he Jackson County Chamber of Commerce has been helping Jackson County businesses for 89 years! The Chamber provides an opportunity to network on a monthly basis through events such as Business After Hours, small business seminars and social events. Our community Jackson County is shaped by the unique identities of its towns and small communities, each with its own rich history.

CASHIERS Located at 3,486 feet above sea level, Cashiers is said to be named for a lost horse — an acknowledgement of the area’s dense forests, replete with laurel and rhododendron thickets. The town was hailed as a cool respite from the hot, humid shipping towns further south for mid-nineteenth century aristocrats. One such aristocratic family was the Hamptons. Wade Hampton III was the bestknown member of the family due to his service as a general in the Confederate Army and active political career. In 1890, Dr. William S. Halstead, who married into the Hampton family, bought the Hampton home, renaming it 8

High Hampton after his ancestral home High Halstead in England. The High Hampton Country Club later was constructed on the same property. Now, Cashiers is home to several similar resorts and golf courses but also boasts great opportunities for outdoor recreation such as hiking and mountain climbing. Also of note are some of the smaller communities one passes traveling south on N.C. 107 from the county seat of Sylva to Cashiers such as East LaPorte. Located alongside the Tuckasegee River past Cullowhee, East LaPorte was once the site of an Indian trading post established by the French Huguenots as the eastern entrance to Indian territory. In French, East LaPorte means “eastern door.”

CULLOWHEE Cullowhee, which means “white lily” in Cherokee, is an unincorporated township comprised mostly of Western Carolina University and the surrounding businesses and residences designed to service faculty and student needs. Professor Robert Lee Madison founded Western Carolina University — originally chartered as Cullowhee High School — in August of 1889. Beginning about 1912, the status of the school was gradually raised. The university went through several name changes as its course offerings increased and it wasn’t until 1967, when the school was designated a regional university by the North Carolina General Assembly, that the name Western Carolina University was finally settled upon. Near Cullowhee is the Forest Hills township, named for the 1878-1880 postmaster’s home, Forest Hill. Today, the township is home to a number of university faculty members. See TOWNS, page 10

DILLSBORO Today a village of shops, crafters and family restaurants, Dillsboro has always been a center of railway activity. During the 1880s when the Western North Carolina Railroad was built, the village bore a variety of names — Depot, New Webster, or Webster Station. In 1882, the Tunnel Post Office (named for the railroad’s Cowee Tunnel) was established with William Allen Dills as postmaster. It was the railroad’s developer, A.B. Andrews — for whom the town of Andrews in Cherokee County is named — who suggested the town adopt the name of its postmaster, becoming Dillsboro. Dills was responsible for building the Riverwood Shops, which overlook the Tuckasegee River, and what later became known as the C.J. Harris House. Harris is the namesake of Harris Regional Hospital in Sylva. Dills’ own home stood next to the Mt. Beulah Hotel — constructed in 1884 and today known as the Jarrett House. By 1888, Dillsboro had become the most important town along the railroad in terms of industry, with two sawmills, two clay 10

mines, two livery stables, six general stores, a shoemaker and several wood yards.

GLENVILLE The Glenville community is centered on a large man-made lake with 26 miles of shoreline at 3,500 feet above sea level. The lake is the highest of its size east of the Mississippi River and is a favorite place for aquatic recreation. The area originally was known as the

Hamburg Township, settled in 1827. In the late 1880s the area was thriving with industries including forestry, tanning and mining. It was in 1891 that the area was renamed Glenville. The lake itself was not created until 194041, when Nantahala Power and Light Company — owned by ALCOA — constructed a dam on the Tuckasegee River. The hydroelectric dam provided more electricity to help make aluminum for the war effort. The creation of the lake flooded Glenville’s schools, homes, businesses and farmlands. Today, the community is settled along the shores with several second and vacation homes, boating businesses and small shops.

