omehow, a decent portion of this issue ended up being about one of my favorite pastimes: The art of eating. We don’t have a “food issue” per se, but this issue definitely favors all things flavorful. I’ll admit that I’m the sort of person who plans trips around meals. The first thing I do after I’ve booked a flight, or sometimes even before that, is research my destination’s best places to wine and dine. I’d even go as far as saying some of my most vivid travel memories involve where I ate and with whom. A city’s cuisine is a way to experience the pulse of a place and its people in a way that’s unique, creative and altogether welcoming. It is perhaps this notion that inspired this month’s feature (page 81), where we show you how to, quite literally, taste the town, one dish and one course at a time. Of course, there are plenty more wonderful Valley restaurants than there are magazine pages, but think of this as a starting point to inspire a new way to rediscover the place you call home. In other foodie fun, we highlight six can’t-miss tasting events (pages 64, 66 and 70), plus gourmet food trucks to rent for your next soiree (page 124). For a bit of adult trick-or-treat (emphasis on the treat!), check out how you can upgrade your candy bar this Halloween on page 123. Speaking of candy, or shall we say, eye candy, our cover spotlights Nic Roldan, the country’s top American polo player, who is also dubbed the face of American polo – and for good reason. Beyond his charisma and astounding athleticism, the American Polo Team captain is committed to introducing polo to a more diverse audience, and he’s a champion for philanthropic causes. up close Fast-forward to years later and the next chapter in her life when she noticed the same problem. During a park outing with her first son, Cerutti Holmes noticed other mothers struggling to chase toddlers without dropping phones, nervous to leave valuables in unguarded strollers. “It was my ah-ha moment,” Cerutti Holmes says. “My clubbing days may have been behind me, but we all still had the same problem: How do we stylishly carry and protect our necessities and remain hands-free for an active lifestyle?” As she did years earlier, Cerutti Holmes searched the existing market for a viable solution. “I couldn’t find anything that resembled my fashion standard of ‘Lara Croft meets Coco Chanel’ and utility meets style,” she says. So one day, Cerutti Holmes sat down with her child’s craft supplies and fashioned a makeshift prototype using a Ziploc bag. “I taped it to my leg and told my husband, ‘This is what ladies need!’” At this point in her life, Cerutti Holmes had recently quit her job as a financial analyst in San Diego to become a full-time mother. Shortly thereafter, she and her husband, Brandon, moved to Fountain Hills to be closer to family. Bestowed with a new purpose of solving the hands-free purse crises, she officially launched SmarterGarter in 2013. Pregnant with her second child, Cerutti Holmes threw herself into every aspect of building her business. She made it a priority to understand the details, laws and intricacies of the industry, learning about research and development and personally interviewing suppliers and manufacturers. The result was a collection of fashion-forward, garter-style purses that can be worn multiple ways: on the thigh, hip, over-the-boot or as a yoga mat wrap. From motorcycle-chic to bohemianinspired – even white lace to challenge the traditional bridal garter – the uses are only limited by the wearer’s imagination. “Women wear so many hats: mother, athlete, traveler, clubber, cos-player, bride. We shouldn’t be restricted to one type of accessory for all our identities,” Cerutti Holmes says of creating designs that

would appeal to every woman. The style and versatility of SmarterGarter quickly gained the fashion industry’s attention, including being named in USA Today’s “Celebrity-Inspired Festival Fashion Must-Have” as a top Coachella accessory. “We’ve had women who are diabetic that have never had a fashionable way to carry their insulin pump, sports fans who are thankful for a regulation-size bag

in response to the NFL purse ban, and brides who appreciate being hands-free from the bachelorette party to walking down the aisle.” Today, SmarterGarter can be found in stores all over the U.S. and Canada, including local retailer Harley-Davidson of Scottsdale and boutiques statewide. “I still get the chills when I see the SmarterGarter collection sold next to iconic brands like Michael Kors and Chanel,” Cerutti Holes says. “I’ve been absolutely humbled with all the great feedback SmarterGarter has received.”

set for other “momtrepreneurs.” She hopes her entrepreneurial story serves as inspiration to other women as she is proof that a full-time mother can build a business beyond the nine-to-five work schedule. “As a full-time parent starting a business, you need to get creative about your time. I fully admit to joining the gym for the childcare, free coffee and ability to catch up on emails,” says Cerutti Holmes, referring to her late-night calls with international partners as her “Second Shift.” Often asked how she balances it all, she believes it’s not so much a balance as it is finding fluidity. Running SmarterGarter is truly a family affair, with her husband acting as a graphics and web designer and nearby family as caregivers while traveling. Even her young children participate, helping to unpack new inventory and fill orders. “My kids have literally grown up with the business. They pretty much think their second home is USPS,” laughs Cerutti Holmes. “I’m forever grateful for my family. Their emotional support keeps me going when times get tough. “ Eager to offer advice to other budding entrepreneurs, she emphasizes to never be discouraged; that it’s not a matter of if you’ll run into problems, but a matter of when. “I now view obstacles as a personal challenge to see how quickly I can correct the divergent path,” she says. “I call problems ‘opportunities for solutions.’” Ultimately, the key to success is being confident and believing in the powerful influence one individual can make. “Realizing that all large brands were at one time startups alleviates the intimidation factor. If you want to compete, you have to jump right in,” Cerutti Holmes says. And while there are sure to be challenges, stress and unforeseen obstacles – and she admits that free time isn’t exactly abundant in her current chapter – it is important to recognize each and every achievement as a step in the right direction. “New business owners should make it a point to celebrate all milestones, no matter how small. Break open the bubbly because there will always be another level to climb. And most of all, enjoy the journey.”

