In May, we honor our mothers, and for great reason. They play such an important role in our lives; my mother certainly has in mine. This May, and one many years ago, have particular meaning to me. On Mother’s Day 1998, when I was just a child, I gave my mom a poem I wrote as her gift. The poem was titled The Color of Mother and was written in homage to my mom and her qualities, which are universal to all mothers. The poem is still in pretty good condition. In fact, the original copy – which is printed on colorful paper, dated and signed – is in my office. Decades later, this poem has taken on new life as my first published book and the foundation of a children’s book series I created called Color Everything. Published just in time for Mother’s Day this month, The Color of Mother uses the beauty and playfulness of colors in a picture book that is both a sweet story for children and a treasured keepsake for moms of any age. My hope is that it reminds kids they are loved while acknowledging mothers and mother figures for who they are. You can read more about my book – and find out where to purchase it (yes, it’s available locally!) – on page 46. In this issue, we’ve gathered many ways you can honor your mom, whether it’s finding a special gift (page 60), sending her on a luxe sojourn to Sedona (page 102), surprising her with flowers (page 46), or taking her out for a decadent brunch (page 108). Sometimes these seemingly small tokens of appreciation have the most meaningful impact. We’re also spotlighting moms in the community who are making a difference in each of their own ways through things like groundbreaking businesses, overseeing a nonprofit, making special occasions come to life, and helping others look and feel their best. Above all, these women are setting examples of hard work and dedication for their children, which I believe is the most noble job there is. FUNDAMENTALS OF FAMILY As the new CEO of notMYkid, Kristen Polin leads the youth-focused nonprofit into its 20th year of community outreach

With 22 years of experience in the nonprofit community under her belt, new chief executive officer of notMYkid and mother of two, Kristen Polin, is dedicated to educating and inspiring youth and families across the nation. Born in New York and raised in Connecticut, Polin received

her bachelor’s degree in health promotion and disease prevention studies at Ithaca College. From there, she moved to the Grand Canyon State to begin her path of a rewarding career in community service. After earning a master’s degree in education program

Pulse UP CLOSE management from the University of Phoenix, Polin began working as an addiction counselor at Community Bridges, Inc. (CBI), a behavioral health agency in Arizona that provides mental health services and critical addiction recovery. During the span of just one month at CBI, she lost six clients to heroin overdose. “That hit me hard, and I realized where I really wanted to be was on the other side of those doors, raising awareness in the community about addiction and focusing on the importance of prevention,” says Polin, who began sharing the story of her own struggle with drugs and alcohol in high school and building a successful prevention and community outreach program at the agency. “My journey at CBI lasted 17 years,” Polin says. “[At that point], it was time to move on, focus on my family, and explore what else was out there for me.” In 2017, just five months later, Polin met the founder of notMYkid, Debbie Moak, and all of the puzzle pieces fell into place. “Debbie helped me find an organization that aligned with what I love most with this work, prevention and early intervention,” she says. A Scottsdale-based nonprofit, notMYkid utilizes prevention education programs to inspire youth to make positive life choices. With a special focus on behavioral health topics such as drug and alcohol addiction, depression and self-harm, notMYkid aims to empower children and families with the knowledge needed to identify and prevent negative youth behaviors. “I came in at the entry level, worked hard and was given amazing growth opportunities to develop programs, lead dynamic teams, touch all levels of operations, and set on a path to finally have a shot at leading an organization I love so dearly,” shares Polin, who was named notMYkid’s new CEO in February.

Communicating with Care Polin’s everyday interactions at notMYkid are shaped by her roles as a wife and mother. The experience of having two teenage sons, ages 14 and 16, only adds to the accountability Polin feels to practice what she preaches in her day-to-day life. “I’ll never hold back from parents who need to hear about my struggles and fears with raising teenagers,” Polin says. “I have seen the dark side of experimental drug use so often that it’s easy for me to fear that my kids could go down that path. That fuels my passion to closely monitor my own kids, keep the conversation going, and ask them how they are really doing.” According to Polin, this honest and simple approach to effective communication with her children helps her connect with families who share the same concerns. Being transparent about these uncertainties helps others understand they are in good company when it comes to worrying about raising a teenager. “I am right there with them, and I want parents to know they are not alone,” Polin says. “It’s an overwhelming shift and it can be a lonely time. Some parents think they are the only ones experiencing the struggle of raising a teen in this day and age, but it is an entirely new realm for all of us.” While Polin inspires others, she notes that she is inspired by being around people who have the strength to share their own

