batter and deep-fried. Delicious! My social media foodie friends have unofficially ranked BF Miyabi as one of the top five sushi restaurants in the area, and I tend to agree. Please stop in and see for yourself! Wing Mahal // Once, while working as an erstwhile bartender and cook in my hometown, I heard my mentor admonish a customer for licking their fingers while eating. That bit of mannering stuck with me most of my life—until experiencing Wing Mahal in Folsom. 5 cups blueberries 2 tbsp. cornstarch 2 cups almond meal 1/2 cup coconut oil, melted

• 2 tbsp. brown sugar (optional, can also use stevia or alternate sugar) • 1 tsp. vanilla • Vanilla ice cream, to serve

Preheat the oven to 375. Grease an 8x8-inch pie dish with coconut oil. Place the berries in a bowl and stir with a spoon in cornstarch. Put mixture into pie dish. In the bowl you used for the berries, mix the almond meal, coconut oil, sweetener of choice, and vanilla; sprinkle evenly over the berries. Bake for 4050 minutes or until the blueberries pop and the pie looks golden brown. Allow to partially cool and serve with vanilla ice cream. *Grain-free, gluten-free, and vegan!

1 cup all-purpose flour 2 eggs 1/2 cup milk 1/2 cup water 1/4 tsp. salt 2 tbsp. butter, melted 8 oz. cream cheese 1 pint blackberries Powdered sugar, to serve Fresh whipped cream, to serve

Whisk the flour and eggs together then add the milk and water, followed by the salt and butter; beat until smooth. Lightly oil a griddle over medium-high heat. Pour batter onto the griddle (about 1/4 cup for each crêpe), and cook about 2 minutes, until the bottom is light brown. Remove, and fill with desired amount of cream cheese and blackberries. Roll and top with powdered sugar and whipped cream.

Blueberry Pie

Basic crust for 9” (2-crust) pie 4 cups blueberries 3 tbsp. flour 1 cup sugar 1/8 tsp. salt 1 tbsp. lemon juice 1 tbsp. butter

Preheat the oven to 425. Line the pie pan with half the pastry dough. Wash and pick over the blueberries if you’re using fresh ones; if you’re using frozen berries, it’s not necessary to defrost them completely. Mix the flour, sugar, and salt in a large bowl. Add the blueberries and lemon juice and toss well. Pile the mixture into the lined pan and dot with butter. Roll out the top crust and drape over the pie. Crimp or flute the edges and cut several vents in the top. Bake for 10 minutes, then lower the heat to 350, and bake for 3040 minutes or until the top is browned.
