Getting the Most from Giving Your Best By Chris Bell, Board Chair

I

t is my sincere and humble pleasure to serve as your Spokane Club Board Chair. I am excited to work with your Board and Club Staff to further the mission of making the Club the exceptional place for exceptional people. Each of us has a story of what drew us to the

Spokane Club and keeps up committed to it. I want to share my story with all of you. I moved to Spokane from Seattle to join NAI Black Commercial Real Estate as a broker in 2005 as a single guy packing my life into my Toyota 4Runner, trailing my life’s possessions in a U-Haul. I was making a huge leap of faith both personally and professionally moving to a new town. I knew that in order to make the transition from practicing law to brokering commercial real estate deals, I had to get connected and fast. I had done my research and the Spokane Club was the place for a young professional looking to break into a new market and social scene to have the opportunity to sit on a committee with the CEO of a local bank, and

to continue to hold onto my glory days playing tennis and basketball but to do it with entrepreneurs, small business owners, and community leaders. The Spokane Club has played a key role in my personal and business life and it is a large part of why I am honored to serve the Club as Board Chair. I simply had to join the Spokane Club and it has become an important part of my life. My wife Kjerstin Bell and I enjoy the break from our hectic lives, she as the anchor of Good Day on Fox and I, a commercial real estate broker, trying to raise our amazing son, Fisher and our hunting dog, Teela. One thing I learned early about myself is that I only get out of something what I put into it. That is why one of the first things I did after joining the Club was to join a committee. My business purpose was to continue to make business and personal connections, but I found I used the Club more, received more value for my membership, and made stronger connections the more that I volunteered. That is why I have served on the Membership Committee, 4th Avenue Committee, Athletic Committee, House Committee, Finance Committee, and Executive Committee. The Club is only as strong as the members who bring new, fresh ideas to the Committees to provide relevant programming that Members want and will

use. If you want a different group exercise class, bring it to the Athletic Committee. If you want to get a sneak peek and sample Chef ’s new menu, join the House Committee. If you want to meet new people and be an ambassador for the Club, join the Membership Committee. I urge you to pick an area of the Club you are passionate about and to contact Interim GM Marc Guiseppi, mguiseppi@ spokaneclub.org and volunteer for a committee. It will change your life and enhance the life of the Club. Member involvement is critical in these challenging times for private clubs. The Board is always looking at ways to deliver Member value. That is why your Board is so excited to partner with KemperSports. Kemper has a proven track record for providing fiscal responsibility while delivering a high level of customer service. The Kemper Team has been on Club property for some time now conducting a thorough review of Club operations. We look forward to partnering with them to provide Members with an exceptional experience that only the Spokane Club can deliver. Part of the Club’s fiscal responsibility is to communicate to Members an update on the Capital Assessment Plan. The Capital Assessment Plan will allow the Club to tackle emergency capital needs, deferred maintenance, and Memberdriven impact projects. As of June 30 2017, the Club has $254,070 in the separate Capital Account. As that account continues to grow, watch for additional information about upcoming Capital projects. I look forward to seeing you at the Club.

How long have you been a member of the Spokane Club and what initially attracted you to joining? I’ve been a member for a while now, since about 2005. I was interested in joining for family and professional reasons. The grand exterior on Riverside, including the elegant front entrance to the Club, was also really appealing to me and I wanted to know what it would be like to enjoy all that was inside the Club.

Where were you born and raised? If not Spokane, how did you come to live in Spokane? I was born in Arlington, Virginia and raised primarily in McLean, Virginia. As a kid, I lived in Buenos Aires, Argentina for three years. I moved to Spokane in 1985 and went straight to Pullman to attend WSU. I moved home to Spokane in 1996 and have been here ever since. 4 . My membership has evolved with changes in life. While I used to take advantage of Kid’s Camps and Dive In Movies, now my kids are grown and spending most of their time in the fitness area and the snack bar/Deli! My son, James Elkin is a regular in the workout room in the early evenings and he has really enjoyed making good friends from all generations through his passion for weightlifting. My daughter


What do you hope to contribute as a Board member? I’m happy to return to the Board and to get up to speed on all of the changes since I last served. There is a great opportunity to set the Club up for a sustainable, stable, and successful future. I hope I can help in that regard.

What is a little-known, fun fact about you? I really struggle getting on an escalator that is going down, especially in heels… little known and not so fun …for me anyway!

