GOOSING IT FOR 80 YEARS

#785FLAVOR

It began in the 1930s, when Frank “Goose” Butler decided to open a grocery store in what is today the Whitehall Country Store. The streets at that time were not paved, or even made.

Frank stocked his store with cold cuts, bread, canned good and staples. Knowing, however, that several of his friends liked an occasional cold beer led to a small cooler hosting a six-pack or two on hand per request. It didn’t take long before the demand for beer grew. One cooler was followed by another and yet another. The neighborhood bar quickly became the favorite gathering place for the men in the area. But the wives became suspicious when their husbands were eager to go to the grocery store for them every day.... As any smart lady would, the wives quickly realized they were missing out on a good time, so they started frequenting Frank’s store as well. The growth of his beer business made Frank realize that change was on the

way, but it wasn’t til the landlord raised his rent from $24 a month to $50 that he found the new spot for the business, the present building just up the street, at the bargain of $40 per month. On a Saturday morning in 1938, Frank waited for his usual morning crowd to show up. Once gathered, they simply put the beer, coolers (and what groceries were left) on dollies and pushed them up 10th Street to the new building. ‘The Dutch Goose” was in business. Today it continues to serve women and men alike with friendliness, community and good beer and food. A tradition that is destined to continue for another 80 years. aseveneightfive

SUMMER BREWS get in the mood for long days and late nights NEW BELGIUM SKINNY DIP

WINDMER BROS. HEFE SHANDY

As refreshing as a naked swim in a cold pond after a day of sweating at an outdoor music festival, this figurefriendly but full-bodied lager is as frisky in character as the guys in the pond get. Peach notes brighten the citrus flavor which ends with a slightly fruity pucker. Use #WaterkeeperDip each time you have a swig and New Belgium will donate $1 (up to $10,000) to Waterkeeper Alliance, which supports swimmable waters.

A brew as sweet as the spring blossoming trees and as refreshing as a summer morning rain. Hefeweizen serves as the base for this beer and Lemon Drop hops and lemonade flavor are added to create the bright, crisp front flavor and aroma. Complemented well when served with an orange slice.

ABITA STRAWBERRY

Light-bodied KÖlsch style seasonal ale has a light fresh orange aroma that makes it an easy drinking and endlessly refreshing beer. Due to its medium-light body and more neutral fruit undertones, Goose Summer Ale is perfect for backyard bbqs. aseveneightfive

Abita Strawberry Harvest is a lager brewed with pilsner and wheat malts and Vanguard hops. Louisiana strawberry juice is added during filtration resulting in a sweet aroma, haze and taste. The dessert of beers, it also would pair well with the spinach and strawberry salad at Pigskins. TALLGRASS HALCYON This is Tallgrass’ first summer seasonal brewed back in 2011. Although it’s carried year-round, it makes a strong shelf presence in the summer months. Kansas white wheat adds a nice edge but it’s the “hop-bursting” late in the brewing process that gives Halcyon its palate of tropical fruit flavors and aromas that are so indicative of the best summer days.

Recyclable cartons, great craft beer options and personalized service make Blackbird a top choice.

blackbird personal touch and care by The Taste Bud

My, hands down, favorite place to grab a coffee and breakfast sandwich in Topeka. The care they put into packaging the to-go orders, each item separate and contained in a recyclable carton, means a lot to me. What’s in those packages is even better…that’s the real reason for my frequent visits. They remember my name and always deliver exactly what I am hoping for. My go to breakfast is the Orleans Croissant. It comes with egg, crispy bacon, baby swiss cheese, and fresh spinach on a toasted (or grilled depending on how you prefer it) butter y and luscious croissant. I had to visit my favorite place (oh darn) twice in one day to get the photos for this article. For some reason you never have to twist my friends’ arms to meet me here either. For lunch I decided to try the San Marcos

