County Approves Bike Route; Potential Boon for Health & Economy by Thomas Dimopoulos Saratoga TODAY BALLSTON SPA — In a move that promises to increase the quality of life for local residents as well as provide a future opportunity to secure tourism dollars for municipalities throughout the county, the Board of Supervisors on Nov. 16 unanimously approved and adopted an official Saratoga County Bike Route Map.

The map was created through the collaborative input of representatives from area cycling clubs and government leaders in Saratoga Springs and Saratoga County. “It’s the culmination of about three years of work with a subcommittee of city residents and county officials,” said city Supervisor Matt Veitch, following the adoption of the measure. Walter Prentiss Butler, was born in Saratoga Springs on April 1, 1863, at 596 Broadway. He was the son of Captain James P. Butler and Naomi Clements Butler. His father was Provost Marshal in Saratoga Springs at the time of the Civil War. Walter received his preliminary education in Saratoga Springs public schools and later attended North Granville Military Academy, Peekskill Military Academy, and Phillips-Exeter Academy. He completed his legal studies at Columbia University in 1887 and was admitted to the Bar of New York State the same year. On July 9, 1890 Walter P. Butler married Mary Ashman Kilmer from a prominent local family. She was born in Rock City Falls, December 2, 1867, a daughter of Clarence Beekman Kilmer and Bessie Broughton. Her paternal grandfather, Chauncey Kilmer, an early Rock City Falls settler, was prominent in the paper mill industry which once flourished there. Clarence Kilmer was the president of the Empire Spring Company which eventually merged with the Congress Spring Company. Subsequently, the merged entity included the Granger’s glassworks located near Lake Desolation. The newly formed company relocated its glass factory along the railroad tracks in Congressville, on Empire and Congress Avenues in Saratoga Springs. Mary’s great grandfather, Peter Kilmer, moved to Pages Corners, near Middle Grove, from the Dutch settlement near Kinderhook. Mary attended Mrs. Young’s Seminary at West Milton, as well as Public School No. 4, Saratoga Springs, before graduating from Temple Grove Seminary. Mrs. Butler was a member of the Board of Saratoga Hospital and served on the original Board of Trustees of Skidmore School of Arts, now Skidmore College. She also served as manager of the Hawley Home for Children. Walter Butler was originally associated with the firm of Pond, French, and Brackett in Saratoga Springs. In 1897, Butler and Clarence B. Kilmer, his brother-in-law, formed

their own partnership. Although the names in the practice changed with various associates over the years, Kilmer remained in the practice with Butler. One of Butler’s more important cases was LaRepublique Francaise against the Vichy Spring Company, of Saratoga Springs, in which the Republic of France endeavored to enjoin the Vichy Company from using that name. This case in which Mr. Butler was counsel for the defense, was taken to the Supreme Court of the United States where in 1903 it was decided in favor of the Vichy Company of Saratoga Springs New York. In addition to that landmark case, Butler represented the New York State Comptroller in inheritance tax matters for many years. For many decades the citizens of the Village and Town of Saratoga Springs hoped to secure a more economic and efficient form of government. Finally in 1915 the Saratoga Springs Businessmen’s Association who labored earnestly to bring this about, petitioned the State Legislature. The Town and Village were incorporated to become the City of Saratoga Springs on April 7, 1915 as a result of the Charter Bill, Chapter 229 of the Laws of New York. The Charter bill also gave the city the commission form of government requiring a mayor and four commissioners each with a single vote. The first elections under the new form of government were held June 8, 1915, and the first city officials took office on June 22. The original city council members shown in the photo above included William Milliman, Public Safety; W. H. Waterbury, Finance;

Mayor Walter P. Butler; N. Remick Thompson, Public Works; Michael J. Mulqueen, Accounts. During his term Butler took the lead in organizing city departments, rewrote the City Charter in its entirety and drafted all of the original city ordinances. Butler served one term of two years and refused re-election. Among Butler’s civic activities were active participation in the American Red Cross, the Presbyterian Church, the Saratoga Lodge of Elks, and membership in the American, New York State and Saratoga County Bar Associations. He was a life member of the Commercial Law League of America. Butler, along with James H. King and Dr. N. C. Powers, organized the Public School Baseball League to benefit the youth of Saratoga Springs. Walter P. and Mary Butler made their permanent residence at 22 Greenfield Avenue where they raised two sons. Their son Clarence Kilmer Butler became a senior partner in the family law firm. Their second son John Prentiss Butler pursued a military career. Mrs. Mary Ashman Kilmer Butler died December, 1938, followed by her husband on January 7, 1942. Mr. and Mrs. Butler are buried in Greenridge Cemetery. Many tributes to Mr. Butler were shared in the local newspaper on January 8, 1942. Carleton J. King, local lawyer and future Congressman, wrote “In the death of Walter P. Butler, the nation has lost one of its finest citizens, this city one of its best leaders, neighbors and civic workers, his family a good, industrious and model father and I, one of my dearest friends and valued advisors. The city has lost its most outstanding citizen.”