Ron Anderson Linda and Jeff Underwood and their amazing family! Haley has been here many early mornings to knock out her personal training sessions before school. Today I value my new membership card that reads Linda Underwood! My husband, Jeff and I got married last November. Jeff and his kids have also enjoyed the Club for over 20 years. His son, Cameron plays basketball with the best of the best in the gym each week. His daughter, Sydney, is away at school in Los Angeles, but she too loves to come by the Club when she is home visiting. Jeff still has his dad’s locker and it’s fun

to consider that it is now handed down to the third generation. One of my favorite recent memories of the Club was last December. All of us decided to meet at Burgundy’s at the big round table in the center for breakfast a few days before Christmas. We all had different errands and last minute shopping to do before the big day, and getting together first at the Club just made the day and the season extra special. I appreciate our unique family legacies at the Club and now, of course, our new traditions.

Where were you born and raised? If not Spokane, how did you come to live in Spokane? I was born and raised in Wallace, Idaho. After working in the mines and logging long enough to know those were not ideal careers, the Marine Corps occupied me for three years. After being discharged, I was accepted to Gonzaga University and earned my Bachelor of Science and my Master’s degree there. I have worked in Spokane as a CPA since graduating.

How long have you been a member of the Spokane Club and what initially attracted you to joining? In the late 70’s when I became a member, the Spokane Club was “the Club” to belong to and carried an aura of class, quality food and service, and great athletic facilities. I played racquetball frequently in those days. A very fond memory of the Club is my wife and I bringing our six month old daughter to learn to swim in the Club’s pool.

two grandkids, and two more on the way. Cathy and I have been married for 35 years! We moved to Spokane originally for better education for our children and stayed because we really like Spokane.

How long have you been a member of the Spokane Club and what initially attracted you to joining? We’ve been members since 1995. It was Trip Rumberger who first showed us the Club. We liked what we saw so we joined-- and we’re really glad we did.

How has your membership evolved and what do you value most about your membership today? It may be a common experience of other member-owned clubs that the fine dining room has been either reduced or closed, as the Club’s has. And I believe the nature, quality and reputation as a good place for lunch, to meet clients or friends and really have a fun time has declined over time, too. So dining-wise, my membership has evolved to a very few formal dinners. My wife and I have evolved our membership to enjoying the dance class on Thursday and she tries to take a yoga class twice a week. We are also members of the Cellar Dwellers Wine Club.

What do you hope to contribute as a Board member? My hope is to contribute some financial and business expertise to assist in the current restructuring process.

What is a little-known, fun fact about you? Although I have had 24 Golden Gloves and MMA fights and can handle myself quite well, I have a soft sentimental side and enjoy Shakespeare and reciting and writing poetry.

I want to help the Club stabilize financially, then to prosper into the future.

What is a little-known, fun fact about you? A fun fact is that I am a charter member of the Tuition Hall of Fame for putting 5 kids through college! An actual fun fact is that Cathy and I eloped to Coeur d’Alene to get married at the Hitchin’ Post. It’s a family tradition -- my Mom and Dad did the same.

John Pariseau Where were you born and raised? If not Spokane, how did you come to live in Spokane? I was born in Corvallis and raised in central Washington, where I graduated from Wenatchee High School. I got my undergraduate degree from University of Puget Sound, where I also played basketball, and my graduate degree from the University of Chicago. My wife Cathy and I have five kids, three of whom are married. We’ve got

I

t’s not every day that a small business owner gets a national celebrity client, but in Mandolyn Hume’s case, it was match made in heaven. In July, Julianne Hough of Dancing with the Stars fame, and her fiancé, Brooks Laich, a National Hockey League player, were married in North Idaho. The festivities spanned three days and included a welcome party on Thursday and a beach party on Friday that preceded the Saturday wedding at Gozzer Ranch.

“They were looking for ice pops and push ups for the beach party and found me,” says Mandolyn. Paparazzi took a photo of the brideto-be and one of her friends enjoying Fannie’s Ice Pops together, which put a big smile on Mandolyn’s face--and likely, on the heavenly face of Mandolyn’s great grandmother Fannie who is the inspiration behind Mandolyn’s brand. Fannie believed in the power of simple, natural ingredients. That’s why Fannnie’s Pops are made by hand in small batches using seasonally fresh, local and organic ingredients. All of the pops are dairy-free. Naturally, these qualities attract foodies and food writers. Recently, Fannie’s Pops was featured in Edible Seattle magazine and got the coveted cover. aniel Roy has been swimming for most of his 17 years of life. He learned to swim in the Spokane Club downtown pool and continues to use the pool for practice. In Daniel’s case, practice truly does make perfect. He is the #1 national ranking 18 and under swimmer, holds the 18-and under National Title, Junior National Champion and ranked 7th at the World Championship Trials. This August Daniel will compete in the Junior World Championship for Team USA. In addition to being a competitive swimmer, Daniel is an honor student at Gonzaga Preparatory school and a recipient of the Scholastic All-America and National Scholar Athlete Award from the US Army Reserve. Daniel’s disciplined work and impressive results have not gone unnoticed by college coaches and his future is looking bright both in an out of the pool. Cheers to you, Daniel, and best of luck at the Junior World Championship!

