Strength in Membership By Nancy Vorhees, Chairman
Dear Members, As some of you know, I have been a Spokane Club member for most of my life. I’ve enjoyed it at every age and stage of my life—from a young, single, nursing student, all the way to my life today as a happily married mother of three young adult men, and a professional engaged in my INHS work and community life. Throughout the years, the Club has been a place where my husband, Ken, and I celebrate the special moments of our lives, deepen family traditions, hold business meetings and get in a great workout. (And yes, I’m working on getting more of those workouts in this year!)
The future of private clubs like ours depends on relevant, progressive programming and great value for members. That value is not simply in enjoying great pricing at select events. The sustaining value is in the depth of the relationships we create with our families, and each other, during the years of our membership. Relationships are the glue that bonds us more than anything else. A robust, relationship-rich, membership is critical to the future of the Spokane Club. That’s why the Club Membership department puts so much emphasis on members referring their friends and colleagues.

Strengthening an already-established relationship through programming, events and clubs within the Club like the Cellar Dwellers, the Social Dancers and the Barron Wine Room and Cellar, is one of our keys to successful membership growth and retention. I ask each of you to think about those special people in your life whom you would put on your own list of potential members, and then share that list with the Membership office. Exploring avenues of membership growth and retention will be part of the work of a new Ad Hoc Membership committee this fall. Led by Board members Trish McFarland and Chris Bell, along with Corky Mason, Peggy McCartney and Jordan Piscopo, the committee will focus on new, innovative ways to attract and retain long-term members. Membership will also be a critical agenda topic at the Annual Board Retreat coming in November. Unlike many previous years, this year’s Annual Board Retreat will be held at the Spokane Club, rather than offsite. What better way to explore the future of our 125-year-old Club than within the rooms of our very own historic clubhouse? I wish you all a wonderful fall and look forward to seeing you at our Club!

e want to thank all the members of the Club’s Food and Beverage team for stepping up during the time of transition with our Executive Chef leadership. The staff ’s dedication to the Club, our members, and the quality of the member experience was Priority One and our staff rose to the challenge of their increased responsibilities and schedule demands with true leadership. Two of our Club members, Brett Hauber and Carl Andrews, took special notice of this team spirit within the Club kitchens and took the time to share their thoughts with us:

We also feel that the Club would be remiss if we did not recognize the fact that the kitchen staff has kept everything running beautifully during the transition. Not only have these folks maintained the quality of the food, but they have also offered specials and prepared food for themed meals during this time. Introducing Executive Chef, Mark Miskiewicz

I
f you ask Executive Chef Mark Miskiewicz his recipe for success, the answer is characteristically succinct: “Concentrate on technique, using simple ingredients that are done perfectly.” Chef Mark knows a lot about perfect renderings. From the age of 16 he has been actively engaged in pursuing the best within himself and bringing those qualities to the world of cuisine in some remarkable settings. It all started with a nudge from his mother. “My mom pushed me to explore the world of cooking and helped negotiate my first job. By the time I was a senior in high school I was working at an amazing French restaurant cooking everything imaginable.”
“I knew at 17 that this would be the rest of my life. “ The years Chef Mark spent as both CEO and Chef of his own businesses in Orange County deepened his resume, won him a bevy of A-list event clients— Nordstrom, Rolls Royce, The Academy Awards, InStyle Magazine, Mercedes Benz, etc— inspired his creativity (he designed and wrote all the menus and every single recipe), and honed his professional standards to the finest point. “I love doing nice things and to be successful at that, you really have to focus on details. Those details are what add up to the full experience of service. If service doesn’t match up to the food, the guest will have a bad experience. Everything needs to be in balance.” That same drive for balance is something Chef Mark pursues in his personal life, too. When, after 20+ years, the 90-hour work weeks that Chef Mark spent in his businesses began to wear on him, he sold his businesses and took a break. For Chef Mark, that meant traveling to 28 different countries and all over the United States. He hiked And he just kept on cooking. From dropping off orders-to-go for the elusive Luciano Pavarotti, to sailing the Caribbean on a 130’ yacht as the owner’s personal chef, to founding his own wildly successful catering business (Crème de la Crème) and restaurant, (Alta Italia), Chef Mark has seen every side of the food industry–and he still loves it!

