APPLE RICOTTA CREPES

Yield: 12 crepes (2-3 crepes per serving)

Crepes: 1 cup flour 1 tablespoon sugar

1/2 teaspoon salt 1 cup whole milk

2 eggs 1 teaspoon vanilla butter, for cooking

Apple Topping: butter

2 tablespoons brown sugar Envy Apples, sliced or cubed

1/2 teaspoon cinnamon

1/8 teaspoon nutmeg salt, to taste maple syrup

Ricotta Filling:

1 cup ricotta cheese

1 lemon, zest and juice only

2-3 tablespoons sugar, or to t aste

To make crepes: In bowl, combine flour, sugar and salt. Add milk, eggs and vanilla then, using whisk, combine thoroughly. Mixture should be silky smooth. Refrigerate.

To make apple topping: In pan over medium heat, heat butter and brown sugar until bubbly and golden. Add apples, cinnamon, nutmeg and salt, to taste; cook over medium-low heat until apples are soft. Turn off heat and finish with maple syrup.

To make ricotta filling: Combine ricotta, lemon zest, lemon juice and sugar, mix well and set aside.

In nonstick pan over mediumlow heat, melt small amount of butter.

Add one ladle crepe batter, cook until bubbles form, flip and cook until golden. Repeat with remaining batter. Stack crepes to keep warm and soft. Spread ricotta mixture thinly

onto crepes and fold into quarters. Top with apple mixture and serve.

APPLE, TOMATO AND GOAT CHEESE FRITTATA

6 eggs 1 teaspoon hot pepper sauce

2 teaspoons kosher salt

20 turns fresh cracked pepper

1/4 cup whole milk

1 Envy Apple, small diced 1/2 cup sundried tomatoes, chopped

4 ounces goat cheese, crumbled

2 tablespoons thinly sliced chives

Preheat oven to 350 F.

In large mixing bowl, whisk eggs, hot pepper sauce, salt, pepper and milk until well combined.

Stir in apples, tomatoes, goat cheese and chives until well combined.

Using 1/3 measuring cup, spoon frittata mixture into oven-safe large skillet or 9-by-9inch pan. Bake 25-30 minutes, or until eggs are set. Let cool slightly then serve.

Put Waffles on the Menu for Mother’s Day

It’s morning. You’ve opened this newspaper, or you are reading it online. Wouldn’t a fluffy, crisp waffle taste good right now?

Keep that thought, and now think about Mother’s Day, coming up on Sunday, May 12. Mom would no doubt be delighted with breakfast-in-bed waffles smothered with her favorite toppings. Think about dollops of whipped cream and strawberries on top, or real maple syrup flooding the plate. I could go for that!

Here are two ways to celebrate Mom with delicious waffles and more on her plate:

BREAKFAST IN BED

If your children aren’t old enough to make homemade waffles for Mom’s special day, just pick up good frozen waffles the day before. You’ll find organic frozen toaster waffles in boxes for a variety of tastes and dietary requirements, including gluten-free and grainfree, in the freezer section of most grocery stores. Simply heat them in the oven, or pop them in your toaster and top with all of her favorites.

For a creative presentation on Mom’s breakfast plate, use clean scissors to cut three toaster waffles into letters that spell “MOM” before you bake them. For the “M,” make an M letter template with an index card to fit the size of one waffle. Set the template on top of the waffle and snip it into shape. Your child will discover that the little square pocket designs (like a honeycomb) are a handy guide. For the “O,” do the same, or if you are using a round toaster waffle, simply cut out and remove an inner circle 1/2 inch from the outside edge. After completing the letters, place on a baking tray and bake in a toaster or a regular oven.

Set the plate on a tray with a beverage, a flower and a homemade Mother’s Day card created by the kids. (You can fill the empty “O” space with berries or a small pitcher of warm syrup.)

FAMILY WAFFLE BAR

If Mother’s Day brunch with family and friends is more your style, plan a casual and scrumptious waffle bar midmorning. Set up a stack of plates and silverware at one end of your kitchen counter or buffet, where the waffles from your favorite waffle recipe will come out of the waffle iron steaming hot and delicious. Guests may go down a row of tempting toppings and sides. Here are some ideas:

A: There have been several firings and voluntary exits among Bravo’s “Real Housewives” lately, but Garcelle Beauvais is not one of them -- at least not yet. The popular cast member of “The Real Housewives of Beverly Hills” began her career in front of the cameras as a model for the Ford agency before getting bit by the acting bug. She appeared in the Eddie Murphy film “Coming to America” and its sequel, as well as “The Jamie Foxx Show” and the short-lived Aaron Spelling primetime soap “Models Inc.”

After her career lagged a bit, she joined “Real Housewives” in 2020. While most actors look at reality television as a step down, this had the opposite effect on Beauvais’ career. Viewers were charmed by her wit, levelheadedness and beauty, and her career in Hollywood was reborn.

