Preston’s Road Race has surpassed the $100,000 mark but the finish line is still nowhere in sight. The sixth annual five-kilometre run/walk, to be held at Regina’s Wascana Centre, is scheduled for May 29. The race is held in memory of Preston Meyer, who lived in Estevan and passed away of cancer in 2004 at age 10. Last year’s race raised nearly $30,000, bringing the event’s lifetime total to just over $100,000. Preston’s Road Race is a non-profit organization and 100 per cent of funds raised go directly to families with a seriously ill child, to assist with travel and medical expenses. This year’s recipients are three-yearold Ava Melnychuk of Regina, who was diagnosed in 2008 with acute myeloid leukemia, and six-year-old Kyren Gronick who was diagnosed last month with lymphatic cancer and is currently receiving treatment in Regina. Steak dinner fundraisers will be held over lunch (11:30 a.m.-1:30 p.m.) and supper (5-8 p.m.) on Tuesday at the Beefeater. A fundraiser barbecue will also be held at Senchuk Ford on May 13. Event co-organizer Lori Meyer says T-shirts will soon be available for $20 each, and local children will be out collecting pledges this week as well. The race itself begins at 9 a.m. with registration starting at 8 a.m. the day of the race. The entry fee is $20 for those 14 years and older, or $10 for those under 14.

Difficult problems require innovative solutions from council Since the health care community and ministry has abrogated a portion of their responsibility in recruiting and retaining health care professionals, the communities they serve have found themselves having to leap into that breach. In Estevan that means our city council is having to put some serious thought into the prospect of adding to the mill rate to accommodate the needs associated with the growing problem of disappearing doctors, nurses and other health industry professionals within the city and immediate area. This problem, coupled with a burgeoning need to build a new seniors’ housing complex and affordable housing for a good portion of the remaining population, gives our councillors a unique dilemma. So far the talk has centred around a half-mill levy on property taxes as one way to raise funds for medical professional recruitment and possibly have it roll out to provide financial support for a seniors’ complex that will replace the aging Estevan Regional Nursing Home. The fact that the nursing home will require more community funds than the soon-to-open arena and event complex, speaks volumes about the obligations that the seniors’ housing fundraising committee has taken on. A new arena and event complex is a sexy, in-your-face project

that caught the imagination of the public and business community in Estevan and area. We hope that same kind of enthusiasm greets the fundraisers for the less sexy senior housing needs. Somehow we believe it will. After all, millions were raised for a new St. Joseph’s Hospital 15 to 20 years ago. It’s time for a repeat performance. What council may also want to consider though, is another approach to raising the badly needed funds for health professionals and housing. A mill rate levy is one concrete avenue, but they might also wish to consider a one per cent tax on goods and services sold locally or in lieu of that, a one per cent tax applied directly to each hospitality bill, i.e. a one per cent tax on hotel and motel room billings. This type of revenue raising has met with success in several other centres including our nearby neighbours in North Dakota and we’re willing to bet the majority of us who use their hospitality services haven’t even noticed that additional tax that their citizens use to support local businesses (non-profit and for- profit) and organizations. Council has indicated in the past that they were loath to enter into the property management and housing market, but by definition, they’ve been there for decades through their arranged and managed subdivision developments. There is nothing wrong with that, it’s a fact of life in Estevan. So our council could be addressing three growing problems in one fell swoop, either through a retail/hospitality/luxury tax or a mill rate levy. Three major problems that are restricting even further growth in this city are a lack of doctors and health care professionals, affordable decent housing for the working poor and adequate and dignified accommodations for our seniors who would like to live out their remaining years among friends and families. The discussion should be a lively one and we might suggest one that would well worth having in our council chambers.

Keep It Simple in the Kitchen on Mother’s Day My husband’s culinary skills begin and end with making a great pot of coffee. With that in mind, I’ve created a simple Mother’s Day dinner recipe that even a non-cook can successfully follow. Preparing a meal is one of the best ways to show someone you love them. After all, the origin of Mother’s Day is rooted in a daughter’s love and respect for her mother. In 1905, after her mother’s death, Anna M. Jarvis began a campaign to recognize her mother’s work as a community activist and peace advocate, and to honor her memory. It took several years, but in 1914, President Woodrow Wilson signed a bill recognizing Mother’s Day as a national holiday. The House of Representatives also adopted a resolution recommending that officials of the federal government wear white carnations on Mother’s Day. Here’s a simple recipe for Pasta With Spinach. The step-by-step directions will ensure a successful result for even the most unskilled cook, and create the perfect meal for the Moms we love. BEGINNER’S PASTA WITH SPINACH 8 ounces Angel Hair pasta 1 gallon cold water 4 teaspoons salt (for water) 2 tablespoons olive oil 2 tablespoons unsalted butter 1 can (14.5 ounce size) diced tomatoes 1 tablespoon Italian seasoning spice

