Welcome to the latest edition of the Rec Insider! Things have been busy at Campus Recreation the last few months with lots of changes taking place. We had three of our full time staff take positions at other places in the country to further their goals and while we are very happy for them, they will also be sorely missed. That also means that we are knee deep in resumes and interviews to fill those positions. That also gives a few of our Graduate Assistants a unique opportunity to step up and take on more responsibility than Ken Morton they would have normally been afforded. So far things are still rolling right along with their leadership and you can read more about them inside this issue. Employee Wellness wrapped up our first session of Lumberjack Wellness Academy which had 25 selected SFA faculty or staff members utilizing the Rec Center for fitness assessments, personal training, workouts, dietician advice, and educational seminars. The results are still coming in but overall feedback has been very positive about the program. A few of our fulltime staff have been promoted to new positions in our department and I look forward to seeing them help lead us into the future. You can read about Cody and Travis and their new roles and see how they got to where they are. As I write this we are gearing up for Common Training with our student staff and looking forward to the start of a great semester. As always, we hope you all are doing well and continue to keep fond memories of your time here at Campus Recreation.

Q&A with

Assistant Director of Facilities and Member Services, Cody Kuykendall How would you describe Campus Recreation’s role at SFA?

Campus Recreation helps contribute to the overall experience and well-being of the SFA community. We strive to provide an opportunity for students, faculty, staff, and alumni to learn, grow, and achieve their personal goals by offering a welcoming, supportive environment.

How did you get involved with Campus Recreation as an undergrad? What has been your path here? I began my adventure in Campus Recreation as a flag football official at Oklahoma State University. I began officiating flag football, basketball, and team handball my freshman year at OSU. My sophomore year I started working as an Intramural Sports Game Supervisor, where I gained experience in every sport offered through the IMS Program. During my time at OSU, I attended numerous flag football and basketball tournaments, and had the opportunity to officiate multiple national tournaments.

Meet our new Graduate Assistant, Sonia

Fitness & Wellness Graduate Assistant, Sonia Nieto, is pursuing her Master’s Degree in Kinesiology, after earning her Bachelor’s Degree in Music Education at Sam Houston State University. Tell us how you got started in Campus Recreation!

During my undergrad at SHSU, a friend told me that the Rec was almost always hiring. Although I worked out on my own and attended fitness classes when I could, I did not think I would ever teach fitness classes. Thankfully, I was hired! My first fitness classes were Zumba and a Total Body Toning class, which then evolved to various classes that included strength, dance, and endurance for all levels of fitness, including developing a Women on Weights program. After a few months of having experience as a group fitness instructor, I decided to further my education and became an ACE Certified Personal Trainer. I have been working with Campus Rec since Fall ‘13.

Administration, and to work as the Graduate Assistant for Intramural Sports. During my two years at UNL, I gained valuable experience in the daily operation and management of a comprehensive Intramural Sports Program. I also had the opportunity to run many special events

the Competitive Sports Coordinator – Intramural Sports. At UNC-W I worked with the Intramural Sports and Sport Clubs programs where I created the Seahawk Officials Development Program and directly supervised eight Sport Clubs. In the summer of 2012, I accepted the position of Coordinator for Intramural Sports and Camps here at SFA. I served in that position until October 2015, when I moved to my current position of Assistant Director for Facilities and Member Services.

Upon graduation from OSU, I attended the University of Nebraska-Lincoln to pursue a Master’s Degree in Higher Education

What inspired you to stay involved with recreation?

Since I was an undergraduate working at Oklahoma State University, working in recreation was very enjoyable. Going to work seemed to give me a break from the normal stresses of being a college student.

Why did you choose to pursue your Master’s at SFA?

During my final year of my undergrad, I realized that my love for fitness outgrew my drive to teach music. With help from my previous boss, I began the application process to become a Graduate Assistant within fitness for a few Texas universities. I am grateful that Stephen F. Austin State University chose me to be on their team! My previous boss (Scott Berkowitz) also received his Bachelor’s and Master’s Degrees at SFA and talked highly of the kinesiology program here.

What’s the plan after graduation?

