Pear Cranberry Crumble with Cardamom Whip serves 8

INGREDIENTS

INSTRUCTIONS

• 6 large pears (Bosc or Bartlett), peeled, cored and cut in 1⁄2-inch cubes • 1 1⁄2 cups fresh cranberries • 1⁄2 cup dark brown sugar • 1⁄4 cup water • 2 tablespoons lemon juice • 1 tablespoon ground cinnamon • Zest of 1 lemon

1. Preheat the oven to 350°F.

CRUMBLE T OPPING • 1 1⁄2 cups all-purpose flour • 3⁄4 cup dark brown sugar • 1⁄2 cup butter, chilled and cut into • 1-inch pieces CARDAMOM WHIP • 2 cups heavy cream • 1⁄4 cup granulated sugar • 1 teaspoon ground cardamom • 2 teaspoons pure vanilla

2. In a large bowl, combine the chopped pears, cranberries, cup sugar, water, lemon juice, cinnamon and lemon zest. Use a wooden spoon or your hands to stir and coat all the fruit with the brown sugar mixture. Place the coated fruit in the prepared baking dish. 3. For the crumble topping, in a medium bowl, combine the flour and q cup sugar. Use a pastry cutter or two knives to cut in the chilled butter until large, buttery crumbs are formed. Sprinkle the crumble topping across the top of the fruit. 4. Bake for 50 to 60 minutes, or until the juice from the fruit is bubbling up through the crumble topping. 5. Meanwhile, prepare the Cardamom Whip. In a stand mixer fitted with a whisk attachment, whip the cream, sugar, cardamom and vanilla on high speed until soft peaks form. Be careful not to look away, as a minute too long and you will be spreading cardamom butter on your toast tomorrow morning. 6. Remove the crumble from the oven and prepare to serve with spoonfuls of the Cardamom Whip.

Pumpkin Chocolate Cheesecake Bar INGREDIENTS • • • • • • • • • •

1 1/2cup plus 2 tablespoons butter 2 cups chocolate crumbs two 8-ounce packages cream cheese, full fat 1 large egg 3⁄4 cup canned pumpkin 3⁄4 cup granulated sugar 1 teaspoon ground ginger 1 teaspoon pumpkin pie spice 1⁄2 teaspoon salt 1 cup dark chocolate chips

INSTRUCTIONS 1. Preheat the oven to 350°F. 2. In a small pot over medium heat, melt n cup of the butter. Pour it over the chocolate crumbs in a medium mixing bowl and use a wooden spoon or spatula to combine and evenly coat the crumbs. 3. In a small pot over medium heat, melt n cup of the butter. Press the chocolate crumbs firmly into the prepared pan to create the base. Bake for 10 minutes. Remove from the oven and set aside.

5. In a stand mixer fitted with a paddle attachment, cream the cream cheese until light and fluffy. Scrape down the sides of the bowl and add the egg, pumpkin, sugar, spices and salt. Beat again to combine until smooth. Scrape down the sides of the bowl at least once during this process. 6. Pour the batter over the chocolate base and return it to the oven to bake for another 30 minutes, or until the filling is firm to the touch. 7. Remove the bars from the oven and allow it to cool completely. 8. Meanwhile, in a double boiler over medium heat, or a small heatproof bowl set over simmering water, melt the chocolate chips and the remaining 2 tablespoons butter. Pour the melted choco- late over the top of the cooled pumpkin layer and use a small offset spatula to help spread it evenly. You can give the pan a light tap on the edge of the counter to help settle the chocolate in one smooth layer. 9. Place the pan in the refrigerator for about 30 minutes so the chocolate sets up. 10. Once the chocolate has set, run a knife along the edges of the pan that aren’t lined with parchment paper. Use the parchment handles to carefully lift the slab from the pan in one piece. Then use a large chef ’s knife to cut the slab into 16 bars.

It’s a place where you feel alive, connected and energized. If you’ve never been, you should visit.

• 1 1⁄2 oz bourbon or Canadian whisky • 1 oz cold- or French-pressed good-quality brewed coffee, chilled • 1⁄2 oz Cointreau or Triple Sec • 1 barspoon maraschino cherry juice or cherry liqueur • 1 dash mole bitters Handful of ice cubes 1 large ice cube • 1 maraschino cherry, preferably with a stem Pour all ingredients except ice and cherry into a mixing glass. Add handful of ice cubes and stir until chilled. Strain through a julep strainer over large ice cube in a chilled old-fashioned glass. Serve with a skewered cherry.