SYLVA Sylva is Jackson County’s retail and professional center where day-to-day services meet unique history. The town’s development rose with the construction of the Western North Carolina Railroad in the 1880s. Its name came about at the suggestion of Mae Hampton, daughter of E.R. Hampton, who is credited as being the founder of Sylva. E.R. Hampton had married into the Cannon family, which owned


a sawmill where William D. Sylva, an itinerant Dane, had helped saw the logs that built the Hampton’s home. The railroad’s route through Sylva made it a prime location for the county seat — originally located in Webster — but the issue of relocation resulted in years of bitter dispute between the two town’s representatives. The state legislature settled the dispute, giving Sylva permission to construct a courthouse so long as the town paid the moving costs to relocate. On Feb. 28, 1914, the new Sylva courthouse, located on a hill overlooking Main Street, opened. Construction costs totaled $30,000. Today, the courthouse is reputed to be the most photographed in the country.

The town of Webster is a quiet residential community situated on top of a hill overlooking the Tuckasegee River. The town was created in the mid-1800s with the purchase of an 18-acre tract specifically designated to become the county seat. Within a few years of its settlement, a courthouse was erected. The town was incorporated in 1859, but over the next 20 years the town government became inactive — the first of several rises and falls in the town’s municipal development, and perhaps an early indicator of the town’s future. The story goes that during the construction of the Western North Carolina Railroad, county residents fully expected the railroad to run through Webster. However, the county’s state government representative — said to be fond of his drink — was taken aside at a crucial moment in the voting process and plied with liquor by an individual desiring a more direct route from Sylva to Dillsboro. The location of the railroad later was a primary factor in the movement to relocate the county seat from Webster to Sylva.

WHITTIER Whittier, Jackson County’s closest community to Cherokee, was another railroad town. Upon calling the area’s residents together, Clark Whittier proposed the formal establishment of a town: “It is my wish and I so move that we start operations here upon the principals and Word of God, including all morality, especially temperance and prohibition of the strongest form.” The town was incorporated in 1907 and by 1913 boasted a dry store, hotel, physician and surgeon, plus sawmills, lumber yards, three churches and a school. However, with the Great Depression the town lost much of its industry as the demand for lumber declined. By 1993 Whittier’s charter was repealed and today the community is mostly residential. New library a welcome addition to downtown Sylva

A counter on the front door of the library logs visits. Jackson County Head Librarian Dottie Brunette said that it isn’t just people living in Jackson County driving the higher numbers, however, though they obviously are beating a track into the library. “Daily, we get people in just to look at it,” Brunette said. To top it off, the library won the Outstanding Facility Award for new libraries larger than 26,000 square feet presented by the N.C. Public Libraries Directors Association. Former County Commissioner William Shelton, who played a critical role in helping keep the library in Sylva’s downtown area and in approving the needed funding, described the new library complex as a symbol of something wonderful, a place where “our history, our culture and our quest for knowledge” merge.

ackson County’s new public library — attached to the scenic historic courthouse atop a hill overlooking Sylva— opened in 2011 to rave reviews. “I love this library,” said Karen Wall, a patron who was working on her laptop in the reference section. She was seated in a comfortable chair at a desk near huge windows affording a bird’s eye view of the Plott-Balsams mountain range. “It’s a joy for me to be able to come here.” The new library cost $8 million and included renovations to the historic courthouse to build an auditorium and community meeting space. The Jackson County Friends of the Library raised $1.8 million to outfit and furnish the new library. Prior to the library’s opening, many were concerned that the new space and offerings would not attract new patrons. However, the opposite has happened. The number of people applying for library cards in Jackson County has doubled since the new library opened; use of circulation materials has increased by 38 percent; and, with 28 public computers, computer use is up 154 percent.