After graduation, I would love to start my fitness career within Campus Recreation, but honestly, my list could go on forever! If someone were to ask me what my passion is, the answer would be to help people. Whether I work with Campus Rec, professional athletes, marching bands, physical therapy, as a personal trainer, whatever it may be, I will be serving others.

When I was approached about doing this as a career, I took the opportunity to continue what I have enjoyed doing for a long time. Now, I get to work with great students, and I get to see the positive impact we have on their experience in college. We get to give them an opportunity to learn skills that will help them in every career path.

What are your goals in Campus Recreation? Life in general?

Right now I am excited about taking on a new journey in Campus Recreation. I also officiate basketball and football in my free time. I officiate at the high school and college level, and I have had many opportunities at both levels. My goals in officiating are to continue to move up into Div. I college basketball.

What have you gained from working at Campus Rec?

I have gained a lot of relationships by working in Campus Recreation. One of the great things about our industry is you get to meet a lot of people from all over the country. I have been fortunate enough to work with some great people, and I can say I have friends from coast to coast.

What advice would you give to recent new hires?

Learn as much as you can, and be patient. Take advantage of the time you have at each institution because you never know what opportunities will arise. Meet people and build relationships because that’s what makes the job worthwhile. ●

Everything you wanted to know about Assistant Director of Competitive Sports & Camps, Travis Lankford. Tell us about your new position here at SFA Campus Rec! I am the Assistant Director of Competitive Sports and Camps, or as one of my students so eloquently put it, Headmaster of all of the Sports. I oversee the operations of our Intramural Sports program, along with our Club Sports and our Little Jack Rec Camp programs. I serve as an administrative support system for our group of twenty two different sport clubs as they operate within the university system. I assist with their scheduling, budgeting, and travel, among many other things. On the Intramural Sports side, I oversee the operations of a comprehensive sports program that offers a wide variety of sports. Training officials, scheduling league brackets, and resolving player disputes are only a few of my current responsibilities.

SATURDAY NOVEMBER 5, 2016

During the summer time, my focus shifts to the youth of Nacogdoches. We operate a camp called Little Jack Rec Camp that serves the children of Nacogdoches ages 5-12. I oversee a camp staff that works with these youngsters throughout the summer to provide a fun and safe environment for them to spend their summer break. We have all sorts of activities, most of which are adapted from sports that we have seen or played.

How did you get involved with Campus Recreation as an undergrad? What has been your path here? On my first day living in Austin, I was walking across campus for lunch when I was approached by another student with a flyer suggesting that I officiate flag football. I thought to myself “I need a job, I like football, and it couldn’t be that hard, I’m going to do it!” And the rest is history. I continued my officiating career with basketball and softball that school year. The next year, I was hired on as a Supervisor for the Rec Sports Department at UT-Austin, where I was able to continue officiating, and eventually made it to Program Assistant as a junior. After I graduated, I went on to accept a Graduate Assistant position here at SFASU, helping with Intramural Sports, Sport Clubs, and Summer Camps. I learned a lot as a GA, got involved


SPRING / 2016 with NIRSA on a larger scale, and eventually graduated with my Master’s degree. After grad school, I was hired on as the Coordinator of Sport Clubs and Camps here at SFASU, a position in which I served until my recent promotion. It’s been a wild ride since I took that flyer on campus that first day, but I wouldn’t trade it for anything. Oh, and by the way, officiating wasn’t as easy as I thought it would be, but it has become such a huge part of my life now, and I am so thankful for that opportunity.

RECIPE CORNER Vegetarian Two-Bean Chili Makes: 4 servings Cook Time: 15 minutes

Crispy Roasted Rosemary Sweet Potatoes Makes: 4 servings Cook Time: 75 minutes Ingredients 3 tablespoons butter, melted 3 tablespoons olive oil ¼ teaspoons crushed dried rosemary, or ½ teaspoon fresh 3 pounds (3 – 4 medium) sweet potatoes, peeled and sliced thinly 1 shallot, peeled and sliced thinly Salt and pepper, to taste Directions Heat oven to 400 degrees.