Q: We’ve focused on the problems and solutions of fine hair here, but are there also advantages to it? RG: Of course! Fine hair can look stunning, just like all other types of hair. Fine hair tends to be soft and silky. This makes it harder to style, but the flip side is that it can almost glow with a wonderful, natural shine. Those with curly fine hair will also find they spend much less time straightening it than their thicker-haired friends. Fine hair is also brilliant for the summer months, when it helps to keep the head cooler. Just like all other hair types, fine hair comes with plentiful advantages, as well as its own particular issues!

From static issues to limp, dull styles, fine hair can sometimes feel impossible to get right. Thankfully, expert color specialist Rodney Gentry, based at Sachi Studios in Scottsdale, is here to help! Q: First, why is it that some of us have finer hair than others? Rodney Gentry: Fine hair results when each individual strand of hair has a small circumference, so that individual strands are not as large as those belonging to other people whose hair has a wider circumference. Q: Do people with fine hair have particular problems as a result of the hair’s fineness? RG: Clients with fine hair tend to come to me with a similar range of complaints. While fine hair can look sleek and beautiful, it can be difficult to style. Many clients also wish for more volume to their hair. Q: How do you help them to overcome these issues? RG: There are plenty of options for those with fine hair. Highlights are one way to add volume and texture, and lowlights can work really well, too. It is really incredible what you can do with color. Clients always get a boost when they see how different their fine hair looks after it has undergone a color treatment. There are also some great products on the market to help with fine hair. I’m loving the René Furterer Volumea range right now. The four products—shampoo, conditioner, conditioning spray and a volumizing foam—harness the power of natural ingredients like carob in order to create long-lasting volume that leaves the hair bouncy and lightweight. Products like these work wonders, and it is great to be able to introduce clients to them and know how much they will enjoy the effect that they have. Simple things like drying technique can also make a big difference. People with fine hair should lift the hair outward and upward as they dry if they want maximum volume. They should also avoid brushing it when wet, as fine hair can break very easily.

Q: What other problems do people with fine hair face? RG: Fine hair can be more prone to damage than thick hair, so those with fine hair need to be careful about over-styling and the use of chemical treatments. Here at Rodney Gentry, we specialize in using products that are kind to the hair, and that nurture it at the same time as coloring it. I don’t believe that there is any place for harsh chemical treatments in a modern salon—they just aren’t necessary anymore. Enzyme-based products can color hair beautifully, and are so much kinder to it than the old peroxide-based treatments. Q: Can you recommend any quick fixes for those with fine hair? RG: Well, a quick trip to Sachi Studios, for one! For those after a quick fix at home, I would recommend always having a deep conditioning masque on hand, ready to be used as a weekly treatment or whenever particularly luscious locks are required. he U.S. beverage market is a $354.2 billion industry, with a majority of it owned by major national brands. Within this market, it takes a certain entrepreneurial spirit to break into the business, one like that of Coco21 CEO Brian Kaplan. Coco21 (www.coco21cocktails.com) is a Scottsdale-born beverage company that offers a selection of vodka-infused coconut waters. Naturally low calorie and gluten-free, Coco21 is a light, unique take on traditional cocktails. “I wanted to create something new and different. Today’s cocktails are often too sugary and super sweet,” Kaplan says. “This product not only caters to today’s health-conscious consumer, it’s also perfect poolside on a warm day”. Offering four flavors, Kaplan has taken a unique approach to market expansion with his startup. “We attend many local events and are constantly doing instore samplings. The key to our success is getting as many people as possible to taste Coco21.” While currently only distributed in Arizona, Kaplan has no doubts about his expansion strategy. “California and Hawaii are next. We plan on making Coco21 a national brand so that everyone can enjoy it, regardless of where they live.”

Where are your favorite restaurants to have a drink and great food? Salt + Lime and Stone & Vine. They have great atmospheres, and I like to enjoy Coco21 at both places. Do you have any favorite local charities that you support? I am currently a major supporter of the Happily Ever After League. This organization was founded to provide support to mothers during cancer treatment. We have an employee of Coco21 whose mother started this charity after her own diagnosis of breast cancer, and it remains near and dear to our hearts. Where in the Valley can people find Coco21? CLEANING UP Kristin Boston on life after La La Land BY ALISON BAILIN BATZ

hile in second grade at Kiva Elementary School in Paradise Valley, Kristin Boston was asked to write a story. “After I turned it in, the teacher called my mother – but I wasn’t in trouble!” Boston says. “She told my mom that I used quotation marks for dialogue, something we were never taught. I just picked it up on my own.” Her love affair with writing only grew from there, earning her degrees in both English and creative writing as well as the opportunity to take screenwriting classes at UCLA. Boston’s writing prowess would eventually bring her to Hollywood, where she worked at Universal Studios on the 1990s classic TV show Quantum Leap and as a writer for Los Angeles’ Easy Reader News. “The only thing missing was home,” says Boston, who was by then a mother of two and ready to make her way back to the Valley. And she would do just that, working in communications roles with the East Valley Tribune, iHeartMedia and the Phoenix Suns before recently taking a position as the director of marketing for Zerorez of Phoenix, an environmentally friendly cleaning company that provides an alternative to harsh chemicals using a revolutionary non-toxic, water-based cleaning agent called Empowered Water. “It’s a dirty job (literally!), but I am so happy doing it – and to be home.”

