Sugar Cookies 1 1/2 cups sugar 2/3 cup shortening or butter 2 eggs 2 tablespoons milk

1 teaspoon vanilla extract 3 1/4 cups flour 2 1/2 teaspoons baking powder 1/2 teaspoon salt

Cream the shortening and the sugar. Add the eggs, extract, and milk. In a medium bowl mix the dry ingredients with a wire whisk. Add the dry ingredients to the large bowl. Mix with mixer until well combined. With hands, shape dough into a ball. Wrap with plastic wrap and refrigerate for 2 to 3 hours. Lightly grease cookie sheets. Roll half or 1/3 dough at a time, keep the rest refrigerated. For crisp cookies, roll dough, paper thin. For softer cookies, roll 1/8 “ to 1/4� thick. Cut into shapes with cookie cutter. Place cookies 1/2 inch apart on cookie sheets. Decorate*** Bake 8 minutes or until very light in a 400 degree preheated oven


Gingerbread Cookies 3/4 cup molasses 1/3 cup packed brown sugar 1/3 cup water 1/8 cup butter, softened 3 1/4 cups all-purpose flour

1 teaspoon baking soda 1/2 teaspoon ground allspice 1 teaspoon ground ginger 1/2 teaspoon ground cloves 1/2 teaspoon ground cinnamon

Mix together the molasses, brown sugar, water and butter until smooth. Combine the flour, baking soda, allspice, ginger, cloves & cinnamon, stir them into the wet mixture until all of the dry is absorbed. Cover dough and chill for 3 hours. On a lightly floured surface, roll the dough out to 1/4 inch thickness. Cut out with cookie cutters. Place cookies 1 inch apart onto ungreased cookie sheets. Bake for 8 to 10 minutes in a350 degree preheated oven. Remove from the cookie sheets to cool on wire racks. Yields 3 Dozen.


Grits & Sausage Casserole 1 lb pork sausage ½ cup chopped green pepper ½ cup chopped onion ½ cup chopped celery 1 cup grated sharp cheddar cheese 1 can cream of chicken soup 5 cups of water 1 teaspoon salt 1 cup of grits Heat oven to 375 degrees. Cook the grits in water with salt according topackage directions. Brown sausage and drain. Add chopped vegetables and sauté until they are slightly tender. Combine cooked grits and sausage mixture together. Pour into shallow buttered 2 quart casserole dish. Spread undiluted soup over sausage mixture and then sprinkle with the cheese. Bake for 30 minutes until hot and bubbly.