Marilyn M. Vallone

SARATOGA SPRINGS — Marilyn M. Vallone, 79, of Schuylerville, passed away peacefully on Sunday, November 14, 2021 at Wesley Healthcare Facility in Saratoga Springs. She is now reunited with her beloved son, Vinny Vallone. Originally from Flushing, NY and born to Monica (Bowe) Mathe and Herman (Pete) Mathe, Marilyn moved Upstate with her now deceased husband, Rod Vallone, in 1970. She loved living in the country (though later moved to Saratoga Springs) and always thought of Schuylerville as “home.” Marilyn

loved being a stay-at-home mom (after a brief stint owning The Crooked Kiln ceramics studio) and was very involved with her community, her garden, and her children’s lives. She was an avid bowler, volunteer, collector, and lover of all things beautiful – whether it be a child’s piece of artwork, the puffy clouds in the sky above, or the colors of autumn’s leaves. She appreciated everything, and thanked God daily for her blessings. After her kids were raised, Marilyn went to work at Woodlawn Commons, enjoying her time there so, she didn’t retire until the age of 72 years old. She had a fun-loving, compassionate heart and was truly a lover of all creatures; two-legged or four (she adopted many a stray over the years!) To know her was to love her. Marilyn will be missed by all who knew her, especially her daughter Chris Bushee, who is losing her best friend, and her granddaughter Alexandria Bushee, who is now pursuing a career in nursing which was nurtured by her close relationship to her “Grammie.” Marilyn is also survived by

her son’s two daughters, Shayne and Samantha Vallone, and the many nieces and nephews who she adored, building wonderful relationships with over those formative years when all six siblings would shift their kids around for summer break. She loved having the kids come up and spend some time in the country. Marilyn is predeceased by two brothers; John (Jackie) Mathe and Don Mathe, who passed away recently and had many of the same attentive and loving nursing home caretakers (THANK YOU ALL!!). Maryilyn’s oldest sister, Harriet Rackovitch is still living on Long Island’s North Fork and we all had the best vacation there before the dementia took its grip. Her other two sisters, Dee Dufault and Georgie Pelkowski, relocated upstate years ago, allowing them many good years together. Not being one to be the center of attention, Marilyn has requested there be no calling hours. In lieu of flowers, donations in memory of Marilyn can be made to St. Jude Children’s Research Hospital at www.stjude.org, or to a charity of your choice.

County Approves Bike Route; Potential Boon for Health & Economy continued from front page... “You’re going to start to see those green bike route signs on roads all over the county, so it will be great to see people start doing some bike tourism, all over the county.” Veitch thanked current city council members Michele Madigan and Robin Dalton, city supervisor Tara Gaston and former city commissioner Peter Martin, as well as other city and county officials and bike advocacy groups. “This is a great start for improving the health and quality of life benefits that we bring to our residents, as well as the potential for tourism dollars,” said Martin. “I’ve taken many day trips that have included just about every part of the map route.” Martin cited states such as Colorado, which have multiday biking tours that provide positive economic impact for local communities. “I’ve had the pleasure of riding several times on one of these tours – it’s called Ride The Rockies – and is in its 38th year. It’s estimated to generate a quarter of a million

dollars of revenue – per day – for the towns and villages it travels through.” In Iowa, the RAGBRAI (Register’s Annual Great Bicycle Ride Across Iowa) is in its 47th year, and draws 15,000 cyclist to its 7-day, 500-mile trip. “The economic impact in 2021 was estimated to be $25 million in direct spending in the cities and towns the tour runs through.” Martin said. “You have a real opportunity here. Our county roads are a real resource,” echoed Ed Lindner, of Bikeatoga. “This beginning is an important step, and you need to build on it.” Budgets: City Approves 2022 Plan, County Public Hearing Nov. 30, Vote in December • Having made revisions to the Saratoga County tentative 2022 budget, the Board of Supervisors, as required by county law, approved a public hearing regarding the revised tentative 2022 budget. The public hearing will take place 4:45 p.m. on Nov. 30 at the county complex, 40 McMaster St., Ballston Spa. The county initially proposed its $381 million budget in October. It is anticipated budget adoption will