TO COOK THE PASTA: 1. Fill a large, tall stockpot with the water, turn heat to high and bring water to a boil. 2. When water begins to boil, add the salt. (Adding the salt to the water now is necessary because it’s the time when the pasta absorbs it best. Do not add oil of any kind. Oil will coat the pasta, and the sauce will not stick.) 3. Hold the pasta vertically over the boiling water and carefully slide it into the pot. Lower the heat to medium so the pasta water doesn’t foam up and boil over the sides. As the pasta begins to soften, use a long fork or wooden spoon to push the pasta into the water until it’s submerged. 4. Turn the heat back up to high. Stir the pasta to keep it from clumping together. Stir every few minutes as needed to keep the pasta separated. 5. After 6 to 8 minutes, use the fork or spoon to pull out a piece of pasta. Taste it to see if it is soft, not raw or starchy-tasting. The pasta is done when it is “al dente,” which is Italian for “when it is right for the tooth,” and refers to the correct cooking point of pasta. If the pasta isn’t done, let it continue to cook another 2 or 3 minutes until it’s soft but firm -- not mushy or overcooked. 6. Fill a coffee cup with some of the pasta water and set it aside to use when making the sauce. 7. Place a large colander in the sink. Using potholders to protect your hands, carefully move the pot to the sink. Carefully drain the pasta into the colander. 8. Pick up the colander with the potholders and shake it well to remove any excess

water from the pasta. Do NOT rinse the pasta. 9. Place the drained pasta back into the large pot and start making the sauce. TO MAKE THE SAUCE: 1. Using a large saucepan, over medium-high heat, melt the butter and add the olive oil. Add the tomatoes, Italian seasoning and spinach, a few handfuls at a time, and stir to combine. 2. When the spinach begins to wilt, stir in the sour cream or feta cheese and the pesto. 3. Pour the sauce into the large pot containing the drained pasta. Turn the heat to low. 4. Mix the sauce and the pasta together until wellcombined. 5. Use a 1 or 2 tablespoons of the pasta water to thin out the sauce, as needed. 6. Place the finished pasta in a large bowl and serve immediately with garlic bread or rolls. Heavy Rains Take Toll on Basements Q: I have a dry basement. But recently, after heavy rains, I noticed that in two corners of the basement the paint was bubbling up a bit and, when I pressed one of the bubbles, the paint split and water trickled out. I haven’t experienced dampness issues before. What’s the problem? -- Gary in Waltham, Mass. A: Considering all the pump hoses I saw trailing from basements around my neighborhood following recent heavy rains in the Northeast, a little dampness doesn’t seem like much. But you’re paying attention to the problem right away, when it’s relatively small and new -- and that’s actually very important. It can save you from having to bale out the basement a few years from now. The first thing to do is to find out if water is draining correctly away from your foundation, or if something is impeding that drainage. Check outside the house, near those corners. Are there gutter downspouts nearby? Do you have shrubs, hedges or other plants in place next to the foundation? If gutter downspouts are near the corners, make sure the water is draining well away from the foundation and that it disperses evenly. The small bend at the bottom of the downspout may not be enough -- water should be directed at least a foot away from the foundation, so you might need to purchase a gutter extension. Should the rains return

before you’re able to do that, you could do what my neighbor did in a pinch during the storms, and improvise a drain extension. What he did was set a flat piece of concrete directly beneath the downspout opening, raised the end slightly by placing a few pebbles underneath so the water flowed away faster. He then found a length of flexible plastic tubing about 4 feet long in his shed and duct-taped that to the end of the downspout. Check the distance of plants from the house. They should be planted more than a foot away from the foundation to prevent their roots from extending to the foundation and allowing water to seep in through the cracks they exploit. Plants that are set too near, or plants whose roots have crept to the foundation, should be removed and new plants placed farther away. I f y o u d o n ’t s e e improvement in the water seepage, or would just like to make sure, have a licensed contractor double-check the basement and foundation for unseen damage. The faster you tackle any issues, the less

