PAY THEM A VISIT… National Trust hot spots, Cragside and Wallington, are less than half an hour away, providing couples, groups and families with acres of gardens, woodland, lakes and rivers to enjoy. Kielder Castle and Kielder Observatory, which is hosting special Christmas-inspired stargazing sessions from 21-23 December, can also be found nearby. For those in need of some post-walk pampering, Harwood
wildlife (look out for kingfishers and red squirrels) and stretches over three kilometres, or take advantage of its many guided paths and enjoy a mini adventure of your own. Your Christmas survival guide Top tips to help keep stress to a minimum and stop that festive feeling from fizzling out… Let go of the pressure
Embrace the madness
Many of us face an overwhelming number of demands during the festive period, with parties to attend, friends to meet up with, shopping to do, family to see and children to entertain - and that’s all before Christmas Day has even arrived. If you find yourself in a fluster, it’s worth remembering that you’re under no obligation to do everything. Sure, presents need to be bought. And yes, friends and family have to be seen. But neither have to be done all at once, or even squeezed into the last week or two before the big day. Start early and schedule a few shopping trips in November, try your hand at late night shopping in December to avoid the crowds, and keep a diary to remind you of the social gatherings you actually want to go to, with friends you actually want to see. Focus on the things you really want to do - be ruthless!
Invest in some me-time
One of the many great things about Christmas is the fact that you’re supposed to kick-back and relax (who knew?). Should you be lucky enough to get a couple of days - or even weeks - off work, take advantage of this time by scheduling in a bit of R&R. Book yourself in for a Christmassy spa day, curl up on your own with a festive film and glass of wine, or set a Sunday aside for lunch and a long, relaxing walk. Spending quality time with your loved ones, as well as stealing any quiet moments you may get for yourself, will not only lift your spirits, but really make you feel like you’ve spent your precious time off wisely.

Mountains of presents to wrap? An entire house to decorate? Tons of people to cook for? We know the feeling. Sadly, many people will try their hardest to resist the chaos, living from list to list and shopping trip to shopping trip, often resulting in them feeling ten times more stressed and missing out on all the good stuff the Christmas season has to offer. Our advice is simple: try to remain organised, but don’t forget to embrace a little of the festive madness now and again. No time to dress the tree? Let the kids take control and create their own masterpiece. Can’t find the motivation to go food shopping? Hit the shops when the aisles are crammed (adrenaline will lead the way) and bring along your most organised friend for support. You’ll end up laughing about it in no time and having heaps more fun as a result.
Find your inner-child
There’s nothing quite like seeing a child enjoy Christmas. From the minute they arrive bouncing on your bed in the morning, asking if Santa’s been, to the minute they crash out in a sugar-induced coma at night, they really treat the day full-on. It’s heartwarming to see and so many of us could do with taking a leaf out of the little peoples’ books. Our tip is to try and enjoy the day moment-by-moment: write your own letter to Santa with the kids, allow yourself to be caught up in the excitement of opening presents, blast cheesy Christmas songs from your kitchen and wear your paper hat with pride around the table.

Stick to your guns
People become sentimental at Christmas. How many times have you heard friends and family say things like “just make amends and move on, it’s Christmas”, or “Christmas is the time to forgive”? It’s all good advice in theory, but if you’re not ready to let go of old hurt, then don’t. It can take more than fairy lights and tinsel to erase relationship woes and family struggles, so don’t succumb to the pressure of feeling that all has to be forgiven and forgotten, just because it’s Christmas. If you’re feeling far from warm and fuzzy inside when it comes to certain relationships, just surround yourself with those who truly matter.

