BECOME OUR SPONSOR

How can your business help the ocean and the environment? Becoming a sponsor of Mi Moana will help us to continue our monthly beach clean events and expand our education and community outreach work. We want to do more to remove plastic and general waste from our beaches and seas and inspire people to minimise their plastic use and change their habits to reduce waste getting into our environment. But we need funds to expand and be more active in the community, as well as recruit team leaders and expert marine biologists to lead our education programmes and organize more events. Mi Moana needs compassionate, caring businesses to work alongside us and help us to accomplish even more to help clean the ocean and protect our environment. BEING A SPONSOR IS GREAT FOR YOUR COMPANY! Mi Moana sponsors receive brand exposure at our events, on our website and social media. They have been working alongside experienced developers of modern villas in Spain, Lifestylehouse for many years using the SISMO system. They have seen how this simple, yet intelligent building system offers an excellent solution for residential properties and developments. Now they are bringing the system to Ibiza and Formentera! Ibiza Building Technology are constructing a modern show villa on the Island of Ibiza using SISMO and will be offering full marketing and technical support for owners, developers, architects, builders and real estate agents through their offices in Ibiza.

WHO ARE SISMO? Established in Belgium in 1985, SISMO has been a leader in the implementation of rapid, affordable, durable and environmentally sound building technology. The prime domain for the SISMO group of companies is to address the challenges in the modern building industry in a financially stable business environment. SISMO combines more than 30 years of experience in development and application of the SISMO building technology with a dynamic group of partners and co-workers. Ongoing research and development ensure that products will continue to exceed expectations. SISMO Ibiza is the exclusive distributor of SISMO building technology under the auspices of SISMO Spain.

WHAT IS SISMO? SISMO is a unique method of insulated permanent concrete formwork allowing building promoters, contractors and architects to build quickly and cost effectively with high structural quality. The SISMO building system is used internationally in the residential, industrial and commercial construction markets. The SISMO module consists of a steel wire lattice that holds an inner and outer panel of Expanded Polystyrene (EPS - or other materials of your choice). The cavity between the panels is filled with concrete to create a load bearing insulated concrete wall. In contrast to other ICF (Insulated Concrete Formwork) products, SISMO offers you flexibility. You can choose from a wide variety of infill panels and the dimensions of the full wall panels can be adjusted to the project requirements.

TEN REASONS TO CHOOSE SISMO FOR YOUR PROJECT

1

It’s Universal

SISMO is universally applicable. The SISMO building technology can be adapted to every project, from foundations and cellars up to the roof structure. Its high productivity, brilliant simplicity and modest demand of materials and labour make the SISMO concept suitable for every project.

3

It’s Fast

Our experiences have shown that the time required to realise buildings using the SISMO building technology is significantly shorter compared to conventional building methods. The key word for SISMO is the industrial character of the system. The rationalised concept allows precise planning and prevents unnecessary delays. A very fast construction process completes the efficiency of the SISMO concept.

It Offers Efficient Insulation

5

2

It’s Durable It’s Fire Resistant

The assembled SISMO system is a continuous monolithic concrete system without fire leakage through the assembled system. The polystyrene used is selfextinguishing in compliance with the DIN 4102 rules. SISMO building technology allows the use of alternative infill materials for specific applications. Fire resistant tests carried out on different types of SISMO modules have given very satisfactory results.

4

The superior design of the SISMO module provides maximum strength during concrete placement. Once complete, SISMO structures attain a high structural integrity. Tests and experience have shown that the strength of a SISMO structure is far greater than a comparable traditional structure, and insulated formwork improves the concrete cure quality. If correctly placed concrete and polystyrene will not rot or decay, making a SISMO structure virtually maintenance free for many years to come.

Energy efficient building has become a priority in the building industry. SISMO gives the builder the opportunity to choose between a variety of insulating materials and thermal performances. With insulating infill panels, the SISMO buildings are completely and permanently insulated. When using SISMO it is possible to provide an airtight building envelope with minimal ’uncontrolled’ air changes. As a consequence, the volume and quality of ventilation air can be easily and accurately controlled in a SISMO building, thus providing a comfortable, economical and healthy environment.

It’s Certified

6

In 2001 Sismo® was the first company in the construction sector that received the European Technical Approval (ETA 01/0001). Over the years, several tests at universities and building authorities in different countries have proven the SISMO building technology’s exceptional capacities. Reports can be supplied upon request. The materials used have a European Certificate (CE) and it complies with the Spanish Regulations - CTE and EHE-08.

8

It’s Versatile

The infinite variability of the SISMO concept provides a construction method with virtually unlimited possibilities. It can be used for the construction of loadbearing vertical elements, partitions, curtain walls, floors and roofs. It gives unlimited design possibilities - different geometrical or curved shapes can easily be obtained in the module surface as well as in the pre-located window and door openings. However simple or fantastic the design, however traditional or daring, any project can be realised with the SISMO Building Technology.

7

It’s Environmentally Friendly Thinking Green is becoming more and more important in the construction industry. The SISMO building technology is addressing these environmental concerns on several levels. The production process is non-polluting, recycled materials can be used for the infill panels and using concrete walls instead of wood products helps to cut down on the worldwide problem of deforestation. Using the SISMO building technology significantly reduces jobsite waste, the building will be energy efficient and will also have a minimal impact on the environment.

It’s Lightweight

9

The SISMO modules are easy to handle, to transport and to assemble thanks to a very low weight that permits their use in any conditions. Thanks to the lightness of the modules no heavy or expensive site materials are needed. Modules can easily be handled and assembled manually by one or two workers. The light weight makes the SISMO modules safer to work with compared to other prefabricated systems.

It’s Cost Efficient

10

The SISMO building system is a cost efficient building method for all parties involved in the building process. For the contractor the system is easy to install, the need for specialised labour is heavily reduced. The industrialised process allows efficient planning and an accelerated construction time. There is no need for investing in expensive formwork as the modules arrive on site with the window and door openings already pre-located and every special shape or form already included. The SISMO modules are lightweight, there is no need for heavy machinery on site. SISMO significantly shortens the construction time allowing a faster commissioning of the building. This results in lower pre-financing costs for the developer and for the owner of the project. The end user of a SISMO building will be astonished by his low energy bill. Building with SISMO guarantees a complete and permanent insulation, which produces energy savings in cold and in hot climates. More than any other kind of building system SISMO creates enormous economies of scale, especially in larger projects with repetitive aspects.

The Coworking Revolution

Millennials and Generation Z are driving a massive shift in the global work force, looking for flexible, inspirational spaces around the world where they can grow their business. This has led to the rise of coworking, shared work environments where small to medium sized businesses can have desk or office space, access to meeting rooms and facilities such as high speed internet, printing, photocopying and video conferencing. The term coworking was coined by Brad Neuberg in 2005 when he set up the Hat Factory in San Francisco with just three technology workers. The concept gained traction with nomadic entrepreneurs working out of coffee shops and solopreneurs working from home and feeling isolated, and many more coworking sites opened in North America. It is now popular in Europe, Australia and Asia too, and brands are developing to offer small businesses an alternative to working from home and big businesses a cost-effective alternative to the traditional office. As well as the practical benefits of coworking, there are also excellent networking opportunities and the ability to form a strong business community to boost all members, share ideas and gain promotion. A recent study also showed other unexpected benefits, such as an increase in creativity, improved focus and an improved standard of work. Interestingly, 90% of coworkers in the study reported an increased self-confidence, showing the value of a community and the learning opportunities which coworking can bring. Coworking space has doubled worldwide year-on-year since 2006. Demand already outstrips supply by a factor of 3:1 and over 65 million small businesses are expected to join by 2020 and so new players are entering the field. An exciting new coworking brand is Our Space, a boutique coworking space provider which will open at least 50 locations in multiple key international gateway cities over the next 3-5 years. They are opening their first branch on the Golden Mile in Marbella on February 1st and have plans to open in Miami, Dubai and the UK in 2017. Our Space offers private offices ideal for small businesses, permanent office spaces in a shared environment and a coworking area for hot desking. It has been designed by Emmy-nominated, Hollywood Production Designer Carlos Barbosa to provide awe-inspiring features with a distinct aesthetic that will inspire, boost productivity and provide Marbella based entrepreneurs with space, facilities, corporate wellness and professional development opportunities for a manageable monthly fee. The Arboretum Foundation (Arboretum) was delighted to be the recipient of a year of free office space in the new coworking office, Our Space in the Oasis Business Centre on Marbella’s Golden Mile. This mutually beneficial partnership between the brands is based on a shared commitment to sustainable, ecologically-sound business practices. For Arboretum, this donation of one of the centre’s 14 permanent desks mitigates the cost of renting office space for the charity, giving them access to superfast broadband, meeting spaces, regular training courses in English and Spanish, yoga, massages, and a professional network of businesses they can collaborate with. Additionally, Our Space is the first coworking concept in the world founded on connecting science, habitat and humans in a professional community, effectively boosting creativity and productivity by incorporating living walls, water features and plants as the central theme of the office design. Arboretum’s Founder and President Alejandro César Orioli commented, “We are delighted to be working from the Our Space office; their philosophy is very close to ours. Both concepts are based on sustainability, cooperation, relationships and building networks. It’s a beautiful space with stunning architecture and great services. We think it is important to be part of this business community to spread the message of sustainability in the workplace and raise awareness of our charity.

El Lodge Ski & Spa Resort Making Waves in the Sierra Nevada

In December the luxury ski lodge, El Lodge Ski & Spa Resort, opened in Sierra Nevada following an extensive renovation at the hands of British Interior Designer, Andrew Martin. Since its opening it has been making a real impact on guests and media alike, with GQ Spain voting it as one of the 100 best hotels in the World, Departures in the UK including it in their Top 10 Ski Chalets and being featured in the Evening Standard, El Mundo, Telva and Glamour to name a few. Owned by the Marbella Club Hotel Group it is a natural extension of the hotel’s passion for skiing. The Marbella Club Hotel Golf Resort & Spa has enjoyed links with skiing and Sierra Nevada for over 50 years. In the early 1960s founder, Prince Alfonso von Hohenlohe, did much to promote the ease with which visitors could water ski on the Mediterranean Sea and within two hours be on the ski slopes of Sierra Nevada. His son Prince Hubertus was an accomplished skier and boasted an impressive Olympic record. It was Prince Alfonso’s obsession with skiing and the natural wonders of the region that inspired the first Spring Games in the 1960s and it is now the first element of this highly competitive day. The competitors leave the hotel at 6.30am and head to the Sierra Nevada to hit the slopes, it’s a true highlight of the day. Unfortunately the competitors won’t get the chance to relax and enjoy El Lodge before they zoom off to the race track, but it’s perfect for a more relaxing trip to the Sierra Nevada, whether to stay, or simply enjoy a coffee, lunch or cocktail on the stunning piste-side terrace.