website at: saratogacountyny. gov/wp/wp-content/uploads /2021/11/2022-Budget-Workshop -Report.pdf. “I did try in our workshop to amend the budget to provide more funding for non-profits. That did not pass,” said Supervisor Tara Gaston. “We’ve heard from non-profits in the city and throughout the county interested in some support recovering from COVID, and I would recommend they come speak to us in order for supervisors to hear that and

potentially amend the budget before we pass it in December.” • In the City of Saratoga Springs meanwhile, the City Council on Nov. 16 adopted a $54.2 million operating budget for 2022. The City Council will seat four new members on Jan. 1. DPW Commissioner Anthony “Skip” Scirocco is the one returning member. The current council members, completing their respective two-year terms and it is anticipated the final two meetings of this current council will take place on Dec. 7, and Dec. 21.

NOTES Chamber of Commerce from

by Todd Shimkus • for Saratoga TODAY

SAVE OUR LOCALS 2021

Todd Shimkus, President of the Saratoga County Chamber of Commerce It’s been just about two years since anyone has complained to me about parking in downtown Saratoga Springs. I’d like to think that’s because the Saratoga Springs City Center completed their parking structure a year ago. But that’s not the case. The reality is that the pandemic remains unfinished and the economic impact continues to challenge our local economy. Even with a strong summer season, it’s important for everyone to remember that our local businesses faced severe restrictions for the first five and half months of 2021. The labor shortage has also caused challenges. As I have throughout the last two years, I worry most about

our locally owned organizations. They don’t have Human Resources departments to find the talent they need to fill open jobs or the funds to raise their wages. They often lack the capital to survive a short term crisis never mind what is now a prolonged economic disruption. Many face supply chain issues, shortages and cost increases for the products they need to operate. It is these locally owned organizations that we need to save. I’m not just talking about retailers and restaurants. I’m also talking about local businesses in the construction industry; beauty, health and wellness; artists, musicians, photographers; professional and medical services; hospitality and tourism; and the list goes on and on. I’m also talking about the many incredible locally managed and funded impact sector organizations who take care of those in need. For years, many of you reading this have supported local businesses during Black Friday and Small Business Saturday. You’ve shopped local even during CyberMonday. You’ve then donated to local charitable entities on Giving

Tuesday. In the next couple of weeks, you’ll be invited to do the same again this year. We, at the Saratoga County Chamber of Commerce, decided in early-October that we needed our community to help us save our locals every day as 2021 comes to a close. That’s why we created our Save Our Locals $20.21 contest. We want to encourage you to buy or donate local every day and to reward those who do so. Here’s how it works. 1. When

you spend or donate at least $20.21 at any local business or impact sector organization in Saratoga County, take a photo of your receipt. 2. Email your receipt to saveourlocals@saratoga.org. Please use a valid email because that is how we notify the winners. 3. Every week, we select 5 to 7 winners from the emails sent to us. Each winner gets a $100 gift card to a local business. In total, we’re giving out more than $5,000 in prizes through December 31, 2021.

Since the pandemic began, the Saratoga County Chamber has vowed to help everyone, members and non-members. This makes participating in the Save Our Locals $20.21 contest even easier. Purchases at every local business in Saratoga County count. You just need to send us the receipt. In just the first three weeks of this campaign, hundreds of people have already participated. We’ve had 18 winners. The participants have spent nearly $60,000 already. Each week we’re sharing what gift cards are being awarded and who won last week’s prizes at www. saratoga.org/save-our-locals. Doing a take-out meal for Thanksgiving? I’m betting that qualifies. Making a purchase for Black Friday at a local store. That qualifies as well. Purchasing a gift certificate for a family photo. Qualifies. Hiring a local contractor for a home repair. Qualifies. It’s super simple. Spend or donate at least $20.21. Tell your friends and family. Help us mobilize thousands of people because that’s what it will take to Save Our Locals.

Catholic Central High School and St. Ambrose School Partner to Form Pre-K-12 Regional Catholic School LATHAM — In a move designed to strengthen the future of Catholic education in the Capital Region, the Albany Diocesan School Board (ADSB), under the leadership of Bishop Edward B. Scharfenberger, has announced it will create a new school Latham that will allow for a continuum of Catholic education from pre-K to 12th grade in one location. The new Catholic Central School is set to open its doors in September 2022. St. Ambrose School in Latham (pre-K to 5th grade) and Catholic Central High School in Lansingburgh (6th to 12th grade) will come together at the 19-acre Latham campus that is currently home to St. Ambrose Parish and School.

