Preparing for a scare Kayla Bersztaitis, a zipline instructor at Hall Township’s Echo Bluff Park, draws a cardboard scarecrow prop for the upcoming Fright Night at the park. Echo Bluff will put on its spooky “Trail of Terror” for adults and a “Pumpkin Patch Trail” for kids and those who don’t wish to be too scared. The fun will be from 6:30 to 10 p.m. Oct. 25 and from 6:30 to 10 p.m. Oct. 26. A bonfire, crafts and concession stand will also be available for the whole family to enjoy. Admission is $5 per person; free for kids aged 7 and under. There will also be a ghosts vs. zombies paintball attack, where participants will have the chance to shoot paintballs at zombies and ghosts. Participants will pay $5 for this event. For those interested in volunteering or those who are looking to get volunteer service hours, Echo Bluff is looking for extra help with the trails. Check out the charity before ‘going pink’ CHICAGO — Scam charities often use emotional appeals to target their victims, warns the Better Business Bureau. This caution is especially relevant because many businesses are marketing pink ribbon products and services supporting breast cancer research and National Breast Cancer Awareness Month (NBCAM) in October. “The goal is for as much of the money to go to the curing cancer, not in running an organization to make money for the operators,” said Steve J. Bernas, president/CEO of the Better Business Bureau serving Chicago and Northern Illinois. “Consumers can ensure this by asking charities proper questions before donating and by doing a careful assessment of the charity.” Consumers can check out charities online with the BBB at www.bbb.org/charity. The National Breast Cancer Awareness Month (NBCAM) organization also has a website at www.nbcam.org. This group is a collaboration of national public service organizations, professional medical associations and government agencies working together to promote breast cancer awareness, share information on the disease and provide greater access to services. The BBB encourages consumers to look for companies that disclose a charity name, the amount of a sale going to the charity, the duration of marketing campaigns and, if applicable, the maximum or minimum contribution amount. While many pink ribbon marketing campaigns are trustworthy, consumers can eliminate breast cancer awareness charity scams by doing the following:

• Research the charity with the BBB. If the product or service is in support of an unfamiliar charity, learn more about the organization by reviewing the BBB’s charity report online at www.bbb.org/charity. • Identify the charity receiving the donation. If the product or service is linked to a donation percentage, contact the business or manufacturer to determine exactly where the money is going and what percentage is donated. • Confirm the charity’s corporate partners. Many national breast cancer charities list the names of corporate partners and sponsors on their websites. • If you contribute, do not give cash. Use a credit card or check or money order made out to the name of the charitable organization, not to the individual collecting the donation. • Keep records of your donations. This includes receipts, canceled checks and bank statements. Keeping these documents will allow you to document your charitable giving at tax time. • Although the value of your time as a volunteer is not deductible, out-of-pocket expenses (including transportation costs) directly related to your volunteer service to a charity are deductible. • Be wary of charities that are reluctant to answer reasonable questions about their operations, finances and programs. • Also be careful of appeals that are long on emotion, but short on describing what the charity actually does. Making farm safety No. 1 could save a life Contrary to the popular image of fresh air and peaceful surroundings, a farm is not a hazard-free work setting. Every year, thousands of farm workers are injured and hundreds more die in farming accidents. According to the National Safety Council, agriculture is the most hazardous industry in the nation. Health and safety hazards on farms Farm workers — including farm families and migrant workers — are exposed to hazards such as the following: • Chemicals/pesticides • Cold • Dust • Electricity • Grain bins • Hand tools • Highway traffic • Lifting • Livestock handling • Machinery/Equipment • Manure pits • Mud • Noise • Ponds • Silos • Slips/Trips/Falls • Sun/Heat • Toxic gases • Tractors • Wells High risk factors on farms The following factors may increase risk of injury or illness for farm workers: • Age — Injury rates are highest among children age 15 and under and adults over 65. • Equipment and machinery — Most farm accidents and fatali-