personal experiences, goals and hopes. In a world where many prefer to showcase the best versions of themselves online, she finds that this brave, refreshing vulnerability fosters an immediate connection with the surrounding community. “I get the privilege of watching this firsthand at notMYkid, surrounded by a group of caring and passionate people who share their stories as peers to help and support others every single day,” Polin says. With notMYkid entering its 20th year, Polin aims to increase community engagement and continue growing the organization’s prevention and education programs. Special efforts will be made in developing even more quality programs in two of their main areas of focus: the opioid epidemic and climbing youth suicide rates. “I plan to look at all the gaps in the prevention continuum to ensure kids are learning basic life skills at school and help students better understand brain health and how to take care of their minds and bodies” Polin says. “Our children are struggling, and we need to make sure they know how to ask for help and who to turn to when they need it. Nancy Mantei takes special occasions to new heights with whimsical designs

With an eye for detail and a heart for helping, Nancy Mantei is in the business of making event magic. Born and raised in Mexicali, Mexico, Mantei met her husband on vacation in Cabo San Lucas before moving to Arizona with their three children. Once in Scottsdale, she nurtured her creative side and perfected her design skills while working in a local flower shop. Mantei holds a degree in fashion design and describes herself as “very, very creative.” She discovered her passion for event design through planning her own children’s birthday parties, which ultimately led her to create her own event design company, Nancy Mantei Events. Since launching her company just over a year ago, Mantei has watched it skyrocket thanks to the power of social media (find her on Instagram at @nancymantei_eventsaz), with her inspiration coming from the satisfaction of her many fans and clients. “I love to hear how much they love my work. It makes me want to be even better,” she says. Well-known for her playful, cascading balloon installations, the wow factor Mantei adds to events is undeniable. Although balloons are characteristically part of children’s events, Mantei brings the wonder of her balloon creations to grown-up affairs by crafting latex into arches, columns and floating party sculptures that often warrant a jaw-dropping reaction from guests. This queen of crafting handles all aspects of event design, including the location, theme, invitations, decor, cake, entertainment and favors. Like her balloons, Mantei’s dessert carts are another specialty feature – and they also double as a drink bar that comes with a bartender service. She loves to take care of the little details and takes pride in listening to her clients’ visions to ensure no two events are the same. “My favorite thing is when my clients take the time to let me know how happy they are, and I get to see a big smile on their face.” Mantei says that her biggest accomplishment was finding the courage to start her own business. She’s currently working on making her clients’ dreams come true as they get ready to celebrate life’s milestones with baby showers, bridal showers, weddings, birthdays and even “just because” soirees. In her spare time, Mantei enjoys spending quality time with her family – she has three children – and enhancing her balloon art techniques.