Blackbird Espresso Bar + Bistro 4025 SW 10th St. 271.8188 @blackbirdtopeka

wrap. I am notorious for trying their amazing specials but decided to stick to the menu this day. I was not disappointed…not that I expected to be because, let’s face it people, Blackbird has never disappointed me. The San Marcos was a saucy and mouthwatering wrap that included barbeque basted grilled chicken, melted mild cheddar, tomato, red onion and guacamole on an herb wrap. I added green leaf lettuce because it’s healthy, lush and they seem to expect me to do so at this point. My companion kept it simple with the Ham and Three Cheese panini…which was grilled to cheesy perfection. Blackbird is a huge supporter of not only great food but of the arts in Topeka. They participate regularly in the monthly Art Walk and showcase local artists that fit right into their vibe and décor. They are also well known for having great beer on tap and for providing outstanding events. All in all…this is on the top of my list for places to recommend for out of towners and if you live here you should already know…if you didn’t…now you do. aseveneightfive

HISTORY OF BEER

Revisit a decade on the brink of the future

acquisition of large painting at blind tiger Blind Tiger Brewery + Restaurant | 37th & Kansas

Lawrence artist Brain Timmer installed a twelve foot by four foot tableau acrylic painting, commissioned by The Blind Tiger Brewery + Restaurant, the first of May. The theme, “The History of Beer,” incorporates beer making in ancient Egypt, barley fields, medieval monks making beer, hop fields, both the beginning and end of prohibition, the Craft Beer movement and, of course, the Blind Tiger Brewery. “We are so happy to have it [the painting],” said Jay Ives, majority owner of The Blind Tiger Brewery + Restaurant. “Brian Timmer has done a great job capturing the spirit and enjoyment of Craft Beer. Our patrons will be enjoying this painting for many years to come. It has already become part of our identity.” “It’s like a big “W” going from the pyramid to the stove, to the cross on the church, back down to the barrels, and then vanishing back up to the sky by the brew tanks,” explained artist Timmer. “My hope is that the eye moves fluidly through the rich history of one of Humanity’s most cherished beverages - beer.” If you would like to see more of Brian Timmer’s work visit briantimmerart. com. The Blind Tiger Brewery & Restaurant and John Dean, Brewmaster, currently hold the titles: • •

Champion Brewmaster, World Beer Cup 2014, Large Brewpub Division Champion Brewery, World Beer Cup 2014, Large Brewpub Division

The Blind Tiger Brewery & Restaurant has been brewing and serving great Craft Beer and delicious food since May 1, 1995. The Blind Tiger is the only Brewpub in Topeka and has a full menu featuring steak, pasta, seafood and bbq plus at least a dozen great tasting, fresh, local Craft Beers on tap, brewed on site. The brewery brews and sells about 1,300 barrels of beer per year, which is about 325,000 pints. 90 percent of their beer is sold out of the restaurant with the rest through local distribution. aseveneightfive

auces made from scratch, an infinite number of sauce combinations and a incredible Early Bird lunch special make Paisanos Ristorante a local favorite unrivaled by any chain.

Their infamous Early Bird Lunch special is Monday through Friday from 11a - 11:30a. All entrees are half price with the purchase of a drink. Note, it can get busy in there and your whole party must be sat and ordered by 11:30a. (Please don’t forget to tip on the original amount.) So here I was, at another one of my favorite hot spots, doing the tough grind work for you.... Having tried and been a bit disappointed in their calamari on a previous visit, I decided to try the Mushrooms Italiano to get started. I was unprepared for that amount of awesome. The white wine cream sauce that surrounded the Italian sausage stuffed mushroom caps was exceptional. Light but rich, garlicky and savory ; well balanced and served with toast points. My favorite item on the menu is definitely the Ravioli del Mar…their creamy tomato basil sauce is simply seductive and entices me every time I look at the menu. Plus, the