ties involve machinery. Proper machine guarding and doing equipment maintenance according to manufacturers’ recommendations can help prevent accidents. • Protective equipment — Using protective equipment, such as seat belts on tractors, and personal protective equipment (such as safety gloves, coveralls, boots, hats, aprons, goggles, face shields) could significantly reduce farming injuries. • Medical care — Hospitals and emergency medical care are typically not readily accessible in rural areas near farms. How you can improve farm safety You can start by increasing your awareness of farming hazards and making a conscious effort to prepare for emergency situations including fires, vehicle accidents, electrical shocks from equipment and wires, and chemical exposures. Be especially alert to hazards that may affect children and the elderly. Minimize hazards by carefully selecting the products you buy to ensure that you provide good tools and equipment. Always use seat belts when operating tractors, and establish and maintain good housekeeping practices. Here are some other steps you can take to reduce illnesses and injuries on the farm: • Read and follow instructions in equipment operator’s manuals and on product labels. • Inspect equipment routinely for problems that may cause acci-

dents. • Discuss safety hazards and emergency procedures with your workers. • Install approved rollover protective structures, protective enclosures, or protective frames on tractors. • Make sure that guards on farm equipment are replaced after maintenance. • Review and follow instructions in material safety data sheets (MSDSs) and on labels that come with chemical products and communicate information on these hazards to your workers. Fact sheet for farm safety • Take precautions to prevent entrapment and suffocation caused by unstable surfaces of grain storage bins, silos, or hoppers. Never “walk the grain.” • Be aware that methane gas, carbon dioxide, ammonia and hydrogen sulfide can form in unventilated grain silos and manure pits and can suffocate or poison workers or explode. • Take advantage of safety equipment, such as bypass starter covers, power take-off master shields and slow-moving vehicle emblems. Illinois Extensions, Farm Bureaus offer equine series University of Illinois Extension units and County Farm Bureaus are working with Black Hawk East in Kewanee to provide horse enthusiasts with the 2013 fall equine seminar series scheduled from 6:30 to 8:30 p.m. Nov. 11 and Nov. 18 in the Ag Arena at Black Hawk East. The series will begin on Nov. 11 with guest speaker Ronald Rhoades. He will speak on trail riding. He will discuss how trail riding a horse helps round out and calm a horse’s mind, where to ride, how to encourage and develop horse trails and how to have a great ride. Bob Elwell from Jubliee Saddle Shop will close out the night discussing proper saddle fit

and what to know before purchasing a saddle for a horse. On Nov. 18, Drew Cotton, BHE equine instructor will discuss what a feed tag really means. He will talk about the information that appears on the tag and how to interpret it. Aaron Mosher of Prophetstown will end the seminar talking about draft horses. Calendar Oktoberfest Dinner UTICA — Starved Rock Lodge at Starved Rock State Park in Utica will host its annual Oktoberfest Dinner Celebrations at 5 p.m. Saturday, Oct. 19 and Sunday, Oct. 20. Food court I’m going to do a few fish dishes, which is something I don’t often do. I’m not a really big fish person, but I know there’s a lot of fish lovers out there; so I will try a seafood column for you once in awhile.

Crispy Beer Battered Fish 1/2 cup cornstarch 1 1/2 teaspoon baking powder 3/4 teaspoon salt 1/2 teaspoon Creole seasoning 1/4 teaspoon paprika 1/4 teaspoon cayenne pepper 1 cup all-purpose flour, divided 1/2 cup 2% milk 1/3 cup beer 2 cups crushed unsalted top saltines (about 40) 4 6-ounce cod fillets Oil for deep fat frying Combine cornstarch, baking powder, salt, Creole seasoning, paprika, cayenne and 1/4 cup flour in a shallow bowl. Stir in milk and beer until smooth. Place crackers and remaining flour in separate shallow bowls. Coat fillets with flour, then dip in batter and coat with crackers. Heat oil to 375° in an electric skillet or deep fat fryer. Fry fish in batches for 2 to 3 minutes on each side or until golden brown. Drain on paper towels. (For 1 teaspoon of Creole seasoning you may substitute 1/4 teaspoon each of salt, garlic powder and paprika and a pinch each of dried thyme, ground cumin and cayenne pepper.)