Are fast food salads really a healthier choice? Written by the Public Health Nutritionists of Saskatchewan and supported by Population Health Promotion, Sun Country Health Region The availability of salads on fast-food restaurant menus makes it easier to choose a more balanced meal. But, just like with any food, a salad is only as healthy as the ingredients used to make it. Fast food restaurants usually have nutrition and ingredient information readily available at their store or on their web site. You can use that information and the points below to make sure your salad is a healthier choice. * When choosing a salad as your main entrée keep Canada’s Food Guide in mind. termilk tend to be higher in calories. Although these ingredients are nutritious, they are sources of saturated fat. Vinaigrettes are usually better choices, but there is a large range in the number of calories and amount of fat provided. A light vinaigrette is usually a better choice. A side-salad can definitely be a better choice than french fries. For example, at one restaurant, a side salad with 1/2 the package of vinaigrette dressing may provide 75 calories and four grams of fat compared to approximately 220 calories and 11

grams of fat found in a small serving of french fries. Don’t forget that you will be getting the bonus nutrients and fibre from the vegetables! Dog Life Vests, Safety Belts Several years ago, a frightening incident inspired automotive safety specialist Christina Selter to found BarkBuckleUP, a program that promotes pet safety. “We had a near-accident with our dogs in the car. (We were) only traveling about 2 mph from a stop sign, when a car ran a red light and our little Betty fell off the seat. (She) wasn’t hurt, but didn’t want to be on the seat or in the car. It took some time to get her confident again.” Selter, who has an SAE (Society of Automotive Engineers) certification, created BarkBuckleUP to

She travels the U.S. throughout the year, promoting the message and working with police and fire departments to support the safety program. Organizations/Residents of the City of Estevan The landfill will be open for the week of April 24 - May 2, 2010 You can assist by: • Walking through a park near you and picking up litter • Picking up litter on your property, back lanes and boulevards around your property • Picking up litter anywhere you see it Guidelines for free disposal (Proof of residency) • Items allowed to be dropped off for free include furniture, tree branches and regular household garbage; and does not include appliances that contain Freon • Items not allowed anytime: all hazardous materials, tires, paint computer components, televisions, propane tanks, oil and petroleum by-products • All loads must be completely covered or secured to prevent littering while in transport Any waste from rural customers will not be accepted free

Storm Drainage Sewer Construction & Water main Replacement The City of Estevan is undertaking Construction of Storm Drainage Sewer and replacement of Water Main at: Third Street – Fifteenth Avenue to Sixteenth Avenue Sixteenth Avenue – Third Street to Fourth Street The purpose of this work is to provide timely and cost effective replacement of existing cast iron water main with PVC pipe, replacement of existing water and sanitary sewer services from water & sewer main up to the property line, construction of storm drainage sewer and surface restoration. This work would require closure of immediate areas of excavation and may necessitate parking restriction in adjacent areas. This work will commence during the week of April 26 to 30, 2010 and will take approximately Eight (10) to Ten (12) Weeks to complete (subject to weather). Mother’s Day Chocolate Dessert Mothers, grandmothers, aunts and special women in our lives will all be honored on Mother’s Day. We’ll take care of the dessert, and you take care of the rest. 18 (2 1/2-inch) chocolate graham cracker squares

1 (8-ounce) package fat-free cream cheese 2 cups reduced-calorie whipped topping s u g a r substitute to equal 1/2 cup sugar 1 teaspoon vanilla extract 2 (4-serving) packages sugarfree chocolate fudge pudding mix 1 1/2 cups nonfat dry milk powder 2 1/2 cups water 1. Arrange 12 of the chocolate graham crackers in a 9-by-13-inch dish. In a large bowl, stir cream cheese with a spoon until soft. Add whipped topping, sugar

substitute and vanilla extract. Mix gently to combine. Carefully spread mixture evenly over cracker crust. 2. In a large bowl, combine dry pudding mixes, dry milk powder and water. Mix well using a wire whisk. Pour pudding mixture evenly over cream cheese layer. 3. Crush remaining 6 graham crackers and evenly sprinkle crumbs over top. Cover and refrigerate at least 2 hours. Nellie’s Custard Bread Pudding This recipe was a winner in our Mother’s Day Cooking contest. 6 cups whole or 1 percent milk 5 slices firm white bread 2 tablespoons butter or margarine 6 large eggs 1 cup sugar 1 tablespoon vanilla extract 1/2 teaspoon salt 1/2 teaspoon ground nutmeg, or to taste 1. Preheat oven to 325 F. Grease a 13-by-9-inch glass baking dish. 2. In a 2-quart saucepan, heat milk just to boiling over medium-high heat. 3. Meanwhile, toast bread. Spread butter on 1 side of slices; cut each diagonally into quarters. 4. In medium bowl, beat eggs, sugar, vanilla and salt until blended. Gradually whisk hot milk into egg mixture until well-combined. Pour custard into baking dish. Arrange bread, buttered side up, on top of custard; sprinkle with nutmeg. 5. Set baking dish in large (17-by-11 1/2-inch) roasting pan; place pan on oven rack. Pour enough boiling water into pan to come halfway up sides of baking dish. 6. Bake custard 50 to 60 minutes or until knife inserted