pasta pillows are filled with shrimp, scallops and lobster making it a rich indulgence. Alas, needing to venture outside of my happy little box for this article, I went with the highly recommended Asiago and Garlic Ravioli. It is Italian Asiago cheese stuffed pasta served with a house made creamy pesto sauce with a bold taste of garlic and Italian spices, rich Parmesan, mozzarella and ricotta cheese. It was rich and delectable and I enjoyed every bite. The entrées at Paisanos are served with a huge salad you plate yourself and some soft garlicky breadsticks that are sure to fill you up if you aren’t careful. My compadre decided to try something new this time as well. (Watch out guys…my sickness is spreading.) She had the Penne Bianco Pasta with a Garlic Rosemary Chicken on top. Wow. The flavor combination of the gorgonzola, mozzarella and parmesan cheeses mixed with their Alfredo sauce made this a dish that surpassed any expectations I could have had. The menu items being served to my neighbor almost tempted me to intrude… that must be noted. Paisanos Ristorante is a great spot for large groups or intimate dinners. They also offer catering and carry out. aseveneightfive

LIFE AFFIRMATIONS IN COLOR at the mulvane art fair

W

ith so many art events throughout the year and Topeka art culture always growing, it is easy to forget that it has been on an upward trajectory for years. The Mulvane Art Fair is one of the annual art events that spurred the desire to showcase the region’s artists. Since its inception 23 years ago, the highly competitive juried art fair has developed national notoriety and has been showcased on the beautiful campus of Washburn University.

18

by Michelle Leivan, the Artist’s Artist | ArtPrint Express.com

Taking place this year June 6 and 7, the fair features more than 90 artists of various media from across the state, region and county along with exciting live music and sensational food options. One of the artists selected this year is up-and-coming local artist Becky Drager. Last year was her first at the Mulvane Art Fair. “I’m so excited to have been selected again this year because it was so much fun last year talking to all of the art lovers and to share my work with them,” explains Becky. “I am anticipating another great event.”

‘‘ This year she will be showcasing her painting series “Prairie Structures: Natural and Man Made.” In this series she explored the Kansas countryside, capturing remarkable vistas of our rural state, and returned to her studio to curate her discoveries to represent in her paintings. “This beauty is in a prominent place that brings the visitor right back to it. The more I live with Becky’s paintings the more I appreciate their sophistication and nuance,” explains Jay Nelson, owner of Strecker Nelson Gallery in Manhattan, on his attraction to Becky’s work. “The great colors are immediately obvious! But the way Becky Drager uses lines and edges of various colors is really the detail that makes her paintings so admirable.” Even though it is the sparkling color that radiates off the canvas that first attracts people to her work, we must pause to discover one thing that is undeniable. Each and every piece is authentically Becky as she masterfully draws you into her creation. What she presents for us is the optimistic radiant inner light she carries within, each piece becoming an affirmation of life in paint. Without pretension they are presented to delight and inspire a love for the land that we can explore and enjoy through her visions of Kansas. No matter the subject she chooses, it is a transcendent experience of color, light and joy for those willing to let her visual voice give the gift of a comfortable rest from the world in lively color. Her work can be seen online at DragerStudios.com and prints of her work are available at ArtPrintExpress.com and the Mulvane Gift Shop. Don’t miss the art event of the year and mark your calendars for this year’s Mulvane Art Fair on June 6 and 7 to see not only Becky’s work but over 90 other outstanding artists. I am sure you will find something created by a talented artist that will sing to your soul and you simply can’t live without. aseveneightfive

COLD BREW P

T’s Coffee Roasting Co. has launched a new line of coffee that is sure to please – 12-ounce bottles of cold brewed coffee.

The offerings include Cold Front, PT’s signature cold press option, as well as select single-origin coffees brewed using the kyoto method. These cold brew bottles are currently available for sale exclusively in PT’s Coffee’s two retail locations, PT’s at College Hill (1625 SW Washburn Ave) and PT’s at the Crossroads (310 Southwest Blvd, Kansas City). Cold brewed coffee has been increasing in popularity for many years, and in order to meet that demand PT’s has given cold coffee lovers a new option. By selecting two popular coffees, Cold Front and Tana

pt’s coffee roasting co. releases new cold brew options, just in time for summer

Toraja AA from Sulawesi, patrons are able to take their favorites on the go in glass bottles. “Our customers are huge fans of cold brewed coffee and we wanted to focus on elevating that experience for them,” said Jeff Taylor, Chief Coffee Nerd of PT’s coffee. “We’re constantly challenging ourselves to do more than we did the year before and this gave our team the chance to exercise some creative freedoms.” Bottles are available as singles or in a four-pack option, fondly known as the Quadzilla, and can be enjoyed anywhere –beside a lake on your next camping trip, at a friend’s BBQ party, or for the classic pick-me-up in the morning. Anything goes.