But Valley moms Bryna Hansen and Jamie Andersen are changing that, playing today’s hottest tracks behind the decks at some of the biggest events in town under their DJing brand, Jyna Music, while juggling eight kids between them. Hansen’s entry onto the music scene began with an absolute passion for music. After a successful career in the fitness industry, she sold her shares of the company she built over 15 years and tuned in to learning the ins and outs of DJing while raising five kids alongside her husband, Max. A career change and a new skillset served as a release for Hansen, but the road hasn’t always been easy. “It has taught me that you have to work hard to be good at something and achieve what you want in life,” she says. The other half of the DJ duo, Andersen, was used to entertaining crowds at Phoenix Suns games and on Royal Caribbean Cruises thanks to a background in competitive dance from a young age. Her passion for performing fueled the wife to Jakob and mom of three boys to pursue DJing after a playdate with Hansen’s kids where the moms came up with the idea to perform as a pair. “Our career has evolved from playing in my home office to private parties, clubs in San Diego, and bigger events including the Bentley Scottsdale Polo Championships and Waste Management Phoenix Open,” Andersen says. Both women draw inspiration from their families and agree that seeing others have a good time because of the atmosphere their playlists create is the best part of their musical pursuits. With a goal of performing at a music festival, the ladies are also committed to giving back to the community any way they can. Hansen and Andersen have both competed in – and won – Dancing with the Stars Arizona, a fundraiser for the National Kidney Foundation of Arizona. In fact, this year, Andersen chaired the event, which raised more than $500,000. Whether they are cheering on their kids’ sports teams or dropping the beat at a trendy event, Hansen and Andersen are committed to finding balance between family, fun, philanthropy and following their passion. What is your most prized possession in your closet? I interned for Johnathan Kayne from Project Runway, and we made this awesome shirt. Tell us about your company. The vision of creating TrueKonnect began 2.5 years ago. TrueKonnect is an app designed to connect clients to their ideal hairstylist or makeup pro and vice versa. The algorithm matches you based on your personal preferences. With the Tinder-like swipe feature, the platform is easy to navigate your matches and quickly find the beauty pro you’re looking for. How do you balance motherhood and your career? I make sure that I always spend quality time with my children. I focus on incorporating my children in different aspects of the business. What is the best part of owning a business? It allows me to have a flexible work schedule so I don’t feel like I miss out on making memories with my children. Advice for other moms wanting to start a business: The time to start will never be perfect, and there will never be enough money. Follow your heart, build your dream career now, and allow passion to lead you to success! How have your children influenced you? I had my first baby at 20, my second baby had to have two brain surgeries, and my third was not planned. The birth of each child and the challenges that came with each child have taught me that no matter what obstacles I face in life, I can conquer, overcome, and come out stronger on the other side. I carry this into all areas of my life. Favorite thing to do with your kids: Eating dinner together while we talk and share our days. It’s the best time for me to bond with my children through open conversation and lots of laughter. What lesson do you hope to pass on to your kids? Instead of chasing money, accumulate skills. They will make you a person of value, and nobody will be able to take them away from you.

Tell us about your company. All Your Ducks in A Row, which I started in 2017, inspires and creates organized design for homes. I believe when we eliminate clutter, we honor our home by creating a space that is welcoming and radiates pride, serenity, joy, relaxation and comfort. What inspired you to open your business? My husband encouraged me to follow my passion for organization, tidiness, style and function. I decided to celebrate my compulsion and embrace it. Now, I consider my need to organize as my passion rather than my compulsion. How do you balance motherhood and your career? The secret is to stay organized – all important business and family events are entered in the calendar immediately. I consider my family time as important as a business meeting. Last but not least, I seek help when needed. What is the best part of owning a business? The ability to follow my passion – time spent on my business does not feel like work. I love having the flexibility to spend time with my family and to balance my work and life. What motivates you? Creating and designing organized solutions that remove clutter and stress and replacing those with order and joy. Seeing the smiles on my clients’ faces when a project is completed is the best motivation. How has your child influenced you? Brooke gives me inspiration through her amazing style and talent for design. Her dedication, hard work, big heart, and sense of humor influence me every day. What lesson do you hope to pass on to Brooke? Follow the Lehr family mission: Be kind to others, be grateful, count your blessings daily, dream big, follow your passion, do your best every day, and never give up. Tell us about your company. BODI is a high-intensity strength and conditioning gym in Old Town Scottsdale. We opened our doors January 2014. Our goal is to make you feel strong, empowered and unstoppable! What inspired you to open your business? It’s been a dream of mine since I can remember. After a many discussions, this vision turned into a real possibility and my husband and I knew it was something we had to try or else we’d always regret it. Over the course of about a year, we began putting things together and saved every penny we had and just went for it. How do you balance motherhood and your career? It really is a balancing act and making sure you prioritize what needs to be done and setting certain times to get it done – especially since Mason doesn’t go to day care yet, so I’m a stay-at-home mom who also runs a business. What is the best part of owning your business? I get to do something I’m extremely passionate about and now that I’m a mom, it has given me the flexibility to spend time with my baby since I’m able to do a lot of work from home. What motivates you? Nothing is better than being a positive change in someone’s life and showing them how strong and capable they truly are. Advice for other moms wanting to start a business: Have a love and passion for what you are starting because it truly is like another child. Make sure your vision is clear. And trust in yourself. What lesson do you hope to pass on to Mason? To work hard and believe in yourself and to never settle for a career you are not passionate about. There are no dreams too big! Most valuable lesson you’ve learned in business: Life is about balance. Even when you love what you do, you need time to just turn off and be present.