• 2 oz chilled dry white wine, such as Vidal, Pinot Gris or Sauvignon Blanc • 1⁄2 oz aquavit, such as Aalborg Jubilaeums Akvavit • 1⁄2 oz Cinnamon Syrup • 1 tsp St-Germain Elderflower Liqueur • 1⁄2 tsp mustard seeds or 1⁄8 tsp Kozlik’s Triple Crunch Mustard • Large handful of ice cubes Pour all ingredients except ice into a cocktail shaker. Add ice and shake until chilled. Double strain through a Hawthorne strainer and a finemesh strainer into a chilled coupe glass. Makes 1 drink

WHOOP-UP BUG JUICE Serves 1

• red bell pepper • 1⁄2 oz Ginger Syrup • an oz. dark rum • 1⁄2 oz freshly squeezed lemon juice • 1 to 2 dashes Scrappy’s Firewater bitters (optional) • dash Angostura bitters •Large handful of large ice cubes Crushed ice to 3 oz chilled cola • 1 long lemon peel strip • 1 piece candied ginger, for garnish Cut a 1 1⁄4–inch thick slice of bell pepper. Place in a cocktail shaker along with ginger syrup and muddle. Add rum, lemon juice and bitters. Add handful of ice cubes. Shake until chilled. Double strain through a Hawthorne strainer and a fine-mesh strainer into a chilled old-fashioned glass filled with crushed ice. Stir in cola. Flame lemon peel (see page 6) over drink, rub the outside rim of the glass with flambéed peel, then discard peel. Garnish drink with candied ginger.

“Let’s talk about sex, baby,” is some pretty solid advice from 1991, courtesy of Salt-N-Pepa. They made talking about sex seem like this fun, exciting thing that everyone just can’t wait to do. But while it’s probably true that a lot of people are excited about having sex, in reality people aren’t exactly dying to talk about it. Especially when the conversation is critical. Egos and feelings aside, we could all review our sexual experiences with our partners on video the way football teams review old games to analyze successes, challenges and how to perform better next time. The reality, however, is that ego and especially feelings cannot be so easily set aside, making critical conversations about sex with our partners more than just a little awkward. It can be absolutely terrifying.

The fear that we associate with talking critically about our sex lives is perfectly normal. But the problem with letting that fear control us is that it can lead to making decisions that work against our interest which, in this case, is our pleasure. A perfect example of this? The decision to fake an orgasm. It’s a delicate matter when you’re in the moment and it’s not...quite...working for you. And of course you don’t want to hurt feelings. But fake it ‘til you make it is not a sound strategy in this case. Faking orgasms can be damaging, not just to your sexual pleasure, but to the trust surrounding sex that you’ve established with your partner. As much as it may seem like a personal choice, a fake orgasm is a real lie. And as with all lies, the longer you’ve been lying, the harder it is to tell the truth. That means that faking your orgasms will make it that much harder to start having the conversations that lead to real ones. Still, it’s never too late to start, and the sooner the better! Honesty is one of the keys to a fulfilling sex life, and it starts with being honest with yourself. These days, sex is everywhere. It’s in books, movies, commercials, on blogs and in podcasts, you name it. Which isn’t necessarily a bad thing, but it can leave women with very specific examples of what should work for them in bed, leading them to believe something is wrong with them when those things don’t actually work. Trust that there is nothing wrong with your body, and then find out what it likes. Spend some time... you know...alone with yourself. Early morning, late night, long lunch. Whatever works for you! Just like you would want of your lover, be considerate to you. Take the time to seduce yourself (candles always work for me) so you’re as comfortable as possible. Try not to judge the things that make you feel good, or bad, or even ticklish. It’s your body - it’s never wrong. Once you know what your body responds to and how, it will be much easier to teach someone else about pleasuring you. And okay, yes - that’s the simple part. Taking the time to get to know your body isn’t nearly as scary as then communicating your findings to your sex partner. But in-the-moment feedback can happen without the mood coming to a screeching halt. It can be non-verbal. The gentle placement of a hand, or a subtle maneuver that will refocus your partner’s touch. You can use comments that are encouraging or suggestive. Asking for a little more or a little less of something usually works without deflating any egos (or anything else). But if in-the-moment feedback is too stressful, why not talk about the sex later on when you’re both less vulnerable?

