Waterfest

I

ndependence Day, along with our very own Water Festival, makes July one of the best months of all to live in Beaufort County. Growing up I’d so look forward to this month because I knew, even at a young age, that I’d get to spend extra time with my friends and family (and, of course, that I’d get a chance to eat tons of great food). Soon we’ll again celebrate the freedoms and opportunities this country provides us with the people we love most. During this happy time we’ll see our friends and neighbors at the beach or the sandbar, or at the cookout down the road. It is for our right to the pursuit of that happiness that so many in our families and communities have sacrificed to preserve, and we toast to those brave souls, and to each other, and to the bonds that unite us all for the greater good of a unique nation conceived in liberty and justice for all. Just one of those special bonds we share here in the Lowcountry is the Beaufort Water Festival. “WaterFest,” as it's sometimes known, is one of our most exciting local events and one that is steeped in tradition and history. The entire town gathers to break bread and to celebrate in our own way the beauty and wonder of this jewel of the Sea Islands. For 60 years the festival has played a huge part in the lives of Beaufortonians and over that same time, has brought in visitors from near and far. More than a few, unsurprisingly, have been so moved by the experience that they were compelled to put down roots here themselves. This July, in honor of the threads that tie our community (and to a larger extent, our nation) together, I’m going to make a personal effort to reconnect with old friends and neighbors I haven’t spoken to in a while. Maybe I’ll invite them to join me at the beach or to share a blanket out at the Waterfront Park. I think you should too. Have a wonderful July, y’all!

Beaufort National Cemetery Located on Boundary Street, it was one of the first cemeteries established during the Civil War, it is one of the few that contains both Confederate and Union dead.

It is currently eligible for recognition in the National Register of Historic Places and is being renovated jointly by both the Town of Port Royal and the Historic Port Royal Foundation. The Arts Center of Coastal Carolina presents Xanadu! The Broadway smash hit Xanadu roller-skated its way into the hearts of theater critics and audiences alike. A hilariously reinvented send-up of the Olivia Newton-John film, this irreverent musical adventure, about following your dreams, spins along to the addictive original hit film score of chart-topping tunes. Xanadu follows the beautiful Greek muse Kira as she visits Venice Beach, CA to coax an uninspired artist, Sonny, to build the first roller disco! When she accidentally falls in love with him, much to her jealous sister-muses’ dismay, chaos and fun abound, skate wheels turn and disco balls twirl. Boardwalk Observation Tower At Port Royal Sands Beach you will find a waterside boardwalk leading to an observation tower. This tower provides fantastic views of Port Royal, Parris Island and the surrounding area. For tourists, this is a must see, is free to access and open year-round. The town takes pride in its unique natural environment and its accessibility to that environment through its network of walking trails, community beach, boardwalk, and observation tower. Since Columbus discovered America in 1492, seven flags have flown over what is now the Town of Port Royal.

Blueberry Crisp 6 cups fresh blueberries, washed 3/4 cup butter or margarine, melted 1/4 cup instant tapioca 2/3 cup light brown sugar 1 tablespoon lemon juice 1/3 cup granulated sugar 1 cup rolled oats Vanilla ice cream or frozen 1/2 cup flour yogurt topping 1 1/2 teaspoons cinnamon 1/2 teaspoon salt Preheat oven to 350 degrees F (175 degrees C). Lightly grease 4 mini-loaf pans. In a large bowl, beat together the eggs, oil, vanilla, and sugar. Fold in the zucchini. Beat in the flour, salt, baking powder, baking soda, and cinnamon. Gently fold in the blueberries. Transfer to the prepared mini-loaf pans. Bake 50 minutes in the preheated oven, or until a knife inserted in the center of a loaf comes out clean. Cool 20 minutes in pans, then turn out onto wire racks to cool completely.

Blueberry Zucchini Bread 1 teaspoon salt 3 eggs, lightly beaten 1 teaspoon baking powder 1 cup vegetable oil 1/4 teaspoon baking soda 3 teaspoons vanilla extract 1 tablespoon ground cinnamon 2 1/4 cups white sugar 1 pint fresh blueberries 2 cups shredded zucchini 2 dashes hot pepper sauce 3 cups all-purpose flour Preheat oven to 350 degrees F (175 degrees C). Fresh Blueberry/Strawberry Layered Dessert FILLInG 2 packages (3 ounces each) cream cheese softened 1/4 cup of sugar 1 teaspoon vanilla extract 1-1/2 cups fresh blueberries, divided 3/4 cup sliced fresh strawberries In a bowl, combine the gingersnap crumbs, wafer crumbs, walnuts and butter. Press onto the bottom and 1-1/2 in. up the sides of a greased 6-in. springform pan. Bake at 375째 for 5-7 minutes or until crust is set. Cool on a wire rack. In a small bowl, beat cream cheese and sugar until smooth. Add vanilla. Carefully spread about 1/3 cup over crust. Top with half blueberries. Spread with about 1/3 cup cream cheese mixture. Top with strawberries. Spread with remaining cream cheese mixture. Arrange remaining blueberries on top. Cover and refrigerate for at least 4 hours. Yield: 4 servings. 1/2 cup finely crushed gingersnap cookies (about 9 cookies) 1/3 cup finely crushed vanilla wafers (about 10 wafers) 2 tablespoons finely chopped walnuts 2 tablespoons butter, melted

Blueberry Cream Slushy 1 cup frozen blueberries 1 cup vanilla yogurt 1 cup frozen strawberries 2 teaspoons sugar 1 cup pineapple and orange 6 ice cubes juice blend Place the blueberries, strawberries, juice, yogurt and sugar into the container of a blender. Process until smooth. Add the ice cubes, and process until small enough to fit through a straw, but large enough to crunch on. Pour into glasses, and drink through straws.