Florist with flair, Victoria Forshaw, shows you how to create your very own Christmas wreath at home, in ten easy steps ’Tis the season to get creative! While shopbought decorations can look gorgeous, a sprinkle of Christmas DIY around the house is a great way of getting your home looking fabulously festive and individual. Personal touches make all the difference, so dig out your tools and have a forage around the garden - or even your local park - to get inspired. “Christmas wreath making is a great excuse to meet up with friends and family and get creative,” says Victoria. “There really are only
a few steps to master and then you can be as imaginative as you like with your design. “Whilst traditional designs always look beautiful, I’d always encourage people to add a little more of their personality to their handy work. “Whether you’re a keen cook, or a great knitter, using unusual materials such as fresh herbs or even balls of wool, will make your wreath truly unique. Don’t feel limited by baubles and tinsel; raid your cupboards and see what you can come up with.”

Secure your reel wire to your wire wreath ring.
Repeat the process all the way around the wreath ring.
As this is an open design with some of the moss base visible, group birch branches and pussy willow together as desired.

Add pine cones and baubles as desired, again attaching them with florist’s stub wires.

Take a good handful of sphagnum moss and begin binding it to the wreath ring.
When you reach the end, take the reel wire around one more time to make sure all of the moss is securely bound to the wreath ring.
You want to see some of the moss in the final design, so remember to introduce the green bun moss now and again.
You can now begin to bind your decorative materials to the base in exactly the same way.
Add gold-painted artificial ferns and secure them to the design using florist’s stub wires.
Step 10
Finish by adding pink baubles and lace ribbon with long tails, for a vintage and feminine finish.

Christmassy Cranberry Muffins
These sweet little saviours are the perfect pick-me-up on a busy Christmas morning. Fluffy and bursting with festive flavour (we advise adding a pinch of cinnamon to your flour for an extra Christmassy kick), youngsters and grown-ups with a sweet tooth will love them. INGREDIENTS 100g bran 300ml milk 300g T55 flour 2 teaspoons of bicarbonate of soda 2 teaspoons of baking powder 3 free-range eggs 300ml vegetable oil 245g caster sugar 2 handfuls frozen cranberries METHOD Mix bran and milk together and leave to one side Whisk oil, sugar and eggs on a medium speed until combined Mix in flour and raising agents, followed by the oil, sugar and egg mix Fold in two handfuls of frozen cranberries Bake at 170C for 22 minutes until golden brown Leave to cool for 10 to 15 minutes

Dust with icing sugar, or serve with a dollop of brandy cream

Salmon & scrambled eggs
A fancy favourite that will make Christmas morning feel extra special. Mix it up by swapping smoked salmon for succulent fillets and serve with a celebratory glass of Buck’s Fizz. INGREDIENTS 2 fresh salmon fillets 6 large free-range eggs 2 slices of wholemeal toast A pinch of sea salt 1 teaspoon of ground black pepper 1 lemon 30g butter METHOD Pre-heat oven to 160C Loosely cover salmon fillets in foil and cook for 18 to 22 minutes Melt the butter in a saucepan over a moderate heat until foaming Whisk eggs in a bowl, before adding to the saucepan Stir eggs continuously until they reach your desired texture Toast bread and add lashings of butter Season eggs to taste and pour over toast Add plenty of black pepper and a squeeze of lemon before serving

Kedgeree & poached eggs
This zingy and slightly spicy dish is guaranteed to warm up your Christmas morning. A great one for grown-ups and adventurous young cooks to try. INGREDIENTS 4 shallots 2 cloves of garlic Thumb-sized piece of ginger Half a teaspoon of cayenne pepper Half a teaspoon of nutmeg 2 teaspoons of turmeric 250g basmati rice 120ml of water 150g smoked haddock 1 teaspoon of milk 2 large free-range eggs METHOD Sweat shallots, crushed garlic and ginger in a pan until soft Add cayenne pepper, nutmeg, turmeric and cook for a further five minutes Add water to the rice and cook until there is very little liquid left Add 150g of smoked haddock and the milk, before stirring gently until fully combined Poach eggs and plate up