Shrimp Chowder 2 ribs celery, chopped (about 1 cup) 3 tablespoons all-purpose flour 3 baking potatoes (about 6 ounces each) chopped into 1/2-inch dice 1 8-ounce bottle clam juice 1 cup low sodium chicken broth 1/2 cup half and half 1 14-ounce can tiny shrimp, not drained Salt and pepper In a large pot, warm oil over medium heat. Add onion and celery and cook, stirring until soft about soft, about 5 minutes. Sprinkle flour over vegetables and sauté for 1 minute. Stir in potatoes clam juice, broth and 2 cups of water. Bring just to a boil, reduce heat to medium low and cook until potatoes are tender, about 12 minutes. Stir in half and half and shrimp and cook until heated through, about 5 minutes. Season with salt and pepper and serve hot.

Thyme Roasted Salmon with Crunchy Veggie Salsa Cooking spray 4 salmon filets (about 4 ounces each) rinsed and patted dry 1 teaspoon dried thyme, crumbled 1/4 teaspoon salt 1/4 teaspoon pepper (coarsely ground preferred) Salsa 1/4 medium cucumber (about 3 ounces) peeled, seeded and chopped 1/4 cup quartered or chopped grape tomatoes, about 2 ounces 1/4 medium green bell pepper, chopped 1/4 cup finely chopped radishes 2 tablespoons snipped fresh cilantro 2 tablespoons finely chopped red onion 1 teaspoon grated lime zest 2 tablespoons fresh lime juice 1 teaspoon olive oil (extra virgin preferred) 1/4 teaspoon salt Preheat the oven to 350°. In a medium bowl, gently stir together the salsa ingredients. Set aside. Line a

Citrus Spice Glazed Salmon

Baked Halibut

4 6-ounce salmon filets 2 tablespoon orange marmalade 1 teaspoon reduced sodium soy sauce 1/4 teaspoon Chinese five spice powder 1/8 teaspoon salt 1/8 teaspoon ground ginger Line a baking sheet with foil, grease foil. Place salmon on the baking sheet. Place marmalade in a small microwave-safe bowl and microwave for 10 seconds or until warmed. Stir in the soy sauce, Five spice powder, salt and ginger. Spoon over salmon. Bake, uncovered, at 350° for 15 to 20 minutes or until fish flakes easily with a fork. Check the filets for doneness by inserting a fork at an angle into the thickest portion of the fish and gently parting the meat. When it flakes easily into sections, it’s cooked completely.

3 pounds halibut steaks (1 inch thick) 1 cup (8 ounces) sour cream 1/2 cup grated Parmesan cheese 1/4 cup butter, softened 1/2 teaspoon dill weed 1/2 teaspoon salt 1/4 teaspoon pepper Paprika Place halibut in a greased 13-by-9-inch baking dish. Combine sour cream, Parmesan cheese, butter, dill, salt and pepper; spoon over halibut. Cover and bake at 375° for 20 minutes. Uncover, sprinkle with paprika. Bake for 10 to 15 minutes or until fish flakes easily with a fork.

Grilled Salmon with Marmalade Dijon Glaze

2 tablespoons Mrs. Dash Lemon Pepper Blend 4 4-ounce salmon filets 4 slices of lemon 4 slices of orange 2 tablespoons of white wine Cooking spray Preheat oven to 375°. Spray a 9-by-9-by-2-inch pan with cooking spray. Lay fish in pan. Coat each fillet with Mrs. Dash Lemon Pepper Blend. Alternate slices of lemon and orange on top of fish. Sprinkle with wine. Place in oven for 5 minutes. Lower heat to 325° and continue to cook for 5 minutes. Rest 3 to 4 minutes before serving.