A Fresh View: Executive Chef, Peter Birk By Kate Spencer, Communications Director

C

areers of a lifetime often take seed in childhood, inspired by an adult with a joyful passion for something creative, sustaining and fun. For Executive Chef Peter Birk, the inspiration came from his parents and their bustling restaurant in the classic small town of Joplin, Missouri. One of three sons, Peter worked alongside his parents and siblings in the family restaurant, the Spring River Inn. He was just ten years old when he started.

“OSHA really doesn’t apply when you’re working in the family business,” he says, with a chuckle. “You just dive in and do it.” Diving in meant learning the business from the ground up—from dishes to dicing to cooking—and doing whatever was needed to keep customers happy and coming back for more. One memorable example of going the distance for customers was a Mother’s Day dinner when Peter and his family cooked 900LBS of fried chicken for a very hungry, very appreciative crowd. “My mom still talks about that dinner,” says Peter. “And she still asks me if I’m happy doing what I do for a living. The answer is yes. “ That answer is a win both for Peter and the Spokane Club. In just under three months, Peter has applied his characteristic calm, assured and joyful approach to bringing out the best in his staff, the food they produce, and the attitude with which they approach their work, their customers and each other. And while he

takes the quality of the work seriously, he takes himself lightly. “I’m the calm one in the kitchen,” says Peter. “I have high expectations of staff but will help them be successful in any way that I can. I am only as good as they are and we have to take care of each other. And just as important, we have to have fun. This work is fun!” A graduate of Missouri Southern State College, the Western Culinary Institute and the Ritz Carlton Plaza Hotel’s training program, Peter has broad-based experience in every facet of the culinary industry, as well as a deep understanding of true hospitality. Prior to moving to Spokane to work at the Spokane Club, Peter was with Columbia Hospitality where he served as Executive Chef at TPC Snoqualmie Ridge, a private golf and dining club in Snoqualmie, Washington that includes a championship golf course designed by Jack Nicklaus. Much of the focus of Peter’s work there was to redefine and structure the culinary program and develop succession plans at all levels.

Three of Executive Chef Peter Birk’s Career Highlights Hotel 1000 / BOKA Restaurant + Bar in Seattle. The property is rated AAA Four Diamond and Forbes Four Star. The 120 room luxury hotel property is comprised of a 120 seat restaurant, in room dining, employee cafeteria and 10,000 square feet of meeting space with over $5 million in Food and Beverage sales.

Prior to that, Peter worked as both an independent expert consultant as well as Executive Chef for a diverse and impressive list of high end restaurants. (See sidebar for restaurant highlights). Not surprisingly, Peter sees challenges as opportunities for growth, renewal and sustainability. “We’ve got a good culinary team and our members are tuned in to what we do. Our kitchen, though old, is fairly well maintained, but it’s vulnerable. We can make the kitchen work better and expand

our horizons, food-wise. But we need to be mindful about change and how we communicate it, too. Change just for the sake of change scares people. Overall, we really need to look at sustainability— from getting local famers and growers here, to getting our members excited about our offerings, to taking care of our staff—it’s all about sustainability.” And currently, it’s all about the new menus too. Set to debut in late July and run through September, two of the menu items that Chef Peter is most excited about are Kansas City Strip Steak and Asian Sauerkraut. But the front runner in terms of personal favorites for Peter is the Fried Chicken. Yes, that same friend chicken recipe he made as a kid in the kitchen cooking alongside his family. Food, family and fun are the sustenance of life and like the man said, it truly is all about sustainability.