Tell us about your company. My idea for developing a high-neck baby bib began in March 2017, when I was feeding solids to [my daughter] Penelope. Her neck was breaking out in a rash and her clothes were getting stained because the bibs did not provide enough coverage. After searching the market and finding nothing, I decided to create my own. What inspired you to open your business? My fiance. When I told him my idea, his immediate reaction was, “Go for it!” How do you balance motherhood and your career? It’s important for me to be fully present with my girls because I know I won’t get these years back. I’ve learned to focus on the business while they are in school or sleeping. What motivates you? My daughters motivate me and keep me going every day. I know they are proud of what I’ve accomplished so far, which makes me want to continue to succeed and grow my business. Advice for other moms wanting to start a business: Know that anything is possible if you have passion and you are willing to put in the effort. Start with a checklist and focus on accomplishing one or two items a week. Before you know it, you will have checked those items off your list and you’ll be ready to get the next set done. How have your children influenced you? Penelope inspired the idea and Isabella offers input on everything from bib design to marketing. I also named two of the seven bibs after my daughters. What lesson do you hope to pass on to your children? Failures serve as motivation to help you move forward, and small achievements lead to big victories. Most valuable lesson you’ve learned since opening your business: When one door closes and someone tells you no, another door or two always opens.

CertiStar has taken food industry and food allergy data and matched it with patent-pending smart technology to create a web platform that helps restaurants manage their menus, recipes and inventory – all while empowering staff to serve those with food allergies. I founded the company in 2017. What inspired you to open your business? Frustration with my own experiences going out to eat. I’m frequently declined service due to my restrictions, and the conversation is almost always a challenge. Once I figured out that there’s a better way to do it, it was almost an inevitability that I had to start my own business to implement it. What is the best part of owning a business? Building something from the ground up that my family can be proud of. And, of course, having the freedom to make decisions as they come up. Advice for other moms wanting to start a business: Don’t underestimate the costs of opening a business. There are so many little line items that you don’t necessarily anticipate. Also, make it something that you’re passionate about doing. How have your children influenced you? When they see a way to do something or figure something out, they jump in with both feet. They are fearless that way. It’s a good reminder to do the same when I’m battling with which way to go. Favorite thing to do with your children: I love playing games with them. Watching how their brains work through the strategy is incredibly cool, and it’s a great way to spend bonding time. What lesson do you hope to pass on to your children? I hope they keep that fearlessness and do what they think is right and charge ahead with it. I hope they don’t let peer or societal pressure make them do something that strays from that path. Most valuable lesson you’ve learned since opening your business: To never be afraid to ask for help.

FASHIONABLE FUNDRAISING Pearce Family Foundation serves the community in style with Runway of Hope

Pearce Family Foundation will bring community outreach to the catwalk with the fifth annual Runway of Hope, held at The Clayton House in Old Town Scottsdale on May 10. Guests at this style-savvy fundraising event will be able to enjoy appetizers and drinks while browsing pop-up shops, participating in a silent auction, and experiencing a themed fashion show. A local charity, Pearce Family Foundation helps the families of children suffering from chronic or life-threatening illnesses. Through multiple initiatives, the nonprofit organization supplies financial assistance for bills in the home, including rent and car payments, so that the families are able to focus on a child’s journey to get well. This year’s Runway of Hope is centered around creating a movement to inspire change, with the decor and fashion showcasing the themes of the five elements: fire, water, earth, space and wind. Just as the elements create change, supporters of the organization are called to make a positive difference in the world around them. In the time leading up to the fashion show, coordinated by Weezy’s Playhouse, guests will be able to peruse pop-up shops featuring Sage Aubrey, Becki Coakley Shoes and Modern Mood Jewelry. DANCING ON THE CANVAS Kris Miller puts abstract art into motion