Starting in the 2022-2023 school year, students from Catholic Central High School (CCHS) will join students from St. Ambrose School to form a new school community on the Latham site. Catholic Central School will be created in phases over the next few years. It will offer students a full academic journey in a safe learning environment at one central location. The new school will afford families the option to enroll their children at any stage of their education accommodating the varying grade level configurations of any surrounding public or private school. Although architectural designs are still being finalized, initial plans call for 2022-2023 to be a transitional year. Students will

share St. Ambrose School’s existing 2,500 sq. ft. building. Wings, multiple entrances, and pods of classrooms will enable administrators to keep the three distinct age groups – pre-k and kindergarten, grades 1-5, and grades 6-12 – separated and, when needed, allow for purposeful interaction and mentoring opportunities. Catholic Central School will be expanded by renovating and building upon St. Ambrose School’s existing structure, which includes 18 classrooms, a laboratory, and gymnasium. Architects will provide a timeline for the project in the coming weeks with renovations to begin shortly after. “We are going to be able to deliver a state-of-the-art education with even more extracurricular activities and offerings. The school will also actively expand upon higher educational partnerships,” said Superintendent of Schools Giovanni Virgiglio. “CCHS has exiting programs with several surrounding universities. We are only going to be able to enhance those offerings through our proximity to these institutions.” Located off Old Loudon Road off Exit 6 of I-87, Catholic Central School will offer students numerous advantages, including room for ongoing growth, ample parking, and an expansive campus in the heart of the Capital Region. “Easily accessible to the Northway, Route 7, and Route 9, there’s no place from which you

can’t get to the sprawling campus,” added Virgiglio, noting that the new school will likely be a draw for families from many surrounding school districts, expanding the bus transportation radius. “It will also be more convenient for families to get to Catholic Central School, which is just minutes away from its current location in Troy.” “As CCHS approaches its 100th anniversary in 2023, we wanted to take action that will guide us into our second century,” said Nate Maloney, chairperson of the Catholic Central High School board of trustees. “We are excited by the endless options Catholic Central School will provide to our

students and how it dovetails with our shared vision for the future of Catholic education.” In the coming weeks, the Futures Committee plans to host a series of informational meetings. “Our hope is that input from key stakeholders will help us to further refine our plans,” said Virgiglio. For more information, or to reserve a spot for the 2022-2023 school year, please call St. Ambrose School at 518-785-6453 or Catholic Central High School at 518-2357100. ast week, we looked at the different meats (and meat alternatives) that will be available at the farmers’ market this holiday season, with something for any size gathering. This week, we are looking at all the other items our vendors will offer this Saturday to make your favorite sides, desserts, and more. Since traditional Thanksgiving meals use seasonal ingredients, you will find many vegetables needed to create your favorite dinner sides at the farmers’ market. A mash will please most holiday guests, and local farms have potatoes aplenty right now. Mix it up by grabbing cheddar cheese, milk, and beer from other vendors to make beer cheese mashed potatoes. Sweet potatoes or celeriac also work great for a mash. Many types of squash are available to make into soup or pie. For flavorful roasted vegetables, try carrots, brussels sprouts, and kohlrabi. If a side salad is on your menu, we have fresh greens and kale. Grab maple syrup or honey, too, for a delicious glaze or dressing. You will find plenty of fresh herbs at Shushan Valley Hydro Farm. Add these herbs to stuffing along with freshly baked bread, which you can get on Saturday to turn perfectly stale for baking by Thursday. For a low-carb option, try cauliflower stuffing instead. Add cranberry jam from Kokinda Farm for an easy and delicious condiment. Then, for the sweetest part of dinner: dessert. You can find baked goods at several vendors, including frozen, unbaked pies at The Food Florist for an easy dessert that still feels homemade. One of the market’s newest vendors Boozy Moo!, offers alcohol-infused ice cream

INGREDIENTS: • 3 lbs starchy potatoes* (such as Russet or Yukon Gold) • 2/3 cup beer* (such as Czech pilsner or American craft lager) • 1/2 cup butter*

• 1/2 heavy cream • 2 cloves garlic*, minced (optional) • salt & pepper (to taste) • 1 tsp fresh parsley*, finely chopped, for garnish

INSTRUCTIONS: 1. Peel the potatoes, rinse and cut them into uniform pieces, as needed for even cooking. Muddy Trail Jerky Co. Photo by Emily Meagher.