Harborside Restaurant (McCormick & Schmick’s), Seattle. The dining facilities includes a 150 seat café, a 120 seat fine dining room and two banquet rooms with seating for up to 275 guests. Chef Peter participated in the planning and opening of the first chef-driven farm to table experience. The McCormick & Schmicks property budgeted sales in excess of $7 million annually. Ray’s Boathouse, Café and Catering, Seattle. The property boasts a 300 seat café, a 180 seat fine dining room and a 100 seat banquet room. Chef Peter was responsible for keeping two iconic restaurants current with culinary trends, budget planning for a property with gross sales in excess of $10 million and food sales of $7 million annually. Other responsibilities included planning of and participation in catering functions up to 4,000 guests, planning of and participation in a dinner at the James Beard House and featured guest chef at properties in Hong Kong, Shanghai and Zurich.

KemperSports Update By Kate Spencer, Communications Director

M

embers of the KemperSports leadership team met with Spokane Club members for the first time at the Annual Meeting of Members on July 11th in the Georgian Ballroom. It was a packed house, with member interest in the consulting and management company high. Jim Stegall, Executive Vice President of KemperSports, gave a presentation to the group that provided the history, mission and industry expertise of the family-owned, Northbrook, Illinoisbased organization. The KemperSports presentation was a follow up to the Board announcement made earlier in the summer to enlist

KemperSports for consulting services, as well as possible management services in the future. The presentation provided vital information on the current state of the private club industry, as well as an overview of KemperSports’ services and the proprietary programming the organization has developed to assist its clients. The presentation was followed by a question and answer session, along with the opportunity for Club members to speak personally to members of the KemperSports team which in addition to Mr. Stegall included Mark Hoesing, Senior VP of Operations, Michelle Parmer, Regional Director

of Sales and Marketing and Marc Guiseppi, Interim GM of the Spokane Club. As a KemperSports staff member, Marc Guiseppi will continue to serve as the Club’s Interim General Manager until a permanent General Manager is hired. Marc is a seasoned pro in the private club industry and has been an integral part of the KemperSports team for many years. Look for updates in your Club emails and in the Winter issue of Signals coming in late October.

Want to be Healthier, Happier and Enjoy Peak Performance? Get Some Sleep!

T

he most overlooked key to healthy living happens to require little-to-no effort. It’s sleep, and the Centers for Disease Control and Prevention (CDC) list it as a major public health concern. During sleep our body rests, recovers, regenerates, heals, records and organizes all the events of our day. Without adequate sleep we don’t do anything to the best of our ability. Adequate sleep is more than a number. It requires getting the right amount at the right time and moving through all the sleep cycles. On average, adults need 8 hours of sleep per night, children and teens range from 10-14 hours. People who experience sleep insufficiency are more likely to suffer from obesity, Type 2 diabetes, depression, cancer, increased mortality and decreased productivity and quality of life. 28 . Three years ago I listened to a doctor I respect and admire lecture on sleep and realized it was the missing link in my personal journey of wellness. Our family had three children in four years. Sleep was a bit of an afterthought. I have personally felt the affects of sleep deprivation and can vouch to the slowness of thought, delayed reaction time, dangerous driving, emotional lability and general fogginess.

The difference in performing at our best is not staying up later to get it all done, but getting adequate sleep so that the hard-work of your day can be realized.

As I listened to the lecture I realized that sleep was not only critical to maintain daily function but the missing link in peak performance. When we sleep, our brain organizes and categorizes our experiences of the day. If we don’t get enough sleep, or our bodies don’t move through all the right phases of sleep (disrupted sleep) our brains won’t remember what happened well because it didn’t get sorted and packaged in the right area. As our brain is organizing itself, our body is working on recovering and repairing itself. In order to get maximal benefits from your workout, reduce the risk of injury and improve overall health and wellness you need adequate sleep. Healthy sleep habits are key to accomplishing this goal. Avoid technology in the bedroom–TV’s, phones, even tablets. Keep your room quiet, dark and at a comfortable temperature. Don’t do any intense exercise within a few hours of bedtime, but make sure to get daily exercise. Avoid caffeine or nicotine (stimulants) in the afternoon. Alcohol and medications may make you fall asleep faster but disrupt your sleep cycles and the quality of your sleep. Be consistent with your bedtime routine, and go to sleep and wake up at a similar time, even on the weekends. Avoid eating large meals close to bed time. Most of us are not getting enough sleep, and many of the problems we face could be improved or at least mitigated by simply going to bed earlier and sleeping longer. Make an investment in your health that requires the least effort: go to bed!