Ingredients 1 tablespoon vegetable oil 1 small jalapeno, minced (with some seeds) 1 small or 1/2 large red onion, finely diced 2 teaspoons red wine vinegar 1 large clove garlic, minced 1 1/4 cups low-sodium vegetable or chicken broth 1 cup canned crushed roasted tomatoes 1 1/2 tablespoons chili powder 1/4 teaspoon Chinese five-spice powder or ground cinnamon, optional 2 15-ounce cans beans (such as kidney and black), rinsed and drained 2 tablespoons chopped fresh cilantro 2 cups cooked brown rice 1/2 cup finely shredded extra-sharp Cheddar (2 ounces) Directions Heat the oil in a large saucepan over mediumhigh heat; add the jalapenos, onions, and vinegar and cook, stirring, until softened, about 5 minutes. Add the garlic and cook about 30 seconds. Stir in the broth, tomatoes, chili powder, and five-spice powder if using, and increase the heat to high. Bring to a full boil and cook for 1 minute. Stir in the beans and return to a full boil. Reduce the heat to medium and simmer until just slightly thickened but still soupy, about 5 minutes. Stir in the cilantro. Fill each bowl with about ½ cup of rice. Ladle the chili on top, sprinkle with the Cheddar and serve.

Combine melted butter, oil and crushed rosemary in a small bowl. Pour two tablespoons of butter-oil mixture in the bottom of a 2-quart baking dish. Arrange potato slices vertically in the dish. Add a sliver of shallot between every few slices of potato. Brush top with remaining butter-oil mixture. Season generously with salt and pepper. Cover dish with foil and roast for one hour, covered, until potatoes are tender (if your potato slices are thicker than shown, you may need to increase cooking time). Increase oven heat to 450 degrees. Remove foil and roast another 10 – 15 minutes, until tops of potatoes are browned and crisp.

Lankford* Sopapilla Cheesecake Makes: 12 servings Cook Time: 30 minutes Ingredients 2 cans (8oz each) Pillsbury refrigerated crescent dinner rolls 2 packages (8oz each) cream cheese, softened 1 ½ cups sugar ½ cup butter, melted 1 tablespoon ground cinnamon Directions Heat oven to 350 degrees. Unroll one can dough. Place in bottom of ungreased 13x9-inch (3-quart) glass baking dish, sprayed with Pam. Stretch to cover bottom of dish, firmly pressing perforations to seal. In medium bowl, beat cream cheese and one cup of the sugar with electric mixer on medium speed until smooth. Spread over dough in baking dish. Unroll second can of dough. Carefully place on top of cream cheese layer. Pinch seams together. Pour melted butter evenly over top. Mix remaining ½ cup sugar with the cinnamon, and sprinkle evenly over butter. Bake about 35-40 minutes or until center is set. Cool slightly, about 20 minutes. Refrigerate for easy cutting. Key Factors to a Better You

Concentrating on your health has many benefits in life and can affect more than you personally. Main physical components that are affected by good health are your general wellbeing, your reduced risk for developing chronic diseases, and assisting in managing existing conditions. Additional benefits of being physically active include: an increase in energy levels, a decrease in stress, the prevention of obesity, stroke, Type 2 Diabetes, certain types of cancers and hypertension among others. Life doesn’t have a magic bean or a pill that you can take that will give you a higher quality of life and well-being. There’s not a formula on how to reach it either. Wellness is the ongoing process of making healthy choices to maintain balance in all dimensions of life. SFA developed the Wellness Model to address this with seven dimensions of wellness; intellectual, career / financial, spiritual, emotional, physical, socio-cultural, and environmental. The importance of concentrating on all seven dimensions is that they’re all interrelated; improving health in one dimension can positively influence another. It is common for individuals to be healthier in one or two dimensions of health versus another. To begin addressing your overall well-being, set goals to improve one or two dimensions at a time, and add additional goals over time. The SFA Employee Wellness program developed and implemented Wellness is the ongoing process of the Kick Axe Wellness Challenge in making healthy choices to maintain February 2015, to provide goals for balance in all dimensions of life. participants to achieve that focused on the seven dimensions of wellness. Although the participants of the Challenge had preset goals to achieve, anyone can develop their own goals under each dimension of wellness. It is important to note that when focusing on your overall well-being that anyone can achieve it no matter their current quality of life. Every day you are already completing important steps towards wellness. Choose goals that have meaning to you to be successful. The journey towards wellness can be easy some days while other days it will be a struggle. However, do not become discouraged; simply take one day at a time putting one foot in front of the other. Lastly, simply do as Dory says, “just keep on swimming.”