From Hollywood to house cleaning? Yes! In my role, I get to help develop the strategic direction – the script – for the brand. Between our growth (despite the recession), our corporate giving programs and the unconventional way we clean, there is a lot to write and talk about. Prove it. How about this: Over the next few months, we are bringing in elementary school students from across the Valley for a series of field trips to learn all about the science behind what we do and how we do it. Writing the curriculum is my current labor of love and not that different from being on a sci-fi TV set most days. Any crazy stories from the set? Believe it or not, the crazier stories came while working for the magazine. From covering beached whales to hipster artists to the pingpong champion of the world, every day had a little bit of crazy, mostly in a good way. SO SCOTTSDALE! |

Mark A. Gnirk’s unique style transitions from the bank to the boardroom

M

ark A. Gnirk is a man of many hats: a former baseball pro, president of Executive Council 70, director within Executive Council Charities, vice president of Scottsdale business banking at Wells Fargo Bank, and a fashion-forward family man. “Being part of Executive Council 70 helped influence my style, to be honest,” Gnirk says. “We have a large age range of type A sales guys in the group who are often client-facing daily. Most of the time we all dress the part, and I take my fashion cues from the guys I hang out with.” Even so, Gnirk is known to break some of the unspoken fashion rules for bankers a time or two. “Commercial banking isn’t very cutting edge, so most of my textures and patterns fall in line with my industry,” Gnirk says. “For the most part, my curveball has been my socks (or lack thereof). I have some crazy socks and have definitely rocked the ‘no sock with dress shoe’ look a few times during the summer.” For his everyday business look, Gnirk leans toward shades of blue, or his signature gray Hugo Boss suit paired with a crisp white shirt and a solid tie. “It’s definitely a classic look that works for banking or anything else,” Gnirk says. “And I never leave home without my Ray-Ban sunglasses. I have five or six pairs, and I mix it up here and there.”

What is Executive Council 70? It’s a group of local professionals dedicated to providing volunteers for fundraising activities to invest in impactful youth programs. What is your favorite season to dress for? Winter for sure. It seems like we have two seasons here – winter and hot. It’s fun to be able to wear a sweater into the office. My friend, Geoffrey Turbow (of LevRose Commercial Real Estate), taught me that I can never have too many sweaters! What did you do before getting into finance? I was a professional baseball player in my younger days. I was a pitcher for the Milwaukee Brewers from 1996 to 1998. I had a baseball-related shoulder injury that led me to head into finance, but I had a great run while it lasted.

pril Martinez, owner of the recently opened The Hills Salon & Spa in Scottsdale, has always been a fashionminded businesswoman who focuses on dressing for the day. “My motto has always been dress for success, but also dress for the day ahead of you,” Martinez says. “There are times where you should dress up and show up, but if I’m hanging out with my kids, I’m going to dress comfortably to keep up with them.” Martinez has been in several business fields, including being an esthetician, but owning a salon and spa has always been her dream. The vibe of the salon, much like Martinez’s own stylistic aesthetic, is glamorous and girly. “The Hills Salon & Spa was the perfect thing to get me back into the world [after staying at home with my kids]. I was looking for a space, and this one was perfect to start my dream salon.” As for her favorite fashion pieces, Martinez admits that her style isn’t defined. “Sometimes you have to go with a classic Jackie O-inspired outfit, other times you pick the sexy dress in the closet for that special occasion. Go with what you have, and what makes you feel good that day!” What is one thing you cannot leave home without? Sunglasses! I’m obsessed with designer frames and always have a pair with me. What’s something you wish you could tell your younger self? Embrace your curls! I spent so long hating them and trying to straighten them, but now I love them. I wish I would have embraced them a bit more when I was younger. What is your favorite season to dress for? Whatever the next season is! If we are at the end of spring, I’m dying to wear my summer dresses, and if we are at the end of summer, all I want is layers, layers, layers!

Currently, it boasts popularity in more than 77 countries and is known as a game rich in legacy and tradition. While names such as Argentina’s Adolfo Cambiaso or Nacho Figueras are well-known across the world, one man stands out as our very own American king of the sport. Beyond stunning good looks and natural athleticism, Nic Roldan has become an icon in the international polo circuit and exhibits a rich commitment in making polo a much-coveted sport in the U.S.