About El Lodge

A cosy and luxurious winter retreat, El Lodge Ski & Spa Resort is unique in Sierra Nevada as the only luxury ski-in/ski-out property.

Constructed from seasoned Finnish timber, the Alpine idiom of the building harmonises with its natural surroundings and boasts the same charm and authenticity that gives Marbella Club its magical ambiance. An independently owned property El Lodge is a member of the globally recognised Small Luxury Hotels of the World. Franck Sibille, Area General Manager of the Marbella Club Hotel Group, explains, “With a rich skiing heritage it was only a matter of time before Marbella Club Hotel Group would acquire a ski property in Sierra Nevada. After a meticulous search we have found a property that flawlessly delivers the service and unique experiences to which our hotel guests have become accustomed and I challenge anyone to find a better location in Sierra Nevada to enjoy winter sports. I am thrilled to be a part of this significant step for the hotel group brand and look forward to welcoming Spring Games aficionados to experience our chic mountain retreat.” The site was originally earmarked for King Juan Carlos and although his dream property was never built, this royal connection explains why the location is one of the most sought-after in Sierra Nevada. The Marbella Club Hotel Group and interior designer Andrew Martin have fully refurbished this stunning property to create a ski lodge which will offer a charming and funky winter retreat for skiers looking for the very best. With just 20 rooms, the lodge retains the feel of a private chalet and can be booked by room per night or in its entirety for private parties. The intimate size of the property and with accommodation options ranging from family bedrooms, double and deluxe suites and rooms and even private floors; families, groups of couples and friends will all feel equally at home.

A signature feature of the lodge is the luxurious Suite Terrace – known as ‘Suite Nevada’ - the most stylish place to take a break from the slopes, day or night. Suite Nevada offers authentic and charming Spanish service, a trendy ambience and freshly prepared Mediterranean cuisine in a sublime location. The hotel offers a genuine personalized service to make you feel at home. A beautiful children’s play room designed by Mini Mec offers a perfect space for the little ones and children’s ski classes can be arranged from the hotel so there’s something for all ages. Skiers will appreciate the luxurious and comfortable ski locker room within easy reach of the slope and equipped with comfortable sofas, a TV and refreshments. The Spa at the lodge is perfect for relaxing après ski and is complete with Sauna, Jacuzzi, Hammam, and four treatment rooms, offering a range of popular therapies to help ease aching muscles and aid relaxation. Remember to take your swimming costume to the ski locker room so after a day on the slopes you can kick off your boots,

change and go straight into the Jacuzzi pool or Sauna for the perfect après-ski activity. There is also a heated outdoor pool, with al fresco Jacuzzi and Sauna cabin, plus a sun deck for soaking up the Spanish sun. With direct access to the slopes, El Lodge Ski & Spa Resort is located 50m from the Chairlift Parador 1. Guests can enjoy 45 pistes and 6 off-piste routes on their doorstep and 16 artificial snow machines will generate snow should Mother Nature fail to do so. El Lodge Ski & Spa Resort is located 2 hours from Marbella Club, 1.5 hours from Malaga International Airport and 1 hour from Granada international airport. Guests have the option of enjoying a unique ‘Ski & Sun’ twin stay at both properties. The Ski & Sun Package consists of two nights at El Lodge, followed by two nights at the Marbella Club to soak up the sun and relax on the Mediterranean coast. More information: www.ellodge.com

ucked away in Hotel Puente Romano’s lush tropical gardens is Roberto Ristorante, a fine dining establishment with some of the most delicious Mediterranean food I have ever tasted. Not only is the food exquisite, but the location is unsurpassed, with uninterrupted views of the Mediterranean from their huge terrace and glass fronted dining room. Roberto is the perfect place to treat yourself to a really special experience and ticks all the boxes! It delivers gorgeous sea views, a relaxed yet magical ambience (complete with soft lighting and melodic piano music), food which is beautifully presented yet packed with flavour and some of the best service I have had on the Costa del Sol. Throughout our evening we were made to feel like VIPs and all the staff showed extraordinary knowledge of the menu. Our very helpful waiter recommended we try the taster menu to properly experience the cuisine and it was a real treat. For 69€ per person we enjoyed seven sublime yet dainty courses which left us delighted with the food, without feeling uncomfortably full. We also took the wine pairing option which really enhanced the experience. However you can enjoy a meal here for a more modest sum. Prices start from 15€ for a starter, 19€ for a main and 12€ for a desert. Every course was delicious, but here are a few of the stand out dishes. Finely sliced veal with a tuna sauce, tempura capers, micro herbs and edible flowers - a stunning looking plate which really packed a punch. Served with a light, fresh rose cava made in the French style which was lovely and refreshing. A luxurious and creamy lobster bisque with a seared scallop in the middle. When they lifted the lid on the little bowl, the smell of the sea hit you and you knew you were in for a treat. The bisque was paired with a 20 year old Oloroso sherry from Jerez with the taste of California raisins and a sour note which took the dish to another level. A beautifully tempered chocolate “cannelloni” filled with creamy mousse, on top of a light chocolate sponge and served with candied nuts and juicy orange segments marinated in wine. The balance of rich and sharp flavours and different textures made this a real taste sensation. Paired with a Malaga desert wine, with just the right level of sweetness. Roberto Ristorante is a really special place where you can experience the finest food and service with the best sea views. Open daily from 20.30 to 00.00. Hotel Puente Romano, Bulevar Prí ncipe Alfonso von Hohenlohe, s/n, 29602 Marbella, Málaga, Spain. Drive past the Puente Romano’s tennis club and down to the beach. MARBELLA CLUB GRILL: Is now serving diners al fresco on the spacious terrace under the stars.

Dining under the stars THE warm summer evenings are finally here and dining al fresco is one of the many pleasures of this time of year in Marbella. One of the signs that the season has really started is the Marbella Club Grill leaving its winter home and heading out onto the spacious terrace for dining under the stars. Candles are lit, the gentle buzz of conversation and laughter is all around, the smell of the flowers mingles with the aroma of classic cooking and the scene is set for a very special evening. This iconic restaurant turned 50 in 2012 and has been delighting customers with classic Mediterranean cuisine cooked with flair and accompanied by superb service since 1962. Overseen by Executive Chef Juan Galvez the menu changes several times of year, but always features high quality produce prepared with care and allowed to shine. The centrepiece of the winter restaurant, the open grill, is still key to the menu, turning out perfectly cooked cuts of meats such as fillet steak en brochette

with herbs, chateaubriand with bearnaise sauce or the entrecote Rocky with Argentine sauce (named after the first grill chef). The lamb cutlets with mint sauce are divine, sweet and tender meat, with a smoky chargrilled taste and accompanied with fresh mint sauce – highly recommended. The soufflé s are legendary – choose from a cheese option for starters or decadent chocolate or Grand Marnier versions for desert. All are light as a feather, risen to perfection, soft and unctuous and totally delicious. Just remember that they take 20 minutes to prepare, so order them ahead of time if you can. If you prefer something lighter, the monkfish and clam soup with fennel has crystal clear broth and the most delicate and fresh flavours and the tartar of red prawn with avocado is a delight. If you’re not sure, simply check with the ever helpful maitre’d Alfonso who is always full of recommendations and Sommelier Angel can match each course to perfection. Whatever you choose will be served with aplomb and presented under a cloche, a touch which always makes the diner feel special. A night at The Grill is one not to be missed and never to be forgotten. www.marbellaclub.com

Marbella Mum raising money to support underprivileged kids in Malaga Hessia Fernandes has just launched a campaign to raise money for the Nena Paine Foundation for underprivileged children in Malaga. She will be undertaking the challenging trek to Everest Base Camp on the 7th of October 2018 on behalf of this kids’ charity. Her aim is to raise €6,000 to fund a minibus, which will be used to transport the kids to activities and distribute food to needy families. Ahead of the trek, we spoke to this philanthropic Mum of two to find out more about her and why she’s taking on this challenge.

Hi Hessia, please tell us a little about yourself I am a Consulting Sales Director for Europe, Middle East and Africa for Oracle, an American computer technology company. I am also a Mum of two teenagers. I am French, from a little village between France and Switzerland where most of my family still live. I have lived in Germany and London and moved over to Marbella 15 years ago when my children were small. How does raising money for charity make you feel? It may sound cheesy, but the first word that comes to mind is “complete”. I think it’s important to have the cycle of giving and receiving and giving to charity makes me feel responsible. I think it’s also very important to set a good example for my children and make them appreciate how privileged they are and that it is important to think about others and take responsibility to help those who need it. What other charity work have you done before? I love a challenge, so this is my third charity trek. I climbed Mount Atlas to deliver shoes to children in remote Moroccan villages and last year I climbed Kilimanjaro to raise funds for the Samaritans, a charity in the UK. I am passionate about sports and living an active life, so all my challenges revolve around sport and activity and pushing myself to the limit. Why do you raise money for charity? I was the youngest of ten children from a poor family in rural France and we received a lot of charity from the community, including clothes and shoes. That charity was so important for us and it left an impression on me.

I think it’s important to give back, so this is my way to thank people for what they gave me. Also, living in Marbella we are surrounded by so much wealth, so I want to take advantage of my privilege and give back to those who are not so fortunate. Tell us a bit more about your latest challenge

I will be trekking to Everest Base Camp in Nepal on the 7th October. It is a demanding 10-day trek which takes you to very high altitudes and has some tricky technical sections. I will be hiking from 1,852 meters up to 5,550 meters, which is demanding physically and mentally. The biggest issue is the altitude sickness, which was something I really suffered from when I climbed Kilimanjaro. It is also very cold at night, with a risk of avalanche as you climb higher and ever changing weather conditions add to the danger. This is a completely self-funded expedition, so every Euro we raise will go directly to the children’s charity and we hope to be able to hit our goal of raising €6,000 so the charity can buy the minibus that it desperately needs.

Why have you chosen Everest Base Camp? The Mount Kilimanjaro and Everest Base Camp treks rank as two of the most popular “epic mountain” treks in the world. Both mountains are members of the seven summits, the highest peaks of the seven continents, so Everest seemed like the obvious next step! I couldn’t climb to the summit of Everest, as you need to be a skilled mountaineer, but I felt that the trek up to base camp would give me a great experience, be a real challenge and something people could get behind so I could raise money for this great charity.