Jackson’s education leaders promise new vision

hey are dubbed by some in the community as the “three amigos:” a new chancellor at Western Carolina University, David Belcher; a new president at Southwestern Community College, Donald Tomas; and a new superintendent of schools for Jackson County, Mike Murray. Each started their respective positions July 1, 2011. Each promises a new era of leadership that connects their respective institution’s educational efforts to the overall good of the community. Each seem comfortable in, and energetic about, their roles as institutional and community leaders. “Openness, honesty and transparency,” Tomas said during his introductory remarks at a community meeting last summer. SCC, which serves residents of Jackson, Macon and Swain counties and the Cherokee Indian Reservation, is piggybacking strategic planning efforts on those of neighboring WCU. Tomas said the three educational leaders have been meeting and discussing educational and community issues. “This is an extremely exciting and unique opportunity,” he said.

Right after Belcher took the helm at Western Carolina University, he and other WCU leaders held a series of seven community meetings in the region to hear what residents had to say about the school’s future. During those meetings, many called on WCU and SCC to help bolster a sagging economy, but to do so while protecting the

Harrah’s expansion to be a boon for Jackson economy The nearly complete $633 million expansion at Harrah’s Cherokee Casino is good news for Jackson County and all of Western North Carolina. When totally complete, the expansion will add 800 new jobs to the casino’s existing labor force of 2,100. About 795 Jackson County residents have jobs at Harrah’s Cherokee Casino right now, more than any other county in the region. Nearly 700 Swain County residents work there while 308 casino workers call Haywood County home. And these numbers are prior to the hiring to fill the additional 800 jobs. Harrah’s payroll accounts for 8 percent of all wages and salaries in Jackson and Swain counties. It’s one of Western North Carolina’s largest employers. The expansion added a third hotel tower — giving the complex 1,100 rooms — more gaming space, a spa, and several new restaurants and retail outlets. Harrah’s officials say the idea is to turn the complex into a resort destination rather than just a casino. In the most recent numbers available, it is estimated that the casino attracts up to 3.5 million guests a year. It is the state’s largest tourist attraction.

MedWest Health System opened a new Urgent Care Center in Sylva in August 2011. Located at the Walmart Plaza, MedWest Urgent Care Center-Sylva provides walk-in examinations six days a week to patients with non-emergency illnesses or injuries. The new Center has eight patient exam rooms, X-ray and full lab services in 3,770 square feet. The Urgent Care Center-Sylva staff will include two physicians, two physician assistants or nurse practitioners, two medical assistants, two registered nurses, and four radiology and lab technicians. The new Center is the only Urgent Care in Jackson County. Garza’s ongoing efforts honored by Duke Energy Amy Ammons Garza was the recipient of the 2012 Duke Citizenship & Service Award for her contrition’s to Jackson County. New gym/fine arts center approved by commissioners A new fine arts center and gym are in the future for Smoky Mountain High School. Jackson County leaders in December OK’d a plan to build a new 754-seat fine arts center and a 1,500-seat gym. The theater would include all the amenities for concerts and plays including an orchestra pit, full stage rigging, shop and rehearsal space for the school chorus and band. Initial plans are for a 41,000-square–foot gymnasium and a 15,000-square-foot arts center/theater. The project is expected to cost $10.5 million and will be paid for with state sales tax revenues designated for public school capital projects. Supporters of the project, including County Commissioner Joe Cowan who was formerly superintendent of schools and a principal, said the arts center is long overdue. “I think it’s time to acknowledge the importance of the arts as well as athletics,� said Cowan. Jackson County School Board member Ali LairdLarge, said she was “ecstatic� that the project is moving forward. “We’ve been waiting a long time for this.� The architect is expected to have drawings ready to go out to bid by summer 2012.

Lulu’s on Main Lulu’s Café on Main Street in Sylva is known for its eclectic, ethnic food and a consistently warm atmosphere that brings back tourists and locals alike year after year.