Ranked as the No. 1 American polo player in the U.S. and captain of the American Polo Team, Roldan will return to Scottsdale for the third time next month on Nov. 5 to play in the Bentley Scottsdale Polo Championships. Roldan and his team, the Aspen Valley Polo Club, will be defending its title and the Molina Cup in this year’s featured match at WestWorld of Scottsdale Born in Buenos Aries, Argentina, Roldan’s family later moved to Wellington, Florida, the undisputed polo capital of our country. He started playing the high-brow, yet rough-and-tumble, sport that attracts high-end corporate sponsors and wealthy hobbyists, at the tender age of five. A third generation polo player, Roldan has most recently been called the “face of American polo.” With his youthful charm and modern lifestyle, Roldan has been praised for his ability to attract a new generation of polo fans and elicit the interest of national media. “I’m a big believer in making polo a top American sport,” Roldan says. “There are a lot of misconceptions that the

matches are more about a lifestyle instead of an incredibly intense sporting event. It takes an enormous amount of training and preparation for teams to come out on top, and I believe that there is an opportunity to introduce that side of polo to a more diverse audience.” The youngest polo player ever to compete on a U.S. league, Roldan started his professional career at the age of 15. He rose to fame after winning the U.S. Open Polo Championship that same year. He was awarded the Young Polo Player of the Year title, and in the same year he earned a 3-goal handicap. As the leading American polo player with an impressive 8-handicap rating, Roldan has won tournaments on all five continents. Some of his most notable wins include the Copa Camara de Diputados (2006, 80 years after his great grandfather won it) in Argentina, the Australian Open (2005), Sotogrande Bronze and Gold cups (2000) in Europe, and the Highveld Champs (2005) in South Africa. Polo players live a grueling schedule of international travel and daily trainings.

Preparing for the season includes circuit training, stretching, light weights and a lot of repetitions. It’s said to be comparable to high-intensity interval training. “I’m an athlete at heart, and I truly love the intensity that polo offers me as a competitor,” Roldan says. “Imagine trying to maneuver a stubborn 2,200-pound animal down a field to chase a small ball. Add to that four other charging players, at 40 miles an hour, and tell me it’s not incredibly physically taxing. I’ve played every sport imaginable, and nothing is harder than polo.” While hailed as a success on and off the field, Roldan still has lofty goals for the future. He aspires to play in the Argentine Open, claim a second U.S. Polo Open title, add more worldwide polo trophies to his cabinet, and help America reclaim the infamous Westchester Cup. He also seeks to increase awareness and participation for the sport at all levels, attracting a new generation of spectators. While Roldan continues to chase polo glory, he also has a vibrant life off the field. Along with modeling for the

magazine Vanity Fair, his good looks have gained him a place on the list of Town & Country’s 50 Most Desirable Bachelors, as well inclusion in numerous fashion editorials. In 2010, Roldan was selected to teach reality TV stars Kourtney and Khloé Kardashian how to ride polo ponies as part of their celebrated show. He also is currently dating Jessica Springsteen, legendary rock musician Bruce Springsteen’s daughter. Apart from his polo activities, Roldan is an active philanthropist who supports a variety of charities at home and abroad. The two charities he remains most active in are the Kids Cancer Foundation (based out of his hometown of Wellington, Florida) and The Brooke Foundation. The Brooke Foundation is the world’s largest international equine welfare charity, and as U.S. ambassador, Roldan has been fortunate enough to play with various

members of the Royal Family to support their charities. This zeal for giving back has driven him to carefully select what professional appearances he participates in and ensure they benefit organizations that need support.

In line with this, events such as Scottsdale’s own Sixth Annual Bentley Scottsdale Polo Championships, also known as The Polo Party, allow Roldan to support charities while playing the sport he loves. “The Bentley Scottsdale Polo Championships is unique, as it truly has something for everyone,” Roldan says. “There are numerous reasons it’s called the World’s Greatest Polo Party. Scheduled for Nov. 5 at WestWorld of Scottsdale, spectators will be able to see Roldan in action as he takes the field with other notable players in the world of polo. This year’s event is packed with incredible events, including the much-anticipated Cultural Concert, which will include music from the Scottsdale Philharmonic, Arizona Opera and DJ Maestro Hughes, who has performed at the Grammy Awards. Catch Roldan’s signature match at 2:30 p.m., pitting his defending team against Palm Beach Polo Club, with special guest Ricky Cooper, captain of the Wales Polo Team. even years ago, the Arizona Taco Festival began as a humble taco-tasting party on a dirt lot in the heart of Downtown Scottsdale. Today, the 30,000-plus ticketed guest event – now hosted across several acres at Salt River Fields at Talking Stick – has grown to be the largest taco festival in the U.S. and one of the fastestgrowing foodie events in Arizona. aul and Amy Goldschmidt’s upcoming Goldy’s Bowling Bash has been a long-time coming in their crusade to help Arizona’s children. Since beginning his Major League Baseball career with the Arizona Diamondbacks in August 2011, first baseman and four-time All-Star Paul Goldschmidt has considered Arizona home. So when the Goldschmidt’s came up with the idea to have their first event through Goldy’s Fund 4 Kids, their passion to help kids through Phoenix Children’s Hospital (PCH) was the perfect fit.