Why are you fundraising for Nena Paine? As a Mum of two children, I really wanted to raise money for a kids’ charity and after being informed about The Nena Paine Foundation from a colleague at Oracle, I felt it was a good choice. By supporting a smaller charity, we can really make a difference by raising awareness of the great work they do and also making a major contribution by funding a minibus which will make things so much easier for taking the kids out and about and also distributing food to people in need. I went to visit the project in Malaga and was so impressed by the work they were doing. The centre is a place where kids can go and receive help with education and be steered through difficulties in their lives. There are 19 teachers and psychologists supporting 240 kids from low-income families who have been identified at risk of social exclusion and who may be struggling at school. As well as helping them to improve their grades, and give them a safe place to be after school to do their homework, they also serve hot meals to 20 of the most vulnerable children. On top of this, they have started to distribute food to families as a Food Bank. They teach self-confidence and make sure all the kids know that just because they are not from wealthy families that they are not worthless and that they have the potential for a bright future. Education and support such as this is vital for breaking the cycle of poverty and giving children a way out of a bad situation so I really wanted to help them. How can people contribute to the campaign? We need help to reach our ambitious goal of funding a minibus for Nena Paine and any donations would be very much appreciated. You can give via my Just Giving Page https://www.justgiving.com/crowdfunding/hessia-fernandes, or contact me by email or phone if you want your company, school or organisation to get behind the cause in some way. Email hessia.fernandes@oracle.com or call +34-671-721-452 for more information. To find out more about the charity and the great work they are doing, please visit www.nenapaine.es

STATE-OF-THE-ART FITNESS

Getting back into shape after summer

WE ASKED DORA LASZTOVICZA, STUDIO MANAGER AND PERSONAL TRAINER AT THE LOOK YOUR BEST MARBELLA, FOR A FEW TIPS ON HOW TO BOUNCE BACK FROM ALL THE GREAT FOOD, DELICIOUS COCKTAILS, ICE COLD BEERS AND SEDENTARY LIFESTYLE WE ENJOYED OVER SUMMER – RETURNING TO FIGHTING FIT SHAPE AND RIDDING OURSELVES OF THOSE EXTRA KILOGRAMS. Dora and her team have just set up a new, exclusive fitness and lifestyle studio in Puerto Banús which offers “fast, targeted, effective personal training”. It combines muscular stimulation technology (EMS), a bespoke 20-minute workout and nutritional advice for maximum results. Because it activates 90 per cent of the muscles, just one session is equivalent to 90-120 minutes in the gym, so it saves time, reduces impact on joints and activates muscles. There are many effective and easy ways to maintain your fitness level and health, but the most important are: • Eat right – We recommend eating small nutritionally rich meals throughout the day because it balances the blood sugar levels and stops you feeling hungry. When choosing what to have, eat fresh, natural, unprocessed foods as much as possible and stay away from fast food. Simple changes such as reducing portion sizes, switching from white to whole grains and losing the carbs for your evening meal can make a surprising difference.

SEPTEMBER OCTOBER 3

• Do more exercise – I recommend at least 30 minutes of exercise, four or more times a week, including: walking, running, swimming, cycling, the gym and, of course, EMS training. Try to incorporate exercise into your day to help you stick to it. • Drink a lot of water to keep your body hydrated – the recommended amount is around two litres of fluid per day and more in the heat. Try to aim for three litres and you’ll feel great and your skin will thank you! Sleep more – Try to get eight uninterrupted hours of sleep each night… your body repairs itself when you sleep, so you’ll look and feel much better. For more information on nutrition and exercise, and to try out this “revolutionary fitness technique”, visit www.lookyourbest.es to book a trial session. Hungarian beauty queen Korinna Kocsis (pictured with the EMS equipment) is the face of the studio.

Interview with Chef Jaume Puigdengolas from Skina and ‘Dine with the Stars’ On the 7th and 8th of September, three renowned Michelin starred chefs cooked together to create a 12 course culinary extravaganza at the 5* Kempinski Hotel Bahia Estepona. Jaume Puigdengolas from Skina, Diego Gallegos from Sollo and Mauricio Giovanini from Messina each cooked four amazing courses and Ana Núñez, Head Sommelier of Kempinski Hotel Bahia expertly paired them with wines. Each dish was spectacular, and often surprising, such as the depth of flavour from the Sisho leaf and apple tartar from Skina, which managed to be both light, yet complex and was the first time most diners had sampled this Japanese leaf. Other highlights from Skina included Amberjack fish cooked in yogurt and served with textures of beetroot, a chestnut mushroom ravioli which was meaty and rich and full of umami, and their Yuzu snow which was both creamy and light and bursting with a citrus tang. Spanish Chef Jaume Puigdengolas Rey has studied and worked in Michelin star kitchens for many years, including with three-star chef Santi Santamaria in Can Fabes and Dubai. In 2011 he became the Head Chef for the Marbella restaurant Skina, which received its first Michelin star in 2008 and has gone from strength to strength ever since. Jaume has an individual style which is centred around the best quality products and traditional Andalusian flavours, with a playful avante-garde approach which brings out the maximum flavour from every ingredient and every dish. His main motivation is creating sensory perfection.

We spoke to him after the event to find out more. 1. Why did you decide to be a chef? - Eating well and cooking together at home has always been a very important part of my family life which I lived and breathed since I was young. My Dad was a huge influence on me, even though he wasn’t a professional chef he was a real inspiration. 2. What would you say is the style of your food? - My style is very personal, I concentrate on flavour and the best ingredients, always playing with seasonal products and trying to make them shine! 3. What is the achievement you are most proud of? - Maintaining the Michelin star at Skina year after year and constantly pushing it forward is very important to me. 4. What do you think about the culinary talent on the Costa del Sol? - You can see each year that there’s more talent and the bar is being pushed higher and this is really important and beneficial for all of us working in the industry. We have to keep on pushing to make it better still! 5. What should gastro tourists do when they visit the Costa del Sol? - Above all they should enjoy and take advantage of the amazing diversity of cuisine and produce that we have in this area. 6. How has it been to collaborate with two other Michelin starred chefs for Dine with the Stars? - It’s been a wonderful experience to be able to share with these friends and fellow chefs and the setting was incredible and full of magic. We all said we’d love to do it every year. 7. What is your favourite dish on the menu and why? -

The Beets, amberjack fish and dairy dish is probably my favourite as it’s very fresh and delicious, perfect for summer in Marbella.

8. Do you have anything exciting coming up this year at your restaurant? - We’re always trying to improve and get better – that’s the trick to our success and this year we’re heading over to Hong Kong for a few weeks to create a pop-up Skina in Asia which will be a wonderful way for more people to come and try our food. 9. How can people find out more about your restaurant? - The best way is to come and try it – I can assure you it will be a wonderful experience. To find out more about Skina visit www.restauranteskina.com The 5* Kempinski Hotel Bahia has four restaurants, a lounge and a pool bar, where you can enjoy anything from a snack or afternoon tea, to steaks, seafood and tapas. Highlights include their beachfront restaurant serving Spanish cuisine in a stunning setting and a wine & steak house showcasing the highest quality cuts of Spanish meats and over 450 wines. There are over 100 tapas dishes on offer at La Cocina de Mi Abuela, where each dish put forward by their talented chefs represents their favourite recipe from their Grandmother’s kitchen, which inspired them to become a Chef. FEEL-GOOD FACTOR

Personal Experiences OF EMS TRAINING By Georgina Shaw

I

am a 33 year old Mum of two-year old Lucas, I enjoy working out but never manage to find the time or the long term motivation. My aim when I started training at Look Your Best was to find a way to quickly lose my “wobbly bits”, without losing weight and try to find something which can incorporate into our very busy schedule.

The idea appealed to me, as it’s just a short 20 minute session, but because of the EMS technology, you can work 90% of your muscles at once and therefore get the equivalent results of 120 minutes in the gym! It can also target problem areas such as your tummy as the muscles are working harder for longer. It also strengthens your back, which I worry about as my toddler gets heavier and heavier.

How the training works

At the start of training they give you a comprehensive body test with their clever In Body machine which tells you your BMI, muscle mass, percentage of body fat, hydration and more. This is used to set goals and showed that I needed to put on 4.1kg of muscle, but lose 1.7kg of fat.

The normal training session consists of enjoying an isotonic drink, then being given cycle shorts and a long sleeved t-shirt and socks to work out in. You are then helped into the special suits which look a bit Lara Croft (in my mind anyway) to start the workout. It’s thanks to this clever equipment that you can get such great results in such a short time, as the suit contains electrodes in all the right places to make your muscles work really hard throughout, so if you’re doing a squat, the suit is also working your arms, tummy, back etc. The EMS feels like a strong pulse or tickle, which you can really feel working but isn’t uncomfortable. The session includes muscle building, cardio and then stretching and relaxation – a lot to pack in over 20 minutes. This is a proper workout with a personal trainer, but those pulses really make you work a lot harder and achieve better results and the interval training nature of the class means you achieve a lot in a short amount of time. Having the personal trainer there checking you’re doing the movements properly and motivating you to keep up the intensity is really valu-

able and definitely helps us to get the most out of the session. Following a shower in their spacious and pristine changing rooms, you are given a protein shake and can relax on their sofas. We’re so busy that we haven’t been able to do the recommended 2 sessions per week. However the results are amazing, after 5 sessions split over 3 weeks I achieved: * An increase in muscle mass from 20.5kg to 21.9kg * A decrease in body fat from 14.4kg to 12.8kg * A decrease in percentage body fat from 27.3% to 23.9% That was with a lower frequency than recommended and no change to eating or activity habits – amazing! To try EMS training at Look Your Best, book their special trial for 25€, or to really see the results the Triple Trial Training for 99€ is highly recommended. lookyourbest.es

Sustainability in property development Sustainability is the concept of developing in a way which meets the needs of the present without compromising the well-being of future generations, depleting our resources or having an unnecessary impact on the environment. An important way in which we can all be more sustainable is through how we build our homes and how we live to reduce our energy and water consumption and our carbon emissions. Sustainable building is an approach to construction which takes into consideration what is good for our planet and improve comfort living while creating stunning contemporary properties we can all be proud of. In many developed countries, these techniques and practices are becoming the norm, with the participants of a recent study forecasting that more than 60% of their projects will be green by 2018. These techniques are used across commercial and residential developments, with more homeowners and developers now prioritising sustainability in their projects, while still producing amazing properties which are a joy to live in. Spain lags behind some of the other countries in Europe in terms of the widespread adoption of sustainable construction, with poor insulation leading to properties feeling very cold and wasting a lot of energy. However, as more new building projects get under way, growing demand for energy efficient homes and government policies to encourage sustainable building point to a bright future for sustainable building in Spain. In this article, we will give you an introduction to sustainable building and why it is important for us all to embrace. What is sustainable building? Sustainable property building practices look to minimise the effect of construction on our planet. Partner of Lifestylehouse.com in Marbella Ton van den Bosch explains; “Sustainability is the essence of modern property development and something we apply to all our projects. It runs much deeper than people generally think - much more than simply ensuring that the buildings are well insulated and utilise renewable energy. Sustainable construction is a consideration when sourcing materials, when planning deliveries and time on site to minimise carbon emissions, not to mention looking at options for ventilation, water recycling and energy production. It takes time and thought to implement sustainable building practices throughout a project, but it is more than worth the effort, for the client and the planet.” Why is it important? Construction is one the largest ways in which we impact the environment. For example, the UK construction industry is the largest consumer of resources, using more than 400 million tonnes of material a year, which accounts for around 10% of the UK’s carbon emissions. Once they are built, buildings use 40% of all of the energy consumed in the UK. While residential developments are just a small part of this, they are still a big drain on both energy and materials, and so both developers and owners can make a real difference to the impact our homes have on the planet. By applying sustainable building practices, the construction process and the final building reduces wastage of water, conserves natural resources, improves air and water quality and protects biodiversity and ecosystems, so it’s something we should all be striving for. Why is it good to live in a sustainable home?