(5% ABV) to add a joyful spirit to the event (a great way to reduce any potential family friction!). And, for those who prefer savory over sweet, charcuterie boards and cheese plates are always a holiday hit. Add items like Nettle Meadow’s cranberry fromage frais for a seasonal touch. Whiskey, beer, spirits, and ciders are available to be enjoyed with your meal. Add Muddy Trail Jerky’s mulling spices to the latter for a heartwarming way to cap a day spent enjoying good food with your loved ones. The Saratoga Farmers’ Market is open on Saturdays from 9:30 a.m.-1:30 p.m. in the Wilton Mall Food Court. The CDTA’s routes 450 (from Schenectady) and 452 (from Skidmore College via downtown Saratoga) run to the Wilton Mall on Saturday mornings. Find us online at www.saratogafarmersmarket.org, where you can sign up for our weekly newsletter, and follow us on Facebook and Instagram @SaratogaFarmersMarket.

2. Place the potatoes in a large stockpot, add 1 tbsp salt and enough cold water to cover them by about 2 inches. Bring to boil over medium-high heat and boil until the potatoes are very tender. 3. While to potatoes are boiling, in a small saucepan over medium heat bring the beer to simmer. Temporarily remove from the stove and add the butter. As soon as it begins to melt add the cream. If using minced garlic, add it now. Stir to combine, place back on the stove and keep warm using the lowest setting available. 4. Drain the boiled potatoes and break them down using a masher. Add the beer mixture as you continue to mash. Optional - once the liquids are fully incorporated you can whip the mash for about a minute to make it extra creamy. 5. Taste and season with salt and pepper as needed, stir well. Serve on a warm plate and garnish with parsley. NOTES: • Be sure to use heavy cream - its higher fat content will ensure that it does not curdle in contact with the heated beer. Always add it after you’ve added the butter for the same reason. • Adding the garlic to the warm mixture will significantly mellow its sharp taste and bring out its sweetness. Food

“Keep Calm & Keep on Chopping” Hello my Foodie Friends !

The holidays are inching closer by the moment, and that means it’s time to prepare for all those deliciously festive dinners you’ll be making. Perhaps you’ve been pinning your most anticipated holiday recipes for months in advance, or you’re scrambling to find an easy holiday dinner recipe. Either way, you’re going to need the cooking equipment to execute these dishes.

by John Reardon

Every home cook needs a solid work surface in their kitchen to peel and chop produce, prep proteins and rest food before it’s time to slice for Saratoga TODAY and serve, which means you’ll need a quality cutting board. Not only do cutting boards protect your knives and countertop, but they make cleanup a breeze. No kitchen is complete without a quality cutting board. It is an essential tool that is heavily used by families on a daily basis. Much like a great chef ’s knife or a dependable skillet, a great cutting board can seriously up your home cooking game. Whether you’re cutting veggies, chopping herbs, or slicing steak, the best cutting boards provide a large area on which you can work, as well as protection for the knives you’re using. If you obsess over your knives, as most chefs do, you should also care about your cutting boards. Often an afterthought in the kitchen, cutting boards prevent blades from being dulled on hard surfaces like counters or plates. They also play a key role in food sanitation. As such, a well-stocked kitchen should have several different cutting boards for the multitude of things you’ll need to cut. And while you can get a cutting board in a number of different shapes, sizes and materials, the best cutting boards allow you to cut everything from vegetables and bread to raw meat, fish and chicken safely and properly. In terms of material, wood is a good option for a cutting board. Naturally antimicrobial and often attractive enough to be used as a serving piece, wooden cutting boards are sturdy and can last a long time if cared for properly (wooden cutting boards are not dishwasher safe and so need to be hand washed thoroughly to sanitize and treated regularly to prevent warping or cracking). If you take cooking seriously, then you need a cutting board that is sturdy, safe for food preparation, and reliable. We offer a variety of wood cutting boards to improve any kitchen. Not only are wood cutting boards functional, they are aesthetically pleasing as well. Wood can add natural warmth and beauty to any kitchen. If you are looking to create a traditional appearance in your kitchen, a wood cutting board or two can help you achieve that goal. Wood is relatively easy to clean and maintain. Because of this, wood cutting boards do not easily