Cold brewed coffee, often called cold press, refers to the process of steeping coarsely ground coffee in cold, fresh water for up to 24 hours. The resulting drink is rich, dense, and low in acidity which makes it great for spring and summer. The current line up of bottled cold brew gives consumers the option to enjoy Cold Front, a blend of several types of coffees, or to explore the nuances in single origin coffees prepared using the kyoto method. The kyoto method is a cold brew process that passes individual drops of water over a bed of coffee grounds for at least 8 hours. Cold Front is available at $3.75 for singles and $15 for a Quadzilla. Single origin kyoto offerings are $4.50 and $18 respectively. aseveneightfive

FOOD NINJA Pizagels 4.0 Fists

I

Ninja’s Recommendation Reuben

t is time… once more I attack those unsuspecting opponents which have so frequently surprised me with their cunning and skill. An unusual adversary is facing me on the field of battle alongside an ally. Neither of which I am prepared to face... the newly remodeled Pizagels rises from the ashes like the fabled Phoenix.

Menu The choices are abundant and I am once again disarmed… maybe not a better ninja after all. I don’t know where to begin but I decide my fate and reluctantly make one choice. Although, there is much to choose from, I must accept my choice and proceed with the battle.

Friendliness The staff is polite and helpful, smiles and an accommodating attitude make me feel welcome. My sly questions are answered, and little do they know I have infiltrated their innermost levels.

Food Fresh and hot, rich and flavorful. The pickles are crisp and the pastry is flaky. No ninja can endure the two battles I fight during this journey. This ninja is depleted. Depleted yet full from the selection I devour.

Atmosphere The remodeled interior is welcoming and warm yet modern and sleek. Digital menus adorn the walls and the color scheme is inviting. I feel like a better ninja in this place. The ninja I am supposed to be, the hero I am to become. I bask in the light of the flowing chi.

Funds I leave with enough gold pieces to pay for more training to improve my ninja skills. I acquire a combo meal for less than $10, which kicks my senses, and a dessert. My purse is heavy and my ninja belly full. I am satisfied. aseveneightfive

Behind the scenes: Owned by Jim Burgardt, Pizagles has been operating for about 20 years in Topeka. Formerly Bagel Express, Pizagels restructured and began offering pizza on their menu adding a whole new element to the experience. After a fire damaged much of the store, a remodel was necessary and put Pizagels down for seven and a half months; they are open now and looking forward to serving the Topeka community or many more years to come. Double Edge Edition Hog Wild

T

he battle is not done. I must now face another adversary and attempt to keep the upper hand. As I enter I am greeted with a smile… Hog Wild BBQ has built a base camp in Topeka and beckons for action.

3.8 Fists

Friendliness - I am greeted warmly and told how the establishment works until I have full understanding of my enemy. I am taken aback; no adversary has revealed themselves so quickly. Within minutes I have full knowledge of my foe and how they operate. Even the patrons are welcoming, the entire mood of the place is unexpected and momentarily catches me off guard. Atmosphere- A clean, modern, yet down home feeling is given by Hog Wild and I am comforted by the appearance and mood. Family style dining and cozy surroundings will be the end of me. As I wait for my meal, I am soothed by the sound of friends laughing and families sharing experiences and stories. Menu- Extensive to say the least. So many choices, so little room in a ninja’s stomach to accommodate them all. There is no shortage of choice at Hog Wild. Seven meat choices and as many sides leave me well attended. Not only are there an abundance of selections, each one appeals to my hungry ninja nature more than the last and I am torn. I must decide quickly or my enemy will gain the advantage and overtake me. Food- The flavor is divine. I am disarmed by the succulent, vibrant taste of my meal. However, I must say the coleslaw left something to be desired. Tender meat and exquisite baked beans; I am satisfied.