T

wice featured in Southern Living as their “favorite restaurant in the region” and voted a “2010 best of WNC” restaurant by Mountain Xpress readers, Lulu’s popularity is no secret. Customer favorites include the pasta salad a la greque, tropical pork tenderloin, and gluten-free desserts. Lulu’s also caters to vegans and vegetarians, who reportedly are fans of the eatery’s Asianfusion flavors. Founded in 1989 by Louise Turner, Lulu’s was purchased in 1999 by business partners Kim Anthony and Laura McBane. Both began working part-time at Lulu’s while students at Western Carolina University in the early 90’s. Kim started at Lulu’s as a dishwasher in 1992. “You’ve got to know a little bit about everything in the restaurant business,” she said. Back in 1999, Kim had just sold Sylva’s In Your Ear Music Emporium, which she co-founded. She had to be convinced by Laura to invest in Lulu’s. “She conned me into purchasing Lulus’s,” Kim remembered. Today, Kim, who juggles payroll, the books, and the register along with her fulltime job as a Jackson County paramedic, has no regrets about her investment. Her staff clearly mean a great deal to her. During the recession, Kim and Laura have taken pay cuts to avoid laying anyone off. “We genuinely love everybody who’s here,” said Kim. “We have 23 children and counting.” Laura agreed. “We’re a real family here.” One of her key family members is Erica Sharrett, who has worked her way up at LuLu’s from dishwasher to main chef at age 25. “She’s a natural,” Laura said of Erica’s talents. “Her beef tenderloins are incredible.” Erica, who is self-taught, said she loves making curries and chilled summer soups and creating new dishes. Her current project is perfecting squash casseroles. “I do a lot of experimenting, and it turns out good,” she said. Erica also enjoys incorporating seasonal flavors into her specials. Dining out also inspires her. “I see if I can recreate stuff,” she said.

Lulu’s menu changes every three to four years, Laura said, though they keep favorites like original owner Louise Turner’s pasta salad a la greque. Yet Laura, who is both restaurant manager and the inventor of Lulu’s desserts, said customer tastes change over the years. “You have to change things with the times,” she said. “You’ve got to go in the kitchen and figure it out.” During the summer months, customers can dine outdoors at Lulu’s, which serves lunch and dinner Monday through Saturday. Dogs are welcome on the patio, which seats about 20 people. Tourists often have their animals with them while they travel, and Laura said, “We’d rather they bring them on the patio than leave them in the car.” Ultimately, Kim said the secret to Lulu’s success is staying humble. “We’ve been so successful and weathered the economy. Being so consistent and having a local following has made the difference.”

Dillsboro Smokehouse A visit to CB and Janet Hart’s Dillsboro Smokehouse is not complete without perusing the memories on the Smokehouse’s walls, which are a collection of mailed-in school pennants, thank you notes, license plates, and autographs from famous fans of the Smokehouse, like actors Tommy Lee Jones and Harrison Ford.

T

he Smokehouse, which was ranked third in the nation for barbeque in 2006 by National Geographic Traveler, has had a slew of memorable events, from the visits of actors and crew members during the filming of The Fugitive to the numerous parties they’ve hosted over the years, including when they bought the Smokehouse’s historic building, which was built in 1930 as a garage/car dealer and has a landmark gas pump out front. The Harts started the Smokehouse in 1992 after 10 years of owning Mexican restaurants in Cullowhee and Franklin. They asked each other, “What would work in Dillsboro, what food would appeal to all ages?” Barbeque was the answer. “The Floridians, tourists, and locals come back year after year,” Janet said, noting they have a big return business with travelers.

The Harts are truly a team, working on the construction of the Smokehouse kitchen in 1992 and searching for décor and furniture together at auctions and garage sales until they found the right mix of 1950’s tables.