A Few Examples to Try: Physical • • • • • •

GA’sTHE REC Take On

For many years now, the SFA Campus Recreation Department has employed Graduate Assistants to serve in a supervisory role for our programs. The number of GA’s that we employ on staff has been reduced over time, but the GA’s that currently reside on staff have been given the opportunity to take on more prominent roles. This semester, the department has been tasked with the responsibility of replacing three of our professional program area supervisors, and supporting our GA’s as they lead the programs in the place of our departed team members.

The Graduate Assistant program was originally created within our department in order to help bridge the gap for some undergraduate students as they aspire to become professionals. The program is used to develop the tools that students need to succeed in the career path of their choice. As they work towards their Master’s Degrees,

each GA is asked to serve in a prominent role in their program in order to hone their skills. In a perfect world, each GA has a Coordinator or Assistant Director to help guide them and from whom they can learn. This past Fall

semester, that has not been the case. As the semester progressed, our GA’s, Rachel Nanez, Sonia Nieto, and Cory Eiffert took over their programs as their supervisors have left SFA to pursue a new chapter in their careers. Rachel is our second year Graduate Assistant for Aquatics, and, although she is happy for the opportunity at the University of Nebraska that was presented to her former boss, Jess, she has been challenged extensively during the past two months. In her mind, the first week was the worst part of Jess leaving when, all of a sudden, the weight of the program felt overwhelming to her. “That first week, there was Timeclock due, there was promotional stuff due, there were reservations due... all in that same week. I just didn’t know where to start. I had all of the materials and I was prepared to do everything, but at the same time I was freaking out. I didn’t think I could do it”. Also during the first week, a leak was discovered in our pool, giving Rachel her first real test as the head of the area. With the

help of our Head Guards and the staff around her, she was able to overcome the issues and has finally settled into a role with which she is comfortable. Sonia, however, isn’t as seasoned as Rachel. After only three months of her Graduate Assistantship, Sonia was handed the reigns to the Fitness & Wellness program when the Coordinator, Kate, accepted a recreation position with the city of Boulder. Sometimes the facility can forget that we’re students, too - and so you have to continually remind yourself of that, which was probably the hardest part to figure out, at first”. Our current GA’s have had their work cut out for them, but in the long run, it will pay dividends for them professionally. ● Cory was our Graduate Assistant for Facilities and Member Services and just finished his last semester at SFA. He took over his program area during the summer when our Assistant Director, Scott, took

SFA Rec Alum Chris & Jill Wylie Chris and Jill Wylie currently call Mansfield, Texas home. They both graduated from SFA in 1996 and worked at the Rec. Chris earned a B.A. in communications and a M.ED. in kinesiology, while Jill earned a B.S. and MED in Kinesiology. They both completed their jobs at the Rec as Intramural Supervisors. Now: They are parents to 8-year-old son Jaxon and 13-year-old daughter Layne. Jill works as a coordinator for the girl’s athletic department at Brooks Wester Middle School and Chris as a assistant coach for football and baseball team, and US Government teacher.

What was your role at SFA Campus Rec?

he Stephen F. Austin State University Campus Recreation Department is excited to announce the creation of the Dr. Raymond Lee Worsham Scholarship. This scholarshipis is created to provide financial assistance to current student employees of the Campus Recreation Department. Dr. Raymond “Ray” Worsham was the Intramural Department Director at SFA for 43 years prior to the creation of the Campus Recreation Department. Dr. Worsham was the keystone to the Intramural Department for more than four decades and his dedication and lasting impact is something that we will celebrate for decades to come with the

creation of this scholarship. Under Dr. Worsham, intramural sports flourished to the highest numbers the program has ever seen. Thousands of students spent nights playing on the intramural fields, in the HPE and around campus over Dr. Worsham’s tenure. The strong intramural tradition lives on through our current sport offerings, The Intramural Champ shirt, the contact we have with former student athletes in the program and we are privileged to honor him with this scholarship.