1/2 cup orange marmalade 1 tablespoon Dijon mustard 1/2 teaspoon salt 1/2 teaspoon garlic powder 1/4 teaspoon pepper 1/8 teaspoon ground ginger 4 6-ounce salmon filets In a small bowl, combine the first six ingredients, set aside 1/4 cup. Brush remaining glaze over salmon. Moisten a paper towel with cooking oil, using long handled tongs, lightly coat the grill rack. Place salmon skin side down on grill rack. Grill, covered, over medium heat or broil 4 inches from the heat for 10 to 12 minutes or until fish flakes easily with a fork, basting occasionally with remaining glaze.

Bacon Wrapped Ginger Shrimp 13 slices bacon 1 pound large shrimp, peeled and deveined 2 tablespoons soy sauce 2 teaspoons finely grated peeled fresh ginger 1 teaspoon packed light brown sugar Preheat oven to 475° with rack in upper third. Cut bacon slices in half crosswise and wrap each piece around a large shrimp, secured with a toothpick, and place in a large bowl. Whisk together soy sauce, ginger and light brown sugar. Add bacon wrapped shrimp to soy sauce mixture and toss to coat. Arrange in a single layer on a rimmed baking sheet. Bake 10 minutes. Turn on broiler and broil until bacon is sizzling and crisp at edges and shrimp are cooked through, 2 to 3 minutes. Serve warm or at room temperature. Makes 26.

Broiled Cod 1/4 cup fat free Italian salad dressing 1/2 teaspoon sugar 1/8 teaspoon each salt, garlic powder, celery powder, paprika and pepper 2 6-ounce cod filets 2 teaspoons butter In a large resalable plastic bag, combine the dressing, sugar and seasonings. Add the fish, seal bag and turn to coat. Refrigerate for 10 to 30 minutes. Drain and discard marinade. Place filets on a broiler pan coated with cooking spray. Broil 3 to 4 inches from the heat for 10 to 12 minutes or until fish flakes evenly with a fork. Place 1 teaspoon butter on each fillet. Let stand until melted.

Citrus Grilled Salmon

Fish Fillets with Stuffing 2 tablespoons butter, melted 1/2 cup chicken broth 1/2 cup finely chopped onion 1/2 cup finely grated carrots 1/2 cup chopped fresh mushrooms 1/4 cup minced fresh parsley 1/4 cup dry bread crumbs 1 egg, beaten 1 tablespoon lemon juice 1 teaspoon salt 1 teaspoon pepper 2 1/2 to 3 pounds fish filets (cod or haddock) Paprika In a large bowl, combine the first 11 ingredients and mix well. In a greased 13-by-9-inch microwave-safe dish, arrange the filets with stuffing between them. Moisten paper towels with water, place over fish. Cook 9 to 11 minutes or until the fish flakes easily with a fork, rotating dish occasionally. Sprinkle with paprika. Have any good fish recipes you would like to share? Thursday, Oct. 24, Adult Craft Night (for ages 10 and up) will take place at 6:30 p.m. Participants will learn how to make a milk jug skeleton and help the library recycle their milk jug igloo from the summer reading program. All materials will be supplied. SPRING VALLEY — Today, Thursday, the Richard A. Mautino Memorial Library will host a game night from 5 to 6 p.m. for all ages. Monday, Oct. 28, the young adult book club will meet from 5 to 5:30 p.m. and discuss “The 5th Wave” by Rick Yancey. Any patron of the library who is interested in e-books and/ or e-audiobooks needs to contact the library so their library card barcode is entered into the library’s system. The patron will then be able to download e-books and/or e-audiobooks from the OMNI Consortium. For questions call 815-663-4741. The library has also received an LSTA Backto-Books Grant from the Illinois State Library to purchase books on CDs. The library has purchased more than 100 books on CDs, and they are now ready for checkout.