the Great Wall of China, did Kung Fu with the monks of the Shaolin Temple, got into Ballroom dancing and read voraciously. Chef Mark’s travels and studies led him to seek a smaller community to live and work in, which ultimately led him to join the Spokane Club senior management team as Executive Chef. The Chef Selection Ad Hoc Committee, chaired by Jerry Searfoss, poured over resumes, hand-picked the candidates, thoughtfully reviewed the interviews and tastings, and made their choice. “In the interview process, Chef Mark displayed a self-confidence that is typically evident in those who understand their strengths and weaknesses, exploit their strengths and work to grow and be open to innovation,” says Jerry Searfoss, Committee Chair. “I am especially impressed by his desire to encourage his staff to create proposed specials for the Club, not just rely on him. That is a great way to motivate and energize staff. I have had the opportunity to observe him in a social setting and those that met him were very impressed with his friendliness, culinary experience and knowledge. I believe that our members will enjoy him personally and professionally.” In addition to fine dining and quality catering, Chef Mark also has an interest in providing nourishing, healthy choices for our sports and fitness-minded members. In the past, he has marketed his own Paleo products to Cross Fit locations and retains a strong interest in food-as-fuel for healthy living and peak performance. “In the future we’ll be adding healthy items like quinoa salads, raw soups and hormone and antibiotic-free chicken to the deli offerings. Adding these types of items will not only provide healthier
options for our members, but potentially increase our deli business, too.” Other areas of potential future development that interest Chef Mark include creating a clear food and beverage identity, rebranding the restaurant, and making upgrades to the restaurant. For now, he’s happily busy getting to know the Club, its members and staff. “I feel like the red carpet has been rolled out for me. The Club has given me a great welcome. I love the history of the place, the prestige of privacy and the multi-faceted aspects of having a full-service restaurant, a catering business and a health club all together. I love that I work at a place that’s 125 years old. I’ve got a large pool of people to get to know personally and that’s exciting. This is exactly what I was looking for.”

Merlot is Back! When left to properly ripen, it lends itself to rich mouthfuls of fruit, seasoned with vanilla, clove and hints of graphite. It is easy to drink and a pleasure to savor.

W
hen the movie, Sideways, was released in 2004, it captured wine drinkers imagination in a way never before seen in America. It is easy to understand why: wine is overwhelming in its variety, intimidating in its verbiage, and finding advice you can trust is appallingly difficult. But the advice given in Sideways was explicit, easy to understand, and even gave us a new wine to love, along with the words to explain why. Looking sophisticated was suddenly easy. You only had to casually dismiss Merlot with a disdainful sniff (and perhaps a pitying look), then confidently order Pinot Noir. Hopefully someone at the table would ask you why you chose as you did, which would be your cue to recite as much as you could remember about how
“pinot grapes are delicate, they take time to mature, they are finicky, and require true appreciation”. Bam, instant sophistication. Thanks, Sideways! It all happened when Paul Giamatti’s character, Miles, stood in a parking lot in Napa, and screamed “I’m not drinking any f***ing Merlot!” It was the quote that devastated an industry. Within months, Merlot sales dropped from 15% nationwide market share to 10%, a staggering margin. People who once proudly ordered Merlot now shied away from it in public, treating Merlots like

an embarrassing previous relationship. The thing to order now was Pinot Noir, and people flocked to Pinot Noir in astonishing numbers. A market share of little more than 2% now leapt to 6% and showed no signs of stopping. What had once been the wallflower at the wine dance now had more partners than there was room for on the dance card. Strangely, this was one of the best things that could ever have happened to Merlot. In 2004, the world of Merlot was full of insipid, knock-off versions of what should have been a great wine. The odds of finding a truly rich, luscious Merlot were terribly rare. The market was overwhelmed with Merlots of every caliber, good, bad or indifferent. Many were made by people simply trying to cash in on the wine’s popularity. And when Merlot’s fame went away, so did they. This left only the truly interested

behind, those who grew Merlot because, for them, it was a love affair with what this noble varietal had that no other grape could offer. Merlot in any expression is remarkably easy to drink. It was popular for a reason. With descriptors like “soft”, “velvety”, and “plush” Merlot begins to sound more like luxurious lounge furniture than a beverage. This beautiful, dark, rich wine is full of currant, black cherry, and plum. It
ripens earlier than Cabernet Sauvignon, has a lower natural acidity, and therefore less aggressive tannins. Merlot, when left to properly ripen, lends itself to rich mouthfuls of fruit, seasoned with vanilla, clove and hints of graphite. It is easy to drink, a pleasure to savor, pairs well with the foods we love to eat, and, not least of all, is easy to order without sounding foolish. What Sideways did was to blow away the chaff and reveal those truly dedicated to growing great Merlots. It made the price of amazing Merlots reasonable again. It is time to thank Sideways for what it has done, and to let Merlot be what is has always been: a rich and sensuous wine, made for sipping in the sun, for pairing with a great meal, and for sharing with our friends.