contaminate or harbor harmful bacteria. Ultimately, don’t think of wood cutting boards as tools to be stored until used. Display them along with the rest of your kitchen’s best accessories! We carry several types of cutting boards in various sizes to meet your culinary needs. If you’re looking for a cutting board to stay put on your counter, the Catskill Craftsmen cutting board is the board for you.. Its large surface area is good for a large piece of meat, or prepping multiple foods at once. Catskill Craftsmen boards are beautiful wood cutting boards made in the USA. They are made of harvested, sustainable quality domestic hardwoods. Epicurean makes a wide assortment of cutting boards in various shapes and sizes including large ones with juice grooves. These cutting boards are reversible, thin and light enough to toss in the sink or dishwasher for easy cleanup. It can also be flipped for an even larger cutting surface. Each board is made in the USA with quality composite, natural material, is lightweight, durable, nonporous, knife friendly, easy to maintain and temperature resistant to 350 Degree F/175 Degree C. If you prefer a plastic cutting board, the OXO Good Grips plastic utility cutting boards have been our favorite for years. We love how they grip to the counter and can be used for a variety of foods, from raw meat to fresh veggies. They’re easy to move around, which makes cleanup easy, especially since they can be tossed into the dishwasher. The cutting board is double-sided with a non-porous surface that can resist odors and won’t dull knife blades and they are dishwasher safe.

Along with the fun and excitement of the holidays, come the major stresses, especially around food! There is something magical about the act of preparing meals and eating together. It is an act of giving and sharing. This holiday season, stop by Compliments to the Chef, your Neighborhood Kitchen and Cutlery store, located at 33 Railroad Place to get the essentials you will need to make your feasts. Remember my Foodie Friends; “Life Happens in the Kitchen.”

INGREDIENTS

Take Care, John & Paula

• 1 beef Rib Roast Bone-In (2 to 4 ribs), small end, chine (back) bone removed (6 to 8 pounds)

• 1/2 cup pure maple syrup

• 2 teaspoons minced garlic

• 1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme leaves

• 2 medium acorn squash, cut lengthwise in half, seeded

INSTRUCTIONS 1. Preheat oven to 350°F. 2. Combine maple syrup, thyme and garlic in medium bowl. Reserve 1/4 cup for squash. Brush half of remaining syrup mixture onto all surfaces of beef Rib Roast Bone-In. Reserve remaining for basting. 3. Place roast, fat-side up, in shallow roasting pan. Insert ovenproof meat thermometer so tip is centered in thickest part of beef, not resting in fat or touching bone. Do not add water or cover. Roast in 350°F oven 2-1/4 to 2-1/2 hours for medium rare; 2-1/2 to 3 hours for medium doneness, basting with syrup mixture halfway through roasting time. 4. Meanwhile, place squash, cut sides up, in 13x9-inch glass baking dish. Brush cut sides of squash with some reserved syrup mixture; evenly pour remaining mixture into each well. Roast, uncovered, 45 minutes, brushing cut sides with syrup mixture from wells, halfway through baking time. 5. Remove roast when meat thermometer registers 135°F for medium rare; 145°F for medium doneness. Transfer roast to carving board; tent loosely with aluminum foil. Let stand 15 to 20 minutes. (Temperature will continue to rise about 10°-15°F to reach 145°F for medium rare; 160°F for medium.) Meanwhile, increase oven temperature to 425°F and continue to roast squash 15 to 20 minutes or until tender and edges begin to brown. 6. Carve roast into slices. Cut each squash half into 2 wedges, carefully spooning syrup mixture onto each wedge. Season beef and squash with salt and pepper, as desired.

The last few days before the wedding can be stressful, so don't forget to relax, have a glass of wine, get a massage, or do whatever you need to do to be rested and calm the day of the wedding. Things seem to fall into place and it will be beautiful!

Connor and I met while working in a very stressful Emergency Department in 2015. Initially, we were both shy and didn't say much to each other. Until one night when we happened to run into each other while out in Saratoga, I struck up a conversation. I told my best friend that he was the man I had a crush on at work. That night we spent hours talking, laughing, and dancing together. After that night, we talked every day, were inseparable and knew we were meant to be together. Our relationship grew, and we adopted a Cat, named Chance, and a Golden Retriever puppy named Louie. In November of 2017, Connor planned a trip to Italy for us, as we both have a love for the Italian language and culture. He proposed to me on a hilltop outside of St. Peter's Castle in Verona, the city of Romeo and Juliet. We decided on a December wedding because we share a love for the Holidays and find winter to be cozy and romantic. Franklin Plaza had the elegance we desired, and it was the perfect fit for our day. Our wedding day was beautiful, romantic, emotional, and flawless. We cannot thank our vendors enough for making our day feel so special. We feel so lucky to have had all of our loved ones with us on our most memorable day.