Although implementing sustainable building techniques can cost more at the outset, a main benefit to living in a sustainable build home is how cheap it is to run. Owners see an immediate reduction in energy bills, which quickly offsets any additional investment. Savings are estimated to be around 14% over 5 years according to a recent study and the value of the property is also higher for resale. These properties are also designed to offer beautiful spaces to live in, which benefit the environment without any reduction in quality of life, and improve occupant health and comfort. This really is a win–win scenario! Sustainable Building in Spain Despite a history of poor construction standards and low awareness of environmental issues, Spain is changing for the better and taking important steps to encourage sustainable building. The Junta de Andalucia recently announced a €75.9million investment in financing environmentally-sound and long-lasting projects in Andalucia that will come to fruition before 2020 as part of their new energy efficiency programme. This funding and support will encourage more developers and individuals to adopt these methods, which is excellent news for the quality of construction and the environment. Design and construction experts Lifestylehouse.com in Puerto Banus have been leading the way in sustainable construction for the last decade. All their properties are Energy Level B as a minimum and constructed with sustainable building practices. Partner Ton van den Bosch explains; “Lifestylehouse.com has been committed to designing, developing and operating our real estate projects with a higher level of efficiency for the last 6 years. We use technology and innovation through every stage of a property’s lifecycle in order to reduce energy and waste, and to manage our resources better. In this way, we seek to deliver superior performance and opportunities for the end users and provide real estate of enduring value. Today, initiatives of this kind are often seen through the lens of sustainability. But, for us, they have always been smart business practice. Actions to use renewable energy, recycle building materials and reduce waste are grounded in economic decisions to help reduce our operating expenses and mitigate energy price risks. Simply put, we follow sustainable practices in every one of our properties because sustainability builds value.” Contact Lifestylehouse Group on +34 678 643 105 or visit www.lifestylehouse.com to find out more

One dedicated contact – As an Exclusive Lister you will get a dedicated contact person within the office who is your point of contact with the property sale and available to look after everything for you. Our staff speak a wide range of languages, so if possible we will match you with someone who speaks your language and with whom you can develop a strong and positive relationship throughout the selling process. Trust & Peace of Mind – Selling a person’s home is a big responsibility and you need to have total confidence in your agent. It’s difficult to feel this way when you list your property with multiple agents, as you don’t get to know them or develop a relationship. By listing exclusively with us, you are much more than just a number, you can pop into our office whenever you want for a coffee and a chat and trust that we’re on the ground working hard on your behalf. We will also ensure regular communication so you know what we’re doing and how buyers are responding. Maximum security for your keys and property – It is normal practice for Estate Agents to request a set of your keys so that they can conduct viewings and do any cleaning or maintenance on the property without bothering you. This is the most effective way for us to sell your property, but of course each set of keys is really important and you need to know they are being well looked after. We take great care with all keys, we have a dedicated key storage area in our office and staff are required to sign out and in any keys they use each day, so there’s a security record. However, not all agents have the same procedures, and having many sets of keys with different agents is a risky business, as if there are any issues it’s very hard to trace back to a particular agent or viewing. It is also possible for viewings to clash when several agents have keys, and this doesn’t give a great impression for the buyer. Listing exclusively with Nordica means giving your key to just one agent who you can trust and ensuring that viewings are timed well to avoid any issues. Access to a Network of the Best 100 Real Estate Agents – With Nordica, you don’t have to choose between the benefits of exclusive listings, or exposure, you can have both. We have created an Agent Network including 100 of the Best Real Estate Agents on the Costa del Sol and have weekly property showcases. At these meetings, we show them our exclusive properties, educate them about the property and arrange a viewing for them so they can promote them to their buyers in the best possible way. This means you get access to their buyers without having to deal with another agent – win, win. Free Professional Photography – “A picture is worth a thousand words” and images are vital for selling properties. Buyers arrange viewings based on the pictures, much more than the information. As an Exclusive Lister you will receive a free photography package worth 200€ which includes a professional photographer visiting your property and producing a selection of stunning shots which best represent your property. You will then be able to choose your

favourite 7 shots, with our advice on what will most attract a buyer. You will be given these in high resolution and web versions for ease of use. Be the most visible properties on our books – Exclusive Listing properties will feature regularly on our website, blog and social media and as our prominent Property of the Month in our office. This is in addition to the standard listing on our website which ranks incredibly well in Google so that potential buyers can find it with ease. Print Advertising – Nordica invests heavily in advertising in magazines and property newspapers on the Costa del Sol, to reach the most buyers possible. These ads often feature individual or multiple properties and our Exclusive Listing properties will have the opportunity to be featured in these ads, subject to suitability and space. Home Styling Package - Each month, we select one of our Exclusive Listings to receive a Free Home Styling Package, where we will de-clutter, rearrange and style your property to attract the most buyers possible, this is only available to our Exclusive Listings.

Exclusive Listings with Nordica offers so many great benefits, so we hope you will join this exclusive club. Get in touch today and let us help you sell! www.nordicapropertymarbella.com sales@nordicamarbella.com Tel: 952 811 552

particularly the accelerated, compressed and densely populated urban environments of the 21st Century that he smoothly alters into a futurist landscape of the imagination. In "Violet Skies" (right) and "Dreams of Eden", he depicts his personal vision of two of his dream cities: New York and Paris. Joseph Klibansky makes large-scale, idealistic digital paintings that are built up through hundreds of layers of photography enriched with acrylic paint on archival cotton paper overlaid with a liquid resin. His work conveys a layering and compression of time, space and place creating new narratives by creating dreamy images of cities, combining past and future, with a dramatic dynamism that for the artist becomes a way of signifying his perception of the rapidly changing digital culture as well as suggesting his personal journey.

Joseph Klibansky was born in 1984 in Cape Town and grew up in a creative and internationallyoriented environment. In his teens, he became fascinated by the possibilities offered by computer art and digital imagery. He started to merge hundreds of images into powerful compositions, enhanced by computer artwork and often combined with a variety of painting techniques.

The young artist soon developed his own distinctive style, which fascinates art galleries and collectors the world over: innovative creations in bright colours. “When you see my work, you immediately get a positive vibe”, he says. Joseph Klibansky graduated at a Dutch business school, but soon decided to follow his great passion: art. He is one of the youngest professional artists in the contemporary international art scene. Inspired by such topics as cities, fashion, design, modern architecture, and music, he is constantly full of ideas for new works of art. Or, as he puts it: “It is my life. When I am not sleeping, I am thinking about art!” “Blue Dreams” is pictured, left.

Business Brief

The NEWS

Premier Networking organisation B2B Costanetworking rebranded in December to 4 Business International

Business Women thriving on the Internet While it’s true that women still struggle to secure the top jobs in the corporate world, it seems that they are blazing a trail online. The Sunday Times Style Magazine reported in September that many women are relishing the flexible hours, low-start up costs and level playing field that online businesses allow. This is leading to a large number of new businesses blossoming on the internet, where women can combine their family and business commitments more easily and avoid the “boy’s network” mentality which is still apparent in many offline businesses.

The company will have 3 structures: 4Business Networking - 4Business Global Magazine and - 4Business Franchising 4B Networking will continue to operate along the coast of the Costa del Sol and along with the existing La Cala and Puerto Banus Circles has now opened its Estepona circle. With two more circles planned in Benalmadena and Sotogrande by end February 2010. The launch of this 4B Global Business Magazine will provide an extra level of support for the business community. 4 Business International are proud to announce their franchising department, and will offer franchise advice and facilities to businesses wishing to grow their business by way of franchising. 4B franchising currently franchise the: • 4B Global Magazine. • Key To Mijas Costa Magazine. • The Best Of website • Linekers Sports Bars Further information on 4B meetings, 4B Advertising and 4B franchising can be found on our website www.4businessglobal.com or by telephone 652 153 608

Marbella Town hall works hard to encourage tourism To protect the important tourism sector, Marbella Town hall has implemented a range of initiatives to promote the area and encourage more investment. They are working on a very limited budget so have decided to go for a cost-effective PR strategy based around a series of events. José Luis Hernández, Councillor for Tourism and Foreigners Department, explained to the B2B meeting in September that the promotion they undertook for summer 2009 has already seen good results. The Davis Cup Quarter Final in Puerto Banus generated 10 million Euros in direct investment into the restaurants, bars, hotels, shops and businesses in the area. They also launched the Marbella Food and Sun gastronomic festival which ran over several days and highlighted the excellent produce and restaurants in the region. Marbella is also being promoted as a location for filming as well as a perfect place for launching products such as cars and luxury goods. Amongst the range of promotional activities being undertaken, Marbella Town Hall is working with golf courses to help them to more effectively promote themselves, funding

company name board. Seminar space and other marketing solutions are also available. If you would like to promote your company at either or both of these events, please email info@andalusian-events.com for a booking form and more information.

overseas business trips and generally working alongside local businesses to help them and the city flourish. Look out for the upcoming online public awareness campaign, to praise Marbella as the ideal place to live and develop a professional career. The key message will be “you can lead a better life in Marbella”, something which professionals working here wholeheartedly support.