Strawberry Creams This pretty pink dessert works well as a celebratory sweet for the non-chocoholic in your life. 1 envelope unflavored gelatin 1/2 cup water 1 lime 1 pound strawberries 1 cup strawberries, for garnish 1/2 cup sugar 1 tablespoon sugar, for garnish 1/3 cup heavy or whipping cream 6 round sugar or shortbread cookies (about 3-inch diameter) Whipped cream (optional) 1. In 1-quart saucepan, sprinkle gelatin evenly over 1/4 cup cold water to soften gelatin slightly. Set aside. 2. From lime, grate 1/2 teaspoon peel and squeeze 1 tablespoon juice. Coarsely chop 1 pound strawberries. 3. In blender, combine chopped strawberries, lime peel and juice, 1/2 cup sugar and remaining 1/4 cup water; blend until pureed. Transfer strawberry mixture to medium bowl. Place bowl in larger bowl of ice water. 4. Heat gelatin mixture over low heat about 5 minutes or until gelatin is completely dissolved, stirring frequently. Stir gelatin mixture into strawberry mixture. 5. With rubber spatula, stir strawberry mixture frequently just until it begins to mound, about 20 minutes. Remove bowl from ice bath. 6. In small bowl, with mixer at medium speed, beat heavy cream until stiff peaks form; fold into strawberry mixture with rubber spatula until blended. 7. Spoon strawberry mixture into six 6-ounce ramekins; top each with cookie. Place ramekins on tray for easier handling; cover and refrigerate until set, at least 6 hours or overnight. 8. For garnish, about 15 minutes before serving, cut each strawberry, from 1 cup strawberries, into quarters. Place in bowl with 1 tablespoon sugar and toss well. Set aside. 9. Meanwhile, to unmold creams: Run tip of knife around inside of ramekin. Tap side sharply with hand to break seal; invert cream onto dessert plate. Garnish with strawberries with their juice. Serve with whipped cream, if you like. Serves 6.

A Hog Loaded for Bear? Things can move pretty quickly in the world of sports, and nothing can change the landscape of one’s favorite team

quicker than a sudden trade -particularly to one’s division rival. Such is the case at the Pennsylvania and Maryland border these days. Donovan McNabb has hit the Beltway, and Philadelphia isn’t sure what’s hit it yet. Donovan McNabb was to the Philly fan what Patrick Ewing was to the Knicks fan

-- both were larger-thanlife stars who possessed enormous talent but, alas, couldn’t bring home the championship. No matter what they accomplished during their lustrous careers, without a ring McNabb will be known as “the guy who got tired in the Super Bowl,” just like Ewing, one of the greats of his era, will be remembered for “the finger roll.” For the past 10 seasons, McNabb has been the face of football in Philadelphia. McNabb is the Eagles’ all-time leader in career wins, pass attempts, pass completions, passing yards and passing touchdowns. Despite this, McNabb never seemed to earn the respect

befitting a quarterback of his stature. The boos started to rain in Philadelphia, and when the Cowboys ushered them out of the playoffs last season, the team’s brass seemed anxious to usher him out of town, too. McNabb joins a Redskins franchise that has been in complete disarray for more than a decade. With the exception of the brief Joe Gibbs nostalgia tour, the team has over paid free agents, pinned its hopes on coaches like Steve Spurrier and Jim Zorn, and squandered draft picks. Now, led by Mike Shanahan, skeptical fans are wondering if McNabb and the former Denver coach can bring visions of John Elway to

Redskins Park. Like Elway when he took the Broncos to the championship, McNabb will turn 34 next season. And though McNabb has lost his mobility, his style of quarterbacking would seem to suit Shanahan well. While it has always proven foolish to underestimate McNabb and Shanahan, make no mistake about this Redskins team, it is not the “Hogs” of the ‘80s. And while that may seem like a high bar to measure a team by, it is an appropriate one. Those are the teams that won the NFC East and took home titles. Philadelphia now turns to Kevin Kolb, 10 years younger than McNabb and the first quarterback in NFL

history to throw for more than 300 yards in each of his first two career starts. Those are the sorts of things that have Philly fans showing optimism. And guess what Kolb does during his offseason? He hunts hogs (no lie). Philadelphia better hope so, because McNabb will be loaded for bear when he makes his burgundy-clad return to Philadelphia.