Balancing Capital Needs with Limited Resources

Dear Members, With the summer season coming to an end and a new fiscal year upon us, we are looking ahead to 2016. Part of our forecasting involves evaluating the financial resources available for improvements to our Club properties. In my last article I shared the results of our Capital Project Survey. I want to thank all of you who took the time to take the survey and share your thoughts with us. As you recall, our member-surveyed projects included renovating the façade of the Clubhouse, updating Burgundy’s bar and service area, and renovating the Downtown Main Kitchen. These projects represent a handful of the many improvements needed to our facilities. In addition to these more visible needs, there are additional backbone capital improvements that must be made, many of which include repairs to behind-the-scenes structural damage. Examples are the crumbling terra cotta at the entrance to our 125-year-old Clubhouse, the fractures under the Main Street sidewalk where our kitchen staff store food, and the structural deterioration around our dry goods storage area. Many of these capital needs are the result of years of deferred maintenance due to tight budgets and limited funds available. And perhaps, too, the human tendency to put off until tomorrow, the less visible, less exciting projects. Looking back as far as 2002, we can see how our capital spending pattern has varied year-by-year. You will see in the graph below that our average capital spending is approximately $500,000 per year. The exception is 2009 - 2011 when the Club refinanced and extended its debt in order to make improvements in the Valley and overhaul our elevators and boilers Downtown.

So where does the money come from to finance these capital needs? Currently, the Club derives its capital funding primarily through cash generated by operations, with 50% of all revenue received comes from membership dues. Other revenue is derived from Food and Beverage, the Hotel, and Athletic activities. Operations also includes all of the ongoing costs to run the Club including payroll expense, food and beverage costs, utilities, maintenance and property taxes to name a few. Increased operating costs are also a challenge for the Club. We’ve seen costs rise in excess of inflation, especially with food costs where higher prices for staples such as beef and eggs have increased substantially and are forecasted to increase further in this next year. Increased competition has also been a factor as Spokane has more restaurants now to choose from than ever before, as well as a brand new hotel that will compete not only with our Club’s hotel but also as a new catering venue. Membership declines over the years have also continued to put pressure on operations. However, in fiscal year 2015 we saw the lowest membership drop--net 9 losses--that we’ve seen in years. With all of these driving factors in mind, we’ve had to plan conservatively in both our 2016 operating and capital budgets. Budgeting is a rigorous process at the Club and takes four months working with the Club’s numerous departments, a Budget Sub-Committee and ultimately, the Board of Trustees where our budgets are approved. The primary focus of this year’s budget centered on maintaining Club cash at $1.5 million, and having a break-even cash flow year. In order to meet these goals and deliver on the initiatives of the
Club’s Strategic Plan, which include enhancing member service, sustaining and growing membership and strengthening operations, the Board of Trustees has authorized a 7% dues increase that goes into effect September 1st. This increase will help the Club maintain and improve services and programs and work towards its capital improvement needs as noted in this article. Our members play a vital role in supporting the Club. The next time you are planning a meal out or thinking about where to hold your company’s next event, remember the Club and know that under our new Executive Chef, Mark Miskiewicz, our food and beverage operation is sure to be the best in town. If you have guests coming from out of town, please direct them to our hotel, where we continue to improve and remodel our rooms and suites. Membership Card Policy In order to protect the Spokane Club’s private membership status, every member who enters the Club at designated fitness locations or in Burgundy’s or our delis, must swipe his or her membership card, or have it swiped by Spokane Club staff. Replacement cards will be $10, unless the card becomes demagnetized or when a new card is required for youth expired cards. For those with lost or missing cards, be sure to tell the Hotel desk or Fitness entrance staff so they can order you a new card. We completely understand that you may occasionally forget or misplace your membership card; however, a member who refuses to comply with our card-scanning policy will be subject to disciplinary action as stated in member bylaws.