Help Marbella Town Hall cater for ex-pat businesses Jose Luis Hernandes, the Councilor for Tourism, Foreigners and employment in the Marbella Town Hall is setting up a business community “Think Tank” responsible for developing the relationship and integration of the foreign business community in Marbella to bring the two parties together for the mutual benefit of both. This can only be a positive thing for businesses and residents of the Costa del Sol! Nationality: British

Length of Time in Spain: Nearly five years

Length of Time in Spain: 4 Months

Reason for Coming to Spain: I was recruited to run the PR Department of an Agency over here. That ended in the recession but I wanted to stay so I set up a Marketing and PR Agency of my own and have been here ever since.

Reason for Coming to Spain: To swap the cold Scottish summer for a marketing internship and a nice tan in Spain before heading back to university and the snow!

Why you love the Costa del Sol: I love the lifestyle, weather, food and ambience and could never imagine leaving. Favourite Food: I love oriental food – Thai, Chinese, Japanese are all favourites of mine Favourite Costa del Sol Restaurant: The restaurants on the Costa del Sol are brilliant so it’s hard to choose one – The Beach House in Elviria and Trocadero in Marbella are great for something special on the beach, Patagonica is the best for steak, Roberto Ristorante at the Puente Romano is magical and I have just discovered Tempora in Marbella Old Town for delicious, interesting food at reasonable prices. As you can tell I love eating out! Favourite Hotel: I have done more backpacking than anything so have stayed in some truly awful places in my time, but I really like Alavera de los Baños in Ronda for Moorish charm. Experiences in the hospitality industry: I have been a waitress, worked in a bar and cleaned rooms in a hotel in my time – but none of it very well I’m afraid. The most fun must have been waitressing and cleaning rooms in a hotel at a ski resort for the season. The worst was being a waitress at Pirates in Magaluf, Mallorca one summer. I had to carry huge plastic trays of food in a boiling hot barn of a place for rowdy crowds on 18-30s holidays dressed as a serving wench – not my proudest moment!! georgina@selectmagazineonline.com

Why you love the Costa del Sol: The sun, the sea and the wonderful people. I’ve had the best summer of my life here, will be very sad to leave and would most definitely like to make it home, one day. Favourite Food: Tapas and Italian Favourite Costa del Sol Restaurant: I like La Valencia in Marbella as it has a buzzing atmosphere and amazing food, Il Tartufo in the old town is a lovely Italian which in my opinion does the best Risotto. Favourite Hotel: I visited the Melia Lebreros in Seville in July, it is a lovely hotel and in a great location, I also like the Petit Palace Plaza in Málaga, it is in a great location (right next to the shops) and all the rooms have lovely wall paintings of different flowers and their own little courtyard. Experiences in the hospitality industry: I have worked as a waitress and a barmaid in Scotland for a few years while studying. Whilst I have met some amazing people and listened to some crazy stories during my experience, I definitely prefer to be on the other side of the bar, drinking a nice cocktail.

Aloma Robertson Role at the Magazine: Sales Representative Nationality: British Length of Time in Spain: 8 years

Constanza Mtz. From left to right: Constanza, Georgina, Angelo, Rhea and Aloma

Angelo Collins Role at the Magazine: Founder and Director Nationality: British Length of Time in Spain: 6 years Reason for Coming to Spain: I wanted a better life for my young family. On first arriving in Spain, my wife and I had two small children aged 3 and 1. I preferred the environment and weather on offer for them here, especially the Mediterranean attitude towards young children, and decided they’d much prefer being here than grow up in the cold UK. We now have three children, who are all bi-lingual, live a full and charmed life and think every day is a holiday! Why you love the Costa del Sol: The family lifestyle and diverse international community, coupled with the village mentality which Marbella has to offer. Favourite Food: Thai and home cooked authentic Italian.

6

Role at the Magazine: Graphic Designer Favourite Costa del Sol Restaurant: Value for money and views; Nueva KasKada, Marbella. Cool lazy beach restaurant; South Beach, El Rosario. Buzzy, friendly bar with tasty brasserie food; Nu Fluid, Elviria……..I know there are loads more which I don’t have space for here, sorry guys! Favourite Hotel: The Oriental (Thailand, Bangkok) pure class! Experiences in the hospitality industry: I became involved in the hospitality industry by accident 20 years ago when a good friend decided to open his own restaurant. He asked me to help him in a managerial capacity as I was too grumpy to wait tables! I later went on to run a very busy night club/restaurant in London. Eventually I owned my own restaurant with my wife and converted a high street bank to a trendy restaurant providing a friendly fine dining experience. Upon moving here I decided to supply the industry I was used to working in with drinks I thought they should have, but didn’t! Now I’ve founded a magazine dedicated to it - I think me and this industry are inseparable, oh well, could be worse! angelo@selectbrands.es

Reason for Coming to Spain: We decided to settle in Spain with our three young children after buying a holiday home in the mountains, just outside Malaga, as we loved the outdoor lifestyle and wanted our children to learn to speak Spanish. I have since had two more children and could never think of bringing them up anywhere else.

Nationality: Mexican Length of Time in Spain: 8 years Reason for Coming to Spain: My mother took a job offer here but ended up leaving and I decided to stay. Why you love the Costa del Sol: For its multicultural diversity and its quality of life, it’s just so comfortable here and very hard to leave. I am more of a city person, so at the beginning I thought I would find it hard to get used to this kind of lifestyle, but it has been pretty easy! I now consider Marbella as home. Favourite Food: There’s one for every occasion, currently its oyster month! Favourite Costa del Sol Restaurant: La Moraga, Casa Mono & Small World Cafe. Favourite Hotel: Tribeca Grand Hotel in the heart of NYC. Experiences in the hospitality industry: I can’t hold a tray and it pains me to see food leftover... so... none at all! konieffect@gmail.com

Why you love the Costa del Sol: I love living near the sea and being able to take the children to the beach and riding our bikes or rollerblading along the seafront and I believe the level of education here is excellent. Favourite Food: Unfortunately I have a very sweet tooth and adore chocolate fudge cake. I also love roast dinners with all the trimmings. Favourite Costa del Sol Restaurant: This is a very hard question for me as there are so many good restaurants here. I love the El Oceano Hotel’s view over the sea, but Bar La Risa in Alhaurin Golf Club is one of my favourites for their great roast dinners and atmosphere, I can also let all my children run around while I eat in peace!! Favourite Hotel: I have not been lucky enough to stay in many hotels, but love Selsdon Park Hotel in Surrey, for its history and beautiful grounds. Experiences in the hospitality industry: My very first job was as a chambermaid in the Selsdon Park Hotel for three years which was a very interesting and an eye opening experience!!!. I have never worked in a bar as am far too clumsy, but have enjoyed meeting and getting to know so many restaurant and bar owners who I admire for their resilience and stamina in this extraordinary industry. 7 aloma@selectmagazineonline.com / 660454796

The Gordon Ramsay Story

WORD

Gordon Ramsay

Date of birth

8th November 1966

The Early Years

Gordon Ramsay was born in the small town of Johnston in Scotland, at the age of 5 he moved to Stratford upon Avon, where he grew up.

Love for Football and for Scotland

At the age of 12, Gordon was chosen to play football for Warwickshire’s under 14’s. Returning to his roots in 1984 Gordon did a trial for Rangers FC in Glasgow, the team which stole his heart as a kid. During a training session he injured his knee, damaging the cartilage. But being Gordon, he was determined and battled on with the injury, causing further damage to his leg, which put an end to his football career.

Where it all Began

After coming to terms with the loss of his football dreams, at the age of 19, Gordon decided to enrol at North Oxfordshire Technical College to study Hotel Management. Following on from this Ramsay took a job as a Commis Chef at the Roxburgh House Hotel, where he learned the tricks of the trade, going on to run the kitchen and 60-seat dining room at the Wickham Arms.

Bright Lights and Passion

After a while Gordon decided it was time to conquer the bright lights of London, where he worked as a Chef in a few restaurants, before being inspired to work for celebrity chef Pierre White at Harvey’s, for over two years.

Haute Cuisine

Deciding that he wanted to further his career by studying French cuisine, Gordon took a job working for Albert Roux

at Le Gavroche in Mayfair, the first restaurant in the UK to gain three Michelin stars. After working at Le Gavroche for a year, Albert invited Gordon to work with him for a season at Hotel Diva, a ski resort in the French Alps. From there Ramsay decided to move to Paris and took a job working with Guy Savoy and Joël Robuchon, two Michelin-starred chefs. Ramsay trained in France for a further three years, until the physical and mental stress of working in the kitchens became too much for him. Then he decided to take a year out, taking a job as a personal chef on a private yacht, Idlewild, which was based in Bermuda. But Gordon’s heart was in the Capital, returning to London in 1993, where he took his first job as Head Chef at Aubergine in London. Within three years of working there he achieved two Michelin stars, a major achievement for someone who claims to have fallen into the industry by accident.

TV Dinners

Adding to his successful career, Gordon also became a star of the small screen both in the UK and Internationally, with reality shows such as Ramsay’s Kitchen Nightmares, Gordon’s Great Escapes, Hell’s Kitchen and The F Word.

Yes I can write

Gordon has also published a number of books, many of which have become best sellers, including his autobiography “Roasting in Hell’s Kitchen”. For more information, visit www.gordonramsay.com

The Only Way is Up

Gordon always had big dreams and in 1998, at the age of 31, he decided it was time to set up on his own and Restaurant Gordon Ramsay was born. In 2001 the restaurant gained its third Michelin star, making Ramsay the first Scotsman and one of only four chefs in the UK to maintain three stars. Restaurant Gordon Ramsay is the longest running restaurant to hold this award to date.

Big Dreams

This was never going to be enough for Ramsay, his dedication and ambition has seen his empire expand rapidly, opening restaurants around the globe from Dubai and Tokyo to Canada and Ireland.

Hard Work Pays off

In 2006 Ramsay won the Catey Award for ‘Independent Restaurateur of the Year’, becoming only the third person to have won three Catey Awards, the biggest awards for the hospitality industry in the UK. In 2008, Gordon received an OBE from The Queen for service to the hospitality industry.

ordon Ramsay’s Town House, York and Albany, is nestled between the buzz of Camden and the tranquility of Regent’s Park. York and Albany is a ten bedroom townhouse, dining room and bar. This majestic John Nash building dates to the 1820’s and was originally a coaching inn. When Gordon Ramsay acquired this rich heritage property, it underwent a very thorough refurbishment to return it to its former glory. The result is a stunning townhouse that truly captures the elegance of the Regency period with contemporary touches. York and Albany provides the perfect home and backdrop for a stylish London visit. The relaxed feel brings a sanctuary from the hectic London pace; indeed you would be forgiven for not

10

wanting to leave the luxury of Ramsay’s townhouse at all. Head Chef Kim Woodward has worked closely with Gordon Ramsay since 2007 and takes the helm in the kitchen fresh from The Savoy Grill. Kim’s seasonal British menu with Mediterranean influences features dishes such as Whisky cured salmon with salt baked beetroot and citrus mayonnaise or Scottish venison shoulder, slow cooked in Camden ale, greens and peppery swede mash. Kim’s recipe for Hazlenut and Tonka Bean Cheesecake with Balsamic roasted Strawberries is detailed over the page. York and Albany offers two dining areas. Guests can choose between the ground floor restaurant and bar or downstairs with the drama of an open kitchen. In addition there are private dining options for special celebrations.