Our Story In the winter of 2011, Anthony and I were both college athletes at Columbia University. Through mutual acquaintances and “chance” run-ins (perhaps more orchestrated by Anthony than I realized at the time!), we became fast friends. Friendship turned to flirtation over a ski trip in Saratoga Springs, and shortly after, we began to date. Only a few months later, I was accepted and chose to go to medical school in Worcester, MA while Anthony stayed to graduate a year later and pursue a career in finance in New York. The next four years held countless bus trips, train rides, and hours spent sitting in traffic between Worcester and NYC. Saratoga Springs quickly became our happy meeting place where we could spend long- anticipated weekends together at Anthony’s family home. After medical school, I moved back to NYC to begin my residency in pediatrics and we moved into our apartment on the Upper West Side. In December 2016, I begrudgingly accepted that despite six years of dating, we would spend the holidays separately. I did not know that Anthony had much bigger and more exciting plans. Two days before Christmas, he showed up on my parent’s front doorstep on one knee. We immediately knew we wanted to marry in Saratoga and a week later our date was set. The first Saturday in May proved to be a perfect day! Our wedding day was filled with so many wonderful people and so much love – we wouldn’t change a thing!

Our Story

Photos by Rob Spring Photography

Kristen and Paul had an unusual beginning. Nothing says true love like meeting your significant other on Caroline Street on a hot summer evening in 2011. An exchange of numbers and a promise to call, their fates were sealed. An awkward text the next day lead them to an adorable meet up and Paul knew those shots at the top of the Tavern were worth it. With a smile, a wink, and a possible kiss they were on. Ever since, the couple have been on a ferocious journey together... from losing jobs, relocations, master degrees, and the passing of a seriously loved parent. The past seven years together have been nothing but eventful. Sick and tired of being put in the corner, the couple declared 2017 ‘THEIR YEAR’ and decided to plan their dream wedding. Since they can’t do anything easy, their wedding had to be at Saratoga National, followed by a day at Saratoga Race Course. On July 29, 2017 they tied the knot in the morning, followed by a boozy brunch and gambling in the afternoon. The day was wonderfully spectacular. They may not have won any money at the track that day, but they did create some fantastic memories with their loved ones and family. 20 years prior, Kristen once looked at her father and said “one day I will find a way to live in Saratoga.” What she never saw coming was how a chance encounter in that town brought her the love of her life. Currently, the couple resides in Saratoga Springs after purchasing their dream home in the fall of 2017. Happily-ever-after... just like you read about.

Our Story

Photos by Susan Blackburn Photography

Everything happens for a reason - a simple saying, but it’s the way our story unfolded… Stacey and I were both working in different industries, living in different towns, and running in different directions with our children. The only tie was that we both worked in Saratoga Springs and had a common connection - me with a long-time friend and she with his wife, whom she worked with. What started as a quick Friday lunch turned into, “So Diane has someone that she thinks you should meet.” Stacey and I started texting late that afternoon. We met and quickly knew we had stumbled upon something truly special. The next couple of months brought introductions to children & families, as well as time spent growing closer together. After the New Year rang in, we were engaged and started planning our new life together with our five children. We began building our dream home, adopted our furry child, and became one family before our family and close friends on October 11th. Life does not always go the way we plan, but everything happens for a reason. We couldn’t be happier together. We know that two people together can be far stronger than any could ever be alone. Unbeknownst to the both of us our vows held similar themes of love and admiration, ending with the same quote form one of our favorite artists “should you be the last thing I see, I want you to know it’s enough for me, cause all you are, is all I’ll ever need.”

Big Wedding

Love has many faces. This was easy to see in June when 30 couples gathered on the grounds of the Beekman 1802 farm in Sharon Springs for the “Let Love Bloom” marriage marathon.

One bride crawled out of her car’s back hatch door so she wouldn’t wrinkle her fashionable white gown. Another couple came dressed in matching camouflage John Deere hats.

“I should’ve invested in Kleenex,” said Event Manager Alan Edstrom.

Some ceremonies were surprises, others were long-planned vow renewals that had been delayed because of the pandemic last year.

LOVE CHANGES EVERYTHING

It was their faces however, that said it all.

People came in from around the country for the unique event.

“This moment in time changed their lives,” said Edstrom.

