T

he impression is clear. The impact of the pandemic was disruptive upon arrival, but its departure will instead be soft, diluted, subdued and almost ignored. It is still too early to say it’s over (perhaps it will never really end) but the effect of the new openings on the tourism industry is exiting. This June, most airports are full. Airlines are rushing to put planes and staff back into service. Hotels are with pre-pandemic occupancy rates and often fully booked on weekends. After several false starts, the desire to travel has really exploded. But the rules have changed. It is no longer always true that by booking in advance it is possible to save money: airlines allow date changes with greater flexibility; more and more hotels offer the best price guaranteed on their site. And then the destinations: among the latest to take off we find Africa and Australia; Europe is going very well; North America is also chosen; a little less has to be said for Central and South America. In short, an almost normal summer awaits us. Let’s use it wisely.

The chiseled and effective menu of the starred restaurant judiciously follows local flavors, the seasonality and the dialogue with the producers. The result is a jewel that chef Filippo Saporito continually perfects. Whether you prefer à la carte or opt for one of the set menus, the masterfully offered experience combines substance, contrasts, great delicacy in the choice and fusion of flavors. The result is a complete immersion in the world of chef Saporito. In a journey among the peaks of taste there is no shortage of top dishes for inventiveness, textures, combinations and intensity. The first we indicate is the sublime Terrine of Livers, Colonnata Lard, Dried Figs and Crème Caramel - an emblematic dish of the chef in the menu since 2004. The second is the enveloping Scorzonera Pigeon, Carrot, Fir that stands out for its technique and refinement. Impeccable is the dining room service that accompanies - supported by the reasoned cellar - the various stages of our experiential journey into gastronomic culture. In La Leggenda dei Frati, Filippo Saporito, in fact , designs a fresh and modern cuisine, close to the territory, with exciting and successful creative reinterpretations. 24

S

trategically located in the heart of Genoa, a stone’s throw from the Palazzo Ducale and the Carlo Felice theater, Hostaria Ducale is undoubtedly the emerging restaurant in the city and, in our opinion, really worth a visit. The owner Enrico Vinelli has diffused class and aesthetic sense to create a refined environment, with soft lighting and elegant well-spaced marble tables to give intimacy and create a relaxing atmosphere. The mise en place is no exception with the elegant crystal glasses in evidence. The young staff are well trained and help guests to feel pampered, relaxed and at home. The menu offers an innovative experience, with international influences and an eye on tradition. Young chef Daniele Rebosio has gained experience at the highest levels over the years spent abroad, from Alain Ducasse in France and Ferran Adrià in Spain, as well as from Bartolini and Oldani in Italy. His is an elegant cuisine, but always in season with few chosen fresh ingredients certified by the production chain. The tasting menu is definitely the best experience to savor the chef’s cuisine in its nuances. It is a pleasure to be carried away by this five-course sensory experience, balanced and beautifully accompanied by an excellent selection of wines and spirits. Among the dishes we remember a delicious Risotto Riserva San Massimo, smoked eel and purple cabbage, as well as Cuttlefish, hazelnuts and bergamot with black garlic bagna cauda A continuous search for the best products of Liguria and combinations with the cuisine of the world make the Hostaria Ducale an essential destination in the panorama of Genoese restaurants. A new cooking school will also shortly come on the scene. We are already curious to get to know it.

Piano 35 Torino

T

he verticality of the Intesa-San Paolo skyscraper on top of which we find Piano35 restaurant. The unique view of Turin. The play of light inside a room conceived as a patio surrounded by an exuberant vegetation. These unique features immediately prepare those who undertake the sensory journey proposed by Piano35 in the best possible way, escorted by an attentive staff from the moment of their initial welcome. The remarkable gastronomic experience orchestrated by chefs Marco Sacco and Christian Balzo revolves around three tasting menus: “Piemonte”, “Giro d’Italia” and “Piccolo Lago a Torino”. The code of taste that supports them thus leads to excellent dishes in terms of technique, raw materials, temptations and flavors. We choose the “Piedmont” menu. Here the fruit of the great revisited Piedmontese tradition arrives at a remarkable synthesis sprouted from a highly effective personal touch that never betrays the underlying identity of iconic dishes, starting from veal with tuna sauce. The mastery of the technique allows, in fact, to give shape to courses of a high level which, accompanied by a beautiful aesthetic, do therefore not fail to amaze the palate thanks to their perfect counterpoint of flavors and textures. Classy service, attentive to every detail, perfectly accompanies the journey of taste through a balanced itinerary which, at the end of the experience, is totally convincing. 28

