Veggie Noodles With Curried Coconut Sauce

A-Sha Dry Noodles Veggie Noodles with curried coconut sauce is one of those noodle recipes that will surely be loved by everyone in your family. Ingredients

1 package of A-Sha Dry Noodles 1 red bell pepper 1 large carrot 200 grams fresh peas Handful of fresh herbs ( oregano, rosemary, coriander, and parsley) 2 teaspoons of vegetable oil Ingredients Required For Curried Coconut Sauce

200 ml coconut milk 300 ml coconut water 100 g desiccated coconut 1 teaspoon curry powder 1 banana shallot I clove of garlic 1 green chili 1 tsp grated ginger 2 teaspoon turmeric powder 1 lime Cooking Instructions

1 . In order to prepare this delicious noodle dish, the first thing that you need to do is take a medium sized pan and boil the noodles in it according to the instructions provided in the package. It is extremely important to read the instructions offered in the package if you want to avoid the mistake of over cooking the noodles which can actually spoil the entire taste of the dish. 2.Once you are done with cooking the noodles, make sure that you use a strainer to drain them effectively so that you can prevent from becoming sticky and starchy. After removing the water from the noodles keep them in a plate and set them aside for time being. 3.Meanwhile, you can prepare the curried coconut sauce for which you need to


add all the sauce ingredients in the food processor and pulse them effectively. Make sure that while pulsing the sauce ingredients in the food processor, you can keep one tablespoon of desiccated coconut aside for garnishing the noodles in the end. Make sure that your sauce is creamy. Season it accordingly. 4.Meanwhile, you can chop your veggies effectively so that you can move towards the final steps of cooking this yummy dish. 5.Chop carrot and red bell pepper properly in fine pieces. 6.After that take a skillet and heat some oil in it over medium flames. 7. Once the oil is hot, you can add all veggies in the skillet and stir fry them for a while. Maybe a couple of minutes. 8. Once you think that the veggies in the skillet have effectively turned golden brown, you can then add your noodles in the skillet. 9. Mix noodles effectively with the veggies and then allow the whole thing to cook for a minute. Once you think that your noodles have properly blended with the veggies and the whole thing has cooked nicely, you can then add the sauce in the noodles. In the end, add all the fresh herbs in the skillet and mix them properly with the noodles and your dish is ready to serve.