For Kris Miller, painting is all about “color and paint in motion.” She likes to call her abstracts and figurative abstracts intuitive paintings. “Painting is a discovery process,” Miller says. “I’m curious. I like to make connections between what’s real and what’s imagined, then I obscure those boundaries.” Miller defines herself as a reimagined and repurposed artist, not just a retired educator with degrees in adult education and development and cultural diversity. Though she dabbled in the arts throughout her childhood and college years with dance, piano and art classes, she never considered herself an artist until 1991 when she was working toward her Ph.D. while teaching. “Painting began as self-therapy as I began to put my energy into a new mindset, trying to balance the cognitive and affective parts of my being,” she says. Miller cites some of her influences as contemporary abstract artists like Willem de Kooning and Jackson Pollock and female abstract expressionists such as Joan Mitchell and Helen Frankenthaler. “I particularly like the grit of these women painters who were not intimidated by the dominance of their male counterparts during the ’60s,” Miller says. For Miller, painting is a physical activity, her work made up of large, spontaneous brushstrokes. She paints standing, free to walk around the flat canvas, turn it in different directions, and observe it in different angles and light. Acrylic is her preferred medium because of its quick dry time and the way it flows on the canvas. “I paint fast and deliberate, changing the texture and fluidity of the paint while working on a piece, which acrylic allows me to do,” Miller says. Keeping the process simple, Miller usually begins a new piece with only three colors. Most times, she doesn’t have a firm idea of what she’s going to paint when she begins, noting that overthinking can interfere with her intuitive creativity. She also enjoys letting the viewer decide what her art represents. “My art isn’t about what I paint, but how it makes the viewer feel,” Miller says. “I am inspired by my unending curiosity about the magic of creative potential. All of that energy is transferred to a canvas. It’s about color, movement and rhythm, whether it is an abstract or figurative piece. Each painting will share these elements in some way.” Miller has participated in the annual Arizona Fine Art Expo for the past three years. Her work will be included in two contemporary art shows – Art Santa Fe and Art San Diego – later this year. But if you haven’t been to Washington’s wine capital – Walla Walla, Sunset magazine’s 2018 Best Wine Town – you haven’t really seen all The Evergreen State has to offer. Said to be “so nice they named it twice,” Walla Walla is a Native American term that roughly translates to “place of many waters.” This may seem odd given it’s four hours from the Pacific Ocean. However, the region boasts an abundance of rivers, streams and lakes, notably Bennington Lake with 20 miles of trails teeming with wildlife and ideal for hikers, swimmers and birders. This – combined with vineyards, temperate weather and a killer culinary scene – makes it the perfect escape for spring, and especially during Arizona’s summer.

Where to Stay Area accommodations range from bed-and-breakfasts to full-scale resorts, including one with its own lake. Located on 300 acres along Lake Sienna and tucked between vineyards and wheat fields with views of the Blue Mountains, Eritage – opened in mid-2018 – is the brainchild of fourth generation Walla Wallan Justin Wylie, owner of Va Piano Vineyards. His dream, now realized, was to create an upscale resort to showcase the best the area has to offer all in one picture-perfect package. The suites and newly opened lakeside bungalows boast private patios, fireplaces, soaking tubs, L’Occitane products and views for what seems like miles, though downtown is just 10 minutes away. Lake Sienna, just shy of 80 degrees in the spring and summer, offers swimming and paddleboarding, and there is also a private pool for the use of resort guests. Dining, thanks to James Beard Award-winning chef Jason Wilson, is similarly special as he and his team designed the Eritage restaurant menu to reflect the history of the area and honor the providers of local ingredients including regionally grown produce, meats and game, dairy and other artisanal products.

Dining Musts Beyond Eritage’s inspired offerings, Walla Walla is a playground for the palate. Like Eritage, Walla Walla Steak Co. and Crossbuck Brewing opened in 2018. And like Eritage’s restaurant, each are focused on transporting guests on a culinary journey through Walla Walla – doing so in an area literally know for transportation. Each space was developed in what was once the local train depot, which served for generations as Walla Walla’s “front door” for visitors. Keeping that tradition alive, each venue is warm, welcoming and delicious.

Walla Walla Steak, a traditional steakhouse with all the cuts of meat and a la carte dishes one would expect, cleverly weaves in farm-to-table freshness with produce and USDA prime and choice Angus beef from Washington farms nearby. The bar is a hot spot for both locals and guests alike, with on-trend cocktails and more than 40 wines from the area. Crossbuck Brewing is a taproom that brews all of its beers on-site, each one telling a unique story of the brewer, the season or the Pacific Northwest in every sip. They use only local hops and barleys and designed the menu to pair with the beers while satisfying even the most discerning of taste buds at lunch and dinner. Another culinary highlight is Waterbrook Winery. There, chef de cuisine Karla Wilsey utilizes ingredients from their garden and surrounding farms to create incredible farm-to-table fare in true wine country tradition.