Nevertheless, it is a destination for celebrities and influencers of proven fame such as the Ferragnez. The powerful seduction of the estate lies in its understatement, in being deliberately secluded, ready to be “discovered” and magically appear to those who really want to have a relaxing stay in the name of tranquillity, health and good food. Just as the Guffanti family, owners since 2007, strongly wanted: a relais that was an expression of the family business both in the products and in the management. It is no coincidence that the eldest son Adriano manages the farm, while the sisters, Elisabetta and Arianna (above), manage the relais. 58

Speaking of food (but also health), the new Chef Salvatore Musso, to create the dishes on the menu in the Quercus restaurant, mostly uses the products of the property, integrated with the excellences of the area, chosen from small family businesses run by enthusiasts who produce cheeses, meats, fruit and vegetables as they were used half a century ago. The creations proposed on menu tell the story of the territory but also the seasonality and identity of the estate - a choice that does not limit the creativity of Chef Salvatore who manages to enhance these products, even graphically, with highly suggestive dishes, always well “presented” by the Restaurant Manager Domenico Abbruscato. 60

Great attention is paid to wellness. The spa, the “ Wellness Farm”, with its 1500 square meters, offers a sensor y awakening with a path that includes hydromassage, chromotherapy, a Finnish sauna, herbal sauna, Turkish bath, emotional showers and a Kneipp path. An itinerary that has recently been integrated with the bioenergetic wood of 13 hectares that extends behind the relais. 62

Of course, at the opening the owners had not yet thought of enhancing the wood to make it a bioenergetic path. However, the meeting between the Guffanti family and the bio researcher Marco Nieri (the creator of Oasi Zegna, the only other bioenergetic forest in Italy) gave birth to this project. It’s all a matter of energy and electromagnetic fields which, like us humans, plants also produce. These fields, which are measurable among other things, can have a beneficial effect on certain organs of the body. It is sufficient for us to position ourselves in order to be crossed. Nieri has identified 40 trees that he has numbered, creating a complete itinerary of suitably positions. One morning we followed the path accompanied by the guide, stopping at various points (not all), sitting down and offering our body to the beneficial propagations of the chosen trees. We spent two long hours (that could have been even three or four given the psychophysical benefits), experiencing these natural properties. In my own case, many more psychic properties were of interest since I am already used to a great deal of walking. It is difficult to say if the energy of the chosen trees has “ been beneficial for us”, given the limited time, but also just discovering the sensitivity of a plant, synchronizing breath and heartbeat, freeing the mind from thoughts and, above all, being separated from the trappings of information technology did us a lot of good. We then finished the experience with a delicious picnic in the shade of a centuries-old chestnut tree - no. 19 of the map - with a fence behind it that separated us from Switzerland. In short, you may or may not believe in the benefits of the magnetic fields of plants, but they certainly have a positive effect on us. Just think of how much we like to take a walk in the green. Think about the whole tradition of the garden: from those of the Romans, to the medieval hortus conclusus, to the Italian and French landscapes, or the romantic gardens. There must be a good reason for all this love of plants - especially not fruit-producing - and at the Annunziata estate they have understood it. 64

ying gently along the Swiss shore of Lake Geneva, the quiet tourist destination of Montreux Riviera (Montreux, Vevey and Lavaux) is one of those lucky places where scenic beauty intertwines with the call of history. Recalling the past of the place is the medieval castle of Chillon, erected on an isolated rock. One&Only Royal Mirage The Palace

even Bedouins with eight camels welcome guests upon arrival reminding about the story behind the resort name. The property is made up of three different hotels united under the One & Only brand and the Royal Mirage name. And it is really a “royal mirage” that presents itself to those who cross the threshold of the gate. Precious marbles, rare stones, bas-reliefs and precious woods. All framed by lush gardens overlooking Palm Jumeirah. There are rooms, suites and one private villa in this large complex, where an army of gardeners is always working to keep the large green spaces in perfect condition. Tubs and spouts alternate in the various courtyards around which the complex is articulated. In the interiors the gilded stucco decorations dominate and the choice of fabrics was executed with attention. The décor is reminiscent of the Ottoman period with Moroccan influences. 90