I used to bowl with my family when I was a kid, and we used to play a lot in high school, but last time I bowled, I wasn’t too hot,” Goldschmidt says. “I thought, I want to do something different to help raise money for Phoenix Children’s Hospital, and I don’t see a lot of bowling tournaments.” This first-ever event, Goldy’s Bowling Bash, will take place on Nov. 10 at Lucky Strike in Downtown Phoenix. After more than four years of involvement with Phoenix Children’s Hospital, Paul and Amy recently became honorary chairs of the Hope Lives Here campaign, which aims to raise awareness and money for the new Phoenix Children’s Hospital Center for Cancer and Blood Disorders. Goldschmidt enlisted the help of some of his famous friends to slip into their bowling shoes and head to the lanes, including Luis Gonzalez, Mark Grace, Jim “Bones” Mackay, Drew Stanton, Dustin Pedroia, Andre Ethier, Brandon McCarthy, Justin Upton, Miguel Montero, Paul Konerko, and David Peralta, with many more planning to attend. Goldy’s Bowling Bash will start at 5:30 p.m. with a cocktail reception and dinner for everyone, along with warmups for the 12 teams and their celebrity captains participating in the tournament. After the bowling action, and followed by a trophy presentation to the best (and worst!) players and celebrity captains, the after-party kicks off with more food, drinks and dancing. And speaking of charities, a portion of the event’s proceeds benefit a nonprofit each year, and this year they will go to Cave Creek Museum. “Last year, we sold over $80,000 in food tickets,” Stein says. “Our town is committed to giving back to the local businesses and community. It’s a win-win.”

ARCHITECTURE + ART: EVERYTHING FALLS INTO PLACE WHEN IT COLLAPSES Scottsdale Museum of Contemporary Art (SMoCA) Opens: Oct. 15 This exhibit is part of SMoCA’s Architecture + Art series, which considers the intersection of art and architecture. It was imagined by Mexico City-based artist Santiago Borja as a response to the Casa Grande Ruins National Monument – the first cultural site in the U.S. to be given national protection and an icon of Native American culture. The exhibit is Borja’s site-specific project in response to the monument and its complex history within the national cultural politics of the U.S. over the past 125 years. It will bring attention to a steel roof that was added to the 700-year-old structure by the U.S. government nearly 100 years ago, and raise questions about how different cultures relate to this archaeological site. It will also consider the culturally different concepts of time, questions of legacy and belonging, technologies, and ideas about the future.

MARGARITA CABRERA: SPACE IN BETWEEN Desert Botanical Garden Opens: Oct. 7 In this exhibit, nationally renowned artist Margarita Cabrera seeks to honor the cultural diversity of Phoenix. She will hold workshops to create community art; soft sculptures mimicking the form of indigenous desert plants will be sewn from recycled Border Patrol uniforms, then planted in terra cotta pots for display in the Desert Botanical Garden’s Ottosen Gallery. The exhibit’s name, Space in Between, was inspired by the term “Nepantla,” which has historically been used in Latino anthropology to describe the feeling of “in between” that is often felt by marginalized cultures. Those who view these sculptures will have the opportunity to observe the immigration stories they represent. The garden’s display will serve as the launch for a national traveling exhibition the following year.

Dragons and Vines: Inlaid Guitar Masterpieces

today’s most accomplished American Indian artists, will display 39 of her works at this touring exhibit, which highlights many of her most notable pieces created over the course of her four-decade career. WalkingStick’s paintings range from abstracts to majestic landscapes and incorporate a variety of different styles and themes, including Native American history, cultural identity and feminism. WalkingStick will be one of the honorees for the Heard Museum’s Moondance Gala Oct. 22. DRAGONS AND VINES: INLAID GUITAR MASTERPIECES Musical Instrument Museum (MIM) Opens: Nov. 5 There’s no doubt that guitars are an integral part of music, both past and present. MIM will celebrate the artistry of inlaid guitars in this ultra-exclusive exhibit – the museum is the only location worldwide hosting it. The exhibit will showcase more than 30 instruments produced by top North American inlay artists and luthiers, including guitars, banjos and one ukulele. These intricate works feature stunning designs of flowers, historic artwork and even autos crafted with a variety of materials such as abalone shells, mother of pearl, gold, copper and wood. In addition to the instruments, museumgoers can look forward to a video component of the exhibit, which will feature interviews with musicians who have played these instruments and the artists who created them.

Bourbon & Bones is new modern, upscale chophouse. As executive chef, Isaac Carter prepares top-quality, wet-aged steaks including bone-in cuts and chops as well as fresh seafood and unique side dishes in an upbeat, yet intimate, setting. You are relatively new to the Valley’s culinary scene? Indeed! I joined Bourbon & Bones’ parent company, Square One Concepts, in early 2016 as executive chef of Crab & Mermaid Fish Shop, which is also in Scottsdale. When the opportunity arose to take on Bourbon as well, I jumped at the chance. Prior, I worked with famed chef Todd English on the original Olives in Massachusetts and its eventual second location at the Bellagio in Las Vegas. There, I also helped open Todd English Pub and Eva Longoria’s Beso. Any memorable moments from those days? We did it all, from strapping flashlights to our foreheads and cooking in the dark for more than 1,000 guests one Thanksgiving when the power went out to setting fire to more than one restaurant, thanks to our preference in using charcoal and woodassisted brick ovens and grills versus a more traditional machine. What can guests look forward to at Bourbon & Bones? The traditional chophouse steaks will impress, but we are also bringing more unique cuts to the table including a tomahawk rib-eye, which is an extra-thick prime rib-eye with some of the rib bone still attached. Similarly, we want to offer modern twists on classic sides, including a play on bacon and eggs. We think guests will also love our tableside hot rock, which will allow guests to cook items like beef carpaccio right from their seats.