There is a book sale going on at the library where patrons can purchase 10 items for $1. The library will also be selling gift cards again this year as a fundraiser for the holiday season. Gift cards are available for many of the area businesses and online businesses. The gift cards that are purchased give different percentages of the cost back to the library. The first order is due by noon Friday, Nov. 8 with delivery on Nov. 20. The second order will be due by noon Friday, Dec. 6 with delivery by Dec. 20. Order sheets that list which gift cards are available may be picked-up at the library. Payment for the gift cards must be done at the time of ordering by cash or check. TISKILWA — The Tiskilwa Public Library has kicked off its new automation system for checking out items. Patrons are encouraged to visit the library and pick-up their new cards. Not only is the library fully automated now, but it also offers free downloadable e-books and e-audiobooks for its patrons through Omnilibraries.org. Check out the library’s new website at www. tisklib.org as it offers many options for searching new items, information about upcoming programs and new materials. LAMOILLE — The LaMoille-Clarion Public Library reminds all students and parents its databases, encyclopedias and reference materials are available to help

with school assignments. Take advantage of the many free resources available at the library. BUDA — The Mason Memorial Public Library will host a Halloween party at 11 a.m. Saturday, Oct. 26. Children in kindergarten through eighth grade are invited to paint pumpkins. Halloween stories will also be read. Patrons are encouraged to R.S.V.P., so the library knows how many pumpkins will be needed for painting. To R.S.V.P., stop by the library or call 309895-7701. The library’s phone is a phone/fax, so patrons are reminded to wait through the funny ring until the librarian answers. LADD — Preschool story times are back in session. Story times are held at 10:30 a.m. on the first and third Monday of each month. They

are geared toward children ages 3-5, who are accompanied with a parent or guardian. OHIO — The Ohio Public Library’s annual Halloween party will be at 10 a.m. Saturday, Oct. 26. The library will have games, activities, food and a costume contest. Also, the library is selling butter braids as a fundraiser. Orders can be placed with any board member or at the library. Orders will arrive by Nov. 18. WALNUT — The Walnut Public Library is selling VHS tapes. Patrons are invited to fill a grocery bag for $1. Librarian Michele McAlvey challenges patrons to find out the various crafts that can be made out of old VHS tapes. There are sites on the Internet that have ideas of things to make out of old tapes. Patrons

are also invited to checkout the ongoing book sale at the library. Signup for a library card to borrow books and have new reading material all the time. The library continues to collect used cell phones. Drop off any old cell phones at the library. The library staff will send them off for money that will be put toward the HVAC account. PERU — The story time program for children ages 3 to 5 years old will be held at 10:30 a.m. every Wednesday. Children will enjoy stories, sing songs and enjoy crafts. Entertainment Briefs fundraiser BCUW plans Trivia Breakfast from 8 to 10 a.m. Oct. 26 at the Post House Night for Nov. 9 Ballroom.

PRINCETON — The Bureau County United Way will hold its fourth annual Trivia Night on Nov. 9 at the Princeton Elks Lodge, 1105 E. Peru St. in Princeton. Doors will open at 5:30 p.m. and trivia will begin at 6:30 p.m. The maximum is eight per team. Registration is $15 per person. Winning teams receive $200 for first place, $100 for second and $50 for third. The Elks will be serving a chicken buffet dinner for an additional $10. The parade loops through the downtown and finishes back at Haymarket Square. The Monster Breakfast is being served buffetstyle by Mama Cimino’s, which is becoming well know for their Sunday brunch. The breakfast will feature several breakfast items including sausage and pancakes. Proceeds from the event will go to support activities and programs for Dixon Main Street and the LCCOA. The annual parade also includes a costume contest with judging starting at 9:30 a.m. at Haymarket Square. All participants in the parade receive a treat bag donated by local businesses, Dixon High School Leo Club and the Noon Lions.