100 Classes Fit starts a new season! The 100 Classes Fit program starts on September 1st. To participate simply attend 100 Group Fitness or Aqua Fitness classes between now and August 31, 2016 and you will receive a fun, free T-shirt. It’s so easy. Total Body Conditioning (TBC) This class focuses on strength/resistance and cardio training while using dumbbells, body bars, bands and, best of all your own body weight, for a total body workout. Fall Basketball Leagues Due to the success of previous league seasons along with the overall growth of the Basketball program, the Club will be running two separate leagues seasons this Fall. A League (competitive) will play on Tuesday nights beginning September 1st. B League (recreational) will play on Wednesday nights beginning October 7th. Yo-Athlon Handball/Golf Recap The aptly named Yo-Athlon, is an event honoring the memory of Lt. Col. Frank Yohannan, former Club member and a true “Gentleman of Handball” who tirelessly promoted all things Handball for several years at the Club. After a four-year hiatus, the resurrection of the Yo-Athlon was a swinging success. The event kicked off Friday night at the Club with a 20-player quickie that featured a new format, resulting in a surprised yet deserving winner. The following day at Hangman golf course, participants were honored by the presence of Frank Yohannan’s daughter, Sandra, and his son-in-law, Bill, who were both deeply appreciative of the turnout and the tribute. Many lost balls, a few divots, and one fun round in the sun later, players and friends of the Handball community gathered for dinner, prizes, and a celebration of Frank’s memory at the Balkenbush estate. The event was such a success that Frank’s two sons both pledged to fly into Spokane to participate in next year’s event. The Club is proud to support the Handball community in honoring such a respected figure, and eager to keep the tradition going strong next summer.

Junior Clinics Roll Into Fall Too! Tuesday/Thurday Junior clinics resume September 8 and continue throughout the year. Our clinics are a great way to keep your skills sharp or to prepare for junior high and high school tournament and team competition. High School aged players attend from 3:00 – 4:30 pm, while Junior High kids are 4:30 – 6:00 pm. Cost is $18 for each 90-minute session. In the Valley, PeeWee classes ($11) are on Saturday 10:15 – 11:00 am, while PeeWee Plus ($14) class goes Saturday 11:00 – 12:00 pm. USTA Seniors are On to Nationals While 18+/40+ Teams Battle
While no Spokane Club-specific teams were fielded, many of our members joined forces with Eastern Washington players and are on to Surprise, Arizona to compete in national USTA tourney next April! These SC players and their progress: Janis Miller and Marsha Todd teamed together, Voni Tombari captained a team with Donna Evans, Carol Oyler, and Cheryl Lepper, while Carole Trefts was on a team with Kris Van Brda Kolff, battled their way through regional and sectional competition to earn the title of national players! At press time, USTA 18-and-over competition was beginning in Spokane while the 40+ sectionals will be played at the end of August throughout the Spokane area. Hopefully with our Club having 12 teams in the mix, we will have more teams on to the nationals later this year!

A real jump in the “Tweener” division with over fifty 8-12 year olds contributing to this summer’s record-success. Private Swim Lessons Children – One-on-one instruction is a great way to get your child familiar with the water and ready for group lessons. Swim Team Fall is upon us, bringing in a new season for The Penguins! Welcome back to the pool boys and girls! For those of you that participated in our Summer season or are brand new to the team, make sure you note practice time changes. We will be returning to our school season hours: Silver will practice 4:15-5:00 pm, Gold from 5:00-6:00 pm and Platinum will run 5:30-6:30 pm. Silver swims on Monday and Wednesday and Gold and Platinum practice MTW. Also, ALL TEAM practice will be on the First and Third Thursdays of the month from 5:30-6:30. Practice will begin on Monday, September 14th. Our first meet will be on October 16th and the November meet is scheduled for the 13th. For our new or prospective Penguins, meets are held at the Spokane Club once a month. All swimmers are encouraged to attend but participation is not mandatory. Also, we know schedules get rather crazy this time of year and simply ask that swimmers try to attend at least one practice per week. The Club is teaming with SuperTots Sports Academy to offer their youth sport programs. Children will be able to participate in both feature programs, SoccerTots and HoopsterTots. Although the sports are different, both programs use a variety of fun games to delight and engage kids in physical activity. The curriculum is professionally designed to develop physical, social and emotional skills, and promote physical fitness in a fun environment. The class environment aims to teach basic sports concepts in a fun, non-competitive atmosphere. Perfect for ages 18 months to 6 years old. Fall session begins the week of October 12th, with weekly classes running through the week of December 14th. Cost is $130 per program (10 classes). Family Halloween Party Before the kids go trick-or-treating, bring them by the Club for goodies and fun. Let them show off their costumes to their fellow ghost, goblin, and vampire friends. There will be creepy decorations, fun games, a bouncy house, creative crafts and a chance for kids (and adults too) to strut their stuff on stage.