RA Sushi’s smoky seasonal showstopper

moke and spice and everything nice ... that’s what fall is all about, right? And just in time, RA Sushi has rolled out a seasonal smoky menu that’s sure to cast a spell over taste buds. “As we began developing our fallthemed mixology program, the idea of smoke just kept coming up over and over. We were inspired,” says Michael Johnson, vice president of operations at RA Sushi. A highlight from the new menu is the seductive Geisha’s Spell. The base of the cocktail is Michter’s Single Barrel Rye, made from select American rye grain that is sheared to maximize the extraction of flavor from the grain. The process gives the spirit spice and pepper notes with hints of citrus, butterscotch and oak. “We combine the rye with a drizzle of sweet honey syrup and a splash of tangy lemon juice to really bring out the citrus notes and balance the flavor profile.” The cocktail is finished off with a ribbon of orange peel and Angostura Bitters, which gives notes of clove and allspice. “We then pour the Geisha’s Spell tableside from a decanter into a hi-ball glass, which has already been infused with smoke to up the wow-factor.” The result: An intoxicated, smoky plume swirling in and above the glass for several minutes, lending an artful, eerie effect perfect for Halloween time. Common Ground Burrata Grassroots Kitchen & Tap

Burrata is one of the hottest food trends in the country, and Christopher Collins, chef and owner of Grassroots Kitchen & Tap is one of the select Arizona chefs who makes it fresh daily. The crafting of this Italian cheese is both a science and an art form. “First, I ladle 190-degree water over mozzarella cheese curds until they become soft and pliable,” says Collins, who stretches and pulls the cheese until it forms a thin sheet. A rich blend of cheese curds, heavy whipping cream and kosher salt is then spooned into the layer of cheese. The outer layer envelopes the creamy center and is twisted securely at the top. Finally, the burrata is immersed in an ice bath until it becomes firm. Grassroots offers Collins’ creamy Common Ground Burrata ($10) as a sharing appetizer with garnishes that hold their own. Tomato jam spiced with Sriracha chilies brightens the plate alongside wild baby arugula tossed in housemade Champagne vinaigrette. Prepared by the Prado culinary team under the direction of Executive Chef Michael Cairns, the Grilled Spanish Octopus ($18), while technically an appetizer, is also fitting as a salad due to its clean, refreshing base of celery hearts that serve as a crisp bed for the tender octopus. “This dish is the epitome of our culinary point of view – to offer seasonal, Spanish-influenced fare for an approachable American palate,” Cairns says. “Our aim is to reflect the unique flavor and heritage of Spain’s Andalusian region while utilizing the finest and freshest local ingredients made available by Arizona’s vast farming community.” The success of the dish starts with the preparation of the octopus itself, which is expertly grilled to seal in flavor while ensuring it retains a tender, never chewy, texture. The octopus is then combined with a locally sourced celery salad that includes Brussels sprouts, which is tossed with housemade red wine oregano vinaigrette and roasted red bell peppers. Pork Ramen Clever Koi

Nosh on hearty Asian-inspired comfort food at this stylish Phoenix eatery serving up the likes of steamed buns, dumplings and flavorful noodle dishes, such as the Pork Ramen ($14.50). Handcrafted by Chef Jared Porter, the ramen’s spicy, “swiney” broth is a two-day labor of love. “It’s so simple, you really have to nail it, so we spent a full year tuning, tuning and tuning until the recipe was just right,” Porter says. To create the soup, Porter starts by charring a bunch of split hog bones on the stovetop, then he transfers them to a stock pot with a mixture of aromatic herbs and oven-roasts them for 48 hours to create a true pork bone broth. After straining the broth and seasoning it with miso and soy, next comes even more porcine decadence. “Next we add Tender Belly pork belly that’s been cooked overnight for 12 hours in an oven, skin on, and then it’s flash-fried so you really get the full crosssection of pork essence; the crispy, bacon-like skin on the outside, then a layer of fatty marbling that’s melted down into the lean protein meat,” Porter says. The soup also features housemade kimchi and an egg cooked for exactly six minutes, so you get both the firm white part and the runny yolk. Garnished with sliced bamboo shoots and green scallions for a little texture and salty brine flavor, the pork ramen is the ultimate comfort food. 4236 N. Smoked Corn Manti

Stock & Stable The perfect pasta dishes need not only come from Italian bistros and restaurants. In fact, one of the best pasta dishes in the Valley is from none other than a modern American gastropub: Stock & Stable. Anything but traditional, pasta never tasted so garden-fresh as with the Smoked Corn Manti ($12), a hand-folded Turkish-style dumpling. While searching for a signature shareable pasta for his new neighborhood hangout, Chef Joe Absolor turned to this pyramid-shaped pasta stuffed with sweet, smoky corn. “I love using corn in unique, off-the-cob ways, like on a pizza,” Absolor says. “So when I came across this Turkish-style ‘Manti’ dumpling with its unusual pyramidal fold, I thought it would be the perfect way to create a pasta dish, but with really fresh, crisp flavors more like a salad than a traditional pasta cooked with heavy butter and simmered veggies.” Starting with a housemade durum and semolina pasta, the dumpling is filled with a smoked corn and ricotta cheese puree, and then topped fresh asparagus, radish and corn kernels. “We also add toasted pepitas versus a more traditional Italian nut like pine nuts, and then I add some feta cheese, which is normally used with salads, but I love how the chunkiness of the feta contrasts with the silky-smooth dumpling filling.” 5538 N. 7th St., Phoenix; 602.313.1001; www.stockandstable.com.