In keeping with the Mediterranean influenced menu, pizzas are a speciality. York and Albany Pizza is a new space housed in the former stables, offering a very relaxed approach to eating out. Simple and stripped back with an exciting menu featuring daily changing toppings to create your own pizza of choice. The menu also features a medley of delicious small plates such as the pulled-pork sandwich. York and Albany is also a favourite amongst music lovers with a monthly music night featuring local bands. it’s a night not to be missed, taking place on the last Tuesday of each month. sible. They go to the market each day and let their imagination run riot with delicious little amuse bouches which change daily. When we went the raspberries were good so the chef knocked up a raspberry gazpacho, which was a surprisingly savoury chilled shot with a rich olive oil note and then the background sweetness from the fruit. This got our taste buds tingling and made us realise we were in for a treat. The menu is really refreshing, with dishes I have never seen before, showing real creativity and flair. Two intriguing and popular dishes which set the tone for the cuisine are their starter of Sautéed Prawns, on Crispy Apple Rings with fondue of Parmesan and an Onion and Ginger Marmalade and the main of Confit Cod with garlic foam. The cuisine is Mediterranean “gastro” and this gives them the opportunity to choose delicious dishes, ingredients and inspiration from France, Italy and Spain, to create an intriguing but not confusing selection of dishes.

ALWAYS SEASONAL ALWAYS FRESH

T

empora is a little restaurant in Marbella’s Old Town which opened its doors in June. It is a cozy little restaurant with dark wood and a warm interior and tables outside on the street. The philosophy behind it is to do something different which gives the diner real gastronomy, using superb ingredients but without the high prices. Andrés Perdiguero the owner, has decided that he doesn’t want to do the normal Spanish or tourist fare so he’s taking a gamble with an unfamiliar menu with lots of unusual ingredients and flavours. It’s a brave move, but would it work? Select headed down there to find out. The food certainly packs a punch, delivering a real gastronomic treat with stunning presentation at surprisingly affordable prices. The service is really good too, with the owner working front of house offering lots of suggestions on things to try, selecting wines from the list and even adding an extra touch with chocolate from his chocolate shop to end the meal!

‘Tempora’ comes from the Spanish ‘temporal’, meaning products of the season and this sums up their philosophy to cook with seasonal, fresh ingredients to produce the best food pos-

The philosophy behind it is to do something different which gives the diner real gastronomy, using superb ingredients but without the high prices.

For starters we opted for Duck Carpaccio and Salmon Tartar. The duck was served with parmesan, pine nuts, apple and rocket, a light, fresh starter with lots of interesting flavours served with fabulous olive oil and bread. The salmon came with avocado and rocket which showcased the most wonderfully fresh salmon and was a perfect summer starter. For the main course we went for the Duck Magret with a raspberry reduction, mushrooms and a potato and vegetable stack. The duck was perfectly cooked with crispy fat rendered down just enough and pink, juicy meat. The raspberry reduction went really well with the duck and I was amazed by the quality of the ingredients, as well as the cooking. We followed this by sharing the Lemon Sorbet with Cava, a tart sorbet of fresh lemons served in a martini glass and topped with a healthy dose of cava at the table. It was like a very grown-up ice cream float and really good to clean the palate. This is real gastronomy for less and seriously good value for money considering the quality of ingredients, standard of cooking and level of service. Average starter is around 10€, mains start from 16.50€ for the duck breast, up to 22€ for the steak and desserts are 6€. Well done Tempora for trying something different – we’ll be back! “I love the job because it allows me to travel. From the age of 15 I have worked in the hospitality industry, beginning my career as a service assistant in a small cafe.” George went on to work behind the bar in working men’s clubs and ended up managing a bar in Leeds. The job allowed George to combine working in an industry which he loves while studying business and economics at university. “I love working at Sala Beach, it’s a great boutique beach club, but it is my ultimate dream to combine my experience with my degree and open my own bar one day. When you see how much money comes through the tills, you really want to have your own till and make it happen for you.” George believes that the trick to becoming a cocktail guru is providing service with a smile, while having some good banter with your customers. “Some cocktails can take a few minutes to make and you need to be able to keep the customer entertained and make them want to come back. It is also important to taste the cocktail before you serve it, to make sure that it is up to scratch.” Over the years George has been asked to make many cocktails, the most popular being his signature frozen strawberry daiquiris, a best seller at Sala Beach. THE RISE OF THE

DESIGNER HOTEL

CHRISTIAN LACROIX The Bellechasse, situated near the Oray Museum in Paris, is an impressive yet intimate hotel, full of character. All 34 rooms are dressed by Christian Lacroix, combining the baroque inspiration of the fashion designer with the influences of a highly historic district to create a Parisian ‘Left Bank’ feel with a unique style.

W

hen it comes to fashion, Louis Vuitton, Gianni Versace, Rosita Missoni and Christian Lacroix are unparalleled in their creativity and brand power. However these gurus have something else in common, they are now conquering the world of hospitality and applying their design genius to create stunning hotels which feel like home. A hotel by a fashion designer is a great way to express a brand’s philosophy and align the hotel with a certain lifestyle. They represent the very epitome of the design focused hotel and offer guests beautiful design details, wonderful fabrics, strong colour themes and the brand’s signature touches. Although most hotels cannot spend the time and money on this level of design, us mere mortals can certainly learn 26

a thing or two from them and get inspiration for our own projects. These designer hotels all share a total dedication for design. Their growth and success shows the increasing tendency for guests to look for hotels with a defined visual identity and personality. Hotels which express a very strong identity through design run the risk of alienating potential clients as well as inspiring, but at least they have a differentiating factor which can be used for marketing and will keep people coming back for more. We love the ambition and design of these hotels and the pictures are fantastic. In each issue we will be showcasing one of them to inspire and give you ideas. As it is the first issue, here are three of our favourites; the Bellechasse in Paris, White 1921 in St Tropez and Rosita Missoni in Kuwait and Edinburgh.

Lacroix has playfully blended past, present and future with bold colours and graphics. He has created and applied seven distinct themes – Patchwork, Avengers, Saint-Germain, Tuileries, Mousquetaires, Jeu de Paume and Quai d’Orsay. Room features include; rustic wooden flooring, gold leaf designs, traditional tweeds and velvet mixed with an Arabian glow. For more information, www.lebellechasse.com

Babicka is the world’s first wormwood vodka, distilled in the unspoilt landscape of the eastern region of Czech Republic and inspired by the earliest forms of vodka known as witches’ brew. From the wormwood fields to the pure crystal waters of the low mountain ranges, the deep 10,000 year old springs to the fertile low lands of Moravian corn, Babicka is created using only natural ingredients, ensuring that its subtle smoothness, texture and floral bouquet are unique to the brand. The spirit is inspired by the 16th century Czechoslovakian peasant women, Babickas, who used wormwood in their potions to enhance sensuality, creativity and love. Babickas are known as legendary figures of wisdom and compassion in Czech history, renowned for having mystical healing powers. Babicka’s signature wormwood, which is known as an aphrodisiac, is collected using a traditional method. The plant is handpicked when in full bloom before being hung upsides down to dry naturally. Once dried thujone, a part of the plant, is extracted and used to infuse the vodka. Founder Alex Clarke was inspired to create the world’s first original wormwood vodka, after years of experience in the drinks and travel industry. After discovering a 500 year old distillery in the Czech Republic which produced both absinth and vodka, Alex wanted to keep the spirit and name of this creation as close to its birthplace as possible. For him naming and producing Babicka was about paying homage to centuries of craft and legend. Babicka has a sweet taste of rich vanilla, caramel and aniseed and has won many industry awards for quality and taste. Find out more at www.babickavodka.com. Babicka will be available on the Costa del Sol through Select Brand Imports. Email angelo@selectbrands.es for stockist information.

VIRTUAL HOTEL IPAD APP LAUNCHED TO EASE THE STRESS OF SUMMER HOLIDAY PLANNING AND FLIGHT DELAYS Cardola was founded in 2009 by the Marbella Club (MC) Hotels Group. Realising there was no existing product on the market that satisfied the ‘virtual concierge’ need of its own hotels, Cardola set about developing its own. Over the past two years, Cardola has developed and refined VirtualHotel – a guest-focused, multi-platform solution – which is accessed on an iPad, tablet and in-room consoles. This virtual concierge technology has been tried and tested in three luxury hotels, providing guests with instant and convenient access to everything hotels have to offer - both before and during their stay – enabling the hotels to enhance customer service levels. Now available for iPads Hotel guests can now access hotel services and local information from the comfort of their own iPad with the launch of the VirtualHotel app. The app eases the stress of planning ahead by enabling guests to view menus and find out about hotel events and local attractions, before they have even set foot inside the hotel. The application is currently used on in-room iPads within three luxury hotels including the Marbella Club Hotel and the Hotel Puente Romano. From August hotel guests will be able to download the same application to their own iPad, extending the services of the hotel by providing access to information and services wherever they are.

Hotel guests can now access hotel services and local information from the comfort of their own iPad with the launch of the VirtualHotel app The VirtualHotel application is easy-to-use and, once checkedin, guests will have access to a range of services and options, including the ability to view restaurants and reserve a table, book a round of golf at a local course or request concierge services – all from beyond the vicinity of the hotel. There is also an option to view the bill and check the local weather. The application was designed by Cardola, who identified a gap in the hospitality market to increase sales and developed a solution from within a luxury Spanish hotel. “Luxury and service go hand-in-hand” says Franck Sibille, Area General Manager for the Marbella Club, Hotel Puente Romano and Schlössle Hotels. “Our team is always available to personally assist and enrich the guests experience at the hotel. The Cardola VirtualHotel Service compliments that exceptional service, with the added convenience of being in the privacy of their room, suite or villa.” “Since deploying Cardola VirtualHotel, the Marbella Club Hotel has seen a significant increase in room service sales year on year.” The application is supported by iPad 2 and iPad 3, providing high resolution images to support content and the option of viewing information in multiple languages - removing the daunting prospect of translating your request from one language to another. Artisan

The Backlash against

MASS PRODUCTION

F

or decades supermarket chains have been taking over the world, pushing down the price of food, increasing mass production and squeezing the independent retailer off the high street. This has been a dominant trend for such a long time that now consumers are looking for something less sterile and are actually prepared to pay more for an artisan product with a personal touch. Slowly but surely we can see this influence on the World’s high streets and the hospitality industry is sitting up and taking notice. Artisan butchers, bakers and candlestick makers are making a welcome return and everything from chocolatiers to wine makers are getting in on the act. This is giving consumers a lot more choice and they want to see this reflected in the restaurants, bars and hotels they frequent. Rustic bread rolls made in-house always add a nice touch at the beginning of the meal, if fruit and vegetables can be grown in your own garden even better. However, if this is not possible, how about taking the time to research your local producers and see if you can utilise the high quality products being grown and made on your doorstep? Not only will this give you environmental credentials as you will minimize the food miles, but it will give your business a local identity and a connection with the community. Yes these products are undoubtedly more expensive, but the stories and people behind the products can be used for marketing purposes and there’s no doubt that your customers will notice the difference in quality.