Recipe development was also a hands-on project for the couple. “We worked hard on the baked beans,” CB said. The restaurant has six barbeque smokers out back, and CB is sure to trim the fat off the pork and beef. “We have the leanest barbeque around,” he said. Another trademark is not saucing the meat in the kitchen—the sauces are on the table for the customer to add to her taste. The Smokehouse is renowned for baby back ribs in peach sauce, and manager Jonny Russo said 100 quarts of slaw recently sold in two weeks through their popular carryout business. The traditional options bring in the crowd, but as Janet is a vegetarian, she made sure the menu had options like veggie pizza and bean wraps to accommodate those who don’t eat meat. The Harts reside in Jackson County. Both have an education background. Janet recently retired after teaching elementary school for 31 years in the Swain County Schools, and CB left his job as an administrator at Southwestern Community College in the early 1980s. He started a food program at SCC and always dreamed of having his own restaurant. After 30 years in the restaurant business, softspoken CB reflected, “I always loved to be in the kitchen as a kid. I guess that’s where it came from.” Business has been in “steady slow” during the recession, according to CB. Their peak time is fall, followed by spring and summer. “We’re looking for something to happen in the spring,” he said. “We’re established enough to make it through.” Janet added, “We truly appreciate the local folks who keep coming back, the way the economy is going. A lot of people are gone, but we’re still here.”

ill & Main has been able to build on the Meatballs history, which dates back to 1983. “The things that Meatballs had, we tried to keep, like large portions and a lot of the same items we kept, like big meatballs,” Dan said. Dan and Lee Ann are working owners, putting in 60 to 80 hours per week, open to close, Tuesday through Saturday. Though 2011 was better than previous years, Dan said it’s still a bumpy ride through the recession: “It’s hard, we’re trying to do what we can to hold our head above water.” Dan, who is originally from Raleigh, and Lee Ann, a Jackson County native, met while students at Western Carolina University. They live in town in Sylva. Dan started out bussing tables at restaurants in high school, and Lee Ann waited tables. Dan said his mother taught him how to cook, but, “I didn’t know it would lead to owning a restaurant.” He said he started out in the restaurant business because jobs were always available when he needed one, and he was determined to stick with it. The secret to Mill & Main’s success goes beyond hard work. “We make everything here. The soups are homemade,” Dan said. “We don’t buy any premade products. “We are trying to provide good, fresh, quality food in a warm, welcoming atmosphere.”

“S

peedy’s has a ‘Cheers’-type atmosphere,” said Charlie, where, as the TV show’s theme song goes, “everybody knows your name.” Charlie is the son of owners Carolyn and Wally Schmidt, who bought Speedy’s in 2004 at the suggestion of their daughter, Amy, who was working as a server at the restaurant at the time. “Our daughter talked us into buying, and it’s been a very good investment,” Carolyn Schmidt said. “It’s always busy and fun, especially on a Friday night.” The location is perfect, says Wally Schmidt, because “people can drive by and recognize their friends’ cars.” Originally from Florida, the Schmidt family arrived in Jackson County 23 years ago. Charlie and Amy were raised here. Purchasing Speedy’s created a ripple of career change for the family and strengthened their ties to Sylva.

Previously, Wally was in manufacturing and had an aluminum-casting foundry, and Carolyn worked as a veterinary technician at Sylva Animal Hospital. She still works as a receptionist there. After college, Amy became a writer and now lives in Vietnam. Meanwhile, Charlie tackled a number of roles at Speedy’s, from hosting to serving to cooking to dishwashing, until he took over as general manager. Today his duties include covering the day-to-day functioning of the restaurant and ordering ingredients. Speedy’s, which was founded in 1973 in Cullowhee and moved to Sylva in the early 1980s, was the first pizza place in the area, ahead of the chain restaurants. The original owner was a racing fan and carried the nickname “Speedy.” By focusing on homemade recipes with all-natural ingredients on hand-tossed pizzas, the Schmidt family has kept Speedy’s fresh. Carolyn Schmidt said the food is substantially the same since the restaurant’s founding nearly 40 years ago. “We haven’t changed any of

A renovation in 2001 added 30 seats inside. “The Pit” room, renovated by the Schmidts, serves groups, and outside, large picnic tables seat around 25 guests with heaters turned on in the cooler months. Dogs are allowed to accompany their owners on the patio. With all of that space, Speedy’s is known for hosting groups from Western Carolina University. “We rely on the college. Faithful students, teachers, and professors come in groups,” said Carolyn Schmidt. Charlie Schmidt also noted that about half of the 15 employees are WCU students. The Coffee Shop The Coffee Shop on West Main Street is known as Sylva’s oldest restaurant, a nostalgia-filled diner where the locals come to trade news all day over breakfast, lunch, or dinner.