Wine Offerings There are more than 950 wineries in Washington Wine Country, which has 14 distinct growing regions with 120-plus in Walla Walla alone. A Wine Enthusiast darling, Long Shadows Vintners is a must-taste, not to mention a must-see thanks to its Chihuly Tasting Room. The winery’s owner has been friends with world-renowned artist Dale Chihuly for over 30 years. As a result, Chihuly installed several pieces in the tasting room – including a stunning chandelier – for guests to enjoy as they sample the ultra-premium wines. Just as iconic is L’Ecole No 41. This Wine & Spirits magazine Top 100 Winery of the Year 14 times over is located in what used to be a schoolhouse dating back to 1870. The tasting room itself is located in one of the original classrooms, which has gorgeous modern touches as well as the original chalkboards, several fixtures and moldings. Speaking of class, Northstar Winery offers a hands-on education in wine via its interactive blending experiences. After sampling varietals, guests use beakers, graduated cylinders, and other winemaking equipment to make their very own Northstar blend to take home. For those who love tasting from the barrel, don’t miss Saviah Cellars, which features a walking tour and behind-the-scenes look at winemaking firsthand, not to mention the chance to barrel sample along the way before sipping on current releases. And, of course, those seeking a “green” option in The Evergreen State will want to visit Pepper Bridge Winery, which is Certified Sustainable and was the first state-of-the-art, gravity-flow facility in Washington, complete with subterranean caves. Beyond the vineyards, there are also a handful of amazing tasting rooms in Walla Walla, notably Result of a Crush, whimsical with wines crafted by women, and Sleight of Hand Cellars, which has 2,000 vinyl albums and turntables spinning them from open to close. In 1804, Barbe-Nicole Clicquot Ponsardin became a widow, or “veuve” in French, finding herself in control of a company with vineyard holdings. Rather than sell the vineyard, Madame Clicquot secured funding and invested in the research and development of Champagne. The result: Veuve Clicquot. Two hundred years later, it is still among the most popular Champagne houses. Today, women continue to take the winemaking industry by storm with award-winning options – here are some standouts.

Under the direction of executive chef Dom Ruggiero (formerly of Chelsea’s Kitchen) and Charles Barber (longtime bar manager at Zinc Bistro), Hush Public House, which opened in early 2019, features new American shared plates using locally sourced ingredients whenever possible. The shining star of the Halibut Crudo ($15) comes in daily from Chula Seafood. Ruggiero slices it into sashimi and pairs it with a shaved local fennel that has been marinated in lemon juice and olive oil for a fresh acidity. He tops both with Maldon sea salt then plates it with citrus – often oranges and grapefruit – procured at a farmers market or from his garden. The dish is completed with Fresno chilies that have been pickled using salt, sugar, red wine vinegar, cumin, mustard seeds, thyme and peppercorn, and it’s garnished with chives and fennel fronds. Celebrate Aperol’s centennial in true Italian style at Nonna Urban Eatery

Did you know that 2019 marks the 100th anniversary of Aperol, the vibrant orangered Italian apertif? “The seeds of the Aperol Spritz cocktail were actually sewn sooner – after the Napoleonic Wars in the 1800s,” says Valentina Huerta, who owns Nonna Urban Eatery with her husband Gian Franco Brugaletta. “During that time, when AustriaHungary occupied Northeastern Italy, they mixed Italian wine with a spritz of water and called it a Spritz.” Over time, the water was replaced with sparkling water and wine gave way to wine fortified with a liqueur. “Aperol, which is slightly sweet and slightly bitter, was invented in Padua, Italy, in 1919 and showcased at the Padua International Fair,” Huerta says. “Soon after, it was added to the cocktail and the Aperol Spritz was born.” Dedicated to honoring all things Italian, Nonna – “grandmother” in Italian – pays homage to several classic Italian cocktails on its menu, including the Aperol Spritz ($12). The fruity beverage features equal parts Aperol and Naonis Prosecco Spumante Brut, an Italian sparkling wine with flavors of green apple, nectarine and pear. “Prosecco is to Italy as Champagne is to France, for those unfamiliar,” says Huerta. “We love Naonis because it has tiny bubbles, which lends to more of a fizzy look and taste than other brands.” A spritz of soda water is added, and then the cocktail is poured into a wine glass with ice and a freshly cut orange slice. “It looks like sunshine in a glass and tastes refreshing, slightly sweet, and as crisp as a warm spring day,” says Huerta, noting that the cocktail is only $5 on Wednesdays. CHEF CONVERSATIONS In the kitchen with Ce Bian of Roka Akor

Chef Ce Bian is the corporate chef for Roka Akor, overseeing the restaurant’s culinary trifecta of sushi, seafood and steak in Scottsdale and five other locations nationwide.