Istanbul is the place where the West ends and the East begins but also where West and East meet. A historic center protected by UNESCO, a natural canal, two banks and two continents. No, it’s not what we all have in mind. It’s not the new terminal, but it’s still welcoming. At the Business Class desk there are only two couples in a row so check-in passes in no time. After the security and passport checks we are in the international area. A stop in the lounge (shared with other companies for which we have been given the invitation) then we head to the gate. We go up last to avoid the crowds and we are greeted with attention by the crew who escort us to our seats. An orange juice, a warm cloth, the sanitizing kit, the meal menu and the doors close. We leave the ramp on time. As soon as we are at cruising altitude, breakfast is served. We choose an international-Turkish mix: fruit salad, strawberry jam from Bodrum, farm butter from ra n mele e i ka ar c eese acc mpanie sa ee spinac an

Turkish Do & Co The on-board menu, as well as the entire concept of on-board gastronomy (and on the ground in the lounges) is designed by Turkish Do & Co which is a joint venture between the airline and the German company Do & Co active in the world of catering (on the ground, on board and in airport lounges), but also known for organizing events and hospitality. The company has introduced, among other things, the “Flying Chef”, a service described in the previous pages. All dishes are cooked by the company (not just assembled) using the best and freshest ingredients and, obviously, in compliance with all international hygiene standards. The menus change on a weekly basis and depending on the season. Special menus are available on request upon booking for passengers who have special dietary needs for health reasons or personal beliefs.

Business Lounge Many destinations from a new generation airport. The passage to Istanbul Airport, strategically located between East and West, is an experience in itself. For the business class traveler, the effect, of course, borders on perfection. Amazing. A total success. Innovative. Serdar Uzuntas Serdar is one of the most international Turkish fashion designers. His relations with Milan and London take his creations across the border. In 2006, Serdar moved to London to study at Central Saint Martins. The spring-summer 2022 collection is characterized by informality declined in the colors of white, blue and olive green. Another distinctive element is the leopard-foot print fabric, rarely used in men’s garments. The designer continues to travel and work between Istanbul, Milan and London, while he develops a large private clientele of actors, producers and musical artists.

The famous sweets can be tasted all over the Middle East and in Central Asia. Çırağan Palace Kempinski

T

he name of the palace derives from the term Çerağan which in Persian means “flashes of light”. At first it indicated the parties that were held in the place, precisely the Çırağan Festivals.

Sultan Mahnut II rebuilt the area which was then equipped with a mosque and a school. He demolished the villa that was there to build a first palace. In 1857 this too was demolished and there was talk of a fantastic new palace which was finally finished in 1871 and became the residence of Sultan Abdülaziz. In 1909 it was chosen as the seat for the new parliament. Only a year later the palace was partially destroyed by a great fire. Starting in 1930, the idea of a hotel emerged. A project that was only realized in 1992. The fantastic view of the Bosphorus (located on the first floor of the historic wing of the hotel) does the rest. There is also a new Italian restaurant that we did not experience, the Bellini Pasta & More. Finally, the Sanitas Spa is an essential destination for those staying at the hotel. It has an authentic Turkish bath, treatment rooms, gym, indoor pool and a fantastic outdoor pool with an infinity edge that gives the impression of being immersed in the Bosphorus. The history of the Castle - under which spectacular medieval cellars are excavated - has been intertwined with viticulture for centuries, since wine was produced from its vineyards since the thirteenth century. Giacomo Casanova, who was a guest there, appreciated the wines, defining them in his memoirs as“of excellent quality”. Among the wines produced we find two excellent bubbles, Amadeus Brut Millesimato and Perté Ribolla Gialla. The Amadeus, an elegant Classic Method of great character, is dedicated to Amadeus Mozart. Its very fine and persistent bubbles make you dream as does the music of the great composer. Very fine and elegant perlage, a persuasive and articulated aroma from floral to citrus on a mineral background. It stands out for its fullness and richness of the structure, combined with a fine savory-salty palate with a pleasant acid nerve. A wine to celebrate, but also to best accompany raw seafood, shellfish, refined finger food, medium-aged cheeses and delicate white meats. Its name is linked to the history of Castello di Spessa, where Lorenzo Da Ponte, the well-known librettist of Amadeus Mozart, was also a guest. No less interesting is the Perté Ribolla Gialla Charmat Method sparkling wine, whose grapes are pressed with a soft process to preserve the integrity of the skins. Straw yellow color, persistent perlage, fresh and delicate palate, it is an excellent aperitif wine and goes well with raw fish, pumpkin risotto and fresh cheeses. www.castellodispessa.it