LIFESTYLE A casual conversation can become a valuable sexual tool. Sharing fantasies is a great way to talk about sex while keeping it light and even a little impersonal. No one will feel analyzed or criticized, and you both just happen to learn about each other’s preferences in the process. And while we’re being honest, let’s just admit it. Sex is funny. It is! When someone can’t get the condom wrapper open. When the correct side of the condom refuses to be found. When right before the action starts somebody announces that they have to pee. It’s funny! So lighten up! It’s okay to laugh about sex, and it’s okay to laugh with your partner. Communication will ultimately not only help you get the most pleasure out of your sex life, but also help you give it. You think you’re anxious talking about sex? Your partner may be just as nervous. They may be embarrassed to talk about what they like in bed, or too shy to ask. They may even be afraid to tell you what they don’t like, especially if they’re trying to protect your feelings. about sex is the ultimate trust exercise. If you can comfortably discuss your sex life, what can’t you talk about? Once you’ve established that honest conversation is safe, your partner will be able to come to you too with their wants, concerns and desires, so you can build an equally pleasurable sex life together. So, going forward, let’s establish some sexy ground rules. We are not going to fake it, because that’s not the way to make it. We are going to engage in some experimental self discovery (that’s fancy speak for masturbating) so that we know what to teach our partners about our pleasure. We are going to find a way to communicate our preferences to our partner. We will not be afraid. We will remember not to lock the bedroom door on our sense of humor. We will form a deeper bond through open communication and ultimately we will become better lovers, having better sex. There now. Go forth and be sexy. Have yourself some honest orgasms. DZHUS BY: JENNIFER STEELE

I was delighted to converse with the talented Irina Dzhus of Kiev, Ukraine, who told me about her life as a fashion designer for her own label (DZHUS) and shared photos of her upcoming line for the Fall/Winter 2015. When did you first realize you wanted to become a fashion designer? Tell us the story that got you to where you are today. I’ve had a passion for fine arts and fashion since my early childhood. When I was five, I decided I’d be a designer and went to a children’s art school soon after. I finished an art college, where I’ve gained my creative background and professional skills, and went to university in Kiev to study fashion design. I did an internship in a well-known local fashion house, KRASNOVA, which I consider the most important influence on my worldview as a creative. After graduation in 2010, I launched the eponymous fashion label, DZHUS. What steps did you take to become a designer? To earn funds for the future brand and make contacts in the industry, I started working as a fashion stylist and makeup artist during my university years. I collaborated with Ukrainian celebrities and advertising agencies, and styled fashion shoots for local and international magazines. Eventually, I launched my own style studio and I still do styling with major local projects, along with developing the fashion label. What challenges do you find most cumbersome? For me, it is the lack of budget and the human factor when it comes to fashion business authorities. What I find most difficult is inevitability dealing with business issues instead of concentrating on the creative process. In your mind, what does it mean to be successful? To me, success means the possibility to freely do what I’ve always dreamed of, yet to be true to my own individuality and moral values.

Who do you most admire most in the business? I was never very keen on the fashion world, as such, what I am into has more to do with design. In this sense, it’s hard to overestimate what Margiela, Yamamoto and Issey Miyake have contributed to the world’s fashion heritage. From where do you get your inspiration? I’m inspired with objects at the edge of perception, such as abandoned industrial zones or ancient temples. Along with that, I can notice something incredible and awe-inspiring in ordinary urban things around me, such as the spontaneous symmetry of asphalt cracks or frozen patterns of icicles. Who is your favourite model and have you worked with anyone famous in the past? I haven’t worked with world famous models yet and don’t have a favourite one to name. However, if I can speak of remarkable collaborations - I’ve created several costumes for The Hunger Games. I’ve also received requests from Lady Gaga and Avril Lavigne’s stylists, but unfortunately I was not able to ship the pieces from Ukraine within one day, which is a shame.

What does your brand represent? Who is it made for and who do you want to wear it? What makes DZHUS designs unique is the innovative cut. We never produce anything similar to someone else’s creations. Therefore, our clients are supposed to realise and value the distinctive authenticity. A DZHUS woman is a non-conformist intellectual, an exquisite perfectionist who longs for an uncompromisingly complementary form for her own inner world. What brings you joy in your spare time? Actually, I almost never have spare time. Everything I do is more or less connected to either the brand, or my style work, or self-development, such as exploring different cultures and places in order to get inspiration – and I really enjoy this mode of life. Talking about positive emotions and spending time with animals is probably the most exciting experience for me. By the way, DZHUS is a vegetarianfriendly brand, all the products we make are violence-free. Where do you see yourself in the next ten years? What major goals do you have in mind for the near future? I would be happy if in the next ten years my designs were being stocked in the world’s legendary concept stores. My plans for the near future are focused on achieving this goal. Complete this sentence “In an ideal world ......” ... people are conscious, open-minded and humane, hardworking enough as well as naive to do the job of their dreams.

Hotel Henriette is a new bohemian boutique hotel in Paris, France, which true to European buildings, offers an intimate experience for its visitors. With newly renovated rooms, each uniquely decorated, this hotel will feel more like a home than anything else. The hotel offers 32 air conditioned rooms (a rare blessing in Paris), 5 of which are single rooms, 4 are twins, 19 doubles, and 4 suites. Rooms start at 89 Euros. The hotel offers free Wi-Fi and breakfast for 12 Euros. The decor has given the hotel a vintage feel. The hotel lounge offers a used book playlist, where guests can get lost in literature in true European style.