In Andalucia we are blessed with the most fantastic locally grown ingredients and in Spain the supermarkets have seemed to take less of a hold. You can still find a whole host of traditional producers of stunning cheeses, olive oil, organic vegetables and of course the legendary jamon. In an online survey conducted by a restaurant last year to find out the favourite locally produced food, a wide range of products were praised; from tomatoes and avocados to boquerones and piquillo peppers. One participant wanted to shine a light on one of their local producers which really sums up the spirit of the artisan producer. “We live inland, in the mountains of the Sierra de las Nieves. The nearby village, Yunquera, is small, but very proud of its cuisine. In our village, we have a shop that sells only pork - ‘Ibericos Yunquera’. The man who owns it is very passionate about his pork. He produces the feed and then uses it to feed his pigs. He butchers the pigs himself, and then makes the most gorgeous pork products. My favourite product is his criollos, they produce almost no fat in the pan. They have a gorgeous taste of ‘sausage’, but with no filler, so much better than the English version. They have a gorgeously garlicky taste, that does not overpower.” The recession has also seen people diversifying and people from all walks of life are abandoning their office jobs to indulge their passions for creating something special and trying to make it into a business. This gives us handmade soaps, jewellery, greeting cards and fantastic cakes, biscuits and breads which are popping up in local markets and online. This is a great opportunity for the hospitality industry to source really special products which could be unique to your business.

Buying a Business in Spain During the Recession... AMAZING OPPORTUNITY OR NAIVE MADNESS? Many people have a dream of opening up a bar, restaurant or hotel on the Costa del Sol as it is such a popular area with tourists, expat residents and the Spanish year round. Unfortunately in a large number of cases that dream has turned into a nightmare, as people have invested in an inappropriate business without doing their research or getting the right support. There are many opportunities for buying businesses which have suffered in the crisis, and there are some excellent deals available as a result. However, it is important to enter into any possible aquisition with your eyes open, with a sound understanding of why the venture failed and what you can do to ensure that it does not happen to you. Have no doubt that this is a difficult and uncertain time to enter into business in Spain. The IMF predicts that the economy will not start to rise again until 2014, with it taking until 2017 to recover to the level prior to 2007. However, look around the Costa del Sol and you will see bars and restaurants doing well and even expanding despite the difficult times. There is clearly an opportunity to thrive if you choose the location and premises carefully and understand the local market sufficiently to be able to give them something they want.

Take the time and pay money, if required, for good impartial advice which will get you the right property for the best price. It is certainly a buyer’s market, so negotiate hard and be willing to walk away if you think you can get a better price. Choose a location with good year round footfall and budget for sufficient marketing to draw the customer to you. Know your competition – sample your competitors and evaluate what they are doing well and what they could be doing better. Think what you could do to stand out from the crowd. Undertake market research to see what people want and listen to the response. There’s no point bringing a concept from abroad if there isn’t a need for it here. Set the right price – in these times of austerity price matters more than ever, but not at the expensive of quality. If there’s something which makes your product premium, and therefore have a high price, make sure you can justify that and inform your customers why they should pay more.

TIPS FOR BUYING AND CREATING A PROFITABLE BUSINESS

Tell the world – don’t forget the importance of marketing. Without properly informing your local market how will people know why they should come and see you?

Make sure that you have professional advice from a well-respected commercial real estate agent and consult Spanish speaking, independent legal advisors to ensure that everything is correct and in order.

Keep them coming back for more – you need to set a high standard and keep to it. Only then will the customers reward you with becoming regulars hence providing a steady revenue stream.

Do you have a business for sale?

Email a description and images through to commercial@selectmagazineonline.com and we’ll include it in future issues.

Jobs in the

HOSPITALITY INDUSTRY According to the OECD Report “Tourism trends in the OECD area and beyond”, jobs in tourist related activities accounted for over 12% of total employment in Spain, the highest of all the countries surveyed. This is obviously even higher in the coastal areas and the sector represents a crucial source of employment for young job seekers who are suffering in the current economic crisis. The high unemployment in Spain is well documented, but if we look at the tourism and hospitality sector as a whole, it seems to be relatively resilient and even improving following a few tough years. The recession started to effect tourism in 2008 and intensified in 2009 by reducing the volume of tourists, the length of stay and spending by personal and business travellers. This of course had a knock-on effect on employment in the industry, but there were large regional variations. Hospitality professionals have an advantage over other sectors as they work in a global industry and, if they are prepared to travel, can move from region to region following the jobs. Even in the worst parts of the global recession, areas such as China and the Arab Emirates were growing, so there are always opportunities.

SPAIN IN 2012

For 2012 the picture is looking brighter with the Spanish Ministry for Industry, Energy and Tourism reporting that in

June there was an increase of 4.7% in the number of tourists, compared to June last year, and even more interestingly that the average spend per traveller also increased by 3.8%. In total the tourist spend in the month of June was 5,833 million Euros, a significant contribution to the national economy. In Andalucia there was a 5.5% increase in average spend per traveller, but a decrease of 4.6% in the number of visitors. This represented a 1% increase in tourist spend overall, compared to the previous year, and broke the downward trend seen in the last five months. The market which is contributing most towards this growth is the American market which is slowly discovering the area partly thanks to the visit of Michelle Obama. Unfortunately we don’t have a crystal ball, so it remains to be seen what effect the recession will have on the hospitality industry long term. Whatever happens, it will continue to represent a crucial sector for employment and one which will always offer opportunities in Spain and beyond.

THE IMPORTANCE OF EMPLOYEE OWNERSHIP On September 18th 2019 the Financial Times used its entire front page to highlight the need for corporates to be more than only for profit and to have a dimension of ‘purpose’. An unprecedented move by the FT to send a strong message to its significant global readership. The whole page was blocked in yellow to signify the yellow ribbon, worn to express a deeper purpose in many cultures. A key message in the supporting features was to develop a culture of engagement with all employees and to align their purpose and well-being with that of the organisation they support. From the launch of Acuity four years ago, Acuity have embraced a culture of coownership with the employees in all invested SMEs. Why? Firstly because it’s more of a risk not to involve them and secondly because empirical evidence proved that SMEs with employee ownership grow, create more jobs and outperform SMEs that don’t have employee ownership. Our own evidence proves the value of this strategy. From the day of Acuity’s Investments in the SME portfolio there were 99 SME employees and fulltime contractors. There are now 161, showing a 62% increase in employees. Portfolio turnover has increased by 156% from €7.8m to €20m and they are making 126% more EBITDA than they were when Acuity invested.

Employee ownership has a compelling effect on the business as employees are engaged as co-owners. This encourages them to work hard to secure a positive financial future for themselves and their families by ensuring they all make a success of the company they work for. Governments across the EU are fully aware of the positive effects employee ownership can have on the European economy as a whole and some EU member states have created legislative tax incentives for employees and shareholders to try to assist in its adoption on a wider scale.

Acuity have the unique advantage of incorporating employee ownership during the transfer of business ownership of the SME through their three Intelligent Buy Out (iBO) frameworks. These are intelligent because they involve employees, and this innovative approach is already enhancing our growth.

YOUR GUIDE TO INVESTING IN FORESTRY

INTRODUCTION  JP Forestry Investments’ Guide to Investing in Forestry Established finance company JP Capital Investments (JPCI), a global financial advisory Firm with 14 years experience advising private and institutional clients in 5 continents and seasoned local Uruguayan agriculture experts have come together to create a unique forestry investment package for sophisticated HNWI’s, based in the safe haven of Uruguay in South America. We strongly believe the time is right to invest in forestry now: After seeing the global financial crisis of 2007 unfold, we are today monitoring with great concern the same ‘red flags’ of irresponsible lending and extreme asset leverage, two of many elements risking a new fresh global financial crisis in the not too distant future. A potential banking and currency crisis on unprecedented scale have become real risk scenarios no longer ignored by some of the world’s leading economists. Famous American economist Joseph Stiglitz has long predicted a major financial crisis and a Euro collapse and continued market instability. We are troubled by political turmoil and conflicts around the world and having been searching for a solid alternative for our clients. Stocks, shares and traditional investments are reliant on strong financial markets, so in this time of spiralling uncertainty we strongly recommend you diversification into real and tangible assets that you can see and feel, immune to volatile financial market swings and downturns, such as land and forestry in a neutral, protected corner of the globe, far removed from the potential future crisis centres of Europe and North America. In this guide, we will introduce you to the concept of forestry investments, explain why we chose Uruguay and detail the offer and investment returns, so you can make an informed decision. If you have any questions, please don’t hesitate to contact our experienced team of financial advisors, wealth managers and tax specialists. You can call our Bahamas Head Office on +1-242-356-5280 or send us an email to: info@jpcapforestry.com

WHY CHOOSE FORESTRY INVESTMENTS? There are two main reasons to choose a forestry investment – 1. Financial – Forestry presents an outstanding and compelling financial investment opportunity for your money to be protected and grow outside the dangerous volatility of the global financial markets 2. E nvironmental – Deforestation is a huge global issue, and climate change is something which will seriously affect future generations. An investment in sustainable forestry will benefit the environment, by locking away carbon, stabilising the soil, protecting habitats and showing that forested land can be profitable, thereby safeguarding more forest land for the future. Let’s look at the financial argument first.