S

ylva native Phyllis Gibson and her husband, Gary, have owned and operated The Coffee Shop since 1985. However, if you read the menu, you will learn Rolle Painter and his daughter, Mayme Bailey, first opened the diner’s doors in 1926. Gary Gibson, who hails from Waynesville, has been in the restaurant business all his working life, for 41 years, but Phyllis began helping out in 1985 on the side — while working for a sewing factory — and stayed. For a time she was a line cook in The Coffee Shop’s open kitchen — a position she notes has little turnover but is stressful — but now sticks to the register. The grandkids help out in this family-run place on Saturdays. The Gibsons have renovated The Coffee Shop over the years, including remodeling the floor and adding sidewalks and wheelchair 26

Lee adorn the walls — Phyllis Gibson describes them as “people we admired growing up.” Vintage CocaCola signs and cleverly personalized license plates from Hawaii, Alaska, and as far away as Aruba are signature décor items too. Patrons of the restaurant mailed these tags in, and now customers can also leave with a bit of the diner: a stylized Coffee Shop, “Oldest restaurant in Sylva” T-shirt. Many find refuge in The Coffee Shop’s dozen orange booths. “A lot of people from

everywhere come in, and they always come back again,” said Gibson. Her regulars, including old timers, early-rising construction workers and Western Carolina University students, pitch a fit if the menu, which is extensive, changes. “It makes a difference to them,” she said. “It’s just like Mom’s cooking.” Six retired men at a nearby table say they regularly make it to The Coffee Shop for breakfast. They come out for “conversation — and the food’s good, too!” said Sylva’s Marion Jones, who is retired from the district attorney’s office and owns Jones Country Store. The men say they go for a BLT for lunch, but the morning favorite is an egg sausage breakfast with biscuits and gravy. “Oldest café, with the oldest biscuits,” teased Max Blanton, who is retired from the Post Office. The Coffee Shop is also known for its reasonable prices. For example, from the breakfast menu, the “Gypsy Omelette” made of corned beef, onion, peppers, and cheese with grits or gravy and toast or biscuits, is just $6.25. Though the Coffee Shop definitely appeals to those wanting to look back, Gibson said her country restaurant’s appeal is timeless: “People appreciate a hometown diner and a homecooked meal.”

Dining al fresco Dining outside is a pleasure Jackson County restaurants have long offered. What complements fine food and drink better than fresh mountain air?

et in January 2010, it was the air inside restaurants that got cleaner. A N.C. law banning smoking in enclosed areas of restaurants and bars went into effect, and lighting up at outdoor tables became a legal alternative to the ban. At Soul Infusion Teahouse & Bistro off Highway 107, there is plenty of outdoor space to smoke — on the porch, the picnic tables or just standing outside and listening to one of their very popular shows, which feature local musicians. Haley Milner, coowner and head chef, also stressed the restaurant’s family-friendly nature. “We are dog-, animal-, and kid-friendly,” she said. In September 2010, dining rules outside changed again: the N.C. Department of Environmental and Natural Resources altered a state law, allowing leashed dogs and cats to also tag along at outdoor tables, at restaurants’ discretion. Previously, the state considered non-service animals in restaurants a public health violation. Owner Dan Gibson of Mill & Main Restaurant and Pizzeria in Sylva said he was relieved by the state’s revision of the pet law. Gibson’s restaurant, which accommodates up to 45 guests outside, sits at the intersections of Mill and Main Streets, a kind of downtown cornerstone for pets and their owners. “We used to lose business all of the time based on