T. Cook’s at Royal Palms Resort and Spa

One of the Valley’s hottest seafood dishes – T. Cook’s John Dory ($38) – is actually not from anywhere near Arizona at all. “The John Dory, my personal favorite item on our menu, is a firm saltwater fish originally from New Zealand,” says Todd Allison, famed executive chef at the Royal Palms Resort and Spa. A mild whitefish, the secret to the John Dory’s success lies in Allison’s careful preparation to ensure that while the outside of the fish stays perfectly crisp, the inside is beyond tender – every bite literally melts in your mouth. “The key is to slowly pan roast the fish along with its accompaniments, which includes braised baby fennel, sunchokes and cipollini onions,” Allison says. “The secret ingredient is barrel-aged sherry bourbon.” An added bonus is that the herbs and even some of the vegetables are often from right outside the kitchen, thanks to the resort’s on-site garden. Allison recommends pairing the John Dory with a glass of Chateau St. Jean Robert Young Vineyard Chardonnay. “The flavors match up nicely with the sharp acidity of the sherry butter sauce, creamy and sweet cipollini onions, and the light hint of anise from the fennel.” 5200 E. Roasted Brussels Sprouts

The Gladly Death by eating your greens? For many Phoenician foodies, veggies are not exactly priority one. But maybe that’s because they haven’t been to The Gladly. If you’re munching on the eatery’s Roasted Brussels Sprouts – served in a generous dollop of sweet corn “grits” – it’s easy to forget all the vitamin K, vitamin C, potassium and fiber you’re eating, and instead lose yourself in the layered flavors and textures. Known for his “well-traveled comfort food,” lovable Valley chef Bernie Kantak’s merging of cultures (and use of a healthy ingredient with the Brussels) hits a high note with this dish. “An Italian grandma and a grandpa from the American South had a baby,” Bernie jokes about the best-selling dish at this Biltmorearea hotspot. And then he reveals a secret: They’re not actually grits. Instead, the base of the dish is white polenta with flecks of roasted corn throughout. The creamy base arrives piping hot and is crowned with crackly roasted Brussels sprouts and shavings of Pecorino Romano. Butternut Squash Cheese Cake Atlas Bistro

Looking for a decadent dessert with “fall” written all over it? Atlas Bistro’s Chef Cory Oppold delivers it in spades with his Butternut Squash Cheese Cake ($9). “This dessert features the best elements of the holiday season and the autumn harvest,” Oppold says. “It is seasoned with cool weather spices, earthy goat cheese and a touch of sweetness.” To create the dish, Oppold slow roasts and then purees a creme anglaise with organic butternut squash from McClendon’s Select, a certified-organic farm in Peoria, Arizona. “We try to keep it local whenever we can, which brings a little something extra to each of our dishes,” says Oppold, noting they also source their goat cheese for the dish from Black Mesa Ranch in Snowflake, Arizona. The dish also features a dried cranberry orange zest compote for tartness. It is then finished with graham cracker crumbles, which give it a deconstructed crust element and add a crunchy texture. Housemade white chocolate semifreddo fills the role usually assigned to ice cream on the dish, and it is all garnished with glazed pumpkin seeds for an added element of autumn. 2515 N. he wild beauty of Olympic National Park, located in Port Angeles, Washington, just a few hours west of Seattle, is perhaps most breathtaking on an October evening at sunset, and with 2016 being the National Park Service’s centennial year, there’s no better time to check it out. The rugged coast – filled with stretches of sand, massive redwood logs and large black boulders – shimmers as the sun’s rays dip behind the Pacific Ocean.

Exploring the Wild Coast Olympic National Park covers nearly 1 million acres and protects an expansive 73 miles of scenic coastline, making it one of the country’s best outdoor playgrounds. Visitors can hike, picnic, go fishing or watch wildlife in the park. The park is unique in that it includes diverse ecosystems, such as glacier-capped mountains, temperate rain forests and more than 70 miles of wild coastline. President Teddy Roosevelt created the Mount Olympic National Monument in 1909. Following a visit there in 1938, President Franklin Roosevelt established the Olympic National Park, which became a UNESCO World Heritage Site in 1981.

here’s something captivating about the gentle flickering of fireside flames and the ambiance that emanates therein. You could even say a fire’s glow is transfixing. In line with this notion, local artist Adam W. Carter has taken fire pits to an enlightened level with his Zen Fire Garden, introducing an interactive, yet meditative, element into the traditional backyard blaze. The Zen Fire Garden was born both out of Carter’s appreciation for the meaning of Zen and the use of fire in his metal and sculpture work. “Fire is an intimate part of my steel sculpture and metal work, and it made sense to merge these two aesthetics,” Carter says.