Season well with salt and pepper Place the bird in a large roasting tin, breast side down, and seal the tin with foil After a hour, remove the turkey and foil and turn over Place the bird back in the oven and re-cover with foil Remove the foil for the last 30 minutes of cooking so that the skin can brown
METHOD Pre-heat oven to 190C (fan 180C/gas mark 5) Loosen the skin of the turkey neck and, using your fingers, smear softened butter under the skin, across the breast and over the legs

Nicholson’s Goose
Cooking a goose on Christmas Day may sound daunting (and perhaps a little old-fashioned), but it’s a great way of guaranteeing juicy meat and the crunchiest roast potatoes, thanks to the bird’s high fat content. Nicholson’s has been sourcing its free-range geese from Boulmer Farm, on Northumberland’s Coast, for over 60 years. The birds are allowed to roam freely and are fed carefully-selected feed to ensure steady and healthy growth. Their skin is also dry plucked, to ensure extra crispy skin.
METHOD Pre-heat oven to 240C (fan 220C/gas mark 9) Take the goose out of the fridge one hour before cooking, to make sure it’s at room temperature for cooking Remove the wrapping and the giblets Prick the breast with a fork and sprinkle with a little sea salt Place the bird on a rack in a roasting tray, and cover loosely with foil COOK Cook for 10 minutes at 240C (fan 220C/gas

Bring the bird up to room temperature (Nicholson’s recommend two hours before cooking) to allow the bird to rest and help keep the meat tender Never stuff the body cavity of the turkey – just the neck end Flavour your butter with cloves and orange zest for a festive twist Buy a probe thermometer to allow you to cook your turkey to optimal temperature (it should be above 73C) and ensure that it is safe to eat After removing from the oven, allow the bird to rest uncovered for at least 45 minutes to enhance the flavour before serving

Typical Christmas Day routine?
from it all. The most festive songs for me now are traditional Christmas carols. You can’t beat a bit of ‘Once in Royal David’s City’.
As kids, my sister and I would always get up around 5am, pestering our parents with the famous question: “Has Santa been?” I’m glad to say that I’ve chilled out a lot since then. Now, my family tends to get together on Boxing Day instead, and I’ll spend the big day itself with friends. It’s a very relaxed affair: I’ll host, but everyone gets involved with the cooking. Though the meal usually ends up on the table three hours later than planned! We’ll open presents afterwards.
Most memorable Christmas present?
When I was 10, Father Christmas organised a treasure hunt around my house that ended up in a brand new tree house, which I pretty much lived in for the rest of my formative years. I also remember being given a sandwich toaster when I was about 12. I thought it was a PlayStation until I unwrapped it. I’m still silently dealing with the disappointment.

My family wasn’t too big on tradition and I’m the same now. The dogs will be walked first thing in the morning and we’ll drink Buck’s Fizz at breakfast. The rest of the day happens as it happens. It really does take the stress out it!
As a vegetarian, one of the most common questions I get asked is: “What do you have for Christmas dinner?” Actually, there are lots of options to choose from! My favourite thing to make is mushrooms and stilton. I’ll fry mushrooms with a bit of white wine, add the stilton and bake until it bubbles. It makes a beautiful roast dinner – trust me! To drink, it has to be something sparkling.
Favourite Christmas TV viewing?
Considering I work in television, I’m a bit anti-TV on Christmas Day. If it gets switched on, I feel like we’re failing with the entertainment. Thank goodness for catch up TV and Sky+. I’ll try and record the big shows and watch them a few days later. Recently, it’s all been about Downton Abbey. I cannot believe this is our last Christmas with the Crawleys.
The best thing about the festive season?
I have to admit, I used to be a bit of a Scrooge. But the older I get, the more I appreciate Christmas. Now that we have some children in the family, it’s great to see them getting caught up in the magic. It’s taught me that the best way to enjoy the festive season is to get involved and let your inner-child out. Sometimes, it’s the only way to cope!
Favourite Christmas song?
I spent the first few years of my career working in radio. Believe me, when you have heard every Christmas song on repeat for the best part of two months every year, the novelty soon wears off! I think I’m still recovering