In 2023, Beauvais produced and starred in a hit movie for the Lifetime network called “Black Girl Missing.” She recently inked a deal to produce two more telefilms under this franchise, which will “continue the imperative conversations about systemic inequalities where missing girls and women of color are ignored.”

In the meantime, the show’s star Natasha Lyonne found herself with a new hit show on her hands, “Poker Face,” which streams on Peacock. Will she have time to star in both shows? According to Lyonne, there are “potentially more adventures” for “Russian Doll’s” Nadia, but “it’s gonna take some time.”

AVOIDING FORECLOSURE WITH VA HELP

At the end of May, the Department of Veterans Affairs will start a new program called VASP, Veterans Affairs Servicing Purchase, to help over 40,000 veterans stay in their homes when facing foreclosure. If you have a VA home loan, and if you’re active duty, a veteran or a surviving spouse, you could be eligible for help through VASP if you’re in serious financial trouble. VASP will come in and buy out your loan, modify it and then handle it as a direct VA loan. One of the best parts is that you’ll get a fixed 2.5% interest rate. (As of this writing, a standard 30-fixed mortgage rate is 7.9%.) VASP is not something you apply for. Instead, the mortgage companies will put in requests to the VA to help veterans they’ve identified as having problems with their loans. You’ll have to do your part by being in touch with your lender. If VASP is the best option, they will be responsible for submitting your name to the VA. If you have a problem with your lender, call the VA at 877-8273702 and press 4. Aftermath of the Storms

Just about the time that I’d decided I needed a major shopping trip to replenish food and supplies, along came two back-to-back winter storms. The winds knocked out power, which took out the freezer and dairy sections of all the local stores, which meant they had to throw away all the frozen and cold foods: milk, eggs, butter, cheeses, everything.

Then, of course, trucks struggled to get through all the downed limbs and damage on the roads and therefore were slow to restock the stores.

We haven’t seen eggs for nearly two weeks at our local store, for example. Today, miracle of miracles, they managed to get a box -- that’s a box, one box -- of 24 cartons of eggs. The ensuing crush of excited people pressing forward to the dairy section could have been deadly to seniors who aren’t exactly sturdy on their feet.

But I ended up very proud of the folks in this town. A handful

of college kids saw what was happening and blocked the mass of people who surged forward, carefully escorting one very elderly lady forward and handing her a carton of eggs.

That changed the urgent mood of the crowd, when they realized what they were doing and what could have happened. People eased away, no longer in a panic about getting eggs, realizing there just weren’t enough for everyone, and the college kids stayed there taking it upon themselves to distribute eggs, mostly to seniors, I noticed. I was impressed.

Afterward, no matter where I walked in the store, it seemed that there was one item left in the sections where stocks were low, as though people were intentionally leaving the last item for someone else who might need it more. Could those college kids have started a trend of kindness? Is that possible?

• On May 15, 2009, General Electric, one of America’s most prestigious corporations, finally began its governmentmandated efforts to clean up New York’s Hudson River, after decades of environmental damage and legal wrangling. The company had dumped harmful chemicals into the river for years and spent a fortune trying to avoid a cleanup.

• On May 16, 1975, Norma Armistead checked into a Los Angeles hospital with a newborn infant she claimed to have given birth to at home. But when it became clear she hadn’t, and another woman turned up dead nearby with the baby she was carrying cut from her body, Armistead was arrested for murder and sentenced to life in prison.

• On May 17, 1885, Apache leader and medicine man Geronimo escaped from an Arizona reservation. After a year and a half of running, he and his 38 remaining followers surrendered the following September. Geronimo was relocated to Florida before finally being freed two years later.

• On May 18, 1593, an arrest warrant was issued for Christopher Marlowe after fellow playwright Thomas Kyd claimed that “heretical” documents found in his room were actually written by Marlowe. Arrested two days later, Marlowe bailed out but died in a bar brawl on May 30.

• On May 19, 1943, British Prime Minister Winston Churchill and President Franklin Roosevelt set a date of May 1, 1944, for the cross-Channel landing that would become D-Day. Due to bad weather, it was rescheduled for June 6 instead.

HOLLYWOOD -- The 5-foot-10-inch Jeremy Allen White will become the 5-foot-10-inch Bruce Springsteen for a film adaptation of the 2023 book “Deliver Me From Nowhere: The Making of Bruce Springsteen’s ‘Nebraska.’” “Nebraska” was the followup solo album to Springsteen’s hit LP “The River.” Springsteen and his manager, Jon Landau, are involved in the making of the film.

White is the star of “The Bear,” the FX on Hulu series that won him a Critics’ Choice Award, a Golden Globe, a Screen Actor’s Guild Award and an

Emmy this past award season. He recently starred with Zac Efron in “The Iron Claw,” which cost $16 million and grossed $44.2 million. He’s also completed “You Can’t Win,” which depicts the experiences of adventurer Jack Black in the hobo underworld.