How did you first make your way into the kitchen? I was born in China and raised in London, where I spent much of my youth working in my family’s restaurant. I attended Wales University to study business and finance, eventually earning two bachelor’s degrees and a master’s degree, but worked in kitchens to pay for my education throughout. Degrees in hand, I ultimately decided to make cooking my career, surprising many. Tell us about your culinary background in England. In 1999, I got my start at Smiths of Smithfield in London, working under celebrity chef John Torode. In 2002, I began working with Colin Clague, a similarly high-profile chef known for Japanese cuisine, and then a who’s who of talent including Nic Watt and Yoshi Muranaka, all in London. How did you make your way to Arizona? I always knew I wanted to explore the culinary world in America. In 2008, Roka Akor came calling, offering me the chance to move to Scottsdale to help open the concept. I came here in October and fell in love with Arizona. Don’t we all in October? What makes Roka Akor special? The robata grill allows us to cook using authentic Japanese techniques over charcoal, which makes so many of the flavors in our dishes distinctly Roka. In addition, the Kobe beef that we use is particularly special. We are proud to hold four of only 30 U.S. licenses to source Kobe from Japan. The buttery, rich flavor is completely unique to the Japanese Kobe. What do you recommend ordering? If your first time, order omakase, which means “to entrust the chef” in Japanese. The Sicilian Baker Cannoli Bar & Market is making the Valley a little sweeter

It’s safe to say the Maggiore team has been busy. The Italian-bred, family-owned restaurant group, headed by chef Joey Maggiore, has long been known for Valley staples Tomaso’s Italian Restaurant in Arcadia and Tommy V’s Urban Kitchen in Scottsdale. But in recent years, the Maggiore Group has been rapidly expanding, opening Tomaso’s When in Rome in Scottsdale, The Sicilian Butcher in North Phoenix and several Hash Kitchen locations across the Valley. Showing no signs of slowing, Maggiore partnered with his wife, Cristina, and business partner Flora Tersigni to open The Sicilian Baker Cannoli Bar & Market in early 2019. The concept, located next to The Sicilian Butcher, features a build-your-owncannoli bar, which is the first of its kind in the Southwest. “It features 10 different flavored creams from which guests can choose, including chocolate, vanilla, strawberry, lemon, pistachio and espresso,” Maggiore says. “For traditionalists, we will – of course – also feature the best standard, rich filling they have ever tasted.”

Guests will also be able to customize the size of their cannoli, with both standard and flavored shells offered up to a full foot-long option. Toppings run the gamut from Luxardo cherries, Italian confetti and chocolate shavings to candied almonds, preserved fruits and Nutella. In addition to cannolis, Maggiore commissioned his cousin Giovanni La Rosa, a master pastry chef from Sicily, to develop Sicilian pastries and other seasonal desserts. Guests can expect a variety of options, including cassata, which consists of round sponge cake moistened with fruit juices or liqueur and layered with ricotta cheese and candied fruit; sfinci, which are Italian doughnuts filled with cream; and Italian cookies. “A true Italian-style market as well as dessert mecca, customers are also able to purchase fresh pasta by the pound, homemade sausages, and imported cured meats and cheeses,” Maggiore says. The 1,400-square-foot space was designed by Cristina and brought to life by JTA Interiors in Northeast Phoenix. The floor stands out upon entry with stark black porcelain tiles that contrast flawlessly with the off-white brick walls and rustic sliding barn doors throughout. The lighting is a particular delight, as fixtures resembling whisks are a perfect complement to the quirky yet modern rolling pins that hang from the ceiling. “Our hope is that our guests will walk freely between The Sicilian Butcher and The Sicilian Baker as one would walk through the markets and bistros in Sicily,” Maggiore says. “With The Sicilian Butcher boasting a similar build-your-own concept, albeit with meatballs, we also hope to, together, be the perfect stop for busy parents on the way home seeking something unique for the family each night.” The Sicilian Baker Cannoli Bar & Market, 15530 N.