 Money really can grow on trees! Forestry investments make financial sense because  They are a tangible asset – you can touch and feel your investment and you actually own the land and the hard timber assets it produces for generations to come  They generate a steady, long term and very secure income  There are two significant growth areas – – Profit from the production of wood – The increase of land value  It protects the investor against inflation and stock market fluctuations because it is not linked or correlated in any way to the financial markets  The demand for timber is increasing dramatically as forests continue to disappear – the shrinking of the Amazon rainforest has had devastating effects on the global climate - so this is a definite and secure growth sector  In times of crisis, real assets such as forestry have traditionally always significantly outperformed other financial investments

WHY CHOOSE FORESTRY INVESTMENTS? According to the GMO Renewable Resources, Timber Investment Overview – “Historical returns to direct timber investments have been relatively high, especially over the last two and a half decades as shown in Figure 1. The National Council of Real Estate Fiduciaries (NCREIF) reports nominal annualized total returns of 12.6% for its Timberland Index over the past 28 years. Over this time period, timberland has generated higher returns than equity and bond indices, with less volatility.”

DEMAND WILL OUTSTRIP SUPPLY

There is already a very high demand for timber, with 1.6 billion cubic meters of wood being consumed for industrial uses each year – the same as cement, steel, plastic and aluminium combined. This is expected to grow, as pressures to be energy efficient lead companies to choose wood, as it takes so little energy to process. The resurgence of the US housing sector, China and India’s rapidly increasing demand for wood and paper means more wood is needed than ever, yet supply has not kept pace with demand. This will lead to big supply issues in the future, which will drive prices up. Industrial Roundwood: Consumption Trends & projections • Projected rise in global IRW demand: 1.5bn m3 (2012) to 2.5 bn m3 (2030) • Recovery of the US housing market • Growth in every region, highest in Asia • Increasing regional demand and supply imbalances Europe

CHOOSE A GREEN INVESTMENT WHICH ALSO WILL PROTECT THE ENVIRONMENT According to the World Wildlife Fund, 46-58 thousand square miles of forest are lost each year— equivalent to 48 football fields every minute. By investing in forestry, you are helping to reduce the impact of deforestation, an enormous problem globally which has wide reaching effects. Forest and deforestation

Natural

Plantation

Total

The European commission states that the negative impacts of deforestation “can be felt in economic terms, but also in the environment and society in general, especially on climate, biodiversity and poverty. The total amount of deforestation throughout the world contributes to climate change since it is responsible for 20% of global carbon dioxide emissions, more than total EU greenhouse gas emissions. It also causes biodiversity loss, flooding and soil degradation and increases the likelihood of natural hazards – storms, floods, and extreme fluctuations in weather. Deforestation threatens the livelihoods and cultural integrity of people that depend on forests and it undermines the availability of timber and non-timber forest products for future generations.” As carbon emissions continue to increase, we need to find a way to lock the carbon away to stop it from warming the planet. Trees are the best weapon we have to fight global warming, as they neutralize CO2.

05

Your Guide to Investing in Forestry • JP Forestry Investments

 Carbon Facts 1. CO2 concentrations have risen by 25% to possibly over 39% over the last century. 2. CO2 can be neutralized by trees. 3. CO2 is fixed in trees and vegetation through photosynthesis. 4. CO2 makes plants more resistant to extreme weather. 5. CO2 makes trees healthier and easier to manage. 6. Increased CO2 levels can help trees, that are properly managed, grow in drought conditions by increasing photosynthesis. 7. 100 metric tons of CO2 can accumulate in one acre of forest over time. 8. Each person generates approximately 2.3 tons of CO2 per year. 9. The carbon footprints of 18 average Americans can be neutralized by one acre of hardwood trees. 10. Managed forests accumulate more carbon per acre than unmanaged forests.

 Tree Facts 1. A single tree can absorb CO2 at a rate of 48 lb. per year. 2. Trees act as natural pollution filters by absorbing pollutants through the stomates in leaf surfaces. 3. Trees lower temperature by transpiring water and shading surfaces. 4. Trees reduce heat sinks. Heat sinks are 6-19 degrees F warmer than the surrounding area. 5. Trees reduce erosion. 6. An acre of trees absorbs enough CO2 over one year to equal the amount produced by driving a car 26,000 miles. 7. Trees provide food and wildlife habitats. 8. Planting trees remains one of the cheapest, most effective means of drawing excess CO2 from the atmosphere. 9. Trees recharge ground water and sustain stream flow. 10. One large tree strategically placed in a yard can replace 10 room-size air conditioners operating 20 hours per day. Source – The Arbor Environmental Alliance

The World Wildlife Fund explains; “The importance of forests cannot be underestimated. We depend on forests for our survival, from the air we breathe to the wood we use. Besides providing habitats for animals and livelihoods for humans, forests also offer watershed protection, prevent soil erosion and mitigate climate change. Yet, despite our dependence on forests, we are still allowing them to disappear.” Be part of the solution, by investing in sustainable forestry projects! 06

INVESTING IN URUGUAY – THE SWITZERLAND OF SOUTH AMERICA Our forestry investments are located in Uruguay, an area which is highly popular with investors due to the historic political and social stability, effective legal system and strategic location as part of the MERCOSUR trade area. It has excellent infrastructure, with good transport links, internet coverage, reliable energy system and a sound banking sector. Uruguay’s Government is pro foreign investment and provides significant tax incentives and free trade zones to further attract and facilitate foreign investments.

ACCORDING TO THE CIA WORLD FACTBOOK “Uruguay has a free market economy characterized by an export-oriented agricultural sector, a well-educated workforce, and high levels of social spending. Uruguay has sought to expand trade within the Common Market of the South (Mercosur) and with non-Mercosur members, and President VAZQUEZ has maintained his predecessor’s mix of pro-market policies and a strong social safety net. Uruguay’s economic growth averaged 8% annually during the period 2004-08. The 2008-09 global financial crisis put a brake on Uruguay’s vigorous growth, which decelerated to 2.6% in 2009. Nevertheless, the country managed to avoid a recession and keep positive growth rates, GDP growth reached 8.9% in 2010.”

URUGUAY’S FORESTRY SECTOR We have chosen Uruguay as a base for our forestry investment for the stability mentioned above and the well-developed forestry industry, with excellent climate, soil and infrastructure. The two most significant foreign investments in the country’s history have both been in the industrial forestry sector with two pulp and paper mills opening in the country in recent years. Investment in the UPM plant was around US$ 1.2 billion and in the Montes del Plata plant approximately US$1.9 billion. After a year of operations, the Montes del Plata mill was producing 3,700 tonnes of pulp daily and contributed strongly to Uruguay’s GDP growth and generating employment. This is an area which is continuing to grow, with a $4 Billion pulp and paper mill project due to open in the country by 2019, creating rising demand for Eucalyptus pulp, an ideal scenario for Eucalyptus owners. Off-take agreements to sell the precious Eucalyptus wood to UPM and other operating mills can often be negotiated in advance in order to secure a fixed price and guaranteed payments years in advance, giving the Eucalyptus investor safety and peace of mind. Here are 9 attractive features of the Uruguayan forestry industry from Uruguay’s official investment and export promotion agency, which shows you why it is a good choice 1. Excellent climate and soil characteristics for commercial forestry. 2. Stable legal framework for investments in the industry and good code to achieve sustainable production which meets international requirements. 3. Suitable road network and ports for transporting timber. 4. The sector has a 20 year history and qualified labour. 5. Currently, 885,000 hectares of forestry plantations account for 5% of the national territory. However, only 21.5% of the area declared as forestry priority has been planted. 6. High quality wood is produced on Uruguayan plantations and is used for cellulose pulp production as well as for solid wood products. 7. The currency exchange market is open and there are no limits on foreign currency trading. Investments can be made in any currency. 8. A strategic geographic location at the heart of MERCOSUR (free trade area between Argentina, Brazil, Paraguay and Uruguay) and near Chile and Bolivia, with excellent river, sea, highway and air connections. 9. An attractive legal framework for trade that allows the use of individual enclaves or a combination of various modalities (Free Trade Zones, Free Ports and Free Airport regimes and Bonded Warehouses), where no customs duties or taxes are due on imports or exports.

Soil is key to productive forestry plantations and there is little soil degradation in the country, as you can see from the map below. Also, Uruguay has a handy a soil index which allows you to see quickly and easily how good the land is for production, which makes selecting land even easier.

As a result of the great climate and soil, the returns for forestry plantations are amongst the a in Uruguay, with a return of over 22% for Eucalyptus plantations. Financial Returns to Selected Forest Plantations in the World, 8% Discount Rate, 2008 Country

There are significant areas which are given priority for forestry, marked on the map below. The government’s pro-forestry policies have led to a big increase in planted area, up to nearly 1 million hectares in 2008.

The forestry industry in Uruguay consists of various activities that range from seed and seedling production to the final shipment of finished products. This is very much a growth sector - timber output rose 2.5-fold between 2000 and 2013 and the forestry sector’s contribution to the country’s gross domestic product (GDP) doubled from 1.9% to 3.7% between 2006 and 2014. It’s estimated that before long, this sector will soon generate more revenue for the economy than the strong meat and soy sectors.

APPRECIATING LAND VALUE The value of the land is an important factor in the investment’s growth potential and there has been excellent historic growth, as well as recent price fluctuations that mean they are ripe for investment. The majority of our land is in the Uruguayan province of Maldonado, only 30 miles north of the famous sea-side resort of Punta del Este and 100 miles north-east of the capital Montevideo. The potential for land appreciation here is amongst the highest in the country. Prime agricultural land for forestry has dramatically increased to well over $6.000 per Hectare and is poised for further appreciation due to lack of supply and increasing international demand, particularly from China. Historic Farm Land Prices in Uruguay Prices have risen steadily since 2005 to a record

Taking all these factors into consideration, JPCI has chosen this particular sector as the most promising investment alternative today, and is committed to becoming a key player in the country’s agricultural and forestry industry over the coming decade. It owns, leases and has access to more than 2,000 hectares of the highest quality land in Uruguay in the choicest locations, with proximity to roads and ports to minimise transportation costs. We believe this land offers excellent investment potential and are using the fastest growing and most productive species eucalyptus to increase investment return further.

WHY EUCALYPTUS?  Eucalyptus plantations give forestry investors the highest yields according to the Food and Agriculture Organization of the United Nations  Growing eucalyptus commercially can earn $10,000 per hectare  Trees reach a harvestable size in 8-10 years, producing 20 green tons per acre per year  These trees sprout from the old stump and so second harvests are made in another 8-10 years, with 3-4 growing cycles usual from one seedling  The fast growth rate and multiple growth cycles with no additional investment, except a reduced management fee, make these highly profitable species for forestry investments Investing in sustainable eucalyptus plantations in Uruguay is an excellent way to protect your money from fluctuations in the stock market, instability in the Eurozone and US and build a nest egg for future generations in this safe haven.