[dog] health regulations,” Gibson said. “People who would have left stayed.” At Lulu’s Café on Main Street, in the warmer months, the patio seats about 20 guests for lunch and dinner, and dogs are welcome. “We’d rather they bring them on the patio than leave them in the car,” said co-owner Laura McBane of tourists who often bring their dogs with them on their travels. Around town, restaurants like Speedy’s Pizza, and City Lights Café leave out water bowls for itinerant pets. At Speedy’s Pizza, regarding pets outside, co-owner Carolyn Schmidt said, “If the county says it’s OK, we’re OK with it.” She said the altered law hasn’t made for a big change in business. Speedy’s also has outdoor heaters in the cooler months around their picnic tables, which seat about 25 people. The restaurant’s central location and ample parking have made it a hangout for students and families.

“[Yappy Hour] can allow the pet owners to meet other like-minded people and to let people know we are a pet-friendly business.”

Eateries embrace farm-to-table dining

S

everal restaurants in Jackson County, including City Lights Café, Guadalupe Café, and Soul Infusion Tea House & Bistro, offer farm-to-table and field-to-table dining. Buying from local farmers is more than trendy, however. “It’s healthier, it tastes better,” said Bernadette Peters, owner of City Lights Café. “If I could afford it, that’s all I’d do.” Currently, farm-to-table is a supplement to City Lights’ organic food. The café is a supporter of ASAP, the Appalachian Sustainable Agriculture Project, and Peters buys produce from Shelton Farms in Whittier, the Jackson County Farmers’ Market, and Eric Wilson’s hydroponic, pesticide-free greenhouse. The beers Peters serves are from Sylva’s Heinzelmännchen Brewery, which uses ingredients from local farmers. Peters said economic pressures keep her from making farm to table City Light’s primary food source. “We do as much as we can,” she said, noting that the previous tenant of City’s Lights’ space, Spring Street Restaurant, did more like 80 percent farm-to-table cooking but had higher prices as a result. Haley Milner is also an ASAP supporter. She is co-owner and head chef of Soul

Infusion Tea House & Bistro, which is located in a farmhouse off Highway 107. “We try to get as much local as possible,” she said. Soul Infusion also uses Tree of Life, a higher-end organic food distributor. At High Hampton Inn in Cashiers, Executive Chef Sean Ruddy says 95 percent of the produce comes from the local farmer’s market. “Local farms in the area enables us to get the freshest foods available,” said Ruddy, noting that most of the tomatoes in the Dining Room’s daily grand buffet come from Osage Farms in north Georgia, south of Franklin, N.C., as well as trout from Andrews, and goat cheese from Three Graces Dairy in Marshall. The Dining Room specializes in what Ruddy terms “Southern gourmet fare,” with a different theme each day, though fried chicken is a staple of the Sunday brunch buffet. Last year, High Hampton Inn started a small, fresh-air market on the property that opens for the season beginning in May. The daily market is open to the public. In addition to fresh produce like blueberries and blackberries, the market offers gourmet coffee, beer and wine, and fresh panini sandwiches are available. In September, apple growers from Henderson County bring in cider and pies. Shelf products including candies, chips, and salsas are provided by UNFI, a leading organic distributor. The 1400-acre Inn opens for its 90th season in late April.

City Lights Café owner Bernadette Peters said outdoor dining — she can seat about 22 outside — is a big part of her business. “People like to come hang out with their dogs or just sit and enjoy the beauty while they eat a leisurely meal or enjoy a glass of wine.” Co-owner and special events coordinator Pat Thomas said Yappy Hour “can allow the pet owners to meet other like-minded people and to let people know we are a pet-friendly business.” A group of Sylva residents who call themselves “Sylva Dog Park Advocates” on a Facebook page are in talks to create a place for canine exercise. “There are lots of pet owners in Sylva, who would love to have a dog park here,” said Pat Thomas. Kessa Thomas, the manager for PAWS Animal Shelter in Bryson City, said she is a regular at Yappy Hour with Oscar, her longhaired dachshund mix. “I’d like to see more opportunities for animal lovers to get together,” she said.