HOW TRANSFORMATION HAPPENS For the event, Alan Edstrom added marriage officiant to his resume, which also includes stints in film, television, theater, and even magic. Yet, never has he been in a role that transformed him as much as the one he had that day, which also happened to be his 58th birthday. “I was so invested in their stories. It was very emotional. I asked everyone three questions; ‘How did you meet? Why did you choose this space? And, ‘What would be your one wish be for people who are in the same kind of situation?’” As varied as their stories were, their answers were also quite similar – the year had focused their priorities – which included how important it is to celebrate love. “They all had heartfelt meaning. It gave me hope and joy. It was a turning point where people reset their lives,” he said. EMBRACE THE RAINBOW Edstrom, who was ordained online by the Universal Life Church, performed four ceremonies that day in the 10’ x 10’ pop-up chapel constructed from multicolor tiles by artist Tom Fruin. Once light hit the tiny structure, a fantastic mosaic of colors glistened atop “Matrimony Hill” in the same grassy location where the farm’s owners, Josh KilmerPurcell and Brent Ridge, were married in 2015. “The summer sunlight was encompassing you and you felt like you were being embraced by nature. It was an indescribable experience,” said Edstrom. SIMPLE IS BEAUTIFUL Love isn’t always simple but the ceremonies at Beekman 1802 were. Each couple was given a script (which they could change slightly but were instructed to keep short). “They leaned into the limitations. There was no freezing up and no boring speeches. It was focused on exactly what they wanted to say,” said Edstrom. Michael and Alice Corey, who were originally married in 2009, rewrote their renewal vows to include the love they have for their two daughters, ages 8 and 11.

SARATOGA BRIDE 33 “It was a joining together of our family in a way that solidifies it more,” said Alice. Edstrom is a friend of the family, so for him to preside over the ceremony at the farm, gave it added meaning. “We love Beekman 1802, the whole company, their focus on kindness and how they are able to capture beauty,” said Alice. LIVING THE BRAND Beekman 1802 is a mercantile shop and 59 acres of pastoral bliss. It is home to more than 100 goats, 42 bee hives, and beautiful gardens. “Being at the farm and playing with the baby goats changes your aspect of what life is all about,” said Edstrom. After the ceremonies, couples also took in the charm of the lovely lavender and the fragrant hydrangeas. The property is typically only open to the public for large-scale events, including farm tours, kindness workshops, and a huge harvest festival that draws in as many as 20,000 people in a single day. This year, in addition to the marriage marathon, they focused on smaller happenings and helping their neighbors. They invited artists and photographers in, held an outdoor dinner, and hosted a showing of the movie, “It’s a Beautiful Day in the Neighborhood.” “We’re a living brand, not a lifestyle brand. Beekman 1802 is not just about soap, buying and selling stuff. It’s not about the rat race. People often spend their lives in careers and on pathways that someone else paved for them. Here, we create an atmosphere that is focused on the community and taking that feeling out into the world. It’s about just taking a moment to recognize that kindness is transformational, just like these weddings were. It’s like letting all the pieces fit together to create a fantastic mosaic of a new future,” said Edstrom. Missing you after 4 long years since your passing.

Grief remains with me even though I'm told to 'move on' with my life. Easier said than done as no one lives in my shoes, mind and past memories with you. I continue to feel and sense your daily presence, and I know you are aware of my thoughts no matter how small, humorous, serious...spiritual.

Saratoga Arts, which typically is involved with the New Year’s Eve celebration, replied simply that they “are not involved with the event this year,” although would not offer information beyond that statement. In New York City meanwhile, Times Square NYE 2022 will invite revelers back to Times Square to watch the Ball-Drop in person. The festivities will include performances – the lineup will be

Elevator Music 42 at The Tang Opens Nov. 20 SARATOGA SPRINGS — The Tang Teaching Museum’s Elevator Music series activates the Museum’s central elevator within the Antoine Predock-designed building, and engages artists across the visual and performing arts to create immersive, soundbased installations. The 42nd edition features sound and sculptural work by artist Laura Splan, on view from Nov. 20 through April 10, 2022. Splan’s installation re-envisions the Tang’s elevator as an organism’s cell and its visitors as proteins. The sound work Chaperone and the interactive sculpture Lumen offer a sonic and tactile journey through Integral Molecular, a Philadelphia-based biotech lab where Splan spent several months in spring 2018 as artist-in-residence. In Chaperone, the buzzing of specialized laboratory equipment, chatter of scientists, and countless other unidentifiable, fragmented sounds coalesce and disperse, their arrangement following the structure of Queen’s Bohemian Rhapsody.