Yo-Athlon 2017! The Yo-Athlon starts Downtown on Friday, August 18th with the Handball quickie at 5:30 pm. On Saturday, August 19th the fun continues with the golf scramble at Downriver golf course at 12:45 pm. NACAD Basketball Tournament: Congrats to the Spokane Club Women’s Team! The Spokane Club hosted the 2017 NACAD Basketball Tournament, April 28th-30th. This year’s tournament featured 39 teams from 11 different clubs across the 7 divisions. In total there were 75 games played during the weekend event. Eastern Washington Championships Spawn New “Tennionaires” Participation was up again for our annual Eastern Washington Tennis Championships held June 9-11. A good mix of local and out of town competitors made for some solid tennis with several of our members walking away with “tens of dollars” in cash prizes!

USTA 18 and Over Sectionals Return to Spokane (and to the Club!) The Pacific Northwest USTA 18-andOver sectional championships once again return to Spokane. This is the third year in a row Spokane has landed this prestigious event. A huge difference this year is the fact that the Spokane Club will be used as one of the hubs for the event. Not only will the Valley indoor tennis facility be used for matches, the Downtown restaurant will be designated a gathering spot for the competitors attending the event including our very own Women’s 3.0 Team captained by Shirlee Steiner! This exposure promises to be a positive flux in business both for the downtown and valley locations. Let’s roll out the red carpet and make this USTA event great for all involved!

Another “New Team” Claims the VBT IV Title!

Winning Team BSH: Michael and Kate Burns, Dale and Paula Silha, and Craig and Andi Hart New teams keep springing out of the woodwork to claim the coveted VBT (Volleyball, Bocce Ball, Tennis) travelling trophy! This time Team BSH dominated two of the three events and walked away victorious. Although all four teams competing showed skills in each of the competitions, Team BSH never looked back from round one taking an initial 15 point lead. Meet Patricia Benjamin New Water Aerobics Instructor Patricia Benjamin is a Certified AEA Aquatic Fitness Professional. She is passionate about aquatic fitness, personal water training and rehabilitation for all populations, and seeks to help those in her classes reach their full potential. She has been teaching for over ten years and has developed and taught a variety of water exercise and swimming programs throughout her career. She has a Master of Education degree with a focus on Leisure Wellness. In addition, she holds certifications as an ACE Personal Trainer and Senior Fitness Specialist. Mermaid Basic Certification (Ages 5+) Whether your child wants to imagine becoming a mermaid, or wants to try a mermaid tail to see what it is like, mermaid certification classes are a great introduction. The Mermaid Basic Certification teaches swimmers how to care for their tail, and how to safely swim with it. Class will incorporate fun activities (swimming through hula hoops, swimming on back and learning safety techniques) to certify your child as a mermaid. Prerequisites: (must test with lifeguard at the pool prior to signing up) • Float: 30 seconds on back, 30 seconds on front—take breath while on front. • Roll from front to back, roll from back to front. • Tread water for approximately one minute. • Swim 25 yards or meters in any manner. • Perform the dolphin kick. Mermaid tail is not provided. You may either rent or purchase one from Aquatics, or bring your own. If you are interested in purchasing a Mermaid tail, contact Chris in Aquatics at cbarry@spokaneclub.org for catalog. Orders must be made by September 4th if you want a choice of color. Masters Swimming

The Masters swimming class is for anyone 18 years and older. Our mission is to help you achieve your swimming and fitness goals, whatever they may be. Join us for expert coaching, technique instruction, and camaraderie. Whether you are swimming for fitness, a competitive swimmer, open water swimmer, or a triathlete, this is your class! Practices are every Monday and Wednesday from 6:30 – 7:30 pm. There will be a $35 charge if you attend 2 or more practices in a month.

Swim Conditioning-Advanced (replaces Intro to Swim Team)

New! Spokane Club Swim School The Spokane Club Swim School takes traditional American Red Cross swim lessons and transforms them into exactly what your child needs. Our certified instructors will follow best practices to get your child to swim like a fish. Every class will consist of new learning opportunities and the instructor will communicate directly with you to ensure your child is progressing to the best of their ability. We offer both Private and Group classes for ages 3 and up. Classes are available Downtown and in the Valley. Must receive cancellation by the Friday before the first day of class to avoid $10 cancellation fee.

New! Free Toddler Time: Valley & Downtown Start your child down the river of water familiarity with Toddler Time. This drop-in program is much like Open Swim, but for parents and their toddlers, requiring in-water participation from the parent or guardian. Parents must be in the water with their children. Errand day gives you 3 hours of time to run errands while your children are at the Club having fun. You can even use Errand day as an Errand Evening and take your sweetheart out to dinner!