Yet the garden was designed to do more than provide warmth on cool nights; it also incorporates a personal interaction with fire while encouraging a meditative state. “The intended use is as a fire element for aesthetics and warmth similar to a fire pit,” he says. “Though, it does transcend this idea as it allows adults to interact with and manipulate the fire in a safe manner.” In the center of the structure, where the flames arise, is a soft bed of sand. Akin to a traditional calming Zen garden, you can draw in the sand (using the proper tools, of course). But there’s more: Once a design is drawn into the sand, the physics of the garden allow the pattern to ignite before anything else. What you’re left with is a glowing centerpiece that reflects whatever artistry you’ve scripted in the sand, creating an experience that’s serene and seemingly hypnotic. Like the philosophy of Zen, Carter’s luminous creation and metal sculptures are rooted in balance – the garden, specifically, in balancing form and function. “Balance is key,” Carter says. “As Zen embodies self-control and personal expression, I find that both of these ideas lend themselves to my designs.” Carter’s Zen Fire Garden is a one-ofa-kind creation. he reinvention of Cadillac into a contemporary luxury brand continues with the latest introduction to the lineup with the first-ever XT5, an all-new replacement for the outgoing mid-size SRX crossover vehicle. The SRX was first introduced for the 2004 model year and has been the sales leader for Cadillac. The XT5 is powered by an all-new, 3.6-liter, 310-horsepower V-6 engine. The engine includes cylinder deactivation that allows it to switch down to four cylinders when the vehicle doesn’t need the extra power and can also shut off completely when the vehicle is stopped to save fuel. It’s connected to an all-new eight-speed automatic transmission. This is the only

engine and transmission offered for the model. Front-wheel drive is standard with all-wheel-drive as a $2,645 option, however that is not available on the base trim model (also called XT5); other trim models include Luxury, Premium Luxury and Platinum. Designers at Cadillac have paid special attention to presenting the XT5 with a more sophisticated execution of the exterior design. The grille has a softer look with more rounded edges, and it features the prominent new Cadillac escutcheon. Front LED headlamps and rear taillights carry the thin, vertical look seen on both the Escalade and on Cadillac’s new CT6 sedan. Overall, the look is luxuriously elegant and looks absolutely striking. Like the SRX, it’s still a five-passenger crossover with no options for a third row of seats. Second row seats recline slightly and can slide fore and aft to maximize cargo space or add passenger legroom. Driving the XT5 is a pleasant experience. It feels steady and planted on the highway with excellent handling, minimum body roll on corners, and overall impressive road manners riding on standard 20-inch wheels. The roomier cabin is exceptionally quiet and the ride comfortable. The 3.6-liter V-6 delivers ample power and acceleration with instantaneous power for passing on the highway. If there is one concern that stands out, it’s the rearward visibility that’s compromised with thick rear roof pillars and a very small rear window. However, some help is available with standard blind spot monitoring. From the intoxicating pheromone released by supple ventilated leather upholstery, real carbon fiber interior trim pieces, and real wood veneers, the cabin is sophisticated, upscale and decadent. Overall, the new XT5 feels refined, luxurious and substantial, and it definitely brings back that feeling of driving something special. It’s a feeling Cadillac once had years ago and is now desperately trying hard to bring it back – and seems to be doing so quite well.

Growler USA brings the craft beer movement to High Street BY ALISON BAILIN BATZ

I

n 1984, while in college at California State University – Chico, George Plescia tried his first craft beer from a (then) little-known brewery in the neighborhood called Sierra Nevada Brewing Co. “It was love at first sip, and clearly I wasn’t the only one who fell for them. Today, they are one of the largest independent beer companies in the world,” says Plescia, who would move to San Diego after graduation, just as the city was becoming a mecca for craft beer in the U.S. “It was perfect timing for me, by then a full-fledged beer nerd.” The self-proclaimed beer nerd would spend the next three decades working in politics in Southern California – most recently serving on the California State Assembly – before moving to Scottsdale with his family in 2013. “I was pleasantly surprised at the

beer movement happening all over Arizona, from Four Peaks’ juggernaut success to smaller outfits like Papago and Lumberyard earning accolade upon accolade on a national level,” Plescia says. “I wanted to be a part of it.” Enter Growler USA. Founded in Colorado in 2013, Growler USA is a dog-friendly neighborhood pub with a clear dedication to all things beer, and a special focus on local and regional craft beer offerings hand-selected by the local team. In just three years, the company has already expanded beyond Colorado to North Carolina, Texas, Oregon, Washington and even Hawaii. “About a year ago, we set the wheels in motion to bring Growler USA to Arizona. We opened in late September on High Street, and we boast more than 100 taps, 40 of which are dedicated to local craft beers and breweries,” Plescia says. “In fact, 10 of our taps are reserved for hyperlocal breweries at all times, meaning those that don’t even have distribution yet.” Intimidated by the selection? Don’t be. Growler USA boasts several Cicerone Certified Beer Servers, who are on-hand to help guests select, sip and savor the best beers for their individual palates and tastes. Plescia notes Growler USA also offers several other beverage selections on tap, including wine, soda, kombucha tea and even nitro cold brew coffee from Scottsdale’s Press Coffee, as well as a full menu of lunch and dinner options. “Our menu, as you would guess, features foods that specifically pair with our beers – food you actually want to eat while drinking beer – such as freshly twisted pretzels, brat sliders and even homemade chips from spent grains at a local brewery,” says Plescia, noting that the pub takes pride in using as many locally sourced ingredients as possible, including produce and baked goods. No-Drain Tummy-Tuck Dr. Nachbar has been offering a No-Drain Tummy-Tuck since 2008 to help women who have developed bulging and looseness in their abdomen due to causes such as pregnancy or weight loss. An ordinary Tummy-Tuck requires a drain to remove fluid buildup that would otherwise occur under the tissue that has been tightened.