Bet you didn’t know that in 1966, when they were casting the first James Bond film, “Dr. No,” they considered Susan Hayward for Bond ... Jane Bond! But Ian Fleming thought they were nuts and instead suggested Richard Burton, who promptly turned it down. Then Fleming wanted Peter Finch, Cary Grant, Dirk Bogarde, Trevor Howard, Rex Harrison, Richard Todd, Michael Redgrave, Patrick McGoohan, Richard Johnson and Roger Moore, who eventually became Bond for seven films.

But when they decided on Sean Connery for “Dr. No,” Fleming was shocked because when he met Connery, in his estimation, Connery “couldn’t speak the Queen’s English!” He said, “He’s not my idea of Bond at all. I just want an elegant man, not this roughneck.” Luckily, they proved him wrong, and Connery made seven 007 films.

Fleming would have appreciated the fact that 33-year-old Aaron TaylorJohnson of High Wycombe, England, will become the next 007!

“Bridget Jones: Mad About the Boy” will be the fourth film in the “Bridget Jones” franchise. Two-time Oscar winner Renée Zellweger will return to play Bridget, as will Hugh Grant and Emma Thompson. No word yet on whether Colin Firth will be back, but they’ve added Chiwetel Ejiofor (“12 Years a Slave”) and Leo Woodall (of “The White Lotus”).

Firth, meanwhile, will star in “Kingsman: The Blue Blood” with Taron Egerton. ***

“Titanic” producer James Cameron is still prepping “Avatar 3” for 2025 and “Avatar 4” for 2029, but he’s pursuing his dream to remake the 1966 classic film “Fantastic Voyage” with Stephen Boyd and Raquel Welch. The sci-fi film follows scientists who are shrunk to a microscopic size in order to enter the body of an injured scientist via a tiny submarine and repair his brain damage. Cameron admits, “We’ve been developing it for a number of years and plan to go ahead with it very soon.”

Welch was the top Hollywood sex symbol at the time. (She passed away in February 2023.) The film was built around her sex appeal, and despite her unavailability, Cameron says, “We think we can make a pretty good movie.” There just aren’t any sex symbols like Raquel Welch around today, but still, they could sell tickets to that casting session!

Posole soup is a traditional Mexican dish that is enjoyed by many. This hearty and flavorful soup is typically made with hominy, pork or chicken, and a variety of spices, and is often garnished with lime wedges, shredded cabbage and fresh cilantro. The combination of tender pork or chicken, chewy hominy and spicy broth creates a delicious and satisfying meal.

Posole has a long history dating back to ancient Aztec and Mayan civilizations, where it was considered a sacred dish and was often served during religious ceremonies. It was believed to have both spiritual and nutritional significance, as it was rich in protein and vitamins. Over time, posole spread throughout Mexico and evolved into different regional variations, each with their own unique ingredients and flavors. Today, posole remains a beloved and popular dish, especially during special occasions and celebrations.

Why is it called posole? Technically, “posole” is Spanish for “hominy.” But it usually refers to this traditional soup. It can be green (verde) or red (rojo), determined by the peppers used. Pork posole is most common, but today we’re using chicken.

What the heck is hominy? Hominy is dried corn that’s been soaked in a mineral lime bath in a process called nixtamalization. This alkali process loosens the hulls and softens the kernels themselves, causing them to double in size, which is why hominy looks like giant mutant corn.

Without hominy, we wouldn’t have masa, or ground corn. No masa means no tortillas, tamales or tacos. Hominy is easier to digest, thus more nutritious, and makes an excellent alternative to potatoes or beans, especially in soups like this.

EASY POSOLE VERDE DE POLLO

This green Mexican hominy and chicken soup is ready in just 45 minutes on the stove, or you can let it simmer in the slow cooker all day. Add jalapenos if

you like heat. You can use leftover or rotisserie chicken to make it even quicker.

Total Time: 45 minutes

Yield: 16 servings

1 tablespoon olive oil

1 large yellow onion, peeled and diced

2 cups mild chiles, roast, seeded and diced

2 jalapenos, seeded and minced, optional

3 cloves garlic, minced

2 pounds boneless, skinless chicken breasts OR 3-4 cups cooked shredded chicken

8 cups chicken stock

2 teaspoons ground cumin

1 teaspoon salt, or to taste

1 (110-ounce) can hominy, drained

Garnishes: sliced avocado, cilantro, cotija cheese, thinly sliced radishes, lime wedges, shredded cabbage, tortilla chips

Heat oil in a stockpot over medium high heat. Add onion and saute until soft and translucent. Add the peppers and garlic and saute for an additional minute, stirring occasionally. Add chicken stock, 2 cups water, cumin and salt, and bring to a simmer. If you’re not using pre-cooked chicken, add the raw chicken and cook for 15 minutes, or until cooked through. Remove and shred. Add the hominy. Return the chicken to the soup. Reduce heat to medium low and simmer for at least 5 minutes. Salt and pepper to taste. Serve hot with your desired garnishes.