Ninja’s Recommendation Turkey Breast Hog Wild | 5330 SW 21st | 21st + Fairlawn next to The Toy Store

Funds- I am able to select three meats, two sides and a large drink for $15. Meal enough to share if you are running low on rupees. The portions are hefty and well balanced. aseveneightfive

To live a minimalist lifestyle; a reflection on a one week challenge to declutter.

THINGS

the challenge: get rid of 100 items in one week

W

hen I was younger, I loved carrying purses and bags. Not tiny, little girl purses, but full-sized, filledwith-everything-needed-to-survivethe-apocalypse purses that had been my Grandmother’s. With a bag on my shoulder, I was ready to take on the world, because I had everything I could possibly need in there – usually in multiples, because a girl needs choices. Unfortunately, the need to feel prepared followed me well into my adulthood, as did my love for having options when it came to my stuff. By the time I was 24 I had so many physical possessions that I single-handedly furnished a three-bedroom, two-living room duplex. Friends joked that I “had a problem,” and occasionally the word “hoarder” was thrown around. It was always in jest. But they didn’t know.

They didn’t know that I had a gallon bag of lip balm under the sink. They didn’t know I had six bottles of sunscreen behind the linens. They definitely didn’t know that in addition to the 10 pairs of sunglasses I wore regularly, I had 10 more in a box. And they didn’t know that I often felt suffocated by my stuff, and that I struggled to let it go. When I moved into a 2-bedroom apartment, I had to downsize, but I still crammed in more than I should have. When I started feeling overwhelmed by my stuff, I searched for storage solutions on Pinterest, but stumbled upon something infinitely more valuable: the concept of living minimally. During a marathon Pinterest session, I read for hours about living a minimalist lifestyle. I ran across a blog post that featured small steps toward a more minimal life. One of the suggestions was to get rid of 100 things. Any thing, any size, any object, even trash! That seemed reasonable. But I didn’t do it. Months after my minimalist-living reading frenzy, a friend was talking to me about the obscene amount of kitchenware she and her fiancé had. My brain immediately flashed back to the 100 things

article, and I set out a challenge for both of us: Let’s get rid of 100 things this week. She hesitantly nodded, and the crusade to ditch the clutter was on. The first few things were easy. Old batteries, an empty mascara tube, and some dried out pens were the first to go. Feeling bolstered, I searched my linen closet. Two fleece blankets, a black bed skirt, some shower curtain rings, and half of my towel collection went into the donate bin. I started hunting through my closet and pulled out a few items I hadn’t worn in years. In the kitchen, I pried open my utensil drawer. I grabbed a handful of things I hadn’t used since moving into the apartment and tossed them in too. I counted. I had gathered together 52 things. And I was stuck. So I asked my Facebook friends for help. “Last weekend I challenged myself to get rid of 100 things in a week,” I wrote. “I have done 52. I need 48 more. Any ideas on small things that I could get rid of that I might be overlooking?” My friends responded with gusto, naming everything from silverware to holiday cards to pantry staples as things to use and/or trash. With these suggestions in mind, I parted with a box of textbooks, martini glasses, VHS tapes (Julia Roberts!), nail polish I had never worn, old holiday cards, and some candles. With 20 things left to go, I was struggling. After a long internal debate, I decided to sell a filing cabinet and my Keurig, which I hadn’t used since Christmas. I also recycled every magazine in my possession. It took days to convince myself these choices were OK.

In the end, though, I did it. I got rid of 100 things. It’s now been almost a month since I ditched that clutter, and for the most part, I don’t even remember what I got rid of. The best part of getting rid of 100 things is the feeling of accomplishment I have every time I see that flash of empty shelf or open my utensil drawer without it getting stuck. But more importantly, I know that my stuff did not conquer me. I can get rid of things. I can get rid of 100 things! And if I can do it, you can do it. So here’s my challenge to you: Let’s get rid of 100 things this week. I’ll do it (again) if you will! aseveneightfive
